PUBLISHER’S NOTE Do you remember what summer was like when you were younger? I’m sure there are many different versions of how people used to spend their summer vacation, but I am quite sure that there are a lot of similarities in those stories. For example, was there ever a better feeling than walking out of school on that last day of the year? Was there ever a better day than that first day of summer break? No more waking up early, no more sitting in class all day and no more homework. Hello sunshine and goodbye science. Summer also meant warm weather, a time for shorts, swimsuits, sandals or no shoes at all. I was in pure heaven during the summer. Where I grew up, kids would wake up and jump on their bikes, dogs running loose behind them, and head to one of many destinations. All day was a perfect mixture of sports, swimming, exploring and freedom. Nighttime was equally satisfying. After a full day, dinner was just a stop gap before heading back out for one more game of baseball, kick the can, chasing lightening bugs or camping out in the backyard. Those were the simple times and I would argue the best times of my life. What I wouldn’t give to be a kid again, even just for one more summer. Getting up in years, the summers don’t quite have the same meaning for me as when I was younger, but living here on Hilton Head sure is a nice alternative. Where I grew up, the grill was only stoked up in the summer and it seems the flowers only bloomed for a few months too. Alternatively, the grass is always green here and the beach always beckons. The Island is our playground and we are blessed with its beauty. Not only do we get to enjoy the setting of a twelve month summer vacation, we also get to enjoy an active community where there is always something to do. Our parks are busy with festivals and concerts, celebrating cultures and cuisine and, of course, summer. There is no lack of sporting opportunities given our beaches, bountiful bike trails, golf and tennis facilities, and waterways. We have restaurants galore that are eagerly looking forward to nourishing us and refreshing us with libations. Hilton Head is, essentially, a year-round haven for vacationers as well as Islanders. So while those of us who live here may have to work on occasion, we still know paradise is out our back door. It’s also nice to know that the exhilarating feeling of childhood freedom on summer vacation is ours for the taking when we have the time. I may not be a kid anymore (although my friends may argue that point), but I sure look forward to those days this summer when I can set responsibilities aside and play like a kid, laugh like a kid, and be free like a kid. When I walked into Chow Daddy's to meet with owners Price and Karen Beall, they were going from table to table greeting by name their friends and customers. It is not a big stretch to recognize that locals know the owners and know that dining at one of their spots will ring up a quality experience from the food to the ambiance to the service. Keeping in line with their other restaurants, Chow Daddy’s does not disappoint as their newest venture, serving up not only delicious healthy food, but doing so in a fun way to enhance the collective experience. Having only just celebrated its first birthday, Chow Daddy's has already become a favorite among locals and is quickly finding itself a part of visitor's restaurant radar. The eclectic menu is a crown with many jewels, each one more healthy and tasty than the next. The restaurant's early success should not come as a surprise given that Price and Karen have celebrated 33 years of success with Truffles in Sea Pines and their partner, Price's brother Sandy, is the original founder and CEO of the Ruby Tuesday chain. With Chow Daddy's, the Bealls have found an opportunity to be creative and have fun with their food and menu. "We were looking for fun and casual and good 'chow'. We wanted to do something completely different," said Karen. "Truffles is great and we love that we are in our 33rd year, but we only make minimal changes to the menu. We can tweak it here and there, but that is about it because people have their favorites," said Price. Bottom line is that Bealls admittedly love food –they love to cook it and eat it and experiment with it and now they have their perfect outlet to share their favorite recipes. In order to come up with the ideal menu, the Bealls spent countless hours and evenings doing taste tests. "We wanted to make simple, healthy food. Even our "bad" food is good," said Price. They put together numerous full menus before they settled on the winning ticket and they continue to alter the menu, catering to customer feedback and a constant eye toward trying new ideas. The entire menu at Chow Daddy's appeals to everyone across the spectrum from vegan to carnivore. The chicken is cage free and organic and both the pork and chicken are slow roasted over pure hardwood charcoal and cooked in Big Green Eggs. The burgers are made from prime rib and ground fresh daily while the tilapia is from deep water open reservoir and pure grain fed. Even the fried chicken is "healthier" as it is smoked first before being flash fried so it is crunchy and not greasy. Chow Daddy's strives to serve ingredients that have not been genetically modified down to the oil for the fryer. All of the vegetables are oven roasted with a hint of extra virgin olive oil and their breads are whole grain and baked locally on a daily basis. It is not just the menu that follows the new and fun theme, but also the ambiance and the manner of cooking. The furnishings at Chow Daddy’s are earthy and organic and many of the decorating ideas came from Price and Karen, their daughter, Grace and Price’s brother Sandy. All


of the design elements utilize recycled materials and thus all building materials, as well as chairs and tables, have been used somewhere else. Unique to the entire state of South Carolina, Chow Daddy’s cooks their meat in Big Green Eggs which are like large convection ovens that are fueled by charcoal and hardwood. By controlling the oxygen flow, they control the cooking temperature which can deviate some 520 degrees between 700 and 180. Adding to their successful formula, they note, is the many young people that work for them. “They are the ones that make the experience for our diners. If we are not represented well, then we are nothing,” said Price. Their menu boasts of buns, bowls, and tacos, but that does not represent the scope of choices. Starters include things like pimento cheese, white bean and kale soup, and avocado toast that is heavenly and is like eating a guacamole mousse. All the salads are super healthy and yummy like the arugula with mango and avocado and the kale and quinoa with almonds, brussels sprouts and dried cranberries. Main course favorites are the ½ pound burger (bring your appetite for this one), blackened fish tacos, and fried chicken. On the eclectic side, there is a Mushroom Toast & Organic Egg that is served on whole grain organic bread and is layered with ricotta, arugula, and topped with a fried egg. Chow Daddy's has also become a favorite local watering hole as the drink menu is as eclectic as the food. The hardwood bar beckons you when you enter the restaurant and is back-dropped with many eye catching bottles of liquors and liqueurs. The most sought after drinks are made with Price’s home-made vanilla rum like the martini and rum and coke. Their signature cocktail is a Watermelon Mojito, perfect for cooling off on a summer day. There are a number of domestic and craft beers on tap as well as on ice. The wine menu includes affordable choices of all the major grape varietals and I do not think that I would be overstepping my bounds to say that they give the biggest pour on the Island. There are daily drink specials and Happy Hour runs daily from 4 to 7. The dessert menu is simple but delicious, inspired by Eliza Beall’s chocolate chip cookie recipe which her mother coined as “out of this world”. 'Sweet tooths' can choose between two ice cream sandwiches – chocolate chip cookie with vanilla and a peanut butter cookie with chocolate ice cream. Chow Daddy’s is located at 14B Executive Park Road, just off Pope Avenue and is open for lunch and dinner and serves a late night menu until midnight on Friday and Saturday nights. Due to demand off Island, there is now a brand new Chow Daddy’s at the Belfair Towne Village in Bluffton where there is also a second Truffles. KURAMA

The Tradition Continues

It is possible to stick to tradition while showing off a few new tricks. And they’re proving that at Kurama. BY BARRY KAUFMAN

There’s a Japanese word, Dentou, which means tradition. Actually, there are several Japanese words that mean tradition, depending on how you’re referring to it. In Japan, tradition and language are nuanced things, implying permanence while allowing plenty of wiggle room for change. Here on Hilton Head Island we don’t have many traditions; we haven’t been around long enough to develop many. But one of the few traditions we hold has to be that regular trip to Kurama for dinner and a show. (And copious amounts of the famous “Yummy Yummy sauce”). Few businesses have been able to capture the devotion of diners like Kurama has, and it’s not hard to see why. You can get a meal anywhere on this island, and your odds of being disappointed are slim to none. But a meal where your chef prepares your dinner as part of a whirlwind of dazzling spatula flips and flourishes, gaspinducing knife tricks and culinary acrobatics? A meal where that cookedto-perfection shrimp is served to you 14

via immaculately aimed toss right into your mouth from two feet away? That’s something you come back for, time and time again (and again, if you keep missing the catch). It’s a tradition, and like the Japanese Dentou, it’s a thing of permanence. On an island that has seen restaurant dynasties rise and fall, Kurama has held its position as an icon. And like the Japanese language, it’s still left plenty of room to interpret what tradition means. Tom Shimada and Shigeki Yamada have owned Kurama for three years, taking over for the previous owners who spent nearly two decades building the restaurant into what it is. Before we can talk about what they changed, let’s talk about what they didn’t. “The hibachi side is pretty close to what everyone knows, which is a good thing,” said Shimada. “People know this as a place for families and big groups and so on. It’s part of the vacation for a lot of visitors.” That’s a smart nod to tradition, and one perfectly complemented by

expansion on the other famous side of Kurama: the sushi bar. If the hibachi side is what visitors know of Kurama, the sushi side is where the locals call home (although there are no strict divisions here – you’re just as likely to see locals at the teppanyaki tables and visitors eyeing the sushi bar). The old bar, where hot Sake flowed for the pre-dinner warm-up, has been replaced with a wide display of delectable sushi rolls. The old curtained dividers are now gone, giving local sushi lovers an uninterrupted view of the array of yellow fin tuna and Spanish mackerel that will make up their next roll. They’ve also let true sushi fanatics in on the subtle art of the spring roll, offering up hour-long sushi classes Thursdays through Sundays. Pint-size sushi fans can even try their hands at the art on Thursdays with a kid-friendly class. That’s not to say that the updates are all on the sushi side of the restaurant. The hibachi side has been – pardon the pun – heating up like the flames from


the “Japanese volcano” trick made famous by its tables. New head hibachi chef John McGann whose mother is Japanese, has been cooking teppanyaki for 17 years, carrying on a tradition passed down from his uncle, and bringing a new bit of flair to the time-honored techniques at Kurama. “This place has a lot of nostalgia with how long it’s been here,” he said. “You’ll see a lot of people who come in every year. “ McGann is respectful of that repeat business, even as he helps forge new techniques and tricks in the ever-expanding arsenal of Kurama’s famous performing chefs. “You can always bring out best of each personality. If you’re a conversationalist, you use that. If you’re a comedian, you use that. If you’re friendly, you use that. That’s what we have to find in each chef,” he said. “I’ll be teaching chefs a few new tricks… It’s not a standard performance. You can have a set routine, but we encourage chefs to really get to know guests when they’re on, not just doing a set amount of tricks and leaving.” McGann shows that he understands what has made Kurama such an enduring attraction for visitors year after year. It’s not the show you had last year, it’s the show you’re watching right now, the way your chef is preparing something incredibly delicious while effortlessly splitting his focus between a knife trick that demands the utmost precision and a string of banter that keeps guests entertained through the entire meal. “It’s part of this restaurant’s spirit,” McGann explained. That’s not to say that the performance is the only art on display at Kurama’s tables. While the acrobatics and jokes make the meal memorable, the meal is still the star attraction. Jessica Mendez, the first female hibachi chef in Kurama history (speaking of tweaking tradition) knows that before the tricks comes the taste. If you ask her about the training, which Yamada says takes at least four months just to get a good chef off the ground, she doesn’t respond by talking about perfecting her shrimp toss or getting the perfect smoke ring on a “Japanese Choo Choo Train.” She talks about the food. “The training is fun... You cook; they let you eat your own food so you know to add this to add that. That’s what I miss about training; the free food,” she said with a laugh. In fact, when asked about the hardest trick to learn during her rigorous training, Mendez doesn’t talk about hand-eye coordination, but about knowing each table’s hot spots to deliver that perfectly cooked steak. “Your food has to be good, and you have to be interactive,” she said. “But you can tell if they came for the show, and you go all out.” It’s a tradition at Kurama – a delicate balance between the sophisticated tranquility of the sushi bar and the boisterous circus of the hibachi side – and it’s a tradition that Tom Shimada and Shigeki Yamada have proven they know very well. In the summer of 2014 the owners of the Charbar Company in Park Plaza, opened Holy Tequila, a taco and tequila restaurant a few doors away. Not afraid to take calculated risks, Executive Chef Charles Pejeau has introduced new standards within his industry for Mexican food, along with CEO Nick Bergelt and a silent partner. Holy Tequila's focus is serving unique Modern Mexican Cuisine, featuring gourmet tacos and more than 40 varieties of premium tequila. Pejeau moved to Hilton Head when he was 11 and attended Christian Academy and Hilton Head High. Not from a family of restaurant owners and chefs, Pejeau confessed he got into culinary because he hated school. He attended some college classes, but admitted it was not his thing. He graduated from Florida Culinary Institute, working full time while in school. Enhancing his gastronomic skills at esteemed restaurants in Palm Beach, Florida, and as sous chef in Hilton Head at Robert Irvine’s E.A.T., and at the Inn at Palmetto Bluff before joining Charbar in 2012, he credits his culinary experience more than his degree for his creativity and success. Charbar CEO Nick Bergelt recognized Chef Pejeau for updating the basic burger into something fresh and exciting. They nailed the perfect burger at Charbar, but how did they make the spring from burgers to tacos? It certainly wasn’t an overnight brainstorm, they agreed. 22

The owners took a road trip to Mexico, where they travelled the streets and sampled tacos from carts, trucks, and restaurants recommended by locals. They found the tacos to be very simple – with meat, cilantro, onions, and various salsas that could be added. Rather than copy what they found, Pejeau said they decided that they would open a restaurant and serve tacos with a noticeable gringo twist. “We felt there was an opportunity to use the taco to introduce flavors not directly associated with the classic Mexican taco.” The menu at Holy Tequila is creative, to say the least. Two of the most popular items on the menu are the

Roasted Veggie Taco, with roasted Brussel sprouts, peanuts, chili aioli and pumpkin salsa, and the Pork Belly Pastor Taco, made of grilled pork belly, habanero pineapple salsa, cilantro, onion and Cotija cheese. Another favorite is the Fried Chicken Taco, with fried chicken, spicy pimento cheese, collards, and boiled peanuts. In addition, they serve salads, Burritos, Quesadillas, and Tortas. According to Pejeau, “We make most of our menu items from scratch, including our corn and flour tortillas, homemade salsas, and guacamole.” The creativity it allows him is what Pejeau likes most about being Executive Chef at Holy Tequila. “I love what I do, and it’s never a burden to come to work. The hardest part is balancing long hours at work and quality time with family. Chef Pejeau works alongside Chef De Cuisine Jorge Covarrubias in the Holy Tequila Kitchen. Jorge was raised in Mexico and that culinary influence creates a dynamic duo as the Chef’s collaborate, yielding unique flavor profiles while caputuring the most important authentic elements of Mexican cuisine. “Our customer feedback has been overwhelmingly positive so, we’ve seen the business grow a lot in our first year at Holy Tequila and are focusing on getting better every day.” Holy Tequila is located at 33 Office Park Road, Suite 228, and their phone number is 843-681-TACO (8226).

The newly formed Comedy Club of Hilton Head is going all out to keep you entertained this summer with an impressive line-up of comedians that will keep you laughing and a mentalist that will blow your socks off. Located upstairs at the Pelican Point Restaurant on the water at Shelter Cove Marina, the Comedy Club promises to keep you on the edge of your seats 7 days a week, making them a great entertainment option. The Stephenson family, owners of Pelican’s Point, changed the name of the restaurant from Kingfisher’s and also changed a whole lot more. They went with a new theme, manager, menu, as well as a revamped interior. Upstairs at the Comedy Club, in what is now called the Pelican’s Roost, they remodeled with the latest in LED lighting and put in a new stage and furniture to comfortably seat 90. As the only true comedy club between Jacksonville and Myrtle Beach, The Comedy Club of Hilton Head is committed to bringing in different comedy acts every week. “The key difference with this new club is that we will have a great variety of comics,” explained partner Greg Vittetoe. “We wanted to move the club in a different 26

direction and get back to traditional comedy,” he explained. The club used to go by a different name and was run by someone independent from the restaurant. Now the Pelican Point owners have taken over and are “bringing back the locals.” All of their comic talent is big names in the business – people that have been winning laughs for years on The Tonight Show, Jimmy Kimmel, and Comedy Central. “We are trying to keep everything PG 13- PG 17 depending on the Stand up Comic and as family friendly as possible with an understanding that the business is what it is,” said Greg. Their resident mentalist, Bill Gladwell, will perform Sundays through Tuesdays. His show will have you shaking your head as he can tell you what you are thinking and who gave you your first kiss. Bill’s shows are rated PG and involve over twenty audience members who are pulled on stage during the evening for various “demonstrations” or “tricks” or whatever you may call them. Bill admits that what he does is a ‘genre of magic’. “I will say there is a method to it. It is not a gift,” said Bill. How can he possibly know that your dog’s name is Mischief? “It’s based on information I

collect,” he says. All I can tell you, is that you would have to see it to believe it and don’t be surprised if your jaw is on the floor throughout the show. The Comedy Club has soft drinks, wine, beer and mixed drinks as well as appetizers and sandwiches. Pelican’s Point restaurant and the Comedy Club show offer a 10% discount on both when purchased for the same evening. Meet Maria Muhal, a longtime resident of Hilton Head Island and one of the friendly faces at Palmetto Bay Sunrise Cafe. Maria has a passion for life, and her hard work ethic and enthusiasm is contagious. Born and raised in Brighton, Michigan, she started working in the hospitality industry when she was young because the money is good and she loves serving people. Maria moved to Hilton Head in 1989 with a friend to work in a restaurant on the island. The friend returned to Michigan, but Maria stayed. She was already too connected to the island. She 34

worked since the first day that Sunrise Café opened. Having worked with the restaurant’s owners, Paul and Leslie Stewart at other restaurants, she knew it would be a good fit and opportunity. She had worked at Reilley’s and at Stripes before joining them to open the Sunrise Cafe. For more than 13 years, the Sunrise Café has had the pleasure of serving breakfast and lunch to Hilton Head Island locals and returning visitors, now 7 days a week. The servers all help each other, along with the owners, with a sense of humor and keen observance of

the need for a refill of coffee or other drinks, to clear the table, or provide a check. It’s a close-knit group of employees at Sunrise Café. Their “club” of female servers is unbreakable. “My fellow servers are my sisters – some of the people I have worked with since the restaurant opened, and some at other restaurants prior to Sunrise’s opening,” Maria said. “We work very hard and we make great money. This restaurant caters to locals year round, and we have so many return guests because we do what it takes to make their


experience a great one.” Maria’s forthright delivery and humor tells me that you’ll never have to guess where you stand with her. But truly, it is her actions that speak louder than her words. “We bend over backwards to get customers what they want. If we can do it, we do it.” She recently had a customer ask for a 3 egg omelet – using only 1 of the 3 yolks in the omelet. “I responded that I might have to date one of the line cooks to get this done, but I would. He laughed so hard and said that this is why he always comes back, because we truly do what it takes to make our customers happy. “ “To be successful in this business, you have to like your job,” Maria said. “You have to like people and love taking care of them. If not, the hospitality business is not for you. We’ve all gone through stints of being disgruntled in the industry, but I came to the conclusion early on that life is too short to be unhappy with what you do.” “We have each other’s backs, both at

and outside the restaurant. Asked what she values most in friends and coworkers, Maria replied that at any given time, one or all will come to her rescue. “I guess you would call that loyalty,” she said. All the servers step up and help with others’ tables, and that’s unusual for most servers who only work with their own assigned tables. Many of their customers say that Hilton Head is their second home because they enjoy coming to Sunrise Café for delicious food and the companionship that Maria and the other friendly servers consistently provide. A Tantalizing Dish is the name of the creative catering business Maria began in 2005 and since then has been preparing delicious and exquisitely presented fare for everything from cocktail and dinner parties to showers, business affairs, and weddings. Her first catering gig was for a reception at the John Stobart Gallery in Harbour Town. She even catered for a group traveling to Musha Cay in the Bahamas in 2007.

Some of the servers at Sunrise Café help her with her catering business. “The occasion doesn’t have to be fancy, but the food does have to be good,” she said. Maria will tailor a menu of all house-made selections to each client's needs and budget. What does it take to be successful in the catering business? “I make most of the dishes from scratch, using the freshest ingredients. Most of my business promotion is word-ofmouth, so each event has to be superb,” she said. Maria’s dad recently moved to Sun City. From a family with 6 children, 5 girls and 1 boy, she is glad that her dad chose to live close to her. Her siblings are scattered around the United States – from California to Michigan to North Carolina to Texas. Maria Muhal is a unique woman, and one that anyone would be privileged to have in their life. She is not only a very hard worker, and a loyal friend, but she is also fun to be around, even if you’re meeting her for the first time!

HARD TO FIND, BUT WORTH IT! “So, where do the locals go?” This question is asked countless times a day by visitors looking for the best places to eat, drink and be merry on Hilton Head. The name is the same but the rules have changed and a new location on Cardinal Road has been added. The Hilton Head Brewing Company, the Island’s first brewery and cannery, celebrated its Grand Opening in March and is boasting a full array of brews to choose in their tap room, as well as packaged product to take home. Don’t get confused, but this is not a bar and it is not a restaurant but it serves beer and food. It is called a Brewery and it is different than anything Hilton Head has ever seen. If you are a beer lover and have been paying attention, you have noticed that breweries are popping up all over South Carolina. What prompted this is that the Stone Bill was passed last year, allowing 44

breweries to expand from just serving samples of their beers to opening a tap room and offering food services. In addition, breweries can now sell their packaged product. The Hilton Head Brewing Company is doing all of the

above, brewing and serving up 12 beers, lock, stock and of course barrel. Two years ago, Juan Brantley, owner since 2006 of the Hilton Head Brewing Company restaurant on Greenwood drive, teamed up with John Rybicki, and they revamped and rebuilt the south end brewery over the course of a year with new equipment and a new line-up of A-grade quality beers. When the Stone Bill passed, the team saw their opportunity to open a true brewery and found a unique niche on the Island. “The Stone Bill changed everything and we saw our chance to do something different. It is what will separate us big time,” said John. “We want to pull the north Island in with the south to our place in the middle and teach the whole


community about what the idea of a brewery is.” The Hilton Head Brewing Company’s 12 beers on tap all have original recipes. There are a couple of lagers but primarily ale style beers like IPA’s (India Pale Ales). They will offer some high gravity beers which are 9 to 11% alcohol and will “serve them proportionally.” Packaged for retail sale will be their two most popular beers, the Session IPA at 4.9% alcohol and the Tropical Lager at 4.5%. Brewing takes place in 9 tanks that they have set up in the back and the process is interesting to follow. An abbreviated explanation is as follows: It starts with 200 gallons of water which is heated and transferred to a mash tun. There it is mixed with grain and converted to sugar before it goes through a lengthy fermentation process. The final step is carbonation before packaging or transfer into kegs. There are numerous changes of temperature involved, ingredients added, and many transfers between tanks. The entire process takes between 17 and 30 days. Tours of the brewery are available by appointment for $10 and will include a peek into the canning and packaging methods. The food at the brewery is simple “bar food” and includes paninis, hot dogs, and nachos. The owners plan on holding monthly “beer dinners” where they will bring in local chefs that will pair their specialties with the brews. They also will do private parties and hope to host events for local clubs and artists where individuals and groups can tout their cause. “We want to help the local artists out. It is a win-win for both of us and what we do is artistic too,” explained John. The tap room was constructed from scratch, with Juan and John putting in much of the heavy lifting. The bar areas has rustic stacked stones with the theme also picked up around the taps themselves. There is bar seating as well as high top tables and outdoor seating. On the side wall is a chalkboard listing beer choices and there is a retail area with items for purchase like tshirts. The Hilton Head Brewing Company is located mid Island off Matthew’s Drive at 1 Cardinal Court, Suite 13 and is open Sunday and weekdays during specified hours and all day Saturdays from 11 to 8. The packaged beer, which comes in 6 and 24 packs of cans, makes a great gift idea for visitors to take a piece of Hilton Head home that is not in the form of a seashell or sunburn. Summer is a time for celebration. The world seems lighter and the fates seem brighter. The weather is beautiful and it’s healthy to be outside and soak up some vitamin D. Another reason to celebrate is that it is the season of fresh fruit and vitamin C when we can feast on nature’s abundance to our heart’s and stomach’s content, all with the satisfaction that we have done something healthy for our body. While a bowl of fresh fruit is as satisfying as just about anything on a hot summer day, if you are looking for liquid quenchers, you cannot beat the heat in a better way than consuming your daily allowance through a straw and in a cocktail glass. Sweet fresh fruit is the perfect accompaniment to almost every type of cocktail and ask any mixologist and he will tell you that in terms of taste, a colorful fresh fruit injection will always amp up the flavor. In a society where exercise and eating healthy are staples of good health, eating (and in this case drinking) fresh fruit is a guilt-free pleasure. The beauty of fruit is that it is so tasty and versatile you can detox with it by day and retox by night. Let’s discuss, for a minute, why consuming fresh fruit is not only going to recharge your batteries and taste delicious, but the health benefits are through the roof. First of all, fruits provide nutrients vital for wellness and maintenance of your body. Most fruits are naturally low in fat, sodium, and calories and they do not have cholesterol. Then you can add the benefits of nutrients like potassium, fiber, vitamin C, and folate (folic acid). Potassium rich fruits like bananas and melons help maintain healthy blood pressure. Eating a diet rich in fruit, as well as vegetables, may reduce the risk for heart disease and may protect against certain types of cancer. By providing a significant dose of fiber to your diet, fruits can also aid in weight loss and make you feel fuller. One cup of raspberries, for example, has 8 grams of fiber. Fruits like blueberries are also a good source of antioxidants which can help lower blood pressure. Citrus fruits have the highest detoxifying power;

Oranges, tangerines, grapefruit, lemons, and limes can be eaten on their own or in combination with other fruits to cleanse the soul and detox before a night of retox. It is also worth talking about fresh whole fruits versus fruit juices. The wonderful world of cocktails would be sorely lacking without fruit juices, but the reality is that fresh fruit, and not the juice, is what makes your cocktail nutritious. Drinking fruit blends, whether you make your own or buy commercially processed ones, has the drawback of removing much of the fiber. If you rely on fruit juices to get your daily allowance of fruit, you are missing the boat big time. Not only do fruit juices lack in the variety of nutrients department, they also lack bulk which will not fill you up like the real thing. In addition, the lack of fiber in fruit juices can make the digestive system more sluggish and they contain a large amount of natural sugars which can be dangerous for people with blood sugar problems and can lead to weight gain. Drinking freshly blended fruit is not a new concept, but it is an ever-evolving one with new ways to blend and new flavor combinations to try. Blend it, muddle it, or leave it whole. Use strawberries, blueberries, raspberries, and blackberries. Try Bananas, peaches, kiwi, melon and cherries. The list goes on. No matter what fruit you fancy or whether you go with a smoothie to break your fast or a colada for a break from the sun, you can’t go wrong. I’m guessing that if we added up all the ice and fresh fruit that go into cocktails on any given summer day on Hilton Head, the figure would be staggering. The blenders behind bars on Hilton Head hum all summer long, by day and by night, mixing up mountains of fresh fruit to create that perfect umbrella drink. While our bartenders can surely make those frozen coladas and daiquiris in their sleep, this summer you should make a point to try a new fruit sensation at one of our watering holes. Jim Lisenby, of Pool Bar Jim’s fame, buys his fruit fresh every morning

and can have 18 blenders whirring on any given summer day while his customers can choose from a menu of over 1,000 frozen concoctions. Coco’s, the Salty Dog and Frosty Frog are also popular destinations for varieties on fruity and frozen. Another option is to put the blender aside and try muddling to make your next cocktail. Muddling, or essentially crushing, is a fairly new technique used by bartenders to extract the maximum flavor from ingredients such as fruit and herbs. By crushing ingredients with a few gentle twists of a muddler, flavorful aromas, juices, and oils are released. Muddling is often preferred over juicing because it adds dimension, depth, aroma, and more nutrients. Classic cocktails that are muddled include the Mojito (muddled mint leaves, lime juice, sugar syrup, rum, Angostura Bitter, and soda water) and the Old-Fashioned (muddled sugar and Angostura Bitter, bourbon, and soda water). Bartenders with a muddling expertise can create flavors that you have never experienced. Ask for a La Berceuse, which is a fun and unusual cocktail with Absinthe, tequila, and blue agave nectar that has muddled strawberries and fresh lemon juice. Aside from muddled and blender drinks, a popular new trend in cocktails is garnishing the drink with fresh fruit on top. It is kind of like adding whipped cream to your Irish Coffee. This summer, try a Caipirinha – it can be transformed into anything you want by changing the fruit. The Lemon, Lime, and Blue Caipirinha is perfect when blueberries are at their peak: Lemon, lime and sugar are muddled, before crushed ice and Leblon Cachaca is added with blueberries, lemon and lime floating on top. We are talking calories today, folks! When you are dialing in your nutrition habits, there are three things you can control: quality, quantity, and timing. Our focus in Part 1 was on the quality of your food, and today our focus is on quantity. We are going to drill down to some facts about calories, bust a myth or two, and take a pop quiz. What is a calorie, anyway? Most people say the word ‘calorie’ as if it’s a dirty little four-letter word. But it’s not! A calorie is simply a measure of heat energy. Taking in calories through food is the way that we are able to grow and thrive, able to build muscle and breath, we even need calories to be able to sleep at night. Without them we would cease to function. Let’s tackle two common myths about calories first. Myth 1: As long as I eat healthy foods I can eat as much as I want. Sorry, gang, this one just is not true. You can eat the cleanest, healthiest foods in the world but if you are eating too much of it you will weigh more than you want. Myth 2: All calories are created equal. Again, I wish this was true! But in fact the calories you get from highly processed foods cause a much different response in your body than the calories you get from whole foods. For example, calories from sugar and refined carbs rapidly convert in to glucose which triggers a domino effect of hormonal responses. One of these is an insulin response, which as you know is our fat storage hormone. We 50

have this response because our bodies need fat (to protect our organs, etc), but if we are generating this response all day long the end result is a body that stores more fat than needed. Now that we know the truth about how calories work, let’s test our knowledge. Which snack has 100 calories? 5 Hershey Dark Chocolate Kisses 22 pistachios ¼ of a plain bagel 1 cup of carrots, 2 tbsp of hummus 6 McDonald’s French Fries 14 Almonds ½ of medium apple + Babybel cheese All Of The Above If you guessed All Of The Above, you are correct. All of these snacks have 100 calories. So, review the list and reflect on not only what you would enjoy eating the most, but what would help you feel full the longest? Which snack packs the most nutrients? Choosing a veggie with hummus or a fruit with cheese will help keep you full for a longer time, give you vitamins and minerals that you need, and also gives you the mental satisfaction of having a variety of items in one snack.

Those are your winning choices! Secondarily, choosing the almonds or pistachios are also a good choice because you would stave off hunger for a long time. Choosing the candy or processed foods will leave you hungry, depleted, and likely craving other poor food choices. Steer clear of those options. INGREDIENTS

INSTRUCTIONS

1/2 pound of butter 1/2 pound of flour 4 oz. chopped onion 4 oz. chopped celery 4 oz. chopped carrots 1 bay leaf 1 teaspoon of thyme 1 cup of cooking sherry(cream or cooking) 1 qt. milk 1 qt. heavy cream 1 qt. water 3 Tablespoons clam or crab base 1 Tablespoon old bay A pinch of white pepper 1 pound of Crab meat

Melt butter and whisk in flour to make a roux. Set aside. Melt 2 Tablespoons butter and saute onions, celery, carrots, bay leaf, and thyme until soft. Add sherry. Cook for 5 minutes then blend in a food processor or with a stick blender. Place blended mixture in a large soup pot. Whisk in the rest of the ingredients and bring the soup to a boil. Whisk in the roux to thicken, then lower the heat. Remember to whisk well. Add 1 pound of claw meat (you could use any type) and mix it in. Makes 1 Gallon.

Daufuskie Island Rum Company distributes handcrafted rum to bars, restaurants, and package retailers throughout the Southeast. The micro distillery’s site serves as a destination attraction offering distillery tours, a tasting room, a retail store, and outdoor space for events. The distillery sits on 12 acres off Haig Point Road on Daufuskie Island, accessible only by boat. The company opened its doors several months ago and is already attracting visitors from far and wide. After just three months in operation, people had toured the facility from 38 different states and 7 countries. Although operations have only recently commenced, the buzz about Daufuskie Island Rum Company has been circulating through the local community and around the Low Country for months. The company’s owner Tony Chase came to Daufuskie Island and purchased a home in July 2012. A 35-year Kentucky resident and recently retired pharmacist in his mid50s, he wasn’t ready to stop working. The idea of starting a micro distillery on Daufuskie was born during conversations with a friend. Chase chose the micro distillery design to

create a destination attraction for visitors to Daufuskie Island. Chase fleetingly considered making bourbon, but rejected that idea after asserting that “bourbon ought to be made in my home state of Kentucky.” He settled on rum, a more tropical liquor. "Rum is an island drink and should be made on an island, so it just made sense." Chase ran with it from there and often had to pinch himself to be sure he wasn't dreaming.

From his education and experience, Chase knew what he needed to know about formulating and distilling. "Finally all that microbiology and organic chemistry I learned in my pharmacy education could be put to use," he joked. At full production, the company will produce around 150,000 bottles of rum each year. Each bottle is handsealed and the batch and bottle number handwritten on the label. Customers can learn the history of their rum -- the days it was fermented, distilled and bottled. "This tells people how handcrafted their individual bottle of rum is and all that goes in to it," Chase said. "There is both a science and an art to making rum. The science was part of my education, and the art is just trial and error. You have to keep trying until you find a good product. The response so far has been overwhelming, so I think we've done just that." Chase said he would consider the venture an enormous success if the company simply breaks even, with any profits gained as “icing on the cake.” “The micro distillery is very tour friendly,” said Chase. “We designed it


with both the practicality of producing rum in mind, but also to pique the interest level of those who want to take a tour.” Visitors are offered a tour of the micro-distillery and the chance to sample the rums - Silver Edition white rum, Spiced Rum and a Gold Edition, oak barrel-aged rum. The Gold Rum will be available for the first time during the Distillery’s Grand Opening festivities which will be on the Fourth of July. In addition to a production facility, the property features a 500 square foot porch with rocking chairs for visitors to sample rum while enjoying the view of a one-acre pond and the beautiful Lowcountry setting. Chase said the company may

expand in the future. There are even plans to grow sugar cane on site to replace the granulated sugar used now. “It isn’t enough to produce our entire product, but we’ll certainly be able to incorporate some locally grown sugar cane in our rum.” They use only materials and ingredients made in the United States. Not only will the tropical liquor be

available on the island, but Chase has relationships with South Carolina and Georgia distributors and is actively shipping to both. “There’s a huge interest in the company around here,” Chase said. “Demand for the product at bars, restaurants, and package liquor retailers throughout South Carolina and Georgia has been amazing.” The Daufuskie Island Rum Company distillery is open Wednesday through Saturday from 10-4. A Hot Time in the Old Town

This story hasn’t even begun, and already a bold claim has been made. It’s a bold claim, but one that few Blufftonians would argue. The Old Town Dispensary is the capital of Old Town Bluffton. Period. Its spacious courtyard is where every day well spent among the whispering live oaks must end. Its outdoor patio is where the greatest minds in town meet, and where the greatest debates of the day are resolved (and a few more are started). If a decision isn’t reached over an ice cold beer in the warm embrace of The Old Town Dispensary, that decision simply isn’t worth making. Times Square in New York City is considered the crossroads of the world. On New Year’s Eve every year, while the crossroads of the world drops a Swarovski Crystal ball, the Dispensary drops a crab pot, and all of Bluffton is in attendance. This, as far as Bluffton is concerned, is our crossroads of the world. Which is why all of Bluffton should be as excited about what’s coming next as Matt Jording is. Jording, co-owner of Old Town Dispensary along with legendary Bluffton developer Thomas Viljac, speaks of the new plans for the capital of Old Town Bluffton in breathless terms. What was once a single restaurant is now in the process of 84

becoming a full-fledged multi-sensory dining experience. There will be an allnew outdoor bar, eliminating the need (at last!) to remove oneself from the inimitable courtyard atmosphere to get another round in. Add to that a raw bar, serving that most Bluffton of delicacies, the oyster. As if that weren’t enough, there will even be an entirely new restaurant. It won’t necessarily be called the Sage Room, named after Jording’s famed restaurant on the island, but Jording did refer to it as “Sage Room-like.” “We’re going to basically create our own little town center right there,” said Jording. Were it just a new series of restaurants and additions, that would be enough to get excited about. But it’s the way in which they are being planned, maintaining a respect for the Dispensary’s role as the Agora of Bluffton, that is truly astounding. For one, each of these new offerings will all be linked by a series of outdoor decks that take full advantage of the picturesque cove behind the restaurant. If you’ve ever sat in the rear corner seat of the existing patio, you know that there’s a hell of a view tucked away back there. These new developments take that view and give it the treatment it deserves. “We are allowed to go five feet off center of creek. It’s going to overhang

that whole area so you’re going to be dining in like a Swiss Family Robinson jungle,” said Jording. “The decks are very intertwined in the trees. We’re keeping them all. It’s going to be really cool.” Those decks, Jording added, will now encircle the existing Old Town Dispensary building, creating outdoor dining like nothing that Bluffton has ever seen. And it’s not just the decks that will link this all new complex. The Old Town Dispensary experience may live under several roofs, but it will still deliver the singular Bluffton experience of a night on the town. “It will be linked with The Dispensary, so you can have some raw oysters at the raw bar, go have a fine dining dinner, come down to the Dispensary and listen to some music then pay for your entire tab at the outdoor bar. Everything’s going to be linked,” Jording said. So in essence, The Old Town Dispensary is going to do the same thing it always has, deliver the quintessential Bluffton experience while at the same time redefining what that is. Bluffton’s Summer Sunsets Sizzle Bluffton’s summer events are all about beating the heat. BY BARRY KAUFMAN

There’s one thing you need to know about summer in Bluffton. It’s hot. As in always know where a change of shirts is hot. Racing from air conditioned haven to air conditioned haven hot, counting shady spots in between you can duck into for a brief moment. Which is why when Bluffton celebrates summer, we do it at sunset. The Bluffton Sunset Parties have grown tremendously in the last three years, from a pair of events to a seasonwide slate of parties that have come to define the social scene in town. The staggering popularity of the original Dog Days of Summer Sunset Party and Blufftemberfest showed that Bluffton’s

summer was crying out for a new way to celebrate. Event organizers Bear Foot Sports were all too happy to oblige. “The sunset parties are fun because they promote camaraderie with people that live in Bluffton,” said organizer Mark Weisner. “A lot of people live behind closed gates and stuff. So it’s an opportunity for neighbors to get together and enjoy the May. Plus we’re raising money for PAL and promoting local entertainment and food.” Each of these events is held in Bluffton’s gorgeous Oyster Shell Park, but most importantly, each celebrates a different style of cuisine.

Blues & Brews on the Bluff: 5-9 p.m. June 12 Don’t let the name fool you. There’s one more B word that plays a starring role in the Sunset Series’ June event, and that’s barbecue. While there will always be debate about which region’s barbecue is superior, from the pork steaks of St. Louis to the briskets of Texas, it will always be agreed that the best way to serve barbecue is with a side of footstomping blues and an endless array of craft beers. So popular, in fact, that for the first time this year it has grown to a two-day event. “It’s entirely local seafood,” said

As fun to attend as it is to say, Blufftemberfest offers what Weisner calls “A big blowout for the end of summer.” Blufftemberfest is Bluffton’s answer to the traditional Oktoberfest, with a pairing of German and American cuisine designed to stave off the growing chill of fall. (This being Bluffton, by growing chill we mean it drops into the 80s). It all serves as the end to a summer spent partying on the May, touring a world of outstanding food that all calls this tiny river town home. Whether you come by golf cart, bicycle or simply park your boat out in the May and swim up, this is the can’t miss party of summer.

If the other parties of the Summer Sunset Series specialize, pinning down the culinary experience to pizza, barbecue and seafood, the Dog Days party is the place where they finally all come together. As Weisner puts it, “Anything goes.” Here you’ll find a full array of Bluffton’s finest restaurants serving up anything and everything under the summer sun.
