There’s something about spring every year that seems to get us excited and energized. Spring means the beginning of “The Season” -- the time of year when we welcome back the warmth and flock to the festivals. The Island buzzes with activity between spring breakers, Wine and Foodfest, the Heritage Golf tournament, and entertaining events at every turn of the corner. This spring, I’m more excited than ever when it comes to this magazine. Like most businesses, I always want to improve through innovation. Not only do I look at what we can do internally, I listen to my advertiser’s and reader’s suggestions and criticisms to see what we can do to improve the content and overall look and feel of the magazine. In striving to be the most complete food and beverage oriented publication in town, we looked at what was missing to elevate us to the next level. The answer was unanimous -- a menu section! Over the years, I have had many inquiries about adding menus from advertisers, concierges, readers, and even friends. Well now I’m proud to say that we have added menus to the original format that has maintained Taste as the most informative dining magazine on the Island. Also, beginning with this issue, we are proud to introduce the first class of candidates for our brand new Taste Hall of Fame. These local restaurants have conquered the test of time in a very competitive market for an extraordinary amount of time and have thrived and become synonymous with the very best in Hilton Head dining. Please look for these candidates all year and vote for your favorites. After a long brutal winter, one that saw snow (SNOW!) blanket Hilton Head Island, spring has finally arrived, leaving everyone itching to get out there and melt away those frigid memories. As you indulge in your annual return to al fresco dining, you’ll have a gorgeous new spot to bask in the Hilton Head sun as the famed rooftop terrace at Santa Fe Café rolls out its gorgeous new look. Gone is the seldom-used kitchen, cleared out to make room for expansive lounging and high-top seating options. The corner bar has been turned to create a more inviting, open-kitchen feel, with Corian counters set against white pine for a casually elegant look. The flooring has been completely replaced, with tiles in smoky charcoal mimicking the look of hardwood. But these are all material changes – what has truly reinvigorated this space is new feeling of openness. Lounge areas set before a massive 55-inch TV have created an entirely new experience here, one that takes full advantage of the massive canopy of sky overhead. “We were long overdue,” said Santa Fe Café owner Marshall Sampson. “It’s been 13 years since we’ve done anything up here… It came out better than I expected. We really expanded the space.” As we spoke, Sampson was perched on a high-top chair as construction buzzed around him. The finishing touches were being put on the patio, with crews from Lowcountry Electronics finishing up wiring the TV and sound system. Those crews were the last of a legion of workers who had been diligently reinventing this space since November (with a few breaks in between thanks to mother nature). 12

“We were supposed to be done a while ago, but the weather didn’t cooperate. Like, at all,” laughed Sampson. Rebuilding a rooftop terrace amid an unprecedented subtropical snow storm is certainly a challenge, but it helps when your contractors have a vested interest in making the best dining experience. “We kept it local – it’s all people who come into the restaurant to eat,” said Sampson. He gives credit to customer/ contractors like Amanda Costa who worked on the tiles, Stacy Peacock who installed it, Bob and Mary Slack of Creative Structures and Jonathan Lancaster at Millworks who did the cabinets. “Everyone had a stake in it, which made it even more special,” he said. Considering it started out as a sketch on a scrap of paper, skillfully interpreted by architect Mark Brummer, the results are astounding. And what’s more, it’s a monumental change for a restaurant that has always prided itself on steady, incremental change “Every year, we close after Thanksgiving, so there’s always something going on every year,” said Sampson, citing small changes like new flooring or tabletops. “This building has been a restaurant for 25 years, so if you don’t do something every year to keep up, it will show.” It’s a smart attitude to take toward change – when he first took over as owner, Sampson says he tried his best not to change anything. “I’ve worked here a long time, I knew it worked and I knew that people had their favorites,” he said. “I wanted to show them that I wasn’t trying to change anything they liked.”
But a few years in, Sampson and his business partner Sean Crosby hit upon the idea of taking their chefs out to Santa Fe, New Mexico, as they looked to expand on their famed menu. “We were there for about a week and we ate more than I think I’ve ever eaten in my entire life,” he said. This ignited a new approach to the menu, marked by new ideas, fresh ingredients and a slow-and-steady march toward progress. The limited one-page menu was enhanced with burritos and tacos, locally inspired ingredients like redfish found their way into dishes, and the price point broadened to allow for both the special occasion diner and the casual patron to walk away happy. “Since then, we’re always expanding the menu,” he said. “We never take anything off, because everything on there is somebody’s favorite. As a result, we’re very careful about what we add, knowing that we’re not going to take it away.” That careful curation results in a masterfully prepared menu that weaves between traditional Mexican, southwestern, Tex-Mex and southern cuisine, combining them in delicious and surprising ways. The inspiration is followed with immaculate execution – the beef, as an example, undergoes a 2-3 day marinating ritual so it’s perfect by the time it hits your plate. “Our chefs take a lot of pride in what they do,” said Sampson. “Consistency is the name of the game and they consistently put out a good product day in and day out.” Head chefs Austin Harris and Dave Strosnider were part of the staff long before Sampson came on board, and their continued brilliance has helped shape Santa Fe Café into the long-standing local favorite it is. But they’re not alone – the core staff at the restaurant, from chefs to servers to managers, has remained largely the same since Sampson took ownership. “I thank my lucky stars for that,” he said. “It’s been a blessing to have that.” Of course, the promise of another fact-finding mission packed with a tour of famed southwestern eateries is always a good way to boost retention. And if that doesn’t work, then a Bahamas cruise might. “This past year we took all of the employees on a cruise down to the Bahamas. We had a really good time with that,” said Sampson. It was a return to a tradition of annual company vacations the previous owners had begun until the size of the staff made it unfeasible. “It was always something I’ve wanted to bring back.” And it’s worth it in keeping a staff happy who have helped create one of the island’s most treasured restaurants. And now, thanks to a beautiful renovation, Santa Fe Café has given hungry islanders a place to stage their own vacation getaway in the sun. One where the margaritas are cold, the seating is plentiful and the food is as authentic as it gets.

It was twenty years ago when the Frosty Frog found its niche in the corner of Coligny Plaza and it has been churning out smiles, frosty frozen drinks, and delicious food ever since. You could say they have become one big frog family over the years with their staff and customers. In fact, you could say at the Frosty Frog it is ALL about family – honoring theirs and catering to yours. So Happy Birthday Frosty Frog! Thank you for sharing 20 years of fabulous food, frothy drinks, and fond memories. The Frosty Frog was started by Patrick Taylor and his wife, Angie. As the story goes, Pat hailed from frigid Erie, PA which has an annual snowfall of around 9 feet. With a warmer climate in mind, Pat frog leaped his way to Charlotte and while he did not bring the weather, he did bring frost in the form of his drinks and whipped up tasty frozen treats for the pleasure of all. After a few years of pleasing many a palate, Pat and Angie decided that they needed to make one more puddle jump to the south in search of water. Enter Hilton Head – a place where the climate craves refreshment and the beaches beckon families from far and near. Thus the Frosty Frog came to fruition lo these many moons ago and has conquered the test of time. If the frogs on the walls could talk, they would tell of many changes and expansions over the past twenty years. When they first started out, Frosty Frog was comprised of a small dining section with five tables and a bar with 9 frozen drinks. Pat spent countless hours a day in the kitchen and Angie worked the bar. “Back then the bartender, cook, and server were often the same person,” explained Shaun Brockway, general manager of the Frog and a member of the team since day one. Fast forward to present day when they have 100 employees running shifts during the summer. Through the acquisition of two adjacent properties, their seating capacity also exploded from 30 to over 300 and they now serve dozens of different flavors of frozen drinks. “At the beginning we had to be ‘late night’ to survive. It was dark and smoky and we were thought of as more like a bar. We always wanted to be a family place and now we have accomplished that,” Shaun added. They made their message clear about being kid-friendly when they built their attractive outdoor beach area complete with lounge chairs and soothing tunes. They also expanded their kitchen capacity with a steamer for crab legs and shrimp and a pizza oven. “People can come here and get it all. Mom wants a salad and dad wants crab and the kids want pizza. For that reason alone, families will come here three times a week. They ask their kids where they want to go and they say ‘Frosty Frog’. Our menu is one of the island most extensive – salads, wraps, seafood, burgers, pizza. You don’t need an excuse to go anywhere else. If the kids are happy, then mom and dad are happy,” said Shaun. Everything at Frosty Frog spells longevity. It’s a testament to their staying power that the employees have
stuck by them as well as their customer base of locals and visitors. Rusty Jaquiss, general manager for 12 years, works along-side Shaun to keep the ship sturdy and seas smooth. “Rusty and I are on the same page and Patrick trusts us for our integrity and judgement. This is all of our babies,” Shaun said. “The same people that I saw coming here 20 years are not only still coming today, but they are bringing their families. Parents trust us and we have now seen 3 generations.” Shaun attributes their longevity and success to many factors, but first and foremost to the customers. “We let them make the decisions,” he said. When the Frog decided to add pizza to the menu, they spent a year experimenting with the sauce, trying it out on the customers, and getting feedback. “We listen to our customers, we listen to Trip Advisor. We try and fix anything that is wrong. The only people that can hurt us is ourselves. Our success with repeat business is because of this philosophy. If you listen to the customer, you can be successful,” Shaun expressed. He also portrayed them as a restaurant, not a bar. “Most places like us are all about the drinks. We are a restaurant that serves daiquiris, not the other way around.” With their emphasis on family, they do not abide loud and obnoxious. They maintain an atmosphere that is safe, friendly, and respectful. The ambiance at Frosty Frog is all about bright and cheerful. Friendly colors infuse the interior. There are lots of nautical blues – from the bar accents to the booths – that give an aura of swimming and a feeling of comfort. The chairs and fans mix fanciful colors that match the frozen concoctions -- yellows, blues, pinks, fuchsias. The interior walls are adorned with family frog paintings while the exterior tables have been inlaid with hand painted Frosty Frog families. The horseshoe bar has plenty of seating in full view of the churning drink machines. When it comes to the menu at the Frosty Frog, which has largely stayed the same for 20 years, you can expect huge variety and large portions. Everything on the menu, with an eye once again toward the frog family, is named after a favorite meal of a family member or long-term employee like Carol’s Burger and Angie’s Tuna Melt. There is a wide range
of appetizers -- wings and different breads and dips -- to wet your appetite. The seafood portion of the menu includes tacos –Barbeque Shrimp, Fish, or Ahi Tuna - Calamari, Crab Legs and, of course, Frog Legs. The sandwich menu is extensive and contains a variety of fish, prime rib, chicken, and burgers. Wraps and salads round out the lighter side of the menu; there are 11 salad choices like Chicken Walnut and Smoked Turkey Bacon while wraps can be filled with anything on the menu. You can make your own pizza or choose specials like Jude’s Margherita or Nick’s Super Supreme. The tadpole menu is sure to please the pickiest of little ones with tried and true favorites like Chicken Fingers, Grilled Cheese, and PB&J’s. For those in a hurry to the beach, the entire menu is available to-go. As for the frosty side of things, the fruitful concoctions are swirled with 190 proof grain alcohol. The original 9 daiquiri flavors are still in play and have been joined by a menu with almost 30 divine mixtures including favorites like the hurricane and jungle juice. For a slide into the sweeter side of heaven, try the creamsicle, banana cream, or peppermint patty. Drinks come in three sizes and are served in insulated, recyclable to-go cups. You can also take the party goodness home with you in large sealed containers so the gift can keep on giving. If frozen drinks are not your style, the wine list is quite respectable and there are over 20 beers including many IPA’s. The Frosty Frog does not advertise as a sports bar and do not claim any team affiliations, but with 28 high definition TV’s situated both outdoors and in as well as 4 different sound zones, you can be sure to find good match ups on any given day as well drink and food specials. Charlie’s L’etoile Verte Revered by locals, celebrated by visitors, Charlie’s L’etoile Verte has carved out a name for itself based on its sumptuous array of continental-inspired cuisine and casually sophisticated atmosphere that’s pure Hilton Head. Hudson’s Seafood House on the Docks Before there was a Hilton Head, there was Hudson’s. The legendary Benny Hudson built his restaurant on a bed of oyster shells, the byproduct of his long-running seafood operation on that spot going back decades. At a time when the resort era of Hilton Head Island was just beginning, Hudson’s was among the first to hang out his shingle and hungry visitors responded in droves. Hudson’s has evolved step-by-step with Hilton Head Island. Hudson’s legacy became the Carmines family legacy when he sold the restaurant to Brian and Gloria in 1975. Today, their son Andrew captains the ship, continuing a devotion to serving the freshest local seafood in restaurant venerated by locals and visitors alike. Reilley’s Grill and Bar The first family of Hilton Head Island cuisine lives here. For 35 years, Reilley’s Grill and Bar has been serving up authentic pub fare in an atmosphere of old-world comfort. Here everyone’s a regular, from the locals who have made it their neighborhood watering hole to the tourists who put this one their must-visit list every time they visit. Bright new colors and a spicy new menu are brightening up Coligny Circle! Also bright on the culinary scene is Chef Samuel Houston, who is bringing a new flair to seafood and the entire dining experience at The Sandbar. Chef Samuel is a local boy. Although he was raised in Beaufort and attended TCL Beaufort for Culinary School, his menu and approach to creating dishes is influenced from places far and wide. Shortly after graduating, he spent a few years working in hotels and restaurants in Orlando, FL. He loved the life there, but knew in his heart that being home on the island was where he wanted to re-plant his roots. He feels fortunate to have spent some time in some of the best kitchens on this island. He worked at Hudson’s for many years and also spent 19 years at Steamer Seafood. He worked his way through many roles at Steamer Seafood and was the Chef there for 10 of those years. He knows the local fare backwards and forwards, and uses this a launchpad for a new take on local favorites. His culinary expertise really grew after his first visit to Jamaica, where his wife is from. He explained that the street food scene in Jamaica is incredible. After being captivated by this experience he felt inspired to bring that vibe and those flavors back here. He continued to make frequent visits to Jamaica and worked closely with a Jamaican chef who taught him how to incorporate new flavors in to dishes he already knew. He has taken that knowledge and poured it into the menu for us here on our island! You have the benefit of this influence when you visit The Sandbar. His favorite item on the menu is the Jerk Chicken. He knows that many of our local seafood places offer something similar, but his is unique. He prepares this dish with a special dry rub that sets this dish apart. When he’s not at The Sandbar, he enjoys spending time with this wife. He chuckled when asked what he likes to cook at home and said, “My wife loves to cook too and she kicks me out of the kitchen most of the time!” Being raised in Jamaica she also has a passion for Caribbean flavors and trying new things in the kitchen. Another passion of his outside of the kitchen is hitting Powerhouse Gym in Bluffton. Chef Samuel is proud that when you walk into The Sandbar you can expect something different. Farmer B The Edible Plant
WHISPERER

He is a grower by trade by nature by day by night. He grows healthy, organic, and edible. The soil is his medium; seeds are his tools of bounty. You could say he has the Midas touch when it comes to growing edibles but in reality, to him, it is second nature; it is simply in his DNA. Brent Wearren, better known as Farmer B, is a third generation grower who has never worked a day indoors in his life and who has set up shop outside of his son’s health food café and frozen yogurt shop, Delisheeyo, off of Palmetto Bay road. Talking to Brent is an education every inch and plant of the way. He is a one-man operation who at any given time has over thirty different herbs, fruits, or vegetables growing in his garden. He calls it his Garden of ‘Hope’: H-ealthy, O-rganic, P-lants, E-volving. His secret? The three P’s: Perseverance, Persistence, Patience. Born and raised in Kentucky, Brent’s father had a commercial landscape company and nursery. One of his grandfathers was a propagator and ornamental plantsman and the other an avid gardener. “I hung out with my grandparents a lot,” said Brent. “I was fascinated with growing and always knew it was what I would do.” He worked for his dad in the commercial landscape business as a boy, but was drawn toward the growing. “There is something soothing about the musty smell of a greenhouse, the warmth from a wood stove, and a bunch of old guys sitting around telling stories and taking cuttings,” he mused. Brent went to Michigan State to study Horticulture and learned from the professor who wrote THE textbook. Among the many students, there were only 3 actual ‘growers’ in his class. “It’s a shame. We’re a dying breed. It’s why I teach workshops now. If I can influence just one kid, then it’s worth it,” he expressed. After college, he became partners with his dad in the wholesale deciduous and flowering tree nursery. They harvested from 1,100 acres that yielded 40,000 trees every year and shipped them out all over the country. The business made it through 2 recessions, but in 2012 the economy got the better of them and they decided to liquidate and pay all debts. When one door closes, another opens and Brent and his wife started over on Hilton Head where they had vacationed. He wrote up a resume, stopped by one garden center, was hired, and spent the next year acclimating himself to the people, the climate, and plant kingdom. Bored and with the itch to get his elbows dirty, Brent took over the landscaping outside of Delisheeyo which he transformed into a wonderland of healthy foods. The notoriety of his garden took flight and now Brent leads workshops and contracts with individuals and restaurants so they can share the earth’s bounty with their families and diners. 30

Brent explained that people label organic gardening as difficult and shy away but he claims it is the natural way – “When man intervened, that’s when the problems started. I start my homeowners off with a small garden and emphasize education.” For aesthetics and to maximize yield, Brent designs a lot of container or raised bed gardening. “It depends where people live and what the plantation allows.” Brent built his own miniature greenhouse using PVC pipes and can propagate over 100 4” pots of seedlings at once which he uses to start off homeowners. Success starts with the soil. Brent uses a base of organic soil from a local supplier and then amends it with a variation depending on the plant – Bat Guano, Organic Fertilizer, Humic Acid, Epsom salt, sea kelp, etc. – whatever the plant requires. His seeds are all organic and his pots are even sterilized organically. “Each plant requires different nutritional levels and care.” Brent’s garden outside of Delisheeyo changes with the season. He grows what his son Blake asks him to as everything can be found on the menu whether in salads, soups, wraps, or smoothies, and you know it just came out of the ground. Along with vegetable and fruit staples like tomatoes, cucumbers, jalapenos and kale, he likes growing unusual varietals like Guava, Papaya, and Goji Berries. Strolling through the well-kept garden is amazing: rosemary, lemongrass, blueberries, blackberries, raspberries, kumquats, aloe, bok choy, Swiss chard, romaine, Sugar snap peas, Muscadine grapes, to name a few. You would have no idea at a glance, but he has fruit bearing trees galore: fig, pomegranate, key lime, Meyer Lemon, and Loquat. Brent believes in companion planting to maximize space and health of plant. For example, insects are repelled if you plant onions around tomatoes and radishes grow well with cucumbers. Inspired by a young friend named Damian, he has started a carrot club for kids. Kids can pull up one of the cosmic purple carrots, wash it off and eat it. “If they pick it, they have to try it,” says Brent with a smile. Brent points out his herb boxes which two months ago were cilantro and basil that are now beets. His tomato plants are 6 feet tall and his cherry tomatoes hang in baskets that have produced fruit for 8 months! Brent uses coconut husk baskets for the cherry tomatoes, lines the bottom with coffee filters for water retention, and constantly adds food like kelp. They need to be watered every day. “If you were out in 100 degree heat all day, you would need constant watering too,” he explained. Innovation is another key to Brent’s success. He makes his trellises out of home-grown bamboo so everything looks aesthetically natural. When it comes to a trellis for his cucumbers, however, he hangs some sisal rope down from branches of a tree which he anchors in the ground and the cucumbers grow up the rope and intertwine amongst the tree branches. Brent’s final words of advice to his customers are invaluable. “Be proactive – treat and protect. Constantly observe. Soil preparation is the biggest part of your success. Twenty four hours is a long time to be a way from your garden. Hilton Head’s WINGFEST in March A Blend of Tastes and Sights and Sounds BY RISA WILLIAMS MCMILLAN
Hilton Head has become a pro at welcoming the spring with great events and one of our Island‘s biggest celebrations is Wingfest. What better harbinger to usher in warm weather and bring together family and friends than a feast on the myriad flavors of fanfavorite chicken wings. In its 24th year, the 2018 Wingfest, produced by the Island Recreation Center and sponsored by Hargray, will feature the favorite wing recipes of local chefs and armchair wing masters complimented by great music and entertainment. As in years past, Wingfest will be the last weekend of March, Friday and Saturday the 24th and 25th. “This is our biggest and longest running festival. It is our kick-off-to-spring event and gets people out of their houses. It is held 3 days after spring starts,” said Joe Cain, event organizer from the Island Rec Center. “This one has historical roots,” he added. While Joe is from Rochester, NY and I from Buffalo, we both have early ties to chicken wings. They “were born” in Buffalo in 1964 when the owner of the Anchor Bar on Main street was fixing a late night snack for her son and his friends and threw some of the leftover wings together with hot sauce. Thus a star was born that has become a bar and sports-game staple. While the venue of the festival has changed over the years, the attraction to this family-friendly event has not. With 15 to 20 wing-wielding vendors whipping up their own recipes, the choice of heat and flavor is up to the consumer. Wing tickets are in $1 increments so festival-goers can mix and match. Vendors range from restaurants to local companies to caterers and awards will be given in both Judge’s and People’s Choice categories. Last year’s Judge’s Award winner was GW’s Southern Catering and Smoked BBQ and People’s Choice went to Coconutz. Joe explained that they added a second day of Wingfest on Friday night five years ago because not everyone could make it on Saturday. Plans were under way at press time for this year’s Friday event to feature some spicy wing and beer pairings by Orchid at One Hot Mama’s. Friday has turned into what could be termed as Hilton Head’s own giant tailgate party replete with live music, boisterous basketball fans, and a mind-bending laser light show to cap off the evening. There will be plenty of entertainment on hand Saturday as the speakers will be turned up for Deas Guyz who will be the featured band. Mindful of the fact that March Madness is in full 32

gear, the Rec Center sets up a TV tent so no basketball fan is left behind. Aside from the wing judging, Saturday’s event will also feature a wing eating competition. There will be plenty to do for the kids; past recreational activities have included bouncy houses, rock wall, bungee jumping, mechanical bull riding, and hula hoops. In the words of Joe Cain, “Who doesn’t like wings?” Proceeds from Wingfest go to support the Rec Center’s “No child is denied recreation” policy so that scholarships can be awarded for camps, after-school, summer and sports programs. With the weather welcoming everyone out of winter hibernation, now is the time to gather friends and start enjoying the sunshine again. Whether it be a fun brunch with the girls, or meeting a few families at the park to get a workout in, now is the time to think about reaching out and gathering together. I have found that the friends who I invite in to my kitchen to cook with me and share a meal end up being the closest and longest lasting friendships. If you are hosting a brunch, here’s an easy way to get your veggies (all that spinach!) and your protein all in the same meal. What makes this quicke special is that it is crustless so you avoid the extraneous carbs without sacrificing flavor or satiety. Crustless Quiche 1 tbsp olive oil 1 chopped onion 1 (10 ounces) pkg of frozen chopped spinach, thawed or drained 5 eggs, beaten smooth 1 cup muenster cheese 1 pinch of salt Pre-heat oven to 350 and lightly spray a 9 inch pie pan with cooking spray. Heat oil in a large skillet over medium-high heat. Add onions and cook, stirring occasionally, until onions are soft. Stir in spinach and continue cooking until excess moisture has evaporated. In a large bowl, combine eggs, cheese, salt and pepper. Add spinach mixture and stir to blend. Scoop into prepared pie pan. Bake in preheated oven until eggs have set, about 30 minutes. Let cool for 10 minutes before serving.

Burpees- depending on your comfort level, you can either drop in to a plank position or with your chest all the way to the floor. Then pop up and jump with your hands over your head. With a family workout you can always ask the kids what movements they do in PE at school or during skill training at one of their sports. This will always end up in both laughter and learning something new!
Maybe the warm weather is calling you to get more active. Inviting some friends and other families to meet at a park or even just in your yard for a workout can be a great way to get moving and build stronger bodies and stronger friendships. Here’s a fun workout that the entire family can do together. I’m always amazed how good little ones are at burpees! You can partner up, or each person can complete their own reps.

EAT IT LIKE IT Jesse Blanco
talks about the “one big neighborhood” of our area’s food scene, and how an idea for a cooking show reinvented his career. BY BARRY KAUFMAN
Jesse Blanco did not start out to be the greater Savannah area’s answer to Anthony Bourdain. The affable host of WSAV’s “Eat It and Like It” program began his career behind the news desk, serving as anchor at stations in El Paso, Texas and Savannah. Seven years ago, his left turn from news anchor to roving culinary expert got its start as all great things do, over cocktails. “It was the 2010 Beach Bum Parade, and a friend of mine suggested that I do a cooking show,” he said. It was not as outlandish a suggestion as you’d think, despite being posed in the middle of the Beach Bum Parade’s famed water gun fight. Those who knew Blanco were well aware that he has long been a whiz in the kitchen, fearless about dabbling in different ingredients and culinary traditions. That, coupled with his obvious comfort in front of a camera, made a cooking show a natural fit. “That suggestion led to a late-night discussion over cocktails about what a cooking 40

show would look like,” he said. That discussion led to a few clips shown most to friends in the summer of 2010, then to a full-fledged TV show. “The show was an instant hit,” he said. “Within two weeks I had people at the grocery store saying, ‘I love your show.’ For a brand new entity, it was ridiculous.” It helped, too, that Blanco’s new venture was launching just prior to a big wave of new restaurants elevating Savannah’s food scene. “When we started you had The Olde Pink House, Vic’s on the River, and all those places I refer to as the Mount Rushmore of restaurants that have been around for a long time serving up great food,” he said. But just a few years into his show’s run The Grey and Collins Quarter would both open, ushering in the next generation of restaurants. This rising tide was lifting Blanco’s show as well. Within a year, “Eat It and Like It” would be nominated for an Emmy, get its first celebrity guest in the form of Paula Deen and make the jump to print with a regular column in the Savannah Morning News. He would eventually leave behind a news career he’d pursued for decades, spurred on by the success of his new show, blog and stature as the area’s go-to for the latest restaurant happenings. “People were paying attention because it was different and it was well-made,” he said. “So I ran with it.” Soon Blanco was looking beyond the realm of Savannah, to the next area code over where Hilton Head Island’s restaurant scene was ripe for the filming. “I’ve always known that before it started picking up in Savannah, the food scene on Hilton Head Island was better than it is here,” he said. “When I moved the show to WSAV, I knew the station had a huge following in the Lowcountry. We made a conscious effort to get over there.” Fighting off what he jokingly refers to as “bridge-phobia,” Blanco now finds his way to our area a few times a month, immersing himself in the always-evolving Hilton Head Island and Bluffton food scene. Blanco says he tends to gravitate toward people who are trying out new things, and he praised area chefs like Clayton Rollison at Lucky Rooster and Michael Cirafesi at Ombra for pushing the envelope. He called Old Fort Pub “as classic as it gets,” and says he’s trying to find a creative way to get Sunset Grille onto his show so he can feature those magnificent views. The trick is, as he’s quick to point out, Eat It and Like It is not a restaurant review show. “A lot of people think we’re a restaurant review show and we’re definitely not. I try to tell stories about people,” he said. “We wanted a wanderlust feel to it.” There is a definite Anthony Bourdain inspiration behind Blanco’s frequent road trips, as Eat It and Like It has made stops in Nashville, Tampa, Charleston and St. Augustine. “One time we went to Atlanta and went to nine restaurants in three days,” he said. And after leaving the news desk behind to pursue that next great culinary story, wherever it may be, Blanco’s journey is just beginning. “I treat it all as one big neighborhood. THE SOOTHING SOUNDS OF

SondorBlue, with their harmonicallyrich and hypnotic originals, is only two years young and yet is making a splash in Charleston, the Lowcountry, and up and down the east coast from NYC to the Florida Keys. The band is made up of the musical talents of four 20-somethingyear-olds who transcend time with their oneness and their appeal to audiences of all ages. They present a maturity of symmetry and consonance rarely seen in a group their age. During their soulful songs, you will find them soft and soothing and when they speed up the tempo, the result is brassy and bold. Members of SondorBlue include

Andrew Halley, lead vocals and bass guitar, John Sheehan, vocals, keyboard and acoustic guitar, Connor Hollifield, vocals and electric guitar, and Drew Lewis on drums. Their story is one of divergent paths, yet similar ones. All of the boys graduated from one of 3 different Hilton Head high schools and all ended up in Charleston. It was one day in high school that John heard Connor and Andrew’s band, Local Visitors, that he approached the duo and asked if he could jam with them. The stars aligned, John joined the band, and a promising trio emerged. When Drew teamed up with them in Charleston a few years later, they knew
the final component was in place and it was time to put cover songs in the past and redefine with their own identity -- thus the birth of SondorBlue. “Sondor is a realization that each passerby is living a vivid life just like us
and that they can become part of our music,” explained Connor. “The idea behind our name is to write universal songs so even if you grew up completely different than us, you will still be able to relate to our music.” They wrote their
first song, “More than Reality”, in the Sheehan’s living room on Hilton Head with mom Shannon cooking in the background. “That song proved to us and others that we could create original music. It jumped us forward to our first EP,” said John. Their second EP, “You will Find Love on Ashley Avenue”, took their music to yet another level as the set has a live flare to it. What strikes me most about this band is how they complement each other so seamlessly. They are not a group of musicians that jam together; they are a cohesive unit that works in sync – a characteristic that some bands never achieve in a lifetime. “We have a collective energy,” said John. “We really lucked out with our personalities and musical tastes being similar. I realize now how being in a band is related to the experience of playing sports. It’s about how to be a good teammate. We help each other.” Connor added: “We gel well together because we all specialize in different emotions.” John is ‘compassionate’, Andrew is ‘driven’, Drew is ‘solid’, and
Connor is ’levity’ and ‘makes you feel included’. Future plans include their first album which they started working on this past winter. Their original songs, like their sound, are a collaboration. “We are all individual song writers but it is not a song until everyone has had their hands in it,” said Connor. When you listen to them, it is easy to see how the Beatles have influenced them as they are all big fans. But really, they do not define themselves by one music genre or one decade of musical culture. This spring, look for SondorBlue to hit the stage at Poseidon on Hilton Head and at the Roasting Room in Bluffton. Chow Daddy’s The concept was envisioned on Hilton Head Island, but it seems right at home in Bluffton. BY BARRY KAUFMAN • PHOTOS BY ROB KAUFMAN
It’s hard to miss the sign for Bluffton’s Chow Daddy’s. Perched right by 278 at Belfair Center, it’s a vibrant orange star-spangled statement piece that promises a kind of free-wheeling fun and carefully crafted cuisine that feels like pure Bluffton. Yield to the promise of that sign, and you’ll find yourself inside a masterpiece of reclaimed couture with a homestyle menu to match, bursting with an array of sliders, tacos and entrees – sweets, savories and everything in between. While each dish might originate in the contemporary casual, a glance at the ingredients, toppings and fixings reveals an inspired culinary pedigree that pushes each bite from familiar to fabulous. It’s that refined approach to comfort food, not to mention the spectacularly upcycled décor, that have made Chow Daddy’s right at home in Bluffton. The concept wasn’t born here, but it sure seems like it could have been. “We like Bluffton, and it’s been good to us with Truffle’s,” said Price Beall, owner of both Chow Daddy’s and Truffle’s along with wife Karen. “It’s a good market and it’s such a diverse group of people out there.” The restaurant resonated so well with Bluffton, it reinvigorated a space that Beall admits had somewhat of a curse to it. Or, at least, the perception of a curse, owing to several high-profile restaurants opening and closing in the same spot over a matter of a decade or so. “I knew the baggage of it being a ‘cursed location,’ but as I started looking around, that location hasn’t had that many more restaurants than many other places in Bluffton, to be honest,” said Beall. “I never paid that much attention to that – I figure if you do something good, people will pay attention.” They did just that, and people paid attention. And if you want to know what that something good is, pick anything off the menu. Unpretentious but far from ordinary, the food at Chow Daddy’s is like a greatest hits list of your favorite comfort foods and pub favorites, delightfully re-imagined with fresh, wholesome ingredients. That’s probably because that’s more or less what it is. “When we did the menu, we started out with me, my brother and partner Sandy, his wife Suzanna and Karen all writing down foods that we like to eat and how we like them prepared. Then we started looking for recipes,” he said. Sister restaurant Truffle’s provided the perfect test kitchen to prepare the first draft of Chow Daddy’s menu, which was then refined over and over until it was perfect. “If we liked it, it stayed. If we didn’t like it, we sought another item and went through the whole process again.” 106 TASTEOFHILTONHEAD.COM
Somewhere around 15-16 revisions later, Chow Daddy’s exquisite menu was born. And then it was refined further (early diners may recall the restaurant’s flirtation with Big Green Egg cooking, which Beall said was fun, but less than useful at producing consistent results). “Ultimately, no matter what we did with the menu, we tried to do everything with wholesome and pure ingredients. We get organic when we’re able, and most of it is regional to South Carolina and Georgia… A lot of love goes into the food here.” An equal amount of love went into the marvelous décor, an inspired upcycled motif that evokes the famed curiosity shops of Calhoun Street even as it replicates a similar scheme first conceived on the island. The décor is Karen’s department, cultivated from an array of different sources – the lobster baskets from ABC Kitchen in New York, the larger tables plucked from a shop in Charleston. “With Hilton Head, we sort of just looked at what we had in storage. Here, we wanted to replicate that, but have it so everything was repurposed,” said Price. “We wanted a rustic but fun environment. Although we played a lot more with the lighting out there.” That includes the custom-designed chandeliers, built by carpenters and electricians on-site. The result, of both food and décor, is a restaurant that feels like heading to a dear friend’s house for dinner. A dear friend who happens to be a whiz in the kitchen. “We wanted this to be a little less scripted and more casual – the whole other end of the spectrum from Truffle’s,” said Beall. “But the number one priority at both concepts is to make guests happy.” Keeping that vision in step is operating partner Fernando Lossada, who oversees both Truffle’s Cafe and Chow Daddy’s. He’s the lynchpin to a team that has made both restaurant concepts, and their respective on-and-off-island locations, so successful. “We can sit around and dream the stuff up, but our team… they’re the people who go out there and execute it,” said Beall.

Bluffton, as a town, as a state of mind, is meant to be savored. It’s not meant to be rushed through like your typical brownbag lunch. It’s meant to be experienced slowly, enjoying each and every square foot of picturesque scenery. The sounds of live music drifting from its bars and the scene of fresh Confederate Jasmine blooming along Calhoun Street are not meant to be closed off behind a car window. These sensations are meant to drift through the open air, enticing you to move forward and experience it all. In short, Bluffton South Carolina was meant to be enjoyed by golf cart. It should come as no surprise to anyone who’s spent any time in old town. After all, this is a place where golf cart traffic can outnumber vehicle traffic two-to-one in some spots. Whether by a simple course-style two-seater or a tricked-out lifted stretch job, you’ll find these carts everywhere in Bluffton that’s accessible by a 35 mph-or-lower road. But one catch to traversing Bluffton in the open air? The enticing aromas of our famed food scene will be all around you, prompting several stops as your mouth begins to water. So what’s the best route to enjoy a sampler platter of Bluffton’s best? Read on, and enjoy the Old Town Bluffton Golf Cart F&B Circuit. The Inner Loop If you’re starting your lap through Bluffton early in the day, you’re going to want to start with some coffee. Head to Corner Perk and grab a roadie of their famed house-roasted coffee. You’re going to need that boost of energy for the culinary tour de Bluffton that awaits. From there, cross over May River Road (keeping an eye on traffic) and grab a scone at The Cottage. It may be tempting to grab a seat in their quaint garden out front, but we have place to be and things to eat. Continue down Calhoun, coffee and scone in hand, until you run out of land. Grab a grassy spot on the beautiful hill next to Church of The Cross and spend a moment soaking up the scenery. Around now, it’s going to be getting close to lunch time. Pop back up Calhoun to Old Town Dispensary, where the wide courtyard and expertly crafted burgers create al fresco lunchtime nirvana. You’ll definitely want to plan a return trip to check out the late-night crowd that gathers here for live music and a livelier atmosphere. For now, taste buds fully satisfied, it’s time to venture forth and see more of Bluffton’s beauty by golf cart. Head back down Lawrence toward Boundary, then make your way up and over the four-way stop. Just ahead on your right is Fat Patties, where you can wile away the afternoon with a cold IPA in hand and the prime peoplewatching in the biergarten. It’s not uncommon for an afternoon out here to slip quicker than expected into evening, at which point you may hear that dinner bell ringing. There are no shortage of tantalizing dinner options in Old Town, so we’ll give you a few options here. You can take a cart on every road in Old Town, so head on back down to the four-way stop, then take a right to keep moving on May River Road.
And here the inner loop of our food tour splits. If you want to head back down Calhoun Street, we suggest ending your evening at The Pearl, where fine dining is done right in a cozy atmosphere that stays true to Bluffton’s roots while indulging in a little sophistication. A huge wine list, an inspired gourmet menu and a front porch made for people watching makes this an excellent capper to your night. If, however, you want to keep going down May River Road, you’ll soon find yourself at one of Bluffton’s legendary dinner spots, May River Grill. Charlie Sternburgh’s culinary creations have kept this spot on the top of everyone’s list since Bluffton was little more than a speed trap on the way to Hilton Head. As our town’s restaurant reputation grew, he led the way. Stop by for dinner and you’ll find out why. The Outer Loop If you’re looking to see a little bit more scenery on your golf cart, our extended loop gives you a bit longer trip with a few more places to visit. Start out at Alljoy Doughnuts on Heyward Street. This tiny little doughnut shop has made a huge impact on Bluffton, with an ever-changing selection of bear claws, crullers and doughnuts in every color of the rainbow. Don’t be intimidated by the line – it moves quickly. From there, head away from May River Road and enjoy the peace and quiet of Bridge Street as you make your way east. Stop by Oyster Factory Park if you’d like, but don’t dawdle. There’s lunch at stake. Make your way back up to May River Road where the recent spate of streetscaping projects ensures you’ll find a spot to park your cart. Which works out great because lunch is going to be right on the sidewalk, at the café-style terrace at FARM. When they began offering lunch hours, Bluffton rejoiced. At last, we wouldn’t need to wait all day to sample some of the locally sourced and seasonally available brilliance on offer here. After lunch, let’s put a few miles on your cart, shall we? Follow 46 all the way down to the four-way stop, then continue on to Bridge Street. We’re going to follow this all the way down to Alljoy, soaking in the Bluffton scenery as we go. There’s room on the bridge over Heyward Cove to pull over and enjoy the view – do it. The residents of the Alljoy landing area worked hard to have the speed limit reduced here so they could legally drive their golf carts to Old Town. Thanks to them, we can do the trip in reverse, touring Bluffton’s old fishing village past to the beautiful strip of sand at Brighton Beach. Spend a few moments basking in the scenery, then let’s get back on the road. It’s nearly dinner time. Fortunately, you’re on the right side of town. Make your way back the way you came, only this time take a right up Pritchard street just past Town Hall. This quiet road will let you out at Red Fish, and just in time. You’ve been touring the most beautiful town in the world the way it was meant to be seen – low and slow, and that sort of thing works up an appetite. Cap your day off right, with some inspired seafood and an extensive wine list. Then it’s time to head back – just remember, state law prohibits operating a golf cart after dark. Even in Bluffton.
