PUBLISHER’S NOTE They say you don’t really know what you have until it’s gone. If the past several months have taught us anything, it’s that they were right. But they never warned us how bad it could hurt to have the things you love – enjoying a meal surrounded by friends and neighbors, indulging in the ambience of a busy restaurant – not gone, but simply just out of reach. When this pandemic first hit, I don’t think I was alone in feeling like everything was just a little bit off. You could go out in public and see your friends, but you had to keep a wide berth, not knowing which one might be a carrier. You could still enjoy the great restaurants that have made Hilton Head Island famous, but only in a take-out container in your own home. And forget getting a haircut or a routine dental visit – they became the symbols of our old routine that suddenly seemed like a pipe dream Everything that had defined “normal” was suddenly off the table. A dinner party. A cookout. A trip to the beach. Happy hour at your favorite watering hole. Distant memories of a different time. Surreal doesn’t begin to describe it. For the first two weeks, like most of you, I didn’t do much. I wasn’t even sure what I’d be allowed to do if I did. Making things worse was the fact that this past spring was quite possibly the most beautiful I can remember in my thirty years on Hilton Head. Sure, you could still go for a run, play a round of golf or work on your “crisis garden,” but the sunny days we enjoyed during quarantine were the type that outdoor dining and beachside cocktails were made for. It almost seems like three months of gorgeous sunshine was wasted. Eventually, it was time to get moving and deal with this thing the best we could. I think I speak for a lot of island business owners when I say it wasn’t easy. As restaurants coped with losses and with juggling a new set of rules for reopening, I was fighting off the anxiety of putting out an issue not knowing what sort of environment it might arrive in. But as I watched these restaurants brilliantly adapt and overcome, with take-out, curbside service and delivery options, I knew I had to push through as well. It was probably the most anxious I’ve been in my sixteen years producing Taste of Hilton Head. But I’m glad these restaurateurs inspired me to keep the faith. We’re not back to normal yet, but we’re getting there. And the struggles we all went through have given us all a greater appreciation for how amazing normal is around here. Being able to grab a seat at the counter for breakfast, grabbing a bite to eat on the patio, or enjoying a drink overlooking the water have more meaning to me than ever before. Local restaurants have done everything in their power to make your experience as safe and enjoyable as possible. So make sure to pay them a visit, and help them push through the losses they’ve incurred from this pandemic. If there’s a silver lining, it’s that for once we were able to appreciate what we have while it was still here. David Mudwilder Publisher

EVERY DETAIL TELLS A STORY With the release of
“Steamer Seafood 2.0,”
one of the island’s most iconic restaurants begins a new chapter. BY BARRY KAUFMAN
•
Every story, like every great piece of seafood, starts with a hook. With the story of Steamer Seafood, the hook actually comes in the middle of their story, when the impending arrival of Hurricane Matthew caused the island institution to shut its doors permanently. In its original location on Lady’s Island, Steamer had risen to fame as a hotspot for celebrities from Barbara Streisand to Tom Berenger. After it moved to Coligny in 1991, it cultivated a rabid fanbase of locals and tourists alike. Over the course of 25 years, it became a part of the island as indelible as its white sand beaches and world-class golf courses. And then, with Matthew approaching, they closed. No one knew at the time that a chapter in Hilton Head Island history was closing with it. “When it came time to make the decision to reopen, our tenure in Coligny was ending,” said Steamer Seafood owner Dale Augenstein. “We decided to put everything into storage and wait until we found the right location.” Four years later, they found it. And that location is a story unto itself. While it most recently served as the home for Darren Clarke’s Tavern, the iconic two-story building on Executive Park Road, 12

looming over Pope Avenue, has a much deeper history. Longtime island locals might still refer to it as the Hofbräuhaus building, as it spent 30 years serving up German cuisine under the guidance of Peter and Ellen Kenneweg. Newer transplants might even still call it Truffles, as it spent 9 years under that famed banner. And now, another iconic island restaurant calls it home. In just a few months, Augenstein and his team worked tirelessly to put their own stamp on it. “This was an Irish pub, so at least 50 percent of it… was covered in mahogany panels,” said Augenstein. “It was an absolutely beautiful Irish pub, but everything that it was, we are not.” Purchasing the property in January, the team gutted the building and began transforming the space with walls of reclaimed wood, aged corrugated steel, and tilework that reflects a much more modern coastal chic vibe than the classic nautical motif that had defined Steamer’s previous incarnation. There are the classic tables, of course, with their oyster bucket taking center stage, but elements like an oyster bateau suspended over one side of the dining room evoke an updated sensibility.
“I’ve lived here since the mid-80s, so I wanted a décor that was completely different than what I’d had in the past for the first 25 years,” said Augenstein. “We’re kind of calling this Steamer 2.0.” Adding to the flair of the new space is artwork found throughout from Signore Coastal Art. Like every detail of this all-new Steamer Seafood, this artwork tells a story. On the surface, it’s a story of our area’s waters, with sea turtles chasing after jellyfish in an effort to educate visitors on the delicate balance that exists beneath the waves. And in the very medium of this artwork, we find yet another story being told, one that’s deeply personal to Augenstein. “What attracted me to Signore was the fact that they use reclaimed wood from the hurricane. And we closed the day the island closed (for Matthew) on Oct 5, 2016,” he said. “It tells our story… It was just natural to put the two together.” Just as fascinating as the story up to this point is what awaits next, as Steamer Seafood lays claim to one of the most storied locations on Hilton Head Island and begins writing its next chapter. One bold move Augenstein took in re-opening Steamer Seafood is already paying huge dividends. He set up “Steamer 2.0” under an employee stock ownership plan, or an ESOP. This forward-thinking business model puts ownership of the business into the hands of employees, and Steamer is the only restaurant on the island that uses it. “Everyone is excited about that, and we’re able to attract the cream of the crop of F&B employees on the island,” he said. That includes sous chef Evelyn Ryan who’s extensive history in the island food and beverage scene spans from stints at the Chart House, her own café and catering company, Truffles Café and now here at Steamer. The menu they have created takes the staples that made Steamer an institution and adds to it a heaping helping of Southern flair. “We’ll still have the original steam platter with shellfish, shrimp, oysters, clams, mussels and snow crab legs, but we’re also adding things like etouffee and shrimp and
grits,” said Augenstein. “Our menu is very Southern driven.” The side dishes in particular have been expanded upon in the new Steamer Seafood, with standouts including red beans and grits, collard greens and a sweet cornbread served in a cast-iron skillet all made from scratch. “We’re a scratch house,” said Augenstein. “We don’t buy anything that’s pre-breaded or pre-made.” In addition, Steamer sources all of its seafood from the U.S. with the East Coast carrying the heavy lifting when it comes to supplying their famed shrimp. That dedication carries over to the beer menu, where a selection of craft beers from around South Carolina will be served in a unique “bottoms up” system. There will be even be a private label ale, brewed in partnership with Swamp Cabbage Brewing Co. in Columbia. As you may have guessed, the Steamer Peach Ale was not only created to taste delicious, it was created to tell a story. “South Carolina is the number one peach-producing state in the U.S. Our customers will see a celebration of peaches throughout the menu,” said Auguenstein, pointing to details like the peach puree candied bacon on the salads and the delectable white chocolate peach cobbler. Everywhere you look in the new Steamer Seafood, you see a story. It’s a story of an iconic restaurant opening its next chapter in a place steeped in local lore. It’s a story of the storm that changed everything. HABIT
It started out as a new restaurant concept. But it may yet jump start a revolution in how we eat healthy. BY BARRY KAUFMAN

Devotees of the island’s culinary scene don’t need any introduction to Nick Bergelt. Hilton Head’s home-grown entrepreneur burst into the restaurant industry with an out-of-the-park home run on his first swing, the awardwinning burger joint Charbar Co. His batting average only improved with the celebrated openings of Holy Tequila and Whiskey Room, cementing his status as a rising star. And then something curious happened. At the height of his restaurants’ collective popularity, Bergelt sold all three to SERG Restaurant Group and turned his efforts towards a concept he hadn’t even originated. For an entrepreneur used to building from the ground up, however, taking over the Healthy Habit concept was more than just a restaurant acquisition. “Our main goal is advancing health,” he said. “It’s never just been about a restaurant.” Taking over Healthy Habit came at a time when Bergelt was increasingly cognizant of his own health. Still a young man, he had nonetheless fallen into the pitfall that every restaurateur encounters – after all, you can’t know how good your food is unless you try all of it, right? Couple that with the never-ending schedule of meetings and obligations that come with running a business and you have a lifestyle that leaves a lot to be desired in terms of health. “I’d been in the restaurant business burning the candle at both ends for a decade,” he said. “Burgers and churros five days a week were an occupational hazard, but you can handle it when you’re
young and have the metabolism for it. That starts to fade when you cross that 30year threshold.” With this new focus on his own health, Healthy Habit was a perfect fit. It not only fit his desire to lead a healthier lifestyle and encourage the same in others, it appealed to his entrepreneurial instinct for expansion. “We know the opportunity here was not about salad, it was this idea that we can expand into any category as long as we lead with truth in ingredients and educating people in the process,” he said. The menu expanded to include paninis and wraps, smoothies, super food bowls and more with each item beginning with a simple promise of fresh, healthy ingredients. And just as the devil is in the details, Bergelt found that the building blocks of those ingredients were crucial to the Healthy Habit concept. “There couldn’t be a tradeoff for the consumer, this idea that it has to be tofu and sprouts,” he said. “For us we want everything we do to be craveable, with the underpinning of truth in ingredients.” That meant educating customers that even the freshest factory-farm veggies could be days old by the time they reach your plate. Instead, Healthy Habit let them see their ingredients growing right in the store behind the chefs.
And while their emphasis has always been on health, they soon realized that the COVID-19 pandemic meant health became paramount to everyone. Not just in what we eat, but in the way we receive it. And because of the way Bergelt had built Healthy Habit, they were ahead of that curve. “We were in the best position to evolve quickly,” said Bergelt. Not only had the restaurant’s business model been predicated on a largely take-out customer base, but much of their ordering had been contact-free from the beginning. Whether it was remote kiosks that took orders from an app or facial recognition technology, Bergelt was almost building a post-COVID business model long before the virus reared its ugly head. “For us, that was built in already... No one could have envisioned this kind of catalyst, but if I were to build a restaurant tomorrow it would look like Healthy Habit.” And since he was ahead of the curve, Bergelt used this time to do what he does best: innovate. He launched a healthy happy hour to give families an affordable option for eating healthy. He expanded what he delivers to include healthy essentials that allow customers to craft their own creations. “It forced us to think outside the box and expand on our capabilities,” he said. “We looked at it as a window of opportunity to give you the
core ingredients, a recipe, and the rhyme or reason behind it with respect to health. It puts the consumer in the driver’s seat.” Healthy Habit also responded to the COVID crisis by giving back, delivering fresh healthy meals to families who had been financially impacted by the shutdown. If you’re hearing about this just now, it’s because it wasn’t done for publicity. It wasn’t done to garner goodwill and expand the customer base. It was done because it was needed. “There were a lot of people who needed a good, fresh meal each night,” said Bergelt. “It was so fulfilling that we had the ability to do this.” This crisis may ultimately present us all with an opportunity to examine our own eating habits and our own health. Bergelt certainly thinks so, and his track record of uncanny prescience lends some credence to that notion. “I don’t think that’s going to go away – it’s only going to amplify our desire for health and wellness. People are going to be more engaged in their personal health.” And if they want a tasty way to pursue that healthier self, Healthy Habit is just a few short taps of the app away.

How Hilton Head Island’s restaurants endured, adapted and overcame as the COVID-19 pandemic arrived in South Carolina. BY BARRY KAUFMAN
It was an announcement that shook South Carolina’s restaurant industry to its core. Standing behind his podium, Gov. Henry McMaster led off his March 17 Coronavirus briefing with a bombshell. “Restaurants and bars – and this is a requirement – restaurants and bars must close their dine-in service starting tomorrow,” he said. Not in a week. Not after restaurant owners have had a chance to confer with staff and develop a plan. Tomorrow. Whether a restaurant already offered take out or not, starting tomorrow they were essentially a grab-and-go business. “I was watching it with myself and my managers, and my jaw just dropped,” said Dave Peck, owner of A Lowcountry Backyard and Bad Biscuit. “My immediate thought was how was the restaurant going to open for businesses and how would that affect the whole staff of people who aren’t going to have a job? I was just in shock at that point.” “We were all kind of in shock,” said Leslie Stewart, owner of Palmetto Bay Sunrise Café along with her husband Paul, aka “Stew.” “We knew things were happening in other places, but it’s never real until it happens to you. We were all just kind of stunned.” “I was very concerned about my employees,” said Tristan

O’Grady, owner of Big Bamboo with his brother Kieran. “The restaurant is a very tight group of people, many of whom have worked for me for 20 years. If I lose those key people, I can’t serve customers.” Street Meet owner Carey Basciano still has ties to his native Ohio, where shutdowns had started earlier than they had here. “I’d seen my friends on Facebook who own restaurants up there saying they were shutting down, so I kind of knew it was coming,” he said. But even with the heads up, he spied trouble ahead. “We do a ton of takeout, but I knew it was not going to be enough to break even.” Redefining their business models. Looking out for their staff and customers. Juggling profit and safety. This pandemic represented an unprecedented challenge for the island’s restaurants. And through it, they endured.
Taking it To Go For Sunrise Café, the mandate to just offer take-out and delivery wasn’t just a simple matter of closing the dining room. “We had to learn how to become a to-go restaurant, which we
were not,” said Leslie. Beyond changing the way they prepare dishes, pivoting to a new model for Sunrise Café came with reacting to a smaller customer base than their usual bustling outdoor area feeds. “We considered every day a learning curve. Stew was prepping grits for 300 people and we realized you have to prep grits for four.” Nonetheless, the Stewarts continued as a to-go operation, watching their orders expand from a low point of 19 orders a day to 140 on the Sunday before Memorial Day. While it still wasn’t much, for a couple who have spent years building Sunrise Café into an island institution it was about more than the bottom line. “Financially we were probably bleeding to death. But we had a place to go every morning at 5 a.m…. We had a few people who came religiously. For those guys we are very appreciative because they kept us going.” That uncertainty created difficulties across the board. Peck kept a skeleton crew in the kitchen based on the volume, but even changes to pare down the menu, meals of the day and family-style dining couldn’t keep the restaurants going. “When that didn’t work, we closed,” he said. Still, he kept looking for ways to adapt, thanks to a network of fellow restaurateurs like Clayton Rollison, Matt Jording and Andrew Carmines. “We all communicated, trying to figure out how we can survive this. We brainstormed together, and we’d give each other current information on SBA loans and guidelines.” A Lowcountry Backyard and Bad Biscuit were not alone in abandoning take-out when it stopped making financial sense. Tristan says to-go orders ended after about a week and a half at Big Bamboo. “It was a very unexpected thing to come at you,” he said. “I’ve been in this business a long time and I never thought that was something I’d be faced with.”
Adapt. Improvise. Overcome. On May 1, the order came down from the statehouse: Restaurants could re-open for outdoor dining. This time, at least, McMaster gave businesses time to adapt, setting an opening date of May 4. Among those new rules were that tables are to be spaced a minimum of eight feet from each other, tables be limited to parties of eight, social distance be maintained and that everything be sanitized between customers. For an island already oriented toward outdoor dining, the announcement was a Godsend, even if the rules were a little nebulous. “They gave us leeway to get creative – we put tables on the sidewalk spaced apart, and we were allowed to put tents up over them, although we didn’t get that far,” said Peck. While it allowed for some creativity, the lack of strict rules also became a sticking point. When Hilton Head Island Mayor John McCann subtly called out an island restaurant group for not requiring staff to wear masks, Peck fired back. “The Mayor never gave us any guidelines. I got a text from a higher up with that restaurant group saying, ‘You’re the only restaurateur on Hilton Head Island TASTEOFHILTONHEAD.COM

who told them that isn’t fair.’” At Sunrise Café, the difference between opening and opening for outdoor dining is negligible, since most of their guests dine along the wide front porch anyway. Just the same, the new rules required adaptation. “We mapped out everything, putting tape down to ensure tables were eight feet apart,” she said. “The first week of being able to seat people outside, we had developed the to-go business so we had tales on the sidewalk and in the parking lot in addition to having 50 to-go orders a day.” For his part, Tristan was cautious about reopening the wide elevated patio in front of Big Bamboo. “We were the first to close and the last to reopen,” he said. “I wanted to see what other people were doing, so I went to a few different places first to pick up techniques on how to keep staff safe and offer the safest experience.”
Opening the Doors And just when restaurants got used to outdoor dining, Gov. McMaster announced on May 8 that indoor dining could resume, as long as tables were spaced eight feet apart and patrons were limited to 50% capacity. “This doesn’t mean that everyone has to open. This means that those who want to can open,” McMaster said at the time. “It means that that restriction has been lifted. But every restaurant owner or every manager will have to make decisions based on their customers, their clientele, their staff, the safety of their staff, the people working, the people visiting.” At Big Bamboo, it meant Tristan was able to open up the expansive dining rooms, although he still did so with extreme caution. “We are not serving any bar customers. You can have a drink if you have dinner, but as far as I’m concerned you have to have a seat and you have to have a menu,” he said. “It’s a way to quietly push away the threat of people getting on top of each other.” Plus, as he notes, his own children work at the restaurant. Safety is paramount. “Any other year we would have done $10,000 between Friday and Saturday (of Memorial Day Weekend). We’re putting safety and hygiene first… The shortterm money doesn’t matter.” Keeping diners safe has, like every other step in this process, required change and creativity. At A Lowcountry Backyard and Bad Biscuit, that meant getting rid of printed menus, giving servers protective gear and adding sanitizing stations for staff and guests. “It’s a big expense,” said Peck. “We’re putting a lot more money and energy into following guidelines.” Still, the expense now reflects a dedication to customers that has been reflected in renewed interest in dining out. “We think were being extra cautious, and people definitely appreciate it,” said Leslie. “Since we’ve been partially open outside and inside, we’ve been doing way better during the day. Memorial Day weekend we did really well.” The timing was auspicious for many restaurateurs, coming as it 24

did before the busy Memorial Day weekend, which saw visitors swarm the island. “We went to our summer hours on Friday and was pleasantly surprised by the revenue that came in,” said Basciano. “There are a lot of restaurants on the island, and I figured there wouldn’t be as many visitors this year.” Like everyone else, he put a premium on safety, sanitizing and spacing patrons out, but he was still glad to welcome back customers. And those customers, in turn, were glad to be back. “A friend of mine posted on Facebook, ‘I haven’t wanted to have a beer in a bar this bad since I was a minor.’”
The Road Ahead The good news is, our restaurants have adapted to this dire situation with resolve and ingenuity, ensuring they can continue to grow our island’s culinary reputation for years to come. The better new is that enduring this struggle may have made them even stronger. “Stew and I decided there has to be some kind of lesson everyone takes away from this,” said Leslie. For Sunrise Café, it meant realizing they didn’t need as many tables crammed into their dual indoor spaces and front porch. “It was too much for the kitchen. We can still do this and stay smaller and still reach our goals. I would not have realized that if it hadn’t been for this.” While Big Bamboo (which celebrates 25 years this year) has resumed the regular live music that made it famous, Tristan is looking to the future with a different perspective. “We’ve built our brand around really good beach music and live music. We’re still doing it 2-3 times a day on the deck,” he said. Still, the regular nightly shows will have to wait until the state adds nightclubs to its list of businesses that may open. At that time, it will still be up to the comfort level of customers and staff. “We have to take long-term approach and offer the best we can to offer hygiene.” At Bad Biscuit, Peck has big plans to expand his dining room after the virus is contained. And he’s confident that day will come. “I’m hoping this becomes another flu situation where you get your shot and you don’t think about it,” he said. “My personal prediction is another year of this, then things get back to normal.” And for many, the chance to define that new normal may be the biggest takeaway from the whole situation. “The total lesson was to slow down and literally do less, but do it better. I look at this quarantine, and it was a chance to reset… it was a time to look at what you were doing wrong and fix it.” said Basciano. “My intention is, if things ever get back to normal, to always ask myself, ‘Do I need this? More hours? More menu items?’… If you forget the lessons you should have learned in these last few months, there’s going to be a price to pay.” Our local restaurants won’t soon forget what this experience has taught them. Thankfully, diners won’t soon forget how hard these restaurants worked to continue to serve.

Ten years ago, around Christmastime, health coach Kim Tavino sought out to make gifts for her clients. Looking for something healthy and homemade, she began to tinker around with the idea of sprouted grain bread. After several tries and many hours in the kitchen, she came up with a recipe that satisfied her. She packaged the bread, sent it off to her clients, and didn’t give it another thought. A couple of days went by before she got the first phone call from a client raving about the bread. Then, another, and another, and another. Kim’s recipe was a huge hit, and her phone was ringing off the hook with people hoping to purchase more of her bread. Just like that, Sprout Momma Bakery was born. Kim wasted no time quickly turning her baking experiment into a successful business. Now, Sprout Momma Bakery is an island favorite, providing locals and beyond with nutritious artisan treats for nearly a decade. Kim Tavino isn’t the only mastermind behind Sprout Momma. After her initial success with the sprouted bread, she enlisted the help of her son, Ryan Fennessey, a well-known local chef. In the beginning stages of their business, Ryan would cut out a few extra hours of his day to drive over to his mom’s house and make breads before his own chef job. As Sprout Momma continued to grow at a rapid pace, Ryan worked hard to create a brand that would really define and differentiate the products, marrying European style breads with healthy rye and fermented goods. He began to experiment with yeast, baking some items with no yeast as well as making his own yeast for other products. Before long, Ryan had created a menu of varied options for customers. It was at this point that the business really took off. A pivotal point for Sprout Momma was when they cut a deal selling their breads to Whole

Foods. Ryan left his job to become the Head Chef of Sprout Momma, and his sister Abby Fennessey was brought into the business alongside her mother and brother. Abby serves as a “jack of all trades” for the bakery as well as running the Sprout Momma media. The team also took on a pastry chef, Caitlin Anderson, to provide all the sweet treats for the bakery. Sprout Momma is currently housed on Cardinal Road, but the business’s success and constant evolvement has led Kim and her kids to decide that it’s time for expansion once again. In the near future, the team is hoping to move the Sprout Momma base to a larger site, one where customers have the space to sit down and enjoy their food on location. The coronavirus pandemic motivated Ryan to alter the Sprout Momma business model, adding in a new section of their menu comprised entirely of fresh, reasonable grab-and-go family meals. During the pandemic, the grab-and-go meals were essential staples for Sprout Momma regulars. The new options were so well-received that they remained a permanent extension of the menu, further inspiring Ryan to launch a bistro type lunch menu featuring sandwiches and spreads. TYLER BY TAYLOR KENT
For all of us who know him, it’s hard to imagine calling him anything other than Campfire Tyler. The name fits and flows so well with his personality and style that it feels like it must have belonged to him for his whole life. But it hasn’t always been this way. In fact, Tyler Littlejohn is on his third identity. He started out six years ago as a hip hop artist with an entirely different name, Stoner Love. As his abilities evolved, he eventually morphed into acoustic artist Stony Amore. Something still didn’t feel quite right. The Beaufort native wanted a name that would encompass his love for the nature of the place he’s always called home. Now, he describes himself as a “phoenix that rose from the ashes of his past identities”. To him, choosing the name Campfire Tyler goes back to the nature of hanging out on his back porch, listening to the crickets and playing guitar. His music and identity has an easygoing, comfortable feel that’s easily relatable to all lowcountry natives. In the past year, he’s grown into himself as an artist and truly found his voice. With a debut album under his belt and a summer full of shows to play, Campfire Tyler is just getting started. A pivotal point in his life occurred eight 38

months ago when he made the decision to stop drinking. Suddenly, with a clear mind, he found himself full of motivation. He began to write songs, treating them as a time stamp for what was taking place in his life and his newfound sobriety. His songs became his diary, and the writing came easy. The rawness of his lyrics combined with his rolling melodies make his songs light and appealing, even when dealing with heavier topics. It’s an impressive quality for an artist to possess, and Campfire Tyler has it mastered. His relatability and humble attitude comes through in his lyrics, and it’s hard to believe he’s relatively new to songwriting. As he was writing, he also started to gig regularly, playing “anywhere that would give him a shot”. He had been playing guitar for several years, but as he put it, finding out that you could get paid and fed to do it changed the game for him. It was last spring when Campfire Tyler put together a show and a setlist, a combination of his originals as well as songs from his influences, ranging from John Prine and Billy Strings to Outkast. His versatility catches the attention of any audience, and it didn’t take long for him to grab the attention of both local
venues and other local musicians, one of which being Kyle Wareham. A successful singer/songwriter himself, Kyle is an artist and producer with his own studio on the island, Shelter Studios. The two hit it off, and Tyler enlisted the help of Kyle to record his first self-titled album. This past November, the pair did all of the recording for the seven song record in only two days. It was released in March on all platforms, and has already been very well-received. In fact, it was so well-received that it inspired island percussionist Nate Douglas to get a Campfire Tyler tattoo inscribed on his arm, a huge sentiment to the artist. After recording with Kyle, Campfire Tyler began to venture out to play Hilton Head bars and restaurants. He has no plans to move from his home in Beaufort, but enjoys being able to play the island’s music scene. For him, it’s almost like the best of both worlds. This summer and into the fall, Campfire Tyler will be at Frosty Frog every Thursday, and Steamer Seafood every Friday-Sunday. The answer, the key, the absolute magic is to address your HABITS. I sound like a broken record with that word, but it is your habits that make you who you are. It is the small unnoticeable thing that happens every single day that either creates a mind and body that you want, or a mind and body that doesn’t seem to be cooperating with you. There is a simple way to line these calorie names up. First, let’s notice where you are habitually consuming something that is working against you, and trade it for something with a better name. Boredom: this might set in after dinner, when your feet are finally up and your favorite show is on TV. Your hands are idle so it’s a habit to grab a crunchy snack or a sweet treat. Instead of having ice cream on hand (which is totally fine every now and then!) stock up on a plant-based protein powder to create a recovery drink.
I’ve been listening to a lot of Dave Ramsey lately. If you aren’t familiar, he is a financial guru who created ‘baby steps’ to help people climb out of debt and live generously. It’s a refreshing – and tough love – approach to managing finances. Why am I talking about finances? Because every single habit he encourages for living debt free is exactly the same habit to cultivate to live with a healthy relationship with food. Your budget is your calories out, your expenses are your calories in. If your expenses outweigh your budget, what happens? You have debt, i.e. excess body fat. He says that every dollar has a name. Guess what? Every calorie has a name as well! I challenge you to name every single calorie you consume for an entire day. Some of the names you might need include:
• Sustenance • Energy • Recovery • Enjoyment / Community.
You might also notice that other calories have names like Boredom, Stress, Convenience, or Social Conformity. Going through an entire day where you name every calorie will be eye opening. So what now? You’ve noticed that some calories are consumed out of boredom or stress, out of plain convenience or social conformity. What do you do with that observation?
Nice Cream Recipe 1 scoop plant-based chocolate protein powder 1 frozen banana 1 cup almond milk Cinnamon to taste Blend all ingredients until smooth, enjoy topped with a dollop of dairy free whipped cream. In this example, your habit of having something sweet after dinner remains the same, but the outcome is that you’ve changed the name from ‘boredom’ to ‘recovery’ by changing the quality of your food choice. Same habit, new name, new result. Energy: consider your morning routine. The first cup of coffee tastes great, feels great; it’s a perfect start to your day. The caffeine hits your bloodstream and you feel ready to tackle anything life might throw at you. 4 hours later you are sluggish and snacky. Consider adding a protein-rich food choice to your morning routine. A hard-boiled egg sliced over ½ an english muffin topped with 2 avocado slices, or a greek yogurt topped with ½ cup of berries. The coffee still gives you the immediate satisfaction, but adding that protein and fat helps you feel full and gives you sustained energy throughout your morning. Same habit, new name, new result. However, some entertainment on the Island may look a little bit different this year thanks to new social distancing guidelines. Island Recreation Association
The Island Rec. Center and Shelter Cove Towne Centre team up to present Summer Jams beginning July 7. Bring lawn chairs so kids of all ages can enjoy a fun-filled, festive atmosphere. The weekly Summer Jams are scheduled on Tuesday nights, July 7 through August 18. Admission into the park is free; inflatable bounce houses and face painting are a minimal fee. Charleston’s Firefly Distillery Making Magic that Dances in the Moonlight BY RISA WILLIAMS MCMILLAN
You know those days when you wake up and are craving adventure? You want to do something different. Plan an excursion. Think out of the box. Go have some fun. I think we all are having a lot of those lately in light of the times. I am hopeful that by the time this issue of Taste is published we will be a fully functioning community once again with businesses and restaurants running at summer and fall full tilt. With that in mind, I have the perfect day trip for you to Firefly Distillery. Perched on a bubbling creek in North Charleston, Firefly is nestled among 16 acres of fields dotted with Live Oaks draped with Spanish Moss – truly a taste of the south in peaceful serenity as well as spirits. Firefly Distillery put South Carolina on the map with their Sweet Tea Vodka and has been churning out spirits since 2005. They continue to make magic twenty years later, constantly expanding their menu and distillery. Scott Newitt spent 33 years working for other people. He did marketing, field sales, management, and distribution in the adult beverage business and was constantly moving. Tired of the transient lifestyle, Scott decided to settle down in Charleston where he met Jim Irvin, owner of a winery on Wadmalaw Island. Scott shared his idea with Jim about starting a distillery and voila! Firefly, which is now South Carolina’s oldest and largest distillery, was the result. “We made our first vodka out of Jim’s wine – It was Firefly 56

Muscadine Wine Vodka,” said Scott. They found distribution in 4 states and did ‘a bit’ of volume. It was after Scott came up with Sweet Tea Vodka in 2008 that things got rolling for the duo and they were in all 50 states within 9 months. What better representation of the south than the connection to Sweet Tea and magical Fireflies? Their Sweet Tea Vodka is their best seller and aside from distribution in the US, they are all over the Caribbean. “Our Sweet Tea Vodka is unique in that we are the only distributor that has access to American Tea and we get ours from Charleston Tea Planation, 5 miles down the road,” added Scott. After fifteen years in business together, Scott and Jim have seen their distillery grow in production and products. They just moved to their new location in North Charleston with a
25,000 square foot distillery and are planning a grand opening party to celebrate in style with a full day of frolic and music (at press time this date was up in the air so check their website for more information). Their grounds include both a barrel and production warehouse, a tasting room, a gift shop, and their 15,000 square foot front porch which welcomes all guests to sit back, relax, and sip some spirits. The outdoor area was planned with parties in mind; they have a stage for live music and enough outdoor space for special events, festivals, and weddings. One of their mottos is “Party in the Front. Business in the Back.” Visit on a Saturday and live music and food trucks will be your reward. Tours are available for $10 which include an education on their history, production, and bottling as well as a tasting of 6 different liquors. You can keep your shotglass and be sure to go to the gift shop to buy your favorite spirits to take home. Over the years, Firefly has expanded their distillery to include much more than Vodka. They now cook up Moonshine, Rum, Whiskey and Bourbon. They have 6 flavors of Moonshine; besides White Lightning, there are flavors based on regional fruits like peaches, strawberries, and apples. The most popular Moonshine flavors are Caramel and Apple Pie. They have a line of Sea Island Rums, Java, Gold and Spiced, which they age for ten years in Bourbon Barrels. They also offer Sweet Tea Whiskey, Bourbon Ball Whiskey, and Southern Accents flavored liqueurs. You can learn all about the different distilling processes for each spirit on your tour as the intricacies are quite interesting. According to Scott, their bourbon is different
than others; “We are the only ones in the southeast to make bourbon in an Ameritime climate. Our seven year old bourbon tastes like ten year old Kentucky bourbon because it ages faster with the southern climate. The hotter liquid expands into the wood and cooks then contracts back out to give it that flavor.” Firefly has truly turned into a family affair, which was Scott’s long-term dream from the start. Scott’s and Jim’s wives are both involved in the venture as are their children. Their vision for the future is to add a Gin line and concentrate on doing a blended Whiskey with an older Bourbon to come up with a unique flavor. “It’s like making a sauce,” said Scott.
