PuBlisHers noTe Hopefully by the time you read this, things will have cooled off a bit. As I write the fall Publisher’s note, it is currently 97 degrees outside….at 8 p.m. at night in July! As much as we love the summer and all it offers, I always welcome the fall months and the reprieve from the heat. Fall is full of many things that are near and dear to me: kids going back to school (two teenagers will do that to you), less traffic, football season, and most of all, the best weather of the year. Hit the links or courts in the morning, enjoy the beach in the afternoon, and relax in the evening with a great meal. As an added bonus, fall also brings a hefty dose of outstanding festivals to the area. These festivals are not just your mom and pop picnics, but actually regional and world-class events. Committees and organizations spend months and months planning and coordinating these festivals and they do a tremendous job. September leads off with The Italian Heritage Festival, held at Shelter Community Park on September 24th from 11 a.m. until 4 p.m. Authentic Italian cuisine will be available as well as Italian wines, beers, coffees and desserts. If you’re looking for some activity to work off the calories, enter the stickball hitting contest or take up a game of bocce. The 27th annual Chili Cook-Off kicks off October with all the chili you can eat. Professionals and amateur’s compete for Island’s Best Chili boasting rights, while live music and kids entertainment round out the day. The Chili Cook-Off will be held at Honey Horn Plantation on October 8th from noon until 4 p.m. If Cajun cooking is your thing, be sure to check out the 8th annual Coastal Cajun Festival on October 15th at The Shelter Cove Community Park. Enjoy authentic Cajun food, live blues music, and great activities for the kids. Last, but not least, November is the busiest month of all. Join the Island Rec. Center for the Hilton Head Oyster Festival on November 12th and 13th at the Shelter Cove Community Park. Choose from a variety of oysters, shrimp, an assortment of beer and wine as well as live music and a silent auction. This is a great event for all ages and one not to be missed. An oldie, but goodie, The 22nd annual Taste of the Season will be held November 11th at the Hilton Head Marriott Resort and Spa. More than 35 local restaurants will be featuring their culinary talents and competing for the title of best cuisine. So start marking your calendar and booking your company (or not!) for all the fabulous fall festivals. One of the beautiful things about Hilton Head in the fall is that you can be as busy and involved as you want or you can just lie in a hammock with a good book before visiting one of our Island restaurants. Enjoy the weather, enjoy the tastes of the fall season, and be sure to support some of our festivals that so many Islanders have been planning for months.

There’s a common misperception that the sophisticated world of wine is one solely for the snobby elite. With all the cork sniffing, name dropping and regional elitism inherent in the world of vino, it’s easy to see why. In short, wine can be intimidating. The rules behind which bottle to select can be rigid, and are strictly enforced through a series of withering glances from those “in the know.” For a newcomer to this wonderful world, the fear pervades that they may mispronounce an unfamiliar French term or forget to let the wine breathe for the proper amount of time and thus be exposed as an amateur. At Corks Wine Co., however, the old trappings of a wine bar as a place for the elite to compare different vintages or varietals are gone. Instead, owners Josh Luman and Gabby Ferrell have created a place where newcomers and seasoned oenologists alike can toast their health with a stunning array of reds, whites and everything in between. “We wanted to create a place that 8 • A TAsTe of HilTon HeAd • fAll 2011
could be a neighborhood wine bar,” said Luman, with emphasis on the word neighborhood. “We wanted people to be able to come in flip flops and be comfortable with wine. Too many people overcomplicate wine and make it too intimidating.” And while flip flops may be acceptable inside Corks, more often than not you’ll see patrons spruced up for a sophisticated night on the town. It’s a delicate balance that Corks has tread beautifully. And while the two locations, the original in Bluffton’s Promenade and the other in Hilton Head Island’s Island Crossing Center, almost seem like they’ve always been there, so comfortable are their clientele, it was a long road to get there. Roughly 718 miles, to be exact. Josh and Gabby met in High School in Marietta, Ohio. After Gabby finished Youngstown State and Josh finished U Dayton, “We just packed the cars up and had nothing. No place to stay, no jobs; nothing,” said Luman. The pair made
their way to the island and quickly found work inside the local food and beverage industry. “That was the quickest way to get a job, in F&B,” said Luman. “We met a lot of people, and got to the point where we felt pretty comfortable.” While working, the pair began fermenting a plan for a new, laid-back wine bar that would take the scare factor out of uncorking a bottle. Opportunity struck in Bluffton, and four years ago the couple once again went feet-first into another leap of faith. “It was kind of scary at first,” said Luman. “We were the only business in the Promenade at that point.” But there’s no stopping a great concept with mere opening jitters. Corks’ inviting approach to wine struck a chord with the notoriously laid-back residents of Bluffton, and a new hotspot was born. Finally, there was a place where locals could sample the finest vintages of California’s wine country, plus a whole world of imports, without feeling the
need to refresh their French classes first. The island location was the next natural step, opening two and a half years later. The wine selection includes more than 100 wines, including 25 wines by the glass and a rotating selection of flights for sampling different wines together. Corks always keeps a handful of fun and hard to find special bottles tucked away for customers looking for something really off the beaten path. They also run daily chalkboard wine specials by the glass and circulate an ever-evolving features book that keeps everyone on their toes. And for those not quite ready to venture into the world of wines, Corks offers a terrific selection of American Craft beers and know how to pour a great cocktail. It doesn’t hurt that, along with a wine list as long as your arm, Corks also offers some of the most amazingly wellcrafted food in the area, with 15 menu items rotating with the seasons. The sole focus of the food menu is fun, fresh and something for everyone. The Corks crew has spent the last four years trying to source out the absolute best ingredients around the country, and in some cases across the globe. Using local and organic is a very important part of the menu. Mouth-watering “big small plates” complement the beverage selection with
cheese plates, paninis, pizzas and even tuna sashimi. And as with a good wine, the food owes as much to where it comes from as much as how it’s presented. The artisan cheese plate features assorted local artisan cheeses from Flat Creek Lodge Farms in Swainsboro, Georgia. The summer salad bursts with berries from Fossil Creek Lodge Farms. And a few of the items on the menu come from right across the street. “We use local, organic ingredients as much as possible. We do a lot of shopping at the Bluffton Farmer’s Market,” said Luman. The result is a menu of authentic flavors combined to perfection. And as with the wine, Corks takes a relaxed approach to sophistication. “There’s nothing frou-frou about it; we don’t call ourselves tapas,” said Luman. “There’s no teeny plates. You can make a dinner out of it.” And for four years, locals have indeed been making a dinner out of it. Corks has become the go-to destination for a bite to eat with a side of great atmosphere. “On Hilton Head, we’re serving 85 percent locals and regulars,” said Luman.
“In Bluffton it’s about 95 percent.” “That gets to be pretty handy around February,” he added with a laugh. And with this dream taking hold in two locations in its first four years, Corks is always looking to give another neighborhood its own place to call home. Luman cites Savannah, Charleston and Charlotte as front runners for a third location. “It’s a neighborhood wine bar,” he said. “And it could fit in any neighborhood.” For now, local patrons can be glad that no matter how far this vineyard grows, its roots are right here. Flatbread Coligny’s renaissance is boosted by brand new concept in Flatbread Grill.

To long-time residents of Hilton Head, there has been no region of the island more changed in recent years than Coligny Beach. What once was an ageworn stretch of shops fronted by a handful of parking spaces has evolved into a bustling downtown. Where once cracked and sun-baked concrete sidewalks meandered toward the beach, now a lush wooden walkway traverses well-manicured landscaping. And at its destination is a beachfront park transformed. Children dance through playful fountains. Visitors and locals alike rest on wide wooden rockers and enjoy the breezes off the sea. And at the very heart of Coligny in the Beach Market Center lies a restaurant that embodies the spirit of the area’s whole rebirth: Flatbread Grill. “The town is putting a lot of money in down here. money the way they are, they’re looking to the private sector to put money into it and upgrade the facilities in Coligny,” said owner Bruce Kimball. And upgrade Kimball did, transforming the former location of Hinchey’s Chicago Bar and Grill into a dazzling “upscale casual” restaurant that not only gives beachgoers a great place to grab some food, but has introduced an entirely new dining concept to the island. Flatbread Grill draws its name from the Woodstone oven that is utilized across the menu as a tasty accent to nearly every dish. “We take the flatbread name and use pizza dough in all of our salads… we have wraps made of pizza dough and of course calzones,” said Kimball. You’ll even find flatbread points alongside the gourmet pasta dishes and as the centerpiece to the dessert flatbread pizza
with apples and cinnamon. The flatbread points are all cooked in the Woodstone high-temperature oven, an expensive addition to the restaurant, but one Kimball saw as absolutely necessary. “It make a huge difference in the product,” he said. “(The oven is) a major financial commitment, but it’s worth it.” Diners will most likely agree after their first bite. It’s not just the menu that draws in the crowd, however (although, truth be told, it helps). Inside and out, Flatbread Grill is like nothing else on the island. Inside, magnificent brick arches split the restaurant into a dining area and a bar area perfect for relaxing after a day at the beach, while an open kitchen provides dinner and a show. “People love sitting right there and watching them make the pizzas,” said
Kimball. “Especially the kids.” The wide bar inside stretches from just next to the kitchen all the way out to the patio, where thirsty patrons fresh from Coligny Beach’s waves belly up for some cool libations. According to Kimball, the outdoor bar can get six to eight people deep during the summer. The massive improvements to the space and the unique nature of the menu show that Kimball has a knack for creating an eatery with real character. Surprisingly, however, Flatbread Grill represents the Lowcountry resident’s first foray into the restaurant business. The former owner of a textile company in Orangeburg, Kimball made his way to Hilton Head Island and sold real estate for 15 years. For the past ten years, he’s co-owned the Beach Market Center. He saw an opportunity when Hinchey’s was ready to move out. Kimball had a concept in mind for high-quality pizza served in an atmosphere that could accommodate both the “flip flops and sunscreen” crowd as well as those looking for a night out on the town. But before he could get started, he knew he’d need some help. Kimball presented his concept of an upscale casual beachside restaurant to a group of consultants who worked handin-hand with him to help create his vision. “They helped develop the concept, put together the architectural presentation, helped with materials and recipes, and helped get equipment,” said
Kimball. “They helped me put the concept together, so it was our concept. For example, they didn’t want hamburgers, but I pushed.” Anyone who has tasted the fresh Angus burgers can testify that Kimball was right to stick to his guns. With the menu in place, Kimball set the stage. Having built spec houses as part of his real estate career, Kimball knew a thing or two about architecture and presentation, and it shows in every aspect of the restaurant’s construction. The unique floor plan was his idea, with the concept being to create a different space for each customer’s needs. The outside bar and inside bar blend seamlessly together, and the position of the open kitchen provides an easy view of pizza dough being rolled, tossed and fired to nearly the whole restaurant. A side stage accommodates live music during the evenings. While it was all being built, Kimball was there overseeing the day-today construction. While the food is crucial and the layout is key, nothing makes or breaks a restaurant like the staff. And Kimball has brought his golden touch to this area as well, bringing in a few ringers to help Flatbread rise. Chris Spivey, the general manager, hails from Atlanta. Just 37 years old, Spivey has already amassed an impressive 20 years in the restaurant business, including 10 years as owner of his own place in Atlanta. And in the back of the house is
Dennis Hunter, who island residents will remember from the former Del Vecchio’s mid-island. He brings years of experience to the table, and long-time residents can testify he’s pretty handy with a pizza. With all the necessary pieces in place, Kimball has created something extraordinary at Flatbread Grill. It’s a cooling respite from the summer heat of the beach, but it’s a place where the food is so good you’re just as likely to find locals as visitors sitting down for a taste of the signature flatbread. It’s a place where you can take the whole family out for a meal without breaking the bank, or can take that special someone out for a romantic dinner. It’s also a place where you can get a slice of pizza right up until 2 a.m., which night owls of both the local and visiting species can enjoy. It’s a concept that is as simple as it is brilliant. “People are enjoying themselves and can have a beer and a pizza at 11 o’ clock at night,” Kimball said. “And it’s working. And that word gets around.” Consider the word out. Like Coligny itself, Flatbread is a beacon of both the island’s reputation for hospitality and its commitment to providing something both locals and visitors can enjoy. Mangiamo is a real favorite with the locals. The pizza and sub shop on Main street on the north end of Hilton Head Island has an affinity for Ohio State. The place is packed with artifacts. Mangiamo is a case study in Buckeye football legacy – a functional football museum busying itself serving the best pizza, pasta, and subs. Luke has been there for seven years, managing the restaurant and keeping the guests happy. He took time out of his busy schedule to talk with Taste about what it takes to be successful in the hospitality business. Taste: What do you like best about your job? Luke: I love serving people and providing them with a great dining experience. Customers expect a lot, and 22 • A TAsTe of HilTon HeAd • fAll 2011
Taste: What does it take to be successful at your job? Luke: It takes a great attitude all the time! It’s our job to provide the customer with friendly, fast and attentive service. If your attitude is off, your customers can tell and their experience and your tip will reflect that. You’re not always going to be in a great mood, but the servers who don’t show that in front of their customers and do put on a smile are the ones who will succeed in this business. Taste: What do you like to do when you’re not working? Luke: I love to golf. I enjoy boating. I love to go to the beach. And, believe it or not, I enjoy yard work and having a well manicured yard. Working on my house is another activity I enjoy…I stay busy! Taste: If you could do any job in the world, what would it be? Luke: I think if you were to ask me this question a few years ago, my answer would have been completely different. I truly have grown to love my job and being in the restaurant business. Owning a restaurant in the future would be the only thing better, and even then I would still want to be actively involved and
serve the customers. I enjoy it! I don’t think I would like working for a corporate restaurant. The only thing I would change in a perfect world is I would be working in this business on an Island in the Caribbean. I love it down there, but Hilton Head is a wonderful place! Taste: Mangiamo is Hilton Head’s home away from home for The Ohio State Buckeyes. How did it get that reputation? Luke: It’s pretty amazing how die hard Ohio State fans are. They won’t miss a game. Since more people come to Hilton Head from Ohio than any other state, having an Ohio State bar is a genius idea. Owner Brian Bambeck, an alumnus of The Ohio State University, opened Mangiamo in 2002 with one Ohio State flag and one 24-inch television. The word spread to local fans and I think to most Ohio visitors. I hear them say that it’s their “must stop” place when coming to HHI. They feel like they are at home even though they are 700 miles away. Mangiamo has moved to a new location, just across the street from the old one. They have 19 HD flat screens and 2 huge projector screens. Luke is one of the many reasons people keep coming back to Mangiamo. Stop by and say hello. Lowcountry. Each year, winners of Taste of the Season are chosen by those who attend the event to sample some of the region’s best culinary offerings. Hundreds of ballots are submitted for both best cuisine and best decor. Showcasing the culinary skills of Lowcountry chefs, this landmark event has long been a holiday favorite, a tradition of excellence and elegance as chefs compete for the honor of “Best Cuisine.” Chef Michael Cirafesi of Michael Anthony’s won the award last year for his Piedmontese beef short ribs with creamy polenta. A graduate of the Philadelphia Culinary School, Executive Chef Michael Cirafesi began his career working in kitchens of fine dining establishments in Philadelphia. Of Italian descent, Michael first acquired his passion for food and wine from his grandmother. He later became the Sous Chef at the famed Monte Carlo Living Room in Philadelphia. Second place went to Red Fish for Grilled Sea Bass. Third place was
awarded to Conroy’s for Crab Cakes, She Crab Soup, and Shrimp and Grits. The Best Cake award went to Sheri’s Edible Designs. Tapas Restaurant The Island's Fabulous Taste of Paradise. In 1992, a 7.3 magnitude earthquake shook Southern California early one June morning. The tremblor was enough to rattle Ardis Matthews and her husband, Max, into travelling across the country “to fabulous places, none of which were exactly right.” But, as it turns out so many times in life, the road less traveled, led to the most adventure. When the Matthews were in Charleston “we were sitting in a bar being friendly,” laughs Ardis. “We were talking to a nice couple from Hilton Head about our trip to Savannah. They said Hilton Head was right on the way, just make a left and go over a bridge.” The Matthews fell in love with the Island immediately. “It reminded us of our old home in California.” After trading one paradise for another, and replacing surprise earthquakes with preemptive hurricane warnings, Ardis had to find out what to do with herself. Ardis is perpetually jovial and enthusiastic. She is enthusiastic about
anything. Anything. Every new experience is “exciting”, “cool” or “fabulous”. Every past experience, even if it was less than grand, has one little slice of humor, wisdom or combination of the two. She is sweet, sassy and indefatigable. She doesn’t fear change, she embraces it. “This is all learning by doing,” she says of her extensive menu. “Except that I did have a fabulous […there’s that word again, ‘fabulous’…] opportunity to take cooking classes with some of the greatest chefs of the
1980’s in California.” Wolfgang Puck, Bert Greene and Julia Childs among them. “It was mostly fun. And the main thing I learned from these classes was, ‘I can do this.’” To Ardis, the best cooking she comes up with is “looking around that kitchen and reinventing the same ingredients over and over and over again. I’m not classically trained, I just makes what tastes good. And fortunately it seems to taste good to other people too.” Besides food that tastes good, the good food changes all the time. “There are certain items I would never take off the menu. I like the classics, but then I like totally wacky new flavors.” Ardis reflects and then starts laughing again, “And then I like the stuff in between! I don’t know! I like food! Anything but beets!” You can’t help but smile in her presence.

All Things Italian at The Italian Heritage Festival BY risA M.WilliAMs
The only things Italian that will be missing from the Italian Heritage Festival are perhaps a backdrop of the Leaning Tower of Pisa and a gondola serenading its way by up a Venetian canal. Then again, if event organizer John Pagluica has his way, there will be an “Italian images” section at the festival so you won’t even miss the picturesque ambiance. “Music, food, and people…that’s our theme,” explained John. That would be Italian music, Italian food, and, well, Italian people (and everyone else who wants a taste of Italy… which is everyone, right?). The Italian heritage is one rich in history and culture, unique unto itself. It’s easy to close your eyes and conjure up thoughts of what “Italian” means to you. Red Ferraris, a tubular shaped tower that is alist, gondolas lazily gliding by, I Love Lucy stomping grapes, and of course 40 • A TAsTe of HilTon HeAd • fAll 2011
Italian food – all those tasty suffixes: otti’s, ini’s, oni’s, oli’s. Who can’t envision the proverbial Italian mama, yours or the one that lived down the street, with the everembracing arms, apron around the waist, food on the stove 24 hours a day. Italian friends’ homes were always a gathering place, certainly a welcoming beacon as powerful as a lighthouse on a stormy night. The only rule was to never arrive with a full belly, for you would surely go home with one. This is a good rule to remember when packing up for the Italian festival too: Skip breakfast for a day so you can properly feast for five hours. So mark your calendar now for all the sights, sounds, and sensory explosions of Italy that will converge on Hilton Head’s own Little Italy on September 24th at Shelter Cove Park from 11 a.m.
to 4 p.m. In its second year, the Italian Heritage Festival is organized in conjunction with The Island Recreation Center. All money raised goes to local charities including scholarships, Deep Well, Volunteers in Medicine, Hospice, and the Rec Center, among others. John Pagluica, Italian by birth and a self professed teacher by trade, has left no stone unturned when it comes to his goal of infusing this event with all things Italian. If you are expecting burgers and baseball, stay home. If you want an Italian combo sandwich and stickball, then this is your place. “When I get into something, I do it ‘til it’s done right,” said John. Go to the festival and you will understand why that is truly an understatement. From the food and drink to the entertainment and sports, he has left out nothing Italian. There will even
be computer stations to look up your own Italian Heritage! “We saw the need on the Island for a festival like this and thought we had the capability. It is our way of sharing the Italian culture,” John expressed. On the food side, all of your favorite Italian dishes will be served at booths set up by 16 local restaurants. John explained, “We have limited the number of restaurants and are monitoring what they serve so we have a little of everything and no duplication.” Each chef will prepare his own portion size and pricing unlike many of the local festivals where you purchase tickets to exchange for food samples. Dishes, breads, cheeses, and pastas will be first-class with fresh ingredients and reminiscent of mama’s Sunday best. Some of last year’s offerings include: Crispy Fried Seafood Ravioli with Lobster Cream Sauce, Five Pepper Penne, Swordfish Spiedini, Mahi Tuscan, Rigatoni Vodka Meatball, Chicken Parmigiano, Tomato and Basil Bruschetta, Sausage and Pepper Hoagie, and Grilled Oysters with Parmesan Herb Butter. Because the Italian favorite of pizza pie will be absent from the menus as it does not lend itself well to a festival type showcase, there will be a pizza wheel on hand where participants can win free slices and pies at local pizzerias. Italy is not only famous for its pastas, cheeses, and breads, but their beverages and desserts are also unique and delicious. Enjoy Italian coffees, espressos, cappuccinos, sodas, and delve into Italian beers like Moretti and Dolmiti, and Italian wines and Chiantis. (Under great duress, John admits that the ONLY nonItalian anything will be Coke and Bud). Your sweet tooth will have a hay-day with samples of rich and creamy pastries and
Zeppole (fried ricotta doughnuts), éclairs, Napolians, Italian Ice and special flavors of Gelato, tiramisu (cake), biscotti (cookies) and cannolis (to die-for tubular stuffed pastries). Entertainment will be continuous throughout the afternoon and include competitions, cooking demonstrations, Italian music and dance (can you do the tarantella?), a showcase of Italy’s fast and sleek cars, sporting events, and even exhibits of famous Italian sights. Certainly everyone who ever watched I Love Lucy split their sides open laughing at the episode when she is in Italy stomping the grapes to make wine. The Italian Festival will have their own version of this for anyone game to get their feet wet! The cooking demonstrations (and samples for the audience) will blow your Italian senses: Learn how to make mozzarella and ricotta cheeses as well as tiramisu and pasta. Do you know what a pizelle is or a limoncello? The easy answer is a traditional Italian waffle cookie and a lemon liqueur. Sounds good, right? But go a step further than knowing what they are and check them out being made and then give them a try. Aside from soccer, there are numerous popular sports in Italy, one in particular that every kid grew up playing out his front door. Stickball, enjoyed by both children and adults in Italy, is similar to baseball in that there all balls, bats, and bases, but the ball is soft (so as
not to break windows), the bat is often the handle of a broom, and the bases are manhole covers or old tires. At the Italian Festival, you can try your swing at the stickball hitting contest, or enjoy a game of bocce on one of the several courts that will be set up. Your children will not be tugging on your sleeve looking to go home as this festival will be their dream playground with a whole section of activities just for them. The younger set can try their hand at stickball hitting and their own smaller version of grape stomping. And talk about thinking outside the box, John has organized a Lego ™ contest to see who can construct the best Leaning Tower of Pisa. There will be face painting, Yosti and her puppets, bouncy houses, Bean Bag Bocce, Bean Bag Stromboli, Bean Bag Tower of Pizza, coloring books and crayons, and candy and bubble prizes. Five dollars will get you in the gate at the Shelter Cove Community Park on September 24th and children under 12 are free. Various events require a donation in order to participate, and food and drinks are, of course, additional. For monetary planning purposes, a silent auction will also be set up offering items such as massages, computer services, tennis lessons, golf rounds, gym memberships, restaurant and retail gift certificates. John recommends that you bring your own beach chair and find your own tree. This is one festival you don’t want to miss! Oh… and one last thing. Knowing that after this festival you will be ready to book your next vacation in Italy, John has arranged for a “travel to Italy” table, complete with brochures about tours and special places to visit. Here in the Lowcountry we mark our seasons with flavors. Although autumn comes a bit later in the south and the harvest season lasts a little bit longer, we literally bottle the scents and tastes of our seasons. Lowcountry winemaking captures our steamy summers in the honey notes of southern Muscadine wine, the sweet voluptuousness of our farm fresh produce in peach or blackberry wine, and even our eccentricities in elderberry or dandelion wine. As the summer heat gives way to the fall, so do the sweet peaches and blueberries in favor of the crisp and savory tastes of the autumn harvest. Vineyards and wineries are a buzz with the hectic pace of the crushing and pressing of freshly harvested grapes. As the long days of summer end, the grape wine making season commences. The grapes start coming off the vines in late August and winemakers have days, sometimes even only a few hours, to crush the grapes. Great wines start with fresh fruit and a master winemaker has to decide when the fruit has soaked up just the right cocktail of sunshine, rain, and local terrior to make a great wine. Harvest the fruit too early and the wine comes out too acidic – harvest it too late and the wine gets too flabby. Red wines are crushed and allowed to age on their skins to give them their deep hues and robust flavors; white wines are crushed and immediately removed from their skins then delicately pressed and pumped into tanks or oak barrels for fermentation. Winemaking is an art, a science, a passion, and is indeed a unique sight to behold. Harvest time on Hilton Head Island means shrimp and oysters, gentle sea breezes and spectacular sunsets. If you’re lucky enough to be traveling to Hilton Head Island in the season after Labor Day, you can not only look forward to our seasonal bounties but you can also participate in a unique wine experience. Taste: What was your fist instrument? Whitley: Homemade drums. I used to get irritated because my parents kept buying my brother new guitars. So I would sit down with 2 of my dad’s screwdrivers and accompany Zach on a tub and a 5 gallon bucket. That’s how I started playing the drums. Taste: What defines you now? Whitley: Soul and singing. Funky pop. I’m trying to get away from the drums. I took up guitar so I could better serve bands as front man. I will get to know my audience and adapt to what they want to hear. Upbeat? Motown. Slow? Ballads. My favorite artists are Ray Charles, James Brown, and Stevie Wonder. Taste: What is your family like? Whitley: My mom is still local and I have a wonderful wife and 3 kids: 11, 9, and Mr. Perfect is 15 months old. When I’m not playing music, I coach my kids – basketball, baseball, and softball.
Taste sat down with multidimensional, multi-talented “local”, Whitley Deputy, to learn about the man and what inspires the music. Taste: How did you embark on a career of music? Whitley: I got my first car when I was 16. It was a 1963 Chevy Bel Air…it was like riding on a cloud. It had no radio and I had to drive from Pritchardville to Hilton Head High every day. So I started
singing. I would sing and sing and pretty soon I realized I could do things with my voice other people couldn’t. Taste: Is your family musical? Whitley: Oh yeah – We have music and rhythm. My dad was a disco dancer (my aunt said he could have kicked John Travolta’s butt), and my older brother, Zach, is somewhat of a musical legend. Then there are cousins, cousins twice removed, uncles…
Taste: What does your future hold? Whitley: Hopefully playing at weddings and clubs. That’s where the money is. Being a musician is work. It’s not a hobby. If you’re a true artist you treat it like a job. It’s a good job, one that makes you say ‘oh, yes!’, but still a job. I have a family to provide for and that is my first priority. I don’t know where I would be right now if my first car had a stereo. Whitley currently plays Mondays and Tuesdays at the Jazz Corner and weekends in Savannah or local restaurants like Wild Wings and Corks. We can all be thankful that Whitley’s first car had no radio. PALMETTO BLUFF GOES with Music to Your Mouth Festival

Picturesque and tranquil, Palmetto Bluff is known for its upscale residences, top notch recreation facilities, roaming wildlife, and sweeping vistas that have even the passing osprey stopping by to build a nest. Palmetto Bluff has also pushed its name to the forefront of fine cuisine with their Music to Your Mouth Festival, a celebration of the southern culinary culture every November. Sponsored by Coastal Living magazine, Music to Your Mouth is a week long series of themed culinary events that culminates in an all-star weekend dubbed the “Whole Hog”. As the phrase whole hog implies, this festival holds back on nothing. You could say they have pulled out all the stops and gone hog wild as organizers planned for every discerning palate with an award winning chef lineup, a chef showdown, dueling sommeliers, bourbon boat 54 • A TAsTe of HilTon HeAd • fAll 2011
bonanzas, and a few sporting events to work off some of those well deserved calories. Festival events begin on Monday, November 14th. Pricing varies with each individual event and tickets are sold accordingly. “Whole Hog” weekend packages are available that include tickets to all events during the weekend as well as a number of exclusive events just for the whole hoggers. Other package deals include one for locals and others which include private cottage accommodations and access to the many Palmetto Bluff amenities including kayaking, biking, tennis, spa, etc. $25 out of every festival ticket and $50 out of every whole hog ticket bought goes to Second Helpings, a Lowcountry organization that ensures that no one in our community has to go hungry. A Golf Outing and PIGnic will kick
off the festival at the May River Golf Club on Monday the 14th. After driving, pitching, and putting your way beside granddaddy oaks and the roving riverside, a fabulous southern pig roast awaits presented by a BBQ master chef. Some say they are still fighting the war down south, and as such Wednesday will feature the North and South Wine Dinner. Two sommeliers, one northern and one southern, will face off in a challenge to pair the perfect pour with dishes from their hemisphere. Game on. Charleston vs. Chicago. Enjoy the dueling during your four course meal. Thursday’s events start a bit earlier to get your whistle whetted in fashion with a good ole Bourbon themed cruise down the banks of the May River. You will board an antique yacht c. 1913 and cruise the breathtaking waterways of Palmetto Bluff and Bluffton while
sipping away the day. There will also be an educational and recreational afternoon wine tasting on Thursday before the Chef Showdown in the evening. Keeping with the sense of competition, two chefs will joust course for course, given the same food budgets and wine selections from Château de Beaucastel. You will feast on eight dishes and have the distinction of deeming one of the chefs the evenings best. There is a bevy of events to choose from on Friday including a morning cooking class with a celebrated southern chef, followed by “Stink and Drink II”, another cruise aboard the Grace serving up wine and cheese. Friday dinner is called the Potlikker Block Party and will take place on the banks of the May River where families have been serving up southern food for generations. Big-name southern chefs will congregate for this event that will feature southern tastes, tunes, and tonics and will be sure to entertain. Early Saturday risers can get their blood circulating again with a friendly “Hair of the Dog 5k” which will wind through neighborhoods and nature trails. The biggest event of Music to Your
Mouth, the Culinary Festival, takes place Saturday, November 19th from 11 a.m. to 3 p.m. at the Village Green and Riverfront. Hosted by Bravo TV’s top chef judge, Gail Simmons, this will be a southern sensory experience like no other. This is when all the culinarians, winemakers, growers, and artisans will showcase the bountiful flavors that come straight from our waters, woods, and farms. It will be a song to your soul, Music to Your Mouth. There are a number of events during the final weekend in which only purchasers of “Whole Hog” ticket packages can participate. Kick off the Whole Hog weekend with the first of these exclusive events, the Coastal Living Porching Party, on Friday from 3 to 5
p.m. Partake in the southern tradition of “porching” with Coastal Living’s senior food editor who will serve up some samples right off the pages of the magazine. From 5 to 6:30 p.m. whole hoggers will join the Southern Foodways Alliance Director at the Sip n’ Screen Symposium, a screening of two short Potlikker films followed by a discussion among chefs, growers, and TV personalities about various topics such as food philosophies and trends. There are two events Saturday exclusively reserved for Whole Hoggers, the evening Oyster Roast on the May River, and “The Last Hurrah” at 10 p.m. at the fire pits overlooking the May River for one last laugh, one last toast, one last song. Wrapping up the Whole Hog weekend on Sunday morning will be the Rise & “Shine” Breakfast which can be a quickie or a relaxing mimosa-filled morning. Wow! When they say “Don’t skip breakfast in the South” .... this is the type of place they’re talking about! It’s a relaxed café with blond wood, open shelving, and nautical accents. Three to four chefs at a time work the stainless steel grill behind the long bar with an air of friendly efficiency and easy access to the kitchen. Sunrise Café has a loyal local following and is an islander kind of place. Where else can you get “eggs all ways,” hash browns, cheese grits and deliciously generous pancakes, not to mention a whole section reserved for eggs Benedict. For a light lunch, the crab cakes and the soup du jour with a glass of wine are quite nice. Favorite lunch entrees are the Potato Crusted Flounder, Shrimp Provencal, Pan Seared Tilapia or hand cut NY Strip. Eat out on the veranda or relax inside. Paul Stewart, (a.k.a. “Stew”) executive chef and co-owner of Palmetto Bay Sunrise Café, took time out of his busy day to sit with Taste and answer a few questions about his love for the business and what inspires him. serving, and making sure everyone is happy. Taste: How did you get started in the business? Paul: I began working in the restaurant business when I moved to the island 25 years ago. In the slower months, I moved to the back of the house, or kitchen, for a steady income. That’s where I learned to cook. I met my partner, Leslie, also in the restaurant business, a few years after moving here. We married several years later and both continued working in the industry until we found the right opportunity to start a business together. Taste: What is your background? Paul: A great deal of experience and lots of practice! Despite the lack of much formal culinary training, I worked under several exceptional chefs and attribute a lot of my knowledge and success to them. In addition, it’s just in my blood. I love to cook.
Taste: What brought you to Hilton Head? Paul: I came to Hilton Head with a friend in 1986 from Louisville, Kentucky, and like so many other locals, just stayed. Taste: How long have you been at Sunrise Café? Paul: Leslie and I were offered the opportunity almost 10 years ago to open the Sunrise Café with a business partner. We took a chance, left our jobs, and put our experience and love of the business to the test.
Taste: What are your favorite dishes to prepare? Paul: I try to keep the menu fresh with additions and changes. I put things on and take things off, but some favorites stay in the heart of our customers, and I’ll make them on request if I happen to have the ingredients. I like to prepare our homemade soups. I also like to be creative with different styles of eggs Benedict. I have used all kinds of ingredients on a Benedict, including soft shelled crabs and braised short ribs. Taste: What do you like to cook at home? Paul: In the Fall, I love roasting and braising meats. One of my favorite dishes to prepare is Osso Bucco, veal shanks braised with vegetables, white wine and broth. In the warmer months, I love to grill on my charcoal pot which is a little concrete pot that changes the flavor of anything grilled from delicious to
spectacular. I use it for chicken, steaks, quail, and even vegetables. Taste: What do you like to do when you’re not working? Paul: I enjoy walking up and down the beach, looking for shark’s teeth. I love working in the yard with flowers - tiger lilies, irises, camellias, and roses – and in our vegetable and herb garden. It’s of course a constant battle with the squirrels and the deer. I also love watching wildlife, and there’s plenty going on here! And….I love traveling and trying new dishes in different places. Taste: What is the best thing about being a chef? Paul: I enjoy creating new dishes and visiting with the customers. I really enjoy seeing the customers happy. In the slower season, when I have time to think, I can be more creative and add new menu items. The restaurant is ours; however, it
would not run without our phenomenal staff. Our success is largely based upon the “family” we have built in our employees. We are very fortunate to have each and every one of them, and would be lost without them. Taste: What is your favorite thing about living on Hilton Head Island? Paul: Being married and happy in paradise is very rewarding. When you leave the island and come back across the bridge, you are never sad to be home. Ingredients: 5 egg yolks 1 cup dijon mustard 6 cups olive oil 1 cup honey 1 cup granulated sugar 2 cups blueberry vinegar 1 tablespoon black pepper 1 tablespoon kosher salt 2 cups dried blueberries
Preparation: Place egg yolks and dijon mustard into food processor and slowly add olive oil to emulsify. Slowly add remaining ingredients except for dried blueberries until well blended. Fold in dried blueberries and refrigerate.

Courtesy of Charlie’s L’etoile Verte Ingredients: 1 lb high quality dark chocolate (either chips or shaved) 1 lb butter, cut into small squares 4 oz espresso ¼ lb brown sugar 8 eggs Preparation: In a large bowl crack the eggs and beat together. Set aside. Over a double boiler, melt all other ingredients until smooth. Once the chocolate mixture is smooth, pour a small amount in to the eggs stirring constantly with a whip. Then pour the rest of the mixture continually mixing. Pour the batter into 4 small loaf pans. Place the loaf pans in a sheet pan with high edges. Create a water bath by filling the hotel pan with about 2 inches of water, or until the water comes up half way on the sides of the loaf pans. Bake at 350° for 20 minutes or until set in the middle. Hilton Head Island is traditionally known as a beautiful, family-friendly resort destination, perfect for beach and golf vacations. This picturesque island is also chock full of cultural events, including more than twelve annual festivals. Here in the Lowcountry, we can look forward to different kinds of festivals – the annual Chili Cook-Off, the Coastal Cajun and Blues Festival, the Bluffton Arts and Seafood Festival, the Motoring Festival and Concours d’Elegance, and the Hilton Head Oyster Festival, to name a few of the area’s fall happenings! Just as the mild fall season approaches coastal South Carolina, the Kiwanis Club of Hilton Head hosts its 27th Annual Chili Cook-Off which will take place on October 8, 2011 from 62 • A TAsTe of HilTon HeAd • fAll 2011
Noon - 4 p.m., rain or shine, at historic Honey Horn Plantation. Honey Horn is a great location for the event and is located on the north end of the island, where the Cross Island Parkway meets William Hilton Parkway. Hilton Head’s local competition adheres to the strict tenet of “Anything Goes.” Chili cooks gather from Hilton
Head and surrounding areas to compete in events ranging from amateur and professional competitions to the Texas Style Chili competition. From alligator to chicken to possum along with the more traditional fixings, you will find a bit of everything at the Chili Cook-Off. The Kiwanis Club expects more than 30 participants in one of the most popular events in the southeast. Some of the past participants who are expected to participate again this year are The Smokehouse, Frankie Bones, One Hot Mama’s, LWood’s and Gruby’s New York Deli in the Professional category and Hilton Head Firefighters, Elks Club 2772, Dougherty’s, Moonshine Roofers, and It’s All Delicious in the amateur category. In total, the Club expects full
participation as usual from both restaurants and amateurs alike, including former winners. The winners for the 2010 Chili CookOff event were as follows: In the blind judging, professional category, 1st place -Frankie Bones; 2nd place - Wild Wing Café; and 3rd place - One Hot Mama’s. In the amateur category, winners were 1st place - John Safay; 2nd place - ABC Hearing; and 3rd place - Burke’s Pharmacy. There are two types of judging for the competition. First, the general public is allowed to vote for the best chili in both professional and amateur categories. A group of honorable judges determine the best chili in a separate judging. Winners of the popular vote category were 1st place - The Smokehouse; 2nd place - Frankie Bones; 3rd place - Roast Fish and Corn Bread. In the Popular Vote Amateur Category, winners were 1st place - Town of Hilton Head Island Fire & Rescue Division; 2nd place - Doughtery’s; and 3rd place - Elks Lodge. One Hot Mama’s won the Showmanship Award for having the best looking booth. Tickets will be available in advance at several Island locations including The Coastal Discovery Museum, Burke’s Pharmacy and from any Kiwanis member. Tickets entitle the holders to as many samples of chili as they want. Tickets may also be purchased on the day of the event. Proceeds from the event benefit The Children’s Center, Strive to Excel, The Coastal Discovery Museum, Operation R&R, Marine Corps Scholarship Fund, and several other youth programs. Beer, wine, soda, hot dogs and ice cream will be available for purchase. Musical entertainment has been provided by “Low Country Boil” and “Southwind” in the past and an announcement about this year’s entertainment will be made closer to the date of the Chili Cook-Off. Again this year, the Hilton Head Area Home Builders Association has partnered with the Island Recreation Association to host the event. The Home Builders Association of Hilton Head is a local professional association whose membership includes residential & light commercial builders and remodelers from Hilton Head Island and southern Beaufort County. scholarship fund for children whose parents could not otherwise afford recreation programs. Island Recreation Association Executive Director Frank Soule said, “Teaming with the Home Builders Association to host this event has worked out very well, and we look forward to the continued association for many years to come.” Local restaurants who have participated in this event include Kenny B’s French Quarter Cafe, Hudson’s Seafood House on the Docks, SERG Restaurant Group, Bluffton Oyster Company, Wild Wing Cafe and Street Meet American Take-Out & Tavern. As if the food and entertainment wouldn’t already be enough for one event, this festival will offer a crawfish eating contest, a children’s play area and an Outdoor Home & Business Expo. “We’re excited about the event,” said Ashley Feaster, executive officer of the Home Builders Association. “The Island Recreation Association is obviously providing a very, very important service to our children. Keeping our kids occupied and excited about sports and activities and friendships is a very important part of life; and to be able to provide more kids that ability I think says a lot.” The seventh annual Historic Bluffton Arts and Seafood Festival will be held October 16 – October 23, 2011, in the charming and eclectic historic district of Bluffton, well known for its quirky art community and natural river beauty. The festival is a week long event offering a myriad of activities, showcasing the locally harvested seafood, delicious Lowcountry cuisine, rich history, great art and Southern hospitality found only in Bluffton. Some of the activities which will be part of the festival include a boat parade and blessing of the fleet on Sunday, October 16, and a 5K Oyster Run and Kick-Off Party on October 20. Over 70 local and regional artists from 10 different states will display an array of fine art: oils, pastels, acrylics, photography, pottery, ceramics, water color and much, much more. Local seafood and Lowcountry cuisine will be served by area restaurants. Eat great local seafood and watch the fireworks for a night to remember at the Seafood Tasting Extravaganza! End the full day of activities with a grand finale, Rockin’ on the Dock, from 6 p.m. to dusk, with fireworks at dusk at the Bluffton Oyster Company. Favorite local bands will entertain on the main stage throughout the day. The Island Recreation Association and South Carolina Bank & Trust will host the Hilton Head Oyster Festival on Saturday, November 12-13th from 11 a.m. – 5 p.m. This two-day event will be held at the Shelter Cove Community Park and will feature a variety of oysters and shrimp, and an assortment of beer and wine. The festival is more than just a bunch of shucking. The Island Recreation Center puts on the festival to provide for its high school scholarship program, raising up to $5,000 each year. This family event features live music
and a kid’s zone including moon bounces, carnival games and prizes. Back again is the high energy super fun UFO laser tag. Thanks to Custom Audio Video, football fans can catch both the NFL and college games over the weekend at the park.
