PUBLISHER’S NOTE The publisher’s note is my personal nemesis, a quarterly struggle for something of meaning from me to you. You would think only having to write an article four times a year would be so easy a caveman could do it (oh shoot I think that slogan is spoken for). Anyway, as per usual this issue I was facing my normal writers block when I started thinking about this issue and it hit me. Who is the backbone of the food and beverage industry here on Hilton Head Island? A quick look at the editorial calendar gave me an answer and my topic. One quick glance at the winter lineup and it was clear that the backbone of the highly successful food and beverage industry on the Island is a simple one…… locals! Locally owned and operated restaurants dominate the landscape here. Heck, even some of the chain restaurants are owned and operated by locals. As I perused the winter editorial calendar, every feature focused on a locally owned restaurant. Moreover, these owners are so ‘hands on’ at their businesses that most of them might as well put a bed in the back room as they spend over 14 hours a day running them. The majority of these have been in business for over a decade and some over three decades -- not an easy feat in the restaurant business. Not only are a high percentage of Island restaurants locally owned and operated, but now a second generation of family are taking the reigns and making their own impact. Check out “A Family Affair” article on page 40 and see how the baton is being passed down to the younger folks. No matter who in the family tree is at the helm, there is always an owner, spouse, daughter, son, son in law, daughter in law or relative on site to make sure the business is running smoothly and that your dining experience is a pleasure. One of the perks of living on a small Island with so many fantastic dining options is the personal service and friendly faces you encounter each and every time you visit one of these locally owned and operated establishments. With the relaxed pace of the winter months, there is no better time to enjoy your favorite restaurants or to try some new ones. For 12 years, as Tapas has established itself as the go-to restaurant on the island for small-plate inspiration, people have been trying to figure out the secret behind chef/owner Ardis Matthews’ success. Well folks, we can safely say we have found her secret ingredient. You won’t find it in any of the culinary offerings in the staggering menu of tapas-style creations. It’s not in the coquille a la crème, it’s not in the grilled lamb chops, the chicken Vicksburg or the duck au cassis. It’s not in any of them, but it’s in all of them. That secret ingredient is the last one you’d expect to find in such an array of dishes. It’s black eyed peas. Not the Southern staple legume, mind you. Here we mean the bootyshaking four-piece pop band The Black Eyed Peas. “I have a very long and eclectic playlist, but I like to crank up my music back there in the kitchen,” said Matthews. The Peas, along with tunes from the likes of Katy Perry, provide the high-energy soundtrack to a night in the kitchen at Tapas, where Matthews is a one-woman show. It’s the perfect pop compliment to Matthews, who herself is a high-energy force of nature. To hold a conversation 10

with her is to have floor seats to a barrage of one-liners (“You’re only young once, but I can be immature forever”), culinary stories from her travels (such as her friend accidentally ordering an entire beef head at a Le Train Bleu in Paris) and treatises on her cooking philosophy (“There’s no such thing as simmer in my kitchen. It’s 45,000 BTUs of power under those pans”). She’s a remarkably engaging woman, and her fiery passion and bottomless energy, which have driven Tapas for more than a decade, come through in every dish.
And when we say every dish, we mean every dish. And there are many. Considering that Matthews is generally running the show on her own in the back of the house, the menu at Tapas is extraordinarily robust. Part of that can be explained by Matthews’ boundless enthusiasm, but a lot of it can be explained by the entire world of culinary influences she brings to bear on her menu. Matthews has traveled the globe extensively, and it would seem that every trip inspired a new menu item at Tapas. “I can’t think of a destination where I don’t like the food,” she said. “And I’ve eaten my way through Asia, all across Europe, Latin America… I haven’t gotten to Australia. But I’m thinking shrimp on the barbie? I can handle that.” Her travels have brought her to restaurants around the world, at every point of the fine dining spectrum. A perilous voyage in a leaky Mexican water taxi brought her to a town called Barre de Navidad serving food Matthews described as “heaven in my mouth.” A trip to Spain found her so in awe of a lobster salad at Madrid’s only five-star restaurant she could hardly bring herself to ruin it by eating it. In Martinique she hunted the hills for a
place known only to locals that served a goat stew she described as a little bit of heaven. Then of course there is the beef head her friend accidentally ordered in Paris. “I have no memory of what the rest of us ate; we just watched him,” she said with a laugh. “I’m pretty adventurous, but I don’t want my food looking at me.” This global cuisine is worlds away from the food of her youth, where young Ardis Matthews was prompted to buy her first Betty Crocker cookbook in the third grade due to a lack of options at home. “I started cooking in third grade because I went to other children’s’ houses and the food was really good. And I’d come home where the food was really, really bad. God bless my mother, she was a horrendous cook. No, not horrendous; really bad,” she said before pausing, considering and amending, “No, I’m going to stick with horrendous.” It’s said, like most of the dialogue in the Ardis Matthews show, with a good natured laugh. The Betty Crocker cookbook got her off to a good start, even if the first results were less than five-star. “The first dessert I made, I shoved walnuts into a banana and drizzled chocolate and caramel sauce over it. My brother’s probably still eating that today.” Fortunately, there were more culinary influences to be found around Matthews’ native Chicago than Betty Crocker.
“I started off with things like spaghetti sauce. I went to Mrs. Nitty two doors down; she was a great Italian cook,” she said. “In summer I’d sit on her back stoop and just enjoy the smells. She’d pass me a meatball. One time I asked her if I could just watch her make the sauce. She was kind enough to let me watch.” That introduction into the kitchen started a road to discovery that Matthews has continued down as she has built her reputation on the island for astounding small-plate meals. “I still make her sauce, but fortunately I’ve gotten past the walnut-stuffed banana. I would much rather serve my deep fried cheesecake with warm passion fruit dipping sauce or my crème brulee or my warm butter cake with warm brandied currant cream sauce,” she said. “I just gained five pounds saying that. I ask a lot of my Spanx.” But as high-class as the cuisine has become, Matthews has never forgotten the simple joy she found in the family
kitchen, an aesthetic that makes its way into the décor of Tapas. Here, food that would normally find a home on silk linens surrounded by the finest silver is served without the pretension, in a dining room that feels like your mom’s kitchen, right down the mismatched ceramic rooster salt and pepper shakers and cookbooks lining the shelves. It’s an interesting juxtaposition of high-end dining and salt-of-the-earth décor, but the result is a creation as approachable, eclectic and inviting as the chef. “I like the eclectic, ‘come on in’ feel we have here,” said Matthews, gleefully pointing out the customer-painted portrait of four dogs playing poker that adorns one wall. (The dogs, incidentally, are all local: Matthews’ two pooches named Elvis Presley and Buddy Holly, her late Cockapoo Pączki and her friends dog, Britney Spears). It only goes to show, when the food is fresh, delicious, and done right, you can skip the high-brow décor and just — heaven forbid — actually enjoy yourself. Maybe crank up some Black Eyed Peas, whatever makes you happy. “There’s a reason they call it the joy of cooking,” she said. “I cook joyfully. I have a wonderful time every night. How many people get to say that? I’m going to work and I’m going to have a wonderful time. It’s pretty cool.” Tapas is located in Port Royal Plaza Near Sam’s Club, 95 Mathews Drive, Suite B5. Appropriately named, Amigos has been making friends since the day they opened in Circle Center in early 1995. From the authentic Mexican food to the fresh salsa bar and the ice cold cervezas, Amigos has amassed a vastly loyal following of friends and fans from near and far. Owner Jimmy Prignano was a restaurateur in Killington, VT before he decided to trade up snowshoes and Jimmy’s Bayside Dining for swim trunks and Amigos Cafe’y Cantina. He saw Amigos as filling a niche on the Island as the first authentic Mexican taquería. Before designing his interior and setting his menu, Jimmy visited taquerías in Southern California and Mexico from Baja to Cabo San Lucas. “We have the same concept as the taquerías, but we

are better,” said Jimmy. “Back in ’95 there was a growing Mexican population on the Island and the only Mexican food was Tex-Mex,” he explained. Authentic Mexican means nothing is ground. Their carne asado is made from Angus beef and their famous pork carnitas are chunky and made to order. Their salsa bar is flat out amazing and filled with fresh salsas, flavors and aromas just bursting to season or spice up your meal. An additional notch in their authenticity belt was carved thirteen years ago when Jimmy married Tonya, who hails from San Louis Potosi in Mexico, and now runs the kitchen. When asked what the keys to his success are, Jimmy did not hesitate to give the credit to the “girls in the
kitchen” who have been slicing and dicing for him for 17 years. “That’s why we keep it so consistent,” he commented. “Everything is made fresh daily and my wife and I are here all the time. We have no absentee ownership and the food quality is the best.” Aside from a loyal local population, Amigos has a stalwart reputation with visitors too. “Tourists drive on to the Island and stop here before checking into their villa. Then they will come back and eat here 4 times in their weeklong stay.” Jimmy recalled a family that was in recently and the mother told him that before their trip her daughter woke up screaming in the middle of the night. When she went to comfort her, she learned that the daughter was screaming with delight because she dreamt that she was on Hilton Head and eating at Amigos! Jimmy goes to great lengths to get the freshest and best ingredients for his dishes. “I send back food that does not meet our standards,” he said. The guacamole is made fresh daily and he only uses Californian Hass avocados when they are available. For Tonya’s famous Queso Dip, he has a special cheese shipped in from Wisconsin. “It took me a few years to find just the right cheese. This one is perfect – not too salty – and our cheese dip is a big hit.” Every morning their cheeses are
shred from 40 pound blocks and Jimmy and Tonya personally make the salsas – mild, verde, experimental (hot), and pico do gallo. Their chips are made only after an order is place, served piping hot with some of that homemade salsa on the side. The menu at Amigos is the same for lunch and dinner. “I would rather stick
with a friend and they will cut it right down the center for easy sharing. Enough to feed two or three people, the nachos are another popular choice and are loaded with beans, cheese, jalapeños , tomatoes, sour cream, guacamole, olives, green onions and optional additions of steak or chicken. Like the barbecue salad and nachos,
to a few things and do them well than do a lot badly.” They serve the traditional tacos, burritos, quesadillas and tortas with fillings that will please the meat, chicken, and seafood lovers as well as the vegetarians. A torta, for those unfamiliar, is a Mexican sandwich served on a big roll, like a Kaiser. Amigos has their torta rolls baked specially for them and Jimmy describes the sandwich as, “Messy but delicious.” “Our veggie burrito will turn people into vegetarians. It’s full of bell peppers, mushrooms, zucchini, onions, rice and black beans,” commented Jimmy. They have oyster and fish burritos and an assortment of salads. For the little Amigos, there is a choice of taco, quesadilla, burrito or even a hot dog. The number one seller at Amigos (which I can attest to its “greatness”), is the barbecue chicken salad, which is enormous and served in a crisp flour tortilla. To find the bottom of this salad is a feat in itself, so I prefer to split it
everything on the menu is a large portion which is wonderful because the leftovers are as good as the real deal and then you get two meals for the price of one! A bang for your buck is definitely an understatement at Amigos. Folks do not just flock to Amigos for
the food. There is also the matter of Jimmy’s world famous margarita which is a thing of beauty. Jimmy mixes up his own concoction and, “People love them. I get so many compliments.” While the Gold Margarita is the biggest seller, he whips up many a Coconut Margarita and even an occasional cinnamon one. The bar at Amigos is fully stocked with all of your favorite Mexican beers which are kept on ice in a big tub and served super chilled, the way they should be. You can choose from any of your favorite flavors -Corona, Dos Equis XX, Sol, Pacifico, Modelo, Tecate – and for a non-alcohol drink there are Jarritos, which are sugary, flavored sodas. The walls at Amigos are adorned with sporting paraphernalia (Jimmy is from Massachusetts and is a big Patriots and Red Sox fan) and license plates, many of which are upside down. When you stop by, you should ask Jimmy why so many are upside down – his answer will make you smile and might spark some debate. Annie O''s Southern Eats is located in an unassuming shopping center on the south end of the island. They serve Southern food prepared by owner and longtime island chef, Tom Egerton. The delicious down-home cuisine will take you back to your grandma's kitchen. Tom took a few minutes out of his crazy busy schedule to answer questions and tell us about himself. “I’m from Albany, NY and have been on the island since ‘91,” Tom said. “I went into the Navy at 18. I had always planned to either go to culinary school or join the navy, and I did both.” In the Navy, he was a Cryptologic Technician (CT), which is a Navy job specialty in support of the national intelligence gathering effort. “It was a pretty cool job for an 18 year old kid,” he said. He used the money he made in this position to attend the New England culinary institute in Montpelier, Vermont. “It was a great school with a great program.” Tom said his mother was the biggest influence in his becoming a chef. The restaurant is named after Tom’s mother, Anne, who sparked his interest in cooking through her talents in the kitchen. “When my older sisters were grown and out of the house, my mom was glad to deviate from the same old dishes she had made for the past 25 years. The sisters were picky eaters, but I was a bit more adventurous.” “Mom showed me a few fundamental dishes to start my repertoire, some of which I still try to replicate on my day off. One which I make at home is chicken with ginger, soy, cinnamon, and tomato - a wacky combo but so delicious! I've also been making a white spinach and mushroom lasagna, in 26

the crock pot, and it’s also delicious.” “I moved to Hilton Head shortly after graduating from culinary school in ’91 and started my professional career at Stripes, a great place where I was able to hone my skills under a talented chef. I have also worked at Brian’s, Juleps, and the Haig Point Clubhouse, before landing my first head chef job at Crane’s Tavern in 1999, and was there for the next 12 years,” Tom said. “After years of working for others, I finally decided to take the plunge and establish my own restaurant. I wanted to give people a homemade meal at a price they could afford,” Tom said. Down-home decor in the restaurant includes a curved wooden bar that invites customers to get comfortable, and cloth-covered tables that extend a hospitable Southern welcome. Tom’s favorite dishes to prepare at Annie O’s include fried chicken soaked in buttermilk and hot sauce, shrimp and grits, sweet potato ravioli, and Annie-O's crab cake club, with a fried green tomato. Popular side dishes include macaroni and cheese, collards, stone ground grits, and black-eyed peas. And there is a rotating selection of homemade desserts! “Annie O’s features all made-from-scratch dishes in a casual setting that will leave you satisfied without breaking the bank,” Tom concluded. Scenario #1: You have just finished an exquisite meal surrounded by people with whom you love spending an evening. You have shared laughs and stories and you are not ready to call it a night. The bill be damned and apologies to the bartender and waitress who are waiting to close your tab so they can go home (you best tip them well). Because, after all, the night is young and it is time for an after dinner drink to accompany more conversation. A glass of strong Port or a Cognac. Which to choose? Scenario #4: You ate too much. Again. The waiter comes around for dessert orders and you really want a piece of that heavenly strawberry cheesecake but, alas, there is no room. Eureka. A dim light bulb goes off in the cobwebs of your brain. "I will have coffee with Bailey's and whipped cream," you announce with confidence in the direction of the waiter. "Brilliant!" cries out your groggy, well fed companion. "And I will have a Brandy Alexander lest you drink alone." Scenario #23: There's a frightful nip in the air this night -- A bone chilling cold that pierces your core. Dinner is over and the process of donning coat, hat and gloves is not a pleasant thought. What is a pleasant thought is an after dinner drink that will warm you from the inside out and help you sleep like a baby. Ah. An Irish coffee should do just the trick. Whatever the scenario, 3 or 33, the bottom line is that after dinner drinks are a welcome way to finish a meal and warm the belly so no excuses are necessary. After dinner drinks come in many shapes and sizes. The category is so broad that few restaurants actually carry menus for them as they include everything from specialty wines and spirits to coffees and shots. They are a wonderful way to end an evening and finish off a good meal so they should not be forgotten. With so many choices, it will not be hard to find something to your liking. Let’s start with my favorites – the “hot” beverages, like Irish coffee, which take the bite out of winter. As a native of Buffalo, NY, I assure you that we Buffalonians know how to spice up our coffee drinks almost as well as we know our Bills’ statistics. I’m not a fan of Irish whiskey alone, but a goodly dose of it in my coffee with a dollop of whipped cream is enough to make any wintry night warm. Ireland is not the only country with a coffee named after it, there is also Spanish coffee (Brandy), Mexican coffee (Kahlua), Italian coffee (Amaretto), French coffee (Grand Marnier), Russian coffee (Frangelico and vodka) and Jamaican coffee (Myer’s Dark Rum and Tia Maria). There are other hot beverages that can also hold their liquor. Hot teas go well with flavored vodkas, rums and fruit liqueurs while hot chocolate is sweet enough to take a harder hit with tequila or whiskey. Raise the

spirits of your apple cider and serve it hot with spiced rum and a cinnamon stick – perfect for a tailgate or after a winter walk. Cordials are probably the most popular after dinner drinks. They can be served neat or on the rocks and are usually sipped slowly to enjoy every last drop. The line-up includes flavored and crème liqueurs. Italians favor Sambucca (tastes like black licorice), Grappa (grapes), Frangelico (hazelnut) and Amaretto (almond) which they often pour into their coffee and serve with biscotti. More decadent and dessert-y-sweet cordials include Irish Crème, Kahlua, and Tia Maria or fruit flavored liqueurs like Grand Marnier (cherry) and Chambord (raspberry). Have you ever had a French Kiss? It will wet your lips with a layer of Bailey's floating delicately on top of Chambord. Yum. Dessert wines and sparkling wines add a sweet or bubbly touch to your post dinner palate. The sweet choices, including Muscats, ice wines and Sauternes, can pair well with desserts or cheeses while Ports and Sherries have more alcohol and do well with fruit and chocolate. Champagne and Prosecco will of course give you a bubbly good feeling and are often chosen in lieu of dessert. Cognac and Armagnac are considered part of the “brown liquids” family and fine French restaurants will have a trolley of them ready for the choosing at meal’s end. These guys are meant to be savored and imbibed slowly in a snifter. They tend to have a very distinct flavor (strong!) and it may take a while to acquire a taste for them. Nevertheless, if you treat yourself to a VSOP, which has been around for over 700 years, or an XO, you are sure to snore the night away. Also falling in this “brown liquids” field are scotch and bourbon. After dinner cocktails which include a combination of flavors are always a popular choice and will cure any sugar fix you need thus no dessert is needed. Some of the favorites are the Brandy Alexander which is three parts brandy, 1 part crème de cacao, and 4 parts half and half; and the chocolate martini which is 2 parts vanilla vodka and 1 part each chocolate liqueur and crème de cacao. Some after dinner drinks are served on the rocks like the trendy ‘Russians” -- Black Russians (vodka and coffee liqueur) and White Russians (Black Russian topped with half and half). After dinner shots that your bartender would be happy to mix are the chocolate cake shot, equal parts vanilla vodka and hazelnut liqueur, and the B52, made up of equal parts Irish cream, coffee, and orange liqueur. At the end of the day, literally and figuratively, the sky is the limit when it comes to choosing your poison. There is a taste for every mood and an accompaniment for every dessert. When in doubt, always consult your waiter or bartender and they will prolong your evening in style. Salud and sweet dreams!

Family businesses have been around forever. Consider the throne in England that has been a family affair for centuries. When all is well within the family, rule is passed down peacefully from generation to generation. When things start to go awry, heads start flying (literally) and the family business faces demise. So whether you are Queen Elizabeth or Bert of Bert’s Barbeque, the pressures of keeping a family business on track are tremendous. While there are those who warn against mixing business and pleasure, there are quite a few local restaurants that have proven the naysayers wrong and have welcomed family members into the fold in various capacities and enjoyed great success. All else aside, it is undeniable that in a family business all parties share the same interest and loyalties, you know each other’s personality (flaws) ahead of time, and you work with people you love (most of the time). Not only that, you are creating a legacy for your family which is not so very different from what goes on over in Buckingham Palace where Kate is pregnant with child number two who will become fourth in line to the throne. And so the family dynasty lives on. In pursuit of the power of family, Taste wanted to visit with some of our restaurateurs and find out their take on operating a business that has turned into a family affair.
Charlie's L’étoile Verte: Somewhere in the back of his mind while sampling and practicing the culinary arts in France, Charlie Golson thought it might be fun to own a small restaurant and run it with his family. When he opened Charlie's L’étoile Verte in 1982, his daughter Margaret was a new born. Twenty odd years later, while pursuing a college degree, Margaret forged an interest in wine and consequently her father's business. She started at Charlie’s as a hostess, while learning the ropes and increasing her knowledge of wines. "She worked her way in because she was good,” said Charlie. It was a few years later that son Palmer joined the ranks soon after receiving a degree in Forestry from Clemson. "Palmer can walk you through a forest as well as any kitchen," commented Charlie. "When he came on, we had just moved to our new location on New Orleans Road and I had a huge mortgage. I think he felt sorry for me,” Charlie said with a chuckle. So with Margaret out front ("she is the one who looks good by the front door") and Palmer heading up the kitchen, 40

Charlie's long ago vision has come to fruition. Aside from greeting guests, Margaret also deals with employee hiring and their schedules, and she happily does all wine tasting, buying and promotions. Charlie has watched his role diminish as the younger generation has taken over and he now just makes desserts in the morning, works lunch and calls it a day at three. "They haven't completely gotten rid of me yet. They say I'm still somewhat useful because I have so many recipes and only share them sparingly."
Reilley’s: It takes three notebooks and four pens to record the Reilley family intricacies of who owns what with whom, but suffice to say that a family affair they are. With the financial backing of Peter Kenneweg and Serge Pratt, Tom and Diane Reilley opened the doors to Reilley’s (south end) 32 years ago when daughter Erin was a toddler. At 15, Erin started working at Crazy Crab and Reilley’s as a hostess and eventually waitress. Erin returned from college in 2000 after Reilley’s lost its manager deciding, “It was time to come home and help.” Today, Erin and her husband Jamie, are managing partners and do everything from the bookkeeping and accounting to managing the front and back of the house. Recognizing the need to change with the times, Tom commented: “I have tried to allow the younger generation to make more decisions pertaining to what is going on now versus 32 years ago. Erin is vibrant and has a great attention to detail. She cares about the customers and staff as much as I do and is hands on 7 days a week, 52 weeks a year.” Two more of Tom’s children, Brendan and Keith, are involved in the
Aunt Chiladas:
Another Reilley/Kenneweg venture, Aunt Chiladas opened in 1986 to serve the Mexican appetites on the Island. It is now owned by Tom’s son, Brendan, along with David Reilley (Tom’s brother), with Brendan at the helm as managing partner. Before assuming his role in the family restaurant dynasty, Brendan went to culinary school and ran the kitchen at Reilley’s south and at a restaurant in Hawaii. Brendan views the whole family dynamics as “a constant expansion”. That would be accurate considering that Brendan and his younger brother, Thomas, also own The Boardroom and they just started the Carolina Crab Company together. “Some came in and others got out, “ said Brendan. Of Tom’s seven children, 4 have stayed in food and beverage and have a hand in one of the family restaurants. Revolving door it may be, but the Reilley family definitely has the luck of the Irish on their side when it comes to successful family businesses.
restaurant as investors. “I had always hoped to have my kids involved and I hope they carry it on for another 32 years,” commented Tom. While Tom may say he is passing the buck, Erin will tell you, “My dad says he retired 7 years ago, but he is still there ALL the time.” Also a family affair, Reilley’s north is run by managing partners, Laura and David Reilley, who is Tom’s brother and owns the north end spot with Tom, Diane, Erin and Jamie.
Crazy Crab: Peter Kenneweg started the Crazy Crab (north) in partnership with Tom Reilley in 1984 after a successful venture with the Hofbrauhaus where son, Courtney, got a start as bus boy, kitchen help, and waiter. While Peter was seeing to the operations of Crazy Crab north, Courtney went off to undergraduate at Georgetown and then to Duke for a masters in business. After stints in the corporate world and the army after 9/11, Courtney decided two years ago that he would like to move back to the lowcountry and he began to show an interest in the restaurant. “I was happily surprised when he wanted to come back home and join the team,” said Peter. “He has a great business sense, so I just guided him along until he understood what we were about. Now I give him free range and he always has new ideas.” Courtney is in charge of everything at the north location from the financials to coordinating the daily operations with the chef and front dining room manager. Peter, meanwhile, has happily taken a back seat and says that for the most part he is 95% out of the business. “He is doing what I did for over 20 years, but he is doing it better than me,” Peter graciously conceded. At the Crazy Crab in Harbour Town, managing partner Chuck Larson lets his three children – Erica, John & Jackson – in on the fun during their summer vacations although he admits, “They would rather be fishing.” ATASTEOFHILTONHEAD.COM

Hudson’s : Hudson’s opened in 1967, two years before the first Heritage Golf Tournament and 15 years before the four lane bridge onto the Island was built. Brian and Gloria Carmines purchased the popular waterside restaurant in 1975 and turned it into the Island anchor and corporation that it is today. Their son, Andrew, started working there at age 11 doing odd jobs like cleaning the parking lot and checking in the shrimp. A college education and handful of years later, he returned to the Island and his restaurant roots in 2006 and started learning about daily operations. In 2009, Andrew assumed his current role as general manager and now he does everything from hiring and training the staff, to financials, contracts for the seafood business, and running the oyster farm. So while Brian is still the President and principal owner, he has now assumed more of a supervisory role as Andrew runs the show and his wife, Erin, does the marketing. “My dad is a wealth of information and helps guide me through things. He is a good sounding board when I need him,” said Andrew. As for the next generation of Carmines? “I have two daughters that are 2 ½ and 1. So far their only role is to make an occasional cameo,” said Andrew.
Plantation Café and Callahan’s:
Crane’s: Beth Ann Crane grew up in Philadelphia in the midst of the family restaurant business – living it and working it – and now can boast that she is the fourth generation of her family to own a restaurant. When Beth was growing up, the Cranes often vacationed on Hilton Head and she and her father, Hank, developed plans to come down and open a spot in Charleston. They just happened to look at a building on Hilton Head one day in 1999 and ended up walking out with a signed contract and thus Crane’s Tavern & Steakhouse was born. The name was a no-brainer for the father/daughter team as that is what all of their family taverns in Philadelphia are called. “People from Philly know our name as we have been around for generations,” said Beth. At 78, Hank’s role in the business has diminished over time while Beth is the general manager and juggles daily operations, financials, and wine lists all while running Muse restaurant in Charleston.

Vic Neely will be the first to tell you that family businesses are rewarding and complicated. “The dynamics are tricky. Some employees think family has it made, but in reality there is more pressure on the younger generation and it is harder on the older generation to make it even across the board,” said Vic. In the restaurant business since ’81, Vic worked for a restaurant chain before moving to the Island and buying Callahan’s Sports Bar & Grill in 2004. Soon thereafter, he expanded and opened up Plantation Deli which is now called Plantation Café and boasts three locations. Vic’s son, Darrell, started working Callahan’s as a cook and is now district manager of Vic’s 5 restaurants (he has another in Savannah) and 2 pool bars. His other son, William, has also helped a bit with the family chain. “My role has changed but not lightened over time. It will continue to change as we grow with our employees and Darrell’s role, meanwhile, is always expanding.”
Skillet’s: Take the whole older /younger generation dynamic and flip it and that is what you have going on at Skillet’s where Amie Baima is the owner and her parents, Darlene and John, work for her. “I have the greatest parents ever. They just jumped on board and help me with anything I need. How many people can work every day with their parents and still have a great relationship?” said Amie . It was Amie’s interest in the culinary arts, not a childhood growing up in the business, which led her to major in them in college and pursue them as a career. “My father doesn’t always understand that we don’t do things now like his generation did 30 years ago. I explain to him that I maintain the same basic principles for success that he instilled in me, but those principles are now applied differently though the use of technology,” Amie expressed. As for the third generation at Skillets, “My son, Evan, claims he will never work in food and beverage when he sees how hard I work. I tell him ‘good!’ Go make some money!”
Stellini: It was 25 years ago that Joe Pesce bought Stellini's while his daughter, Elise, was working there as a hostess and his future son-in-law, Kyle Parlagreco, was manager. “The restaurant had only been opened a year before it came up for sale and we thought we could make a better go of it,” said Joe. “When I first bought it, I knew owning a restaurant was completely different from my background so I worked 100 hours a week to learn the business and become confident in it.” A quarter of a century later, Elise and Kyle share ownership with Joe and “they run the show”, taking care of all day to day business in the “front of the house” while their chef of 10 years tends to the back. Either Elise or Kyle is on hand at the front door every night, greeting customers by name. While Elise will tell you that she and Kyle are just trying to lighten dad’s load, Joe admits that he now goes there infrequently, allowing for the next generation to take control. Kingfisher:
Ela’s:
On the water at Shelter Cove, the Kingfisher is a massive 400 seat restaurant purchased by Paul Stephenson in 1992. Paul built a family corporation comprised of commercial properties up and down the east coast. Upon Paul’s death in 2008, his children assumed and divided up the management responsibilities for the assets. Kingfisher was the only restaurant in the estate, and it is now run by Todd Stephenson with input at weekly meetings from brother Mark and advertising copy from sister Susan. “My dad loved the social aspect of owning a restaurant. That’s why he bought it and why we have so much live entertainment,” noted Todd. An interesting twist to this family business is that it is run out of Arizona. Todd does all payroll and bill payments from afar. When it comes to what is going on in the restaurant, he can rely not only on the experience of their general manager who has been there for 18 years, but on a bank of 16 cameras that send live images of all the action to Todd’s desktop. “I can see more on those cameras than I can see when I’m there,” commented Todd. “I can call the general manager and tell him that there is someone waiting at the front door and I can see the number of tickets that are up.”
Earl Nightengale, owner of ELA’S, grew up in Chicago in the family restaurant business and then went corporate, working for big name hotels. While on the Island heading up renovations at the Omni, he noticed that a restaurant on the water in Shelter Cove was for sale and he saw his opportunity to create a family business. ELA’S is named after his three children, Erin, Lauren and Alex, who have been front and center in making the restaurant a success since day one. An interior designer by trade, Erin has remodeled the interior of the restaurant while also handling marketing and community relations. Lauren, the middle child, has a background in business and HR, and is vice president of human relations while Alex, with a degree in finance, minds the money matters. All of Earl’s children are married, and each of the spouses are involved also including Lauren’s husband who does technology, Erin’s husband who manages and plays and books the music, and Alex’s wife who is floor manager and hostess. Asked about the complexity of having so many family members involved, Earl responded: “I think it’s easy. Everybody is invested which means they are more cost conscious, have a long term commitment to growing, caring for our product, and maintaining our image.”

In closing, I think it is interesting to note that of the eleven restaurants showcased in this article, seven of them have been in business for over 25 years. With the merry-go-round of restaurants around here, I guess that is pretty strong testimony to the merits of owning a family business. Cheers!

The Soothing Sounds of

If you close your eyes and listen to the soothing songs and sounds that John Brackett plays, you can easily conjure up a picture of Fred Astaire and Ginger Rogers floating on the dance floor, dancing cheek to cheek. Not only will John’s Jazzy music make you smile with its smooth and polished tones, you will find yourself relaxed and swaying to the music. Growing up in Baltimore, John used to visit his grandmother where he would sit down at her Baby Grand and experiment with chords and notes and make music to his heart’s content. He nurtured this love for music throughout his youth, taking up the trombone in third grade while continuing his education on the piano. “I have always felt that music offers growth through experience. You can always improve your talents through practice,” said John. And practice he did. While most kids learn their trills and crescendos playing classical artists, John was all about Jazz from the get-go. “I used to listen to my parent’s albums and that’s how I developed my love for Jazz,” he explained. John moved to Hilton Head in 1989, grandma’s Baby Grand in tow, with visions of playing as much music as possible. Over the years, John has shared his Jazz standards on the piano in venues like Redfish, where he plays weekly, and The Jazz Corner where he occasionally plays with Jeremy Davis, a sax player that comes over from Savannah. The John Brackett Trio, his go-to band, is rounded out by guitarist, Howard Paul, and bass player, Mitch Hennes. “For me, there is nothing more exciting than playing the piano.” John’s fingers glide over the ivories to the tunes of legends such as Harold Arlen, Cole Porter, Duke Ellington, and Harry Warren. Jazz aside, John’s mastery of the piano is also enjoyed by the parishioners at St. Luke’s where he has played hymns and contemporary Christian music for 15 years. In addition to his music, John has followed his other passions for photography and fishing and turned them into careers. Brackett Photography, specializing in weddings and commercial work, has been around for 18 years and John runs charter fishing tours on his boat Sweet Pea out of Skull Creek. While he can’t bring his piano on board the 22 foot vessel, he always has his camera in tow to shoot memories for his clients. You can enjoy the John Brackett Trio at Redfish restaurant this winter on most Wednesday nights. “Hopefully our music is easy on the ears. We are just trying to compliment what Redfish already does well.”

The Sandalwood Food Pantry
Providing Sustenance and Sociability to those in Need BY RISA WILLIAMS McMILLAN
At first I thought it very poignant that Mud, our fearless publisher, asked me to do an article on the Sandalwood Community Food Pantry (SCFP) for our winter issue which encompasses the season of giving. What a great idea if we could inspire our readers to give to SCFP, I thought. Then I spoke with Reverend Dr. Nannette Pierson and learned that this organization not only needed gifts, but needed hope, community love, and perhaps a miracle. For the very day that I spoke with Nannette, the founder of this amazing and charitable organization, was the same day she had received word that her food pantry was losing its lease on its home – a home where food was stored and distributed and humanity was shared; a home where hundreds of families that live below the poverty level visited twice a week to receive sustenance, support, and love. Nannette told me that day that she prayed for a miracle to find a new home. No stranger to adversity, Nannette has survived a nasty divorce and third stage cancer and was destined to survive this obstacle too. A miracle did come in the form of Queen Chapel A.M.E. Church,
which graciously opened its doors and offered sanctuary to SCFP. So seven days before being forced to move to who knows where, SCFP was back in business to help feed the hungry. In a post on their Facebook page on the day of the move, Nannette wrote “I know for sure that our purpose, to feed the hungry, was the key to our success…” Nannette started the SCFP in 2009 after moving here in search of a fresh start. “I heard the children calling to me and telling me that they were hungry,” said Nannette. “I knew I needed to feed them.” She called Beaufort County about her mission and they gave her some space to use in the Sandalwood Apartments Community Room. When she first opened her doors, Nannette fed 5 families. The Sandalwood Food Pantry has since changed locations twice and is now a community of over 650 families that come together twice a week to not only pick up food, but to serve one another and lift each other’s spirits through support and prayers. “At first they came to distill hunger pains and take away food. Today I see more joy in what they are giving each other than taking away. Someone donated 100
chairs to us and we set them up and sit in our courtyard. We are one family now,” said Nannette. “These are not just poor people. They are our neighbors.” Recently a woman who had been coming to the SCFP for five years had to move away to take care of a sick family member. “She always kept her lucky charm on her – a silver dollar. Before she left, she gave me a hug and pressed her lucky charm into my hand. I told her No! No! But she wanted me to have it as a thank you. These people have nothing and they give everything.” How can you help? Volunteering, Food and Finances. Financial donations are always welcome and would help toward a building fund and the purchase of items that are not donated. Food donations, of course, are welcome too. From humble beginnings as a threehour wine tasting in a hotel parking lot, the Hilton Head Island Wine & Food Festival has evolved over the past 30 years into a weeklong culinary extravaganza culminating with the largest, tented outdoor wine tasting on the East Coast. Last year, nearly 5,000 people from across the country and around the world enjoyed an array of Great Chefs of the Island Wine Dinners, wine tastings and knowledge sessions, movie screenings, author receptions and exclusive VIP experiences. In honor of the event's pearl anniversary, March 9-14, executive director Paula Magrini promises even more diverse offerings and venues. While new event details were not available at press time, the ever popular Public Tasting with its 56

hundreds of domestic and international wines to sample, cooking demonstrations, live entertainment, silent auction, retail market, Bartender Challenge and Waiter's Race is still slated to wrap up the festivities at Historic Honey Horn on Saturday, March 14. The Public Tasting tends to receive most of the attention, however, the cornerstone of the Hilton Head Island event -- and what sets it apart from other wine and food festivals -- is its invitation-only International Wine Competition. Over the course of two days in early February, a prestigious panel of 20 judges personally taste 900 wines at various price points and numerically determine winners in over 30 categories. Medal-winning wines of this double blind tasting are featured
throughout the Wine & Food Festival and can be bid on at select silent auctions. Those deemed the "best of the best" are announced at Saturday's Public Tasting. The competition is a win-win situation for all involved, says head judge Tommy Hines, Regional Sales Manager for Trinchero Family Estates, the country's fourth largest winery and producer of high-end California wines. Hines has been the competition's lead judge for the past three years and has served on the festival's volunteer board for more than two decades. "Medals are important to the wineries," he explains. "If you go to California, if you go to Washington or Oregon, all the medals they have accumulated are in their front lobbies. It's that level of achievement the wineries look for."
Only a handful of wine and food festivals have a competition component and the goal "was to elevate the quality of judging so we were looked at with sophistication," says Hines. "It's been an evolution over the past seven to eight years. The recognition of the judging is substantially higher and the quality of the judges is substantially higher than it has been." In North America, only 140 professionals have earned a Master Sommelier diploma, the highest accreditation awarded by the Court of Master Sommeliers, the premier international examining body for beverage knowledge and service. Up to four of these Master Sommeliers will judge the International Wine Competition, along with several Advanced and Certified Sommeliers, wine industry experts and wine writers. Hines points out that “judging wine is basically your ability to judge sweetness. Obviously, people like sweeter wines, it’s just natural. You can only taste four things – sweet, sour, bitter and salt – everything else is olfactory, when you smell the wines. That’s when wines become more sophisticated. There are a lot of levels of sophistication and a lot of levels of achievement in the judging.” “Basically it’s a quality issue, but it doesn’t have to mean price,” he continues. "Wine is such a personal
thing. I can't tell you what you like because if you like it, then everybody else is wrong. Wine is very subjective.” While the International Wine Competition is not open to the public, those who want to expand their wine knowledge have plenty of affordable and unique occasions to do so in March throughout the weeklong festival. One highlight is the Friday Night Grand Tasting, which Hines recommends for those looking to taste super-premium wines for a one-time fee. In 2014, the event was held was held at the Sea Pines Country Club and showcased wines retailing at over $30 for whites and $50 for reds, accompanied by a gourmet hors d’oeuvres menu. Chief wine critic for the New York Times, Eric Asimov, was also on hand to sign copies of his book, “How to Love Wine: A Memoir and Manifesto.” On the other hand, Saturday’s Public Tasting features wines at more modest price points. Whether a casual wine drinker or dedicated oenophile, “you don’t have to spend a lot to learn a lot, to be in a situation to taste wines,” Hines points out. “But if you really want to take it to another level, you have to spend a lot of time and money.” “It’s not elitist, though. It all depends on your personal level. There are a lot of great wines that are $10, $15 and
$20. The reality is that it’s grape juice. Let’s keep it in perspective.” Originally created by the Hilton Head Hospitality Association to promote tourism during the spring "shoulder" season, the festival is now produced by the nonprofit Hilton Head Wine & Food, Inc. Auction proceeds provide scholarships to students pursuing degrees in hospitality and tourism through the John & Valerie Curry Educational Scholarship Fund. Currently, an all-volunteer board, plus one paid staff member, coordinate all of the festival and competition activities. Although the Hilton Head event now follows on the heels of the Charleston Wine + Food Festival, more than half of last year’s attendees were from outside the drive market and generated over $4.5 million in revenue. “We put heads in beds. That was always my goal during my tenure with the Hospitality Association,” says Hines. “Wine is a huge business nationwide. It’s fun and a lot of people travel to these events. GUMBO YA-YA Courtesty of Kenny B’s THE GUMBO BASE 2 cups chopped onion 3/4 cup chopped green pepper 2 Tablespoons finely minced fresh parsley 1 Tablespoon finely minced garlic 1 1/2 cups coarsely chopped peeled stewed tomatoes (beefsteak) 3 lbs. chopped smoked polish sausage 2 lbs. whole fresh shrimp; tail off, peeled and deveined 1 lb. gumbo crabs, broken in half 2 lbs. okra, stems and tips removed, sliced 3/8 inch thick 2 lbs. boned chicken thigh meat THE ROUX 3/4 cup vegetable oil 3/4 cup flour THE LIQUID AND THE SEASONING 2 1/2 quarts cold water 3 whole bay leaves, crushed 1 1/2 teaspoon dried thyme 4 teaspoon salt 1.5 teaspoon freshly ground pepper 1 teaspoon blackening spice 1/4 teaspoon cayenne 8 whole allspice 8 whole cloves

INSTRUCTIONS After you have assembled the ingredients for the Gumbo base, heat the oil. In a heavy 7 to 8 quart pot over medium heat. Make the Roux by gradually adding the flour to the oil and stirring constantly. Stir over medium heat until a brown roux is formed. (This will take about 20 to 30 minutes) Immediately add the onion, green pepper, parsley and garlic. Continue cooking for about 10 minutes longer, stirring constantly; the chopped vegetables should be lightly browned at this time. Add the chopped tomatoes, chicken and smoked sausage and mix. Add 2 quarts of the cold water, 1 pound of the shrimp, the crabs, okra and the seasonings. Raise the heat slightly and bring the mixture to a boil, then lower the heat and simmer for 1 hour, at the end of the hour add the remaining water and stir. Remove the pot from the heat and let stand at room temp. Before serving, bring the Gumbo to a boil, and add the remaining shrimp, simmer for about 10 minutes. Let simmer for 15 minutes before serving. Serve in Gumbo bowls over a mound of boiled rice. Enjoy!

Modeled after successful restaurant weeks in New York, Boston, and other cities, the 7th annual Chamber Restaurant Week is scheduled this year for January 24-31, 2015. It has turned into a week-long food odyssey when participating restaurants offer specially-priced, or prix-fixe, menus, signature dishes, new entrÊes, and old favorites. Mark your calendar! More than 75 restaurants in Hilton Head and Bluffton participated in Restaurant Week last year. Considering the growing success of this event, the chamber expects even more area restaurants to participate this year. Last year, 57,678 people paid a visit to the Chamber Restaurant Week web page to check out special menus, with links to participating restaurants and offers available during the event. Diners will of course have an abundance of options – making the decision of which ones to choose all the more difficult. Every restaurant has created a customized menu with their chef’s culinary talents and the type of food they serve. Behind the scenes, the chefs of participating restaurants have a bustling dining production to execute flawlessly, and that’s just what they have done each year. Throughout the last week in January, area residents can enjoy great meals at a variety of restaurants, some for under $20. These prices represent quite a value in a resort area with many of the area's top restaurants participating in the annual culinary event. One of the most popular weeks for dining out, it also gives owners an opportunity to showcase their menu to local patrons who will likely return for regularly priced meals. “It’s a win-win for both area chefs and restaurant goers, as restaurants are able to offer specials that showcase their cuisine at great prices,” said Dorothy Guscio, chamber events manager. “With the chamber’s promotion on its dedicated website, it’s easy to find out who’s offering what and gives people an entire week of great reasons to dine out.” The annual champion title is chosen by dining establishment patrons who select their favorite dining experience by voting on the chamber's website as well as via email and on Facebook. Hugo's Seafood and Steakhouse was named last year’s Chamber Restaurant Week Champion. The Studio took second place and Hudson's Seafood on the Docks placed third. Take a look at participating restaurants and see what’s on the menu – as area chefs compete for bragging rights to this year’s Chamber Restaurant Week champion title. Restaurants go into overdrive for Chamber Restaurant Week, perfecting new menu items to debut. “We always go back and look at what we can improve each year to make it a better experience for customers,” said Hudson’s General Manager, Andrew Carmines. Hudson’s employs the largest and one of the only two remaining fishing fleets on the island, and they bring fresh local seafood straight from the docks to your table. “We always prepare to be incredibly busy during Chamber Restaurant Week,” said Chef Chaun Bescos of Red Fish. “It’s a great time to bring in people who haven’t been in before, and to encourage regulars to try something new,” All you need are reservations! Contrary to popular belief, fat is not the enemy. Fat is actually stored energy and is necessary to function as a thriving human. When we consume food some of the stored energy in food (called calories) are used for things like breathing, digesting, thinking, etc. Additionally, your body actually needs fat to protect your organs. As you enter adulthood you cease to create new fat cells. Think of these cells like balloons. They can be near empty and flat or they can be full. They expand or retract depending on your diet and exercise. In my work I get to talk with people from all different ages, athletic goals, and walks of life. A common theme across 99% of folks is the generic desire to ‘lose weight’. At its core weight loss is a very simple mathematical equation. But in real life it gets tricky. When you drill down to what a person actually wants, it usually means they want to lose fat while maintaining the muscle mass to look lean and toned. There are two sides to the fat loss puzzle. The first is diet and the second is exercise. Stand alone, neither one will generate the desired result. Working on one without the other may generate some short-term results, but won’t lead to the lifelong change you desire. To have a body that can thrive throughout the decades of your life, and turn heads in the process, your diet and exercise habits have to be in line. They have to work together to keep you lean and strong. The magic is in the daily habits that you apply to both diet and exercise
together. Here are three that you can start working toward today to see long-lasting results. Timing Matters: The hour of time immediately following a training session is a critical time to consume both protein and carbohydrates. The post-workout carbohydrates help to replace your glycogen stores that were burnt out through exercise. Consuming protein at this time helps to stimulate protein synthesis, which is the creation of new muscle fiber. This new muscle fiber helps your body metabolize at a higher rate long after your workout is over. Quality Matters: The quality of your workout matter as much as the quality of your food. A healthy diet consists of vegetables and fruits, nuts and seeds, lean proteins, and healthy fats. The quality of your food directly impacts your energy levels, and your ability to recover from an intense training session. Additionally, the quality of your training session also matters. If you’ve been hitting the same class at the gym for years and years, it’s likely that your body has adapted to that particular stressor. Changing up your routine regularly is great way to continue to engage new muscle groups and develop new skills. Quantity Matters: At the end of the day, calories count. If you are working out like crazy every single day but still over-consuming even the healthiest of foods, your body will not shed fat. Additionally, if you are starving yourself you won’t have the energy to complete workouts at the intensity required to see
results. A great place to start is to get an app that can help you track exactly what you are consuming and burning each day. MyFitnessPal and LoseIt are two comprehensive options that are easy to use and available for iPhones, Androids, and desktop computers. You enter your food throughout the day and can look back to see your total calories consumed, and compare that to what you burned. Making adjustments is easier when you have an accurate picture of where you are now. As you can see, diet and exercise both have to be aligned to achieve the results you want long-term.
