PUBLISHERS NOTE From the outside looking in, the winter months on the Island can appear pretty bleak and uneventful. Even though the days are short, they can seem mighty long. After months and months of crowded beaches, courts, courses and roads, it is now all of a sudden quiet…perhaps even peaceful. When I first moved to Hilton Head over 20 years ago, I have to admit, the winter was my least favorite time of year. The weather cooled off, the paychecks were smaller (straight commission will do that to you) and it seemed as though there was less to do. With each winter that has passed, however, a funny thing has happened. I actually look forward to this time of year. There’s no rush, no lines and no excessive heat. Locals and snowbirds coexist wonderfully and there’s plenty of time and space for everyone. You don’t have to hit the brakes in the middle of the road for a tourist who can’t decide which way to turn and you can actually make it around Sea Pines circle in one pass. In addition, there are usually plenty of nice days to actually enjoy the outdoors. The winter months provide a fantastic opportunity to enjoy all our Island has to offer, especially our fabulous restaurants. There are no waits or lines to sift through and there are always an abundance of great deals to tempt you to expand your culinary horizons. The Chamber’s Restaurant Week, held January 21st through the 28th, offers the perfect opportunity to enjoy some of the island’s finest cuisine at unbelievable prices. In its fifth year, this promotion has been wildly successful for both the restaurants and the consumer. If you are like I was 20 years ago and don’t look forward to the winter months, give it time. I’m sure after awhile you will come to appreciate what a special place Hilton Head can be this time of year. If you don’t believe me, grab your snow shovels and window scrapers and head north and see how that works for you!

Wei Zhu’s Oriental empire started with a modest 1,300 square-foot Chinese take out restaurant on New Orleans Road. For most young entrepreneurs, opening his own business on Hilton Head Island at age 20 would seem like a big deal after years spent working in the kitchen of other owners in New York. But for Wei, his “Empire Szechuan” just wasn't big enough. Classy enough. Contemporary enough. He wanted more of everything – menu choices for diners, fully-stocked bars with a wide selection of wines and an atmosphere where patrons would 8 • A TASTE OF HILTON HEAD • WINTER 2011-12
want to return to eat again and again. At 51 New Orleans Avenue, he has all that now, and his dynasty continues to spread across the island. The former tiny Empire Szechuan is now home to Wei's 4,500 square-foot Asian Bistro. The old take out joint has been replaced by a contemporary Asian fusion restaurant where customers can choose Chinese, Japanese or Thai cuisine and feast on fresh sushi and delicately carved sashimi prepared by skilled chefs. “I built it step by step,” Wei said at the bistro. “I like an adventure.” And over the past 12 years, Wei has had plenty of adventure. Four years after
establishing his first restaurant, he was more than ready to take the next leap. He looked to the north of the island for a larger location and opened Yummy House in 2002. The 2,500 square-foot Yummy House was certainly a step up, with Chinese, Japanese and sushi on the menu. The sit down restaurant quickly gathered a big following among locals, with a large lunch buffet and a menu that boasts dozens more choices than Empire Szechuan ever did. Its atmosphere was also nicer and it continues to be a popular spot for the working lunch crowd and those who want good food, in a clean, low-key environment at night or take-out to enjoy in the office or at home. Still, he wanted more. He wanted a place that was modern, hip and designed to his taste. “I wanted a contemporary style,” he said. “I've always wanted that.” That's when his eye turned back to Empire Szechuan. He decided to expand, renovate and rename his first restaurant. On July 1, 2010, he opened Asian Bistro. While the location might remain the same, the new restaurant is light years away. A soft, blue light seems to emanate from behind multi-level ceiling panels, bathing diners in a gentle glow. “The blue color makes it peaceful,” Wei said. Exotic fish swim in a large round aquarium over the bar, with the glasses and bottles below illuminated by a rainbow of lights. More blue neon falls from beneath
the sushi bar, where a variety of fresh fish are turned into works of art for the palate and the eye. Tables and booths have atmospheres of their own. Some walls are rock, others wood, some a combination of the two. A few tables are nestled between walls and lit by modern chandeliers while others are more open. A walk-in buffet room offers dozens of chicken, pork, seafood and sushi choices for $5.99 at lunch and also houses a vast collection of fine wines. But the real treat is soaking in the atmosphere at night. Over the past year, Asian Bistro has gained a large following of regulars, especially among locals, Wei said. It's not just the ambiance that draws them but the food, which includes a huge selection of appetizers, entrees and group dinners. Not only did Wei expand the restaurant, but also the menu. He added Thai fare, which has proven to be another hit. Among his customer's favorite dishes are an excellent Pad Thai, a sesame-crust tuna and Peking duck, he said. Customers come expecting a nice, clean atmosphere, good food and good service. They find all of that and more to satisfy them. But is Wei satisfied yet?
Although he's proud of the restaurants he has, he's still hungry for more. Plans are already well underway for the launch of his next restaurant in March. He has already staked out a home for Asian Roma, which he will open in Port Royal Plaza. Turning his eye to the north end of the island once again, he saw an opportunity to open another contemporary, classy restaurant to serve a public that wants to dine out in style. Like Asian Bistro, Asian Roma will have a modern feel and a wide selection of food to choose from, including Chinese, Japanese, Thai and sushi. It won't have a lunch buffet but unlike his other restaurants, it will offer hibachi choices, with chefs entertaining diners by cooking at their tables. The space is located in the same shopping center as Sam's Club and will be Wei's largest restaurant to date with 5,200 square feet. Although there are other fancy restaurants tucked into plantations, he saw an opportunity to have an upscale restaurant on the Northern part of the island that customers could find easily. “It's all about opportunity,” he said. He's guiding the design and “contemporary” is his mantra once again. Until then, customers can get a taste of his aesthetics at the Asian Bistro, which is open seven days a week from 11 a.m. to 10 p.m. at 51 New Orleans Road, Ste. 3A. Aqua

Situated by the beach on Hilton Head Island, it has a fantastic location and a lovely decor. What Aqua needed earlier this year was a major dose of new flavor. It got that – and more – with a touch of “Sage.” Matt Jording, owner and chef at the much-loved Sage Room took over operations of North Forest Beach's Aqua Ocean Grille in May. With just 48 hours to get the restaurant ready for a Memorial Day opening, he had little time but plenty of experience and passion. Jording had been hired to consult and oversee the re-opening and management of Aqua Ocean Grille, located inside the SeaCrest Building, with a public outdoor bar and dining area outside overlooking the Atlantic Ocean, a gorgeous wine tasting room and a banquet area large enough to host parties or receptions for up to 100 people.
And of course, the luxurious inside restaurant with elegantly set tables, a spiral staircase and three waterfalls where diners can indulge in delicious entrees like Butter Poach Lobster, Filet Oscar topped with jumbo lump crab or Colorado Lamb among other delicacies. As Jording puts it, “Everything has changed, but the name. They nailed the name.” When he took over shortly before the kickoff to tourist season, his goal was to put Aqua’s reputation on par with the Sage Room, where high quality food and service has made that establishment a favorite among locals. “We really want to carry over the Sage Room atmosphere,” said Aqua Manager Damon Powell, who has also long worked with Jording at the Sage Room. Although it was a race to get the new Aqua open, the transition since has been fluid. And now that tourist season has passed, the new crew has turned its attention to really catering to the local crowd. His experience at the Sage Room is helping Jording establish a strong following at Aqua. “If you were a regular Sage Room customer, you'd recognize everything on the menu,” he said. “You do what you know. We use the same quality stuff. The best of the best.” Along with the new menu – which reflects many of the favorites of the Sage room – the team is looking at other ways to make Aqua even more special. The catering hall, which has its own bar, has had a facelift and would be the perfect location for holiday parties or other gatherings. The outdoor deck overlooking the Atlantic Ocean can also be used for receptions – a rare find on Hilton Head where drinks can't be served on the beach. But they can be doled out on the spacious
deck or at the outdoor bar, which is all but surrounded by water with fountain pools on one side and the sea on the other. With all its amenities, Jording's team hopes it could be the future home for many destination weddings, with nuptials on the beach, drinks on the deck, a reception in the banquet area and even a sit down dinner. No outside catering would be needed since Aqua could handle the food and drinks too. During the day, the outdoor bar serves up beer, mixed drinks and frozen concoctions along with simple but good food, like prime burgers, blackened Mahi fish tacos, pulled pork sandwiches and chicken and shrimp salads. It's open from 11 a.m. until dark, weather permitting. Jording hopes to keep it open as long as fair weather permits, but once it's too cold, it will close. While the weather is fair, diners who want the fancier dinners can have tables set up outside too, white tablecloths and
all. On the right night, there may even be even live music, dinners or planned oyster roasts beneath the stars. Inside or out, “there's not a nicer facility around,” Jording said. The wine tasting room, which boasts a walk in wine cellar with a huge collection of vino, is open to groups – whether it's just a group of friends or an official club – at no charge for wine dinners. In addition to the other new changes, Aqua Ocean Grille has a new chef, Diane Reilly. With 25 years of experience, the pastry chef jumped at the chance to work with Jording's “innovative cuisine” and added her own flavor with her homemade chocolate ganache, frozen espresso souffle and lemon crème pie. Sweets aside, what are the customers' favorite choices? “The halibut is definitely one of our biggest sellers and the lobster is delicious,” she said. Jording is excited about the changes at Aqua and looking forward to even more. Diners at the Sage Room won't have any trouble recognizing the new menu and the new Aqua Ocean Grille is already gaining a local following, one he hopes will help establish it as one of the best places to dine on the island. There is no affiliation with the former owners, chefs or managers. The style is resort casual, with diners in nice shorts seated next to suited up couples celebrating an anniversary or birthday. The beach bar is open daily from 11 a.m. til dark and the grille is open from 5 to 10 p.m., Monday through Saturday. Reservations are recommended, call (843) 341-3030. Chef Eddie Campos prepares everything served with the greatest of care and passion for taste and flavor and respect for Italian culture and tradition. Originally from El Salvador, Eddie acquired his passion for food and wine from his early experience in the kitchens of restaurants in the Washington DC area. In 1996, Eddie moved to Hilton Head Island to be the executive chef at the former restaurant, Neno il Toscano. During this time, he was recognized by the well known television channel "Food Network in the Kitchen." He has been recognized by both local and national media for his culinary skills and creativity. Taste: How did you get started in the business? Eddie: I began working at the age of 17 in fine dining establishments as a dishwasher in the Washington DC area. I worked my way up to salad prep, baker, line cook, and after years of practice, to head chef. Taste: What is your background? Eddie: I have a great deal of experience in the kitchen. I don’t have much formal training, although I did graduate from culinary school in Virginia. I worked under some exceptional chefs and learned a lot of what I practice from them. Taste: What brought you to Hilton Head? Eddie: I was offered an opportunity to work as chef for a restaurant that was opening in Hilton Head in 1996. Taste: How long have you been with Il Carpaccio? Eddie: I joined Il Carpaccio in 2001 – so 10 years! Taste: What are your favorite dishes to prepare? Eddie: I like to be creative with sauces. My favorite dishes to prepare are pasta dishes and appetizers. Whatever you order here is made from scratch with the freshest available ingredients. As we have so many regular customers, I like to keep the menu fresh with additions and specials. Taste: What do you like to cook at home? Eddie: At home I like to cook mostly dishes with fish. My favorite is a dish with snapper, baked with olive oil, black olives, potatoes, white wine, and cherry tomatoes. I cook it for about 15 minutes. Taste: What do you like to do when you’re not working? Eddie: I have four children – one in college, 2 teenagers, and an 11 year old. I like to spend as much time with them as
possible. When I’m not spending time with family, I like to play soccer and bike around the island. Taste: What is the best thing about being a chef? Eddie: I enjoy making people happy. It’s such a good feeling to create great food and see the customers enjoy it. We have a lot of regular customers, and I take pride in knowing that we have a great reputation for our food and service. Taste: What is your favorite thing about living on Hilton Head Island? Eddie: I would have to say the weather. I like to be outside as much as possible. My position with Il Carpaccio allows me to spend a couple of hours daily in the afternoon, after lunch and before dinner, with my family. That makes the long hours worthwhile. Tapas Restaurant The Island's Fabulous Taste of Paradise. In 1992, a 7.3 magnitude earthquake shook Southern California early one June morning. The tremblor was enough to rattle Ardis Matthews and her husband, Max, into travelling across the country “to fabulous places, none of which were exactly right.” But, as it turns out so many times in life, the road less traveled, led to the most adventure. When the Matthews were in Charleston “we were sitting in a bar being friendly,” laughs Ardis. “We were talking to a nice couple from Hilton Head about our trip to Savannah. They said Hilton Head was right on the way, just make a left and go over a bridge.” The Matthews fell in love with the Island immediately. “It reminded us of our old home in California.” After trading one paradise for another, and replacing surprise earthquakes with preemptive hurricane warnings, Ardis had to find out what to do with herself. Ardis is perpetually jovial and enthusiastic. She is enthusiastic about anything.
Anything. Every new experience is “exciting”, “cool” or “fabulous”. Every past experience, even if it was less than grand, has one little slice of humor, wisdom or combination of the two. She is sweet, sassy and indefatigable. She doesn’t fear change, she embraces it. “This is all learning by doing,” she says of her extensive menu. “Except that I did have a fabulous […there’s that word again, ‘fabulous’…] opportunity to take cooking classes with some of the greatest chefs of the 1980’s in California.” Wolfgang Puck, Bert
Greene and Julia Childs among them. “It was mostly fun. And the main thing I learned from these classes was, ‘I can do this.’” To Ardis, the best cooking she comes up with is “looking around that kitchen and reinventing the same ingredients over and over and over again. I’m not classically trained, I just makes what tastes good. And fortunately it seems to taste good to other people too.” Besides food that tastes good, the good food changes all the time. “There are certain items I would never take off the menu. I like the classics, but then I like totally wacky new flavors.” Ardis reflects and then starts laughing again, “And then I like the stuff in between! I don’t know! I like food! Anything but beets!” You can’t help but smile in her presence.

Coffee

As the world moves at a faster and faster pace, many people drink coffee to enjoy the benefits from caffeine, a stimulant that provides a boost of energy and enhanced mood and concentration. The importance of coffee in the world cannot be denied. It is the world’s second most popular drink after water. It is the world’s second most traded commodity, taking a backseat only to petroleum. Today, coffee drinkers consume approximately 3.1 cups per day on average. More than 80 percent of Americans drink coffee, 52 percent drink coffee daily and another 30 percent drink it occasionally. Coffee beans are the seeds of a fruit similar to a cherry, each containing two beans. The coffee plant is a small tree or shrub, and is a flowering plant of the family Rubiaceae. They are native to subtropical Africa and southern Asia, and today are grown in the ‘bean belt,’ a region near the equator bordered by the tropics of Cancer and Capricorn. The flowering trees produce purple or red coffee berries, each containing two seeds, or coffee beans. Coffee trees can only be grown where there is no winter frost. Coffee is grown in more than 53 countries worldwide, all of them located near the equator between the tropic of Cancer and 36 • A TASTE OF HILTON HEAD • WINTER 2011-12

Capricorn. No coffee is grown in the United States or its territories except in Hawaii and Puerto Rico. Brazil is the largest coffee producing region, with around 30 percent of the total world output of coffee. Colombia ranks second. Many varieties of coffee plants exist, but only two are cultivated: the Arabica, and the Robusta. The Arabica is considered to be the best quality, but can only be grown above an altitude of 2000 feet, while the Robusta can grow below. It takes three to five years for a coffee tree to reach maturity; in one year, the average yield from a single tree is approximately one roasted pound of coffee. Most of the world’s coffee is grown by small-scale coffee-farming families. Harvesting and processing of coffee beans is quite time consuming and labor intensive for coffee farmers. For every pound of gourmet coffee beans sold in the US, a coffee farmer receives about twelve cents. Because the coffee fruits ripen at different times, the fruit must be hand picked to ensure the highest quality of beans. The discovery of coffee can be traced back to the 9th century where it was discovered on the Horn of Africa in modern-day Ethiopia. Several stories
exist regarding the discovery of the coffee bean. One is of a goat herder named Kaldi, who noticed his goats acting with extreme vigor after eating the berries of a certain tree. Upon eating the berries himself, he felt the same renewed energy, and the effects of coffee became known. Traders began offering these coffee beans, which made their way into Arabia, then into India, Holland, and Europe through Venice, Italy, where coffee reached popularity in the 17th century. With such humble beginnings, coffee has found a very important place in the world’s economy as a staple crop of many impoverished and struggling nations who rely heavily on the coffee plant to provide jobs and income. A niche market for organic coffee beans is seeing a large increase in interest and revenue because consumers are willing to pay a little extra for coffee grown with environmental preservation in mind. Organic coffee is grown and processed without the use of pesticides, herbicides, or similar chemicals. Nearly seven million tons of green coffee beans are produced each year worldwide, and the majority of those are hand-picked beans. Green Coffee is shipped and sold unroasted and can be stored for longer periods of time and roasted when ready to be used.
Of the one hundred million US daily coffee drinkers, thirty million drink specialty beverages such as lattes, cappuccinos, and mochas. The average price for these espresso drinks is nearly twice that of a regular brewed coffee. Espresso is an entire approach to coffee cuisine, involving a traditional menu of drinks, many combining brewed espresso coffee with steam-heated, steam-frothed milk. Ordering a specialty or gourmet coffee can become a very complicated process with choices in types of milks, types of syrups, concentration of espresso, desired temperature, etc. Below are some of the popular Espresso drinks as well as two recipes for your enjoyment.
Basic Espresso Drinks Solo Espresso: A single shot of espresso. Doppio Espresso: Two shots of espresso. Espresso Macchiato: Espresso shots with a dollop of foam. Espresso Con Panna: Espresso shots topped with whipped cream. Americano: Espresso shots with hot water. Latte: Espresso shots with steamed milk, topped with a layer of foam. Mocha: Espresso with chocolate, steamed milk, usually topped with whipped cream. Latte Macchiato: Steamed milk topped with a layer of foam and a shot of espresso. Cappuccino: Espresso with half steamed milk, half foam. "Dry" refers to more foam than the standard, and "wet" refers to more. milk than the standard. "Bone Dry" means espresso shots, then filled to the brim with foam.
Gingerbread Latte • • • • • • •
2 fluid ounces espresso coffee 2 tablespoons gingerbread flavored syrup 1/2 cup milk, steamed 1/8 cup whipped cream 1 pinch ground nutmeg 1 pinch ground cinnamon 1/2 teaspoon vanilla powder
1. In a coffee mug, combine espresso coffee with flavored syrup. Pour in steamed milk. Top with whipped cream, and sprinkle with nutmeg, cinnamon, and vanilla powder.
Eggnog Latte • • • •
1/3 cup 2% milk 2/3 cup eggnog 1 (1.5 fluid ounce) jigger brewed espresso 1 pinch ground nutmeg
1. Pour milk and eggnog into a steaming pitcher and heat to between 145 degrees F to 165 degrees F (65 to 70 degrees C) using the steaming wand. Brew the shot of espresso, then add to mug. Pour the steamed milk and eggnog into the mug, using a spoon to hold back the foam. Spoon foam over the top. Sprinkle nutmeg on top of the foam. A TASTE OF HILTON HEAD • WINTER 2011-12 • 37

It’s easy to get yourself into a restaurant rut. You have your favorites after all, so why bother to try someplace new if you already envision what you are going to order at your tried-and-true dinner destination. My parents are perfect examples of people in a restaurant rut. They have their three favorites and my father now knows the owners so well that they let him stock his own wine cellar and he brings the chefs baskets of fresh wild blueberries from Canada every summer. Try someplace different? I think not. So how do we go out on a limb? How do we get out of this temptation to fall back on dining at our favorite spots? Two words: Restaurant Week. Started four years ago, the Hilton Head/Bluffton Chamber of Commerce modeled Restaurant Week after similar events in New York City and Los Angeles. According to Charlie Clark, Vice President of Communications at the Hilton Head/Bluffton Chamber of 40 • A TASTE OF HILTON HEAD • WINTER 2011-12
Commerce, “Restaurant Week is such a success story! It just continues to grow each year. Islanders and visitors love it.” The concept is simple yet brilliant. In order to stimulate traffic during a normally slow time of year, restaurants offer a set menu at a set price and give patrons a deal that they cannot pass up. It’s a perfect opportunity for restaurants to increase business and a chance for islanders and visitors to step out on a ledge and, dare I say it, try some place new? In fact, because it’s a week-long, from January 21st through January 28th, you can try seven new spots and eat like a king at a pauper’s price every night. Chad Klimazewski, advertising director for Wild Wings Café, said they participate in Chamber Restaurant Week every year. Aside from the fact that the owners are long time Chamber members and want to be supportive, Chad noted that Restaurant Week is a great way to reach out to new customers. “It’s nice
too,” said Chad, “that the casual dining sector is included. People get excited about going out again and they feel good knowing they are getting a deal.” Chad notes that it is a great opportunity for the restaurants to reach out to new customers. Does it work? “Yes. It really does. And the on-line aspect where you can see all the menus is a huge plus!” Wild Wing’s prix fixe menu will feature an appetizer and a choice of either of two entrees or a large sampler platter. They have a new Angus burger that will be one of their feature choices and the sampler platter will feed two people and include any and all combinations of chicken fingers, feathers, wings, and nuggets. Appetizer choices will be along the lines of spinach dip, queso, or their popular hot shots (sausage and cheese fritters with a cayenne crust). Three items, two people, twenty dollars: Now that’s a good deal! A Lowcountry Backyard will again
be participating in Restaurant Week and will be offering a three course meal for $15.95 that will include an appetizer, a choice of entrée (probably a to-die for seafood dish or something down-home yummy), and a dessert (last year they served homemade banana pudding). According to Raina Peck who owns and runs the restaurant with husband Dave, “I keep track of our business in my book and it was definitely up that week. People take advantage of it. They like it because they know they are getting a discounted price.” Katie Manley, marketing director for Old Oyster Factory, Redfish, and Alexander’s, said they are all back in the game this year for Restaurant Week. The restaurants had not finalized their details for this year’s event at press time, but will most likely do something along the same lines as last year. Old Oyster Factory served up a three course meal for $21.99 that included an appetizer (oysters of
course), an entrée (how about grilled Mahi Mahi served on a bed of lemon grass essence infused vegetables, with roasted potatoes and topped with fried julienne leeks), and a dessert as well as wine specials. For $27.99, diners at Redfish last year enjoyed a choice of all of the restaurant’s most popular items. Featured dishes included smoked salmon blinis, bacon bleu cheese salad, surf and turf sliders, and key lime pie. Alexander’s did a four course dinner for $23.99 (wow!) that included bacon grilled shrimp with a honey-mustard sauce, a soup or salad, an entrée like Blue Fin Crab Cakes served with a cilantro chililime remoulade sauce, or slow roasted pork loin with caramelized apples and sun-dried cranberries, as well as a dessert. If steak is your craving, stop by Crane’s Tavern Steakhouse & Seafood where you can get a “three for thirty”. Beth Crane has restaurants that participate in Restaurant Week in Hilton Head
as well as Charleston. “It’s a positive. It gets locals out of their house during a quiet time of year and they can escape the doldrums of winter.” Restaurant Week works so well in Charleston that they have two every ‘year. Beth hopes that through state wide promotion by the SC Hospitality Association that Restaurant Week will even become a good reason for people to travel here. Finally, I offer you some tips for taking advantage of Restaurant Week. Go to the Chamber’s website, www.hiltonhead island.org/restaurantweek, and you can check out all of the participating restaurants and preview their menus and pricing. Plan ahead, go out on a limb, and dare to do different. Try something new. Make a reservation. Last but not least, remember that although the prices may be reduced, your servers are not getting a reduced rent, so if the service is good let them know! Enjoy! Sample the area’s best soups as local chefs compete at the 20th annual Lowcountry Soup Challenge. The event combines tasting, culinary displays, and fundraising. Enjoy amazing soups from local restaurants and chefs as they compete in the Challenge. The Soup Challenge benefits Volunteers in Medicine (VIM), a clinic that provides free medical, dental and mental health services to families and individuals who otherwise have no access to health care. “The annual fundraiser has raised thousands for Hilton Head’s VIM clinic,” said Stan Stolarcyk, Director of Volunteers. There were 1,000 people attending last year’s Soup Challenge, and they consumed 380 gallons of soup, contributed by 19 restaurants, clubs, resorts, and caterers. It isn’t easy preparing huge vats of soup, transporting it to the location, and serving for an entire afternoon, but these chefs do it with a smile. “They never let us down with their creativity, wonderful flavors, and support,” Stan added. “These restaurants support our community and VIM by participating, and we are grateful.” “The Lowcountry Soup Challenge was created as a small event to raise a little money for the VIM clinic,” according to Stan. “It has grown into a community
event that raises significant funds for the Clinic.” Past entries that have warmed the bellies of island residents and tourists lucky enough to find out about this event include bouillons, bisques and other piping hot delicacies, including Vidalia Onion and Shrimp Bisque, Buffalo Chicken Wing Soup and She Crab Soup with Sherry. A panel, consisting of three local culinary experts, will again judge who has the best entry, and event attendees can vote for The People's Choice Award. The Moss Creek Club's Pumpkin and Black Bean Bisque won both the Judges’ Award and the People's Choice designa-
tion at last year’s Challenge - a rare feat for one soup to win both. “Again this year we will be offering items for sale – aprons, kitchen utensils, and our cookbook, 15 Years of the Lowcountry Soup Challenge,” Lisa Nowak added. “The book includes more than 250 soup, sandwich, and bread recipes.” "This event truly is an island favorite and a great Sunday lunch," Lisa said. "We hope the whole community will come out and sample what these restaurants have to offer, for a great cause." At the Soup Challenge, a ticket buys all the soup you can eat and a chance to cast a vote for the “People’s Choice” award. Tickets may be purchased at the event. Alexander Dinerstein is clearly someone who takes a great deal of pride in whatever he does, whether he’s serving guests at Michael Anthony’s, leading kayak tours, or participating in an archeological dig. He is a long-term server and truly a professional. Alex took time out of his busy day to sit down with Taste to answer some questions about what he likes and what has made him so successful at what he does. Taste: How long have you been with Michael Anthony’s? Alex: About 7 years. Taste: What do you like best about your job? Alex: The subtle affect you can have acting as an island ambassador. I waited on a couple earlier this year who were very excited, but apprehensive, to buy a home here. They were frustrated by all the plantations and neighborhoods to choose from and even considered scrapping the whole idea. We spent some time discussing the different communities and a few good questions to ask their realtor. Recently, they returned to Michael Anthony’s and shared with me that I had been a tremendous help in understanding their options and that they had indeed bought a home. New locals and regular diners! atmosphere that makes you feel like part of the extended family. We have quite a bit of fun. Taste: What is the worst part about your job? Alex: Sorry, I don’t think like that. Taste: What does it take to be successful at your job? Alex: Anticipation and attention to detail. You need to know what a guest will desire before they do. Dining should be an experience and the front of the house staff has the responsibility to seamlessly bring the carefully crafted offerings of the chef to the table through the general chaos that is the F&B industry. All the dining room’s a stage and all the servers and bartenders merely players... Taste: What do you like to do when you’re not working? Alex: When I’m not at the restaurant I work part time at Kayak Hilton Head as a kayak guide and captain, taking visitors on dolphin excursions and fishing trips. There’s something magical about our resident dolphins. I am reminded how lucky we are while watching them play in our beautiful island’s waterways. Taste: If you could have any job in the
world, what would it be? Alex: An educator paid like a hedge fund manager. Taste: What brought you to Hilton Head Island? Alex: I first discovered Hilton Head Island while on a childhood vacation. After attending the University of Pennsylvania and the University of Colorado at Boulder, I moved to Charleston to participate in a few archaeological digs. Before moving back west to pursue graduate studies, I decided to take an extended summer stay on the island and fell in love. That was in 1998. Did you know that South Carolina has the 13th highest rate of illiteracy in the United States? Did you know that over 10,000 Beaufort County adults (11%) lack basic literacy skills: That’s over 1 in 10! Does that not beg the question: “What can I do to help?” And if I told you the answer to that was to eat gourmet food and schmooze with some famous local authors would you believe me? Well you should, for Sunday, February 12th from 11:30 a.m. to 3 p.m. the Westin Hilton Head Resort & Spa will once again host Cooks & Books, a melding of literature and food, authors and chefs, all to benefit the very worthy Literacy Volunteers of the Lowcountry. So Give the Gift of Literacy, purchase a ticket, and prepare yourself for an afternoon of fun and food, cooks and books. Literacy Volunteers of the Lowcountry has been helping the low literacy 54 • A TASTE OF HILTON HEAD • WINTER 2011-12
adults in Beaufort County for almost 40 years. Basic skills that most people take for granted, like reading a label on medicine or food, are things that thousands of your neighbors struggle with every day. LVL helps these adults to improve these basic skills so that they can not only survive in our society, but hopefully thrive and live fulfilling lives. The organization is driven by more than one hundred volunteer tutors who help their students set goals and meet them in order to become better citizens of our society, better employees, better parents. Students are from dozens of different countries as well as many South Carolina natives. Julia Ford, former 5th grade teacher from New Jersey, has volunteered for LVL for 2 ½ years. “I read about LVL in the newspaper and thought I could help,” expressed Julia. She currently works with a gentleman in his 50’s, a native South Carolinian. Julia explained that his educa-
tion just stopped after 5th grade. “Somehow he just slipped through the cracks.” In addition to his low literacy, this student is learning disabled and diabetic. He has a full time job as a driver for a car company and lives alone. “He has to be able to read to navigate street signs for his job and medication and food labels for his diabetes and health,” said Julia. “Through his hard work at LVL, this gentleman now has increased self esteem. His health has improved and he doesn’t have to worry about driving down the wrong street. He has learned to do the math that is necessary to figure out how much things cost and whether he can afford something.” Julia said that her student feels that not only the tutors, but everyone in the LVL organization is like family to him. In its 6th year, Cooks & Books continues to grow in popularity. Word has gotten out and chefs and authors are sign-
ing up early to help the LVL cause. Authors will be available to discuss, sign, and sell copies of their works and chefs will whip up some sensational, thoroughly gourmet delicacies to please your palate. At press time, twelve local authors were already inked as well as 11 restaurants and the number was growing. Participating authors include Kathryn Wall, Nathalie Dupree, Jack Bass, Margot Theis-Raven, Sallie Ann Robinson, C.J. Lyons, Patricia Branning, Ken Burger, Jim Jordan, Carl T. Smith, Cathy Holton, and David Young. Their genres range from children’s books to mystery to thriller to cookbook. Local restaurants lining up include CQ’s, Old Fort Pub, Antonio’s, Roastfish & Cornbread, Catch 22, Skillets, Frankie Bones, Wise Guys, Chart House, Cookies by Design, and Tooting Egret. Another added attraction to the event is a bit of friendly competition with the “Heat is On.” Chefs are given mystery baskets of ingredients and have thirty minutes to come up with two original dishes. A panel of judges will choose the winning chef. Last year’s winner of the “Heat is On” and named “Best Under Fire” was Keith Josefiak of Old Fort Pub while CQ’s proudly walked away with the People’s Choice Award. The Cooks & Books Preview Party will be held on Friday, February 10th, at TidePointe, a Vi Community, which is also a presenting sponsor of the event. The Preview Party is a great opportunity to mingle with the authors and the chefs that will be there on Sunday. Tidepointe Executive Chef, Stephen Stewart, will prepare a lavish buffet and there will be a silent auction with a wide range of goodies like catered dinners, golf foursomes, spa visits, hotel stays, picnic baskets… all at great deals. Cooks & Books is LVL’s largest annual fund raiser and it is a no-brainer that the larger the LVL coffers, the more low literacy adults in our community that can be tutored and offered a chance at literacy and prosperity. It’s just another Monday morning for you and me. Not so for Doug. Doug is elderly, physically debilitated, and lives alone. He cannot cook nor can he even get to the grocery store. Doug is dependent on others for his survival. On Monday morning he patiently waits for the knock on his door. The knock comes and Doug motors his wheel chair down the hall and opens the door with a smile. His New England Patriots had won another game the day before and he is ready to talk football with Paul, his Meals on Wheels delivery friend. Paul has been ringing Doug’s doorbell every Monday for years, providing him with a warm, nutritious meal. Paul knows that since football season is Doug’s favorite time of year and since the Pats won, that he better plan on staying a little longer today to talk shop. 56 • A TASTE OF HILTON HEAD • WINTER 2011-12
Meals on Wheels has been bringing Doug food for ten years. They are his lifeline not only for nutrition, but for companionship. Doug looks forward to Paul’s visit not only for the welcome food, but also for the friendship and company; it is one of the few opportunities all week that he has to interact with someone. After setting Doug up with his food, Paul leaves him with a pat on the back and the wise guidance to watch out for the Buffalo Bills as they may just be one of those surprises this season. Meals-on-Wheels Bluffton-Hilton Head is in its 32nd year of service to our community. It is volunteer-driven and staffed, currently boasting 125 drivers that deliver 100 meals a day, Monday through Friday from Sea Pines to Sun City. In fact, aside from one part time meal-setup coordinator, Meals-on-
Wheels is 100% volunteers including the Board of Directors. Unlike Deep Well, Meals-on-Wheels does not accept food donations. All the food is prepared under the guide of a nutritionist at Hilton Head Regional Medical Center; the hospital provides the food prep, storage, work space, and telephone service. In 2010, Meals on Wheels delivered 24,000 meals to an average of 92 clients per day. Recipients are primarily elderly folks or those with health issues that cannot prepare a meal on their own. Meals-on-Wheels receives no government funding and is thus totally dependent on contributions and grants from local charities and agencies, service organizations, corporate sponsors, churches, and individuals. Some of the organizations that have helped so far this year are Hargray Caring Coins, Long
Cove Club, St. Francis Thrift Shop, and The United Way. In addition, Meals-onWheels has raised money through numerous private donations from their “Adopt-A- Client” Campaign which offers people like you an opportunity to help out with varying degrees of tax deductible financial contributions starting as low as $20. So how do you get assistance for your aging Great aunt or your neighbor who just broke his hip? Simple. You call Meals-on-Wheels or go to their new website (www.mowblufftonhhi.com) and they will send someone to interview your friend. The interview determines need and ability to pay. If the person cannot afford anything toward the meal, then so be it. All dietary needs are met by the hospital nutritionist who oversees the meals: low sodium, low fat, renal, pureed, and diabetic meals are all provided. There are some food choices that clients can make and all meals come
with a drink and a dessert. Everyone is looking for a way to help out their neighbors and community during the holidays and there is no better recipient than Meals-on-Wheels. For those of you fortunate enough to be healthy, it’s hard to picture yourself wheel chair bound or living alone unable to fend for yourself. Taste sat down with Armand DeMille to explore the romantic music of the artist. Taste: Who is Armand DeMille? Armand: I am a singer who plays the guitar… not to be confused with a guitarist who sings. Taste: How did you get involved in music? Armand: I loved to sing along with the radio as a kid. I liked The Beatles and The Monkeys. Then I took up the guitar and it gave me an excuse to sing. If you’re auditioning for a band and it comes down to the vocalist and the vocalist who plays the guitar, the guitarist will get chosen every time. Taste: You have quite the repertoire of songs. What is your favorite thing to play? Armand: As a soloist, I don’t have to play anything I don’t like. I enjoy the 60’s, the era I grew up in, and also the 40’s and 50’s when the singers were really strong. 60 • A TASTE OF HILTON HEAD • WINTER 2011-12
Taste: Tell us about your music? Armand: I mix it up. Sometimes I just play guitar and sing, like with a James Taylor song. Other times I use a drum machine for rhythm. When I get into my Sinatra songs, I need background music so I started my own imaginary “Mac” orchestra on my computer, complete with keyboards and horns. I can extract whatever instrumentals I want off of the original soundtrack and then remove the guitar and vocals to perform myself. So you will hear the original music from a Sinatra album but instead of Frank singing, it’s me. Overall, I play easy listening, romantic stuff. Nothing but love songs. I tell my audience, “No Rap and No Crap.” Taste: Where can we find you? Armand: I have been playing at The Studio for five years. The restaurant is a bit bohemian, a bit sexy and very artsy. Classy. The perfect 1st date setting. I’ll start off mellow while people are eating with the Beatles and James Taylor then kick it up later on with some Michael
Jackson. People love to get up and dance after a few glasses of wine. I can sense what the crowd wants and play to them: Soft or loud, slow or energetic. Taste: Claim to Fame? Armand: I played with The Vogues, a 1960’s band kind of like The Lettermen. We traveled around and sang oldies and did reunion concerts. Our hits included “Turn Around Look at Me” and “My Special Angel”. Taste: What do you do when you’re not Romancing The Studio? Armand: I have been working at the Island Packet for ten years. It’s nice to have job security during the week and then the artistic satisfaction of making music and making people happy on the weekends. ½ cup port wine ¼ cup sugar 2 cups veal demi-glace

Preparation: Meatloaf - Combine all ingredients then form into a loaf. Bake at 375° for 25-30 minutes in convection oven. Barley Risotto – Sautee onion in butter over medium heat for 5 minutes, add barley then sautée for 2 minutes. Add ½ of the chicken stock and continue to simmer over medium heat stirring often. Add remaining chicken stock little by little until desired tenderness is achieved. This should take 15-20 minutes. Finish with cream, parmesan, salt & pepper to taste. Port Wine Demi-glace – Combine sugar and port wine. Bring to simmer and reduce by ½. Add demis-glace and serve. Serve with your favorite vegetable!

2 Large Potatoes 1 Egg 1 tablespoon Onion Powder ½ teaspoon Hot Sauce ½ teaspoon Salt 4 oz. Vegetable oil 8 oz. Lump Crab 2 tablespoons Shallots 2 Scallions 4 tablespoons Butter (unsalted) Preparation: Peel and grate potatoes, place in bowl with egg, onion powder, hot sauce and salt. Heat vegetable oil on med-hi temp. Make small potato patty and drop in oil. Cook until golden brown on both sides (approx.. 8 minutes). Remove from pan and drain on paper towel. In separate pan sauté butter, shallots and lump crab. Heat throughout. Serve over pancake. Garnish with chopped scallions and sour cream if desired. Yield: 8 potato pancakes

Add tomato sauce, wine, diced tomatoes, and seasonings. Simmer for 60 minutes. Add the shrimp and cook until tender - about five minues. Serve over white rice and sprinkle with chopped parsley. Each year during the month of February, the Gullah Festival celebration takes place on Hilton Head. All things Gullah - rich history, unique cuisine, and vibrant arts - will be on display at different locations on the island. The celebration, hosted by the Native Island Business and Community Affairs Association, draws crowds from all over the Lowcountry and beyond. 64 • A TASTE OF HILTON HEAD • WINTER 2011-12
The festival kicks off the first weekend in February with a reception and the opening of a month-long art exhibit. An authentic Gullah breakfast of oysters, shrimp and grits, fried fish, and homemade biscuits will be served. The Gullah Celebration is one of the Southeast’s more popular events, drawing as many as 20,000 attendees who come throughout the month of February for the event. Again this year,
guests will be able to sample traditional Gullah cuisine at most of the events fried shrimp, gumbo, cornbread and bread pudding, to name a few. Gullah food is older than the South and as ancient as the world. Even today, cooking traditions remain somewhat consistent. One pot dishes, deep frying, rice dishes, sea food, boiling and steaming, baking in ashes, and basic and natural seasonings are all

characteristics of Gullah food. The cuisine focuses on rice, rice and more rice. Other Gullah foods include conch stew, deviled crabs, okra gumbo, shrimp & grits, fish head stew, oyster salad, and fried flounder. The unique food traditions of Gullah culture contain a blend of African, European, and Native American influences. The spices are what distinguish Gullah food, which is characterized by a distinct “taste” present wherever Gullah people are cooking. The recipes are simply frames; the art work is created in the taste buds of the preparer. If you try to obtain a recipe or cooking directions from Gullah cooks, you will more than likely get the generic response - that they cook “cordin’ ta taste.” This taste is passed down from generation to generation, but unlike other ingredients, it is an elusive quality guided by memory and taste buds, almost impossible to explain in words. Simply speaking, Gullah food is a food culture handed down through practice more so than through recipes. Among the events scheduled for
the second weekend, A Taste of Gullah will feature a sampling of authentic Gullah cuisine and great entertainment. Traditional cultural fare such as gumbo, conch stews, ribs, and all kinds of fried and barbecue dishes will be served. The Marsh Tacky Horse Run, one of the most popular events, is held on the beach the last Sunday of February. Come prepared to sample more authentic Gullah foods before or after the races. The Carolina Marsh Tacky is a small, rare breed of horse, native to South Carolina and well adapted for use in the lowland swamps. These horses were used for farm work, herding cattle and hunting throughout the breed's history. Horse races among the Gullah were held to determine who had the best horse. Preheat the oven to 350 degrees F. Sauté the onion and celery in the butter in a saucepan over medium heat until very limp. Let cool completely, then mix with the saltines. Squeeze the juice of 1/2 lemon, more or less to taste, over the crabmeat. Lightly fold the crabmeat into the mixture so that you do not break it up. Season to taste with sherry. Pack into shells and bake for about 15 or 20 minutes, until just heated through and lightly browned on top. Serves 8.
Jambalaya 4 big yellow onions chopped fine 8 cups water. 4 cups rice 1 bell pepper - chopped 2-3 banana peppers - chopped 3-5 crushed garlic cloves 2 bundles green onions. - chopped 2 lbs hot sausage - chopped 1 whole chicken or pork, cut into pieces Brown sausage and chicken and set aside. Cook yellow onions and garlic, stirring constantly. Add meat and water to cover. Season to taste and cook until meat is tender. Add and cook peppers and green onions, and then add rice. Simmer for around 15 minutes; then take a big spoon and turn the rice over once to bring the bottom to the top. Simmer until water is absorbed and the rice is tender. Serves 8.
