PUBLISHER’S NOTE Welcome to the offseason on the island – that time of year when we dust off our favorite sweat pants and find time for everyone and everything we have put off. The weather has cooled down and most businesses have slowed considerably compared to the hectic pace known in these parts as “The Season”. During the busiest months of the year, the traffic is heavy, the weather is downright toasty, and even basic tasks can take longer and be more stressful than normal. Don’t get me wrong, I love “The Season” for many reasons; longer daylight allows for afternoon golf, going to the beach, happy customers. But I have to admit, after living here for 27 years, the offseason has closed the gap on being my favorite time of the year. After months of sweating all day, traffic jams, and long lines, this is “our” time of year to enjoy. It is nice to take a walk in the sunshine without melting and to drive from one end of the Island to the other in ten minutes is a blessed miracle. Add to that getting a table at our favorite restaurants without a one hour wait makes eating out even better. Saturdays are no longer a hide-in-your-house-day; we can go to the grocery store and find milk on the shelf and even head over the bridge to Bluffton and back without bumper to bumper traffic. I could go on and on, but you get the picture. Since offseason on the Island offers a more relaxed pace, it is the perfect time to take advantage of all the things that are a little more challenging during the busy months. This is especially true when it comes to dining out. With such a wide array of fantastic restaurants, Hilton Head has it covered no matter what your palate covets on any particular day. Other great offseason perks are the deal meals at these world-class restaurants. Early birds, bogo’s and daily specials are more prevalent during these months and offer some fantastic opportunities to dine out at some of your favorites and try out some new. These special opportunities hit high gear at the end of January with The Chamber’s annual Restaurant Week, a week full of amazing dining options all over the Island and in Bluffton. Hopefully you will find the offseason as pleasurable as I do and get out and enjoy all Hilton Head has to offer. The Green Star After more than 30 years, Charlie’s L’etoile Verte remains difficult to define, and impossible to resist. BY BARRY KAUFMAN
You’d be forgiven for thinking that Charlie’s L’etoile Verte is a French restaurant. It’s a common mistake. There’s the name, for starters. Literally translating to “green star,” the language on the sign speaks to a dedication to the qualities that have made the chefs of France stars on the global stage. Then there’s the other name on the sign, that of the restaurant’s namesake chef and owner, Charlie Golson, who pursued his dream through the kitchens of France, learning at the apron strings of masters of the craft. Then there’s the menu, with signature items like Flounder Meuniere and Pave 10

au Chocolat evoking the sterling coastlines of Normandy and rolling meadows of Bordeaux. But to simply call Charlie’s L’etoile Verte “a French restaurant” would be reductive of the entire world of influences that this icon of Hilton Head Island brings to the table. “We’re really an American fish house with a French accent,” said Golson’s daughter Margaret Pearman. “There’s a definite French influence and when you walk in the décor is French, but we also have a lot of Americana to it.” Indeed, one of the first things that will tip off first-time diners that they are in for something more than a French
restaurant is the décor. A sprawling front porch under twisting live oaks exudes Southern hospitality. Step inside, and you’ll find yourself between a chic, modern bar area and a dining room that feels like stepping into the parlor of a French farmhouse, albeit one with very interesting owners. That would actually be accurate. While Charlie was gaining fame on the island for his brilliant cuisine, his wife Nancy was building her own legend as owner of Bluffton’s fabulously quirky Eggs ‘n’ Tricities. Picture those two worlds brought together, and suddenly the artistic idiosyncrasy of the dining area makes perfect sense.
“That’s the only way I can describe my parents,” added Pearman with a laugh. “They’re totally absurd and funky.” The décor, crossing fearlessly across boundaries, sets the stage for a menu that pays similarly minimal attention to international borders. The accent is there, but the assortment of blackened redfish, local cobia and that signature flounder reflects the way local-born Charlie Golson’s palate was shaped by the bounty of the Okatie River and surrounding waterways. Expanding the influence even further is Chef Lloyd Alberson, a self-described “true Southern boy” who has tweaked the classic menu with a few of Dixie’s most famous flavors. “He’s brought a really great vibe to the restaurant,” said Pearman. “We have this set plating, it’s very traditional… Lloyd brought in some different preparations in, at least one every night. Right now, we’re doing seared grouper over grits. He does a really good shrimp and grits. He has a lot of creativity he brings to the table.” Joining Alberson in the kitchen is Palmer Golson, and here is where we see one of the reasons for the enduring appeal of Charlie’s. This is, in the truest sense, a family business. “Palmer does the ordering and lets Lloyd do the creative part,” explained Pearman. “Chefs usually get so caught up in crunching numbers, Lloyd gets to come in and pretty much have at what’s here.” In the front of the house, make no mistake, this is Pearman’s show. It’s not unusual to find her tending bar, bussing tables, taking reservations and serving
as the face of Charlie’s L’etoile Verte. She’s an energetic, vivacious figurehead to the family business, and it’s a role she’s stepped into after years of practice. “I was bussing tables starting at 10 years old,” she said. Her service continued through her formative years; during high school when a key staff member passed away while her parents were in France, Pearman had to take time away from school. “Everything stopped and I told my teachers, ‘I can’t come to school, I have to go run my father’s restaurant.’ My teachers understood,” she said. These days, though, it’s not all handling emergencies and bussing tables. Pearman, a certified sommelier, has been able to infuse the restaurant’s selection with her passion for fine wine. “I took over my dad’s list… I have a lot of older vintages because he’s been a collector,” she said. “What I did was formatted it and made it a little more clean. I organized it and added a lot of countries that he wasn’t interested in.”
Pearman’s expertise let her supplement the French and West Coast domestic labels that had dominated Charlie’s wine list with a few surprises. “I’ve brought in some Spanish wines, some Australian and German wines. A few Austrian wines. He’d never really had anything like that. I’m really big into grower/producer champagne, which is small craft champagne… I’ve expanded a lot of Italian wines. I spent a year abroad in Italy and loved Italian wines.” The diversity of the wine list at the Green Star has definitely had an impact. For proof, simply look at the packed parking lot on Mondays when the restaurant runs its weekly wine special. Or better yet, find a spot and sample a few for yourself. So with both of Charlie’s children, Palmer and Margaret, making their presence felt in such a huge way, it would seem the family business is being handed off to the next generation, right? As with the assumption that Charlie’s is a French restaurant, the answer is a little more nuanced. When asked if the next generation was taking the reins at Charlie’s, Margaret replied with a smile, “I wouldn’t say that… We’ve definitely stepped up to the plate and brought my dad into the 21st century, but my dad is never going to quit. In a society that is driven by healthy choices, especially in what fuels our body, ‘farm to table’ has become the new rave. Delisheeyo takes this concept a step further by growing their own ingredients out their back door and serving them in their juices, yogurts, soups, salads, and wraps. No trucks, no transport, no wait so that the nutrition and taste is maximized. In all that they do, Delisheeyo takes healthy to a whole new level. Blake Wearren started working at Delisheeyo as manager in 2010 as a “pass the time” kind of job. Back then it was a simple yogurt shop run by a free spirit executive chef who had been into organic way before her time. She taught him about the business and together they added a juice bar and a lunch menu. “Five years ago people were not into healthy food as much as they are now. We have grown with people’s eating habits,” commented Blake. Seeing the trend towards healthy growing at an exponential rate, he purchased the quaint yogurt and health food shop in January of 2014 and has built it into the defining local stop for Vegetarians, Vegans, athletes, and seekers of healthy, fresh, and flavorful. “It has become my mantra to be healthy as well as that of my staff. I am constantly learning about new healthy foods – picking ideas up from my customers – and incorporating them into our menu,” said Blake. Walking into Delisheeyo is like walking into the sensory perfection of a bakery yet one full of fresh fruits and vegetables. The colors and aromas are captivating. The produce is all organic and all about local. “We really want to be like a Farmer’s Market inside,” Blake said. “My goal is to one day start a farm off-site and be able to grow everything we sell and pick everything fresh daily.” Until then, Blake relies on the wonders of his small but burgeoning on-site garden and the bounty of local farmers.
Blake’s father, Brent, is a horticulturist by trade and now in charge of the resident garden that surrounds the store. A tour of the garden (which is more like a mini farm), is an amazing journey through what is possible to grow in our region and a lesson on how to do it properly. When Brent moved down here, he spent eleven months at a garden center learning what he could grow. He has since turned the yard at Delisheeyo into an edible wonderland. Tree varieties include Meyer lemons, Persian limes, Key limes, guava, olive, pomegranate (grown from a seed) and plum. There is a bed of herbs ~ basil, parsley, chives, green onions, rosemary, mints ~ and potted lemongrass (yummy in tea) as well as English and French lavender. Hanging from trellises are Muscadine grapes, raspberries and blackberries. Depending on the season, fresh fruits are abundant from melons and cantaloupe to blueberries and goji berries. Veggies are resplendent and include different kales, collard greens, and companion plantings of broccoli, beets, and kaleidoscope carrots. They are also getting into vertical planting to conserve space and Armenian white cucumbers drape a tree. One of the keys to their gardening success is Brent’s compost bin behind the shop which he nurtures like a child so that the soil is productive and rich. Farming is in the Wearren blood as father Brent is a third generation horticulturist and his 1,050 acre Shade and Ornamental tree farm in Kentucky was the largest in the state. Blake and his brother grew up with a 3 acre garden out back where, starting at ages 6 and 8, they grew fruits and vegetables that they would sell at a road-side stand. Their father fashioned child-sized hoes for the boys and taught them the art and magic of growing. It is not a stretch, thus, to see Blake taking pride in nourishing people from the land and his father lending his knowledge and a helping hoe. The menu at Delisheeyo will have you reeling as to which healthy choice to select. The Frozen Yogurt has a base that is full of probiotics and is like a
blank canvas ready for you to add your choice of fruit and nuts and whole food ingredients. For their juice bar, they have two presses; one is for greens and is slower to preserve the nutrients and the other for fruit. “We can juice anything. We do it fresh to order or we have pre-bottled ‘Grab ‘N Go’ which people in a hurry really appreciate.” This is a part of the business that Blake would like to expand and market to gyms and yoga studios. For lunch and early dinner, they offer salads, wraps, soups, and grain bowls. The salad menu is all fresh and local ingredients with ethnic flavor influences like the Fatoosh Salad with Hummus. There is a Massaged Kale salad that features almonds, blueberries, pomegranate, bleu cheese, and a squeeze of orange with their secret dressing – Fred’s Apple Cider vinaigrette. Their wraps are vegan and can be made gluten free with rice paper. The Chill Island, made with hummus, grape tomatoes, cucumbers, peppers, onions, olives, feta, and greens is delicious. The Soup of the Day changes daily depending on what came out of the garden and is a popular winter ‘warm-you-upper’. For a hearty option, they have grain bowls like the Buddha Bowl with honey oat granola, chia pumpkin seeds, bee pollen, gojis, and a choice of fruit. Delisheeyo has an impressive retail section that includes organic drinks and foods like energy bars, nut bags, superfood powders, and cookies. They sell locally made tea and local honey which is a huge seller as it is said to ward off allergies. The atmosphere in Delisheeyo is quaint and there is seating indoors and out. Fresh cut flowers adorn each table and local artwork hangs on the walls. There is even a little person’s table with a basket of books and toys. “We serve food that makes you feel good and our atmosphere is as important as the food to make you feel good and healthy,” said Blake. “We try to offer the whole picture – mind, body, and spirit.” As for their clientele, they of course have a huge local following but they
also see the tourist business blossoming. “We get a lot of visitors to the Island that cannot travel with their juice or just need a healthy infusion of food after eating out all the time,” Blake explained. While I was interviewing Blake, a lady approached us and made a point to tell me that there was no place around here that provided what Delisheeyo does. She said that their nutrients were disease and cancer fighters and the preventative medicine aspect had the older generation in tow. As she walked out the door sipping her freshly squeezed juice concoction of kale, parsley, beets, celery, apple, and lemon, she said, “And the best part is that they make healthy food taste great!” I think that says it all. Of Italian descent, Michael Cirafesi, Ombra’s owner and Executive Chef, acquired his passion for food and wine at any early age. He learned to cook from his Italian grandmother and at age 15 started cooking professionally in kitchens of fine dining establishments in Philadelphia. After graduating from the Philadelphia Culinary School in 1993, he went to work as the Sous Chef at the Monte Carlo Living Room in Philadelphia. In 2002 he moved to Hilton Head Island to pursue the dream of operating his own restaurant. Cirafesi’s success story is written in large part by his strong desire to work tirelessly in order to achieve his goals. “A person needs passion to succeed in this business. If you don’t love it, don’t’ get involved in it.” He and his wife Lauren have 6 sons, under the age of 15. When asked if he wants them to continue in the restaurant business, he said “not unless they are passionate about it.” He works 7 days a week. When he is not totally immersed in the restaurant, he enjoys spending time with his family. It was a desire to offer Italian inspired cuisine, paired with fine wines, in a more contemporary environment which lead to his opening of Ombra three years ago. the restaurant with the rustic décor with modern accents. Antique brick and reclaimed barn wood timbers give it a Tuscan farmhouse feel. Fresh white truffles are rare and only available a couple of months of the year.” They are almost exclusively from one part of Italy, where they must be foraged by special pigs and dogs. “The tantalizing aromas and flavors of a fresh truffle are unforgettable.” “Chestnuts are also in season in the winter and there are so many dishes we prepare with chestnuts.” Their complex flavor adds richness to whatever you're making. “Chestnut ravioli is a popular
dish on our menu in the winter, in addition to creamy chestnut soup, and several desserts, from chocolate to fruit.” “A favorite custom we celebrate with our guests during the Christmas season is The Feast of the Seven Fishes, an Italian-American celebration of Christmas Eve with meals of fish and other seafood.” It seems the only time "fishes” is an acceptable word is on Christmas Eve, when Italians honor the tradition of the Feast of the Seven Fishes, or as they say in the old country, “Festa dei Sette Pesci.” The feast typically consists of seven different seafood dishes. The many courses are enjoyed slowly, giving people plenty of time for toasts, chatting and fun. Each course is in small servings. Included will likely be zuppa di pesce, a “fish soup” or stew with different types of fish, cooked in a light tomato sauce. “People come to the restaurant each year with their families to enjoy The Feast of the Seven Fishes, regardless of their
background or religion.” Another favorite that Cirafesi loves to prepare for the season is Panettone, a luscious bread loaf with sweet, dried fruit, usually prepared and enjoyed for Christmas and New Year’s in Italy. “We use it to make a fabulous bread pudding that we serve during the season. It’s so popular that we sell Panettone at the restaurant during the Christmas season,” he said. Captain Woody's is Hilton Head Island and Bluffton's neighborhood bar and grill. Here you'll find nothing but the basic staples of island life: oysters, shrimp, cold beer, great service and good conversation. It is the ideal place to come after a day of fishing, sailing or having fun on the beach. For those visiting the island, walking into Captain Woody's is like walking into your favorite pub back home. The atmosphere is relaxed and informal and some of the best servers on the island are here. Meet an exceptional server at Captain Woody’s, Charlene Woodall, or Char, one of the friendliest people you could meet. She has been a server at Captain Woody’s for more than 12 years. Born in Louisiana, she grew up in Rochester, New York, and Newbury Port, Massachusetts. She moved to the island in 1990 to join her parents. “My family has always been in the restaurant business and I’ve been involved in the business my entire life, Char added, my sons, Ricky and Jeremy, are also in the restaurant business at other locations.” An enthusiastic tennis player, Char also works at the South Beach Racquet Club. She works several shifts a week at Plantation Deli on Pope Avenue, and assists her husband, Jimmy Woodall, in running their family business, Ugly Duct Cleaning, a business that cleans air ducts and dryer vents. Most of her working time, however, is spent at Captain Woody’s. “The owners, Shannon and Russell Anderson, treat the staff like family,” she said, “and most of the staff has been with them forever.” To be successful in this business, it takes an outgoing personality and the 26

ability to read customers, according to Char. “I really like people,” she said. “Listen to their words, tone of voice, and read their body language. Some people love to be played or joked with, but you have to know when and when not to pull the chain.” “Recognition of return guests is appreciated, even if you just remember their faces. People love to be recognized, and they value sincerity and respect. So many return guests to the island stop by the restaurant before they even check into their hotel or vacation villa. They feel welcome when they are recognized.” What can you do when customers complain? “If customers are upset, you can usually find a way to make them happy,” Char said. “When something goes wrong, apologize. Be honest with people, apologize if you’ve made a mistake, or even if you haven’t, and do something to make them happy – bring them an appetizer, or a drink, and acknowledge that you care about their experience. Give more than is expected.” For fun, Char loves to play tennis. “It’s great exercise, and although I’m not a pro, I certainly try to hold my own,” she said. “I have met more people on this island playing tennis
than any other way.” She also enjoys playing golf. “Our happy hours at Captain Woody’s are the best, with specially priced appetizers and drinks. It brings in locals year round,” Char said. One of the perks of living on a small island is the personal service you receive and friendly faces you see each time you visit one of the locally owned establishments. Captain Woody’s has been a local’s favorite for 33 years because they serve great food and Char and the rest of the staff are so welcoming and considerate about their guests. A celebration more than three decades in the making, raise a glass when the 31st Annual Hilton Head Island Wine + Food Festival returns March 712. The Sea Pines Resort once again serves as the backdrop for an amazing array of wine-centric cinematic, educational, cultural and culinary events culminating in Saturday’s Public Tasting in Harbour Town – the largest, outdoor tented wine tasting on the East Coast. Heralding the imminent arrival of spring, the festival kicks off with a Wine & Cinema Event in Bluffton’s Custom Audio Video showroom on Monday followed by various Wine Dinners and educational seminars around the Island throughout the week. Thursday’s Sip ‘n Stroll takes attendees on a progressive tasting around the Harbour Town Yacht Basin and Friday night’s Grand Tasting is a rare opportunity to try super-premium wines, which will be held in the Harbour Town Clubhouse (tickets may be purchased in advance). On Saturday, March 12, the party concludes at the Public Tasting which showcases more than 250 wines from domestic and international vineyards, gourmet delicacies from local 40

establishments, cooking and mixology demonstrations, the Grey Goose Bartender Challenge, a highly competitive Waiters’ Race and a silent auction of award-winning wines to benefit the John and Valerie Curry Educational Scholarship Fund. According to festival director Jeff Gerber, the 2015 Wine + Food Festival attracted more than 4,000 epicures and wine connoisseurs from across the nation to experience the best the Lowcountry has to offer. He estimates about half of these guests were repeat participants and the others were attending the festival for the first time. It’s no coincidence that Hilton Head’s event follows on the heels of the highly respected, but much more recently established, Charleston Wine + Food Festival.
Complementing instead of competing against one another, “There are a lot of people who travel to culinary and wine events,” notes Gerber. The timing allows wine aficionados, vintners, vendors and experts to attend both festivals. A 25-year veteran of the local food and beverage industry, Gerber’s longstanding involvement with Wine + Food Festival reflects the festival’s humble beginnings. “I’m kind of like the guy who started out as a bus boy and is now running the whole place,” he laughs. “I started at the bottom and slowly and persistently worked my way up.” Wanting to learn more about wine, Gerber volunteered to work behind the scenes at the two-day International Wine Competition. The cornerstone of the festival, this invitation-only event held every winter features more than 700 table, sparkling, fortified, fruit and specialty wines which are tasted by a prestigious panel of judges, including Advanced and Master Sommeliers. Separated into 30 categories, the wines are scored during a double blind tasting and winners of the competition are featured throughout the Wine + Food Festival.
Gerber obviously made an impression and was made assistant to the woman in charge of the judging. After she left to pursue other opportunities, he ran the competition for eight years and then served on the organization’s board for another four. In 2015, Gerber was named festival director and assumed responsibility for coordinating and promoting the nine events and 15 wine dinners that made up last year’s Wine + Food Festival. Although he refuses to name a favorite festival event – “They’re almost like my kids now,” he says – Gerber enjoys the wine education, as well as the chance to catch up with old friends in the industry. He is also quick to point out the economic benefits of the Hilton Head Island Wine + Food Festival. Created by the Hilton Head Hospitality Association to boost tourism in the early spring, Wine + Food Festival began in 1985 as a three-hour wine tasting in a hotel parking lot. Although the Hospitality Association disbanded in 2011, the festival continued to expand from a one-day event held at various locations from Shelter Cove Harbour and the Coastal Discovery Museum at Honey Horn into a weeklong extravaganza based in The Sea Pines Resort. Hilton Head is home to more than 250 restaurants and tourism is its leading
industry. The festival “showcases the culinary diversity of the Island,” says Gerber. “One of the things I’ve always liked about the festival is that it brings a lot of people to the Island right after the slow season. People are renting rooms, renting houses, golfing, going to the shops and going out to eat.” The other mission of the non-profit organization is to raise scholarship money for students enrolled in hospitality management programs at the University of South Carolina Beaufort and Technical College of the Lowcountry in the hopes of inspiring of a new generation of local hospitality
professionals. Proceeds from both the Grand and Public Tasting auctions and other festival events are used to fund these scholarships, of which $30,000 has been given away over the past three years. You have passed their trucks before and maybe never even given them a second glance. You may have seen them pulling into local grocery stores and not thought a lot about it. But you should. Next time you see Second Helpings drive by, give them a smile and a thumbs up. Because they are the good guys – they are the volunteers of this world who work selflessly to put food on the table for those who cannot afford it. For seventeen years, they have been driven by the philosophy that no person should go hungry and through their efforts an estimated 2,000 people in our area are fed every day of the week, twelve months of the year. Second Helpings was founded in 42

1992 by Guenther Hecht, a local resident who made note of how much food was discarded on a daily basis by grocery stores and restaurants. Guenther recognized the opportunity to rescue this food to meet a community need. He rustled up a few volunteers and they began to collect and deliver food in their personal cars to a few local charities on Hilton Head. Within six months, they purchased their first truck. According to Bruce Algar, Office Administrator at Second Helpings, the organization has grown with the area and they now operate six trucks and cover three counties; Beaufort, Jasper, and Hampton. The sheer magnitude of food collected over
the years, more than 5 million pounds, is astounding. Take that and figure in the number of hungry stomachs they have filled, and murmur a “hallelujah.” The food they collect comes from over 50 donors, mostly participating grocery stores but also restaurants, catering companies, and resorts. “We take the excess inventory,” explained Bruce. “Essentially everything they give us would otherwise be wasted.” Seven days a week, their volunteers drive around and pick up meat, produce, deli, and bakery items as well as canned goods that are losing their shelf life. Then they go on their delivery routes, distributing the over 4,000 pounds of food collected daily, to over
60 agencies spread throughout the counties. Recipients include child development centers, homes for the mentally challenged, senior citizen centers, churches, and other charitable organizations. “We only deliver to organizations that meet standards for food safety, food handling, and food storage and that provide verification of recipients,” said Bruce. “We will visit each location twice a week and deliver it proportionately to the number of people they serve.” In bold letters on their website, Second Helpings touts, “We believe that no person should have to worry about whether or not they will have enough food to eat today!” Bruce explained that the end users are all “borderline insufficient nutrition”. “They are all directly or indirectly related to poverty or low income,” he said. There are plenty of unsung heroes out there, but when it comes to providing food and nourishment to these folks, Second Helpings takes
center stage. What makes them more “unsung” than others is the fact that they are the middle man. They distribute food to organizations but not directly to the end user so their efforts may often go unnoticed by the beneficiaries. “We are not the face of the charity,” said Bruce. “Many recipients are not even aware of us.” This obviously has not affected the drive and purpose of their volunteer force which is 160 people strong and is made up of young and old from all walks of life. Even though the volunteers do not get to meet the people they are helping, Bruce said that, “They all see the need for it and know they are making a direct and immediate difference in these people’s lives.” He added, “Our volunteers are people who want to be hands on and make a significant contribution. By volunteering they are giving of themselves and don’t have to give money.” Without volunteers, they would cease to exist. Everyone within the organization with the exception of
executive director, Maureen Korzik, Bruce, and a sparse office staff, are volunteers. Their longest serving volunteers go back all 17 years! How can you help? Well volunteer of course! Each truck is equipped with a crew of 2 or 3 people. They need drivers as well as people to organize the food in the back of the trucks to prepare for distribution. With a large contingent of volunteers to draw from, they usually only ask for a commitment of 2 times a month for a half day each. Financially, Second Helpings receives no government funding; their income comes from donations, foundations, and charity grants. They accept financial contributions which go to truck operation, maintenance, insurance, and replacement. Healthy intentions beware! There are foods masquerading as healthy options that are anything but healthy. Reading labels is an important first step, but what exactly are you reading? What should you pay attention to be sure you are making a choice that is actually beneficial to your overall health? I am going to share with you 4 common food items that are leading you astray, along with some truly healthy alternatives that you can sink your teeth in to instead. Wheat Bread. When you are reading a bread label, if you see “bleached” or “unbleached enriched wheat flour” as one of the first ingredients you are not getting all the benefits of the whole grains advertised on the front of the package. A healthy and affordable alternative is a sprouted grain bread which can be found at many local grocery stores and farmer’s markets. The most popular is Ezekiel Bread due to its amazing taste and texture along with rich nutritional benefits. Made up of wheat, barley, soybeans, and lentils it’s actually a complete protein source and is packed full of fiber. Energy Bars. It says “energy” on the label so that must be a good thing, right? Many brands of energy bars are packed full of sugar and high fructose corn syrup and each tiny bar can contain upwards of 300 calories a piece. This combination could mean not only an energy crash a few short hours later, but also increased hunger shortly after. The best option in this area is actually to choose a whole food 52

option. Nothing is as easy to grab-and-go as an apple or a banana paired with a handful of cashews or almonds. Turning to a whole food instead of a packaged processed food is always a better choice for on the go snacking. Agave. Agave is not a health food. It is a sweetener, and sugar by any other name is equally as addictive as any other sweetener. Your journey to a healthy lifestyle should include a reduced reliance on sweetener of any kind, including agave. There is zero nutritional benefit to using agave as a sugar substitute, and agave is actually more calorie dense. “Fat Free” foods. This one is my favorite. And by favorite I mean the one that irks me the absolute most. We started to idolize the fat free craze when coronary disease became directly linked to dietary fat. But the missing link is that sugar and trans fat are likely the true culprits, which are commonly found in hydrogenated oils and processed additives like stick margarine, butter substitutes, baked goods, etc. Good clean dietary fat is actually a very heart healthy option and can be found in avocados, extra virgin olive oil, and whole eggs.
So now that you have a better eye for nutrition labels, you can make the healthiest choice during your next trip down the grocery aisle. CHOCOLATE AMARETTO CHEESECAKE Courtesty of A Lowcountry Backyard
INGREDIENTS 2 1/2 cups chocolate cookie wafers 1/2 cup melted butter 3 (8oz) packages cream cheese, softened 3/4 cup sugar 4 eggs 6 oz milk chocolate pieces, melted and slightly cooled 1 cup sour cream 1/2 cup Amaretto liquer 4 TBSP melted butter 1 tsp vanilla 1 cup sour cream and 2 TBSP amaretto and toasted almonds for topping
INSTRUCTIONS Mix cookie wafers and melted butter together and press into a 9 inch springform pan, bringing crumbs 3/4 of the way up sides of pan. Chill. Beat cream cheese and sugar until fluffy, then add eggs, one at a time, beating after each addition. Blend in milk chocolate, sour cream(1/2 cup), Amaretto, melted butter, and vanilla until well combined, scraping down bowl often. Pour into pan and bake in a 350 degree oven for 65 minutes or just until set. Mix sour cream and Amaretto and spread evenly on top of cheesecake. Return to oven for 3 minutes. Allow to cool, then chill overnight. Garnish with toasted almonds. Serves 12. Enjoy!!

Winter is generally considered the offseason on Hilton Head Island and throughout the Lowcountry but business picks up at area restaurants for a special week each January. Chamber Restaurant Week, presented by the Hilton Head IslandBluffton Chamber of Commerce, returns for the eighth year from Saturday, January 23rd through Saturday, January 30. With a wide 54

array of Lowcountry restaurants offering value-priced menus, Chamber Restaurant Week offers area diners a chance to enjoy great meals at their favorite eateries and a great venue for discovering new ones. “Chamber Restaurant Week provides a great opportunity for restaurants to bring in business during the winter season,” said Dorothy Guscio, chamber events manager.
“Growing every year in popularity and participation, it’s a win-win for everyone involved.” Chef Russell Keane of NEO farm to table gastropub compares Chamber Restaurant Week to a holiday week and expects a sales increase of 20 to 25 percent during “one of the busiest weeks of the year.” “Chamber Restaurant Week brings in a lot of new customers – a lot of
people who are curious but haven’t been in yet,” said Keane. Keane said the farm-to-table gastropub will offer a prix fixe menu for the week, but many new visitors order off the regular menu as well, so it’s a culinary mix, depending on preference. Regulars and newcomers alike flock to popular Lowcountry eateries including popular island restaurants Alexander’s, Old Oyster Factory and Red Fish for their four-course prix fixe menus during Chamber Restaurant Week, according to marketing director Katie Manley. “If they’ve been to the restaurant before, they can get a menu with all their favorites or if they’ve never been, we get to highlight some of our signature items,” Manley said. “It gets people excited about dining out for that week. You see a lot of people who maybe haven’t been in for a while or want to try something new.” Modeled after similar popular
events held in New York City and Los Angeles, the annual event continues to gain steam. More than 75 restaurants participated last year, and that number figures to rise even further in coming years. “It’s really a great concept that the Chamber put together,” Manley said. “We’ve been doing it for several years, and we look forward to it every year.” From casual waterfront dining at Skull Creek Boathouse and island icon Hudson’s Seafood House on the Docks, to ELA’s Blu Water Grille and French cuisine at Charlie’s L’etoile Verte, there’s something for every palate. Usually when I interview people for an article, we meet for a cup of coffee. When Brian with Groove Town Assault suggested we meet at the Hilton Head Brewing company (where they even have a craft beer named for the band), I knew I was going to like these guys! Seven musicians deep, GTA (as they are referred to for short) is as varied in ages as they are in musical style and backgrounds, but that is what makes them work and gives them their edge. They are seven people with seven different personalities. Their common thread is their musical prowess and their ability to put their own twist on everything they play. What that twist will be – reggae, rap, metal, jazz, r & b nobody knows… even the boys in the band. Who are these guys and what makes them so unique? On guitar you have Billy Martini and Sammy Passaloukas (who also plays keyboard and sings and can do all three at once) with Owens Warren on bass. Dallas Ackerman mans the drums while Derrick Ludaway and Cory Brodsky provide lyrics. Brian Eason does back-up vocals and takes over as dj when everyone is on break. Brian grew up in NYC scratching while Cory (who Billy explains can rap on time but not dance on time) did Rap battling in
Philly. Derek, an ex-marine who had a band in Afghanistan, has mainly an R & B background, while Billy grew up playing rock, metal and jazz. Sammy can play anything – classical, Motown, jazz, heavy metal. “People yell out songs and Sammy just starts playing them. It’s crazy.” said Cory. “I envision Sammy being born and his parents handing him a guitar when he came out.” The musicians met three years ago at an open mike night and realized that they sounded pretty darn good together. They merged their bands and named themselves Groove Town Assault. “Hilton Head is like a groove town because there are so many bands here,” said Sammy. “We were looking for groove funk stuff, but edgier,” added Cory. Everything GTA plays they make their own. You may know the song, but you will not know what direction they will take it. That’s because, as Brian describes it, they “play on the fly.” They are such good musicians in their own right that they go into their gigs with no set playlist. Someone just starts playing a few notes and everyone jams in. “We are like a cheerleader camp,” laughs Derrick. “Whoever has the knowledge to change the edge on a song, he will start and everyone will follow.” Brian
added “Yea, like a pitcher and catcher and the pitcher sends the signal.” They do a lot of original work, but their typical concert will be cover songs that range from classic rock to Red Hot Chili Peppers to Chaka Khan and Usher. “We do a lot of 90’s music that people grew up with and transcends all generation gaps,” commented Brian. “We will play Marvin Gaye’s ‘Let’s Get it on’ and everyone will grab a girl and start dancing.” They will take a song like Michael Jackson’s “Remember the Time” and start out with the original version before Cory breaks into Rap followed by a jamming guitar solo. In other words, their sound is unique and totally unpredictable. “The best part about seeing these guys live is that they never stop. Even if they are on break, Brian scratches so they give non-stop music and you will love every song,” commented their ‘King Roadie’ and equipment manager, Buck Bishop. GTA is currently working on their first album which they hope will be out by the first of the year. It will feature everything from love songs to “head banging stuff” – a perfect showcase of their range of talents. Bluffton has never been the type of place for exclusive clubs. Open arms and open kitchens are the rule along the storied streets of Old Town, where no one is ever a stranger for long. And yet there is one private club in Bluffton that everyone wants to join. Their membership is not strictly counted, nor are there regular meetings. But you’ll know them by their names, etched in brass and placed along the bar and at select seats at May River Grill. They are the regulars, and through their continued patronage, they have helped make this quiet unassuming restaurant one of Bluffton’s most enduring treasures. “All of those people have been 68

coming in a long time, and they deserve to be recognized,” said Owner and Executive Chef Charlie Sternburgh. “Most restaurants don’t do anything for their customers; I find that crazy.” Of course, when you consistently put out one of the freshest and most innovative menus in town, as May River
Grill has since opening in 2007, it’s only natural you’ll develop a following. Sporting a local focus before the term “locavore” was a glimmer in some marketing executive’s eye, Sternburgh has always crafted his menu around the ebb and flow of what can be caught and cooked from local waters. “There are times you can’t buy local shrimp or flounder. And I see restaurants blow it off and try to tell you it’s local,” said Sternburgh. “Right now we have softshell crabs. I know we’re the only ones that have them because the crabber specifically sells them to us. He gets them right out of the river. We’ve had them off and on all summer long.” That’s not to say that May River Grill is
strictly a seafood restaurant. Seafood gets top billing, but it shares the stage with landlubber delights such as filet mignon au poivre crusted with rich green peppercorn sauce and a dish billed as “Bluffton’s only baby back ribs.” And that’s just on the regular menu – a massive chalkboard along one wall carries a dizzying succession of specials from every culinary sphere. Sternburgh’s devotion to a local and ever-changing menu has helped build a dynasty at May River Grill, outlasting a slew of restaurants that have come and gone in the Bluffton area. As he puts it, when he opened the doors all Bluffton’s culinary scene consisted of was The Squat ‘n’ Gobble and the fried chicken on offer at Nickel Pumpers. Now? Let’s say there’s a little more competition. “Everyone has a restaurant out here now,” Sternburgh elaborated with a laugh. But Sternburgh greets the new competition with a seasoned eye forged by years in the restaurant business, doing everything from helping launch
Hilton Head Island’s Jazz Corner to selling tomatoes restaurant-to-restaurant from his van. “That’s how I found this place,” he said. “I refused to take no for an answer about my tomatoes. I came here, and the girl wouldn’t buy my tomatoes. This was a deli. It didn’t look anything like this. I ended up buying it from her.” That persistence, experience and devotion to quality helped build a
dynasty at May River Grill, one that Charlie Sternburgh attributes to one thing: love. “You have to love the business. You flat-out have to love it. A pirate ship complete with booming cannons. Reindeer heads, joyously clopping along on two legs – not entire reindeer, just the heads, mind you. A ladies’ drill team, complete with actual power drills and fairy wings, because why not. And, of course, the world’s largest boiled peanut. In any other town, this might seem like a strange way to celebrate Christmas. But in Bluffton, it’s tradition. The quirky, artistic roots of Bluffton might seem like they’re being edged out of the spotlight as the town takes on a more urbane character, but for one glorious day of the year The Bluffton Christmas Parade hoists the freak flag high and unfurls it with vigor. Sure, there are the usual staples of small town American Christmas Parades, but it is that unique Bluffton character that not only sets the Christmas Parade apart, it’s made it spectacularly popular over the years. So popular, in fact, that in recent years finding just the right spot has become more and more of an art form. Fortunately, we’re here to arm you with a few insiders’ tips on getting the most of out of your parade.

BEFORE (AND AFTER) YOU GO As a warmup to the festivities, head down to Bluffton Town Hall at 5 p.m. Dec. 5 for the lighting of Town Hall’s Christmas tree, as well as the announcement of this year’s Grand Marshal. This kicks off a “Weekend of Lights” which includes rides around Old Town Friday night on the “Holly Jolly Holiday Trolley,” the parade on Saturday and a Christmas Tree Lighting at Buckwalter Place. GET THERE EARLY This year’s parade steps off at the corner of Pritchard and Bridge Streets, runs up Calhoun Street and finishes at Red Cedar Elementary. If you’re hoping to snag a seat on Calhoun Street, you’re almost going to need to beat the sunrise there. Not only because it fills up quick, but because this year’s parade is starting an hour early. “Three years ago when the Bluffton High School’s Bobcats were playing for the state football title, we changed the
time to accommodate people traveling to Clemson,” Mayor Lisa Sulka said. “The earlier start time allowed for a better parade flow, more time for employees to clean up after the parade and allows everyone to have a bigger portion of their afternoon free.” This year, the change is permanent. So rise and shine to be there when the parade steps off at 10 a.m. on December 6. LOCATION, LOCATION, LOCATION If you can’t make it in time to grab a spot on Calhoun Street, don’t worry. There’s plenty of parade to go around, and plenty of space in which to watch it. If you’re bringing the young ones, your immediate priority is going to be candy. For maximum candy coverage, it’s hard to beat the turn from Calhoun Street onto S.C. 46. The floats are forced to slow down on the turn, and they’ll usually spend that time launching fistfuls of treats. Just be aware, the secret is out so the mob scene of rugrats gets intense. For a more relaxed experience, grab a spot along S.C. 46 further along toward Pin Oak. There’s plenty of sidewalk space, and if you’re lucky you can even snag some prime real estate on one of the public benches.
