PUBLISHER’S NOTE Over the years, I have tried to keep myself in decent shape. I thought that exercising on a regular basis was more than enough to maintain a healthy lifestyle. This actually did seem to work until recently when my metabolism slowed dramatically and no matter how much I exercised, the pounds refused to drop and on occasion actually increased. Of course, one little important nugget I left out is my weakness for a good meal. Due to my line of business, I feel a sense of duty to eat out and frequent the fine restaurants that fill the pages of this magazine. Not only is it one of my last great vices, but a very enjoyable experience that I do not intend on giving up soon. So now, the dilemma is how to keep enjoying one of my last remaining pleasures in life without adding those extra unwanted pounds. I have come up with a plan that involves two things that are very new to me -a variation of both diet and exercise routine. By eating healthier and changing up my workouts, I hope to not only lose a few pounds, but to gain energy, endurance, and flexibility. My friend, Craig Hysell, who owns Conviction Training Facility, has been urging me to try Crossfit for years and with an extra push from my daughter, I took the plunge. To say this changed the way I exercised would be a huge understatement. It’s only been a couple of months, but I can tell the difference already. Obviously Crossfit is not for everyone, but the point is that by changing up my routine, I gained the desired results. As for eating healthier, well that’s a work in progress. I have added a lot more fruit, a little more vegetables, and have cut back on sweets and starches. This by no means is a strict diet, but again by varying up my routine I can see results. In this day of farm to table, gluten free, and all the healthy options becoming more and more prevalent, eating healthy is easy and readily available even when eating out. I have seen 'faddy' diets come and go, fitness crazes and equipment change like the wind, and opinions constantly vary on what to eat, how to exercise and what is healthy and not. Sometimes, I believe, people put too much pressure on themselves to try extreme things to look for instant results which never seem to last. So if you are stuck in a rut with diet and exercise, try to get out this fall and change things up. Your health and wellness is in your hands, nobody else's. Be honest with yourself and make positive changes. Just remember, if you’re not moving forward, you are standing still! David Mudwilder Publisher

Eclectic? Yes. Unique in food, drink, and song? Yes, yes, and yes. Does the owner and chef (who happen to be the same person) have a method to his madness? Why yes, as a matter of fact he does. Because for Clayton Rollison, the Lucky Rooster is the culmination of a life-time of preparation in the food industry that has led him to the ultimate coup for a top chef -- not only starting his own restaurant, but really making it his own from the inside out. Everything from the ambiance, which is a crossroads of where rustic meets elegant, to the innovative menus for dinner and cocktails, is Clayton’s vision. The Rollison family moved to the Island in the 1950’s when there were dirt roads, lots of snakes, and no bridge to the mainland. Clayton attended local schools and has always been part of the restaurant business from his uncle’s restaurant to his father’s barbeque. He spent his summers working as bus boy, bar back and doing some cooking at local restaurants before his love for the trade took him to the Culinary Institute of America. When he put his studies aside, Clayton ventured to New York City. In New York he was able to work for Waldy Malouf at Beacon, David Burke at David Burke Town House, and he spent the most time working at Gramercy Tavern for Chef Michael Anthony who was James Beard’s Most Outstanding Chef of 2015. “You work for one guy and he sends you on to the next one. There’s a whole network. I studied with one chef who helped change the face of Bistros in France. It was literally blind luck and by the Grace of God that I’ve gotten to work with these amazing chefs and some of it has hopefully rubbed off,” commented Clayton. After working and learning in New York City and working at the Hermitage Hotel in Tennessee as Sous Chef, Clayton was ready to move back to Hilton Head with his wife and start his 10

own restaurant in a market that he understood. “Our goal with the Lucky Rooster was to become a neighborhood restaurant for the local community. We wanted classy and nice but comfortable. The Lucky Rooster opened its doors on December 5th, 2013 and has constantly looked to improve itself, riding on Clayton’s vision, knowledge, and talent. When you walk into the Lucky Rooster you feel right at home. The earthy tones and warm lighting draw you to the bar area which is polished to a shine and the hanging wine glasses are contrasted and accentuated by the copper mugs. The dining area is made up of both tables and booths covered with white linen table cloths topped with fresh flowers on a platform of quartz. Don’t worry about rubbing elbows with your neighbor, as the tables are well spread apart. The music that pipes in varies with clientele and ranges from Otis Redding (early crowd) to Metallica (late diners) to create an environment with energy. There are chalkboards in the bar and dining room with suggestions for food and drink like their bar snacks of Roasted Bone Marrow and Fried Chicken Skins. The featured


cocktail, along the lines of Citrus Berry White Sangria, will also be etched on the board. You can also read anecdotes on the wall like this quote from Martin Luther, “He who loves not wine, women, and song remains a fool his whole life long.” Everything that Clayton does with the Lucky Rooster, is done well and done a bit differently. Take his cocktails for example. They are classics – original recipes that are served with high end spirits. “Our spirits are esoteric and interesting,” described Clayton. Instead of Sweet and Dry vermouth that sits on a shelf, they use quality vermouth “stored properly” in small bottles. “We use the broader spectrum of the spirit world that the rest of the Island is only starting to catch up on.” Aside from Craft Beers, they have cocktails, wine and house soda on draft. Their house soda is a Ginger Beer that is spicy and fresh and is made from scratch. They serve it out of the tap and it is a favorite mixer with any spirit from the shelf. There are three cocktails on tap, all of which are 100% alcohol “because you cannot serve juice from a tap yet.” The classic is their “Brooklyn” which is Irish whiskey, vermouth, bitters, and maraschino. The wines on tap are

organic and sulphite free. “We take pride in our ingredients. We offer a higher quality experience in a price conscience way. We do not use inexpensive ingredients.” The wine list at the Lucky Rooster features some 150 wines that range from affordable ones from Portugal to approachable California Cabs to a French Bordeaux. “All of our wines serve a purpose on the list with a style and customer in mind and we want people to trust us to help them choose.” Prices range from $29 to $400 a bottle. The food menu, like the wine, has both “funky” and “comfortable” offerings. “We are an American Bistro with a southern soul. We cook with the seasons in mind so while we have some year round dishes, many change according to the tides, seasons and inspirations.” For the fall, their dishes will feature things like leafy greens, turnips, Brussels sprouts, and squashes. Look for a beet salad with bleu cheese and dried cherries as well as dishes that include roast apples and sweet potatoes. Appetizers include the elegant Foie Gras Sandwich and the extreme Octopus a La Palancha. The seafood is always fresh, as Clayton

works with a local fisherman to plan his nightly menu. Daily specials include fresh delicacies like Triggerfish, Sheepshead, Redfish, and Lion Fish. Shrimp and grits is always a favorite. “Our dishes are not all traditional but rather refined comfort food,” said Clayton. “We use lots of flavors, some traditional, and prepare them differently to make the dining experience unique.” For the less bold in your party, they offer a Lucky Burger as well as many cuts of steak. Less than two years old, the Lucky Rooster has already made a name for itself on the Island. Diners feel comfortable eating there and enjoy first rate hospitality and delicious but uniquely prepared food. It is a dining experience that can be savored and enjoyed as nobody will be anxious to see you leave. AUNT CHILADA’S

An island institution moves forward by going back to its roots. BY BARRY KAUFMAN

If you were so inclined to build a Mount Rushmore of the island’s iconic restaurants, you’d almost certainly have to include the venerable Aunt Chilada’s. From its Pope Avenue perch, it has watched the island grow up around it, offering a delicious meal and a cold beverage to generations of locals and visitors. You can almost tell how long someone has lived on Hilton Head by their Aunt Chilada’s stories. Some of the old timers will tell of returning from Hurricane Floyd’s mandatory evacuation and finding the Mexican standby hosting the welcome back party, since it was the only place on the island already back in business. And you can’t really call yourself a local if you don’t remember the thick ivy that once covered the building’s façade, giving it the feeling of a restaurant forged from the island itself. Meanwhile, newcomers to the island 14

might find themselves pulling up a seat at the restaurant’s sterling new outside bar, underneath the shade of an Alpinetimbered roof and bathed in the hum of Hilton Head Island’s busy tourist season, and assume it had always been there. “That was by design,” said Brendan Reilley who owns Aunt Chilada’s with his Uncle, David Reilley. In fact, as much as it looks like this new spacious outdoor patio, with its stage for live music and prime location right on the bike path, is a part of the building’s original footprint, it’s only about a year old. Whether its architectural skill or hazy memories from the restaurant’s legendary happy hour, even some long-time locals might need convincing that it’s a new addition. The new bar, meshing perfectly with the vision of Aunt Chilada’s we all share, ivy-strewn or otherwise, is just part of a recent re-invigoration of the island institution. And much like the new bar, every nuance of Aunt Chiladas’ rebirth

pays homage to the storied past while ushering it in bold new directions. It’s a tricky task, made all the more perilous by the reverence islanders hold for the restaurant’s history. Founded in 1989 by the first family of the island restaurant scene, the Reilleys, Aunt Chilada’s emphasis was originally on Mexican and Tex-Mex cuisine. As the island grew, so too did the menu. Mexican cuisine was joined by a page of Italian specialty items, and a page of Irish fare, and a page of American dishes, and a page of


seafood. It almost got to the point where, to be frank, just making it all the way through the menu might fill half of your visit. With the new Aunt Chilada’s, the menu sheds all of its excess, tightening the focus and bringing the restaurant back to its roots with strong Mexican and Tex-Mex offerings. And like the new bar, the menu takes everything that was right about old-school Aunt Chilada’s and improves on it to the point of perfection. “We started paring it down about two years ago, and we finally got it where we wanted it while we were doing the remodel,” said Reilley. With the new menu, the flavors and technique of Mexican cuisine serves as a launchpad for some truly inspired creations. Take the Buffalo chicken taco, for example, which starts its life as a taco then takes a fiery turn with fried chicken bathed in tantalizing Buffalo sauce, blue cheese dressing, shaved celery and carrots. Much like the Philly cheesesteak burrito or the bacon cheeseburger taco, it’s hardly your typical taqueria combination. “We totally geared away from traditional Mexican and went towards feel-good food served in a Mexican way,” said Brendan. For those of you old-timers who long

for the expansive options of the old menu, rest assured there are still plenty of options outside the realm of Mexican fare for you, from chorizo and chicken pasta to baby back ribs. And of course, the all-you-can-eat crab legs still retain a spot of honor on the menu. You don’t throw that baby out with the bath water. “We probably sell more crab legs than anyone on the island,” Brendan said with a laugh. On the subject of “if it’s not broke, don’t fix it,” you’ll still find the island’s best margaritas here, their ranks joined by a bevy of layered cocktails and frozen drinks. And, of course, happy hour still puts those dollar coins with the famous Aunt Chilada’s sticker on them in your pocket with every drink. The staggering options on the old menu were born from a Reilley family ethos of providing a little something for everyone, and that’s still very much a part of the new Aunt Chilada’s. “We now have three completely

different atmospheres: the dining room for large parties and families, a very lively bar, and the patio with live entertainment which is an atmosphere of complete fun,” said Brendan. “So if you come here and want a relaxing dinner, you go to the dining room. If you want a party, you go to the patio.” This fundamental improvement to the finished product also reaches far beyond the walls of Aunt Chilada’s. As Brendan’s generation of the Reilley family takes the reins, they’ve introduced a new branding concept for the group’s many restaurants around the island. The Crab Group (Coastal Restaurants And Bars – get it?) now encompasses Aunt Chilada’s as well as the two Reilley’s locations, plus The Boardroom, Carolina Crab Company, and both Crazy Crab locations. From the company masthead down to the sheen on the new outdoor bar, Aunt Chilada’s is going through a fascinating period of evolution. It’s something that is bringing a whole new group of hungry diners in the door for the first time, and giving long-time islanders a chance to remember what made this restaurant so special in the first place. Russell Keane, executive chef and owner of NEO restaurant, has been developing his culinary skills since he was a teenager. He got an early taste working in the kitchen when his mother put him to work at the age of 13 in the restaurant where she was a staff accountant. He started peeling shrimp and shucking oysters in the fish market of Bodean’s Seafood in Tulsa, Oklahoma, and worked his way into the kitchen of the fine dining restaurant. Russell and his military family lived in Germany and in cities around the United States while he was growing up. He served in the US Navy during the first Gulf War in 1991 and furthered his cooking skills there. He then refined his cooking skills at Magnolia’s in Charleston, while working his way through Johnson and Wales culinary school. Chef Russell is quite famous around the Hilton Head area - from being the opening chef and general manager at Wise Guys, to preparing tasty menu items at Daniel’s. As the father of two daughters, Keane was horrified a few 18

years back to see what his kids were being served at school. That experience led him to learn more about the problems in the food system. Chef Russell is quite passionate about the significance of using only natural, organic, locally grown, and freshly prepared ingredients. After years of success working with some of the area’s finest restaurants, Chef Russell decided to open his own establishment, one where he could offer a fresh, locally sourced dining experience in a fun atmosphere. In 2012, he and his wife Madison opened NEO, a farm-to-table gastropub, in Moss Creek Village in the site that was formerly Upper Crust. Chris McDonald, formerly with Oldfield, is the Chef de Cuisine and Madison runs the front of the house. Chef Russell purchases his ingredients from local growers and suppliers, and 90 percent of the NEO menu is sourced from within 90 miles of his kitchen. “We are proud to partner with local farmers and fishermen to bring wild caught seafood and organic farm-raised

You don't have to go all the way to Louisiana to get your Cajun food fix – you can get a taste of the bayou right here on Hilton Head Island at Kenny B’s Cajun Seafood Hut. The cuisine is a blend of the various cultures of New Orleans, with some Lowcountry tweaking. Murals of New Orleans' Mardi Gras and the University of Georgia's bulldog are on the walls. Entrees lend to the atmosphere there’s voodoo pasta, and Taste of the Bayou, gumbo, jambalaya, and shrimp Etouffée, to name a few. The music is a great mix of Cajun and Dixieland. In addition to great food and atmosphere, with the southern hospitality you'd expect, it’s one of the few places you can order gator bites. Lavern Ballard, owner of Kenny B’s with her husband Ken, squeezed in some time to sit and tell us how they got into this business, and what it takes to be successful in it. Originally from

Trinity, North Carolina, she grew up being a tomboy. Lavern modestly shared that her husband was her first boyfriend. “My two protective brothers kept most guys away from me, and they certainly tried to discourage Ken as well, but it didn’t work.” They’ve been married for 28 years. Ken worked in New Orleans at the Convention Center and Louisiana Superdome, and that’s when they learned about Cajun food. Lavern said she usually had several jobs at a time. “My dad was a workaholic and so is my husband,” she said. “They say women often marry men similar to their dad.” Lavern works long hours at Kenny B’s, especially in the summer. “I wanted to raise a family and spend more time together. We had planned to have our own restaurant, so we relocated to Hilton Head in 1999, and began searching for a location.” She worked in property management prior to their opening Kenny B’s. She said that her work experience had included many restaurant jobs during school and after, always supplementing the income and staying active. Lavern is passionate about working with customers, making them happy,

while serving delicious food. She is on the front line at the restaurant - taking orders, delivering food, and making sure everyone is taken care of. She is the smiling glue that runs the front of the house, checking that the orders are right, the food comes out fast, and that the customers have what they need and are enjoying their dining experience. One of her favorite dishes to serve is the Gumbo – all of Louisiana in a bowl kind of sums it up, she said. In addition, shrimp and oyster po' boys, fried shrimp and oysters, red beans and rice, jambalaya, and beignets are some of the most popular dishes on the menu. Lavern loves doing anything with her family, husband Kenny and sons Logan and Zach, one already at Clemson and another who will go off to college in the fall. She walks their two dogs very early every morning. “We work every day, especially in the summer,” she said. Logan and Zach have grown up helping out at the restaurant, so repeat customers tell them how long they’ve known them – often since they were babies. She loves seeing people return, year after year, with their children, then with their children’s children. It’s a family restaurant with a Cajun theme and delicious food for every taste. The Jazz Corner is known for giving – They have given us an education and the pleasure of many years of listening to the best in the business. They have given us a world class venue in which to enjoy our education about this timeless culture. Most importantly, they have given to our children in countless ways – lessons, instruments, camps, opportunities. This September, they will give all of us from ages 9 to 90 a one of a kind experience in the form of a two day long festival, Bob Masteller’s Jazz for all Ages. In its second year, the festival will hereafter be named for and in honor of our own king of Jazz, Bob Masteller. Both nights will feature world class artists with amazing resumes. The opening night will be on Thursday, September 10 from 7p.m. to 10 p.m. at the Seahawk Cultural Center. Performing will be the Noel Freidline Quintet playing a Jazz Celebration of The Beatles. The quintet has made frequent visits to The Jazz Corner over the years and according to Lois Masteller, owner of The Jazz Corner, they are thrilled with the theme choice for Thursday. “The Beatles music is so timeless. It crosses all ages and encompasses the widest fan base so we can truly make this a festival for all ages,” she said. The Quintet will put together an unforgettable evening of favorites including Can’t Buy me Love, Blackbird, and Let it Be. The band is comprised of Noel on piano, accompanied by Bass, Drums, Vibraphone, and Sax. The evening will begin with a set played by the Junior Jazz “Rising Stars”, showcasing their countless hours of hard work. Friday night’s show on September 11th will be held at the Beach Pavilion at the Sonesta Resort in Shipyard. Joe Gransden and his 16 Piece Big Band will come in from Atlanta to do a Happy 100th Birthday celebration of Frank Sinatra (and Friends). Joe has been wooing audiences worldwide with his aggressive trumpet playing and soothing voice and with his full ensemble behind him, this event will go down in Island musical history. “The event was so well received last year (a sell-out) that we decided to make it a real two day festival this year.


We have kept the ticket prices inexpensive because we want to bring it to as many people as possible. It is so important that Bob’s legacy lives on through this. It was his passion and he was the one who started all this,” said Lois. “We want this to be a community wide event with two different experiences, “added Kelli Lesch, General Manager of The Jazz Corner. 100% of the benefits from both evenings will go to the Junior Jazz Foundation. The Junior Jazz Foundation was founded by Bob and Lois Masteller to inspire and educate our young local musicians about the art form of Jazz Music. The Foundation refurbishes and repairs donated instruments and distributes them to schools. They provide classes, seminars, scholarships and set up outreach concerts for the students at venues ranging from Colleton River to the Sea Pines Beach Club. Their Jazz Camp is held every summer and is open to aspiring musicians under the age of 20 who immerse themselves in their music under the tutelage of instructors from all over the east coast. “It is unbelievable what they can learn in 5 days,” commented Lois. “Where else can you see kids go on break and spend their free time doing exactly what they had been doing all morning?” Also benefitting the Junior Jazz Foundation this year will be the 11th annual Charity Golf Tournament on Saturday, November 21st at the Arthur Hills Course in Palmetto Dunes. Everywhere you go around Hilton Head and Bluffton you see happy dogs, heads held high, parading around their owners. Some are ambling down the beach, fraternizing with strangers, and others are crashing through waves to catch tennis balls. They balance in the back of pick-ups and hang their heads out car windows for that wind-blown look, eliciting smiles at every turn. They ride around in baskets on the front of bikes and in Kiddie carts on the back. They lead their owners on walks at all hours of the day and know the scents and territories of all their neighbors. Being a dog on this Island is a bit of a cult and one that cats definitely lose out on. It should not come as much of a surprise then, that some of our favorite patio-clad restaurants hang their “Dogs are Welcome” shingle for all passers-by. According to Erika Waronsky at Steamer Seafood Restaurant in Coligny Plaza, “We actually get upset if people don’t bring their dogs. Dogs are welcome anywhere on the outdoor patio and deck and we totally encourage people to bring them.” Erika says they love to welcome back families that vacation every year who return to Steamers with their pets. Dogs are a common site at Sunrise Café in Palmetto Bay Marina, especially in the spring and fall when the weather is perfect for them to lounge on the outdoor deck. Leslie Stewart notes that, “It’s a love/hate thing for some, but people on the Island are pretty acclimated to having the dogs around and are used to it at Sunrise.” Sunrise has a large local following of dog lovers that frequent the restaurant and come equipped with blankets, beds, dog carriers, and even strollers – anything to 40

make the experience more comfortable for Fido. “Everybody here likes to play with the dogs but it is also worth mentioning that we are well aware of the cleanliness aspect and we all wash our hands right away after petting those guys,” said Leslie. Many of the Sunrise patrons will order food off the menu for their dogs like eggs or a hamburger patty and everything is served on throwaway Styrofoam. Dennis Egan is a local that often takes his Golden Retriever, Scout, to the Sunrise Café. “I like to take my dog with me when I go places and the people at Sunrise are great. They all know Scout by name and someone will come right out and bring him water and give him a scratch behind the ear and when that person goes inside, someone else comes out and does the same,” said Dennis. “They are all so nice and accommodating and Scout really enjoys it.” The Dispensary was named the Most Pet Friendly Restaurant in Bluffton by the Bluffton/Hilton Head Monthly readers last year. According to Carol Jording, owner of the Dispensary, “Some people’s pets are like their children so they need to have them by their side.” Carol notices that a lot of folks stop by for happy hour with their pets. “People

get off from work and want a drink and also want to be able be with their dog so it’s nice for them to be able bring them. We are a casual atmosphere that lends itself to that.” The Dispensary puts out water bowls for visiting pets and also sells organic pet treats. Skillet’s in Coligny Plaza has a great breezy porch for the dogs to laze on. Owner Amie Baima commented, “Pets are part of our family and when people travel with them they need a place to be able to go. Every dog gets his own bowl of water and is treated like royalty.” Skillets even offers a healthy dog menu with gluten free, protein filled meals like Beef & Barley, Turkey ‘N Rice, and Perfect Pooch Pasta. “We get people that bring their dogs to all meals of the day, and sometimes we get some who just want to sit on the porch with their pet in the afternoon and have a glass of iced tea,” said Aimee. “We even have one lady who brings her cat and he just sits by her side quietly. “ Rob Sayer, who owns a house in Sea Pines, commutes to the Island monthly from Atlanta with his dog Shade in tow. “One of our routines is to take an early walk on the beach and end up at Skillets for food. They always welcome Shade and bring her a bowl of water and then we all order breakfast. Being able to take her there enables us to all get out together and eat and exercise,” said Rob. Kaya, a rescued Pit Bull from the Humane Association when she was 3 months old, is another Skillets frequenter with Spencer Kocher and his mom, Sylvia. “She is always happy to go to Skillets. She knows what’s going to happen,” commented Sylvia. What happens, according to Spencer, is that


she gets to feast on her favorite Skillet’s cheeseburger. “It is someplace to take her so she doesn’t have to stay at home and I won’t leave her in the car. They are all dog people and pay plenty of attention to her,” Spencer said. Ken Ballard, owner of Kenny B’s in Circle Center, is a big dog person which is plain to see just by looking at all of his advertisements which feature his favorite breed, the bulldog. “We are Georgia Bulldog fans, Yale Bulldog fans, Mississippi State… we don’t discriminate. We love bulldogs.” They put out water bowls for the dogs who visit at Kenny B’s and interact (or not) with the neighborhood cats. “I think being pet friendly adds another option for people,” Ken commented. Annie O’s, located near Sea Pines Circle on Target Road, does not have outdoor seating to accommodate pets, but owner Tom Egerton goes out of his way to raise money for Noah’s Arks, an organization that saves abused dogs from euthanization and nurses them back to health. “Noah’s Arks is so under the radar that I am just trying to raise

awareness about them. So go enjoy the perfect weather this fall and be sure to stop by one of our many pet friendly restaurants for some good food and bonding time with your four legged friends. Restaurateur, Environmentalist or just an Oyster Lover? …doesn’t matter - we’ll all benefit from Andrew Carmines Shell Ring Oyster Company. BY SALLY KERR-DINEEN

I sat outside at Hudson’s overlooking Skull Creek in the middle of buzzing dock activity and stole an hour of Andrew Carmines time before the restaurant opened for lunch. Carmines is the GM of Hudson’s Seafood House and founder of the Shell Ring Oyster Company. He pointed to an area to the right of the main outside deck. “That’s where the nursery and hatchery will go. We’ll handle everything from start to finish. At some point we could be looking at two million oysters. That’s the vision,” Carmines said. When Andrew Carmines talks about the Shell Ring Oyster Company and his “project,” he’s being humble, very humble. This little “project” of his has the potential of putting Hilton Head “on the map” with a fabulous bi-valve that rivals the northern east coast imports. 44

The Shell Ring Oyster Company is creating a new local varietal single select oyster and a sustainable farming environment that will create jobs, clean our waters, help build and grow our wild oysters further, all while delivering these sea “pearls” to our plates within hours of harvesting. Now that’s farm to table. This is way more than a “project.” And the smile on his face, when I said that pretty much confirmed my thoughts: what he is creating is a big deal, and has the potential to be a great, big, huge deal for oyster and lowcountry lovers. Let’s start with a brief layman’s local oyster lesson. Our wild oysters have it tough. Sure, the waters are full of them, and there’s plenty of food, but the habitat is lacking. They grow in clusters because they have no choice. Our environment is challenging with lots of pluff mud and no hard substrate.

What that means is, basically, that our wild oysters, unlike their northern cousins, only have each other to hang on to for dear life. And for an oyster to grow, it needs to attach itself to something, even something as small as a grain of sand, a blob of mud just doesn’t do it for the baby bi-valve. So our wild oysters battle each other for food and in the process produce a long thin, brittle shell, with slightly watery, briny “meat.” How did the Shell Ring Oyster Company come to be? Carmines and his now Director of Operations, Rob Rowe got bored at 3 a.m. one morning, while shedding crabs. They wondered what they’d do when the season was over, and started with the “what ifs?” In the end they created their dream oyster. One with a shell that’s more round than oblong, fairly hard, heavier than it looks


landlubbers. “I’d like to get people to experience an oyster the way it should… fresh out of the water.” No article on oysters is ever complete without the famous quote by Satirist, Jonathan Swift, author of Gulliver’s Travels (1726). “He was a bold man that first ate an oyster.” So look forward to the next harvest in November when we’ll be able to sit at Hudson’s dock with a plate full of Shell Ring Salts, and toast that bold man who first ate an oyster. That’s pretty much it in an oyster shell.

Raw Ways with Oysters Mignonette sauce – red wine vinegar, shallots, lemon juice, white wine all seasoned with white pepper – only a scant teaspoon is needed. Perfect withChampagne, Sauvignon Blanc. Skip the oaky chardonnays. Cocktail sauce – just a hint – the oyster’s been living in the water, no need to drown it now. Would be nice with - an iced cold hoppy IPA. Au natural – straight from the half shell – maybe a squeeze of lemon, maybe not. Have with an iced vodka – straight up.

with a one inch deep cup. When opened it would be white in color, opaque, moist and plump…with the same briny, salty flavor we get from our wild locals. Fast forward one year later, Department of Natural Resource permits, red tape, a crash course in oyster, seedling, harvesting and growing in Chincoteague, VA after which the first Shell Ring Salts were harvested and slurped. Last year 80,000 oysters were produced and gobbled up in three months beginning in November. This year Carmines is looking at 400,000 and in 2016 – more than what they know what to do with. “Our goal is to produce more

product than we can ever take out. This has the potential, to give our Island a sustainable oyster production, which will help our unique, fragile eco system. One oyster cleans 20-40 gallons of water a day, and a larger oyster population will give us cleaner water.” This “project” was started with a seedling of an idea and an oyster the size of a fingernail, now the Shell Ring Oyster Company is on the cutting edge of viable sustainable aqua-culture producing a briny flavored, plump, less watery oyster, with a deeper cup. And let’s think about it. Cleaner water will create a better environment for all under the sea as well as all oyster-loving

PART 3 OF 3:

When you are dialing in your nutrition habits, there are three things you can control: quality, quantity, and timing. Our focus in Part 1 was on the quality of your food, we talked about calories and quantity in Part 2, and that leaves the best for last. Today in Part 3 I’ll share with you some tricks on how to time your nutrient intake at the beginning and end of your day to have the biggest impact on your goals. First things first, let’s hydrate. You likely have a morning routine that is the same every day. Mine includes brushing my teeth, reading a daily devotional, then getting breakfast ready for my family. During the first 30 minutes of every single day I make sure to consume 15-20 ounces of water. Starting your day with water, preferably room temperature or warmer, can help to cleanse your 54

intestines which will aid with nutrient absorption and waste elimination all day long. It also helps overcome any dehydration that occurs overnight. Second, let’s get some nutrient dense food in right away. At breakfast time you’ve likely been fasting for 8-12 hours depending on your evening habits. So our goal first thing in the morning is to replenish our glycogen stores (energy from carbohydrates), and maximize fat metabolism. How we do that is by getting the optimal balance of protein, carbs, and fat. A simple way to achieve this balance is: • 2 eggs (perfect protein to fat ratio) • 1 cup whole grain oatmeal (protein and carbs) • 2 walnuts, chopped over the oatmeal (clean and healthy fat source) • ½ cup berries (fast acting and nutrient rich carbs) Third, the end of your day is equally as important. The goal at the end of your day is to keep your body burning fat for as long as possible, while getting our muscles in to an anabolic state (which simply means building the muscle fibers that were torn down during your workout). To do this, your

evening meals and snacks should be high in slow-acting protein, fiber rich, and slower acting carbohydrates. A dinner example that can be tweaked to meet your own personal tastes is: • Baked chicken breast • 1 ½ cups spinach topped with tomatoes and mushrooms • 1 tbsp of cottage cheese And, how about that evening snack? Truth be told, it’s perfectly fine to eat again after dinner assuming two things. First, that you are choosing a protein dense food, and second, that your overall calories for the day are still in check. Three slices of turkey breast with 8 ounces of coconut milk is a perfect combo for this time of day. I’ve outlined the beginning and end of your day, which leaves some choices up to you for lunch and snacks. As another summer slowly ebbs away and before the busy holiday season rolls in, Hilton Head Island’s fall festivals heat up cooler autumn days with celebrations of arts, culture, food and sports – often at the same event. Now is the time to slow down and savor the unique flavors and diverse happenings found only in the Lowcountry. Coastal Discovery Museum at Honey Horn Explore the Lowcountry’s natural history and cultural heritage at the Coastal Discovery Museum at Honey Horn. This 68-acre property on the Island’s north end features historic buildings, nature trails, native gardens, a butterfly enclosure, horse barn with Marsh Tackies, an exhibit gallery, gift shop, Kids’ Zone and more. The Chiggers Daring to be Different BY RISA WILLIAMS McMILLAN

At a glance, the Chiggers may appear to be another of your run of the mill cover bands, but after a closer look and a better listen, you will find that it is just not so. What sets the Chiggers apart is that they don’t sound like the Chiggers; On the contrary, they sound like whatever band they are playing and their range is vast. Add to this their sound system, which is of studio quality, and you have the formula for a perfect evening of entertainment. Every song they play, you know word for word and every song they nail head on. It’s as if you could close your eyes and be transported to a live concert by the original band. They can make you think you are in the audience of a Dixie Chicks concert in Nashville or a Metallica concert in Phili. Imagine Black Velvet performed with the perfect edge or the drum solo kicking in on Radar Love. Goodbye Earl is perfectly in sync while the musical runs in Sweet Emotion will have you nodding your head and

singing along. The success and quality performances of The Chiggers are due greatly to the musicianship of the band members who are all professionals in their own right, but mostly to the lead vocalist who can pull off anything from Led Zeppelin to Carrie Underwood. Members of the band include lead vocalist Jennifer Witmer, bassist and long time Island musician Ed Push, drummer Peter Delgado, and guitarist and back-up vocalist Roger Liptak. Named by a friend of Jennifer’s after something that was “lowcountry with a bite”, The Chiggers have been together for two years and already have a repertoire of over 70 songs. “We are new to the scene, but finally getting accepted,” commented Roger. “It’s quite difficult to break through to the other side.” It’s easy to see that despite their age differential (Roger started playing in his first band in ’67 and Jennifer is quick to comment that this

was well before she was born), they are comfortable together on and off the stage with a constant banter going on between them. After Peter commented that he auditioned to play drums and must have been good enough to make the band, Jennifer offered that it was between Peter and another guy and “the other guy didn’t have any hands.” The boys in the band are not afraid to give Jennifer credit for their success. “Jennifer can sing anything so we can cover a lot of ground,” said Peter. “She can pull out a polished voice for Carrie Underwood, a twang for country, and a rough voice for Metallica,” added Roger. Each musician has their favorites to play like Roger enjoys Tom Petty, Jennifer Nettles, Aerosmith, and his favorite song to play is Zeppelin’s Misty Mountain Hop for the reason that, “Jennifer is the only person who can do it justice.” Peter likes to play The Band Perry, Pat Benatar, Ozzie Osbourne, and Miranda Lambert while Jennifer likes to do Carrie Underwood and the Dixie Chicks or, as she refers to them, “Angry woman songs.” As Peter puts it, “I have never played in a band that sounded so much like the original. We can go in any direction because we have so much variety. We cover every type of music.” Roger adds, “We are definitely not boring.” The Chiggers will be out and about this fall at restaurants like Captain Woody’s, Bluffton’s Corks and Vineyard 55, and festivals including the Bluffton Sunset Party at the Bluffton Oyster Factory Park on September 18th. It’s a Friday night in Bluffton. The milky street lamps, casting a dim glow through palmetto fronds that dance in the breezes off the May River, do little to illuminate the long stretch of Calhoun Street. Instead, that honor goes to the fairy lights that glitter around the front porch of Vineyard 55, beckoning thirsty visitors inside. The front porch of Vineyard 55 may as well be the front porch of Bluffton itself, famed as it is for being the place to meet the cross-section of characters that make Bluffton what it is. Grab a seat, an appetizer (our personal recommendation would be the hummus, but you really can’t go wrong), a cold drink of your choosing, of which there are many, and enjoy the show as Bluffton unfold before you. You’ll see sophisticated resplendent in slinky cocktails dresses as they eye the extensive wine list with a cultured eye. After them, Bluffton’s river rats will show up in a candy-color array of tricked out golf carts, thirsty for a cold beer. Bluffton is Going Nuts

The Boiled Peanut Festival, the Historic Bluffton Arts & Seafood Festival and a brand-new event from Bluffton Self Help anchor Bluffton’s fall season. BY BARRY KAUFMAN PHOTOS BY ROB KAUFMAN

Although Bluffton’s State of Mind may have been expanded in recent years, taking a quirky art town and taking it to dizzying upscale heights, it’s important to remember one thing that speaks to the town’s enduring eccentricity: Bluffton is home to the world’s largest boiled peanut. No one can take that away from us, mainly because Bluffton might just be the only town on earth that would appreciate how cool that is. “When we first brought that to Bluffton it was on the A&E show Shipping Wars,” said Greater Bluffton Chamber of Commerce Executive Director Shellie West Hodges. “It turned out to be great publicity for the festival.” The festival, in case you hadn’t guessed, is the Bluffton Boiled Peanut Festival, being held this year on Sept. 19, 2015. The festival is not just about the chance for visitors to come see the world’s largest boiled peanut (in fact, they keep it at Cahill’s Market so you can pretty much see it whenever the mood for fried chicken strikes you). It’s a chance to get out, slurp down deliciously salty boiled peanuts, South Carolina’s official snack food (this is true), and join one of Bluffton’s most raucous celebrations. “We start out with the ‘Cracking of the Nut.’ This year we’ll be doing that during the Bluffton Farmer’s Market,” said West-Hodges. The Cracking of the Nut has become the symbolic beginning to the festival, ushering in each year’s installment. Think of the christening of a cruise ship, only since this is Bluffton, we crack a beer on it. Last year, Chief Peanut Cooker Robbie Cahill did the honors with the help of Mike Covert, who hosed the world’s largest boiled peanut down with champagne. What follows is an event so big it’s had to move from the confines of Old Town into the sprawl of land in front of the Bluffton Post Office. Test your mettle at the boiled peanut eating contest, enjoy food and

drink from Bluffton’s many restaurants, and find out which local moppet is named “Ms. Peanut” or “Little Goober.” But be sure to save room to weigh in on the boiled peanut cook-off, where everyone from amateurs to pros competes for boiled glory. This year also marks the debut of the Nut Pub Crawl. Venues were still being added at press time, but is there anything more you need to know that isn’t presented in the phrase “Nut Pub Crawl?” It’s going to be a blast, is what we’re getting at. And while the Boiled Peanut Festival may be Bluffton’s quirkiest fest (apart, of course, from the Christmas Parade), it’s not the only event making fall amazing for Bluffton foodies. With the move to the fall necessitated by last year’s record temperatures (“We called it the boiled people festival,” joked Hodges), the Boiled Peanut Festival joins a true Bluffton institution in warming up the fall, The Bluffton Arts & Seafood Festival, being held Oct. 10-18. What began as a one-day event in 2005 has exploded into a week-long celebration of what it means to live in Bluffton during months that contain an “R.” The creativity of Bluffton’s artists, never in need of an excuse to showcase its brilliance, is on full display during the week. And, as you may have guessed from the name, the many delights of the May River find their way onto scores of hungry plates, from delicate shrimp to mounds of succulent oysters. The calendar of events runs the gamut from historical demonstrations to the May River boat parade, but there are a few events foodies will definitely want to note. The first oyster roast of the season fires up from 5-8 p.m. Oct. 11 at Bluffton Oyster Factory Park. Watching the sun set on the shrimp boat “Daddy’s Girls” while plowing through the first oysters of the season is the perfect way to kick off the weeks ATASTEOFHILTONHEAD.COM

festivities. The next day, the Waddell Mariculture Center will host a dinner and learn tour featuring the cuisine of the Bluffton Oyster Company. Those events are appetizers to the smorgasbord that hits that weekend, with the two-day street festival Oct. 17-18 on Calhoun Street serving up a host of seafood favorites from area restaurants. If you didn’t get your fill during the day, there will be local seafood served up with a side of spectacular fireworks at Rockin’ on the Dock, starting at 6 p.m. Oct. 17 at Oyster Factory Park. The hardcore foodies among you will definitely want to grab a seat at the “Art of Cuisine” Iron Chef Challenge from 1-2:30 p.m. Oct. 18. The best chefs from around Bluffton and Hilton Head Island will compete to see who can create the most inspiring dish from a surprise seafood staple. Only one can win, unless you count everyone who gets to enjoy the creations they whip up. In which case, everyone wins. And finally, fall in Bluffton gains a brand-new delicious foodcentric event this year with the debut of the Bluffton Self Help Red Apron House Party. This fundraiser dishes up something special with Bluffton and Hilton Head Island’s top chefs hosting a series of intimate dinners in designer homes throughout Hampton Lake. A ticket runs for $125 but lands you a chance to spend an evening in a gorgeous setting watching the area’s finest chefs do their thing.
