PUBLISHER’S NOTE As I drive around the Island, which I do most every day, I find myself getting irritated at times. There is construction, bad drivers, and text-toting teens clogging up the fast lane. I think to myself, “Why do I have to wait for a biker to cross the road or sit behind a truck going 15 miles per hour? Why can’t they do the speed limit at least,” I mutter as I zig and zag trying to get around them? “Why are they doing construction during the busy season,” I think to myself as I wait for the one lane traffic to move at a speed that makes me happy? I have places to be and things to do. While in this irritated state, I notice change. New hotels going up, remodeling, road improvements and landscaping changes are just part of the ever evolving landscape on our Island. There seems to be a little more of a bigger city vibe here than there was in the past. We even have the pains of traffic jams now whether during the morning commute or cars coincidentally converging on Sea Pines Circle, late for luncheon dates or tee times. People have even taken to Social media to air their gripes, thus magnifying the occasional headache we endure. All of this makes me think about how my perception of Hilton Head would differ from that of a visitor? What I see, I am critical of. Visitors, on the other hand, see the Island through completely different glasses. They see the colors and smell the scents. Everything is lush and green. The air smells of the ocean and blossoms of Wisteria, Magnolias, and Gardenias. They watch in wonder as an alligator swims by and an egret preens her white plumage. They bike under trees draped with Spanish Moss, and race down the beach following the dolphins. They drive by the plantations and point at the striking flower arrangements and the manicured lawns. The only things they are in a hurry for are frozen drinks and a parking place at the beach. So the next time I am getting frustrated sitting in traffic, I am going to slow down and look at the bigger picture. All of the inconveniences that don’t fit into my personal schedule are actually some of the reasons I moved to this Island. The natural beauty, cleanliness, and overall feeling of Hilton Head are hard to match. At the end of the day, our Island is a wonderful place to live and visit and offers an unbelievable combination of amenities and quality of life that can’t be found in too many other places in this country. World-class restaurants, beautiful beaches, amazing golf and so much more all within a fifteen minute drive are what keep us living here and keep our visitors coming back year after year. Add the natural beauty and climate and there’s no other place I would rather live. Whether you live here or are just visiting, be sure to slow down, take a deep breath and enjoy all Hilton Head has to offer. Have a safe and happy summer! David Mudwilder Publisher

Picture a spot perched pleasantly over the water where the Seagulls and Osprey raise a wing in salute and where the sun bids a slow farewell every evening. The dolphins frolic by with an arch in their back and the boats, both big and small, give a wave on their way in and out of port. Add the perfect meal to the perfect view and you have found ELA’S. Combining a first class meal with a bird’s-eye view of Shelter Cove Marina, ELA’S on the Water is worthy of a special occasion and is always a memorable meal. A family owned and operated business, ELA’S has been a cornerstone in Shelter Cove since 2011. At the helm of this seamless operation is Earl Nightingale, a man who had a vision and a dream and made them come true. The restaurant is named after Earl’s three children, Erin, Lauren, and Alex who are all still actively involved in the overall success of the restaurant from daily hands-on operation and marketing to customer satisfaction. The concept behind ELA’S, according to Earl, was to create a Fresh Fish restaurant that offered a combination of superior menu, service, and quality. “When we created the concept, I wanted people to be able to enjoy their fish like some people relish a good steak – thick, meaty, panseared, fresh.” The location they chose, mid-Island and right on the water, was the icing on the cake to Earl’s vision. “When I think of a seafood restaurant, I think of fried fish and oysters. That is not us. We off clean fresh ingredients and handmade preparations to every dish. Think pan seared, grilled, heart healthy. Think Bass, Redfish, Tilefish, and Snapper. Our chef works with small local fisherman and picks the best products of the day. We run on whatever is freshest,” said Earl. Their specials may last for only two days at a time because they change with the tides. Chef Dustin Ricker is a native of New England and knows a thing or two about lobster and oysters. 12

“He finds cove areas in New England and has their oysters shipped here right away. These cold water oysters offer a nice addition to local ones,” he added. The dinner menu at ELA’S always has five or six fresh fish items as well as an array of choices for the non-seafood lover in the party. The most popular entrée is the pan seared Blackfin Grouper served with Lobster Butter, Sienna Rice Medley, and local vegetables. Coming a close second as fan favorites go is the Diver Scallops – large in size, the Divers are pan seared and served over crab risotto with truffle butter and crispy pancetta. Earl noted that the Blackened Ahi Tuna has a spicy splash and is “to die for”. Other fresh summer options include Snapper, Mussels, Clams, and Shrimp. For those who want their dinner to come from terra firma, ELA’S has beautiful steak options as well as vegetarian and pasta type items. All the steaks are grass fed Angus Beef from the Linz Stockyard out of Chicago -- finely marbled, tender, juicy, and flavorful. There is a Surf & Turf entrée for the land and sea lover and they serve a Filet, a New York Strip, and a Rib Eye, with preparation options of grilled, blackened, coffee rubbed, peppercorn encrusted, or Pittsburgh style. For starters, there is an extensive Appetizer Menu that includes Honey Lime Shrimp, Crab Cakes, Lobster Nachos, two different Oyster choices, and a unique Calamari dish that is tender and sweet to the palate, lightly fried and served with Wasabi and Remoulade. ELA’S Classic appetizers are their Ahi Tuna Tartare and Shrimp Cocktail with homemade sauce. For the Soup and Salad eaters, there is a Lobster Bisque, a New Orleans Style Gumbo (Earl’s wife, Dianne, is from New Orleans and helps with the southern style menu options), and there are various salads like the Kumato Caprese and Pear Arugula. All desserts are hand crafted and the perfect complement to any fine meal. Popular ones are the myriad cakes like Tuxedo, Cheese Cake, and Carrot as well as the Key Lime Pie. The Wine Menu at ELA’S is extensive and focuses on quality and value. “The original concept was to offer fine wines with a softer mark up. We want people

to be able to enhance their dinner with a good wine,” said Earl. They are also corkage friendly if diners want to bring in a wine for a special occasion that is not on their list. The full bar is wielded by experienced mixologists that will add a zing to any summer evening with the likes of a chocolate or key lime pie martini. There is a full list of local and regional beers by the bottle and they even have quite the Scotch menu for those inclined. For daytime dining, ELA’S is the perfect stop for lunch before a walk around the harbor or a good bike or boat ride. There is an assortment of soups and salads similar to the dinner menu, and they have wraps and sandwiches to please all appetites. There is an Angus Beef Burger, Grouper Sandwich, Salmon BLT, and wraps include Chicken Salad, Buffalo Chicken, and Garden. Sunday Brunch, which is accompanied by Jazz Music, features a delicious menu which includes choices of Omelets like Crab and Sausage or a Benedict like Bacon or Salmon. They have a Kids Menu with sizes proportional for children 8 and under and every holiday sports its own special menu. The atmosphere at ELA’S is romantic, inviting, and soothing. “People come to Ela’s for the food, but it is all enhanced by the atmosphere – the candles and the live music. We have ambiance and we are waterfront dining at its finest with views from all of our tables,” commented Earl. The lighting is ‘just so’ with candles on all of the tables and small lights strung up to add a twinkle inside and out. The high ceilings sport hanging sailboats, hand painted with bright colors and the tables in the bar area are four inch thick chunks from a huge Florida Cypress, reclaimed out of a swamp, chipped, cut, and finished with a sheen. The artwork is all by local artist Pete Karis and available for purchase. ELA’S has a war chest of accolades, repeatedly winning local awards like the Chamber of Commerce’s Taste of the Season and receiving rave reviews on social media sights. They have been highlighted in Bon Appetit and filmed by HGTV for a summer program. ELA’S is open 7 nights a week for dinner and every day for lunch except

Saturday. Make your reservations early for Tuesday dinners in the summer as you can sit on the porch and watch the Shelter Cove Fireworks. They have a Jazz Brunch every Sunday and offer live, soft acoustic music Thursday-Sunday evenings and Jazz Sunday brunch. Whatever Floats Your Boat

All aboard for the Salty Dog Happy Hour cruise, Hilton Head Island’s hottest floating experience. BY BARRY KAUFMAN

Hilton Head Island is home to a lot of happy hours. There are happy hours on the beach, happy hours at the clubhouse, happy hours surrounded by wall-to-wall sports… essentially if it’s 6 p.m. around here and you don’t have a drink in your hand, you’d better have a good reason why not. But there is only one happy hour that takes you out among the serpentine tidal waters of Hilton Head Island, plying the waves in search of the ultimate sunset view. That honor falls to the Salty Dog Happy Hour Cruise. “We’re playing with a loaded deck,” said Phil Smith, Captain of The Salty Dog. “The Lowcountry is beautiful, so you have these stunning views. And as the boat moves, the scenery is always changing. You’re not near the water or overlooking the water, you’re on the water. You don’t have that anywhere else.” The 63-foot catamaran takes out as many as 70 people a night, 364 days a year (the crew takes Christmas off) depending on the weather. “We only go out if we can have fun,” said Smith. And once guests climb aboard, those lucky few enjoy delicious food and refreshing beverages on a double-decker party boat, with live music from Trevor Harden on Thursdays and David Kemmerly on Saturdays through November. The on-board kitchen offers up a smorgasbord of happy hour eats, ranging from beer-steamed shrimp and crab cakes to their signature Jolly Roger’s Rolls and quesadillas. It wouldn’t be happy hour without a few libations, and the drink list doesn’t disappoint. Local draft beers, wine and sangria and a list of specialty cocktails as long as your arm fill the drink list. Be sure to try the captain’s namesake drink: Captain Phil’s Mule, served boat-style in a plastic cup. “Our crowds are just really happy, fun people,” said Smith.

Indeed, every voyage begins with a simple, straightforward message from the captain. “We have one rule over the next hour and a half – have fun. If you don’t want to have fun, I’ll refund your money.” Part of that fun comes from chasing the sunset – The Salty Dog disembarks at varying times throughout the year to make sure happy hour hits right as the sky blazes in the signature Lowcountry palette of purples, pinks and blues. The route also changes to get the perfect sunset. “We have about four different routes. Usually it’s captain’s choice; wherever we can get the best angles on a sunset since the sun moves north to south over the year,” said Smith. Along with the sun, the wind tends to shift from summer to winter, prompting course corrections. “In the summer we try to find the breeze, in the winter we try to stay out of it.” And don’t worry if you haven’t got your sea legs: The Salty Dog stays ultra-stable thanks to its catamaran design, bobbing only slightly if it hits some wake. “Plus, we don’t go fast, so we don’t spill drinks,” noted Smith. Depending on the tide, The Salty Dog cruises along at a relaxed 6-10 knots (about 7-12 mph). But thanks to Smith’s intimate knowledge of area waterways, attained through 30 years as a captain, The Salty Dog actually covers more ground than a lot of the island’s sightseeing ships. The Salty Dog is also available for private parties, rehearsal dinners and even weddings, with Smith doing the officiating himself. “I’m a captain and I’m also ordained, so we can make that happen.” So whether you’re tying the knot or just want to soak in the island’s most scenic happy hour, head to cruise.saltydog.com. ONCE MORE, WITH

GUSTO Hilton Head Island has a new hot spot for truly authentic Italian food, and a restaurant with a story to tell. BY BARRY KAUFMAN PHOTOS BY ROB KAUFMAN

It began on a busy street in Rome, Italy, 30 years ago. Nancy Balestra was visiting from her native New Jersey, in the city for just one day, and she was helplessly lost. “I asked this tall, handsome gentleman how to get to the Sistine Chapel. It was Giancarlo,” she said. “We’ve been together ever since. It’s been a good match.” From the serendipity of that moment Giancarlo and Nancy Balestra built a loving marriage based on a shared passion for food, wine and travel, and a stellar restaurant career based on their complementary skill sets. “I’m a chef and she has spent her life in the industry. She was front of house, management, like everyone else she’s been bartender and a server; she knows every aspect,” added Giancarlo. 16

Together, the couple opened a string of restaurants from Aspen, Colorado to Winter Park Florida, to Saratoga Springs, New York. Three staff members who have been with them for over twenty years are still with them to this day, including chef Rosario Limonio. Just as Nancy and Giancarlo complement each other in life, Limonio complements Giancarlo in the kitchen. “I shared my passion for Roman and northern Italian cooking… he brings recipes from the south,” said Giancarlo. “People really fell in love with that.” If you think the odds of meeting your soulmate on a busy Roman street are unfathomable, you’re going to be floored by the story of what happened next. Two years ago, the Belestras were traveling to Florida after closing up Limoncello for the season, and decided to stop by the Lowcountry. Their former chef, Limonio, as well as former employees Padro Gomez and Antonio Galati were now working nearby and the couple wanted to surprise them. It was supposed to be a brief trip, but instead The Balestras fell in love with Hilton Head at the same speed they’d fallen in love with each other: instantly. “We started looking for a restaurant around here and saw that the spot where 843 had been located was available,” said Giancarlo. “I said, ‘let me see our bill from the Marriott.’ We were staying in room 843.” In a matter of days, the couple had secured their new spot and decided their future lie far from Saratoga Springs. And then, their good luck streak continued. “As soon as Nancy found the spot, my guys came back to us. We put the old team together,” said Giancarlo. “It’s like an orchestra. Everything is going very well.” (And as a brief aside, to hammer home the extreme serendipity that seems to follow the Balestras around: when it came time to find a place to live on the island, they found a beautiful spot on Skull Creek. The owner of the property turned out to be from Saratoga Springs, and he used to eat at Limoncello twice a week.) It took only a few days to make the decision. It took only a few months to

open the doors on Gusto. And it took the blink of an eye for the island to fall in love. “It’s been big from day one,” said Giancarlo. “As soon as we opened, they were flooding in. It was a big surprise.” Even better, the opening day crowd has stuck around, drawn back by the everchanging menu that reflects Giancarlo and Limonio’s menu of deliciously authentic regional Italian cuisine. From the north, slow-cooked savory creations like the duck breast, short ribs or the fettucine osso buco, from Rome, the fanfavorite spaghetti alla carbonara. From the south, heavenly red sauces inform dishes like pollo alla parmigiana and cannaloni stuffed with seafood. And for those who like a more new world take on Italian, Nancy provides her American spin on the classics. “Since I’m from New Jersey, I’ve insisted on dishes like spaghetti and meatballs, veal or chicken Parmesan... things you typically don’t see in restaurants in Italy,” she said. “In the beginning I was like the Soup Nazi. Nancy would suggest something like chicken parm and I’d say, ‘No way,’ until she had me try it,” said Giancarlo. “I have to admit… she was right. Some of the dishes Nancy has suggested have become our top sellers.” The creative zeal of a team that works together in perfect sync results in a menu that astounds on every page. Beyond the northern and southern Italian favorites, the Sunday brunch menu dazzles with tiramisu pancakes, zeppole cocciolata (an Italian-style doughnut with Nutella) and what Giancarlo calls an “Italian burrito,” stuffed with potato parmesan, eggs and bacon. The wine list covers nearly as much territory as the menu, a meticulously crafted selection designed with a “wine for everyboy” philosophy in mind. Across a list of reds, whites, frizzantis and supertoscani you’ll find everything from a nice affordable Chardonnay Tormaresca Antinori to a $620 bottle of 1996 Louis Roederer Cristal Rose’. Whatever your price point, whatever your passion, Gusto takes great pains to bring it to you. It’s been a long journey from that

The GM and Chef at CQ’s and Old Fort Pub go the Extra Mile for your Dinner Eating fresh fish enters a new realm if you dial up dinner at CQ’s or the Old Fort Pub this summer for one simple reason – their general manager and executive chef not only go fishing with rod and reel for their nightly specials, but also defy dismal conditions to descend to the murky depths and spearfish. They literally catch them by day and serve them up by night. Linh Craig, general manager of CQ’s and Old Fort Pub, has been an avid fisherman for 25 years. It started as a recreational thing for him and eventually he received his commercial and wholesale fishing licenses allowing him to buy and sell fish. “I did a lot of commercial fishing but was frustrated about what you can catch and the size of the fish. You just know there is more down there.” He talked to some people who dove and a light bulb went off in his head. “As soon as I got certified, I immediately started spearfishing and became an addict,” said Linh. So when Linh asked Broderick Weaver, executive chef at CQ’s and Old Fort Pub, if he wanted to go on a dive, Broderick jumped at the chance. “I have been certified since age 13, but never knew anyone here who dove,” commented Broderick. Now the duo heads out to sea every week or so to hunt their bounty. “It is an experience that you can’t give up. I post pictures on CQ’s and 30

A typical fishing day for the team will start with a 4:30 alarm, a trip to the beach to collect either 150 fiddler crabs (if it is Sheepshead season which runs September through April) or throw the cast net for Pogeys (during Cobia season in the summer). They are on the 24’ Robalo en route by 6 a.m. to travel to one of the local wrecks, like the Betsy Ross, which range from 1 to 3 hours away. “It depends on what we are fishing for and the nautical aspects like the weather and wind,” Broderick explained. When fishing for Cobia, they find their spot, drop anchor, and wait. “There are a lot of intricacies that go into catching Cobia. When they hit, they are monsters. We have to quickly pull in the other lines and chum buckets and then they give a 10 to 20 minute fight,” said Broderick. They fish until they catch their limit for a commercial license which is 2 per person or 6 per boat. But considering these fish weigh in at 30 to 50 pounds, that is a lot of filets. With the Cobia on ice, it is time to break out the diving gear, put the flag up signaling boats to not come within 100 feet, and begin their descent to the wreck below for some spearfishing.


The bottom of the Betsy Ross sits down 100 feet and the top rises up 50 feet from there so the amount of time they can stay down depends on the depth they choose. The spear gun itself is 42 inches long made of a stainless steel shaft into which the spear is fit. The trigger mechanism is a large rubber band. After being shot, a 15’ stringer line is attached to the spear and used to pull the catch in. There are obviously many differences between fishing from atop the water and below, but one of the main ones is that you can actually choose what to catch and how big they are. “We target Sea Bass. Sea Bass can be found everywhere in our local waters and have to be at least 13” long. Anyone can catch them on rod and reel but catching the slot size is challenge because the smaller ones will hit your bait as soon as it touches bottom. It is very rare to catch one over 13” without going 45 miles off shore but they are definitely here. They are abundant, voracious, and fearless. Diving is more productive than rod and reel because we can pick the ones we want. But don’t get me wrong -- if the opportunity arises to shoot another species, we won’t hesitate if they are in season. That is why there are days that we have a special for a very limited time,” said Linh. Make no mistake though; spearfishing in our local waters is no day at the beach. Nobody dives around here and it is easy to see why. First off, there are sharks out there – just ask Broderick who is not a fan. Add to that almost no visibility. “It is usually 5’ - 10’ visibility. If Linh is ten feet away from me, I can’t see him,” noted Broderick. Then there is the drastic tidal change which can drag you away. “There is no underwater GPS. We put a line out of the back of the boat and we keep an eye on it constantly. Then you have to keep track of your air pressure,” explained Linh. Oh and don’t forget the assent up to the boat which includes a 1 minute stop at 15 feet. “That is the worst part for me – the most nerve wracking. You can’t see above or below,” said Broderick. Did I mention sharks and Broderick’s affinity for them? Linh just smiles and says that he is sure to keep his spear gun loaded on the way up. So with a boat full of the freshest fish in town, the boys head back to Hilton Head to make a seafood lovers’ dream come true. “It is a big process for sure. But it is great to be able to provide customers with something we know is fresh!” said Linh. From Chef Broderick: “To go catch them, bring them back, filet them and serve them in a matter of hours is crazy. When you get to cut something that is out of the water for 4 hours versus something that a distributor says is fresh – you learn the difference. It is valuable for the staff to see the difference. We determine our specials around the fish. I just order ingredients nightly when I know what we will fish for.” I asked the fishermen if they had any fish stories and they both smiled. Broderick has a video of Linh spearing a Cobia. “I thought it was a shark it was so big. I heard the gun go off and he was just holding on for life and wrestling it down,” laughed Broderick. Linh tells of losing multiple cell phones as a result of jumping in the water to salvage a catch. They have seen a Right Whale, a 9 foot sunfish, and a ‘ginormous’ 75 to 90 pound Grouper (off season) that they thought was part of the boat. And then there are the sharks -- lots of them -- lots of close calls. Ask Broderick.

STILL CRAZY AFTER ALL THESE YEARS The Crazy Crab Jarvis Creek rises from the ashes with a new look,

a new chef, a new bar and the same great seafood that made it an institution. BY BARRY KAUFMAN

There’s a common misconception that fire is a force of destruction. We tend to only focus on the ashes and the charred timbers of a forest fire, but we don’t see the saplings poking out of that soot which will renew the entire ecosystem. Just as a fire reinvigorates a forest by clearing away old growth, The Crazy Crab north has re-emerged from a devastating fire, just as it did 20 years ago. And what it has become is nothing less than amazing. “We had to totally redo everything,” said The Crazy Crab Partner Courtney Kenneweg. Tom Reilley opened the restaurant along with Kenneweg’s father Peter and a handful of investors in 1984. And just as they did in 1999, the partners had to reinvent the restaurant following a fire. Back then, The Crazy Crab burned down completely. This time, the flames were contained to the attic, the result of a grease fire in the kitchen that wasn’t properly dealt with. But with the roof gone, water damage swept through the restaurant. A handful of things survived – an old wooden skiff that 40

hangs from the rafters. An enormous grouper that hangs along one wall. The neon sign bearing the restaurant’s logo, carefully packed up in Kenneweg’s truck to be restored in Charleston. They were even able to save one of the restaurant’s resident eels from the iconic fishtank. “As soon as the fire department let us back in, Curtis Richter who maintains our tank went in headfirst, scooped out the eel and was able to save it,” said Kenneweg. Some of the changes are cosmetic – the low-pile carpeting, threadbare in spots, was torn out and replaced with gorgeous hardwood floors. The old timber planks that framed the fish tank were replaced with shining white subway tiles with golden accents. Fresh rustic shiplap hugs each wall in the main dining room, illuminated by new light fixtures. “Pretty much everything you touch is new here,” said Kenneweg. But along with the small changes were the big changes. The entryway was completely revamped, with an expanded retail section featuring a wide selection of locally made products.

The old enclosed bar has been opened up, granting the entire foyer a much greater sense of space, filling it with waterfront views. “When they built it 20 years ago, you could still smoke inside so that was a smoking section,” said Kenneweg. “It made more sense to open it up.” Big changes have come to the kitchen as well, with the hiring of new head chef Mikel Harrison. A 24-year veteran of the Lowcountry culinary scene, Harrison started out as a teenager working in the kitchens at chain restaurants like Longhorn Steakhouse and Applebee’s before making his mark in fine dining at places like Dockside in Beaufort. Going from a 600-700 dinner a night place like Dockside to a 1,000 dinner a night place like The Crazy Crab represents a new challenge to the chef, as does taking charge of a menu that has remained largely fixed over the years. “Sometimes it’s intimidating,” said Harrison. “It’s challenging, but you always have to be innovative. We’re going to look at the menu and think what can we do to revamp it? Not taking anything away, but adding to it… The menu is awesome. But you taste something, and think, ‘We can add a little bit of this and it will make it a little bit better.’ And then you taste something and you’re just like ‘I’m not going to touch that.’ Like our bacon barbecue shrimp - there’s nothing you can do to change that. It’s phenomenal.” Harrison is preparing for the summer season by expanding the back of the house, doubling the line to essentially add another kitchen. “I like being busy. My sous chef, he likes being busy,” he said, adding with a laugh, “We got what we asked for. It’ll be crazy, but fun.” The biggest change of all, however, is the expanded outdoor seating. Already in the works before the fire, the brand-new patio stretches out across the water, with steps that guide you down to the renovated playground area and firepit perfect for after-dinner S’mores. At the heart of this expansive outdoor space, a wide wraparound bar and multiple TVs create the ideal place to grab a drink and enjoy either a game or a sunset. “The new outside bar has been the most impactful addition we made to the restaurant”, said Kenneweg. “It provides an experience we were missing before and has allowed us to attract a much wider customer base.”

Harbour Town

The Sea Pines Resort’s very own Pied Piper, Gregg Russell, has entertained generations of families from his stage set under the Liberty Oak. A variety of hot productions, as well as cool summer camps, are scheduled at the Arts Center of Coastal Carolina this summer. One thing is clear: Jevon Daly has a lot to say about the Grateful Dead. With his father a diehard “Deadhead”, the lowcountry musician was raised on America’s greatest classic jam band. Now, Daly celebrates his 25th year performing Grateful Dead around Hilton Head. A self-proclaimed fanboy of the Dead, Daly’s name has long since been synonymous with the Grateful Dead for locals. However, he’s not the only one. It was around ten years ago that Daly was called to sub in at a gig with Craig Coyne, a man described as “the unspoken Godfather of Hilton Head’s underground music scene”. In Coyne, Daly found a true Grateful Dead connoisseur. And so Shaky Bones was formed. A tribute to Jerry Garcia and Grateful Dead, Shaky Bones currently consists of Craig Coyne on lead guitar and vocals,

Jevon Daly on the bass, Andy Pitts on rhythm guitar, and Chip Larkby on the drums. With almost 100 years of live performance experience in the band combined, they are some of the island’s most seasoned musicians. The number of hours that each band member has spent performing on stage is greater than the amount of time that most people spend on their entire education. To these men, the venues they play are their classrooms, and when they come together as Shaky Bones, they are all students of the Dead. Just as it was in Grateful Dead, there is no named leader of Shaky Bones. Instead, they see themselves as equals. Nonetheless, as if the band is under some unspoken agreement, it’s typically Coyne who calls the shots during shows. As Daly puts it, “if Craig is driving the car and he goes off a cliff, we all go off a cliff”. Coyne keeps things unpredictably interesting for not only the fans, but also the rest of the band. Even after nearly a decade of Shaky Bones, he still pulls out songs at live shows that the band has never played together. When Coyne takes the stage, the music he recreates is believable, and fans keep coming back to hear. When Shaky Bones originated, the band instantly attracted a large and attentive fan base that remains loyal to this day. Those who are familiar with jam band fans know that they can often be an eclectic, quirky bunch. A different breed of music lovers, these ever-dedicated fans seem to raise the levels of intensity when it comes to their love and knowledge of the jam band genre. Many think of it

as a religion. The Shaky Bones fans are no exception. To them, attending every Shaky Bones show is a necessary ritual. Whenever the band performs, the fans arrive ready for all the trappings of the jam experience, complete with a parking lot hang (shakedown street, anyone?), dancing, and yelling towards the band. Daly sees it as a “Hilton Head live music support group” made of those who crave the familiarity that the Grateful Dead can offer them. He remarks, “It’s the same people who have been coming to see us play Grateful Dead since I first started doing this.” When Shaky Bones plays, the crowd listens to every single note the band produces. As part of the jam culture, the audience stays very observant throughout each song. Through the good and the bad, they don’t miss a beat. True jam band fans to their core, they seem to enjoy the pre-show anticipation of not knowing quite what to expect from the band that night. Same as it always was for the Grateful Dead, sometimes the audience gets a focused, tight performance from Shaky Bones, and other times, their set may come across to the fans as a bit more loose and messy. Jam band fans love to have an opinion on exactly how well they thought the band played on that particular night, perhaps because it makes them feel, in a sense, more involved. However, no matter how they perceived that night to go, whether it be their favorite show or not, they will always be back in their places for the next time Shaky Bones plays. With such a committed fan base, venues have always been eager to book Shaky Bones, as they know that people will crawl out of the cracks from every direction for the experience of a show. There is no need for flashy advertising when it comes to this band. Merely word of mouth is enough to pack a place full. Daly elaborates, “Everywhere in the world, there are people who like Grateful Dead. When Old Town Bluffton Inn opened, the mission was simple: create a gateway for guests to truly experience Old Town Bluffton. Built by Bluffton local Larry Leary, the hotel was designed in the mold of the classic homes Leary spent his career restoring in Connecticut. Its dual balconies fronting May River Rd give the building the impression of old Southern grandeur, while its 14 guest rooms each follow a different theme that exudes pure elegance. Ideally located on the main strip between the famous four-way stop and The Promenade, you couldn’t ask for a better place to serve as Old Town’s front door. Within walking distance you not only have the shops and restaurants of The Promenade, but the iconic Southern homes and endless fascination of Calhoun Street. But for once, location isn’t everything. Giving guests the full Old Town experience isn’t just about being in the heart of it all, it’s about bringing the best of Bluffton in. And frequent visitors to Bluffton know that the best thing about Bluffton is its food. “We really try to work with the restaurants around us, because we’re not chefs by any means,” said General Manager Chelsea Thiess. “But we do have a really good platform for places like The Cottage, for example. They do a great job and their food is amazing.” And when you have a culinary scene as diverse as Bluffton’s, you really have your pick of great places to point a guest toward. But sometimes, the best of Bluffton is right inside Old Town Bluffton Inn’s doors. All of the coffee served at the inn comes from The Grind Roasters, the award-winning Bluffton label founded by Ian Duncan. And all of the tea comes from Bluffton Tea Company, part of a partnership that goes well beyond the cup. “We’ve partnered with, and given a platform to, Connie Kitzmiller from Bluffton Tea Company to springboard off of,” said Thiess. “She’s not only been able to promote her business here, but we promote her every day. She’s doing high teas out of the lobby.” There are also plans for upcoming mixology classes featuring Julie “Julez” Weinberg and her essential oil-infused libations. One glance at the lobby’s kitchenette reveals a plethora of locally crafted fare from the privatelabel Bluffton Tea Company tea bags created for the inn to baked goods from Downtown Deli. The folks at Sippin’ Cow, just across the Promenade, provide the occasional hot catered breakfast. And a special St. Patrick’s day cross-promotion with a few Promenade-based eateries gave the inn’s staff a chance to get creative. “We put a pot of gold in every room with coupons for Calhoun’s, as well as Ben & Jerry’s,” said Thiess. Sometimes the partnership stems naturally from Old Town

Bluffton Inn’s location, as when a group from Springer Health Care needed both a place to stay and a large venue for their executives. They held their private dinner upstairs at FARM, just a few steps from their hotel room. When famed local foodie Jesse Blanco was in town for the first Bluffton Restaurant Week, he stayed at the Inn and featured it on his show, “Eat it and Like it.”

As culinary ambassadors to the Lowcountry, the staff at Old Town Bluffton Inn have even found themselves having to explain some of our greatest epicurean traditions. “We’ve sent people down to one of the oyster roasts they do at Oyster Factory Park, and we have to sometimes explain what that is. Mike Tyson knows a thing or two about sticking to a plan. He was once quoted saying, “Everyone has a plan until they get punched in the face.” When thinking about nutrition, we experience face punches as well. Not literal punches (hopefully) but those experiences that stop us in our tracks and derail even the best-laid plans. For example, do you know anyone who loses the same 20 pounds year after year? They crash diet from January through March, enjoy the heck out of spring and summer, then Fall comes and they diet again from the first day of school until Halloween. Then it’s no holds barred through New Years. Losing that same 20 pounds, gaining it back, that cycle is a reflection not of their diet but of their lifestyle. More specifically, it’s a reflection of their habits. When building your nutrition plan, instead of honing in on what foods are “bad” or “off limits”, a stronger approach is to laser focus on the habits that support your goals. What are the face punches you experience? Running out of time to meal prep? No idea how to shop for the week? I urge you to allow technology to be your friend in these cases. Let’s take a look at a few common face punches and build habits to overcome them. Let’s transform that smartphone in your hand from an adversary to an advocate in living a healthy life. Face punch: I ran out of a staple food item. I know that when my protein intake is consistent, I feel full longer. This helps me to avoid giving in to cravings or mindless eating. If I run out of my protein powder, my post-workout meal and my evening snack are now questionable. So, I recently enrolled in a subscription service that sends my protein powder to my home once per month. This one simple habit helps the ‘face punch’ of running out and then having excuses not to stay on track. It’s one less thing to worry about when planning my week. Face punch: I don’t have time to grocery shop. Finding the time to peruse the aisles in the grocery store can seem overwhelming in your busy schedule. Downloading an app like InstaCart or ChefTap can alleviate the time-consuming acts of finding recipes, creating a grocery list, and hunting down ingredients. ChefTap is actually a recipe finding and organizing app, but it has a feature that creates organized shopping lists based on the recipes you highlight. Simply put, it gives you a gameplan to make your trip to the grocery store more efficient. InstaCart is like an Uber driver for your groceries. You get 66

assigned a Personal Shopper and you can schedule to pick up your groceries or have them delivered to your door. Amazing! Face punch: I missed my regular workout. Fitness is an easy area to over-complicate. We think we need a fancy gym, a special class with our favorite instructor, or a multitude of equipment. Think again. The act of getting your heart rate up can happen in minimal space and with little to no equipment. A simple HIIT workout will do the trick every time. Consider something like the following: 5 rounds, :30 max effort followed by :30 rest Burpees Walking lunges Mountain Climbers In 15 minutes your heart rate will be elevated and you will have challenged every muscle group. Remember, the face punches will happen. There will be days, weeks, maybe even seasons of your life where your wellness is challenged.
