PUBLISHER’S NOTE While most people look forward to summer, I look forward to fall. The summer months are associated with all things outdoors, but to me, fall on the Island is the best time to be outside. There is no denying that summers in the sultry south bear intense heat and drain your energy quickly. If you don’t hydrate often and find the relief of air conditioning regularly, the summer can wear you out. The fall months, on the other hand, bring the perfect combination of scintillatingly warm days and delightfully refreshing mornings and evenings. The sights and aromas of the fall in our piece of paradise are another reason this is my favorite time of year. The smell of burgers and steaks on the grill, oysters roasting over an open pit, or the wafting bellows of barbeque from the smoker are just some of the items that come to mind. Football season is in full swing and here in the south, where football is king, the cheers emanating from many of our fan-filled restaurants is contagious. Being on a melting pot like Hilton Head, there are fan bases of many colors and allegiances. If you can’t make it to the stadium, try one of the Island’s many watering holes for the next best front row seat. Food and drink specials abound and there are many places that host certain teams and their fan clubs. Try teambarfinder.com to find your compatriots. If food is your passion, fall on the Island brings an abundance of fantastic festivals, each offering mouthwatering food, cold beverages, fun activities and beautiful backgrounds. For a taste of Italy, be sure to check out the annual Italian Festival which is a cornucopia of delicious Italian cuisine and fun events like a pizza eating contest, bocce ball, and grape stomping. If you’re an oyster aficionado, do not miss The Island Rec Center’s Oyster Roast. All you can eat steamed oysters, live music, a kid’s zone, and a football viewing area offer something for everyone. Travel across the bridge to beautiful Bluffton for the Historic Arts and Seafood Festival. Local seafood, lowcountry cuisine, unique arts and artists and plenty of activities and tours highlight this amazing festival. Check out page 42 in this issue for these festivals and more. While you may know that Hilton Head is home to about 26 golf courses, hundreds of tennis courts and 12 miles of beach where you can bike, run, and walk to your heart’s content, I bet you didn’t know that there are 14 parks on the Island that offer a stroll through our flora and fauna, our birds and alligators, and an education about our critters, natural surroundings, and our rich history. So enjoy the endless options to keep you busy this fall and be sure to refuel early and often. Hilton Head is home to over 250 restaurants and the choices are both amazing and abundant. Sunrise Cafe

Sometimes, the key to keeping a loyal following is making sure you have plenty of wall space. BY BARRY KAUFMAN

There are very few restaurants on the island that inspire the kind of loyalty that Sunrise Café does. For some, the wide porch at the Palmetto Bay Marina restaurant is almost the community breakfast table, a place where friends and neighbors start their day over coffee and the kind of eggs benedict that fill daydreams for weeks after you taste them. For others, it’s a spot of honor on the calendar, a regularly repeating Saturday morning appointment with a country fried steak. For others, it’s something else, something beyond loyalty. Like the couple in Atlanta who decided the only suitable celebratory birthday meal was lunch at Sunrise Café, prompting a spontaneous five-hour road trip. “We’re extremely fortunate that we have that kind of following,” said Leslie Stewart, co-owner along with her husband Paul. That loyalty extends beyond the borders of the community breakfast table set. “Even though a lot of our base is tourists, they’re recurring tourists who come back every year.” As if on cue, in walked Curt Imerman of Knoxville, Tennessee. He came bearing a gift, a hand-drawn pen and ink sketch of the restaurant. It was a token of his enduring loyalty, so well-timed and on the nose you could scarcely believe his visit hadn’t been planned. “We’ve been coming here for well over 15 years,” said Imerman. Pointing to a young diner just outside the glass doors of the Mermaid Room, the private annex in which we were seated, he added. “The little guy, he’s five and he wants to come here every day. I just have to be here Thursday mornings because I love that peach pecan French toast.” 12

His visit, plus the impending arrival of a party of 31, prompted us to abandon the Mermaid Room for the main dining room, where more works of art from grateful customers adorn every wall. Each painting held a story, each rooster and mermaid serving as a reminder of another satisfied customer. Paintings and drawings hand-delivered by diners and staff. A large fish, signed by Barbara Ann Richardson, subject of the famed Beach Boys ballad. The walls are filled with tokens of appreciation. So what inspires such devotion. According to Leslie, it’s the people. “Like Paula Brown here; people come just to see her work. Our customers know about all of the girls and their children, and our girls know everything about the customers who come back every year.” The staff at Sunrise Café is remarkably tenured, especially for a restaurant on Hilton Head Island. Everyone on the line in the kitchen has between 10-15 years of service at the restaurant, and some of the wait staff have been there almost the full 17 years since it opened. “We have a staff that is basically unmatched. They’ve been here for years – everyone is like family,” she said, adding with a laugh, “which is sometimes good and sometimes bad.” That last one was directed to Paula Brown, who was quietly eavesdropping on the conversation and returned the barb with an eyeroll and a knowing smile. It’s an effortless rapport that all of the staff seem to share, a familial bond that they are quick to extend to customers. Sometimes the only thing better than the food is the conversation with the waitstaff. “We give them happy pills when they come in here,” said Leslie, eliciting chuckles from some of the nearby staff. “To be honest they’re just that group of girls. They’re not shy, they’re not timid. When a server is young they have that shy thing going on, where they’re not comfortable at the table. These girls can do it blindfolded, so the conversation comes naturally to them.” Then again, the food at Sunrise Café holds up its end of the conversation as well. Along with the mammoth list of breakfast and lunch items there are two special menus – one listing the regular rotation of blue plate specials and one with that day’s offerings. “We might have had 20 items when we first opened,” said Leslie. “We went from one small menu to three just trying to meet the needs of what people want right now.” And there’s plenty to choose from. The shrimp hash, which sees two eggs on top of a mountain of shrimp, browned potatoes and veggies. The steaks, hand-cut from a full New York strip. Fried chicken eggs benedict (“That one goes over well, but it is not light.”). And each is weighed carefully to not only earn its spot on the menu, but satisfy the strict criteria the Stewarts have set. “We don’t do anything out of a box,” said Leslie. “Stew has spent a lot of time finding certain products.” That includes several local purveyors, from Sprout Mama bread to River Root Farms. And as a matter of principal, Leslie refuses to allow any seafood into the restaurant which has traveled more than 500 miles. “I grew up in North Augusta, and my dad would get up randomly one morning and come down here to get shrimp and bring them home so we could peel and eat them,” she said. “So no Vietnamese shrimp for me.”

It’s a strict adherence to quality. But when you combine those standards with a staff who treats everyone like family, even each other, you get the kind of restaurant people come back to, year after year or week after week. And, as one visitor proved during the writing of this story, the kind of restaurant that inspires works of art.

It’s a concept.

It involves friendship and family -- Bringing people together to share good food and good times.

It’s a recipe.

The ingredients are simple and fresh and the result is delicious.

It is also a tradition.

An Italian one born in Naples.

MidiCi Italian Kitchen has been open on the Island for less than a year, but already has the makings for the perfect meal. At MidiCi, it is about more than great food and fresh ingredients –it is about feeling welcome, being part of a greater family that welcomes you with open arms. It is a place where you go for a good meal, but leave with new friends. It is a place that embraces you and makes your experience the best it can be. The restaurant is full of quotes on the walls, but the one that greets you on the mirror in the bathroom says: “You are the best thing that can happen to anyone.” At MidiCi, it is all about you. MidiCi loosely translated means “You tell me” in Italian. According to Luke Saleeby, owner of the restaurant with his wife Alison, “You tell me what you want and we’ll make it happen. Feel welcome, enjoy your food, and leave with a smile on your face.” Alison added: “We are about personal touch. We like greeting the tables and making an impression. We are not a food factory. We want people to come and stay. We are about family and connections.” The Saleeby’s road to owning a restaurant is an interesting one. They met while studying for their masters at USC and both went to work in corporate for The Home Depot in Atlanta – Alison in finance and Luke in merchandising. Hilton Head became their go-to family vacation destination and they eventually purchased a home here. After a brief move to Oregon for a job opportunity and to show their three children a new landscape, they squared off with some health scares and Alison decided to hang up her corporate suits. Faced with a decision about their future, the couple started looking at options that they thought their children would like. What better than a pizza restaurant in paradise, especially one that focused on all fresh ingredients and not preservatives? When you enter MidiCi, you immediately feel part of a vibrant, open atmosphere where there are no walls or barriers. 16

“It is very social here. It is open so everyone knows everyone. It’s a good vibe,” explained Luke. The kitchen area is called the heart – the beating focal point of the restaurant – which is open and visible from all tables. The heart is home to the bar, kitchen, and sparkling gold pizza oven – the center of the heart and source of all MidiCi pizza ‘wonderfulness’. The oven, crafted by hand by the Acunto Family in Naples, weighs about 4 tons. It


has a domed top and small oven mouth and houses white oak logs that fire up an internal temperature of over 800 degrees to cook a pizza to perfection in less than 2 minutes. According to General Manager Ben Schuman, “The open kitchen is part of the performance. This is a place where things start clicking and buzzing and everything works in sync.” The menu at MidiCi was developed by Neapolitan certified chefs. Everything on it has a calorie count and all pizzas and pastas have gluten free options. “Our pizzas are not glopped up. They are very satisfying and fresh,” said Luke. The dough, mixed up every morning and left to rise all day, contains only 4 ingredients. The base for the Margherita, their signature pizza, is San Marzano tomatoes crushed fresh daily with some salt and basil, topped with fresh mozzarella– simple, fresh, cooked to Neapolitan sublimity like they have been doing it for 300 years. Other bases for their pies are Homemade House Pesto, Truffle Cream, and their White Pizza base is olive oil, basil, oregano, and garlic. There is a large list of toppings that can be added to any pie including Proteins, Premiums like black truffle cheese and prosciutto, Veggies, and Cheeses. Specialty Pizzas abound for those who want to meander from the norm. The Devil’s Pizza is a spicy option with spicy sausage, spicy salami, and red chilies. There is an Egg N’ Bacon option for the breakfast lover and From the Garden is a Vegetarian alternative with spinach, peppers, onions, and olives. If you have a non-pizza lover in your party (gasp!), no worries --there are lots of options. Salads are large and full of fresh greens and homemade dressings. The most popular salads are the MidiCi House with greens, arugula, grape tomatoes, and parmigiano-reggiano with balsamic vinaigrette, the Walnut & Gorgonzola Salad and the Italian Salad. To round out the full Neapolitan menu, there are a host of pasta dishes for the ‘grande appetito’. The Spaghetti Bolognese and the Spaghetti and Meatballs use 100 percent Angus Beef and are deliziosa. For those with a penchant for Penne Pasta, the Penne Vodka and spicy Baked Penne Arrabiatta are right up your alley. Appetizers and desserts should be part of the greater plan as there are house-made wonders to put an exclamation point on the perfect MidiCi meal. There are “Shared Plate” appetizers like meat and cheese plates and small plates like the Burrata Caprese and Burrata with Melon and Prosciutto (Burrata is a yummy Italian cheese made from Mozzarella and cream). The signature dessert is the Nutella Calzone which has fresh fruit

inside and out; it is on display in the kitchen area but take heed -one look and there is no turning back. There is also Tiramisu, Cannoli Siciliani, Affogato, and Gelato & Sorbetto. The Espresso machine, made with handhammered copper from Italy, serves up fresh ground Italian beans in every cup. The $8 menu for the bambinos (kids) includes an entrée of pizza or pasta and a very grown-up trip to the gelato station to choose their scoop for dessert. No trip to MidiCi would be complete without a stop by the bar which is full and fun and is the perfect place to get a bird’seye view of the excitement in the kitchen. The wine menu is quite varied and features varietals from Italy, California, and the Northwest; happy hour pricing includes house wines $5 a glass, domestic bottled beer $3 and craft drafts $5. Craft beers are mostly local in nature like River Dog and Westbrook, but there are also Italian crafts to try like Peroni and Moretti. Signature Cocktails include the popular Italian drinks of Negroni and Limoncello and the Devil’s Margarita will cure what ails you. There is also a full complement of spirits to please all palettes. Dine indoors or al fresco. Come early, stay late, and bring the whole family. Meet old friends, make new friends. Flip-flops are welcome! MidiCi is open daily and Happy Hour is from 4 to 7. Tucked under the oaks in Harbour Town, CQ’s signature dishes embody Executive Chef Broderick Weaver’s passion for the best produce and cuisine from the Lowcountry bounty. BLOODY POINT MIXING CO. A better Bloody Mary was just the beginning for this local mix with global aspirations. BY BARRY KAUFMAN

We hate to be the one to tell you this, but your Bloody Mary… it isn’t great. Good, maybe. But not great. If you’re using one of the big-name mixes, your Bloody Mary is loaded with sodium, GMOs and preservatives, and its flavor profile is a flat, boring mess. And not to pile on, but the mix you’re probably using is also lazy, existing to just make a forgettable Bloody Mary and that’s it. That’s if you’re using one of the big-name mixes. Bloody Point Mixing Co. very intentionally skews in a different direction. “Everything we do is different,” said founder Justin “JJ” Johnston. “Everything we do is healthy, and everything we do is to show that there are multiple uses for our mix.” Let’s start with the healthier aspects of Bloody Mary’s lineup, which includes three varieties of liquid mix and a revolutionary powdered mix called Bloody Point Evolution. When he began developing the new brand from his original Your Mom’s Kitchen mix, Johnston did so with an eye on natural ingredients. “I upgraded, using a higher-end, cleaner version of every ingredient…. The Bloody Point Evolution is all-natural non-GMO, lower sodium and it’s gluten free.” Those upgraded ingredients include herbs like rosemary and fennel that boost the flavor profile, allowing him to cut back on the salt which makes up most of the big-name brands. In fact, when you do the math on serving sizes and can compare Bloody Point against the mainstream mixers, you find that it has as much as half the sodium content. “More and more people are starting to notice things like sodium content. Other companies are hiding

their sodium with serving size,” said Johnston “We have one of the healthiest Bloody Mary’s.” Beyond just being healthier and cleaner, Bloody Point Mixing Co. is more versatile. Let’s say after a round of drinks you still have half a bottle left over. Take the rest, sauté some onions, chop up some basil, get some heavy cream and make a Bloody Mary basil soup. If you want more inspiration, you’re in luck. Bloody Point Mixing Co. will soon roll out a cookbook showing the many ways the mix can upgrade your culinary game through 100 different recipes, only six of which are drinks. “The book goes everywhere, from salads dressings and sauces to soups, seafood, pastas...” said Johnston. Among his favorites are the Bloody Mary deviled eggs and the aforementioned Bloody Mary basil soup. “It is so easy, but it’s amazing.” The book also highlights their latest product, Bloody Point Evolution, a firstof-its-kind innovation that is already making waves. “I think it’s going to take off. That product won a national Bloody Mary Taste Testing competition,” said Johnston. “And they didn’t know it was a powder.” Like everything from Bloody Point Mixing Co., the powder makes a mean Bloody Mary, but it also carries its weight in the kitchen. GOOD DRINK The true story behind the official drink of a buzzy brunch. BY BARRY KAUFMAN

There are certain things that may seem like opinions but are actually irrefutable facts. You don’t pair red wine with sushi. A slice of New York City-style pizza should be folded in half before eating. And most importantly, no bad day ever started with a Bloody Mary. It’s the quintessential brunch drink, a lively, peppery blend of flavor notes that refreshes, invigorates and only mildly intoxicates. It’s the launch pad for a relaxed day and a surefire cure for a hangover. Again, these sound like opinions, but they are very much facts. The line between opinion and fact blurs again when you try to determine who the Bloody Mary is named for. According to one version of the story, when Fernand Petiot mixed up the first Bloody Mary at Harry’s New York Bar in Paris, one of the patrons suggested the name in tribute to a woman he knew named Mary, a server at the Bucket of Blood Club in Chicago. Another version holds that “Bloody Mary” is just a mispronunciation of Vladimir, with the drink being named for Vladimir Smirov of the Smirnoff vodka family. There are even some who will tell you the drink was named for Mary Tudor, the famed 16th century “Bloody Mary” whose claim to fame was having a bunch of protestants killed. That’s a 26

pretty dark backstory for a drink, so we’re going to rule that one out. Whoever it was named for, it’s a fact that Petiot was the first to mix tomato juice and vodka, only adding the trademark seasonings, citrus and spice after making his move to the St. Regis Hotel in New York City. The name Bloody Mary came with him, despite St. Regis management attempting to rename it the Red Snapper. From there, the legend of this drink spread. As it wandered further from New York City, enterprising bartenders and mixologists began putting their own spin on the classic, whether it was swapping out the vodka for tequila for a Bloody Maria or adding Clamato to make a Bloody Caesar. The riffs and variations are endless. There’s the Green Mary with its tomatillo base. The Peruvian Mary which swaps pisco for vodka. The Michaleda which introduces beer to the mix. In Maryland they add Old Bay. In the southeast, chilis. But the true evolution of the Bloody Mary is what has happened above the rim. Petiot’s original lemon wedge has been replaced by a single stalk of celery, but that only scratches the surface of how the Bloody Mary’s garnish has changed. At times, it almost seems like an arms race to see who can fit the most food on top of a glass, with Bloody Marys boasting strips of bacon, shrimp, cheese cubes, stalks of asparagus and entire cheeseburger sliders. At That Good Boy in Oceanside, California, you can get a Bloody Mary topped with three baby back ribs. At Score on Davie in Vancouver, Canada you can get the Checkmate Caesar, topped with a whole chicken, a burger, three wings, a BBQ slider, a hotdog and a brownie. But the conversation about absurd garnishes ends with bartender Sarah Jayne Pickart at O’Davey’s Pub in Fond du Lac Wisconsin. Her $5 Brewers Bloody boasts an artery-clogging arsenal atop its glass which includes a soft pretzel, a hot dog, a cheeseburger, roasted peanuts, a slice of bacon stuck inside a full bag of popcorn, nachos, a roast beef sandwich, four different kinds of sausage and an assortment of veggies that are clearly out of place among such junk food. Oh, and a Milwaukee Brewers flag so you can signal the paramedics when they arrive. Each variation has added its own twist to the classic, and each garnish has layered in new novelty, but with each twist they’ve only added to the staying power of the classic Bloody Mary. “To me, a Bloody Mary is about balance,” said Justin “JJ” Johnston, owner of Bloody Point Mixing Co. “All of our products are designed so they build on the back of the palate. That savory note lingers a little bit. If you put hot sauce in it… it puts the flavor on the front of your palate and screws it up. If you use some cayenne pepper instead, it keeps the essence of the Bloody Mary but gives you some heat.” Being as they are one of Hilton Head Island’s go-to brunch hotspots, with no less than an official nod from Garden & Gun, who called theirs one of the best in the Southeast, the folks at Sunset Grille know a thing or two about Bloody Marys. “Ours is made using smoked poblanos, there’s no horseradish in it or anything,” said Hugh Lockman. The smoked poblano sauce, which gives their shrimp and grits their kick, pairs perfectly with Clamato and vodka for a drink that’s all flavor without the heat. “It’s just smoky and absolutely delicious.” The simple fact is, the strength of a Bloody Mary comes from the fact that it can be anything you want it to be. If you like it spicy, you can have it spicy. If you’re not a vodka drinker, you can swap it out and maybe create something new in the process. If you want a Bloody Mary but you’re also hungry, clearly you can just add an entire buffet to the top. It’s an anything goes kind of drink. And that’s what makes it the best way to start your day.

PALMETTO BAY MARINA

Rebuilding One Brick and One Boat at a Time BY RISA WILLIAMS MCMILLAN

Palmetto Bay Marina (PBM), the oldest marina on Hilton Head, has been an Island presence for over 60 years. It has seen its fair share of glory days and then, like a Salty Dog, has shown its dark side through age and neglect. The crowning blow of demolition to the marina came in October of 2016 with the arrival of Hurricane Matthew which picked up the boats and docks like an angry child and threw them on the shore; the result was total destruction to the docks with no functional owner to put the pieces back together. Fast forward 2 ½ years and enter the marina’s new guardian angel, Palmetto Bay Marina, LLC, who bravely took title to the marina last April and has been rebuilding it one brick and one boat at a time. According to Kuy Scott, the on-sight manager and representative of the new owners, “The marina could not be in more financially stable hands.” This is good news to the restaurants and retail stores that call the marina home who have endured, most recently, ownership mired in law suits, corruption, and bankruptcy. Why would someone undertake such a colossal chore of rebuilding a fossil? “We have a fair amount of knowledge in marinas and experience in stabilizing distressed real estate. We knew exactly what the challenge would be,” said Kuy. “There are 100 problems to fix and we just pick 5 at a time.” There are many facets to the rebuilding of the marina both on land and on sea. The docks will be rebuilt in the same footprint as the old docks in two phases. While the outline of the docks will be familiar to boaters, the material and strength of the docks will be light years better. “The old docks were in terrible shape and probably should have been replaced ten years before the 40

hurricane hit,” commented Kuy. The new docks will have an aluminum frame that will house a Brazilian Wood that is dense and strong. All the electrical components are being replaced and new 10,000 gallon fuel tanks will be installed in the parking lot. “There were issues with the gas lines and water contamination before. In effect, everything has to be brand new.” Phase 1 of the dock rebuilding will be 100% geared toward commercial and is scheduled to be complete this fall. “We want to have a huge commercial presence,” explained Kuy. That means charters of all shapes and sizes – fishing, parasailing, dolphin watch, sailing, boat rentals, kayaks, paddleboards, jet skis, waterskiing – their plan is to have it all. Phase 2 of the docks will be the left side of the marina, geared for residential and transient dockage. “We want to make Palmetto Bay Marina into a destination like Freeport where people can come for a day or a week,” said Kuy. “We are a lot closer to the Intracoastal Waterway than some others, we have cheaper fuel, and we have great options for food.” Along with Phase 2, showers and bathrooms will be built on the dock. “The bathrooms will be on the left side facing the water and they will be nice. It is the only way to do it right for the transients.” The docks were not the only things in need of sprucing at Palmetto Bay. “With everything going on, we have had on eye on aesthetics. Everything needed attention, even the little things,” commented Kuy. Given the age of the marina and nobody around to offer TLC for many years, this has been almost as big of job as replacing the docks. Short of razing the buildings and starting over, which they did consider, Palmetto Bay Marina LLC has bared no expense. Work has been continuous for


months with the biggest undertaking being the bathrooms which were totally gutted and redone from floor to ceiling. All the buildings received a fresh coat of paint, making everything a uniform color and all of the light bulbs were replaced with same LED bulbs to make that uniform too. The rotten wood, which there was a ton of, was replaced and new awnings were raised to make the restaurants less weather-dependent. Power washers were busy cleaning floors, walls, and ceilings while new modern lighting fixtures replaced antiquated ones. There are new steps out front and landscaping and parking lot improvements will be an on-going project. Has all this work disrupted the businesses in the marina? “Everyone is on board and sees the big picture. We just want the businesses in the marina to give us time and everyone will benefit. We understand that the marina was under absentee ownership. This is about more than spending money. We want the tenants to be happy.” Businesses that occupy the commercial areas of the marina have revolved a bit through the years, but the most tenured of those have been the ever popular Sunrise Café and the Black Marlin Bayside Grill, home of the Hurricane Bar. Newer to the scene is the Carolina Crab Company and for fun resort-wear shopping there is Bay Breeze. Leslie Stewart, owner of Sunrise Café which has been a cornerstone at PBM for 17 years, is thrilled with the direction the marina is headed. “For the first time ever, I believe the ownership is going to be good for the marina. These are southern gentlemen that are true to their word. They are here

to make us happy and want us to stay. There is a new air about the place – it is lighter. With the rebuilding of the marina, they will create a destination. We will benefit from that,” said Leslie. According to Keith Reilley, one of three Reilley brothers who own Carolina Crab Co., “The new owners have brought hope to the marina. They are present for our questions and want to find solutions. With the docks being rebuilt, we will have more foot traffic and the clean-up is a draw for the locals. The future is bright.” While we look forward to the future, it is well worth a peek back at PBM’s illustrious past, for if the docks could talk, they would have quite a story to tell. The marina was constructed in 1958 by the Dunbar family and was home to recreational and charter vessels and many a fine fishing tournament. According to Chris Wimmer, former harbor master for 30 years, the first transient boat to tie up was a 42’ sailboat named “Dutch Treat”. “During the mid 70’s, PBM was owned by three young businessmen / sailors --Gary Wheatley, John Rumsey, and Bunky Helfrich. They were also friends of Ted Turner who had a house on a nearby Island. It was during this time that Turner became involved in racing in the ‘America’s Cup’ and Gary, Rumsey and Bunky were his crew! Turner’s boat, ‘Courageous’, won in ‘74 and ‘77 and ‘Courageous’ was docked at PBM on more than one occasion!” recounted Chris. NUTRITION PLAN or Nutrition Path? BY CHRISTY BARONI

Nutrition is a lot like politics and religion: everyone has an opinion and it’s deeply personal. I learned early on in my coaching practice that when I ask someone about food, they tell me about their family. Ask someone how they eat, and they will share how they were raised. We live in a culture where food is often how we commune, how we celebrate, and how we communicate that someone is important to us. Food, and our relationship with food, is deeply ingrained and carries not just science, preference, and opinion, but also emotion and attachment. Disassociating that relationship is not the goal. We can walk that fine line of

disordered eating when we see food as fuel only. At it’s most basic component, yes food is the fuel that energizes our body. In many cases, it is the source of either wellness or sickness. However, food carries more weight than that in our society and we can miss out on valuable and beneficial experiences if we hyperfocus on food being either ‘good’ or ‘bad’. Wanna know the truth? Food isn’t good or bad, it’s just food. It is our relationship with food, our attitude toward food, that is either beneficial or harmful. If we go back to some of the very first documented meals in recorded history, we see that when Jesus himself


had something really important to share with his followers, he had a meal. This is all good and well if you are on a clear path toward your goals. But what if you aren’t? What if your relationship with food is holding you back in other areas of your life? To the mom who misses out on pool shenanigans because she doesn’t want to be in a swimsuit… to the dad who can’t play catch in the front yard because he lacks the energy… to the young person who is facing a Type 2 diabetes diagnosis… this is your body screaming at you to get right with food. Just like any relationship that has gone off track, your relationship with food can be saved and can be lined up with your goals. Let’s take a look at some simple places to start. Keep a food journal. A log of what you eat and when may be helpful, but let’s take that one step further. What if you tracked your mental state when both preparing and consuming food. Does cooking give you stress? Do you panic about what’s for dinner? Do you feel rushed and anxious when looking for where to go for lunch yet again? Keeping track of the emotion you experience when preparing food will give you incredible insight into your relationship with food. Preparing food is a life skill that many people simply don’t have. Ready for some good news? It is never too late to learn to prepare food! A cooking class, an online tutorial, even following some foodies on Instagram can close the gap for you. Identify your food habits. We all want that quick fix when it comes to righting our relationship with food. But the doubleedged sword here is that quick fixes are usually fleeting. Instead of focusing on what to eat, when to eat, or what ingredient might be harmful, take a bigger picture look at your habits. Do you find yourself starving at night and then overeating before bed? A habit of adding more protein to your dinner could help with that. Do you find yourself downing multiple glasses of wine before even sitting down to your meal? The ‘Every Other Rule’ can help with that. The ‘Every Other Rule’ is a habit of following every alcoholic beverage with a glass of water. This helps keep you hydrated, helps you feel full, and also forces that moment of judgment about that next cocktail. Tell a friend. Ok, this one sounds too simple. Just tell a friend? How could that help? Often times the simplest act is the one that is the tipping point for change. The simple act of speaking out loud what you’d like to change can be life-changing. Consider telling your partner that you’d like to trade your evening cocktail for a cup of tea. Consider asking your bestie if she’d like to split an entree at your favorite restaurant. Consider telling your gym friends when you’ll be back, so someone will be expecting you. Speak truth over your habits. What would you like to be true about your life? Say it out loud, and watch the universe answer in kind. So maybe the idea of a nutrition plan is misguided. Perhaps a nutrition path is more comprehensive. What’s your path? Are you on your own path? MATT ROBBINS BY TAYLOR KENT

Matt Robbins hasn’t had an off day in 26 days. He tells me in a matter-of-fact manner, not looking for any sympathy. For island musicians playing night after night in the heat of the lowcountry summer, maintaining such a rigorous schedule is practically unheard of. But Matt isn’t the type to complain. In his soft-spoken voice, he remarks, “Most of the time, I know I’m blessed.” With his signature golden “man bun” and expert acoustic guitar skills, Matt Robbins has quickly made himself a staple of the island music scene. Despite only being a full-time islander for two years, he is now well-known and well-respected amongst the Hilton Head community. Robbins was first introduced to the island in 2014. He was halfway through with obtaining his undergraduate degree from Western Kentucky, and school was out for the summer. A connection from his college happened to own a Hilton Head restaurant, and offered Robbins a nightly stint playing music at what was then Steamers Seafood in Coligny Plaza. Robbins accepted, and so began his first summer on Hilton Head. He promptly saw what’s so special about the lowcountry and how musicians can use the island to their advantage. As Robbins put it, he enjoyed treating music “as a career instead of a hobby”. He’s been back on the island every summer since, and moved to Hilton Head permanently in 2017. An accounting major, Robbins describes himself as predominantly “left-brained”, a rarity for the stereotypical musician. He grew up in Richmond, Kentucky, and was highly interested in academics. In middle school band class he picked up his first instrument, the alto saxophone, and later taught himself to play guitar and drums. Matt played soccer growing up and was on his high school’s swim team, but as he got older, he found music taking more and more precedence in his daily

interests. By age 15, he began booking local gigs around his hometown. At 17, he was having “rockstar daydreams” of packed venues. Upon his high school graduation, he found himself drawn to the highly renowned Berklee College of Music in Boston, Massachusetts. However, at the urging of his parents, who wanted him to pursue more conventional studies, Matt instead enrolled at Western Kentucky. Dreams of Berklee, though, still remained prominent in his head. He decided to apply after completing his bachelor’s degree. Matt considers the best day of his life to have been the day he received his acceptance letter from Berklee. In 2016, he made the move to Boston for what he later would view as the most beneficial time of his music career. Logistic by nature, Matt thrived tackling the music theory he was taught at Berklee, and gained a newfound appreciation for the mathematics and patterns of music. His time in Boston also led him to discover new genres of music that continue to serve as influences for him, such as jazz and neo soul. After a year at Berklee, he returned to the island to officially become a full-time musician. He’s been gigging almost constantly ever since. When it comes to dedication, Matt Robbins is unmatched. The next accomplishment he plans to check off his list is to release an EP of original music, his first published work. Robbins is hoping to use the autumn months as recording time, although his gig schedule will hardly slow down. As the house musician of Coligny’s Sandbar, he will continue entertaining there five nights a week through the fall. You can catch Matt at the Sandbar, on the beach playing volleyball, or at Conviction Training Facility, and you’ll be met with a gentle smile and affable conversation by someone who is considered a friend to all. (Altered) State of Mind More than corn, grains or rice, the key ingredient in

An Early Sampling

While the distillery is not up and running yet, samples of the launch product currently aging at a separate facility are kept in Sean Watterson’s “laboratory” inside Watterson Brands. We were able to sneak a few sips. “We don’t like when people hint at flavor,” said Sean, “because it disappears so fast or you have to over garnish it to make your nose think that your mouth is tasting it. We’re very forward with things. We’re like, ‘Don’t hide it, bring it up.’” First there was the Bluffton Whiskey, the one brand whose name has been confirmed. A deep, mellow whiskey, this benefits tremendously from the Carolina Gold Rice for a distinctive profile. There are two bourbons – a four- and six-grain variety. The four grain tempts the palate with a hint of sweetness for a perfectly sippable bourbon. But it’s the six-grain that truly shines, with a complex flavor that could make it Old Town’s go-to. The cinnamon whiskey wisely avoids the saccharine sweetness that usually informs your major label brands, settling into a smokey appeal with hints of what this taster swore was gingerbread. For the record, there is no gingerbread, and this taster was a few samples in. One dark horse standout of the bunch was the chocolate moonshine, which seemed impossibly velvety and rich. If you remember how ice-cold Yoo-Hoo tasted when you were a kid on a hot summer day, you have some idea of how this tastes.

Many of us have made lofty plans while sipping back drinks. Tomorrow, we promise to a fresh glass, will be the day we finally pursue that dream we’d long held. Tomorrow we’ll tell that boss how we feel, start working on that novel, finally ask that someone out on a date or start hitting the gym. Those plans usually evaporate with the first light of dawn. Except in the case of brothers Billy and Sean Watterson. Billy, a serial entrepreneur, was always in pursuit of his next big passion. Sean was approaching semi-retirement. In the wilds of South Dakota, pouring drinks around the campfire, their conversation had turned to that eternal question: What do you want to do with the rest of your life? “We ended up landing on, of all things, ‘What about whiskey?’” said Billy. It took them a little less than a year, but after mulling over the possibilities, they were agreed. Sean would move down to join Billy in South Carolina, and the brothers Watterson were going into the distilling business. “We were really just starting from scratch,” said Sean. For six months, he dove headfirst into the process, looking at each ingredient with the seasoned eye of a foodie to determine what each added to the flavor profile. He attended


Moonshine University in Louisville Kentucky to get what he called a “crash course” in the business, taking him from individual grains to distilling, selling and marketing. “I got some opportunity to taste distilled products and individual grains, and that really allowed me to understand what each individual contribution was,” said Sean. “And then from there we were able to say, ‘Now we want to write these recipes. We want something different.’” Those recipes became a fully fledged product line of eight different brands, including five whiskeys, four gins, three vodkas and five different flavors of moonshine. Currently in production at a craft distillery using the same equipment Burnt Church will eventually use, the names of each label have yet to be announced, save one: Bluffton Whiskey, which will get its flavor profile from Carolina Gold Rice. That sense of place is key to what the brothers are doing with Burnt Church Distillery. Each brand will celebrate a different aspect of Bluffton’s culture and history, whether in name or ingredients or both. And when it opens in June of 2020, the distillery itself will serve as a 20,000-square-foot love letter to the Bluffton State of Mind. “The first thing you experience when you walk in the doors, on the left-hand side, is a massive display of the history of Bluffton,” said Billy. Partnering with the Bluffton Historical Preservation Society, the distillery looks to serve as Old Town’s

front door. “The hope is you’ll take whatever information you get and as you make your way into Bluffton you might explore the Heyward House or look around. We’re right in the gateway and we’re part of Old Town now, so we want to promote that and talk about it.” “We want people to drink their history,” added Sean.

A Sip and a Slice When Burnt Church Distillery opens its doors, it will also serve as the debut of Pizza Co.’s second location. Like the first location, which set to open in July on Hilton Head’s Main Street, the Bluffton branch will serve 90-second pizzas from a massive Marra Forni oven, using an Americano-style crust developed by Marshall Sampson. “I had the opportunity to sit in on some of the tastings,” said Sean. “I’m very finnicky about pizza, but the crust, the sauce, the way it stands up to the sauce, the ingredients… It is really good.
