PUBLISHER’S NOTE
As I was pondering subject matter for this column, Hurricane Matthew was bearing down on the Lowcountry. It’s funny how all of a sudden your priorities change dramatically when a cat 4 hurricane is chugging up the coast in your direction. In a matter of days, you are making decisions on the safety of you and your family, preparing your house and business for possible impact from the storm, and worst of all, are uncertain of the future as the place you call home could possibly be gone in a matter of days. As we evacuated to Atlanta, it was excruciating watching from afar at the massive storm headed towards the island. We have been extremely lucky in the 27 years I have lived here with very few evacuations and no direct hits in all that time. “The storm always turns away from here,” I kept thinking, “It always does.” Well, not this time. The storm did hit and our luck seemed to have run out. What I failed to take into account was the strength, resiliency, and determination of the people that call Hilton Head Island home. I arrived back Tuesday morning after the storm, a matter of hours before most people were allowed over the bridge. Surveying the damage was like an out of body experience. Trees were down everywhere -- on houses, on roads and everywhere in between. But a strange thing happened on that drive. I realized that the island was going to be just fine and up and running in a matter of months as good as ever. The next week was as the most amazing display of work I have ever witnessed. Everyone was cleaning up, chainsaws buzzing, neighbors helping neighbors, friends helping friends, from sun up to sun down everyday. In a matter of days, the progress was more than you could have ever imagined. Almost more importantly and quite frankly more unbelievable, was that businesses were up and running in a matter of days. The majority of the restaurants that grace the pages of this magazine were open for business and many of them were offering first responders free food and drink even though they had incurred both personal and professional setbacks. This is the type of backbone that this island is built upon and the reason we have and will continue to get back to not only normalcy, but thrive again much sooner than I ever would have believed possible. I can’t express how grateful I am to be able to still call this beautiful paradise home and how proud I am of this community. After living over half my life here, I couldn’t imagine living anywhere else and fortunately I don’t have to! David Mudwilder Publisher 8

Think of the perfect setting on the water where the shrimp boats glide by with gulls and dolphin in pursuit. Then add the perfect meal - classic cuisine, cooked to perfection, complimented by southern improvisations. For a romantic evening, a special occasion, or a meal to remember it does not get better than this. Period. Located on Skull Creek in Hilton Head Plantation, the Old Fort Pub is where sweeping sunsets and sensational food synthesize for a dining experience that is one of a kind. The Old Fort Pub has been an Island tradition since 1973. It was originally opened as a watering hole on the water and has gone through major expansion and renovation over the years. It was purchased by Bonnie Lowrey in 1992 and has stood as a standard of excellence in dining ever since. When you walk in the front door of the Old Fort Pub, you feel like you are entering an old southern dining room – rustic yet refined. The hardwood floors are aged, antique chests line the walls, and there is a calming elegance to the white linen 12

tablecloths that drape the tables. You will hardly think yourself in a pub, although there is a bar area off to the side that has that homey appeal. There is seating both indoors and out, and the outdoor seating is a chip shot away from the ruins of historic Fort Mitchel, a Civil War military garrison from which the restaurant got its name. While the view is spectacular and location ideal, at the end of the day that it is merely the adornment that complements the food. Chef Keith Josefiak is the secret ingredient to your meal. After graduating in 1982 from the Culinary Institute of America, also known as the “world’s premier culinary college,” Keith worked in five star hotels and then spent twelve years working his culinary magic with celebrity chef Jimmy Schmidt in Denver and Detroit. Chef Keith took up the executive chef position at the Old Fort Pub in 2005 and has helped put them on the map as Beaufort County’s only AAA Four Diamond restaurant. Chef Keith describes his cooking as leaning toward
contemporary southern. “I take the classics and add a southern flair.” The most popular item on the menu, for example, is the Sea Island Bouillabaisse which takes on new flavors with Chef Keith’s touch. “I take this classical French dish and add some of the south to it with Tasso ham and collard greens. That’s the southern flair. Then I finish it with a saffron aioli which steers the dish back to France.” Likewise, he can take a typically Italian dish of polenta and add pumpkin or take local shrimp and serve them on his ‘Basil Butter Corn Pudding’. The menu is thus filled with delightful twists which simply add to making the dining experience all the more unique. Keith describes their winter menu as more sophisticated than the summer one as the clientele shifts away from families and more towards golfers and empty-nesters. “This is a favorite time of year for any chef,” he said. The fresh ingredients themselves change so drastically in the winter that the menu has to follow suit. “We do much more braising and slow cooking in the winter. It is more comfort food like Lamb Shanks, Stew, and Pot Roast. Again, I just take a classic cooking approach to these dishes and then add a bit of finesse. Everyone can hit a golf ball, but it is the expertise of where you put it that makes it a good shot,” he added. The winter menu at Old Fort Pub will include seafood dishes featuring tuna and shrimp and especially oysters. “It just blows my mind that May River oysters come right from our backyard,” commented Keith. Also expect to see menu additions that include quail, pumpkin, winter squashes, Brussel sprouts, rutabaga, and parsnips. They run a nightly special all winter long of three courses for $33 which is like having Restaurant Week for 3 months. “It is an absolute steal and very popular,” said the chef. In addition to the main menu, they have nightly specials and Menus for Early Birds, Happy Hour, Children, and even one for Young Adults. “The wine list is as diverse as it is long,” said Linh Craig, general manager of Old Fort Pub and CQ’s in Harbour Town, both owned by Lowery. Bottles range in price from generally the mid-40’s to 50’s up to $150. Every item on the printed menu has a wine pairing which makes choosing on your part easy. Many of the wines sold by the bottle are also sold by the glass. The
spirit and beer choices are traditional ones to warm the palette. “We don’t do faddy drinks or food. We prefer to be more traditional,” commented Keith. There is an observation deck on the third floor, so you might want to show up a bit early and take a cocktail up to the roof. All of the desserts are made fresh daily and they have their a la carte menu with seasonal additions. Pecan Pie is the number one seller and Keith and his crew also make their own ice creams and sorbets and have many flavors from which to choose. Most of the staff at Old Fort Pub has been on hand for many years. “They are career oriented and knowledgeable about food products. They are seasoned and service is their priority,” explained Linh. “When people dine here, they can expect great food, service, and sunsets. Everything we do is technically correct and while we are definitely fine dining, we are not as pretentious as most,” he added. Eric Haley, manager of the restaurant, also chimed in: “There is a casual feel when you come here. It not only comes from the ambiance but also from the staff. The staff is friendly and people like to come back here, see the same faces, and be remembered. Jackets are not required and the view is ridiculous.” The Old Fort Pub is open for dinner seven nights a week and the bar opens at 4 p.m. They also serve up an amazing Sunday Brunch from 11 a.m. to 2 p.m. that features the likes of Shrimp and Grits, White Corn Crepe Polonaise, Lowcountry Crawfish Cake, and more traditional fare such as omelettes, quiche, and eggs Benedict. To witness Gringo’s Diner at the height of a lunch rush is to see the brilliance of pure chemistry and effortless teamwork at its finest. Swirling through the colors and light of the diner’s quirky and charming décor, co-owner Adi Aliu is like a dancer in a ballet that takes her soaring past tables, out the front door, back in through the rear door and right back to the open kitchen behind the wide counter of bar stools. With fresh veggies and meats sizzling 16

on the grill, co-owner and Chef Ariel Palma puts on a show of his own as he somehow works a varied menu across his relatively small workspace. With the kitchen spread out before customers, and the whirling dervish of Palma tearing through orders, it’s a common sight to see the bar stool crowd craning their necks to get a better view of the show. The aromas of his craft fill the space of the dinner, drifting through a buzz of conversation and creating a full sensory experience.
But of course, the experience isn’t complete until you’ve tasted what Chef Palma is creating on that grill. As much fun as the spectacle of a popular beachside diner is, the food is the real star of the show here. “Everything is fresh here; not a lot of people realize that,” said Palma, reaching up to a shelf to grab a potato. “See this?
Even our fries are hand cut.” Palma earned his culinary chops in his native Argentina at a cooking school he referred to as Isla Malvinas. His accent still carrying traces of his homeland, Palma speaks with passion about his culinary background, and how it’s informing the diner’s menu of decidedly different specials. “We’re trying out foods from different countries,” he said, pointing to the list of specials that includes empanadas, chorizo breakfast tacos, chicken pesto paninis and a chicken and waffle sandwich. “We have a lot of stuff that they don’t have at a traditional diner,” added Aliu. And while these specials let the expertly trained chef stretch his culinary muscles, he still brings the same dedication to freshness and quality to the standard diner fare, from omelettes to reubens. “People love our pancakes,” said Aliu. Indeed, those pancakes are a standout on a menu full of all-star diner classics. For breakfast, it’s eggs, bacon, sausage and biscuits. For lunch, it’s hot dogs, burgers, sandwiches, and shockingly popular chicken fingers (“I don’t know what we’re doing different, but people love them,” noted Aliu). Then you look at the colorful list of specials and suddenly it’s an international smorgasbord. That dichotomy, between traditional diner fare served with the utmost care
and skill and more exotic dishes informed by a trained chef’s years of experience, can even be found in the owners. While Aliu considers the diner’s burger and Philly cheese steak among her favorites, Palma goes for the chorizo breakfast taco (“You can put chorizo on anything,” he added). It’s part of what makes their chemistry work, an essential aspect of the effortless way they’re able to manage a busy diner full of hungry patrons. The two met just two months after Aliu arrived in the United States from her native Kosovo at age 24. Not speaking a word of English, she took a job in housekeeping. Chef Palma was working as the kitchen manager at Salty Dog Cafe and the two struck up a friendship that continued after Aliu made a move to New York City. She was there for a year before Palma called her up. He’d been hired to work the grill at this new restaurant, Gringo’s Diner. Palma needed a partner. “He was calling me every day to come work here,” Aliu said with a smile. Their first summer two years ago was an enormous success, and in October of 2014 Aliu and Palma were given a tremendous opportunity: they were offered co-ownership of the restaurant. Through the diner’s skyrocketing popularity and no small measure of grit and sweat equity, they we able to acquire ownership in six months, a year and a half
sooner than expected. “We worked hard that year,” said Aliu. And now that hard work has paid off. The tiny diner with the perfect location in Hilton Head Island’s downtown, Coligny Plaza has solidified its status as a local favorite in just a few short years. Even in these shoulder months, Gringo’s Diner is still a whirlwind of activity around lunchtime. That probably has something to do with their loyal and growing following of locals. “We have some locals where I see them parking on the street and I already know what they want,” said Aliu. “They walk in and I tell them, ‘your burger will be ready in a moment.’” That following is further illustrated by the wall of hand-written cards from regulars and enthusiastic visitors alike. The prime location might get them in the door, but it’s that experience, the action and excitement, the sights and smells, the colors and flavors, that turns them into regulars. “We see more and more repeat customers and that is something we truly appreciate,” said Chef Palma.

Hilton Head Island Wine & Food Festival A Showcase of Fine ‘Wine-ing’ and Dining in March BY RISA WILLIAMS MCMILLAN • PHOTO BY ROB KAUFMAN
There is a reason that the Hilton Head Island Wine & Food Festival will celebrate its 32nd Birthday this March and that is because it has aged well, like a fine wine. For a festival to stand the test of time, it has to not only have appeal but be well organized with a constant eye on improvement and expansion. This festival has both and has grown into a go-to event for fine ‘wine-ing’ and dining in the southeast. This festival used to be just about wine -- in fact it started as a small scale wine tasting down in the South Beach parking lot. As it has grown in girth over the years with more events being incorporated, it was a natural step to add the food side of things. According to festival director, Jeff Gerber, “It is more than just about wine. It has become about the Island and our great restaurants and chefs too.” One thing that makes our festival unique is the fact that we have a blind judging event with 25 judges that come her from around the country 6 weeks prior to the festival. “I don’t know of any other judging that is attached to a festival,” said Jeff. Many of the award winning wines that are in the judging will be served in the festival. Through the years, the festival itself has traveled to and fro on the Island and now finds itself in the perfect setting of Harbour Town in Sea Pines. “Harbour Town is a great representation of the Island with the water, lighthouse, and big oak trees,” said Jeff. “It has been well received by everyone.” Regardless of its location, the festival has always been not only about educating people about the wonders of wine, but very much about 20

jump starting the spring season for local businesses. The festival has succeeded in this aspect as it has become quite a destination for foodies and wine lovers alike with 65% of the participants coming from off-Island and spending multiple nights. Events start the week of March 6th and the festival culminates on Saturday, March 11th with the Public Tasting. Knowledge sessions will be held during the week that will include educational tastings. There will also be a number of wine dinners put on by local restaurants with exquisite food and wine pairings meticulously planned by our best chefs. The big Thursday event that has sold out the past two years is the Sip and Stroll where tables full of various wines ready for the sipping are interspersed outside the shops in Harbour Town. What more perfect way to spend an afternoon than ambling around beautiful Harbour Town with a wine glass in one hand and shopping bags full of deals in the other? The Grand Tasting, held Friday night, is now at the glitzy new Harbour Town Golf Clubhouse. This is a must for any serious wine drinker and for anyone else interested in tasting high end wines. “While the tickets may not seem inexpensive, this is really a great deal,” said Jeff. “Instead of walking into a wine store and buying one bottle of wine for over $120, you go to the Grand Tasting and can choose from 100 wines to try that are all that expensive. You can compare and contrast and see what you like. Just to be able to taste all those great wines in one place is an amazing opportunity.” Lavon Stevens will be on hand to play his
soothing and soulful music and light hors d’oeuvres will be served. The Wine & Food Festival goes out with a bang on Saturday, March 11th in Harbour Town with the Public Tasting where over 40 wineries will serve samples of their grapes. With almost 300 different wines on hand to taste, you will want to be there at 11am when the gates open. While this is the marquis and most attended event of the festival, Jeff notes that it is not so big that the ambiance is tampered with. While you are sampling all the wines by the water, there is much to entertain you including David Masteller’s Band providing background music. At the Bartender’s Challenge, 5 or 6 bartenders are given a spirit to work with before the event and come to the festival with their favorite concoction. You can try samples of their drinks as well as the dishes prepared by the chefs competing in the The Sysco Outdoor Gourmet Challenge. The always popular Waiter’s Race sees contestants racing through an obstacle course with an open wine bottle and full glasses and the winner is the one who makes it to the finish line in the shortest amount of time with no spillage. Silent Auctions will be held at the Grand and Public tastings. Mixed cases can be bid on and the proceeds go to their scholarship fund which has helped many an aspiring local go to school at TCL or USCB that wants to enter the hospitality field. “It is really important for us to be able to give back to our local students in this way,” Jeff enthused. You are greeted by the warm smell of roasting meats, a friendly smile from the hostess, and a cold drink in a mason jar glass. Chef Stewart Coleman is making the vision of owner Jim Scully come alive. This is an unassuming place with a big innovative vision: fresh, natural, clean food available to you and your family at a price that is well worth the portion. Every single thing from their protein sources to the take-out containers reinforces their ecofriendly commitment. Additionally, their commitment to the island and the local community is shown on the menu where you will only find beers brewed right here in South Carolina. The twinkle in his eye and the excitement in his voice is evidence of Chef Stewart’s passion for making this vision a reality. And he’s seen enough of the back of the house to know when he’s part of something special. Stewart moved to the island in 1974 when he was just 4 years old. He spent his early childhood attending Montessori School on the beach and is a true product of the growing up and development of Hilton Head Island. He has grown right along with it. Stewart’s life changed forever as a junior in high school. This is the point where he started cooking and knew that his life purpose would be met through food. When he reflects back on this time he recognizes that his choices as a teen directed his career to this day. High school is a challenging time for anyone, and through many attempts to find a path forward he found himself working hard in the back of the house. He has happily stayed there ever since. He enjoyed 24

the hustle, the pace, the demands, and most of all loved the characters he met back there! Interesting and entertaining people coupled with hard work was a perfect fit for his young mind. He graduated culinary school from Johnson & Wales in 1992 in Charleston. He was back on the island in no time enjoying his work at The Cypress. When he talks about his 6-year stint there, he remembers loving every minute of it. It was just what he needed as the jumping off point for his 20+ year career. A move to Beaufort opened up many opportunities which he learned, grew, and built upon each experience he had the benefit to encounter. Today, we on the island get the benefit of all the experience he gathered and it shows front and center on the menu, the kitchen, and in his perspective on staying true to the vision of today’s Annie O’s. In his heart he believes that clean and natural ingredients just taste better. Plain and simple. The menu itself reflects his attention to detail and his ability to
blend new and innovative dishes with downhome favorites. The salad options alone reflect this perfectly. We see a classic romaine wedge that is equally as popular as the trendy quinoa salad topped with avocado and beets. He describes his menu as different, clean, and quick. Everyone always wonders what the chef eats off the menu, and I learned culinary gold in this area! He swears by the Pork Shoulder as his absolute favorite, but is most proud of the flank steak. He takes an out-ofthe-box approach to preparing this cut that ends up being simple yet chocked full of flavors. And last but not least, he loves the out of this world Crab Cake that is stuffed full of nothing but actual deliciously prepped crab meat. On top of this, Annie O’s is prepared to compete with the food delivery services that are gaining popularity on the foodie scene right now. Having healthy food delivered to your door is a popular option among young professionals, working parents, and
active seniors as well. It takes the preplanning out of the equation, and allows the consumer to experience new foods, flavors, and combinations. Seafood Lovers Rejoice

When it comes to food, what better way to celebrate than the bounty that comes from the seas outside our backdoor? Maine has a lobster festival, Louisiana has one for crawfish, and Beaufort has their own Forrest Gump-style shrimp festival. It is only fitting then, that Hilton Head Island hosts its own seafood festival since we are surrounded by water on all sides. In its 10th year, The Hilton Head Island Seafood Festival is fast becoming a destination food event bringing together seafood lovers from near and far. The Hilton Head Island Seafood Festival will run from Monday, February 20th through Sunday, February 26th. The festival was established by the Carmines family, owners of Hudson’s Seafood House on the Docks, in memory of their son David who they lost to cancer in 2001. According to Andrew Carmines, “We wanted to raise money for a foundation we set up for my brother. This started as a one day event and now we have 10 to 12 events over the course of a week.” 32

The culinary celebration kicks off on Monday, February 20th with the Lowcountry Seafood Experience on the Water. This two hour boating exploration will debark twice every day of the festival from Hudson’s. The tours are led by May River Excursions. These will be hands-on instructions on the finer arts of catching shrimp, oysters, clams, and crabs. Adventurers will learn what natives to this land have known for centuries – how to put seafood on the table. Guests will enjoy their catches of the day post-cruise on the docks at Hudson’s. Tickets are limited and these cruises sold out last year so be sure to get your tickets early. New this year will be the Celebrity Guest Chef Cooking Classes/ Demonstrations and Guest Beverage Seminars which will run mid-mornings during the week. Fun new events in the world of festivals are day-time wine tastings paired with shopping and our festival will add their culinary twist to the trend. Sip, Seafood, and Shop is a new event this year featuring locally
harvested seafood and many sips. What better way to while away the afternoon than by sipping wines, beers, and cocktails, shopping at a discount, AND snacking on gourmet seafood bites? The Coastal Culinary and Heritage Dinner will be held on Thursday evening and this is “THE Foodie Event for sure,” said Andrew. “This will be more upscale and feature celebrity chefs,” he explained. “This is the ultimate Seafood Festival 10 Year Celebration Event which will promulgate our natural seafood bounty.” In honor of Black History month and in conjunction with the local Gullah Celebration, this dinner will have African influences including Gullah, Cajun, and Floribeean. Celebrity chefs, famous southern, and local chefs, as well as James Beard Foundation recognized chefs will be preparing the feast. Live and silent auctions will offer incredible artisan made gifts and unique finds with all of the proceeds going to local charities through the David M. Carmines Foundation.
Not to leave out our southern culinary tradition of excellence in barbeque, the festival will include a Pig Pickin’ and Lowcountry Boil at Historical Honey Horn Plantation. Family-style all the way, this Friday night event will be a grand fete brought to you by the Island’s best chefs and celebrity pitmasters. There will something for everyone in the family with tables teeming with local shrimp, whole hogs, chicken, and barbeque. Live music will be on hand to stir up the celebration. “Last year we roasted 3 whole hogs, 70 whole chickens, and 40 bushels of local oysters,” said Andrew. “We are bringing in the biggest name pitmaster in South Carolina this year. It will be really special to see the technique of a true master.” The signature event of the festival, the Hilton Head Island Seafood Festival, will be on Saturday, February 25th at its new location in Honey Horn Plantation. Fifteen local restaurants will be serving up their favorite seafood delicacies and a number of artisans, including cast-net makers and basket weavers, will be sharing their tricks of the trade. Three bands will provide non-stop entertainment and this kid friendly event will boast a 400 yard long zip line, kids bungee jumping, face painting, a Kids Zone, and of course the ever-popular crab races. “We are excited about the new location at Honey Horn Plantation. It is big and safe for kids to run around. Parents can let their hair down,” commented Andrew. At press time, there were tentative plans also for a Sunday Brunch to end the festival with plenty of seafood, champagne, and Gullah gospel music. To date, the David M. Carmines Foundation has donated over a million dollars to local charities. H H H H H H H H H H H H H H H H H H H H H H H H H Did you know that there are silent heroes among us? In Beaufort County alone there are upwards of 18,000 veterans living right here. Your next door neighbor, a small business owner, a college student, a working professional… they may no longer wear a uniform, but each veteran has a story and a permanent place on the landscape of our hearts. One such veteran is Jake Walsh. You may find him on the USCB campus where he is an undergrad Liberal Arts student. You might find him planning his wedding to his longtime girlfriend, Shannon. You may also find him walking his dogs, Murph and Tillee, or lifting weights at the gym. But if you take a moment to get to

know him, you’ll find a true American treasure with a heart for giving back to the veteran community in a real and tangible way. He is the President and co-founder of the Honor Our Heroes Foundation (HOH) along with Joe Mezera who is co-founder and treasurer. Their goal is to alleviate veterans’ stress and to honor their enduring sacrifices. They aim to connect service members and their families with life skills and resources necessary to thrive in civilian life. To hear Jake tell it, he was very fortunate during his transition back to civilian life. After spending 6 ½ years as an Army Medic, he found himself a civilian with no more team and no more structure. Today he is very much
a student of mindfulness and humility. He understands from experience that everything is teachable to those who are willing to learn. And he is ready to share all he learned during his own rough, yet successful, transition. “If life is easier for even one person, then it’s all been worth it.” – Jake Walsh, Co-Founder He has identified the three primary goals of the Honor Our Heroes Foundation: • Short term financial assistance for emergency situations • Small business grants to veteran owned businesses • Access to Neuro-feedback through Brain Training at BrainCore of the Lowcountry.
While this list is clean and neat and direct, there is no magic formula to assist veterans. Each one has a unique skill set and story, a unique set of needs and circumstances. There are so many variables when helping them find a fulfilling and purpose-filled life outside of the service. Where HOH stands out is that they model the skills they know veterans will need to cope and be successful. HOH cannot meet every need presented to them, so they stay networked with the Red Cross, MAVSA, the VFW, and other veteran support organizations to refer people who need services or resources they cannot provide. Teamwork and relying on others is a skill Jake learned in the Army, and he hopes to remind veterans that they are still part of a team. There are still people out there ready and able to lend a hand. Additionally, Jake has also created Veteran Mettle. This is a carefully curated collection of media with the sole purpose being to overwhelm the veteran
community with success stories. He is giving his fellow veterans something and someone to emulate, real life people who have been in their shoes and have achieved life goals outside of the military. This resource intentionally steers clear of the graphic and gritty reminders of the reality of war-time service, and instead stays forward-focused on stability and success in the transition to civilian life. One concept he learned early on as a newb in the Army is to ‘fake it til you make it’. Early on there are overwhelming physical and mental demands on new recruits, so Jake learned to look to those soldiers who were succeeding and emulate what they did well. Veteran Mettle provides this same opportunity to veterans during their transition by highlighting people to emulate until they find their own path of success. the organization, read about the founder and directors, and see news footage and articles highlighting some of the work HOH has been up to recently. Next is to spread the word. What you may find surprising is that when asked what challenges HOH faces, the first one Jake mentions is meeting people in need. By nature, our veteran population is a proud group of individuals. You can have a huge impact by speaking up on behalf of a veteran. If you are aware of a veteran in need, nominating them for support and assistance might mean the difference between their success or continued struggle. Consider raising your hand for them. What better way to honor their service than to be part of their path forward?

Hilton Head Island Gullah Celebration Cherishing a Culture and Taking in Tradition BY RISA WILLIAMS MCMILLAN
They came here from Western Africa, not by choice, in the 1700’s. They were ripped from their homes, their families, their very lives and brought to the southeastern United States to work the fields – specifically the rice fields. They formed a formidable family that survived slavery, disease, and war, while all the while sustaining their culture and preserving their roots. They have showed, now 300 years later, that while they could be stripped of their homeland, they could not be stripped of their culture and their traditions – the very things that make them a unique ‘family’. They are the Gullah and we are blessed on Hilton Head to have a strong community that shares its heritage with us in a grand Gullah Celebration. The month of February on Hilton Head has essentially turned into Gullah month with a full calendar of events. It is an education and it is entertainment. It is a taste of everything – their distinct creole language, dance and music, food, art, and crafts - and ultimately it is a celebration of the rich culture of the Gullah people. In its 21st year, this series of events has been recognized as not only one of the Top 20 Events by the Southeastern Tourism Society, but has received accolades from National Geographic Explorer as one of the Top 10 Events in the WORLD that people should try. Courtney Young, spokesperson for the festival and 5th generation Gullah descendant, explained that the festival originally was started by a group of small business owners 42

and community leaders who saw the opportunity to share this special culture. They formed a partnership with the town and the event took flight, with the main attraction being their art exhibit. As the Art Exhibit grew over the years, the Taste of Gullah Festival matured and other events kept getting added to the calendar. Last year, over 15,000 people attended the various events including tour buses that came in from all over the southeast. “This Island is about so much more than beach and tennis,” said Courtney. “People will learn when they come to these events that the Gullah culture is not in the past. It is in the present tense and ever-evolving. I feel blessed to be able to bring a fresh approach to show people how relevant we are and important to the entire United States and all of this is rooted in our backyard. The Gullah Celebration has done a phenomenal job of preserving the culture.” Courtney encourages people to experience their rich traditions and take a snapshot back in time. Go to the events. See their lives through their paintings. Taste the food. Touch their drums. Listen to their stories. Take home a piece of the past through their memories and special gifts. The festival opens up on February 1st with the XX Arts Ob We People Annual Art Exhibition and Sale at the Arts Center in Shelter Cove. In its 20th year, the Art Exhibition is the longest lasting and largest display of Gullah art in the world. It features paintings, photography, craft dolls, jewelry, and baskets. The
exhibit is open the entire month of February from 10 a.m. to 4 p.m. and is often graced with visits from the artists themselves. There is an entire music series during the month that kicks off on Friday, February 3rd at First Zion Missionary Baptist Church in Bluffton and features the voices and vibes of El Shaddai, a community choir that has made quite a name for itself in these parts. The music events will feature both traditional and modern favorites. The Gullah Celebration includes many events for the history buffs. There is a Tour of Mitchelville where people can take a journey by bike or foot through the area where, after being released from bondage, these people set up their own self-governed community that would be the template for many others to follow. At the “Gullah Institute Presents” event, scholars will map out the history of how the Gullah people came here and utilized their skills to grow rice and build irrigation and dams to sustain the land. No Gullah festival would be complete without a celebration of their food. The Gullah people lived off of the land and their diet reflects that. “So much of Gullah food is seafood,” explained Courtney. “The men and women made a living off of the seas – selling shrimp, fish, oysters, blue crabs and clams. Shrimp and grits has been part of the Gullah culture for over 150 years. They would eat oysters or fish stewed over grits for breakfast and fried for dinner.” And then of course the staple for every meal was rice – the reason they were brought here to begin with. “My mom told me stories of how she grew up with a pot of rice on the stove every day. She promised that we would not have to eat rice every day but I remember we still ate it 3 or 4 times a week.” The main showcases of the food and culture will be at the Taste of Gullah on Saturday, February 11th and the Arts, Craft & Food Expo (ACF), the BIG event, the weekend of Saturday, the 18th. Courtney describes the Taste of Gullah as a snapshot of the culture and the ACF as the “full picture.” It is described as the “all access experience to Gullah Culture”. Vendors and small businesses will set up tables with traditional Gullah food favorites like gumbo, ‘Geechee’ conch stew, fried fish, chicken, ribs, sweet potato pie, shrimp creole, and a whole lot more. Aside from the food presentations, there will be many local artists -- sweet grass basket sewers, fishnet weavers, and handmade jewelry makers, some coming from Southern and Western Africa. Entertainment will be in the form of story tellers, African dance, and Gospel Music. Courtney noted that the dancing and drumming will be “traditional but with a modern approach”. There are many other food events during the month including an OL’ Fashioned Gullah Breakfast and a Gullah Brunch. We are so fortunate on Hilton Head to be able to learn of this amazing Gullah people through the Gullah Celebration. It is through the success of these events over the years that has also helped to market and promote the culture to a bigger audience. Courtney explained that now other businesses have evolved; there is a Mitchelville museum, local Gullah tours, musical performers are sought after like El Shaddai, there are Gullah cooks that do private catering, and jewelry and basket makers sell their wares at various festivals and events throughout the year. Did you have a chance to read the Fall issue? The one with that happy family just trotting along Shelter Cove Park, smiling as if they run in parks all day every day? That’s us! And, it just so happens that on the very day that issue hit the stands, we had a disastrous meltdown in the middle of Publix that ended up with not one, but both of my children getting soap in their mouths, and grounded in their rooms for the afternoon. The juxtaposition of the family pictured in the magazine and the one I was experiencing in real life was so stark that it stopped me in my tracks. Was it the fact that I actually wrote about family wellness that jinxed me into the foul-mannered shenanigans of that afternoon? While I hardly believe in being jinxed, we are in a season of change. Like many of you, we live through these transitions with some trial and error. We don’t often read in health and fitness articles about the struggle, the challenging times, the seasons of change. We don’t often get to see what it actually takes to build new habits, to re-identify the patterns that sustain a healthy body, a healthy mind, and healthy soul. What we do hear often is that age old adage that if you want something bad enough you’ll do the work to get there. But I find there to be some pretty big holes in that mindset. It suggests that the mere desire is enough to elicit change. However, in working with hundreds of people over the years I have found that the most powerful tool in creating change is in 52

managing two things: habits and internal monologue. We have a moment of space between any stimulus and our response. It is in that moment that our judgement kicks in and we choose to respond positively or negatively. We receive the stimulus of hunger, and we can choose the doughnut or the apple. We receive the stimulus of boredom and we can choose to snack mindlessly or go for a short walk outside. (We receive the stimulus of kids acting crazy in the grocery store, and we can choose to explode or to remain calm.) Both your habits and your inner monologue kick in during that space between. The habit of having healthy food prepared kicks in a sense of readiness when hunger strikes. Our inner voice reinforces that we are prepared and we calmly make the healthy choice. In this short example we see that building the habit of prepping food and speaking kindly to ourselves has immediate and real impact. The response is immediate, but the habit takes time. The alternative is also true. When the habit of having healthy food prepared isn’t there, our inner voice may reprimand
in the moment of choice. This reinforces a negative thought pattern that may be keeping us from making the best choice. The holidays can often be a time of higher stress. A time where habits may be challenged due to being over tasked, and where stress levels are higher than normal. Let’s take a closer look at the habit of prepping food ahead of time. Popular wellness literature encourages us to tackle prepping food for the entire week in one swoop on Sunday evenings. Maybe in a perfect world we would have a huge block of time to do this, but in my reality I have a few smaller blocks throughout the week. Instead of tackling this huge task of thinking through the entire week, break that up in to a smaller more manageable task at first. Try one breakfast casserole this week. Next week add a dinner side dish. And build from there.
If you want a delicious breakfast that is quick to prep, quick to re-heat, and an easy grab-and-go meal, try these Morning Veggie Muffins. (In fact, these veggies muffins are great any time of the day!)
Morning Veggie Muffins INGREDIENTS
• 1 Tbsp olive oil • ½ yellow onion, chopped • 2 cloves garlic, minced • ½ zucchini, shredded • 1 red bell pepper, chopped • 8 large eggs • 2 cups arugula, roughly chopped • ¼ cup shredded Parmesan cheese • Salt and pepper, to taste
RECIPE • Preheat oven to 375 degrees F. • Coat a muffin tin with spray and set aside. • In a large skillet on medium heat, drizzle olive oil and sauté onion and garlic for about 4 minutes until tender and fragrant. Add in zucchini and red bell pepper, cooking an additional 2 minutes. • Fill each muffin tin about 1/3 full with veggie mixture. • In a large bowl, whisk together eggs, arugula, cheese and salt/pepper and fill each muffin tin evenly, being careful not to over-fill. • Bake muffins for about 20 minutes, until they’ve risen and are golden brown around the edges. • Enjoy! CRAWFISH ETOUFEE (serves 4)
The fish Paul Prudhomme made famous in the late 70’s which put cajun cooking on the map to the rest of the world. Red Drum filets were used, a fish which prefers salt waters, but also tolerates the saline fresh water overlap of the atchafalaya delta of southern Louisiana. I would admit, this is a true cajun dish, and one of our best sellers.
3 tblspoons unsalted butter 1/2 cup onion chopped 1/2 cup celery chopped 1/2 cup green pepper chopped 2 tablespoons minced garlic 1/4 cup green onions chopped 1 tablespoon lemon juice 2 tablespoons worcestershire sauce Spices to include 2 teasp. thyme, 1/2 teasp white pepper, 1/2 teaspoon dried parsley, 1/2 teaspoon onion powder 2 lbs. crawfish tail meat 2 tablespoons cajun seasoning (Kenny B’s) or use Redfish Majic by K Paul. 2 cups crawfish stock, with 1 teaspoon crab boil 1/3 cup roux oil and flour mixture
6 oz. filet red fish 1/4 cup butter 1 teaspoon cayanne pepper 1 teaspoon lemon pepper 1/2 teaspoon minced garlic 1/2 teaspoon worcestershire sauce Add all ingredients except butter and mix. Dip fish filet in butter and coat in ingredient mixture. Cook on a well seasoned cast iron skillet on medium heat until fish is done to your liking. Serve over white rice, and top with 3 oz. of crawfish etoufee.

Melt butter in cast iron skillet add all veggies except the green onions. Add the garlic and seasonings, cook till veggies are translucent. Add the crawfish meat and the stock, on low simmer. Add the roux, and the green onion, and lemon juice. Add more seasonings to taste.

Winter in Bluffton ain’t what it used to be. There was a time when this sleepy little river town became downright comatose in winter. Summers were for pig picking and street festivals, but come winter you could basically plan on hibernating. Not so anymore. Which, it turns out, is a good thing. Because a town as vibrant and exciting as Bluffton deserves a full year of outstanding events. With a bustling resident population and soaring popularity as a day trip destination for Hilton Head Island’s tourist crowd, Bluffton needs something a little more for the shoulder season than it used to. Thanks to these winter events, this is no time to hibernate.
Dec. 2: Christmas in the Village
Palmetto Bluff is a stunning backdrop for an outdoor event any time of year, with its verdant open green space, ancient live oaks and unmatched view of the majestic May River. But something about the Bluff in winter makes it even more special. Which is why it’s the perfect time to enjoy the annual Movie on the Green celebration at Palmetto Bluff. Just bring along the family, beach chairs and blankets to enjoy an outdoor screening of a Christmas classic amid the grandeur of Palmetto Bluff. Dec. 3: Bluffton Christmas Parade There was a time when the entirety of Bluffton’s winter calendar consisted of one event – the parade. The original must-see, it’s still the best. Three miles of floats, from the whimsical to the outright hysterical, not to mention pounds of candy, make this the official kick-off to the holiday season for generations of Blufftonians. Thrill
to the precision choreography of the Bluffton Ladies Drill Team (who use actual drills, because this is Bluffton) high-five the inflatable two-legged reindeer (you’ll know them when you see them) or take a selfie with the Arts & Seafood Festival’s oyster mascot. Now in its 45th year, the Bluffton Christmas Parade is the one time of year when Bluffton’s eccentric charm, toned down in the past few years as more and more visitors come to town, is given full rein to celebrate with quirky abandon. Three miles of staging gives you plenty of options – for the full Old Town experience, we would recommend setting up along Calhoun Street. However that fills up fast. The turn onto May River Road is generally where the candy hunters will congregate, so be forewarned. To really spread out, grab a spot of sidewalk on May River Road starting west of Goethe Road. The parade steps off at 10 a.m. so get there early, and for the full experience check out the town Christmas tree lighting, generally held the night before at Town Hall. Last year saw the launch of a brand new event to the town’s social calendar, The Bluffton Ball. Fat
Patties

Well before Fat Patties crossed the Broad River, a whisper campaign was already underway. Savvy Blufftonians, returning from a trip north of the Broad for a day spent along the water, were coming home with stories of this amazing burger restaurant they’d visited up in Port Royal. A shrimp burger served with fried oysters on top? A black bean veggie patty topped with brie and caramelized apples? Beef blended with bacon under a mountain of pulled pork? Could this rumored nirvana of burgercraft possibly actually exist? For months, even years, this constant campaign continued. We can testify to one Blufftonian who made a trip north just to visit this burger restaurant everyone was talking about. So it should come as no surprise that when Fat Patties finally opened up its second location, in the heart of Bluffton’s immensely trafficked Old Town, it was an instant, runaway, expectations-shattering success. “It blew our expectations out of the water,” said owner Nick Borreggine. “Whenever you go into a project like that, you’re 68

always looking at worst case scenario, asking yourself, ‘What’s the bare minimum I need to make this work?’ It’s doubled that.” The long-whispered-of restaurant, it turned out, was the restaurant that Old Town Bluffton never knew it always needed. Beyond the dizzying array of burgers (the menu starts with 78 options which expands exponentially dramatically as you tweak each burger’s toppings to your liking), Fat Patties is also famous for its brats, served either as a garlic brat or a chili brat. That’s not to mention a generous selection of tacos, chicken wings, oysters, salads and starters (five words: warm pimento beer cheese dip. Two more: you’re welcome). But Fat Patties didn’t get to be Bluffton’s hottest new table on burgers alone – not just a restaurant, this is an entertainment mecca. The happy hour and late night crowds have made the outdoor biergarten the site of a nightly party since Fat Patties opened, enjoying outdoor pool tables, live music and trivia and of course Bluffton’s only outdoor soccer/oversized pool table hybrid game.
That last isn’t just popular with the bar crowd – during the day you’ll find it swarming with kids. And in doing so, it fulfills one of the restaurant’s main mission statements. “Fat Patties was born out of necessity,” said Borreggine. “I’m a big beer drinker and I could never go out to a kid-friendly restaurant that had good beer. It just never existed.” As any parent who has visited Fat Patties can attest, the kids usually make a beeline for the giant pool table with its thick shag carpeting and soccer balls, and disappear for the rest of the meal. “We talked about board games and card games and that sort of thing, but it didn’t get them away from the parents,” he said, adding with a laugh, “We all love our kids, but… This way you can actually enjoy a drink, you know?” Which brings us to one of the chief reasons Fat Patties has been able to cement itself as ground zero for Bluffton’s nightlife. Lording over the main dining room from its second floor perch, the shiny steel fermenting tanks of Salt Marsh Brewing Co. don’t just give the restaurant a hip metropolitan vibe, they’re also putting out some seriously tasty beer. The small footprint and seemingly endless creativity of Brewmaster James Brown combine for a rotation of in-house brews that give every visit something new worth trying. Standbys like the Hoppin’ John IPA and State of Mind Saison share tapspace with seasonals like this past summer’s Summer Jam Series beers, which infused fruit flavor into the crispiness of the Riverwise wheat ale. You’ll also see collaboration beers, like the Red Eye Perks which carries heavy coffee notes courtesy of the master roasters at The Corner Perk, just up the street. The vast beer selection and the burger menu means that you can visit Fat Patties countless times, experiment with pairings, and never have quite the same meal twice. They say that lightning doesn’t strike twice. That doesn’t seem to be the case with Fat Patties. North of the broad, it was a legend. South of the broad, it has come to define what Old Town Bluffton could be. Word of mouth and an excellent Old Town location brought people in the door, but its menu, its beer and its laid-back sense of fun have made the Bluffton branch of Fat Patties a legend in its own right.
