PUBLISHER’S NOTE There are many things in this world that bring me great pleasure – a good round of golf, a relaxing vacation, and spending time with my kids to name a few. Unfortunately, I can only enjoy these on a limited basis. There is, however, one thing in this world that brings me gratification and joy every day and that is food. As I have advanced in age, I can say unequivocally that food has become my favorite vice. Sure -- a cocktail, beer, or glass of wine still has its place, but food has risen to the top for me as one of life’s greatest pleasures. Looking back, I can say that the importance of food in my life has gone through an evolution and metamorphosis. Growing up, taking time to eat was often an inconvenience – a necessary fuel for my gas tank as I shuffled between school, sports, work, and social life. In those days, we ate as a family most every night. It was quite a production as my mom always prepared multiple courses. Eating out or getting fast food or pizza was pretty rare. Of course, at the time I took those home cooked meals with my family for granted but now I recall them as something pretty special. After leaving the comforts of home for college, food became even more of a survival tool. Low budget meals were for filling my belly and not for pleasing taste buds. The ‘Mac N Cheese’ out of a box was a real show stopper as was the Kraft spaghetti box. Tuna fish from the can, peanut butter and jelly, and cereal were all part of my go-to menu. Domino’s pizza was saved for special occasions. With that wonderful period in dining history behind me, I moved to the working world and young family period which taught me, by necessity, how to juggle learning how to cook and dining out, all while staying on budget. Albeit a necessary evil, this was the most dramatic learning curve in my dining evolution that I experienced. The current stage of my eating career is by far the best and most enjoyable. While not a gourmet cook by any means, I have put together a pretty good repertoire of meals that I can make and find thoroughly satisfying. Part of this new transfiguration includes actually planning meals ahead of time and looking forward to sitting down, digging in, and taking my time. The final and most gratifying component of loving food is “eating out”and giving all the responsibilities to someone else to make my meal time seamless and my food delicious. With my profession in the food industry for many moons, I have learned first hand that the culinary diversity and quality of the restaurants in Hilton Head and Bluffton is truly awesome. No matter where you are in your dining cycle-of-life, be sure to take the time to sample the excellent cuisine and service that the area has to offer. With an impressive and full array of options available, our restaurant scene is your personal culinary playground. David Mudwilder Publisher

Reimagining ALEXANDER’S A creative spin on time-tested favorites at an island institution BY BARRY KAUFMAN
•
PHOTOS BY ROB KAUFMAN
When Alexander’s – that is to say, the old Alexander’s – closed its doors in anticipation of Hurricane Matthew’s wrath, few realized that they would stay closed for so long. For six months, the future of a beloved island institution lay in limbo, sending the island’s always-busy rumor mill spinning. Eventually, the truth came out that Alexander’s had been purchased by Palmetto Dunes Resort, a prudent move considering the restaurant’s position as the de facto welcoming committee when entering the community. But with new ownership came questions from a legion of loyal diners – would this be the same Alexander’s we’ve come to know

and love? Would our favorite items still be on the menu? The answers to those questions: yes, you can still get your favorites. But no, this is not the Alexander’s you’ve come to know and love. This is something much more exciting, fueled by a renewed interest in pushing the culinary boundaries and testing the limits of what Alexander’s can be. And of course, most people wanted to know where the bikes went. “People coming in for the first time asked, ‘Where are the Harleys?’” said Executive Chef Sean Carroll. Indeed, the hogs that once greeted diners are gone, replaced by a refined Lowcountry aesthetic that brings a fresh coastal vibe to the timeless elements of brick and white linens that have long defined Alexander’s. “Before I got into position here, Brian (Couey, Director of Food and Beverage) and his team had to do something in this building for the ambience. They decided to do something fresh, clean and crisp, and showcase local art. They did a great job changing it up while keeping the foundation of what Alexander’s always has been.” That same balancing act of new and old was tested during the restaurants first days under its new ownership. “It took a lot of hands on reaching out to regulars,” said Couey. “I literally asked them what items off the menu would you be very sad not to see. They gave me the list, I gave it to culinary team and I told them, ‘We don’t need to make it the same way, but we need to have something better than what they ever had.’ There’s not a single regular who would come
in and say our baked flounder rockefeller is not superior to the crab stuffed flounder on the previous menu.” Coming on board during March of last year, Carroll adapted quickly Couey’s directive to take the old favorites and make them shine. “That’s been a lot of blood sweat and tears trying to find that right balance,” said Carroll. “We’re trying to give them old classics like wiener schnitzel… I didn’t have any of the old recipes. I just did it the best way I knew how to do it. So, I found some really high-quality veal and I use that, do basic preparation they did before and people love it.” While his updated approach to the fare that made Alexander’s famous has thrilled regulars, it’s his unbridled creativity in the kitchen that is bringing the restaurant into a marvelous modern era. “The thing Sean has brought in is a unique take on a classic dish,” said Couey, citing examples from popcorn flash-fried calamari to Cheeto-dusted scallops, which were conceived at one of the restaurants regular wine dinners. “When Sean does a wine dinner, he gets really edgy.” “The first wine dinner of 2018, we had a dessert that was called ‘milk and doughnuts.’ The milk was
veggies and ranch crudité. Milk and cereal cheesecake with Crunch Berries. Nothing is off the table inside the kitchens at Alexander’s. But it would do a disservice to the inspired menu that Carroll and his team have created to say that it is simply a collection of wild ideas manifested into delicious food. After all, this is still Alexander’s, one of the island’s standard bearers when it comes to sophisticated dining. The regular wine dinners testify to not only Carroll’s creativity, but the elegant experience that is Alexander’s. Like any artist, Carroll has put in years of hard work perfecting his craft, from culinary school in Georgia to stints at Williamsburg’s Blue Talon Bistro and Augusta’s Partridge Inn where he worked under celebrated names like Sean Brock and Ken Vedrinski. He first met Couey during their mutual time at Biltmore Estate, and it was that connection that led to Carroll bringing his wife Britt and 3-year-old daughter Pepper with him
a créma catalana, which is like a Spanish crème brulee, and the doughnut was a portuguese doughnut like a Munchkin. That has turned into two different desserts on the menu,” said Carroll. “It kind of gets me in the door, and then I turn them into believers.” For a chef who was once told by his mentor explicitly not to push the envelope, Carroll seems to delight in the offbeat culinary creations that abound in Alexander’s new era. Braised veal cheek over sweet corn risotto, with corn prepared as if it were arborio rice for a succulent side. “Crudo-té,” which marries the Italian seafood preparation of crudo with the classic
to their new home on the island. “They showed me Alexander’s and the beautiful beaches and the seafood that comes from this area and I hopped on the challenge,” he said. Meeting this challenge has meant refocusing the menu on the quality and seasonality. Working with Lowcountry Shellfish, he has created a truly intimate seafood experience, one where your server can tell you everything about your dish right up to which waterway it was caught on. “It sets us apart,” said Carroll. “People are more involved in the experience. It’s more than dining – it’s an experience.”

SKILLETS Café and Grill
From their Family to Yours Morning, Noon, and Night BY RISA WILLIAMS MCMILLAN
•
For casual, family friendly dining on the south end, there is no better option than Skillets Café and Grill, open morning, noon, and night for breakfast, lunch, and dinner. Located on the periphery of Coligny Plaza which in itself is a hub for family and fun, Skillets is the perfect place to enjoy some soul-soothing southern cooking -- a memorable and affordable meal any time of the day. Owner Amie Baima and her crew at Skillets will make you feel at home from the moment you cross the threshold and have you leaving with plans to return. Having just celebrated its 25th anniversary, Skillets has withstood that difficult Darwinian endurance test of time. They have seen changes and expansions along the way and taken great pleasure in watching and welcoming generations of families swing through their doors. No stranger to the business and culinary side of owning a restaurant, Amie has run many businesses over the years in Coligny from the Coligny Bakery and Hilton Head Wedding Cakes to Just 16

Pasta and the Corner Café. “One of my first ventures was the Bakery and I would have customers come in two or three times a week for breakfast that loved our baked goods but wanted to know where they could go for some eggs. I saw the need for Skillets,” said Amie. She set up shop in a portion of the building they now occupy and originally just served breakfast and lunch. “At first I did not think we needed to be open for dinner because I had my other restaurants and there are only so many hours in the day. I was at the bakery at 4:30 a.m. and at Just Pasta until 11:30 p.m.” But then, in 2002, the restaurant that occupied the other portion of her
building had a fire and Amie ended up taking over the whole building, extending hours and adding a dinner menu. “After the fire, I let all of my other businesses go. It was too much,” she said. “My vision has changed through the years. When we reopened after the fire, I still had all my original breakfast and lunch customers who I thought would become my dinner regulars. But I learned that people do not like to eat breakfast and dinner at the same place. Go figure. So then we tried to serve the breakfast menu through dinner but that did not work either so we changed it up again.” Through trial and error, they have certainly come up with a winning formula. Add to that the fact that Skillets is truly a family affair, and you have a ‘win-win’ situation. At any given time, the odds are greatly in favor that if Amie is not on hand, one of her family members will be there to make sure all is running smoothly. “My dad is here every day. My mom helps my sister at her Coligny stores and then comes over here. If I’m
out of town, my sister will close her store early to come over. My son even helps out now and then. That’s our niche. We are all about family. I am trying to do something unique and family oriented to the best of my ability.” Speaking of family, Skillets has pet friendly patio so bring your pooch and he can dine by your side on some healthy Lucky Dog cuisine. “We always have bowls of water out on the porch for the dogs. We have even had cats and a pig come here.” Amie holds a degree in Food Science from Winthrop University and a Culinary Degree from Johnson & Wales. “There were not a lot of female chefs and restaurant owners 25 years ago. I thought if I got a culinary degree I would be accepted. I went into it for the wrong reasons, but came out with more value and knowledge.” While the dinner side of things has been tweaked a bit here and there, the breakfast and lunch menus have stayed 90% the same since day one. “I have added and deleted a few items, but people come in here as an adult and order the same things they did as a kid. One thing we have expanded on in the lunch menu since starting to serve dinner is seafood. We always had shrimp, crab, and scallops, but now we have more fish and sauces. We have gluten free items on all menus,” explained Amie. Breakfast choices, which are served in porcelain skillets, range from eggs and omelets to pancakes, crepes, and benedicts. The Kitchen Sink is one of their hottest items and features 2 pancakes, 2 poached eggs, 2 bacons, 2 sausages, grits or potatoes, and a biscuit. For their Apricot French Toast, they age the homemade bread a day and a half to get the perfect texture and fill it with apricots and creamed cheese. The Coligny Skillet is luscious layers of potatoes, country sausage, cheddar cheese, poached eggs and a biscuit. Breakfast is served daily from 7 a.m. to 4 p.m. The lunch menu is robust with sandwiches, salads, stir fry’s, burgers, and seafood entrees: Popular lunch choices include the Crabmeat Benedict served with a dinner-sized portion of crab; Jambalaya -- a hearty mix of shrimp, sausage, chicken, and rice; and the Monte
Cristo which is an old school recipe-turkey, ham, and Swiss cheese stacked between thick slices of bread, battered, fried and topped with powdered sugar and raspberry preserves. The dinner menu at Skillets features a whole lot of seafood as well as an array of southern comfort food, burgers, and sandwiches. “My mom does not do seafood, so I am very conscious of having a lot of other options,” said Amie. “We are affordable southern cooking.” Aside from an extensive seafood menu, they have homemade fried chicken cooked to perfection and even have meatloaf with gravy. In remembrance of Just Pasta, they added a Build Your Own Pasta menu for $17. They cook up southern veggies like collard greens and fried okra and the extensive salad bar is open for lunch and dinner. In keeping with their family-friendly theme, Skillets has an extensive kid’s menu. Choices include favorites like pizza, homemade chicken fingers, and steak, with sides ranging from homemade chips and fries to veggies and salad bar. They have specialty menus that include Prime Rib Sundays and a $10 lunch menu that has choices like Chicken Parmesan, Fish ‘N Chips, and Pork Tenderloin Sandwich and includes a drink. “If you are working on the south end on a budget, it helps,” commented Amie. The dessert menu is chock full of mouth-watering bakery items including cakes, cobblers, and pies. They serve a full bar with plenty of frozen drinks and a homemade Bloody Mary mix because “brunch is every day” at Skillets.
Many of the staff at Skillets has been part of the family for 11 years and Amie said they work as a team serving three meals a day. “It’s a different philosophy. We make decisions together. I want to know what they hear. They are part of us and Thank God for them.” Bottom line according to Amie? “We are not an expensive ‘pay-for-view’ type of restaurant. We are not looking to be top of the line fancy. We do comfort food -southern cooking that is about affordable and family. We get our seafood the same place as others, but we keep it priced reasonably.” Skillets Café and Grill is open daily from 7 a.m. until 9-10 p.m. For a full menu listing visit their website at www. skilletscafe.com.

On a Wing and a Prayer
THE TRUE STORY BEHIND THE WORLD’S GREATEST FINGER FOOD. BY BARRY KAUFMAN
•
PHOTOS BY ROB KAUFMAN
Although he’s now heralded as an artistic genius, his works selling for millions of dollars apiece, Vincent Van Gogh only sold two paintings in his entire lifetime. Johann Sebastian Bach’s skill as a composer went largely unnoticed until nearly 100 years after his death. Stephen King’s first novel, “Carrie” was rejected nearly 30 times before it found a publisher. The point is, sometimes it takes a while for greatness to be truly appreciated. And in the culinary world, nowhere is that truer than in the case of the humble chicken wing. The history of the chicken wing is hotly contested. As with most of the finest food creations, the South can lay claim to its true origins, even if the “official” story says otherwise. If you go by the official story, the first-ever plate of chicken wings was served in 1964 at Buffalo New York’s Anchor Bar. Southerners, as usual, know better. Deep-fried chicken wings had been a staple of Southern cooking for decades before that first plate, a fact that is even begrudgingly acknowledged by the National Chicken Council, (which we promise actually exists). Perhaps it was this status as a Southern staple that led to chicken wings’ less-than-savory reputation among chefs. After 22

all, we’re the region that made chitterlings and gizzards famous. Some of our culinary choices are questionable. But for whatever reason, there was a time when the wings were considered castoff cuts to the more popular breast meat. If they were used at all, it was for stocks and soups. That all changed, for the rest of the country at least, with that fateful plate in 1964 when Teressa Bellissimo fried up some wings at her family restaurant and served them to her son Dominic and his friends. It goes without saying that beer was involved, leading to a marriage between wings and beer that still goes strong to this day. The wings, according to Teressa’s husband Frank, were the result of a happy accident with his supplier – they had received the shipment of wings by mistake and were stuck with them. But there is yet another side to this story, one which lends some authority to the Southern origins of chicken wings. Another Buffalo restaurateur claims to be the inventor of the chicken wing, having brought it to the city from his native Alabama. John Young served his wings at “Youngs Wings n’ Things” in his signature mambo sauce, with the key difference being he served his uncut, rather than chopped into flats and drumsticks. It’s a small distinction, but it’s enough that the history books acknowledge the Bellissimo family as the inventors, while relegating Young to a footnote. Regardless, the spur-of-the-moment midnight snack at Anchor Bar proved to be a hit, and chicken wings were soon dragged from the stock pot and into the lime light. Dominic wound up going out on the road with hot sauce salesman Dick Winger, spreading the gospel of chicken wings to bars and restaurants around the region. As a result, the world came to know this treat as Buffalo wings. Today, wings are king. For evidence, we turn once again to the National Chicken Council, who claim Americans eat upwards of 1.3 billion wings a year. The New York Post did a deep-dive into our national love affair with drummies and flats, stating the average American will eat 18,000 chicken wings over the course of their lifetime (we proudly confess we’ve done our share to bring that average up). With this rise to prominence, traditional Buffalo sauce has bowed to other flavors from teriyaki to garlic and today BBQ leads the pack in popularity. Locally, the annual WingFest serves as a celebration of this creative spirit, letting local restaurants and amateurs show off their favorite flavor combinations. Among the booths that line Shelter Cove Community Park you’ll find your standard fivealarm hot sauce wings sharing plate space with everything from Honey BBQ to sugar glaze with Pop Rocks wings (which are surprisingly tasty). Now entering its 24th year, WingFest promises some of the best wings from returning champs like Club Seats and Coconutz plus perennial favorites like the Hilton Head Island Firefighter’s Association. Details were still being planned at press time, but look for more information as we approach March. So whether you take them bone-in or boneless, drummies or flats, fried or smoked, coated in Buffalo sauce or sprinkled with Pop Rocks, dig into that plate of wings and celebrate American ingenuity at its finest. Just don’t forget the wet naps. TASTEOFHILTONHEAD.COM

Fun, Food and Fundraising for Local Scholarship Rotary Club of HHI’s Feeding Frenzy Scavenger Hunt & Raffle BY RISA WILLIAMS MCMILLAN
If you are looking for a fun spring event that has the perfect combination of all the things you love -- food, exercise, and philanthropy -- then this one is for you. In its second year, the Feeding Frenzy Scavenger Hunt & Raffle will be held on Saturday, May 11th on the south end of Hilton Head. All you need is a bike or some walking shoes and an appetite for some great food to help raise money for the Rotary Club of Hilton Head’s local Scholarship program. Participants will begin their adventure from the parking lot at the new USCB campus near Sea Pines Circle. At the whistle, they will rev their quads or lace up their walking shoes and embark on a journey that will take them to approximately 15 restaurants that are all under two mile’s distance. Scavenger goers can plan their route according to their desire to maximize speed or maximize distance for the largest calorie burn. Each restaurant will offer a sampling of one of their signature appetizers; beverages, of course, will be available at the ongoing price. From each restaurant, scavengers will be provided a clue to their hunt.

TASTEOFHILTONHEAD.COM
According to Jeff Rogers, event chairperson from Rotary, “This event is about fellowship, meeting people, and having fun. Fun is a big thing.” They tie this into bike month to get the bike shops involved and hold it before Memorial Day and the summer madness to promote business at the
participating restaurants. “We really want to engage the bike shops and bikers with this. The bike shops will help sell tickets and offer discounts on merchandise,” he said. Tickets for the Feeding Frenzy Scavenger Hunt & Raffle cost $25 and can be purchased from Rotarians, bike
shops, participating restaurants, and at the event. Anyone who purchases a ticket will automatically be eligible for the raffle and can also do the scavenger hunt. “We expect to sell about 800 tickets overall and about 200 of those people will do the scavenger portion of the event,” commented Jeff. Each restaurant will be gifting vouchers for dinner for 4 and these will be the prizes for the raffle and scavenger hunt – There will be 1st, 2nd, and 3rd place prizes for each and winners will pick dinner vouchers out of a hat. First place finishers receive 4 dinners for four people, 2nd placers receive 3 dinners for four, and 3rd place gets 2 dinners for four. Additionally, 5th through 9th place winners will each receive one voucher for four people. The drawings will be at the end of the event but you do not have to be present to win. Rotary Club of Hilton Head does a mountain of work to give back to the community and their fundraising events are paramount for their success. The money from the Scavenger Hunt and Raffle goes directly toward their youth scholarship fund. “We used to award the scholarships to extraordinary local students but would later find out that their families could afford college. Now we are focused on college bound kids that are driven to perform and want to go to school locally, like at USCB, that are likely to come back here and work and help,” said Jeff. According to Mary Briggs, Chairperson of Scholarships for Rotary, “These scholarships are established to help those who truly have a need and to make their dream a reality. We modified our scholarship last year to help students who are outstanding young people. These students are clearly motivated young people. Many of them overcome unbelievable obstacles and they still find great success.” Jeff has only lived on the Island for a year, yet notes the great disparity between the ‘haves’ and the ‘have nots’. “You go in the front gate of a plantation and everything is roses and you come out the back and it is all trailers. There are too many issues on the Island and there has got to be a better way we can help people with things like affordable housing and money for the kids to go to school. Take our Happy Feet program – we bring children into Belk’s and let them pick out shoes. At the end of the day, we can do more for people around here. Rotary is always looking for fun and different ways to raise money for these good causes.” With the money raised from the Raffle and Scavenger Hunt, Rotary will give out scholarships in increments of $4,000 per year over 4 years. So dust off those walking shoes or pump up those bike tires, because our aspiring youth need your help and this event will introduce you to new friends, new spots to eat, burn some calories, and help local students who need it the most. Need we say more? Let’s all do what we can. For more information about the event and to view a list of participating restaurants, visit the Rotary website at http:// www.hiltonheadrotary.org/index.php. “Youth Comes but once in a lifetime,” – Henry Wadsworth Longfellow. Farmers Market at Historic Honey Horn. “Before the bridge, there were a lot of truck farms on Hilton Head Island,” notes the Museum’s President/CEO Rex Garniewicz. “When you have local farmers that are bringing local produce and you buy it at a farmer’s market, it really harkens back to the way I think Hilton Head Island was before the bridge. It’s a concept of living in a more local way.” The Tuesday morning market provides
a place to purchase organic, locally grown and harvested/processed produce, meats, eggs, honey, seafood, coffee, dog treats, baked goods and prepared foods directly from the farmers and vendors themselves. Some, such as Three Sisters Organic Farm in Bluffton, have deep roots in the Lowcountry’s farming community. Others, like Whippoorwill Farms in Jasper County, are more recent additions to area agrobusiness. Mary Connor, Priscilla Coleman and Beth Lee are celebrating their 10th year of commercial farming on land along the Colleton River that has been in their family since 1848. Their USDA Certified Organic Three Sisters Farm produces flowers, herbs, vegetables, pastured eggs, blueberries, blackberries, mushrooms, garlic, ginger, indigo and more which are sold at several area farmers’ markets and restaurants, including Red Fish on Hilton Head. Although they grew up on the property, all three left to pursue their respective careers. Connor and her husband, both engineers, returned to the farm in 1985 so their children could grow up there. After the farmer who was renting it abandoned the lease, the sisters decided to give organic farming a try. “We enjoy it very much,” says Mary. “We’ve divided our duties. I’m primarily doing the vegetables and herbs. My sister Pricilla focuses primarily on flowers. And my sister, Beth, she chose the road of when we both need extra help, but she is also in charge of our chickens.” Mary notes that farming is a constant juggling act — weather, insects and the
public’s taste are often unpredictable — yet plans must be made nine months in advance. “We don’t have a blank slate,” she explains. “Some things become the rage and you, perhaps, might have picked the wrong thing to grow. We really try to keep up with food trends and stay ahead of the curve. We like to grow new things and let people find new vegetables that they’ve never tried before.” Also featured at the market is the Brant Family Farm located in Grays, about 15 miles outside of Varnville. Originally from Allendale County, Donald and Susan Brant met in first grade, got married between their junior and senior years in college and will soon celebrate their 50th wedding anniversary. The chemical engineer and nurse have lived in various places around the country and the world and bring diverse occupational backgrounds to their latest endeavor. The decision to farm came after the couple became dissatisfied with the quality and nutritional value of the foods found in local grocery stores. “So, we decided to go out and start growing organically, using organic practices,” explains Donald. “And not only for lettuces and other things, but also for our eggs and pork and chicken and beef, as well.” Several years ago, the Brant’s son was diagnosed with Lupus, an autoimmune disease. “Everything we read said it could possibly be associated with the poor quality of vegetables and food intake,” Donald notes. “We have a son and a
daughter-in-law and seven grandkids living [and working] on the farm with us and know that they are eating healthy. We’re thankful that the Lord has kept him healthy for last three or four years that he’s been on the farm. Whatever we have extra, we sell at markets.” Although it sounds simple, the Brant’s success was hard won. “We came into farming thinking that everybody else didn’t know how to farm,” he says with a smile. “That we could do it better. That we knew more than what they did. And we came to find out, as time progressed, it takes a lot of hard work… and you are absolutely in control of very little.” “It’s a big learning curve,” he adds. “And, after 12 or 13 years, we’ve only scratched the tip of the iceberg on what there is to learn.” Meanwhile, Marissa Paykos and James Young are living their own unique love story nearby at Whippoorwill Farm. A lifelong animal lover and equestrian, Marissa became a vegetarian after learning about inhumane meat industry practices. However, if she could afford it, she would occasionally treat herself to pasture-raised meat. She met her husband, James, a dedicated carnivore, while they were both living at a RV park on Whippoorwill Way in Hardeeville. Marissa tried, unsuccessfully, to introduce him to vegetarian dishes, but it wasn’t until her doctor ordered her to eat some meat while pregnant that the idea for a farm began to take root. Realizing that the only way they would be able to afford high-quality, humanely

raised meat was to do it themselves, the couple bought a two-acre property in Jasper County and cleared the land, built barns, chicken coops and a guest house while both working full-time jobs. Nearly four years later, Marissa and four-year old Farmer Ellie work full-time on the farm raising and processing chicken and eggs, hogs and rabbits while miniature pincher, Moose, stands guard. “I love to sell to restaurants, sure, but my goal is really to help the food system on an individual basis,” says Marissa. “To have a chef say that your product is great means a lot. But being able to have 10 people say that your products are amazing and come to me because they trust what we do, to me that means just as much, if not more.” With advance notice, Marissa also makes deliveries throughout Beaufort, Jasper, Chatham and Effingham counties and can offer ideas or recipes using different meats or different cuts. “The goal of the small farmer is to find that connection again, from where your food is raised to who’s consuming your food, to bridge that gap. At least, that’s my goal,” she says. That is also one of the goals of the Hilton Head Island Farmers Market. “Reducing our impact on the environment and supporting our local farmers — you can come and talk to the farmers and learn all kinds of things — it’s an educational experience, too,” says Rex Garniewicz. “I think it really fits in with the mission of the Coastal Discovery Museum now and also with the history of the Coastal Discovery Museum.” The Hilton Head Island Farmers Market takes place on Tuesdays from 9 a.m.-1 p.m. at the Coastal Discovery Museum on Honey Horn Drive. Admission and parking are free with reusable market bags available for a $2 donation. For more information, call (843) 689-6767 or visit www.coastaldiscovery.org. 44

GIN IS IN
No longer the dusty bottle in the back of grandma’s liquor cabinet, gin has made its triumphant return to the trendiest bars. BY BARRY KAUFMAN

Once the province of yacht-centric social gatherings and that secret stash of booze your grandma didn’t think you knew about, gin is enjoying a resurgence as the go-to cocktail of choice among the craft cocktail set. And it’s easy to see why: eminently pairable, and capable of a huge range of flavor profiles based on whatever botanicals the distiller has on hand, gin is a multi-tasking utility spirit with a story to tell. “It’s like if vodka and gin were sisters, they’d both be amazing women, but gin would have the personality,” explained Lucky Rooster bartender Paul Rabe, with his usual tonguein-cheek panache. “Gin itself is really hot right now,” said Tony Bagnulo. As owner of Bulrush Gin he might be biased on that count, but he speaks from experience. He saw this wave coming years ago, having worked in spirit marketing for decades in the days when craft cocktails were solely the province of big cities. “If you go back 5, 10 years ago, vodka started to flatline. People started to look for something a little more unique and gravitated toward gins. At the same time as thirsty consumers were looking for the next big thing, gin was going through a few changes of its own. For hundreds of years, gin had been available in two flavors: piney and extra piney. But with a new generation of distillers, an entire world of flavor profiles was emerging. “With modern gins you’re not just limited to that juniper flavor,” said Rabe. “There are botanicals you can add, and local flavors you can pull in to really bring together a terroir of an area.” That local flavor is on full display in a bottle of Bulrush, with lavender and ginger grown in South Carolina and even satsumas from Bagnulo’s neighbor’s tree. And that same creativity is on display nationwide as distillers lean into this the trend and bartenders find new ways to push gin’s boundaries. “One gin is substantially different from other gins,” said Bagnulo. “You’re looking at a whole world of flavors, spices and botanicals you can play with.” And while it may be leading the charge of what the liquor industry has dubbed a new “gin boom,” it still carries with it the class and sophistication that has made gin the toast of the upper crust for centuries, while enjoying its newfound status as the cool spirit on the block. “All drinks lead to losing your pants,” said Rabe, hopefully joking. “With gin, you at least start out wearing your nice trousers.” Even if you keep your pants on (and you should) gin’s comeback means that classic spring cocktail, the gin and tonic, is cool again. And we’ll drink to that.
HOW TO MAKE PAUL RABE’S TRADITIONAL SOUTHSIDE
Want to sling drinks like Lucky Rooster’s award-winning bartender? Here’s a recipe you can steal. One part gin of your choice One part simple syrup One part lemon (or lime, I won’t judge) Muddled mint. “It’s basically a gin mojito,” said Rabe. “It’s a lovely drink.”
JEFF MIX FROM CHARLIE’S L’ETOILE VERTE SHARES HIS RECIPE FOR TUMERIC TONIC featuring local Bulrush Gin 2 oz Bulrush Gin 1/2 oz Tumeric Simple Syrup Tonic Slice of Orange
Five Facts You (Probably) Didn’t Know About Gin one It was originally medicine: Developed from the original jenever, it’s been used to treat everything from scurvy to malaria since 1296. In fact, the quinine it was mixed with to treat malaria formed the basis for the gin and tonic.
two
It produced the first food and drink pairing: In 1731, England fell in love with the pairing of “gin and gingerbread.” Which sounds gross, but if you’ve had English food you know that they take what they can get.
three
It’s responsible for the term “Dutch Courage:” The term came from The Thirty Years’ War when British sailors saw Holland’s Navy getting sauced on jenever before battle. Speaking of British sailors…
four
Gin led to the invention of “proof:” To ensure that the gunpowder on their ships could still ignite if some idiot spilled gin on them, Naval Gin was held to a minimum 57.7% ABV. Sailors would light a small amount of gin-soaked gunpowder to obtain “proof” that their rations had been watered down.
five
England had Gin Riots: For a time, the British government imposed a heavy duty on imported liquor, while allowing for unlicensed gin production. When they switched gears and enacted a Gin Tax, there were riots in the streets.

YANNIE
REYNECKE:
From Here to
ANYWHERE BY TAYLOR KENT
Yannie Reynecke has grown to love waking up in a different city every day. After over three years of touring nationally with Cranford Hollow and most recently, Angie Aparo, it’s safe to say that Yannie is well-accustomed to life on the road. In fact, by this point, he actually prefers it. At age 25, Yannie has seen most of the country, toured and shared the stage with multiple Grammy-winning artists, and opened for highly accomplished and accredited musicians- including his hero, Charlie Daniels. Born and raised on Hilton Head, Yannie’s story as a guitarist began in the fifth grade. He received his first official lesson a year later from local icon and teacher to many, the evereclectic Jevon Daly. Their lessons were held in the boxy, compact practice rooms of John’s Music. “I basically spent five years in a tiny closet with Jevon,” the 6’ 4’’ Yannie recalled, laughing. Since his first lesson, Yannie can hardly remember a day when he didn’t pick up a guitar. By age 14, he was gigging around the island, holding the position of lead guitarist for multiple local bands. His experience with several bands and genres makes him quite versatile. “Stylistically, I can make my way through most genres, but I grew up a blues player,” Yannie explained. Throughout high school, Yannie continued to enhance his skill as a guitarist while also proving himself a standout on the lacrosse field. After being presented with a weighty lacrosse scholarship, Yannie chose to further his education at Mars Hill College. Although he enjoyed his four years as a college lacrosse player, Yannie admits that his primary love remained the same. “Sports are fun, but I’ve always known that I want to be a musician. I knew what I was going to do.” Attending school near Asheville, North Carolina, allowed Yannie to expand his knowledge of bluegrass and classic country. Upon graduating from college in 2015, Yannie joined Cranford Hollow. He was pushed directly into a rigorous schedule, with his first national tour lasting almost three grueling months. Luckily, Yannie was well-prepared. For several years now, Yannie has dedicated at least two hours a day strictly to practicing. He adjusted well to the constant travel and long hours. “Being on the road is my favorite thing,” he remarked. Yannie stayed on tour with Cranford Hollow until the band decided to take a break in favor of more local shows in 2017. It was at this time that Yannie was hired as the guitarist for singer-songwriter Angie Aparo. With Angie this time, Yannie hit the road once again. Together, the two have been traveling the country, meeting fans and fellow musicians, and playing shows. Dedicated and unfailingly humble, Yannie has earned every bit of his success. As for the immediate future, he will begin another tour with Angie in January. From there, Yannie plans to take things month by month. “At any time, if I need to go somewhere, I’m ready to go. I’m ready for whatever happens.” When Yannie is home on the island, you can find him playing regularly at venues such as Boardroom, Porter and Pig, and the Coligny Theatre. For more information on his schedule, check his Facebook for details about upcoming shows.

COME HUNGRY: Bluffton’s Lip-Smacking Spring Has Arrived Spring in Bluffton always brings with it some seriously tasty events. Here’s why there’s more to be excited about than ever before. BY BARRY KAUFMAN
If you hear tummies rumbling from the Colleton to the May, it’s because Spring has arrived in Bluffton. Those growling stomachs are an anticipation of another mouth-watering festival season, when the restaurants, caterers and chefs of this sleepy river town lay out their finest fare. Two events dominate the season, circled, highlighted and underlined on foody calendars across the Lowcountry: Taste of Bluffton and Mayfest. This first greets 2019 with a slew of new and improved events, while the second continues a tradition of community togetherness centered on great food that has made it one of the region’s biggest draws.
Here’s why when you come to Bluffton this spring, you should come hungry. The buzz surrounding this year’s Taste of Bluffton is off the charts, and for good reason. What started out seven years ago as a simple soiree of Blufftons thennascent culinary scene expands this year to encompass three separate events and Bluffton’s very first restaurant week. And this isn’t just any restaurant week – there’s some serious star power behind this event, which will be curated by Emmy-winning “Eat It and Like It” host Jesse Blanco. The sage of the Savannah restaurant scene is a regular at Bluffton’s eateries, and he’s gearing up for a culinary tour de force. “I’m excited to be a part of it,” said Blanco. “With the food scene in Bluffton growing like it is, I’m honored to be a part of its inaugural restaurant week.” Details were still being ironed out as to participating restaurants, but Blanco is looking to take the format of his highly successful Savannah restaurant week and apply it to Bluffton’s up-and-coming and tried-and-true restaurants. “This really becomes an opportunity for restaurants to show off a little,” he said. “If there’s anything I’ve learned it’s that chefs can get a little bored with their menu. This lets them put themselves out there a little bit, try something new and have some fun with it.” The week-long celebration of food starts with the second installment of 62
TASTEOFHILTONHEAD.COM
the Taste of Hampton Lake on April 7, which sees area chefs putting on cooking demonstrations inside gorgeous custom homes. While he’s keeping this year’s lineup of chefs under wraps, co-chair Charlie Wetmore points to last year’s lineup of Bluffton culinary rock stars as a hint of what to expect. “Last year we had Brandon Carter from FARM, Munjid Yousif of Olive & Fig, Ted Huffman from Bluffton BBQ, Andrew Ferrel from Backwater Bill’s and Hank Yaden from Hank’s Lowcountry She Crab Soup. Last year he did a shrimp limoncello with flames five feet in the air. It was wild.” Following restaurant week, which runs April 8-11, Taste of Bluffton will debut another new event “Brews Under the Stars,” April 12. Featuring craft beer
and live music, details were still coming together at press time. But honestly, what more do you need to know than “craft beer and live music?” It all culminates with the Taste of Bluffton street fair, April 13. Packed with food vendors of every kind, the street fair is a veritable smorgasbord of the flavors that have made Bluffton famous. “We’re not trying to reinvent the wheel. We want to stick to the roots of the event, so we’re keeping it on Calhoun Street but expanding it down to the water,” said event Co-Chair Crystal Valentino. “There will be significantly more food vendors, and we’re hoping to bring back some who were at the first Taste of Bluffton.” One big programming change to this year’s event – rather than the traditional cooking competition, guests will go head to head in an eating competition. “Restaurants and vendors are already competing since there’s voting, so we wanted to step away from that and give locals a chance to compete,” said Valentino. In addition, Jesse Blanco’s “Eat It and Like It” crew will be on-hand during the entire week, filming for an upcoming episode while Blanco will emcee cooking demos on the main stage. Visit tasteofbluffton.com for ticketing information.
MAYFEST
For years, Bluffton’s most famous festival went by the admittedly clunky name of “The Bluffton Village Festival, also known as Mayfest.” Since everyone was just calling it that anyway, last year the Rotary Club of Bluffton decided to make it official and just call it Mayfest starting with last year’s 40th annual event. This year, for the 41st iteration, to be held May 11, you can expect nothing less than an open-air love letter to this river town’s charm and character. But more importantly, you’re going to find some of the most delicious food in the world. “With the food, we like to be local as much as possible,” said event spokesperson Lisa Carroll. Making mouths
happy this year will be a growing fleet of food trucks parked up and down Calhoun Street, plus vendors offering up everything from Southern fried Oreos to delectable local shrimp. From one of Calhoun Street to the other, it’s a carnival of flavors and aromas that showcases the culinary wizardry of Bluffton. And you’d better come hungry, especially if you want to compete in the pie eating contest. “I’ve been involved with that since the beginning,” said Carroll. “It’s something that brings a real hometown feel.” Provided by the Sugaree, the pie eating contest will give locals a chance to chomp their way to victory. Although, to be fair, if you’re not one of the many hungry
high schoolers who compete every year you can probably only chomp your way to second place. But at least you’ll have chomped through some delicious pie. For the younger competitive eaters, there will also be the third annual doughnut eating contest, again featuring baked goods from The Sugaree. With doughnuts dangled on strings, this event challenges pint-size Joey Chestnuts to gobble down doughnuts without using their hands. All this may be simply a side dish to Mayfest’s more famed offerings, from the Ugly Dog Contest to the brilliant artworks from points across the Southeast. But for foodies Mayfest means one thing: a deliciously good time. TASTEOFHILTONHEAD.COM

“KEEP IT SIMPLE” BY CHRISTY BARONI
Spring is here and we are generally open to new ideas and new experiences at this time of year. The New Year’s resolutions may be wearing thin, but the desire to renew, refresh, and reengage with your health is ever present. According to Business Insider, about 80% of our New Year’s resolutions fail by February. That’s not a very promising statistic, especially when 45% of resolutions are related to health, fitness, or weight loss. Why are they fleeting? My guess is that the resolution was either too complex or too general. Being specific and simple is the way to success. Let’s take a look at a few ways to employ a ‘keep it simple’ approach related to your wellness goals.

Again, fads will come and go, but the basics remain. Start with a quick inventory of your daily food habits: how much water do you consume? where is your protein? are your carbs simple or complex? And last but not least: where are your veggies? A quick and simple goal to employ here is to buy 80% of your groceries from the perimeter of the store. There you will find meats and fish, fruits and vegetables, and clean dietary fats like nuts, seeds, and oils. This doesn’t mean that your favorite treat is completely off limits, it just means that 80% of your intake is providing the building blocks for a clear mind and a strong body. That leaves the other 20% free for communing with friends and enjoyment. Maybe the term ‘fad’ diet is really just an acronym for Feeble And Disappointing… not words ideal to describe your nutrition. Instead, shoot for habits that are both simple and sustainable.
