PUBLISHER’S NOTE I was sitting in my kitchen -- a chilly but sunny day in December of 2005 -- about to make my first phone call to a prospective advertiser. I picked up the phone and put it back down. Pick up, put down. I thought, “What in the world have I gotten myself into?” If these calls fall on deaf ears, I am literally out of business before I even get started. Talk about a come to Jesus moment! Here I was clinging to an idea and an 8-page mock-up of the magazine. It was literally one of those out of body experiences. I sat for a moment and contemplated how I got here. I was in the advertising business for most of my adult life, so whenever I traveled to other cities, I always looked to see what types of local magazines were available. For the most part, I would leave those destinations thinking that they were lacking any publications of real substance. Of course, there were some great magazines along the way, but they were few and far between. I had plenty of time to think while driving and pictured the abundance of amazing restaurants on the Island, not to mention all the food and beverageoriented festivals and events throughout the year. Hilton Head seemed ready for a magazine that focused solely on that industry. I envisioned in-depth and informative stories, sharp and enticing photography and top quality paper stock – a product that would tell the stories of our restaurants – a product that our owners would want to be a part of and that I would be proud to produce. So there I sat, phone in hand and that sunshine coming through the kitchen window gave me courage and hope. Fortunately for me, some of the Island’s restaurant icons took the time to listen to my plan for Taste and solidified the beginning of the magazine with their commitment to participate. Since then I have spent years building relationships with local restaurant owners and had the pleasure to share their tastes and sounds and hospitality with Islanders and visitors. Without the confidence from so many of the longest tenured restaurants, I’m quite sure Taste would have never materialized, and I would be in a totally different profession today. With this issue, Taste of Hilton Head is celebrating its 15th year. It seems like yesterday that I was about to make that first phone call. We’ve worked hard, but also had a lot of fun over the years. Hilton Head is an amazing and very giving place and I am so lucky to live and work here. Thanks to my staff, most of who have been with me since the very beginning, my loyal advertisers and of course you the reader. I hope we have given you knowledge about events and entertainment and most of all given you the inspiration and impetus to go out and enjoy some of our Island’s best food and drink. Whether the sun is shining or the clouds are gray, you can pull up your own piece of happy at Carolina Coffee & Crumbs, serving up aromatic beans and a whole lot more on Hilton Head’s south end. Carolina Coffee is the newest addition to Coligny Plaza, located right in the corner of the plaza on the cusp of the traffic circle – perfect for a quick brew and bite on the way to the beach or an enjoyable time to sit back, relax, and watch the bikers go by. Carolina Coffee & Crumbs opened last June and owner Erika Waronsky spared no expense in her efforts to transform the Island’s favorite south end coffee spot into a bright and beautifully decorated haven for locals and visitors. In addition to her new CC&C venture, Erika is the owner of its next door neighbor The Sandbar Beach Eats -- which she also masterfully renovated -- so it is no surprise when you walk into the coffee shop and realize that what used to be dark is now light, what was once somber is now cheery. Erika has tied together the exterior landscaping together between the two spots, making an attractive ‘corner of Coligny’ niche. “It is so nice to have the whole building and I can split the staff when I need to. I didn’t want this to look just like Sandbar though. It needed to be more polished,” said Erika. “I wasn’t exactly looking into going into the coffee business, but the space came available and coffee was the only thing not in Coligny. Everyone needs a coffee,” she added. While they already have built a solid local following, Erika realizes that given their location, they are a tourist-driven coffee spot. “It


takes a little time for people to realize it, but we are here and we are different. If we can do it right the first morning, they will come back every morning,” she expressed. “We want you to walk in at 7am and be greeted by a smiling face. Wear your flip flops and be comfortable.” In its infancy, CC&C has already been given the distinction of “Favorite Coffee Shop” by Hilton Head Monthly. Like Sandbar, Carolina Coffee was a team effort. “My family really pulled this all together,” Erika expressed. It took them six months to do the massive renovations which included adding a real kitchen and opening up space and windows. Erika’s husband fixes everything and was chief painter and stainer of the rustic shiplap, her mom and mother-in-law have been good shoppers and play dates for her two girls, and her dad is still there three times a week helping out with anything and everything. “The whole place needed to be polished and updated,” commented Erika. “We have tried to create the most comfortable atmosphere possible. We have lots of charging stations and got the best Wi-Fi we could find.” The patio area, spacious and populated with tons of flowers and plants, is reminiscent of a French Café where people can sit right on the edge of activity and take in the surroundings. Each table is adorned with fresh cut flowers supplied by Mum’s the Word. “We want to partner with other independent businesses. We can help them and they can help us. Catering has already become a good part of our business.” For Erika, “Coffee is a whole new thing.” But she is obviously learning fast as there are so many different options on the menu you could spend days exploring the tastes and roasts. Erika has teamed up with Ian Duncan from The Grind in Bluffton who creates her medium and dark brews and she also gets beans from King Bean in Charleston. The hot brews, the aromas of which pleasantly greet customers upon arrival, cover the gamut of coffee “fixes” and include a large compliment of Espressos, Cappuccinos, Lattes, and there is always an ever-popular Coffee of the day, like Southern Pecan. The

specialty coffee drinks will knock your flip-flops off, the most popular of which is the Aloha Latte made with Coconut, Vanilla, and Mocha. For those interested in a refreshing brew, there are lots of delicious choices. They have their very own CC&C Frappe to which you can add a shot of flavor and their smoothies include Mixed Berry, Peaches N Cream, and Strawberry Banana. They offer a Cold Brew on tap, not to be confused with Iced Coffee. The Cold Brew, brewed over a long period of time, is paired with a nitro infusion so it gets thick and resembles a Guinness Beer as it comes out of the tap -- it flows and shimmers with bubbles rushing through the cup. A shot of flavor like Almond, Caramel, Hazelnut, Coconut, or Vanilla Bean can sweeten up the brew in an instant. For those in the mood for something a bit stronger (and I’m not talking about the coffee brew), Carolina Coffee has quite a replete bar. They have bubbly mimosas and bloodies for those who need a kick start to their day, as well as a choice of beers and wines. The coffee cocktails --like the Irish Coffee with Jameson’s and Bailey’s, and the Beach Blanket with Coconut, espresso, Kahlua, and cream -- will warm your belly all day. CC&C has teamed up with CBD Social in Charleston and they would be happy to add some vanilla flavored CBD to your cup. There are breakfast, lunch, and snacky menus at Carolina Coffee that will satisfy everyone from the sweet tooth to the vegetarian. Like the brews, all the food is available from sunrise to closing and

they make it easy to take it on the run for those with a pressing appointment with a beach chair. “It’s hard to get people to realize that we are not just coffee. We serve the same menu all day,” said Erika. The breakfast menu features assorted bagels, muffins, and yummy pastries like turnovers, fritters, scones, and sticky buns, that come from Baker’s Pride in Savannah -- serving up ‘deliciousness’ for 60 years. The chef at Carolina Coffee has a Latino background and Erika boasts of her breakfast burritos, chimichangas, and homemade sauces and soups. The avocado toast is a big hit in the morning as is the panini with bacon, sausage, cheese, eggs and hollandaise. The lunch menu has paninis like Grilled Chicken and Italian as well as flatbreads like Chicken and Pesto or Tomato, Mozzarella, and Basil. Children are not only welcome at Carolina Coffee, they have their own little corner full of books and toys along with comfy little people chairs and their own television. There is a Kid’s Menu and of course Hot Chocolate. Oh yes – and if you have a dog, they will be unhappy if you do not bring him to enjoy the sights on the patio. NUNZIO RESTAURANT + BAR introduces Hilton Head Island to a new vision of Italian cooking. BY BARRY KAUFMAN

Unless we grew up with a nonna who would prepare fresh Italian feasts using old country recipes that existed only in her head, most of us have a somewhat skewed vision of what Italian cuisine is. We think of overly rich sauces, proteins crusted with garlic parmesan and a vague sense once the meal is over that we may never stand fully upright again. This is not the Italian cuisine that Nunzio Patruno grew up with. Born and raised in the town of Castellana Grotte, in the heart of the Puglia region and steps away from the Adriatic, his 16

was a youth spent among the fields of his family farm, where everything from olives to almonds were grown to take their rightful place among delectable dishes based in simplicity. It’s a dedication to fresh ingredients and subtle pairings that carried him through culinary school and a celebrated career as a restaurateur. At Nunzio Restaurant + Bar, it finds its ultimate expression. “It’s easy to cover things up these days. Cover it with this, crust it with that, a splash of this, and then it’s good luck with


the Tums and the Zantac,” he said, a laugh punctuating his thick old-world accent. If you want to sample the simplicity that has built Nunzio’s a stellar reputation in just a few short months, you need look no further than the signature vitello piccata, which sees perfectly prepared veal medallions dressed with just enough garlic, lemon, capers and demi-glace to draw out the succulence from the meat. And if you think that’s tempting, wait until you see what he has planned for the spring. Fresh, simple and local are the three pillars upon which the restaurant stands, and our local waters produce some of their tastiest offerings as the weather warms up. With soft shell crab and sheepshead coming into season, Patruno plans on focusing his culinary genius onto some Lowcountry favorites. “I can do (sheepshead) with fresh herbs, lemon, capers and extra virgin olive oil or I can do it with cherry tomatoes, black olives, fresh thyme and a splash of white wine,” he said, freestyling on the possibilities the season will bring. “I’m going to keep things a little bit fresh, you know? I’m just going to keep the integrity of the fish.” Preserving that integrity is the key to any dish at Nunzio’s, and it’s a philosophical underpinning that drove the success of his previous ventures. His early career saw him working the kitchens of the Italian Riviera and Monaco, but his first American claim to fame came during a 25-year run with the Monte Carlo Living Room & Club in Philadelphia, the sort of posh restaurant where people dined to be seen, the valets wore white gloves and the maître d ended the night with a wad of $100 bills. It was exactly the sort of posh atmosphere Nunzio wanted to avoid when he opened his new restaurant on Hilton Head Island. That’s not to say there isn’t a certain sophistication, but the dog-friendly porch to one side of the entry foyer should be your first hint that this is a decidedly more relaxed environment. “Here I’m trying to serve cuisine in a nice environment but with a casual mood,” he said. “I want everyone to have a good time and enjoy the food.” The space itself is gorgeous – the former home of, among other things, a bank, an art gallery and a CrossFit gym, the sprawl at Nunzio’s allows for a few different dining experiences. The great hall with its cathedral ceilings gives way to a spacious private dining area where towering prints of scenic Puglia (shot by Patruno’s cousin, Pasquale) evoke Italy. Across the grand foyer, the bar itself towers like a restaurant into itself, with plentiful seating that gives way to a grand screened-in lanai. There’s even al fresco seating both on the front porch and in a rear patio encircling a live oak tree. In essence, you can eat there every night of the week and feel like you’re in a different restaurant. All this space also allows for a cavernous walk-in wine cooler, where a hand-picked selection awaits. Contrary to what you might think, the lion’s share of the varietals on hand don’t come from Italy. Glance among the bottles and you’ll find everywhere

from Spain and France to Argentina well represented. “I don’t want a list completely tied to Italy,” said Patruno. “I wanted to have a multi-ethnic mix. I just wanted to be a little bit different from everyone else. The palate and the customer is king.” Being a little bit different from everyone else seems to have struck a chord. On an island where competition for restaurant buzz is fierce, Nunzio’s has been riding a wave of good will ever since it opened. “So far so good. We are getting good reviews and are also being well accepted by the majority of the community,” he

said. “Definitely I was very satisfied with the buzz in Hilton Head. I like to hear positive things, you know?” It’s not the Italian you might know, but as more islanders are finding out, it’s definitely an Italian worth getting to know better. The Science of Soft Shell Go inside the tanks to find out how Hudson’s changed the soft-shell crab game. BY BARRY KAUFMAN

THE PROCESS Serving up soft-shell crab is equal part art and science, depending in huge part on a knowledge of our area waters. Timing is everything, and knowing when to pick ‘em and when to serve ‘em has become Hudsons’ stock in trade. It begins with specialized crab traps set at the beginning of the season. Crabbers will bait a trap with a male crab (called a Jimmy crab) who will send out special pheromones to attract female crabs who are ready to mate. “Crabs only molt for two reasons,” said Andrew Carmines. “Either they’re growing or they’re getting ready to mate.” Once the female crabs are in the trap, crabbers will wait until they spot subtle markings on the apron and back fins, which start out as pale yellow before darkening to a deep red. The marked crabs are the ones that are ready to be sent to the restaurant. “We put them in the flow-through system, and every day we pick up every crab and feel underneath the shell,” said Carmines. What we are feeling for is a hairline fracture, the first sign that the crab is ready to molt. It’s at this point that the most time-intensive part of the process begins. “Once they go into the crack float, we watch that very intently because we know those crabs are going to shed,” said Carmines. The crabs are put on a 24-hour-a-day watch, with members of the team rotating out in shifts. If they spot a crab backing out of its shell, they know they have just minutes to get it out of the water to collect it at peak quality. “It can happen in three minutes. It really depends on the crab.” 22

For most of the year, the packing house at Hudson’s Seafood House on the Docks sits more or less vacant. A nondescript wooden shed just beside the outdoor over-the-water bar, it generally only sees use as a venue for private events during the summer or as a shelter from the wind during the bluster of early winter. But for a few weeks in spring, this small room becomes the hub of a frenzy of activity. It’s here that Carmines and his staff build a series of tanks, hook them up to a specialized water circulation system, and begin their 24-hour vigil all for one purpose: delivering the most delicious soft-shell crabs known to man. “People who have them here are hooked. We have people come twice a day during the season,” he said of the delectable crustaceans that have become his seasonal signature. “It’s like eating a shrimp right off the boat or grilling a fish you caught. That’s the standard by which all other experiences are going to be measured from that point forward.” But delivering on a promise of soft-shell crab you can cut with a spoon is no easy feat. But for Carmines, it’s worth it. For years, he’d been traveling North of the Broad to get his soft-shells, with mixed results. “We were buying soft-shell crabs from a number of vendors, and two out of every ten customers would complain that it was papery. And that drove me nuts,” he said. That papery consistency, according to Carmines, comes when a crab is allowed to sit for too long after it molts. Take a crab out of the water too quickly, he says, and the weight of gravity alone will be enough to crush the crab’s exposed organs, killing it instantly and rendering it inedible. Leave it in too long, and it will develop just enough of a shell to offend two out of every ten diners. It was a ratio Carmines couldn’t live with. “I called a guy I knew on Lady’s Island and said, ‘I’ll come pick them up if you can promise to sell me really soft soft-shell crabs.’ So every day during the season I was driving 2.5 hours to Lady’s Island and back.” It was a friend of Carmines’, Rob Roe who suggested they start doing soft-shell crabs on site. He was hired on the spot. “The first year, we built all the tables out of 2x4s and plywood, then fiberglassed the seams,” he said. “We shedded out maybe 2-3,000 crabs that first year.” Improvement to the tanks, plus the addition of PVC pipes that pump salt water up from the docks to deliver consistently

aerated water, allowed for the operation to grow with customer demand. Last year saw the shedding tanks at Hudson’s put out 13,500 crabs to a hungry island. It also allowed for one of the coolest dining experiences on the island, allowing diners to watch their dinner emerge from its shell. “It’s so fun to see

Tucked into the center of the plaza, in the heart of Coligny lies the quaint but impressive Coligny Theatre. Amongst the tourist-ridden south end, the theatre is a hidden gem for locals and art lovers alike. Coligny Theatre has always been considered different than the norm, largely due to its inclusion of a very wide and unique range of movies and media. However, as of the last few years, Coligny Theatre has gained even more attention for hosting regional and national acts and putting on a variety of live shows. It is common knowledge that Hilton Head hosts a large music scene, with many fulltime musicians and bands residing on the

island year round. Though there are countless restaurant spots where tourists and locals gather to hear their favorite acts, in the past Hilton Head has lacked a larger, theatre-style venue for more formal shows. In addition to professional musicians, the island is also home to a large number of dedicated music-lovers who consistently seek out shows. With these variables, it was clear that a bigger venue was in demand. Coligny Theatre has proven to be a solution. The success of this idea can primarily be credited to Mr. John Cranford. A well-known staple of the island’s music scene, John Cranford is the founder and frontman of popular southern rock band Cranford Hollow. With years of national touring under his belt, Cranford decided to apply his knowledge and experience towards the theatre. It was around two years ago that Cranford was feeling tired and weary of working with late night venues and promoters who “just didn’t get it”. In hopes of gaining a space of his own “where I could be in control of all the elements that go into planning shows”, he turned to the theatre. Cranford took on a leadership position at Coligny and immediately turned up the volume of the number of shows and diversification of acts. He created a distinct vision for Coligny Theatre, which he describes as “intimate shows with great production and promotion”. Alongside his wife Lindsay and the Coligny staff, Cranford has helped put on well over two dozen shows at the theatre since his initial involvement. Now, the addition of regular Swampfire shows has solidified Coligny Theatre as the main outpost for live music on Hilton Head, focusing particularly on original music. Says Cranford, “Nowhere else on the island can you find local talent playing as many original songs”. The loyal audience of the lowcountry has responded well to Hilton Head’s new music venue. Local band Pretty Darn sold out the theatre in December, and Coligny has also recently held other successful shows, such as singer-songwriter Angie Aparo and the annual Grateful Dead weekend featuring Shaky Bones and the Swampfire All-Stars. Largely thanks to John Cranford, the future of Coligny Theatre as a movie and live music venue looks very bright. All throughout 2020, John and the Coligny staff plan to put on at least one show a month, ranging from Hilton Head’s favorite local acts, to collaborative comedy shows, documentary film festivals, and traveling bands. Cranford is looking forward to continue to host a variety of talent and “bring a special kind of show to the south end”. Utilizing his recording skills, Cranford has also started recording the live shows put on at Coligny Theatre which will be available to listen to and download early spring. Savor the many flavors of the South Carolina Lowcountry this spring! From seafood specialties, spicy wings and sizzling burgers to sweet Easter eggs, farm-fresh produce and wines from around the world, here is a taste of the exciting happenings, productions, parades and festivals taking place on Hilton Head Island this season.

The Salty Dog Café

There is always something happening at The Salty Dog Café in South Beach Marina Village. The award-winning Arts Center of Coastal Carolina showcases professional performing and visual arts, as well as cultural festivals and educational outreach, in the heart of Hilton Head Island. March 3-4, “Ireland’s most exciting young tenor,” Emmet Cahill of the global phenomenon Celtic Thunder, serenades audiences 40

Hilton Head Island Wine and Food Festival

March 9-15, raise a glass – or two – in salute to an event 35 years in the making. Join 3,000 other epicureans in The Sea Pines Resort for a weeklong celebration of Lowcountry living at this vintage spring event which began as a three-hour wine tasting in a hotel parking lot.


On March 12, treat yourself to a great selection of wines while shopping the stores of Harbour Town during the popular Sip n’ Stroll and then catch the sun setting behind the Lighthouse that evening during Stay Gold: A Lowcountry Wine, Music and Food experience showcasing Double Gold wines from the February International Judging Competition, delicious Lowcountry foods and live music. The festival’s most exclusive event, the Grand Tasting, takes place on March 13 in the Harbour Town Clubhouse. For a set price, attendees can experience an array of expensive awardwinning wines and light hors d’oeuvres overlooking the famed Harbour Town Golf Links. On Saturday, March 14, more than 250 wines from across the world are featured during the Public Tasting held from 11 a.m.-4 p.m. around the Yacht Basin. One of the largest outdoor tented wine tastings on the East Coast, WineFest includes the Bartenders Challenge sponsored by Blue Chair Bay Rum, the Sysco Outdoor Gourmet Challenge, the Waiter’s Race and a Silent Auction to benefit the organization’s scholarship fund. A VIP Lounge is located on top of the Harbour Town Yacht Club with a special wine selection and catered hors d’oeuvres. Throughout the week, local restaurants and universities host a series of chef dinners and wine education seminars. Hilton Head Island St. Patrick’s Day Parade Everyone is Irish during the Hilton Head Island St. Patrick’s Day Parade! The first parade took place on a whim in 1983 led by local businessman Tom Reilley and a few friends and family. Now South Carolina’s oldest St. Patrick’s Day Parade attracts more than 25,000 spectators to watch the floats, boats, trucks, cars, bikes, golf carts, marching bands, military units, horses, dogs and more make their way down Pope Avenue. Music & Taste on the Harbour

A seasonal celebration of food, fun and music, Music & Taste on the Harbour kicks off on Thursday, March 26, at Shelter Cove Harbour and continues every Thursday night through mid-May. Dance the night away under the statue of Neptune to the sounds of the best local and regional bands while enjoying specially priced appetizers and beverages from select marina establishments. Although the band lineup was not finalized at press time, previous performers have included the soulful sounds of Deas Guyz, Target the Band, Stee & the Ear Candy, The Headliners and The Hilton Head Plantation Big Band. As always, admission and parking at Shelter Cove are free, but guests are asked to bring a canned good for The Deep Well Project, chairs and their dancing shoes. ISLAND WINERY Hilton Head Island

Dreams have a funny way of finding us, hatched in unlikely places as it did for Loren and Georgene Mortimer while traveling down the highway from their home in New Jersey to Hilton Head Island a cold February morning in 2005. The Low Country’s natural beauty captivated them, as Hilton Head’s warm and welcoming community presented a delightful contrast to the icy landscape they left behind. Loren and Georgene were determined to make Hilton Head their new home, the next leg of an adventure they began a quarter-century earlier. Loren and Georgene’s journey began in Upstate New York’s Finger Lakes wine region while they were students at Ithaca College during the 1980s. Together, they explored local wineries and vineyards. Along the way, they developed both a lifelong love for each other and for handcrafted wines. Their love—for one another and for artisan wine—only grew after they married, began careers, and raised their children. They maintained traditions from Georgene’s Italian-American family, making and sharing homemade wines. Perfecting their winemaking skills during those early years, they cherished a dream of owning their own winery someday. In the fall of 2000, Loren gave up his job as a video producer, and Georgene quit her job as an Environmental Scientist and launched Westfall Winery, in Montague, NJ. Westfall Winery soon became known for their award-winning red wine and unique fruit wine recipes. Because Westfall Winery was located on a farm not far from New York City, music festivals, picnics, food festivals and an annual Octoberfest were signature Westfall Winery events spanning the spring through fall seasons. However, winter’s arrival froze rhythms of winemaking. When the snows came, Loren and Georgene escaped to Hilton Head Island’s agreeable climate and relaxed Southern lifestyle. On that fateful day in the car, Loren and Georgene decided to take a gamble and open a small satellite winery on Hilton Head Island. Since the town’s zoning laws only allow wine manufacturing in remote areas, this begged the question: with the Island’s exquisite beaches and scenic golf courses, would anyone visit a small winery in Hilton Head’s manufacturing section? On January 1, 2006 Loren and Georgene would find out. They

put up a balloon and an “Open for Business” sign in front of a rented warehouse complex on Cardinal Road and launched Island Winery. As it turned out, visitors had no problem going “off the beaten-path” for an outstanding glass of wine. Island Winery imports fresh grapes from the world’s most renowned vineyards, handcrafting all wines in small batches. Italian-style wines are crafted from Sangiovese, Barbera and Nebbiolo grapes from vineyards in Amador County, California. Cabernet, Merlot and Rhone style wines are produced with grapes from California’s Suisun Valley. Malbec and Carmenere grapes are imported fresh from Chile. All red wines are oak-aged prior to their release. There white wines are favored for their food friendliness and crisp flavors. Island wines consistently wins local, regional, and national awards. Loren and Georgene display their love of the Low Country in all of their products. They invite local artists to design wine labels that capture the region’s distinctive beauty. They have a series of Low Country Specialty Wines. Peach on the Beach is made from Carolina peach juice and white wine, Elderberry Honey Wine is crafted from local honey and elderberry juice, blueberry and blackberry wines are made with fresh Carolina fruits. Georgene also created a Sherry Pepper Sauce, infused with habanero peppers and smoky chipotle peppers to enhance classic Low Country seafood dishes such as oyster stews, crab cakes, gumbos, and fried fish. After ten years of splitting their time between Westfall Winery and Island Winery, Loren and Georgene were ready to make Hilton Head their home. Several years ago, they sold Westfall Winery. They purchased the empty lot across the street from their winery on Cardinal Road to bring their dreams to life. They designed a new stand-alone winery building fashioned after their farm winery. In addition to their rustic tasting room, they now have plenty of outdoor space for activities and events. Their timing proved perfect. Thanks to Island Winery’s new neighbors—a brewery and a distillery—Cardinal Road has become “a grownup’s getaway” within a world-class vacation destination. The salad that started it all. Since 1987 we’ve been blending this salad up with shrimp and spices, then mixed into a creamy masterpiece. Perfect served on top of a bed of lettuce or as a sandwich or wrap!

Shrimp Salad Ingredients 5 pounds medium peeled deveined shrimp 1/2 cup diced celery 1/2 cup diced yellow onion 2 tablespoons tarragon vinegar 3 cups mayo 3 tablespoons dill 1-2 teaspoons ground black pepper 1-2 teaspoons sugar 1/4 cup thinly sliced green onions Old Bay Seasoning 54

Instructions Cook the shrimp in boiled water seasoned with Old Bay, drain and cool in cold water to stop the cooking process. Mix the remaining ingredients thoroughly. Add in cooked shrimp. Feel free to adjust the seasoning to suit your personal tastes. Yields 12+ servings.


Find Your Tribe BY CHRISTY BARONI

We are tribal creatures. Since the beginning of recorded history we humans have sought out companionship and sought out groups. We have formed tribes, chosen teams, forged factions, and built nations. We NEED a home team. We were created that way on purpose, designed to handle life together. This is easy when we were young. We had classmates, teammates, youth groups, and neighborhood playmates. Every new season gave us the chance to make new friends and meet new kids. But adulthood is so different. Many young professionals feel the disconnect when transitioning from college into the routine of adulthood. It can be isolating. People who had teammates all through school are now missing their outlet to compete, be active, and be part of a team. This innate need is also very real when it comes to forging and keeping wellness habits as well. That old quote “Show me your friends and I’ll show you your future” is 100% spot on. So if you find yourself wanting to change some habits so your that your food and fitness line up with your goals, take a look at the groups where you mingle. Finding new circles to participate in can be intimidating, but so worth it. Join a group class at a gym. This feels scary at first, but having a group of “regulars” can be life changing. Knowing that someone will miss you if you miss your class is a level of accountability found few places. We are so fortunate here on HIlton Head Island to have a plethora of quality gyms, trainers, and classes. There is one that is right for you! Join an online wellness group. For some, joining a gym is either cost prohibitive or time prohibitive. Busy lives, busy schedules, often leave us with smaller pockets of time to squeeze in a workout. I personally host new fitness challenge groups every month 100% online. Your workouts stream OnDemand right to your smart device, your accountability occurs online, and your meal plans and recipes are delivered to you. This can be a way to engage with a group of likeminded people who you may not physically run into in your normal daily routine. Let’s use social media and technology for good, shall we? Start your own wellness group. Changing habits can be isolating and overwhelming. But I’m willing to bet that if you are tackling a new recipe or trying out a new fitness class, there is at least one other person in your immediate circle also considering it. Also facing the same fears and challenges as you, and also wishing she wasn’t handling it alone. The best accountability of all is to lead a group. Start a recipe swap with your circle of friends, start a walking group a few mornings a week, post your workout online and see what

happens. Your tribe will come out of the woodwork. If you are tackling new habits remember you are not alone. Your tribe is out there, ready to high five you, ready to see you succeed, ready to do life together. ZACH STEVENS BY TAYLOR KENT

Upon speaking to Zach Stevens, one wouldn’t guess his true age: a mere 19. Upon hearing him play music, one might actually argue against it. With a rich voice encrusted with tones of old country-western, blues, and music well beyond his years, Zach Stevens doesn’t sound 19. He certainly doesn’t play guitar like it, either. As an artist, Zach has very quickly shown an immense amount of musical maturity and skill. Since graduating high school, Zach has learned to navigate the lowcountry music scene and successfully transitioned into a fulltime musician, playing regularly around Hilton Head and Bluffton. Zach credits his father as a big factor in influencing his music taste. Growing up on classics such as the Beatles and Bob Marley, Zach began to establish a sharp ear for music at an early age. He himself began to experiment with instruments at around age 14, starting with the bass. Inspired by his roommate, Ben Hughey, who played local restaurant gigs, Zach developed a desire to follow in his footsteps. Zach was 16 when he and Ben, along with two of their friends, Grayson and Davis Lentz, began playing out as a band. They called themselves Naytiv. The boys and their band were well-received, playing popular island venues such as Boathouse, Tiki Hut, and the Boardroom. At around age 17, Zach shifted his focus from bass to the guitar. From this point on, he was hooked. It was beginning to be clear to Zach that he wanted to use music as a career path. He dedicated the next year of his life to consistently practicing, and played for at least three hours each day. The more he practiced, the more he understood. Playing and working on his 60

skill constantly, Zach was able to fully grasp all the elements of being a true guitar player. He started listening to more bands that improvised solos, such as the Grateful Dead, Eric Clapton, and Pink Floyd. To him, the world of music got a whole lot bigger. With the strings of a guitar resting under his calloused fingers, the possibilities of what could happen seemed endless. Zach played his first solo gig at Charbar in the summer of 2018. His setlist is an impressively wide variety of covers old and new. Since 2018, Zach’s music career has only expanded. He formed his own group, the Zach Stevens Trio, and often collaborates with Hilton Head favorites such as Matt Robbins, Jeremy Phipps, and Nate Douglas. Now, between playing out as a solo artist, with his trio group, and as Naytiv, a majority of Zach’s nights are filled with music. His favorite aspect of playing live is that it allows him to be completely present in the moment, an escape from the outer world. In the next five years, Zach plans to continue to grow as an artist and hopes to have released his own records and toured the region. Zach Stevens is a musician through and through. The distinct sound of his voice and guitar simply can’t be matched. Over the past year, I’ve watched him obtain a great amount of confidence as he gains trust in himself on stage. Zach is hardheaded, intelligent, dedicated, and unapologetically sure of himself. He is an excellent musician, and possesses all the traits of a real artist. I have no doubt that music will take him anywhere he wishes to go.

The speakeasy is a uniquely American invention, and one of the greatest tributes to our national gift for invention. When the teetotaling masses got their way, launching the national nightmare of prohibition in 1920, it didn’t take long for America’s drinking class to get creative, shipping contraband booze in false-bottomed boats, stashing bottles in their boots (hence the term bootlegger) and finding ways to continue distilling in private. But the finest example of prohibition-era brilliance has to be the speakeasy. Tucked away in the backrooms of everything from laundromats to blacksmith shops, these members-only bars kept the drinks flowing throughout prohibition in flagrant contempt for the law of the land. The bravery to risk it all for a good time, and the ingenuity to stay one step ahead of the law, made legends out of their proprietors. Today, no such laws restrict our freedom to get together and knock back a few suds while watching the game. But there’s something about the danger and excitement of a speakeasy that adds to the enjoyment. Tucked away behind a nondescript bookshelf down a narrow hallway at the back of Joe’s Barber Shop, the devil-may-care attitude and ingenuity of the great American speakeasy lives on in a hard-drinking cigar-smoking atmosphere at Half-Cocked. Far from simply mimicking the styles of the classic speakeasy, Half-Cocked is legitimately semi-legitimate, with memberships to keep away prying eyes and a clandestine approach to keep things a little bit hush-hush. “The whole idea of this is to do things that no one else is doing,” said owner Joe Di Novo from behind the wide bar as construction was wrapping up on the speakeasy. “Rather than go out there and have a drink (in the barber shop), you come back here with a bunch of guys, you swear, you do whatever you want. It’s a speakeasy. It’s a speak heavily easy.” Di Novo, the owner both the barber shop and the speakeasy it conceals, has been pursuing the dream of opening his own speakeasy for five years. Prior to the conversion, the back room had served as storage for select pieces from his extensive collection of cars and motorcycles. “We’d been talking about doing this… but I had a 1955 Ford Pickup back here and I was like, ‘I’m never going to actually fix this up.’” The Ford was gifted to a friend, and the space was transformed. Through a partnership with Jack Daniel’s, Di Novo was able to procure cases of “dummy bottles,” produced for display only, which he converted into the eye-catching light fixtures above. Wood paneling everywhere exudes speakeasy style, and the roll-up garage door provides the only avenue for contact with the outside world. It’s as authentic an experience as

you can get without traveling back to the 20s. As a nod to the speakeasies of yore, Half-Cocked almost feels like it shouldn’t be legal. Anyone who has dealt with the town in opening a food and beverage operation knows that the red tape can be fairly restrictive, with a labyrinth of bureaucracy to navigate. So when you find out you’ll be allowed – and in fact encouraged – to smoke cigars at Half-Cocked, you have to ask if that’s legal. Rest assured, it is. “This is absolutely on the level. I don’t want your wife getting mad at you and calling the SLA saying this is an illegal spot,” said Di Novo. “If the police come, I’ll tell them, ‘When you get off, come back and have a drink.’” But as secretive as it sounds, rest assured Half-Cocked will be a place for everyone. “This is the most exclusive inclusive thing we have here, if that makes any sense,” said Di Novo with a laugh. Already, he’s invited some heavyweights from the area’s food and beverage world to join him in this latest endeavor. “We’re working with a lot of local people,” said Di Novo. As Half-Cocked is billed on paper as a coffee bar, daytime patrons will enjoy coldbrewed coffee from The Grind Roasters as well as a selection of pastries from French Bakery. When the evening rolls around, members will enjoy beer from River Dog Brewing Co. as well as wine and bar food (“But cooler bar food”) like Boar’s Head hot dogs and mozzarella squares served with raspberry marmalade. “It’s like the poor man’s brie,” said Di Novo. “It sounds crazy, but it’s a northern New York Thing… and it’s awesome, especially when you’re drinking.” If you want to join in on the scandalous fun, memberships Di Novo plans to sell memberships with 100 percent of the proceeds from dues going to St. Jude’s Children’s Research Hospital. “I do a lot of stuff for kids. While seasonality has long played an important role in the culinary arts, its interesting to see how the spirit of a town can change from season to season. Like the way oyster specials give way to sheepshead specials, the journey from winter to spring brings about a change in character that is markedly different, yet no less delicious, than its predecessor. That’s no different in Bluffton than it is anywhere else.

Taste of Bluffton ~ April 4 Billing itself as a “Southern Celebration of Food,” Taste of Bluffton began to come into its own just as the Bluffton restaurant scene was building its reputation. This simple street festival has given way over the years to a week-long bonanza of incredible food, shining the spotlight on the local chefs who are raising the town’s profile as a foodie destination. Details were still being finalized for the coming 7th iteration of Taste of Bluffton, but what has been revealed already is enticing, with plans for a Friday night party and whole hog roast being teased on the Taste of Bluffton Facebook page. That

Mayfest ~ May 9 Embracing the name everyone was calling it anyway, Mayfest has dropped the “Bluffton Village Festival” moniker and returns for its 42nd iteration with all the quirky, artistic fun and mouthwatering food that has made it an annual can’t-miss event. And while we’re here for the food, the pedigree of the event skews more toward the artistic and the crafty, with the annual festival falling on the last Saturday before Mother’s Day for anyone waiting until the last minute to buy a gift. This being Bluffton, things took a turn for the eccentric from there, with everything from an Ugly Dog Contest to live music building a festival atmosphere around all the gift shopping. But it was the food that truly made Mayfest what it is – the famed shrimp salad sandwiches prepared by the Church of the Cross quickly became the hot-ticket item, with some visitors 62

In fact, it may be even more true here since “markedly different” is what Bluffton does best. Here along the banks of the May River, spring brings with it a pair of culinary festivals that celebrate the diversity of our area’s epicurean offerings. While the fall and winter months may be the sole providence of the oyster roast (and rightly so), it’s in spring we find out there’s so much more to the Lowcountry than the world’s tastiest bivalves. said, you can expect more of what has made past installments bigger and better with each year, like the Brews Under the Stars event and the Taste of Hampton Lake event, which saw local chefs preparing meals in private home kitchens to benefit local charities. Naturally, the event will serve as an anchor for Bluffton Restaurant Week, where local restaurants offer mouth-watering prix fixe menus for a special price. But the main event will be the street festival, in which Calhoun Street becomes the world’s largest open kitchen, serving up the many flavors of the south. From fresh local shrimp, crabs and fish to slow-roasted barbecue and Lowcountry Boil, there will be enough options lining Calhoun Street for you to forget all about oyster season. Recent years have seen the younger eaters get their own event, with the doughnut eating contest dangling sugary goodies in front of kids hungry for victory. It may be a celebration of Bluffton’s quirky, eccentric history. It may be an open-air gallery walk among the inspired artists who have made the Lowcountry such a colorful place to call home. It may be your last chance to get Mom the perfect gift. But foodies know that Mayfest is above all else a celebration of Southern flavors amid a party atmosphere.


Local Seafood, Closer than Ever A 75-year legacy of fresh fish sets up shop in Bluffton. BY BARRY KAUFMAN

There’s a fresh face in Bluffton’s local restaurant scene, but it isn’t an eatery and, to be honest, it’s more familiar than you might think. The all-new 4,050-square-foot facility on Red Cedar Street might be a new sight on the drive into Old Town, but the name behind it has decades of local fame. And odds are good you’ve already eaten some of their famous wares. The Russo family has been providing fresh, local seafood to the Savannah area for nearly 75 years, gradually extending their empire north to our shores. Beyond their Hostess City clients, Russo’s has provided fish for local restaurants including Charlie’s L’Etoile Verte, ELA’s On the Water, The Lucky Rooster Kitchen and Bar, Nunzio’s Restaurant + Bar, Red Fish, The Cottage Café, The Pearl Kitchen & Bar and many more. But what they didn’t have was a true brick-and-mortar local presence. That all changed this past summer with the opening of Russo’s Fresh Seafood Bluffton. Initially serving as a processing and wholesale market, this venture represents an independent entity from Russo’s Seafood in Savannah, but is immersed in the family’s culture thanks to third-generation fishmonger Charles Russo III at the helm. With the new Bluffton facility, Russo will continue the relationships his family has built with fishermen from Florida to Virginia, while at the same time establishing new relationships with area restaurants always hungry for fresh local seafood. And this isn’t just about the convenience of reaching the local fishermen and restaurateurs that have been the Russo family’s lifeblood for decades. What’s in Season Warmer weather brings a fresh catch to our shores and our plates. While many of the fish that fill Lowcountry menus area available year-round, the warmer months will bring with it a fresh bounty to harvest from her waves. With oyster season firmly behind us, we delve into some of the other delicious treasures that have made our area famous. It’s a bit early yet for shrimping season, but anglers can still begin trawling for roe shrimp in May or June, then brown shrimp June through August. Hauls are largely dependent on the weather, and with a mild winter behind us expect big things from this year’s shrimping season. You can read elsewhere in this issue about soft shell crab season, which starts in spring, but one effect of the blue crab molting season is that red fish become hyper focused on these delicious morsels, making them easier to catch as their schools break up. For fish, one big species becomes prominent on local menus starting around this time of year: sheepshead. These goofy-looking fish head out to deeper waters in the winter to spawn, but as the mercury rises they begin making their way inshore, and commercial fishermen pick them up by the score on some of the artificial reefs just off-shore.
