PUBLISHER’S NOTE Growing up in Kentucky, it seemed like the winter skies were gray for weeks at a time and all I could think about was the emergence of spring. Sure, a little snow was great and cooler weather wasn’t always a bad thing, but for the most part I’m glad to miss those dreary days. For most of the country, the winter months are a period that you grind through. Time seems to slow down and dusk arrives too soon. I have come to feel though, that the dark cloud of winter does not descend on us in the Lowcountry. In fact, winter has become one of my favorite times of the year. In comparison, our winters are mild. You can still enjoy all the outdoor activities you can handle – Tee times abound, tennis courts are plentiful, and the bike paths are uncongested for running, biking, and walking. You can drive without following a tourist going 15 miles per hour and you can pull up a beach chair anywhere you choose. One of the best bonuses this time of year is the abundance of great offers the local restaurants serve up. It’s a great time to try a new restaurant or visit an old favorite as most have special pricing or offers to encourage locals and our snowbirds to take advantage of their fantastic fare. Getting a reservation or walking in this time of the year is a breeze and great service and plenty of attention is a guarantee. Oyster lovers also rejoice during the off-season as our favorite seafood delicacy is the star of the show. There’s no shortage of local oysters available and no better way to enjoy them than at one of the many Island restaurants or at a local oyster roast. Also, check out the article inside on the Lowcountry Oyster Trail, a new idea combining experiential travel and our famous Lowcountry oyster. If you enjoy oysters, you’re probably a seafood fan. Be sure to check out the 12th annual Hilton Head Island Seafood Festival from February 18th thru February 23rd. An extravaganza of food and drink, this festival features educational seminars, tours, specialty dinners and of course the grand finale with local restaurants offering their best seafood to all at Honey Horn Plantation. As you can see, there’s no shortage of activities to keep you busy this winter. So if you are one of those folks that hunker up inside for a few months, open your shutters and let the sun in. From outdoor sports and exercise to indulging in your favorite palate pleasing vices, I think you’ll find this is an ideal time to enjoy all our beautiful Island has to offer. Imagine entering a realm where you are transported back through time and all of your senses are engaged, creating an experience so relaxing and sensual that it will be embedded in your memory banks for all time. The experience is all encompassing. The minute you walk in the front door, the sights, scents, and sounds will carry you away. Take Flight for a Night at The Jazz Corner and oh what a trip it will be! The Jazz Corner was the vision of Bob Masteller, a man who was as passionate about the American art form of Jazz as he was about preserving its legacy and sharing its timeless tones. Bob grew up in upstate New York with music in his blood as his father was a jazz violinist and vibraphonist who led a touring big band in the 20’s and 30’s. Bob took up trumpet lessons at age 8, followed by trombone and vibraphone, and played his first gigs with his father at age 12. While his career followed a successful business path -- he earned his MBA and moved to Hilton Head in 1973 to work for Charles Fraser in Sea Pines as VP of Human Resources -- his real passion was for the music of Jazz, America’s original art form which Bob was dedicated to preserving. The year was 1999 when Bob and his partner Charles Swift bought the building in the corner of the Village at Wexford that would house The Jazz Corner. They engaged architect Terry Keane, gutted the building, designed an acoustically perfect room for jazz and worked diligently together on the project until Mr. Swift retired to Alabama 5 years later. The gold standard in the jazz industry had been created and today that legacy is carried on by Bob’s wife, Lois, son David, and a team of dedicated employees that believe in the power of the vision. Once just a vision, The Jazz Corner is recognized as one of the top Jazz clubs in the United States and named one of the “Top Great Jazz Rooms” in the world by Downbeat Magazine. It will celebrate its 20th Anniversary this March. “Bob always said that if he ever owned a jazz club it would be a great listening room and have all the tools a musician would need. It was built specifically to listen to Jazz,” said Lois. “The ceiling was designed to sound specifications and there is a carpeted wall and slanted ceiling behind the stage to create a natural acoustic sound,” explained David. “There is not a bad seat in the house,” he added. David remembers the day they opened for business, March 30, 1999: “That first sound check on that first day was amazing. It’s magical and it never gets old.” It is not just the timeless music though. The lights are low, the atmosphere is electric, and the sounds are stimulating. The overall presentation is elegant yet relaxing. Add to that a staff that welcomes you like family and you have the whole package. They treat you like family because over the past 20 years they have become family – staff 12

and musicians alike. “People aren’t numbers to us. Our staff makes it a friendly experience and gives time and dedication to each party,” said David. Wearer of many hats, General Manager, Kelli Lesch has been there for all 20 years and her brother, Mike has been the Bar Manager for 18 years. Kelli is married to pianist Martin Lesch who has performed there for 17 years and Reggie Deas has been gracing the stage at The Jazz Corner for 18 years -- his band Deas Guyz will be presenting a Motown Holiday Spectacular in December. Dave Masteller carries on his father’s tradition by performing every Tuesday night celebrating “Fat Tuesday” New Orleans-style. Doors open for dinner at The Jazz Corner at 6:00 PM every night and the music begins at 8:00 PM; entertainment goes until 11:00 PM. Weekday concerts feature an array of local and regional artists and weekends feature regional, national and international artists. The winter line-up of artists is fabulous and will include many famous trios, quartets, and vocalists such as Freddy Cole, Rene Marie, Christian Tamburr and Clint Holmes to name a few. Coming from Paris in February will be Gypsy Jazz Accordionist Frederic Gomes and headlining the 20th Anniversary evening in March will be The Noel Freidline Quartet featuring Maria Howell. What rounds out your perfect night at The Jazz Corner is the food. Chef Wade Haase has been Executive Chef for over 5 years and has earned the restaurant a #1 Hilton Head ranking on TripAdvisor. The menu is American eclectic; Chef Haase uses locally sourced items and everything is made in-house. There are a variety of specials nightly including fresh seafood. Some popular appetizers include Tempura Lobster served with pineapple soy glaze, honey wasabi and sweet Thai chili aioli as well as winter specials such as Shrimp Etouffee over a Crispy Smoked Gouda Grit Cake, and Lamb Lollipops with an Amarena Cherry Glaze and Crumbled Goat Cheese. Dinner entrees include something for everyone. Chef Haase notes that the Prosciutto Wrapped Scallops are a big hit as well as the Bacon Wrapped Pork Tenderloin. Save room for dessert as that will be the grand finale of your journey: Choose from Flourless Chocolate Espresso Cake, Crème Brulee, and Pecan Pie to name a few. The Jazz Corner and the Mastellers are not only preserving the true American Art Form of Jazz for us, they are also passing it on to the next generation. Bob and Lois started The Junior Jazz Foundation (JJF) in 2008 in order to preserve the art form of Jazz through education and performance. The JJF sponsors The Hilton Head Jazz Camp every July, collects used instruments and refurbishes them for distribution to area schools. In addition, JJF awards multiple college and Jazz Camp scholarships as well as multiple grants to schools each year. The latest project of the JJF was installing a 16-keyboard state of the art piano lab at St. Helena Elementary School! 2019 will be a year-long celebration of their 20th Anniversary so there is no time like the present to catch dinner and a show. trattoria DIVINA Inspired cuisine, an award-winning wine list and an atmosphere lifted right out of the heart of old-world Italy. BY BARRY KAUFMAN PHOTOS BY ROB KAUFMAN

The greatest treasures sometimes take a little searching. Tucked away in a back corner at Park Plaza, Trattoria Divina first meets the eye with an outdoor area offering up plentiful al fresco seating beside the gently tinkling waters of an outdoor fountain under the blissful Carolina sun. It’s one of the rare shaded outdoor dining experiences on the island, and blissfully secluded to boot. All told, it’s not a bad spot to enjoy fresh air and delicious food And yet it doesn’t hold a candle to the enchanting experience that wait once you step inside Trattoria Divina, owned by Harry Morales. The décor alone should tell you that you’re in for something special. Everywhere you look are nods to classic Italian art and architecture, from the old-world brick archways separating the dining rooms to the richly detailed murals rendered by SCAD students in loving homage to renaissance classics. Cloth banners stretched across the ceiling in one room and stamped metal on the other ceiling define each space while lending a rich sense of intimacy and artistry. Across the length of the 16

bar, hand-painted backlit glass panels mimic the colors and lines of Umberto Boccioni’s abstract art. Every square inch of the dining area is a work of art. But its in the private dining space that we see the true artistic expression that drives Trattoria Divina: the art of oenology, brilliantly displayed in bottles of wine lining the wall. The selection of varietals, Italian, French and domestic, reflect a masterful knowledge of wine, and represents just a small fraction of the 1,200 or so bottles typically in inventory. It’s that reverence for the art of wine making that earned Trattoria Divina its first Wine Spectator Award this past July. “That’s big for us,” said front of the house manager Tami Bream. “We’re proud of our wine list and we’re happy that other people are noticing.”

Earning the Wine Spectator Award was a painstaking process for the staff at Trattoria Divina, one which began this past February. “The wine list has to meet strict standards they have set in terms of selection and price points, but it’s not just the wine they look at,” said Bream. “They’re also looking to ensure the food and the reputation of the restaurant live up to the wine list as well.” Wine Spectator also, Bream suspects, sent a few “secret shoppers” into the restaurant during the few months they were being evaluated. Obviously, those secret shoppers liked what they saw. It’s the same thing loyal customers have seen for years – true dedication to the finest wine list possible. “I love wine. It’s one of my little secret passions,” said Bream. “I like the farming aspect. I like the stories behind


the wineries. I think it’s just a really cool industry… I sometimes joke if I’d found Sonoma or Napa before Hilton Head I wouldn’t be here.” Northern California’s loss is our gain, not just for the sake of Trattoria Divina’s wine list, but for the brilliant cuisine with which it is paired. Chef Hugo Lee trained at the Culinary Institute of Napa before working in The French Laundry under legendary Chef Thomas Keller. But it was during his tenure at Il Fornaio, first in New York then Las Vegas, that he gained his deep respect for Italian cuisine. “Chef gets flavors out of food that no one else can,” said Bream. Ask her about the constantly rotating menu of Italian-inspired creations that come from the mind of Chef Hugo, and Bream gets positively evangelical. The way he perfectly prepares fish, sourcing it from local fishermen then searing it and then bringing it just to the perfect tender flakiness. The brilliant method he used to prepare squash blossoms, stuffing them with robiola cheese before lightly breading them in panko and flash frying them. The way each and every madefrom-scratch ravioli nearly overflows with mouthwatering fillings from lobster to salmon.

The menu constantly rotates based on seasonality and availability of ingredients, a practice that has become de rigueur these days, but has been Chef Hugo’s ethos since day one. In lesser restaurants, this can create a hit-or-miss experience, but Trattoria Divina has come up with a novel way to ensure every menu item is a hit. On the first Tuesday of every month, a special “primo martedì” dinner sees five off-the-list wines paired with brand new creations from Chef Hugo along with presentations from the winemakers themselves. “It’s just a lot of fun,” said Bream. “It gives chef an opportunity to really get outside the box and not make stuff on the menu. We’ve been doing this for five years and he’s never made the same thing twice. And if he makes something that’s a home run, we run it as a special. If it does well there it goes on the menu.” It’s a great way to give diners and education in wine as well as a preview of upcoming items. But no matter the season, there are a few items that have cemented their place on the menu as fan favorites. “We could never take our lobster

ravioli off the menu,” said Bream, adding that there are generally three to four varieties of ravioli on the menu. Indeed, you can poke your head back in the kitchen at nearly any time of day, and you’ll see the sous chef hand-cutting each ravioli to keep up demand. Beyond that, personal favorites like the bolognaise and lobster pot pie are perennially available due to overwhelming popularity. “We also tend to have a following from vegans and vegetarians due to a pretty wide variety of offerings for them,” noted Bream. They’re not the only loyal patrons at Trattoria Divina. Drawn in by the sublime Italian cuisine, award-winning wine list and friendly long-term staff (everyone at the restaurant has been there at least five years, Bream noted) islanders and visitors alike have finished their search and found one of the island’s true treasures.

This annual rite of spring now in its 34th year brings together wineries, wine connoisseurs, epicures and talented local chefs for a weeklong series of events showcasing the Island’s signature cuisine and culture, March 11-17. According to Festival Director Jeff Gerber, the secret to the Wine + Food Festival’s continued success is introducing new, smaller events, alongside fan favorites like the Grand Tasting and Public Tasting, to grow the festival yet maintain “its luster and feel.” The casual Thursday Sip and Stroll throughout the Harbour Town Yacht Basin is one such success story. Participation at Sip and Stroll has doubled since its introduction four years ago and the event sold out in 2018. “It’s just like anything,” notes Gerber. “If you’re going to do it, it will take a little bit of time. It’s like opening a restaurant. You’ve got to build your reputation.” Last year’s cooking class at the Sea Pines Beach Club was also a big hit and similar opportunities are in the works for 2019. One new proceeding is a re-creation of the 1976 “Judgement of Paris” which put American wines in the international spotlight when a California Cabernet Sauvignon and Chardonnay bested their French counterparts in a blind tasting. Throughout the week, restaurants across the Island and in Bluffton host wine dinners and chef showcases. Educational seminars will also be available. On Friday, March 15, the exclusive Grand Tasting returns to the Harbour Town Clubhouse with a chance to taste an array of award-winning wines and light hors d’oeuvres accompanied by live music. The Public Tasting, one of the oldest, tented wine tastings on the East Coast, takes place on Saturday, March 16, around the Harbour Town Yacht Basin featuring more than 250 wines 20

In 2018, the weeklong event attracted 2,500-3,000 attendees and inserted an estimated $3.5 million into the economy. “I know it’s year 34, but it’s still growing and changing,” notes Gerber. He would like to see the festival grow “smartly” and attract visitors for the entire week, rather than just a long weekend. “It can be an even bigger economic benefit,” he believes. “But it has to be done in a way that represents Hilton Head, as opposed to being just another festival. There is a lot of culinary talent on the Island, but all you hear is ‘Charleston, Charleston, Charleston.’ It’s not that they don’t deserve it and they haven’t worked hard for it, but there are great chefs here.” “It’s a beautiful place to be and that’s why people live here. So, there is an opportunity for talented chefs to put their skills to work and really showcase that. For more than a decade, the Lowcountry’s culinary calendar has revolved around one event: the Hilton Head Island Seafood Festival. Now in its 12th year, this annual celebration of the mouth-watering bounty of our area kitchen offers even more palate-pleasing options during a week-long extravaganza of food and drink. Don’t let the name fool you – there’s more to the festival than just seafood, with some of the area’s finest pitmasters and award-winning chefs descending on the island to honor the culinary traditions that have made the South great. It’s about far more than the seafood, but that’s still at the festival’s heart. Starting on Feb. 18 and running through Feb. 23, you can enjoy a daily “Lowcountry Seafood Experience on the Water” which departs from Hudson’s Seafood on the Docks every morning at 10 a.m. Over the course of two hours, this tour will traverse our area’s waterways demonstrating the art and skill required to harvest shrimp, oysters, crabs and clams. Come for the education, stay for the chance to enjoy the fruits of your labors right on the water. Thursday Feb. 21 will give visitors a chance to sharpen their barbecue skills with Chef Bryan Furman of B’ Cracklin’ BBQ. He’ll be running the smoker in preparation for the Pig Pickin’ & Oyster Roast event the following night, giving you a chance to peek under the smoker lid and learn a few tricks of the trade for preparing perfect pork. One of the pioneers of the farm-to-table movement, Lamas grabbed the culinary world’s spotlight with his unique recipes at the intersection of Southern cooking and Latin flavor. When he brought those worlds together, he created a new style that helped make him a three-time semifinalist for the James Beard Foundation’s Best Chef: Southeast Award. He will join the headliner of this year’s Celebrity Chef Tour, Barton Seaver. Famed the world over as a chef, author and advocate, Seaver has been one of the most important voices in creating sustainable seafood practices and has dedicated his career to changing the way we enjoy seafood. Owner of three Rising Culinary Star awards, two Best New Restaurant awards and one Chef of the Year title from Esquire magazine, Seaver will not only dazzle with his culinary creations, he will lead a discussion on eco-friendly fishing practices. The final course of this week-long feast will come on Feb. 23 with the Saturday Seafood Festival, held from 11 a.m.- 5 p.m. at Historic Honey Horn. MOONSHINE Its Tumultuous Past and its Spirited Present BY RISA WILLIAMS MCMILLAN

When you think of moonshine, you probably have visions of hillbillies with tobacco-stained, crooked teeth and long scraggly beards sitting on a rickety front porch with a jug in one hand and a shotgun in the other. That was the moonshine of yesteryear. Today, thanks to loosened liquor laws and a trend toward craft alcohol, it is having its own renaissance and is showing up in liquor stores and a smattering of restaurants. The history of moonshine is an interesting one and its evolution and return is worthy of a resounding “Cheers” -- for this hearty spirit is a toast in itself to a time long past steeped in chicanery, crime, and car chases. The word “moonshine” refers to the distilling process of any kind of alcohol, usually whiskey or rum, that was made in secret (under the moonlight) to avoid authorities and taxes. English, Scottish, and Irish immigrants who came to the colonies in the 18th century brought their moonshine trade with them. The settlers adapted their recipes to make use of corn instead of wheat or rye. Corn whiskey became a good way to earn money and barter for goods and services. In 1791, after the Revolutionary War, Treasury Secretary Alexander Hamilton decided that taxing this most popular beverage would provide a much needed boost to his treasury. This Whiskey Tax did not go over well (hence the Whiskey Rebellion) as folks had just spent years fighting a war to rebel against taxation from the British Crown. People needed this source of income (without the taxes) which led to the distillers taking to the mountains of Appalachia and brewing by night so the smoke from their copper kettles could not be seen. 32

The recipe for moonshine is simple: corn meal, sugar, yeast, and water. The primary difference between moonshine and your regular run-of-the-mill whiskey is aging. When you picture a jar of moonshine, the liquid is clear. Commercial alcohols have an amber color because they are aged in charred oak barrels for many years. Moonshine had no aging and thus no mellowing which is why its kick, which could light a mouth on fire, was referred to as white lightning. Battles over moonshine continued into the 20th century when the temperance movement, calling for a ban on alcohol, led to Prohibition. This was like striking gold for the moonshiners and demand went through the roof. Speakeasies opened up everywhere and bootleggers, the smugglers who concealed the product in their riding boots, became the illegal transporters of the coveted drink. With the invention of the automobile, the bootleggers took to modifying their cars to make them faster so they could outrun the “revenuers”. These cars and their makers in the southeast eventually grew into the NASCAR Racing Series. In fact, the winner of the first NASCAR race had just finished making a bootleg run in his car. Probably the most famous bootlegger and NASCAR driver was Junior Johnson, a North Carolinian, who started hauling white whiskey at age 14. He never got caught by the revenuers, always outracing them with his ‘souped’ up cars running wide open. Circling a track was ‘Sunday driving’ for Junior compared to being chased down and he won 13 NASCAR races including Daytona, Darlington, and Charlotte. When Prohibition was repealed in 1933, the moonshine market


floundered with the construction of large commercial distilleries. In the 1970’s, with the creation of the Bureau of Alcohol, Tobacco, and Firearms, moonshine taxes reached an all-time high and the distillers went deeper underground. Fast forward now to 2009 when South Carolina passed a law that made micro-distilleries legal. This saw the blossoming of a host of craft beer distilleries but soon moonshine distillers followed suit. A handful of distillers are now brewing their own form of moonshine in South Carolina combining traditional methods with modern-day flavors. The first distillery to make moonshine legally in South Carolina was Dark Corner which opened in Greenville in 2011. Joe Fenton, owner of Dark Corner, tells that he grew up in the ‘Dark Corner’ of SC where he learned the stories and ways of the people who made Moonshine. “I eventually acquired a taste for the illicit spirit as well as a bevy of stories I would share with my friends and colleagues around a campfire and over meals. Finally, I used what I learned working as an engineer and combined it with my roots to create a place that brings people closer together to discover and celebrate spirited drinking traditions,” said Joe. He describes their moonshine as “remarkably smooth, yet warming, with buttery popcorn notes and a sweet, earthy finish.” Out on Wadmalaw Island next to Charleston, the Firefly Distillery brews their own line of moonshine and besides White Lightening, they have many flavors based on regional fruits like peaches, strawberries, and apples. According to Jay MacMurphy, Head Distiller and General Manager of Firefly, “The distilling process is pretty much the same as it used to be. It is ancient alchemy.” Jay described moonshine itself as a novelty drink that is their second biggest seller in their on-site tasting room. Their most popular flavors are apple pie and caramel followed by White Lightening which is straight corn whiskey. “Moonshine lends itself to cocktails – it holds up well and doesn’t break up with juices and sugars,” described Jay. Not for the faint of heart, these Firefly brews pack a punch of 100 proof and are sold in mason jars to keep with tradition. As for the taste? Jay describes it as “creamed corn with a burn. If you put some in your hands and rub them together it smells like popcorn.” Palmetto Moonshine in Charleston also opened in 2011 using a century old recipe for their moonshine which is also served

out of mason jars. Copperhead Mountain Distillery, in Travelers Rest, added their 50-gallon still to South Carolina’s moonshine mix in 2013. You can tour the facility and taste the original white Mountain Moonshine and the Snakebite Corn Whiskey Moonshine, as well as new flavors including blueberry, banana and chocolate. Another one is Dark Water Distillery, which opened on Broad Street in Camden in April 2014 with 100-proof, 100-percent corn moonshine. Dave Peck, owner of A Lowcountry Backyard Restaurant on Palmetto Bay Road, has an entire menu dedicated to Moonshine with 8 different drinks. “We feature it because it is unique and it fits in with our theme,” said Dave. “It’s a part of our history and

A Taste of

Throughout the month of February, the rich cultural heritage and history of the Gullah people is showcased during the 23rd Annual Hilton Head Island Gullah Celebration. The direct descendants of those once enslaved in the Lowcountry, who later lived in the nation’s first self-governing Freedmen’s town of Mitchelville, this unique African American culture thrived on the sea islands along the coast from Jacksonville, North Carolina to Jacksonville, Florida for over 100 years. Their relative isolation allowed the Gullah people to retain their distinct language, arts, crafts, spirituality and food ways. Long before the current popularity of the farm-to-table movement, traditional Gullah dishes such as rice and beans, oyster stew, shrimp and grits, okra gumbo, Hoppin’ John and Lowcountry boil required locally sourced ingredients and seasonal vegetables. Although many of these meals are now considered synonymous with the South and appear on the menus of fine dining establishments, the Gullah Celebration offers several opportunities to return to the roots of these recipes. Two such events showcasing classic Lowcountry cuisine are the Ol’ Fashioned Gullah Breakfast at the Historic Cherry Hill School on February 2 followed by A Taste of Gullah at the Arts Center of Coastal Carolina on February 9. “We cooked whatever we grew or caught,” explains Louise Miller Cohen, a local historian, gospel singer, storyteller and founder of The Gullah Museum of Hilton Head whose God-given mission is the preservation of Gullah culture. “I like food to be authentic.” Cohen recalls visiting Sapelo Island 20 or so years ago for a Gullah festival and watching in amazement as people waited patiently in a long line for a meal of shrimp and grits or fish and grits. “I know the food is good and people really wanted to taste it,” she realized. “Sometimes you just take these things for granted. We are celebrating a culture and we needed to think about that. It was a need. You can’t do it without the food.” After suggesting an authentic Gullah breakfast as a part of the Gullah Celebration, Cohen was nominated to oversee the event.

“And that’s how the Gullah Breakfast came about. That’s what happens when you open your mouth,” she says with a laugh. Years later, Cohen still personally stews the oysters and the shrimp for the Ol’ Fashioned Gullah Breakfast which is served with hot, buttery grits, homemade Lowcountry gravy and biscuits which runs around $12 per plate. “And I’ll tell you what, I’ve never had anyone tell me they were disappointed,” she proclaims proudly. On February 9, the celebration moves to the Arts Center of Coastal Carolina for an afternoon of food, fun and family entertainment featuring authentic Gullah cuisine such as okra gumbo, conch stew, fried shrimp and char-grilled chicken and ribs with local artists, dancers, musicians and storytellers center stage from 12-3 p.m. Admission to A Taste of Gullah is free, food and drinks are sold separately. “The food is very, very important,” concludes Cohen. “You need food to survive. When you talk about preserving the culture, I like to fix those dishes we grew up eating. I’m really not done with it yet because there are some dishes we used to make that I know how to make the old-time way. How The Lowcountry Oyster Trail is bringing hungry travelers to our shores and tables. BY BARRY KAUFMAN

Experiential travel is one of the hottest trends in travel and tourism right now, giving travelers a chance to do more than simply see a place from behind a hotel window. It’s a style of tourism that puts the emphasis on immersion, on experiencing a place like a local. An American Express poll found that more than a third of travelers were looking for this level of immersion and depth of experience in their travels. So why are we talking about experiential tourism in a magazine devoted to food and the Lowcountry’s world-class culinary scene? Because one of the biggest experiential travel draws happens to be one of the most popular items on our area’s menus – those famous South Carolina Lowcountry oysters. “Young travelers are no longer interested in being hauled out to a sight and looking at something… They want to get in the water up to their shorts and see oysters being hauled out and taste them while they’re standing in the May River,” said Larry Hughes. “They want to know what makes a certain area tick and how they can delve a little deeper in the traditions. 42

Recognizing the vast untapped potential oysters represent to the Lowcountry’s overall tourism picture, Hughes founded the Lowcountry Oyster Trail in 2017. This organization dedicates itself to promoting the many unique experiences the Lowcountry offers to those looking to immerse themselves in the cultural traditions of oysters, whether its dining on them fresh from the water or learning about their unique ecosystem. Providing those experiences is a network of partner restaurants, lodgings, businesses and tour operators whose livelihood revolves around our waters. “It’s sort of ecotourism meets (culinary tourism). We’re just trying to hop on one of the hottest foodie trends in the country,” said Hughes. “We talk about this thing called “merrior,” like how wine has a terroir which is the characteristics of the land where the grape is raised. The reason we say our oysters are the best in the country is because of the special salinity we have here.” That much is inherently obvious to anyone who’s dined on our area’s oysters, and that delicious experience is at


the core of what the Lowcountry Oyster trail stands for. Suggested itineraries for travelers on the trail found on the website range from a few hours to two days, with focuses on gourmet experiences, adventures, cultural immersion and family-friendly trips. On and off the water, the sheer volume of available activities highlights why this area is perfect for something like the Lowcountry Oyster Trail. “Anybody that has a product or service that they’re looking to get in front of visitors and Lowcountry residents, we think it belongs on the trail,” said Hughes. He sites potential partners that run the gamut from oyster farmers and watermen to educational sites, outdoor adventures and, of course, restaurants. “All of those are targets of opportunity where we feel like we can make a difference for them and capture folks coming down 95 to visit for three hours or a couple of days.” The genesis of the idea came after Hughes, who had been working with several economic development councils locally, kept hearing about the important role Mariculture and our history could play in our area’s development, but kept seeing little done about it. When a friend sent him an article about Virginia’s oyster trail and he saw the $35 million it brought in a year for the state of Virginia, a lightbulb went off. “We have 4,000 years of history going back to paleolithic Indians and oysters ar so embedded in our culture through oyster roasts, shucking oysters, etc.,” said Hughes. “I just thought, ‘Why can’t we do that here?’” He launched the trail with the hope not only of opening up new avenues for tourism, but also as a platform for addressing the environmental concerns that go hand-in-hand with our oysters. “Our tagline for the trail goes, ‘Eat an oyster. Help an oyster.’ It’s all about enjoying the seafood and beauty, but understanding there’s a stewardship there,” said Hughes. “Whether it’s saying no to plastic straws or helping ban plastic bags, it’s being more environmentally sensitive and being a good steward.” To accomplish this, the Lowcountry Oyster Trail set up a philanthropic arm, the SC Lowcountry Oyster Trail Fund, through the Community Foundation of the Lowcountry. Dedicated to researching and preserving our area’s waterways, the fund helps channel money towards organizations that are keeping our oysters safe and healthy. “We don’t know what we don’t know about our nearshore and inshore waters,” said Hughes. “Everything from pharmaceuticals in the water to micropolastics can have an impact on these ecosystems and we need to study that... The dream is that someday we have a marine research facility that’s international in research and stature doing research here in the Lowcountry. And it becomes an economic driver all its own.” It’s one part tourism, one part conservation and an extralarge helping of the mouth-watering oysters that made the Lowcountry famous. At the intersection of these three missions, the Lowcountry Oyster Trail is bringing an entirely new dynamic to the area’s appeal to locals and visitors alike.

It’s not just about the

Wellness and longevity are a puzzle that the modern medical community and the modern wellness industry are working to piece together. And quite frankly it’s pretty confusing. Where we are seeing a trend of ‘diagnose and medicate’ from one side of that house, the other side of that house is trending toward ‘do more, live longer’. Neither of these tell the whole tale, which leaves us wondering exactly what impacts our ability to not just live a longer life, but a life where are days are full of movement and breath and joy.

BOTTOM LINE: IT’S NOT JUST ABOUT THE FOOD. Food plays a huge role in our hormonal balance which does impact how our body feels, our energy levels, and ability to gain and maintain lean mass. But there are other factors have a role in that as well, and building wellness habits in these areas will also have a significant and long-lasting impact. Hydration I know, I know, you’ve heard ‘drink more water’ for years. But why? What role does hydration play in overall wellness? Every cell in your body needs water to function. Every single one. From skin cells to blood cells, a hydrated cell performs its job better than a thirsty one. Sorry, hydration won’t prevent wrinkles, but it will improve the elasticity of your skin. Additionally, a hydrated body can absorb nutrients, contract muscles, and remove waste with greater effectiveness and efficiency. Drinking water is the best way to achieve the hydration level you need to feel great. But do you know what else has water in it? That’s right, fruits and veggies. Part of your hydration goal can be met by consuming foods that also have a high water content. Give yourself a goal of consuming water before every meal and snack, before and after every workout, and before every cocktail and see what improvements you notice. Sleep As a nutrition coach, I’m hearing from more and more clients that sleep is either inconsistent or interrupted. The average adult needs 7-8 hours of sleep to function optimally, so why we are getting less and less sleep? Poor sleep habits are linked to higher rates of depression, metabolic conditions, and poor memory and concentration. Even though scientists today have trouble answering the basic question of why we sleep, it is generally accepted that this is a time of restoration in the body. It is a time for repair and rejuvenation. Muscle growth, tissue repair, growth hormone 52

secretion, and protein synthesis all happen during sleep. So many teenagers and adults zone out on our smart devices as a way to relax in the evenings, but this habit is actually negatively impacting your ability to sleep. The blue light emitted from these devices suppresses melatonin, which is the hormone that tells your body it’s time for rest. Put down the electronics before bed. Opt instead for reading an actual book, writing in a journal, playing cards, or a short yoga sequence that focuses on deep breathing. This will promote the sleep signals in your body and allow you to not only fall asleep but stay asleep as well. Social Connections As humans we are tribal creatures. We were created to thrive when we are connected to others in meaningful ways. As young people we have classmates, teammates, youth groups, and many other activities that promote connectedness to those around us. But as we age, those opportunities decrease, and we have to be intentional about getting connected to other people. Stanford University has done numerous studies about the impact social connectedness has on your overall wellbeing and the findings have been consistent and overwhelming. Isolation can increase anxiety, depression, weight gain, sleeplessness, and can negatively impact your immune system. While it’s easy to scroll through your social media feed to catch up with friends, this is not actual social connectedness. Physically being present with others is where there is magic. A hug, a smile, an exchange of pleasantries have real and positive impact on your physical and mental health. Find a group fitness class that you enjoy, find a walking club, find a bible study group that engages you and show up. It’s that simple. In a world where the term self care has veered dangerously off course, you now have a list of three things you can do to actually improve in your wellness and longevity. Neighborhood Outreach Connection Changing Lives in the Lowcountry BY RISA WILLIAMS MCMILLAN

With an innovative, grass-roots plan that penetrates individual neighborhoods, Neighborhood Outreach Connection (NOC) focuses on alleviating poverty and helping members of our community through education, health screening, and workforce developmental programs. The philosophy of Dr. Narendra Sharma, Founder and Chair of NOC is to “teach people how to fish” – that is to teach them to become independent and self-reliant. Through his vision, mission, and philosophy, NOC is penetrating neighborhoods across Beaufort County and Changing Lives in the Lowcountry. You can try to bury them in the sand, but these Beaufort County statistics are not going away: 20% of children under 18 live in poverty; 40% of our African-American and Hispanic students, which now account for 55% of our student population, experience an educational “achievement gap”; 80% of children under 4 live in low income neighborhoods with no access to Preschool learning. NOC is taking aim at these stats and wiping them away one individual at a time. When NOC started up in 2008, they had five children enrolled in their 1st Learning Center at the Oaks Apartments on Hilton Head. NOC, a 501(c)(3) non-profit, now has 6 centers and works with over 500 children. Their formula is unique as they make it easy access for those in need. “We establish ourselves in the neighborhood. We want to connect with them, listen to them, and get them involved. We knock on doors. We want to create opportunities for them – pathways,” explained Sharma. “When we opened our first center in The Oaks, we bought 3 apartments. We got them involved right away. Here we had the best brick layers, the best plumbers, the best electricians. We gave them the materials and they did the work. We respect them. Most organizations go into something like this with a materialistic approach. You cannot combat poverty that way. They need resources and support. They want dignity and respect. We give these families a solid foundation. A Victory for us is not only kids doing well in school, but a neighborhood no longer needing our services. We have cut down from 3 apartments at the Oaks to 2 now – that is a Victory!” Before ‘retiring’ to Hilton Head, Dr. Sharma worked as an economist at Word Bank for over 30 years, traveling the world and witnessing everything from affluence to poverty. He met people along the way like Mother Teresa who inspired him to have a sense of mission and core values and to make a difference in the lives of people. When he moved here, he discovered that his perception of the Island as a wealthy retiree community was 66

wrong. “Hilton Head does a good job of hiding its poverty,” he commented. He saw crime-ridden neighborhoods where the families had no sense of belonging, poor nutrition, no health care, substandard living conditions, and the children had poor grades and high drop-out rates. He wanted to help -- knew he could help -- and thus the birth of NOC. NOC has had its share of challenges along the way whether it is political or economic. Take Cordillo Apartments where they were forced out of the complex last year. Fortunately, NOC partners with other organizations like St. Luke’s who came up with a solution and opened up their fellowship hall to the displaced Cordillo children. “There are forces that want to push the working class out. Where will these people go? What are you going to do without a work force with 3 million visitors every year?” said Sharma. NOC concentrates on three areas: education targeting children, Health Screening, and Work-Force development for adults. Their centers are open in the afternoons for Pre-K through 8th graders and everything is free. NOC provides teachers, tutors, and all the latest technology tools. Their adult classes are in the evenings. They partner with other organizations to bring the education and resources that these communities need. “We are a catalyst to bring in other service providers,” explained Sharma. For example, the schools provide certified teachers that run the after school programs, while DHEC and Volunteers in Medicine provide mobile units for health screenings, and the town is supporting their work-force development programs. Dr. Sharma’s vision of NOC has been so successful that he has received numerous recognitions and awards and written about in articles in The New York Times. His long term goals include taking this blue-print and introducing it into other neighborhoods in South Carolina and nationally. “We have achieved our milestones in a cost effective manner with very low overhead,” he said. With their growth, they are now able to hire for new key positions to take them to the next level like Daniel McKeown as Director of Development and Marketing and Corbin Stripling, Field Director responsible for all the learning centers. How To Throw The Perfect

OYSTER ROAST

That crisp chill sneaking into the stillbalmy Lowcountry air, carried on breezes off the water and ushering the longsleeved shirts from your wardrobe, means that despite our sub-tropical climate, winter has arrived. Winter doesn’t tend to change much about the Lowcountry lifestyle – beach days may come fewer and farther between, but it’s not like we’re shoveling snow. OK, so we did actually have to do that last year, but this year’s looking a little less frigid. The point being, our year-round pleasant temperatures mean there are few things that separate the winter months from the summer months, save one. The all-important oyster roast, that hallmark of a Lowcountry winter and grand tradition going back thousands of years. But just as important as welcoming winter with an oyster roast is getting that oyster roast right. If you’re inviting out all of your friends and neighbors to dine on our region’s signature shellfish, you want to give them an experience they’ll never forget. There are few ways to go wrong with the classic oyster roast, but there are a few simple things that you can do right to make yours the toast of the season. Start with the condiments. Your barebones oyster roast might lay out a sleeve of saltines and some hot sauce, and there’s nothing wrong with that. But if you really want to please the crowd, offer up some homemade cocktail sauce (see recipe in sidebar), drawn butter, horseradish and lemon slices to go with your hot sauce and saltines. And as a note on hot sauces, there are more varieties out there than there are oysters in the May. For our money, Texas Pete offers the best balance of savory and spice to complement the briny sweetness of our local oysters.

It’s also a nice touch to offer up towels to your guests so nobody gets hurt on an errant oyster shell. Old wash cloths, dish towels, or a favorite, an old Golf towel with a hook to hang from your belt loop. Now it’s time to cook. Once again, we find there are countless ways to cook oysters and the subject of which way is better is a matter of opinion. Let’s start with the amateur oyster roaster, just looking to invite a few friends over without having to invest in any equipment. In a pinch, you can always roast them on the grill, spreading them out on a sheet pan over medium hot coals until the shells open ever so slightly. If you’re looking to put a little more into your oyster roast, and you’re one of those enlightened souls who owns a turkey fryer for Thanksgiving, you can use that to steam your oysters (Note: you will need a steamer basket for the oysters). This not only gives you another use for your fryer, it gives you an excellent amount of control over temperature and amount of steam. But if you really want to make this a true classic Lowcountry oyster roast, you’re going to need an open fire. You can DIY an oyster pit if you already have a pit for camp fires and can find a iron mesh patio table whose legs you don’t mind parting with (check Craigslist). Simply place the table top over the fire pit, stack your oysters on top, cover with wet towels or wet burlap bags and let that smoky flavor take your oyster roast to the next level. These are just general guidelines, but following them will help you enjoy that most beloved of Lowcountry traditions, the winter oyster roast. As long as the oyster winds up juicy, briny and not overcooked, you can’t go wrong. Now, go grab that oyster knife!

What Your Condiments Say About You There is no truly right way to enjoy an oyster during a Lowcountry oyster roast. But how you choose to take your oysters says a lot about your personality.

Cocktail Sauce:

You have a refined palate that enjoys discovering new flavors, but also bows to tradition. Equally at home at a pig-pickin’ and a yacht hop, you’re always ready to feast on something exciting.

Drawn Butter:

Maybe less adventurous than some, you nonetheless have a great appreciation for the way food brings people together. Be proud of who you are, but keep some napkins handy.

Horseradish and Hot Sauce:

Never one to back down from a challenge, you love to live on the edge and don’t mind if they see you sweat. You’re the reason the host picked up extra beer.

Straight Up, No Condiments:

You salty dog you. If you had your way, you’d be hip-deep in salt water pulling these bad boys right off the bed and eating them raw. Try not to look down on the guy next to you wedging his oysters in between saltines.
