PUBLISHERS NOTE

If there is one thing that is nice about living on Hilton Head, it is the fact that we can escape reality now and then just by looking out the window. There is so much negativity that is circulating nowadays, either through the media or just in passing conversations, that an escape to the sunnier side of the street is not a bad thing. Granted there is a lot to be concerned about and things are not always perfect, but I guess I’m just one of those people that like to see the glass half full. I have to admit, living on Hilton Head Island makes it a lot easier to see things in a positive light. The weather is great, the island is beautiful, and there are so many things to do that it is helps to keep us positive. Sure we keep up with what’s going on in the world, and yes, it usually has the same consequences that it does to people that do not live here, but normally the negativity is short lived as we move on to something more positive. The summer season really reinforces my affinity for the island. The amount of options are unlimited here during these months as the longer days, combined with warmer temperatures, allow us time to get our work done and still enjoy our favorite activities. It is a time for visitors to breathe in our hospitality, taste our chef’s creations, and bask in the island sunshine while their children are busy with a full menu of recreational activities. Whether you are local or visiting, whether your preference is golf, tennis, water sports or just spending the day at the beach or the pool, summer is the time to take advantage of all the island has to offer. It’s amazing how all your problems and concerns disappear when you are busy doing something you enjoy. When your day starts off on the wrong foot or bad news seems to be the trend, remind yourself of your surroundings; take some time for you. Go for a walk on the beach, hit the driving range or just grab a bite to eat at one of the many fine dining establishments and I’ll bet your day will improve. Hopefully this summer you will find the island to be the perfect place to relax, re-charge and take advantage of all Hilton Head has to offer. My guess is that your glass will be half full at the least!

South Beach Marina in Sea Pines Plantation is full of all sorts of hidden treasures. Picture perfect views, amazing sunsets, great restaurants and incredible shops have turned the marina into a destination place of sorts for visiting families. the dock, The Wreck seems to sit at its home preparing for a journey. It doesn’t necessarily creak in the sea breeze or have sails that rustle at their mast, but The Wreck certainly seems full of possibility. And adventure. Now The Wreck is adding a restructured menu to the entire experience.

Adam Van Nus, the General Manager of The Wreck, sits at one of the restaurant’s tables. The view is incredible even though the early spring day is gray and even a bit chilly. A massive deck full of tables and chairs works its way out to the marina’s edge. Boats rest a their docks below. The water is calm. In the close distance lay wetlands, birds and inspiring


feats of natural beauty that churn the imagination. “The menu is geared mostly around seafood,” says Van Nus, “and several of our items do coincide with The Salty Dog Café, but the additions we want people to be aware of is that we’ve added more fresh seafood, our dressings our homemade and, this winter, we’ve really began to increase the quality of our service and our food.” Chef Nick Quatrara has made a host of additions to the menu including Maine lobster, Alaskan King Crab Dinners, Crawfish Dip, Lobster Flatbread and Fried Green Tomato Appetizers. “We want to make sure we have great food and great service,” says Van Nus. “We manage our ticket times to come out faster and we want people to feel almost as if they’re at their house and we’re waiting on them. We expect every guest to be taken care of like they’re our family.” Not many homes have 248 seats inside and out to serve food, but Van

Nus and his staff don’t hesitate in creating an experience for families to truly enjoy. Happy hour starts at 3 p.m. and goes to 6 p.m. The Wreck has pagers that work anywhere in the marina so visiting families can make their way around South Beach Village for entertainment or go shopping while they wait to be seated. Musicians entertain the crowd all happy hour long seven nights a week. Dining at The Wreck becomes an experience instead of a meal. And that’s exactly what Van Nus wants to happen. “We want to be as family oriented as possible. We want families to come down here and spend the day. We want to be an experience and we want people to be aware that we have a different variety of menu items than our other restaurants in

Approach it by evening when the sun is still up and it offers a coveted bird’s eye view of the timeless ocean rolling by, the crystal clear pools, and the local swimmers whether they be propelled by fins or feet. Approach it by night and it is a blue beacon reaching out across the hotel grounds and adjacent beach. Throw in the catch of the day and some Island 12 • A TASTE OF HILTON HEAD • SUMMER 2010

spirit(s) and you have found the Westin Hilton Head Island Resort & Spa’s new Oceans restaurant and bar in Port Royal Plantation. Wrapped in a blanket of blue, Oceans will lure you in with its view and ambiance and keep you coming back for its food and fun. Formerly known as Turtles Beach Bar & Grill, Oceans has a

new look, a new taste, a new theme. Gone are the curtains that once stood between you and the crystal clear views up and down the Port Royal beach and sound. Gone are the sandwiches and fries which are now available downstairs by the pool. Oceans has stepped up the atmosphere and the menu and created a family oriented restaurant by evening that


transforms to a popular oasis by night. According to David Jachetta, director of food and beverage at the Westin, “Turtles was a more relaxed, right off the beach kind of bar and restaurant”. Oceans is now a family friendly, seafood oriented, comfortable spot with something for everyone. Don’t worry about the kids being entertained, as tables are laid out with craft paper and crayons to keep them busy after they watch the dolphins frolic by. The menu is chocked full of fresh seafood choices from beginning to end. Start off with the ahi tuna poke, served with olive oil, fennel, spicy avocado, and crisp wontons or try the ever popular appetizer of steamed mussels or clams. Salad choices range from a chilled seafood salad packed with shrimp, scallops, crabmeat, and calamari, to a more traditional Caesar. If you are craving a fancy sandwich for dinner, order the soft shell crab b.a.l.t. Available in season, the crab is pan-fried and topped with bacon, avocado, lettuce, and tomato. The clam linguine is always a hit as well as the Atlantic snapper with mango, grilled pineapple, and citrus salsa. Check the chalkboard for daily specials as

executive chef Bart Umidi will change it to reflect what is fresh off the boat. In keeping with the Westin’s ongoing commitment to personal renewal, the menu also includes “SuperFoods”, known for being healthenhancing and rich in antioxidants and phytonutrients. According to Ellen Lam, marketing manager of fun, “When paired together, the SuperFoods provide a food synergy that makes them even more nutritious than when eaten alone.” Entrees in the SuperFoods category are roasted green tea infused salmon with caramelized sweet potato, spinach, and shiitake mushrooms or fire grilled chicken breast, served with chef’s potato and veggies. Kids can order their favorite dishes like chicken fingers or hot dogs, or may choose from a few fancier options like cockadoodle noodle soup and “the big cheese” omelet. Enticing desserts for the little ones include “I scream for ice cream” and a “monster cookie”. A full bar with beers on tap, martinis galore, and a well-rounded wine list flows until closing which often is not until 1 or 2 a.m. in the morning. Dinner generally

ends at about 9 p.m. when the place automatically “transforms” into a bar. “After dinner the music gets a little louder and the tables fill up with drinkers rather than diners,” explained David. The early response to the new look at the Westin has been favorable. In a word or three? “They love it!” exclaimed David. With a regular band of locals and a hotel full of guests, Oceans has become a new Island hot-spot. Blue lights, blue ocean, blue pools allure one and all. “At night when it gets dark out, the room just glows.” For those who want to take their drink outside and count the stars, there are numerous tables set up and a fire pit roaring every night. Oceans opens at 4:30 p.m. daily, for more information please call (843) 6814000. Appetizers start at $4.50 and entrees start at $12.00. With its location right on the ocean and in a second floor setting, Oceans view is truly unique and worth a visit. Food is the nourishment of life. It brings families together and enriches the celebration of friendships and special events. The kitchen is the centerpiece in every home. It is often the place we find people gathered sharing life, laughter and happiness. It is that familiar feeling along with building a better understanding of the culinary arts and the art of cooking that Michael Anthony’s Cucina Italiana creates each day. Michael Anthony’s is a fine dining restaurant specializing in traditional regional Italian cuisine, prepared with a creative touch, presented with a contemporary flair and served in casual and comfortable warm surroundings. Regional dishes are prepared with fresh ingredients and simple yet elegant sauces. A family affair in the tradition of old world Italian eateries, Hilton Head Island residents Becky and Tony Fazzini, along with family members Jill Boyd and Michael Cirafesi, opened Michael Anthony’s Cucina Italiana in January of 2002. The family longed for the quaint authentic Italian eateries found in the Italian neighborhoods around the Philadelphia area which were modeled after the trattorias of the small towns of Italy. The desire to offer this fine cuisine, paired with some of the best wines in the world, in a more contemporary metropolitan environment launched what is now recognized as one of the finest

restaurants in the region. Enjoy homemade gnocchi, succulent veal dishes and the creative fresh fish preparations offered nightly. Tempting desserts are made in-house daily and include the island favorite “chocolate soufflé cake.” The versatile wine list offers a broad selection by sampler flights, glass and bottle, designed to satisfy the novice or seasoned enthusiast. The cozy wine bar provides just the right atmosphere to enjoy a cocktail, a special bottle of wine or one of the signature appetizers or desserts. The desire to share their passion about Italian food and wine led them to the idea of creating an environment where family and friends could come to learn the skills and techniques of cooking everyday Italian. As a result, in 2007 Michael Anthony’s opened their cooking school above the restaurant. Designed to reflect old world ambiance the culinary center has a state of the art designer kitchen where Executive Chef Michael Cirafesi holds classes each week and teaches the art of classical Italian cooking. Michael Anthony’s cooking classes offer a variety of subjects for everyone. Whether you like to get your hands dirty or just sit back and let Chef Michael do the work, there is a class that’s right for you. Hands-O n Classes give you an opportunity to prepare three to five recipes from start to finish by working closely with Chef Michael and a small group of classmates (limited to ten students). After class, you’ll sit down for lunch with Chef Michael and your classmates to enjoy the dishes you’ve cooked paired with Italian wines.


Demonstration Classes are presented class-room style where you watch Chef Michael prepare the menu while providing step-bystep procedures and helpful hints for each dish. The class begins with a welcome glass of Prosecco, a generous sampling of all the dishes prepared, a glass of wine and a recipe booklet to take home. This relaxed, interactive format encourages informative discussions to help you prepare the dishes with confidence at home. The latest project the family has undertaken is the creation of an authentic Italian Market along side the restaurant. It is here where you can find many of the fresh and gourmet ingredients used by the restaurant to create their many dishes. From fresh pastas to cheeses cut right from the wheel to a myriad of olive oils, canned tomatoes and truffle paste, you can find all that you need to create that special meal right in your own home. The Market is open Monday thru Saturday from 10:00am to 5:00pm. Hilton Head Island offers so many family oriented activities. Whether it is enjoying our beaches, our golf courses, our tennis courts or just kicking back, the vacation experience is one that creates long lasting memories. Gregg Russell has been entertaining kids, families and former kids who now have their own families on Hilton Head Island for the past 34 years. A combination of talent, luck, hard work and diversification has taken Russell around the world and then some playing and producing music as well as movies; but, every summer the local icon comes back to Harbour Town in Sea Pines Plantation, straps on his guitar and strums to what he laughingly calls, “madness”. As Russell prepares for another summer under the shade of The Lighthouse he talks to Taste about his journey, his “duty”, what keeps him going and what got him to where he’s at now. Taste: You’ve been involved w ith music since you were 10 years-old, what does music do for you? Gregg Russell: Everything. It’s put a roof over my head. It’s given me a chance to go work without having a job. It’s put my kids through college. It’s given me most of my friends. And it’s given me the chance to do something of significance here with our little organization called “Hilton Head Heroes” where we bring terminally ill and critically ill kids and their families here for a week cost free. GR: Well, I guess I believe in luck, but I believe things work the way they’re supposed to work. For some reason, somehow, this was supposed to be my path. Now, you can jump off that path pretty easy, but I’ve stuck with it and I’ve had people take me under their wing when it would’ve been easier to go off and do something else. My first summer here I lived in my van because I couldn’t afford an apartment. One night Charles Fraser and I went sailing with a bunch of people. He pulled me aside and asked me where I would like to live. I pointed laughingly to one of the condos above the shops in Harbourtown. The next week I went in to pick up my meager paycheck and there was a handwritten note from Charles with a key scotch taped to it thanking me for what I was doing and telling me that I could live in that condo rent free for as long as I wanted. Had that not happened, I’m not sure what would have happened. T: Is part of what you do at Hilton Head Heroes “giving back” in a way? GR: I think so. I think when you’ve been blessed in your life and you have the ability and capability to do something

for somebody else it’s almost our duty in a way. T: What can we expect from you in the future? GR: My contract with the great people at Sea Pines is such that it self renews. I know I’ll be there this summer and next summer. But I don’t want to be the guy that stayed too long. I think I’ll know before Sea Pines knows, at least I hope I do. I just want to go out the same way I came in: with a big smile, a lot of enthusiasm and having fun with the folks.

Pizza has become America’s favorite food over the past 50 years. Pizza is actually modern Italian for pie. Pizza is described as a flat pie made from a yeast dough and topped with various cheeses, vegetables, meats, seasonings, and other ingredients. Millions of pizzas are eaten daily, but how often do the people eating pizza stop to consider the history? The true origins of this fine cuisine are as colorful as any good pizza. The origin of pizza is a long and winding trail. The great-grandparent of pizza is the flat bread, and that can be traced back to the Stone Age. We can’t be exactly sure where in the Mediterranean it began, but we do know it traveled through Babylonia, Greece, and Italy. Sometimes called focaccia, it is flat bread jazzed up with spices, herbs, oils, cheese, and other regional, readily available items. Ancient Middle Eastern cultures were eating flat, unleaven bread, much like a pita, that had been cooked in mud ovens. The bread, seasoned with olive oil and native spices, is still common in Greece and the Middle East today. Pizza was considered a peasant’s meal in Italy for centuries. The lower class of Naples, Italy is believed to have created pizza in a more familiar fashion. In the late 1800s, an Italian baker named Raffaele Esposito, was believed to have created a dish for visiting royalty. The Italian monarch, King Umberto and Queen Margherita, were touring the area, and to impress them and to show his patriotic fervor, Esposito chose to top

flat bread with food that would best represent the colors of the Italian flag: red tomato, white mozzarella cheese and green basil. This pizza was named Pizza Margherita and is believed to be the origin of the pizza we have today. In Europe today, a cheese pizza is commonly referred to as a Margherita pizza. Pizza migrated to America with Italian immigrants in the latter half of the 19th century. By the turn of the century, Italians had begun to open their own bakeries and were selling groceries as well as pizza. The first pizzeria in North America was opened in 1905 by Gennaro Lombardi on Spring Street in New York City. The first “Pizza Hut”, a chain of pizza restaurants, appeared in the United States during the 1930s. But it wasn’t until after World War II, when returning GI’s created a nationwide demand for the pizza they had eaten and loved while serving on the Italian front in Italy, that pizza went public. In the 1950’s, packaged pizzas from Chef Boyardee hit the market and Pizza Hut, Shakeys, and other mass production pizza parlors appeared, greatly expanding the market for pizza. Today, pizza is consistently within the top 3 foods eaten by Americans and a staple of the American diet. Pizza consumption in the United States is staggering. The pizza industry is estimated to gross more than $35 billion annually. About 36 per cent of all pizzas contain pepperoni, making it the most

popular topping in the United States, followed by Italian sausage and mushrooms. Anchovies are a hotly debated topping; you either love them or hate them. In India, pickled ginger, minced mutton, and pannier cheese are the favorite toppings for pizza slices. In Japan, Mayo Jaga (a combination of mayonnaise, potato and bacon), eel and squid are the favorites. Green peas rock Brazilian pizza shops and Russians love red herring pizza. Besides good quality cheese in the right proportion, a good crust is crucial. According to pizza connoisseurs, imperfections with the sauce or cheese will be overlooked if the crust is exceptional. Truly great pizza dough is made only with flour, natural yeast or brewers yeast, salt and water. It must be kneaded and shaped, to keep the dough from overheating. Today pizza has become just as American as baseball and apple pie. Only because of its most recent origins is it considered an Italian dish. Approximately three billion pizzas are sold in the United States every year, plus an additional one billion frozen pizzas. Just hearing the word “pizza” brings a smile to the face of just about every American. Whatever style or variety — from thick, Chicago-style deep-dish pizza stuffed with gobs of cheese, sausage, and pepperoni to a thin-as-a-cracker crust topped with veggies — pizza invariably makes it to the top of “favorite food” lists. Tapas Restaurant The Island's Fabulous Taste of Paradise. In 1992, a 7.3 magnitude earthquake shook Southern California early one June morning. The tremblor was enough to rattle Ardis Matthews and her husband, Max, into travelling across the country “to fabulous places, none of which were exactly right.” But, as it turns out so many times in life, the road less traveled, led to the most adventure. When the Matthews were in Charleston “we were sitting in a bar being friendly,” laughs Ardis. “We were talking to a nice couple from Hilton Head about our trip to Savannah. They said Hilton Head was right on the way, just make a left and go over a bridge.” The Matthews fell in love with the Island immediately. “It reminded us of our old home in California.” After trading one paradise for another, and replacing surprise earthquakes with preemptive hurricane warnings, Ardis had to find out what to do with herself.

Ardis is perpetually jovial and enthusiastic. She is enthusiastic about anything. Anything. Every new experience is “exciting”, “cool” or “fabulous”. Every past experience, even if it was less than grand, has one little slice of humor, wisdom or combination of the two. She is sweet, sassy and indefatigable. She doesn’t fear change, she embraces it. “This is all learning by doing,” she says of her extensive menu. “Except that I did have a fabulous […there’s that word again,

‘fabulous’…] opportunity to take cooking classes with some of the greatest chefs of the 1980’s in California.” Wolfgang Puck, Bert Greene and Julia Childs among them. “It was mostly fun. And the main thing I learned from these classes was, ‘I can do this.’” To Ardis, the best cooking she comes up with is “looking around that kitchen and reinventing the same ingredients over and over and over again. I’m not classically trained, I just makes what tastes good. And fortunately it seems to taste good to other people too.” Besides food that tastes good, the good food changes all the time. “There are certain items I would never take off the menu. I like the classics, but then I like totally wacky new flavors.” Ardis reflects and then starts laughing again, “And then I like the stuff in between! I don’t know! I like food! Anything but beets!” You can’t help but smile in her presence.

Dominic Hausher or, as he’s known to the better part of Hilton Head Island, Dom, has always been one of those guys that’s good to see. One of those guys that just makes you smile when you shake his hand. With a baby girl on the way and a son at home, Dom sits down with Taste to talk about the good of food and beverage, the bad of food and beverage and way it’d be great to have his dream job. Taste: What do you like best about your job? Dom: Oh, you get to see a bunch of people everyday, you get to see the same people everyday and I’m not stuck in an office. I get to go around and talk to people and I work with a great, young staff. We do events, we do fun stuff like Wednesday night trivia, we hang out after work. We have fun while we work. It’s not all serious all the time. T: What’s the worst part about your job? D: I think it’s a tough job when you start

having a family a little bit. The hours aren’t normal. Some days I get out of there at two in the morning, go in at 5 and out at 2 so it can be kind of tough doing what you want with your family. T: What does it take to be successful at your job? D: Patience. Keeping the staff motivated and up to par when you’re dealing with a young staff takes patience. And you have to put a smile on your face everyday. I don’t work in an office and I don’t get to hide in an office. If I’m having a bad day I’ve got to leave that stuff out of work. If I’m smiling, the staff’s smiling and the customers are smiling. T: What do you like to do when you’re not working? D: Play golf, go to the beach, play with my son, hang out with my wife, clean the house, and just relax.

that you would like to do, w hat w ould it be? D: Man, that’s tough. I’d like to be retired to tell you the truth… [Laughs] I guess I’d love to be a professional golfer. Travel around the world, go to all the nice resorts. Golfers go to Hawaii, Bermuda, Miami Beach, they don’t go where it’s cold and crappy. Maybe Scotland… but I’ll take Scotland! They’re not playing Scotland when it’s 20 degrees out!

If you don’t get your daily dose of fresh fruit before you hit the beach this summer, fear not. There are a myriad of bars scattered up and down Hilton Head’s twelve miles of pristine beach and they are all blending up fresh, fruity, and frozen concoctions every day. So take a break from the heat, refresh, relax, and rehydrate. Belly or bikini on up! First stop is Pool Bar Jim’s at the Marriott’s Grande Ocean Resort outside of Sea Pines’ south gate. with a smile, complimented by the sweeping ocean views with pelicans crashing into the waves. Jim has been in the bar business for over 30 years and his experience shows. He has traveled to 16 Islands in the Caribbean to Mexico and Cuba to track the original recipes of various drinks like the daiquiri and mojito. Jim found the formula in Hawaii for PBJ’s most popular seller, the Lava Flow, made with strawberries, bananas, pineapple juice, coconut cream, and rum. The Tiki-tenders have been together for years and are like one big family. They share their love for people, laughter, good times and good drinks and enjoy “the best office view on the Island.” 225 steps down the beach from Coligny is the newly renovated, fully covered beach bar at the Sea Crest. Chris Katon, GM of the famous Aqua Grille and Lounge and overseer of the renovation, is thrilled that they can now welcome hungry and thirsty beach-goers to belly up for lunch, happy hour, and a light dinner. JP’s Beach Café, named after Chris’s brother and former business partner who died in a car accident, will serve up the same fresh seafood that put Aqua on the map. “We will provide the same level of service outside that we have always provided inside,” said Chris. Enjoy fresh fish tacos, salmon salads, fresh ahi tuna and quench your thirst with their signature pina colada served in a fresh pineapple with, drum roll please, an umbrella! Refills are half-priced! Palmetto Dunes beach goers can walk up to the Marriott Beach and Golf

Resort’s poolside bar. Enjoy the ocean breeze and unimpeded views up and down the beach while sipping on a cool cocktail or ordering from the Ocean Blu menu full of appetizers and meal selections. Open from 12 to 5 p.m. daily, beach bar Liquid will have you refreshed and rehydrated in no time. Beachy music such as steel drum bands and acoustic guitars will provide entertainment on Friday evenings and Saturdays during the summer. Discover a taste of the Caribbean at Coco’s on the Beach at mile marker 94A down the boardwalk from Hilton Head Resort. They say finding Coco’s is half the fun, but once you make your way there you won’t want to leave. The cheery beachside atmosphere is accented by hand painted bar stools and Christmas lights. Beach volleyball and music by Sidemark, a popular local duo, as well as a steel drum band, will entertain you through the summer. “We only need positive things, people, and influences in our life,” said Larry Watkins, long-time owner of Coco’s. A cancer survivor, Larry surrounds himself with happiness, sunshine, good friends, food, and drink. From Columbus, Larry serves an Ohio-style fried bologna sandwich with special mustard. The menu also features Angus burgers, authentic Coney Dogs, and other easy

beach food like “taco in a cup”, chicken fingers, nachos, and chili dogs. Grab a bucket of beer, or better yet, try an unforgettable margarita with a secret mix from New Orleans. If tequila, vodka, or rum is your thing, then check out the shelves behind the bar laden with 32 different kinds of tequila, 38 varieties of rum, 17 flavors of Smirnoff vodka, and 37 choices of cold beer. Coco’s is accessible by beach from Palmetto Dunes or Singleton Beaches or you can park at the Hilton Head Resort. Last stop, but certainly not least in beach curb appeal, is the Westin Beach Bar & Grill. Port Royal beachcombers are welcome to pull up a chair at the poolside patio and choose from full bar and food menus. If you need some serious refreshment, try a Turtle’s Tea, the Westin’s own version of a Long Island Ice tea. SPANISH SEAFOOD PASTA WITH ROMESCO SAUCE Courtesy of Just Pasta Romesco Sauce: 2 oz. olive oil 1 med onion diced 3 cloves garlic thinly sliced 3 oz. sliced dried chorizo sausage 1 cup white wine 4 cups peeled plum tomatoes diced 1 cup roasted red peppers diced 2 cups chicken stock 1 tsp sugar 2 tbl salt 1/3 cup toasted sliced almonds Spices: 1 tsp paprika 1/4 tsp fennel powder 1/2 tsp coriander powder 1/2 tsp light chili powder 1/4 tsp black pepper 2 bay leaves

Preparation: Sauté onions, garlic, and sausage in 2 oz. of oil 3-4 minutes on medium heat. Add spices and continue to sauté for 1 minute. Deglaze with wine and reduce by half. Add remaining

ingredients (less almonds) simmer on medium low for 30 minutes stirring often. Add ¾ of the toasted almonds and continue to cook for 5 minutes. Seafood: 2 oz. olive oil 4 jumbo shrimp peeled tail on 4 whole fresh clams 4 black mussels 4 oz. white wine Preparation: Sauté all ingredients (less wine) on high heat, deglaze with the wine, simmer 2-3 minutes longer or until shrimp are cooked. Cook 4 oz. of saffron tagliatelle pasta (or your favorite pasta). Place seafood around pasta and top with Romesco sauce and top with the remaining almonds.

Ingredients: 2-4 oz. portions Cod 3 dried Roma tomatoes 1 large Garlic Clove, minced 6 Basil leaves, chiffonade 2 oz. Tomato juice 4 oz. Chardonnay Salt and Pepper to Taste 1/2 Cup Extra Virgin Olive Oil Preparation: Season Cod with Salt and Pepper. Place Cod and Olive Oil in saute pan over medium low heat. Saute 3 mintues and flip over. Deglaze with wine then add rest of ingredients and simmer until fish is just cooked through.

Pizza, Subs And An Ohio State University Football Oasis. Mangiamo is unmistakably partial to Ohio State football. You could be color blind and illiterate and still come to the conclusion, quite quickly, that this little pizza and sub shop in Main Street Village on the north end of Hilton Head Island has an affinity for Buckeyes. Memorabilia cakes the walls. Football theory and pigskin prognostications are constantly discussed, sometimes rather zealously, over slices of ‘za. On game day, it’s scarlet and gray go time. But it wasn’t always so… When Brian Bambeck opened Mangiamo in July of 2002 he had a smattering of beer signs and “one [Ohio State] flag and one 24-inch tv.” Things weren’t Trumptastic by any stretch of the imagination for Bambeck, but the doors stayed open. The food was dialed in, but Brian needed something more, something to elevate Mangiamo to that list of places considered unique. One fall day Bambeck, an alumnus

of The Ohio State University, was asked by a customer if he would be watching The Game—meaning the Ohio State football game, of course—on Saturday. Brian replied that if he was going to be at his restaurant (which he would indeed be because, in those early years, he was there “nine days a week”) The Game was going to be on. That first Saturday, more than 20 people showed up. Not bad for the fledgling business. By the end of November, 2002, more than 80 people were watching The Game at Mangiamo. And that’s how things normally begin in life, very small. The “Ohio State thing” has grown from one 24-inch picture tube television to 5 HD flat screens (one TV in each bathroom) and a 60” big screen outside on game days, over 200 Buckeye fans filling up the inside restaurant as well as the outdoor patio every Saturday in the fall and an identity forever tied to Mangiamo now.

The place is packed with artifacts. Mangiamo is practically a case study in Buckeye football legacy. A functional football museum busying itself slinging pies, subs, salads and apps and keeping its guests happy Mangiamo has a full complement of 8” subs, pizzas, calzones, appetizers, salads, soups and kid’s items. Brian uses his own homemade dough for his pizzas. He also makes his own marinara sauce, salad dressings, tomato sauce and BBQ sauce. Everyday, from 3 to 4 p.m., is happy hour where customers get cheese pizza for half price and every Wednesday is half-price spaghetti. Summertime on Hilton Head Island is all about fun and family, sun and songs, beach and barbecue. Day or night, rain or shine, the Island is chock full of events that will appeal to everyone whether you want to get your feet wet and fingernails sandy or you just want to sit back, relax, and enjoy the scenery. FOR THE FAMILY Summer Jams, presented by the Island Recreation Center, will return to Shelter Cove Community Park this summer. Pack up your family and a picnic blanket and get a front row seat for the Shelter Cove fireworks. Bouncy houses and slides will keep the kids busy while DJ Jeff Taylor, of Adventure Radio, cranks out the tunes. Jeff will have an eye and ear toward engaging his audience on the dance floor with favorites like the

limbo and cha-cha. Started seven years ago for locals, Summer Jams are now a tourist must-attend. No need to pack a picnic basket as Giuseppi’s provides the pizza, The Smokehouse brings the barbecue, and Street Meat grills up the burgers and dogs. Taps on the Bud truck and soda machines will be flowing and wine will be pouring. Benefits go to all Recreation Center programs, especially the Benefits Scholarship where “no child is denied recreation”. Dates for Summer


Jams will coincide with Shelter Cove firework displays and run Tuesdays from June 22nd though August 10th as well as the 4th of July. Movie nights, also compliments of The Rec Center, will return this summer, but will now be on Fridays instead of Thursdays. According to Joe Cain, “We are hoping a Friday twilight showing will encourage more locals to come out.” As to what will be showing? Joe calls it family movies with a “kick”. Movie nights will be at Shelter Cove Community Park and are scheduled for June 18th, July 9th, and August 6th. A great escape for the kids from the summer heat will be Water Fun Nights, a new event sponsored by The Rec Center. Water slides will entertain boys and girls for hours while families can enjoy the same food and drink options as at Summer Jams. Fireworks will light up the sky every Tuesday as the centerpiece for Shelter Cove’s Harbourfest. The entire family will be entertained as there is something for everyone. We have seniors getting on the stage and dancing with him and he has the kids rolling with laughter all night.” The Big E will be outside of Skillets every Wednesday and Thursday nights starting at 6:30 p.m. throughout the summer. This HHIC fan calls her orders in ahead of time and picks up her favorite flavors by the pint. Operation R&R is a non-profit organization designed to give married men and women who have served in Iraq and Afghanistan the opportunity to reconnect and strengthen relationships with their families on Hilton Head Island at little or no cost. Property owners are donating their homes and villas and generous people are donating their time and energy to make their stay a memorable experience. With multiple deployments of soldiers and marines, there is a higher incident of divorce, alcoholism and suicides among military personnel. Operation R&R has been successful in decreasing these incidents by ensuring that our military families have some time with their families in a relaxing situation. Going on a much needed vacation with family provides an opportunity to strengthen relationships that have been strained by long separations and extreme circumstances.

Operation R & R was born when founder, Dr. Grant Evans thought it would be a great idea to invite returning soldiers and their families to spend a week in Hilton Head, with accommodations at a rental villa or home on Hilton Head, compliments of the property owner. Dr. Evans, said, “I caught myself staring at military families at the airport, departing or returning, hugging and crying, and I remember thinking that it is absolutely unbelievable that these people are going overseas, leaving family, and putting their lives at risk, and we’re just going on with our daily lives.” “Since we own rental properties on Hilton Head which sit empty most of the off season, Dr. Evans added, “I told my wife that we should put up a couple of families in our condos during the off season. We soon realized that there were likely others who would like to do the same thing, so we began trying to figure

out the best way to get properties to provide as well as get military personnel in need of and deserving a vacation.” “The first year we had 60 properties and accomodated 57 families, and about 30 restaurants and businesses that participated,” Dr. Evans continued. “Since that time, we have gained an additional 250 properties and are up to 60 restaurants and 36 businesses which provide gift certificates for the families to dine out, buy groceries, and participate in water sports and other vacation activities.” Not knowing exactly how to get in touch with the military, Grant talked to USO representatives at the Savannah airport, who directed him to Pastor Andy Smith, a Baptist minister in Richmond Hill, Georgia, whose church had “adopted” over 50 families from neighboring Ft. Stewart. Since that time, participation is primarily by word of mouth, shared among military personnel. A TASTE OF HILTON HEAD • SUMMER 2010 • 67


“We have just wrapped up Phase 3, and will begin Phase 4 in September of this worthy project,” Dr. Evans said. “We anticipate being able to accommodate over 450 military families through May 2010. “We have 9 short term management companies that have provided us with owners who have donated their properties for use during the off season,” Evans said. “My wife Mia and I continue to organize other partnerships on the island, working with restaurants, stores, and recreational facilities, to be able to offer something special for the soldiers and their families.” Although there is minimal to no cost for the military families, Operation R&R still has expenses that must be met. There are cleaning charges for use of the villas and there are costs involved with providing grocery gift cards and certificates for recreation for the families during their stay. “Piggly Wiggly in Shelter Cove and Food Lion on Palmetto Bay have been most generous in matching whatever we provide them for grocery expenses for the families,” Dr. Evans said. In addition, Operation R&R has received a number of grants from the Heritage Classic Foundation and from the Long Cove Club Community Endowment Fund. “Both have been very supportive,” Dr. Evans said. “The first year we were in operation, most of the greeters were Long Cove residents.” Two of the main corporate sponsors are Hargray and BB&T Carswell. Hargray has been financially supportive through their Caring Coins Program, in which participants elect to donate. “They provide us about $6,000 a year,” Grant said. 68 • A TASTE OF HILTON HEAD • SUMMER 2010

Another major corporate sponsor is BB&T Carswell Insurance. They have been supportive both financially and through employees volunteering their time as Greeters. In order to welcome each solder’s family upon arrival and to be certain that they get to their Hilton Head Island vacation destination without difficulty, Operation R&R assigns a Greeter for each family. Over 200 greeters on the island are the contact persons for the visiting families during their stay. Sandy Crovo, long time island resident and Regional Accounting Manager of BB&T Carswell Insurance said, “Choosing Operation R&R as our BB&T Lighthouse Project has been a wonderfully warm, rewarding and proud experience for all of us.” It is not uncommon to hear in their lunchroom or around the office, according to Crovo, one of them sharing a story about ‘my soldier and his family.’ “For each of our families, we have met and escorted them to their accommodations and remained available for suggestions or directions throughout their stay. In addition, each family is provided with home baked goodies upon their arrival.” BB&T Carswell’s creative crew designed and decorated their award winning Operation R&R Lighthouse, which won an additional $5000, from BB&T, to be added to the previously donated funds.

“It has been a pleasure to give back to our community and our country,” Crovo added. Military families are asked to write thank-you notes to the owners who have provided their properties. One military recipient said, “We had a very memorable time! My husband was deployed to Afghanistan the past two Thanksgivings and Christmas’s, so to have my family all together in such a beautiful place and at no cost to us was wonderful! Thank you again for what you have done for our family!” Another recipient wrote, “This was a vacation that will stay in our memories for years to come. As my husband prepares to head back overseas for another deployment, it is comforting to know that he will take the memories of our week in Hilton Head with him.” “The time spent as a family on HHI during my husband’s 18 days of leave was magical! Enduring these 15 months apart is made easier because of the generous hearts of those who understand, and we can’t thank you enough. The fact that you are out there to recognize us is so humbling and flattering,” wrote another participant. Who is eligible? Any military person who has served in Iraq or Afghanistan within 1 year of the request, and their immediate family are eligible to participate in the vacation. He or she must be married, with their partner participating in the vacation. In addition, they must be stationed at Hunter Army Airfield, Fort Stewart, or the Marine Air Base at Beaufort. Captain Woody’s opened in Bluffton on July 20 of 2009. Instituting their second location wasn’t without its risks or challenges, but that’s what the things worth doing in life are always full of. As the restaurant turns one year-old this summer, Captain Woody’s changes by not changing at all. The focus is always where it has been: their customers. feels like you’re going to a cookout over at your friends house. Of course the food is great and the service is wonderful, but the thing that really stands out when you walk in to Woody’s is that you feel like you’re welcome there. Practically everyone can relate to that moment when you walk into a house party and everybody turns to see you at the door. Sometimes those looks can feel really

odd, even uncomfortable. Well, at Woody’s, imagine everybody seeing you walk in that same door and smile at you. Everybody. At Woody’s you feel like you… belong. At least that’s how I’ve always felt. Captain Woody’s in Bluffton is a brand new two-story building on 17 State of Mind Street in the Calhoun Street Promenade. They have tons of


outside seating, an outdoor bar upstairs with a full bar-menu (which you can rent out for lunches and parties) and the usual: smiling faces serving outstanding seafood and landfood. But, “It’s a whole new world out here,” says Bluffton Woody’s General Manager, Lauren Toombs, who spent quite a few years at Woody’s on Hilton Head Island learning the Woody’s Way. Her Australian accent blends with a southern drawl to form the most entertaining “ya’all’s” and “fixin’s” you’ve ever heard. “We’re overly accommodating out here because we’re new. We want people to come back. We understand we’re not in Hilton Head anymore and we want to become a part of Bluffton and become a part of our guest’s lives.” So, is Captain Woody’s in Bluffton out to prove something? In my opinion, no. That has the ring of an ego to it. I believe the people at Captain Woody’s want to be great at what they do because they truly enjoy what they do. That’s the

secret to their success: they like people and they like making people happy. It has nothing to do with ego and everything to do with customer service. “Every day is a new day for us out here,” says Toombs. “We have nothing to fall back on.” This has allowed the flexible character of the people that operate Captain Woody’s to shine. Adaptation is a strength and it has continually made their customers lives more and more comfortable. They added on awning outside in the summer to keep the rain off their customers heads. They added flaps to the outside in the winter to keep their customers warm. They get in locally caught fish as often as they can. They do brunches on Sunday from 11 a.m. to 2 p.m. They run a lot of fresh fish specials that change every night. Entertainers play music on Wednesday, Thursday, Saturday and Sunday. “It’s all acoustic,” says Toombs, “and we do it during our happy hour.” Happy Hour is 4 to 7 p.m. everyday. This adaptation and focus on the

customer extends to every facet of their enterprise. The folks at Woody’s are constantly involving themselves in all sorts of local festivals and constantly creating new parties to bring the community together. “To be out here in Bluffton we are really trying to be part of the community,” says Lauren. “We’re trying to involve ourselves and earn the trust of the people here. I love hearing the good about what we’re doing, but I also want to hear the bad. That way we can improve. I try to get around to all the tables here and make them as comfortable as I possibly can.” Sure, Captain Woody’s is here to entertain, but they’re also here to create a place where their guests feel not just welcome, but at home. Bluffton is a charming, small town with antique shops, art galleries, historic antebellum homes and local eateries. Nestled under live oak trees draped with Spanish moss, Old Town Bluffton exudes southern charm with its quaint shops, art galleries and historic buildings. Locals know the Town of Bluffton as a “state of mind,” with its quirky shops and a tight-knit community. There is even a majestic, picture-perfect May River as the backdrop. Bluffton is simple, yet eclectic, relaxing, yet lively, and has a southern charm unfound in most places. The first inhabitants in the Bluffton 78 • A TASTE OF HILTON HEAD • SUMMER 2010

area were Yemassee Indians with a population of over 1200 in ten surrounding locations. Historic Old Town Bluffton emerged in the early 1800s in small dwellings atop high river bluffs overlooking the May River. The area was popular with plantation owners who could escape the heat at their summer homes on the bluffs of the May River, where gentle breezes cooled the air and kept mosquitoes at bay. Old Town Bluffton seems to be frozen in time with its historic buildings, a church that was spared by the Federal troops, and quaint shops. You don’t want

to miss historic Bluffton near the May River for some of the most unique shopping and dining in this area. It’s all blended with colorful and creative art galleries, history up and down local streets, and dining for lunch and dinner in charming settings. The present one-square-mile National Historic District features eight antebellum buildings, including the Historic Heyward House, located at 70 Boundry Street in the center of the Historic District. The Heyward House was built in 1841, and was a summer home for a local plantation owner. It


offers an example of the early Carolina farmhouse style. The Heyward House is the only house museum in southern Beaufort County which is open to the public. Enjoy docent guided tours of this historic home. Along the banks of the May River, the Bluffton Oyster Company is South Carolina’s oldest continuous oyster shucking facility. It has remained a family-run operation since 1899. All oysters are opened and shucked by hand. The Bluffton Oyster Company sells fresh, local oysters, clams, mussels, shrimp, scallops, fish filets, soft shell crabs and live blue crabs. When Union forces occupying Hilton Head shelled and burned Bluffton in 1863, The Church of the Cross was one of 17 structures to escape destruction. The Church is situated on the banks of the May River and is open for touring. In addition to its history, Bluffton offers charming views and an up-and-

coming downtown area that is pulsating with art, restaurants, history tours and more. The heartbeat of old Bluffton is Calhoun Street, home to the third-Friday block parties. There are numerous art galleries, including Preston Pottery, Old Town Vintage Posters, Pluff Mudd Art, Maye River Gallery, The Filling Station, Society of Bluffton Artists Gallery, and shops, including Hodge Podge, Gigi’s, The Complete Home, Sassy Girl, and Eggs n’Tricities, to name a few. The new Calhoun Street Promenade

is an exciting addition to the historic district. This new area features local favorites, including the new Captain Woody’s restaurant, well-known among locals for their grouper melt sandwich. Bluffton affords unlimited activities for residents and visitors alike, from perusing the local galleries, visiting the Farmer’s Market, to boating on the May River. If you don’t have a boat, find a friend who does; pack up your cooler and head out to the sandbar on the May River. Otherwise known as the “Redneck Riviera,” this strip of sand that appears when the tide goes out, is a Lowcountry experience not to be missed. The Bluffton Old Town Merchant Society (OTMS) warmly encourages visitors to come and spend an afternoon or a day discovering historic Bluffton. Laura Silberman, Secretary and Board Member said that they are busy trying to target events that entertain and draw visitors to Bluffton. “Art has been the

catalyst to draw more people and more businesses to the area.” Jacob Preston, also known as Bluffton’s tallest potter, was a pioneer in the establishment of Bluffton as a great place to visit in this area. His studio is located at 10 Church Street and should not be missed. “If you haven’t been to visit Old Town Bluffton recently,” local clay artist and OTMS board member Laura Silberman said, “you’re missing out on what our wonderful, eclectic community has grown into.” Merchant happenings typically occur on the third Friday of each month. In the past they have been called “Third Fridays”, but they will be different this year. Lisa Cappano, Chairperson of the Events Committee of OTMS said, “The special events we put together for visitors aim to capture the best of Bluffton and all we have to offer visitors and residents in the area. Our arts, restaurants and shops have drawn people to Old Town on a daily basis, so we like to put together

some unique events for the evenings.” Mary O’Neill, a Farmer’s Market and OTMS Board member, announced that the Bluffton Farmers Market will be bigger and better this year with more vendors and extended hours. It is held every Thursday between 2 and 7 pm on Calhoun Street in Old Town Bluffton. “The extended hours provide more time for people to drop by in the early evening, shop, sample some of the goodies, and enjoy visiting with other locals. Stick around and enjoy the entertainment, which varies each week.” On the evening of Friday, June 18, there will be a street dance with a live performance by an area band on Calhoun street in the heart of Old Town Bluffton. Refreshments will be available and visitors of all ages are invited to dance the night away at this festive street party. During July, The Art Galleries in Old Town Bluffton will sponsor a “People’s Choice Awards” event throughout the art venues in town.

Visitors will be encouraged to look at art throughout the galleries and vote on their favorites. Prizes will be awarded to the winners in several artistic categories. In August, a BBQ and Blues event will take place in Old Town Bluffton with invited BBQ eateries offering samples for everyone to enjoy! Local Blues music will round out the evening’s entertainment.
