Welcome Back! That’s the theme that comes to mind every spring when our bridge becomes a beacon for returning loyal visitors as well as first timers. The sun is shining, the beaches are starting to hum again, and tennis and golf balls are flying high. For many, spring means a huge return back to some form of normalcy for an area that just months ago was hit by a Cat 2 hurricane. As a rule, most of us take our lives for granted. It’s not that we do it on purpose or don’t appreciate what we have. It’s just that sometimes life moves so fast that it’s hard to slow down and enjoy the simpler things. Living here on Hilton Head, the simpler things are amazing. We just need to pinch ourselves once in a while and remind ourselves to take advantage of things that people all over the world travel here to enjoy. To look around the Island now compared to last October is remarkable. Sure there are still some signs left over from the devastating storm and there will be long term scars. For the most part, however, the Island is up and running and as good as new. I believe I can speak for most Islanders and business owners when I say bring on the spring and “let’s get this Island humming again”! It is scary to think that last October all of our treasures like our beaches, golf courses, and world class restaurants were at the mercy of mother nature. Spring seemed like a lifetime away. I bet if you ask any local they will tell you that the time was one of great fear and anxiety followed by a period of mending and rebuilding. But it was this fear that actually awakened a new and revitalized sense of community. Islanders have been working harder then ever this off-season and it shows. Hilton Head looks great and is ready to resume its place as one of the top destinations in the country. As an additional perk, I believe you’ll find the service and appreciation to detail actually go to an even higher level than ever before. So welcome back and we hope that you take the time to enjoy the simpler things that Hilton Head has to offer and to sample many of our wonderful restaurants. We sure are glad to be back up and running and we are glad you are here to share it with us.

Sit on the banks of Broad Creek and watch the setting sun cast marsh grasses and glittering tidal waters in dazzling hues of red and gold, and you can almost feel the years slip away. Here, you’re looking at the same view that has entranced islanders for generations. You’re sharing the sunset with the men and women who built Hilton Head Island, who called it home before anyone dared dream of putting a bridge on it. In that moment, you’ll gain a real appreciation for Hilton Head Island’s past. And, there’s no better place to have that moment of spiritual awakening than from a barstool beside the sprawling new outdoor bar at Fishcamp on Broad Creek. Because what good is a spiritual epiphany if you can’t pair it with a glass of pinot noir or a local IPA? But sunsets and a magnificent new bar are just part of the appeal of Fishcamp, the restaurant that is rewriting the rulebook for local cuisine. It’s just that it’s hard to pick one thing about this property that impresses the most. Start with the building itself, and the rich history behind it. Built in 1955, Simmons Fishing Camp was one of the first commercial buildings ever constructed on Hilton Head Island. For perspective, the first bridge wasn’t built until the next year. The basic structure has remained intact since then as a fishing camp, then a nightclub, and now has seen extensive addition as it becomes home to Fishcamp, the latest restaurant concept from Coastal Restaurants and Bars (C.R.A.B.). Inside, the building was taken down to its bare bones and 12

rebuilt, while outside a spacious bar extends outward to the water, flanked by a sprawling patio space for outdoor seating. A bocce ball court just beyond gives way to those Broad Creek views, which tie the whole outdoor space together. The process, which Brendan Reilley jokingly refers to as the “longest remodel in history,” took nearly a year. When it was finally ready to open in early October, Hurricane Matthew decided everyone needed to wait a few more weeks. But what’s a few weeks when you’re talking about a storied structure that has been such a key part in Hilton Head Island history? “The building originally opened as a transportation hub to Hilton Head before the bridge,” explained Managing Partner Brendan Reilley. “It was a true fishing cottage. You’d come in, refuel, get some food in your belly then get back out there and go fishing.” The Simmons of Simmons Fishing Camp was Charlie Simmons Sr., a towering figure in Hilton Head Island history who ran the ferries to and from Hilton Head up to Buckingham Landing and down to Savannah. He was called “Mr. Transportation” by the native Gullah for the fact that anyone needing to go anywhere had to talk to Mr. Simmons first. You’ll see Simmons honored, and rightfully so, all over Hilton Head Island for his contributions to local history. By partnering with the Simmons family, Fishcamp is helping tell his story to even more visitors and locals than before. “Palmer Simmons, Jermaine Robinson and Marcus Simmons
are all partners in the restaurant,” said Reilley. “And the Simmons family still owns the land.” And what land it is. Commanding waterfront views that you simply won’t find anywhere else, Simmons Fishing Camp has been drawing a crowd since well before the foundation was poured in 1955. In fact, dig beneath that concrete and you’ll find six inches of discarded oyster shells from the untold eras that waterfront view made it the perfect place for generations of family oyster roasts. And that’s just outside. Inside you’ll find a charmingly intimate dining room that takes the rustic atmosphere of a classic Fishing Camp and gives it an upscale spin. Perched on walls made from reclaimed docks, you’ll see fishbowls holding live betta. Look up and you’ll see a reclaimed tin roof magnificently weathered to evoke old rural Lowcountry charm. Look down and you’ll see the concrete floor poured in 1955 when the original fishing camp was built. “We took one look at that floor and said, ‘We’re not doing anything to this,’” said Reilley. “I actually met the gentleman who poured the floor. He was from Boston and was in town for Mr. Simmons’ funeral.” The masterful part of the remodel is the way it manages to maintain the imagery of a bring-your-catch-in-and-cook-it fish camp with the sensibilities of an upscale seafood restaurant. A large part of that credit must go to Chef Hicham Elmadi, who has created a menu that reads upmarket but never places a higher premium on pretense than flavor.
Take the shrimp and polenta, which infuses Italian flair into the classic Shrimp and grits but stays grounded in classic Southern cuisine. It’s a textbook example of the dichotomy found on a menu that offers offers everything from ahi tuna au poivre to peel ‘n’ eat Lowcountry shrimp boil. Chef Hicham Elmadi puts the full array of his culinary acumen on display here. Born in Morocco and trained in some of the most celebrated kitchens of Europe, Elmadi was first introduced to the South when he opened Au Pied de Cochon at the Hotel Intercontinental in Atlanta. His worldly perspective on food and flavors is a big part of what sets the cuisine at Fishcamp apart. “We are definitely putting some love and effort into this food,” said Reilley, noting that everything from the stocks to the bread is made in-house at Fishcamp. By press time, the menu for lunch and brunch had not been finalized, but Fishcamp will be serving both by the time you read this. Fishcamp on Broad Creek is the latest jewel in the CRAB (Coastal Restaurant and Bars) Company’s crown, which includes both Crazy Crabs, both Reilley’s, Aunt Chilada’s, The Boardroom and Carolina Crab Co.

An Island establishment on the south end of Hilton Head for sixteen years, Catch 22 offers more than a fabulous dinner. Aside from the fact that all of their seafood and meat are fresh and top quality, their secret is that the owners and staff are in the business to do more than just feed you. ‘A la Cheers, ‘everybody knows your name’ when you go to Catch 22 and the staff’s goal is to make your dining experience unforgettable from start to finish. Catch 22 was the collaboration of two couples, Gary and Penny Duren and Bryan and Daisy Bobinchuck, who met working at another local restaurant and decided to open their own place. Between the four of them, they share all the day to day duties and according to Gary, “Have all bases covered.” While Penny orders the wine, bartends, and does the financials and payroll, Gary will tend the front of the house doing hosting duties with Daisy as well as ordering. Bryan, on the other hand, is in the back of the house following his passion as a chef. All in all, it has evolved into seamless teamwork which in turn makes the restaurant a favorite for locals and visitors who keep coming back for more. When you walk into Catch 22, you just feel comfortable – at home. After being greeted by friendly faces, the warm light embraces you and the booths or the bar become your comfort spot for a great evening. The walls are adorned with paintings by a local artist and the restaurant is his gallery of a sort. “It works out great for both of us,” said Gary. “People can buy his paintings or just sit and admire his work.” What you should know right off about Catch 22 is that everything from the meat to the fish is done differently. “What makes us unique is that we get all of our fish in fresh and whole,” said Bryan. “Ninety percent of the other guys order fileted fish. To us, if it’s fileted, it’s old. All of our fish is defined as local or gulf – we have no mystery fish. It comes in daily and we call a spade a spade. We can tell you where they live and what they eat. We get in a lot of fish that is not beaten up on local menus: Barrelfish,
Hognose Grunt, Red Porgy – the name might not have a lot of sex appeal, but the fish do.” As for the beef, they are the only guys in town with their own band saw. “I get the meat in the form of a whole muscle and break it down myself as needed,” said Bryan. All the beef is Certified Angus. Bryan prides himself on his Manhattan Steak which he describes as the cut between the Rib Eye and the Strip. “It is easier to eat than a Rib Eye and more flavorful than a Strip.” The menu and specials at Catch 22 cater to Chef Bryan’s culinary genius. “I guess you could describe my style as fusions. I like to combine traditional with non-traditional – say Southern and French. I like to use different variations in my cooking,” explained Bryan. An example of this would be his South Carolina farm-raised quail with a French Dijon and rosemary glaze. “It’s all in what the ingredients dictate. I create my specials off the cuff every day with what is fresh.” Diners can expect spring specials to include a Catch of the Day and a Pasta du Jour made with either seafood or beef like a white truffle beef stroganoff. Spring seasonal dishes will also embrace the tail end of oyster season and the beginning of soft shell crab season. The regular menu has evening specials like Prime Rib on Thursday, Friday, and Saturday and Snow Crab specials the rest of the week. Some of their most popular dishes include the Crispy Roasted Half Duck served with leek and potato hash, sautéed green beans and a sun dried cherry sauce as well as the Scallops dinner served with homemade shiitake and goat cheese ravioli atop a bed of sautéed spinach with a prosciutto and sherry cream sauce. They have an Onion Encrusted Pork Chop with smoked gouda grits, green beans, and a Smithfield ham bourbon glaze, and a Cracked Pepper Tuna with garlic whipped potatoes, sautéed spinach, and horseradish cream. The menu includes a “Raw Bar” of Shrimp or Oysters and there are a number of tasty salads and appetizers to start off your meal. All of their sauces are made from scratch, and
the breads are all made in house as well as most of the desserts. Catch 22 opens every evening at 5 p.m. Happy Hour runs from 5 - 6:30 p.m. and the early dining menu, served from 5 - 6:15 p.m., includes a glass of wine and a choice of salad and entrée. There is a Young Adults Menu for children 12 & under which features favorites like chicken fingers, cheese pizza, pasta, and fried shrimp for $5. The bar at Catch 22 has become a popular place to eat dinner as well as enjoy a cocktail or two. Specialty drinks include a jalapeno margarita made with pineapple juice, a tiramisu martini, mojitos, Moscow Mules, and the drink of the spring season is the fresh watermelon martini. All beer is bottled (and they have most everything) while the wine list is extensive and changes seasonally to compliment Bryan’s menu. Dining at Catch 22 is an all-round feel-good experience. It is not a hard sell when you think about it. Wine, food, wine with food, food with wine, during the day, with a beautiful view on the water, with music in the background, swishing, strolling, and most likely singing by the end of the day. How joyous and what a wonderful way to spend a spring Saturday in March. If there is one thing that you can be sure of on this fine day, is that with 32 years of experience under its belt, this is one festival that has worked out the kinks and offers an afternoon of smooth sailing and savory sipping. So save the date of March 11th when the Hilton Head Wine & Food Festival Public Tasting will be back with the Harbour Town Yacht Basin in Sea Pines as its backdrop. Gates for the festival will open at 11am for those who want to get the lay of the land before corks are popped at noon. With 40 different vineyards and over 300 different wines on hand to sample, there are many varietals from which to choose. To say that this would be a great opportunity to think out of your comfort box and try some different grapes would be gross understatement. According to Jeff Gerber, Festival Director, “I tell people to have a plan. It is so easy to get caught up in the excitement. There is lots of wine and food to try but it is like Thanksgiving dinner. It can be a great dinner or it can be an ‘Oh my God’ moment.” Fortunately, there is plenty to do besides drinking all day: live music will serenade you, there will plenty of local chefs serving up samples of their favorites, and entertainment will come in the form of the Bartender’s Challenge and Waiter’s Race as well as the Sysco Outdoor Gourmet Challenge. Proceeds from the Silent Auction will go toward their scholarship fund which has provided local students interested in hospitality careers with over $42,000 in scholarships over the last 4 years. Tickets are $65 and VIP tickets, with access to the top floor of the Harbour Town Yacht Club, are available for $110. Jeff is in his 3rd year organizing the festival but has been involved in it for many moons. He explained that what began in a parking lot decades ago to help usher in the tourist season is now a week-long festival that requires over 400 people to execute and brings in $4 million to the local economy with 63% of the revelers coming from at least 50 miles away. “It’s getting there,” he said, “but we want to be bigger.” Events during the week leading up to the Public Tasting include Knowledge Sessions where you can learn about making, pairing, and tasting wine from the pros. There is also a Sip and Stroll where you can shop at discounts in Harbour Town while, well, sipping and strolling. If you are in the mood to try some truly exceptional high end wines, then do not miss out on the Grand Tasting on Friday night, March 10th. It may sound droll at $125 per ticket, but this is a bargain event. “The cost of a ticket is the cost of one of the bottles of wine that people will taste. This is an opportunity to sample many high end wines that include reds, whites, and sparklings and decide what you like. LUCKY ROOSTER K I T C H E N + B A R Chef Clayton Rollison __________ BY CHRISTY BARONI
If you are lucky enough to have eaten at the Lucky Rooster, you have experienced the product of a local boy who spread his wings while staying true to his southern roots. Meet Chef Clayton Rollison, longtime local in the food and beverage industry. He grew up on the beaches of this small island home town, and enjoyed the quiet life of the pre-Cross Island Point Comfort area. As early as 1984 his family was opening restaurants here on the island. At just 14 years old, he started working for his uncle at the Crazy Crab and fell in love with the characters, the stories, and the excitement of the industry. When pressed for details about the characters, a sly smile crept across his face and he kindly kept those secrets to himself. After graduating from Prep in ’99 he bounced around through college trying to find focus and direction. He eventually landed at the Culinary Institute of American (CIA) in Hyde Park, NY to complete culinary school. He cut his teeth in New York City and at this point a sense of purpose and focus developed. The market shift in 2008 coincided with the moment in Clayton’s life when he felt he had hit a ceiling and was ready for another change of scenery. In retrospect he recognizes that his own attitude and perception were the primary drivers of this need for change. He landed in Nashville where he was tasked to re-launch a huge restaurant. He describes this time in his life as ‘biting off more than he could chew’, which was exactly the challenge he craved and needed to give him space to grow as a Chef. Being forced in to this huge role with bigger responsibilities than he’d ever managed before gave him the confidence and skill to come back home and launch Lucky Rooster. It was the building block that led right to the success we know and love. Not only did he find a level of professional success in Nashville, he also found his wife. He met the ying to his yang in Leah. When speaking about Leah, he shares a rare and refreshing admiration for her contributions not only to his overall happiness in life, but also in the balance she provides for their young family. While chatting with Clayton, one thing that stood out was the genuine admiration and respect he has not only for his family, but also for his fellow staff at the Lucky Rooster. Even when speaking about his classmates at CIA, he spoke only of their accomplishments and their talent. Through this genuine respect he recognizes the good work of those around him. This is a rare and unique quality that Chef Clayton displayed over and over again. 26

This respect for others reaps culinary benefits for all of us lucky enough to frequent the Lucky Rooster. The Beverage Director & Dining Room Manager, Joseph Veltre, boasts a biochem degree from Penn State. He started as a server in the dining room and finally married his passion for mixology with his knowledge base of chemistry. The extraordinary drink menu is evidence of this passion. Just like Chef Clayton was given space to grow to test boundaries as a young chef, he is giving the staff this same room for creativity. “There is something to be said about being in a kitchen. It’s honest work. You either can or can not. You can’t pass the buck and you can’t fake it.” He sees a shift in the perception of working as a chef with the dawn of competitive cooking shows on TV. TV makes the world in the kitchen look glamorous and fun, but the reality is that success in the kitchen simply requires repetition. He believes that while there are people who are inherently more talented, simply putting the work in is the only thing that generates success. Chef Clayton is blunt about the fact that he’s in a strip mall on 278, and therefore knew that he had to find that niche to have a stand out menu on the island. He sought to create a place where the kitchen and bar staff could prepare the foods and drinks they wanted to prepare, while at the same time meeting diners just outside of their comfort zones. He gives his staff the space to grow with simple yet brilliant questions. Will it be delicious? Does it make sense for this restaurant? Will it be worth the energy/resources to develop it? For example, the menu boasts a southern favorite of Fried Green
Tomatoes with pimento cheese, right alongside Octopus a la Planche or Bone Marrow. You’ll find fried chicken on the menu all year long. And once he’s earned your trust with that favorite, you may be tempted to try something more creative. He gets inspiration to keep the menu fresh by reading and traveling as much as possible. To that end, he’s bringing some of that inspiration to us this Spring. Keep these dates on your radar for a good time and great food. March 29th – dinner and book signing with Ronni Lundy, food historian and cookbook author of “Victuals” April 29th – block party with Jorge Guzman from Surly Brewer and Tyler Lyne from Riviera out of New York City to raise money for Greener Grass, a local charity that offers assistance to anyone seeking help for alcohol or drug addiction. And the name… Lucky Rooster. If you are wondering about how he came up with that, we are in same boat. Rumor has it there is a small handful of folks who know the true origin of the name, and the rest of us will have to imagine.

It is staggering to consider the depth of musical talent that we are blessed with on this Island and we have another new musician to add to our list of ‘got-to-go-hear’ entertainers named Bobby Lee Magyarosi (Hungarian of descent, he says that is where he got the gypsy traveler in his blood). Bobby is a singer and songwriter who strums and picks and jams his way into his listeners’ hearts and souls. Bobby Lee has a style that is gritty and soulful as he plays classic rock, blues, and ‘90’s alternative music, but do not be surprised if he throws in a bit of Old Country. After speaking with him, I realized he is all about one thing -- that is to put everything he has into his music, and the joy he hears back from his audience is his reward. Bobby Lee grew up in the burbs of Detroit and after receiving his first guitar at age 9 he has not put it down since. He is primarily self-taught and was one of “those” kids that just shut himself up in his room and jammed all day. “I was playing in bars and clubs before I was old enough to be in them,” said Bobby Lee. He expanded on his love for music in school and played stand-up bass in orchestras and sang tenor in choirs. In college, Bobby Lee studied classical guitar and earned an Associate’s Degree in Music Technology and a certificate in Studio Engineering. Early musical influences in his life were the likes of Jimmy Page, Led Zeppelin, AC/DC, and ‘electric-style blues’ like Muddy Waters. While his shows are mostly cover songs, songwriting is his true passion. He often features a whole set of his original music. Listeners often request to hear his 30

songs. “That’s what they hire me to play,” he commented. His extensive song list is varied and he tries to make each show unique. “I try to mix it up and keep it different.” He can transition from classic artists like the Beatles, Bowie, and the Stones, to Jason Isbell, Foo Fighters, and Ryan Adams. Music is his life and his job and his release. When I asked him what he does when he is not playing music, there was a long silence. “As long as I can keep doing this and paying the bills, this is my life. Music means to me pouring it out every time I’m out there. It’s about energy reciprocation with my audience. I put out everything I’ve got and hopefully get it right back,” said Bobby Lee. In his spare time, Bobby Lee is composing original works. He travels back and forth between Hilton Head and Detroit where his the band, Duney Bros., released a full length album entitled “Broken Sleep” in 2015. He has also played with many Michigan and National acts including Brandon Calhoon and the Tobacco River Band, The Bothered Minds, and Saints of Soul to name a few. Get your fill of tunes, food and suds at the second annual Barrels and Bluegrass Lowcountry Craft Beer Festival. by Barry Kaufman
It’s safe to say that the folks behind the Barrels and Bluegrass Lowcountry Craft Beer Festival will be watching the weather pretty closely this coming May. After all, their inaugural event played host to beers from more than 50 breweries, food from three different restaurants, music from a slate of regional bluegrass bands… and one very unwelcome tropical storm. “We said it would be rain or shine and we meant it,” said Jennifer Weeks, marketing and event coordinator for River Dog Brewing, and festival organizer. “The rain actually wasn’t that bad. People threw on ponchos and were dancing in the rain to bluegrass music. And they got to drink really good beer and eat really good food.” That sounds like a more than fair tradeoff for a slightly soggy pair of dancing shoes. Despite the rain, the first Barrels and Bluegrass accomplished what it set out to do: educate and elevate the local palate as to the many wonders of craft beer, and give people a hell of a good time in the process. “The whole point really is to get people interested in craft beer from all over the country – what the differences are between styles and even between breweries,” said Weeks. Obviously, River Dog has a stake in helping to foster a local appreciation for craft beer, but it was also about spreading the word on the Lowcountry craft beer scene to other breweries around the country. “We attended the Great American Beer Festival in Denver and that was a great way to meet other brewers,” said Weeks. “Not 40

a lot of people know about the area.” It’s safe to say after last year’s event the word is out. In addition to outstanding beers from River Dog and its fellow local breweries Southern Barrel and Hilton Head Brewing Co., the inaugural event brought in South Carolina beers from R.J. Rockers, Hi-Wire Brewing Co., Holy City Brewing, Palmetto Brewing and more. They joined an expertly curated list of fantastic breweries from all over the country, from Michigan’s Bells to Pennsylvania’s Victory. Those Yankee brewers were given a taste of Southern hospitality thanks to that downhome fiddle and banjo sound of bluegrass, plus mouth-watering barbecue and locally sourced Southern fare from area restaurants. “It’s about showing what we have down here in the Lowcountry,” said Weeks. “We wanted to bring that into the mix as well.” While details have not been firmed up as of yet, you can bet on a few things for the second incarnation of Barrels and Bluegrass. Besides the fact that they’ll be keeping an eye on the Weather Channel, we mean. “You can expect once again to find great food, great bluegrass music and great beers, some you can only get at the festival,” said Weeks. “All in a picturesque Lowcountry setting.” Details were still being confirmed at press time for the second Barrels and Bluegrass Lowcountry Craft Beer Festival. 1 1/2 pounds Stewing Chicken 3 Quarts Water 1 Tablespoon Salt 1 pound Escarole 1 1/2 Cups Diced Celery 1/2 pound Ground Chuck 1/2 Teaspoon Chopped Parsley 2 Eggs 1/2 Small Clove Garlic, Minced 1/2 Cup Bread Crumbs 1 Tablespoon Grated Parmesan Cheese Salt & Pepper to Taste
Simmer chicken in large kettle with salted water until tender. The stock will cook down to about five quarts. Remove from heat. Remove chicken and separate meat from bones, gristle and skin. Shred chicken into little pieces and set aside. Cook escarole and celery in salted water, in separate utensils, until tender. Drain, set aside. Mix ground chuck, parsley, eggs, garlic, bread crumbs and Parmesan cheese well and shape into marble-sized meatballs. Fry meatballs until lightly browned in fat, remove from pan, Return chicken stock to heat, bring to a boil and add the meatballs and chicken pieces. Add vegetables and simmer for ten minutes. Combine bread ingredients into a batter, bake on greased jelly roll pan 300-325° for ten minutes. Remove from oven and cut into tiny squares while still hot. Add bread to soup just before serving.

Happy 2017! By now you’ve settled in to this New Year and may be wondering about that resolution you set. If pursuing healthy habits was on your list for 2017 let’s take a moment to look at some of the biggest lies the fitness industry propogates, and find some truth on which to hang your habits. 1 – Skinny = Healthy Wrong, wrong, totally 100% wrong. The scale is truly just one data point in a myriad of health markers. Yes, your weight MAY indicate either a decline or improvement in your overall health, but there are other markers to keep an eye on as well. First, keep track of your body composition. You can purchase a scale that will do this for you at home, and this helps you see if your weight loss or gain is from lean muscle

or fat. Second, know your resting heart rate (RHR). Your RHR is simply just how fast your heart beats when you are completely relaxed. This is a peek inside to know if your body is operating efficiently. As you eliminate plaque from your arteries you will find your RHR decreases. Track this for 3 days to get a good average. Third, measure your hip to waist ratio. Take the first circumference measurement at the smallest part of your midsection, about an inch above your navel. Take the second circumference measurement right under your hip bones. Divide your waist by your hips. This number simply indicates the amount of abdominal fat you are storing. High abdominal fat stores are linked with higher risks for heart disease. 2 – All calories are created equal. Similar to weight, calories get a lot of attention in the world of wellness. But all calories are not equal when it comes to hitting your goals and staying on track. Calories from highly processed foods
often lead to feeling more hunger and can cause a hormonal roller coaster with huge spikes in insulin production, which may lead to lethargy and eventually more hunger. To stop that cycle and to put a dent in the processed carbohydrate craving, be sure your calories include lean proteins and clean healthy fats. For example, instead of reaching for that ‘energy’ bar, which may have upwards of 15 g of sugar per serving, consider a more balanced snack. A more balanced snack of 4 turkey slices, a handful of cashews, and some apple slices gives you a great combination of protein, fat, and carbohydrates to keep you feeling full and giving your energy for a longer period of time. Isn’t variety the spice of life? So, spice it up with creative caloric combinations. 3 – All workouts are created equal. This one may generate some backlash, but hear me out. There are so many options out there for ways to get a great workout. However, if fat loss is your
goal, coupling high intensity intervals with some weight training will generate a result much faster than steady state cardio workouts. High intensity intervals put your metabolism in to the perfect state to burn fat, and weight training has hormonal benefits that assist in keeping you lean. Now that you have some facts to counter those fitness industry myths, you can re-attack that new year’s resolution.

It’s time again for one of the island’s favorite events of the year: WINGFEST! This year, March 24th and 25th will be the Island Rec’s 22nd Wingfest, and we can expect a return of our favorites and perhaps be introduced to some new flavors and fun events. Held at Shelter Cove Community Park, Friday night kicks off with a family-friendly laser light show and the island’s biggest tailgate party. Coinciding with March Madness, there will be TV’s to watch the basketball games, a tailgate party featuring some

of our local favorites, and a Kid Zone with bounce houses and other games and activities. The entire family can enjoy a variety of tailgating food, not just wings. While all the Friday night hype is part of the fun, the real reason we come to Wingfest every year is for the battle of the best wings on the island. In 2016, we saw the HH Firefighters Association take home the People’s Choice award and One Hot Mama’s take home the Judge’s Choice award. I expect both of these groups to come
out strong to defend their title, but who else out there can give those wings a run for their money? For the second year in a row now, anyone can jump in on the fun and compete in the Wing Eating Contest. Taking place midday on Saturday, the challenge this year is to see who can eat the most wings in 2 minutes. Are you up for the challenge? Saturday entertainment includes island favorites Deaz Guys, performing midday, followed by Matt Parker & The Deacons coming to us from Myrtle Beach. If you caught them at OysterFest, you’ll be sure to want to catch them again. If the tailgating, laser light show, great entertainment, and delicious wings aren’t reason enough to attend, let’s not forget the real beneficiary for this event. The funds generated at Wingfest, like all the events sponsored by Island Rec, go directly in to the Rec Center Scholarship Fund. This fund allows access to youth sports programs and afterschool programs for children who would otherwise not be able to afford these activities. Your good time opens up a healthy and safe environment to as many children as possible. As Special Events Director Joe Cain said, “Because of these events, no child is denied recreation”. If you find him in his giant chicken wing hat, be sure to get a photo with him! Come be a part of the only event on the island where 7,000 pounds of chicken wings will be served. This may come as a shock to many Blufftonians, but there is another Captain Woody’s. It’s on Hilton Head Island. We know, this may come as a surprise. Feel free to sit down while you read on. Yes, the stalwart wood-sided institution that has anchored the Promenade since the dawn of Bluffton’s modern era of explosive development (2008-present) is actually the expansion team. Captain Woody’s Bar and Grill Bluffton is such an iconic Old Town landmark, most people not only assume that it’s been there forever, but express genuine shock that there’s another one on Hilton Head Island. “We get that a lot, actually,” said manager Lauren Jorden with a laugh. It’s not hard to understand how people can be confused. For one, there’s the laudable attention to conservation that was putting into sourcing reclaimed material for the restaurant. Many of the tables were repurposed from Hilton 68

The iconic island restaurant picked the perfect time to expand to Bluffton. Eight years in, it’s a crucial part of the State of Mind. Head’s old Chart House. The hostess stand is made of recovered timbers from the old dock at Palmetto Bay Marina. Then there’s the signature double doors under a gothic archway that greet you upon entering, pulled from an old Philadelphia fire house. “People ask us all the time what our building used to be,” said Jordan. “I have to explain that it was built brand new to fit in with the feel of Old Town Blufffton.” But it’s not just the décor’s throwback style. It’s also the fact that something about Captain Woody’s just makes it feel like it’s always been there. Maybe it’s in
the menu’s casual-comfort-food approach to fresh, delicious seafood. There’s something about the satisfying crack of a crab leg that pairs so exquisitely with a bucket of beers and cool breezes crossing the screened in lanai that you can only get here. You won’t find a hint of pretense on the menu, just classic seafood dishes prepared for the exact kind of laid-back lifestyle that Bluffton engenders. Sure you can order scallops jasmine in a delicate mornay sauce that balances béchamel and gruyere and be suitably impressed. But you’d be missing out on the simple magnificence that is the grouper melt. Or the tangy, perfectly textured fried oysters tumbling out of a brioche bun on the signature Po Boy. So it could be the tried-and-true menu that makes Captain Woody’s feel like it’s always been there. Or it could be the masterful way the building was constructed to feel historic.
But it’s probably the people. “We’ve been really lucky,” Jordan said of the massive crowd of regulars that calls Captain Woody’s, particularly its famous rooftop bar, home. “I worked at Captain Woody’s on the island for 8-9 years, and that’s what I was worried about, because we had such a great group of regulars.” She needn’t have worried. It turns out when you open the only rooftop bar in town, staff it with friendly bartenders and foster a laid-back friendly vibe, people tend to congregate that sort of thing. Head to Captain Woody’s Bluffton on any given night and you’ll find no shortage of familiar faces watching a game, chatting with Jeff or Patrick behind the bar or just enjoying live music. You may even find yourself in discussions with “The Mayor” of Captain Woody’s (a title currently disputed between several regulars). Stay long enough and you might end up getting talked into joining the kickball league Captain Woody’s sponsors, and whose members tend to celebrate wins and mourn defeat at the rooftop bar. Get there on Wednesdays and you might wind up joining a team for “B-Town Trivia,” Bluffton’s most exciting trivia night. In creating that kind of social nexus, Captain Woody’s Bluffton has established itself as the go-to neighborhood bar. And thus, the sense that it’s always been there. “We’ve far exceeded what our goals were when we opened,” said Jordan. “We never expected that it would turn into what it has, or the Bluffton would turn into what it has.” Indeed, the small town of Bluffton has seemingly grown up around Captain Woody’s (it was among the first buildings, and only the second restaurant, to open in The Promenade). Maybe because of this, because Captain Woody’s is such a constant in a town that has somehow spent a decade sprouting overnight, it just seems like it’s been there forever. “It’s been exciting to watch and exciting to be a part of,” Jordan said of the growth in Bluffton since the restaurant opened. “For our part, we just stay true to ourselves and put out good seafood.” It’s worked so far, and because of that, Bluffton has rightfully made Captain Woody’s its own. We hear they might even open one on Hilton Head soon.

The fact of the matter is, you will not find a time or place more suited to celebration than Bluffton in the spring and summer months. Something about the way the breezes off the bluff go from harsh and chilling to gentle and soothing just breathes life into the town. And with the social calendar having turned a ghostly shade of empty over the winter months, Blufftonians spend this time of year itching to throw a party. It’s something you really have to see for yourself. And while you could find something to fill every one of the days from now to August with that Bluffton brand of fun, we’ve narrowed the list down to five key things that, if you do nothing else, you must experience in Bluffton this year. In no particular order (because this is Bluffton and we don’t do orderly) here they are:

Sail Out (or Stowaway) to the Sandbar
The May River sandbar, elevated above the waves when the tide drops away, is party central for Bluffton’s seaworthy. If you don’t have your own ride, we suggest you spend at least one Sunday Funday in the company of a friend who does. Then kindly suggest they pull up on the sandbar and join the best party outside of dry land.

Get a Shrimp Salad Sandwich at the Bluffton Village Festival
There are some culinary experiences that are so legendarily overhyped that the actual experience cannot possibly live up to the expectation. The Shrimp Salad Sandwiches at The Bluffton Village Festival do not belong in that category. There is a reason that people drag coolers down Calhoun Street past the artists and musicians and vendors that are, ostensibly, the reason for the event. It’s to load up on that succulent savory goodness being purveyed by the ladies of The Church of The Cross. It only happens once a year, and even then for a limited window of a few hours. Hit Every One of The Bluffton Sunset Party Series
This one could take some endurance, but we know you’re up for it. Starting with May’s Pizza & Pasta Palooza and concluding with the season-ending Bluffton Sunset Party in August, Bearfoot Sports is continuing its marathon of great culinary events this year. These family-friendly events bring out some of Bluffton’s finest restaurant for four months of spectacular parties at Bluffton Oyster Factory Park. The aforementioned Pizza & Pasta Palooza places the emphasis, obviously, on Italian fare while June’s Blues & Brews on The Bluff places the spotlight on two great Southern creations – barbecue and the blues. July’s May River Shrimp Festival is a two-day celebration of our area’s bountiful seafood, before the Bluffton Sunset Party brings the house down. It’s all set against a backdrop of great live music, fun activities for the kids and a view that ranks among the best in Bluffton.
