PUBLISHER’S NOTE

This time of year I always find myself reflecting on the past 12 months, not only personally, but also collectively. The Island is substantially more peaceful this time of year, which allows more time for thinking deeply about what has transpired, both good and bad. It also allows time to plan for the upcoming year and make changes and adjustments that hopefully will make the coming year more prosperous and enjoyable. Looking back at 2017, it was quite a whirlwind. Coming off Hurricane Matthew there was a great deal of apprehension heading into the spring. Locals were furiously putting the Island and their businesses back together in hopes of getting back to normal and ready to welcome back our faithful vacationers. I mean let’s face it; without tourists, Hilton Head would struggle mightily. Hospitality and tourism is the Island’s lifeblood and there were no guarantees that it would be business as usual. Not only were we facing uncertainty locally, but nationally things seemed to be growing uncomfortably divided, racial tensions were simmering, and terrorist threats and attacks continued to put us on high alert. Throw in the natural tragedies in Houston, Florida and the Caribbean and it didn’t seem possible to turn on the news without more negativity. Looking ahead, the future seems bright. Locally, the Island hosted as many if not more visitors in 2017 than the prior year, which couldn’t have come at a better time. Restaurants were humming, shopping centers were hopping, and the beaches were full of activity. Also, we fortunately were spared from any major damage from Hurricane Irma. Going into 2018, we can concentrate on sprucing, sharpening and tweaking instead of literally rebuilding. As far as the national picture, I definitely don’t use this magazine as a public forum for social and political views, but hopefully we can all agree this country and its citizens need to start using more common sense. Why is it we can reach out and help someone so easily when a disaster hits, but when things are good we can’t even get along? Why is it that the people calling for change spend more time complaining and less time doing more to be part of the solution? I could go on and on, but you get the picture. My hope for 2018 is to see more building up of this country and less tearing it down. I hope people think about positive things they can do to help rather than spend their energy on negativity. Think back to the days when you meandered bare-foot through the neighborhood with your dog dawdling by your side. The cicadas were singing and the air was fresh. When you rode in the family station wagon you faced backwards, no seatbelt required. Music was played on turn tables and juke boxes and a gallon of gas cost less than a dollar. You played hard all day and arrived home out of breath, dirty, and late for dinner. When you burst into that kitchen in the evening with an appetite that had been burgeoning all day, you were immediately arrested by the scent of home cooking and could anticipate the goodness that was to come. This is the sensation and culinary adventure that you will embark on at A Lowcountry Backyard where the sights, sounds, and tastes of your childhood will welcome you back with open arms. A Lowcountry Backyard was the concept of Dave Peck who envisioned reliving his past through this restaurant. Dave grew up in the woods in Sea Pines and on the banks of the May River. He spent his summers cane pole fishing in Shipyard with Gullah natives who taught him to catch mullet with baloney and cheese. He learned how to cook from local families and his memories take him to oyster roasts on the river and backyard 12

barbeques. It was a simple time when families came together over meals and everything was home-cooked. That is what A Lowcountry Backyard means to Dave and his wife Raina – a full sensory experience with local roots that take you back to the aromas and delicious tastes offered from the bounty of our waterways. “We offer a true taste of the lowcountry. You are not only going to get fresh food, but you are going to experience it like it was made 40 years ago. All our recipes go back generations,” said Dave. Word is obviously out about A Lowcountry Backyard because Dave was contacted by the Travel Channel to shoot a segment for season 7 of their “Food Paradise” series there. The television crew spent 14 hours shooting Dave preparing two dishes in the kitchen and interviewing guests in the restaurant. “It was lots of fun but lots of work. The 13 hours that I stood for will be compacted into about 10 minutes,” shared Dave. The segment should air sometime in January. The perfect place for a photo (or TV) shoot, A Lowcountry Backyard takes on its own rustic character the minute you walk into the courtyard. Tucked away discretely in The Village Exchange on Palmetto Bay Road, the focal point of the


restaurant IS the backyard feel that Dave has created with fenced in area replete with wood chips, ferns, fountains, porch swing, and Americana knickknacks -- all blanketed with a 23 foot umbrella flown in from Italy. Fiber optic lighting sparkles from above to elicit memories of starry-nighted backyard barbecues. Outdoor heaters in the winter and ice-powered fans in the summer make the outdoor seating viable and comfortable yearround. The indoor dining rooms also have an old time feel with walls adorned with old wooden signs sporting pithy maxims, hand-made May River oyster shell chandeliers, an old gas pump advertising 50 cents a gallon, a moonshine still, and a giant whisk that came from Paula Deen’s restaurant. With the perfect backdrop and ambiance as the lead, the food follows suit. Dave describes his menu as, “Lowcountry food like we had growing up. It is what my mom and dad cooked and what other Island families fed us. We use local ingredients when possible and all of our dressings, sauces, cornbread, biscuits, and the other 99% of our menu are homemade.” Menu favorites include Dave’s personal favorite -- Shrimp & Grits – which were named the best Shrimp and Grits in the entire state of South Carolina in 2017 by Trip Advisor. Another favorite is the Fried Green Tomatoes which can be ordered as an appetizer or BLT sandwich. The Potato Chip Meatloaf, basted in moonshine barbeque sauce, was a happy mistake that Dave stumbled upon one night when he found himself without bread crumbs. There are nightly specials that are lowcountry oriented and always feature a fresh catch of the day. Appetizers include the likes of Homemade Pimento Cheese and May River Blue Crab Dip served with flatbread and tortilla chips. There is an assortment of salads and they have a Sandwich Board with a variety of bread choices, served with Raina’s special pickles. Some sandwich choices include Crab Cake, Fresh Tomato, Backyard BBQ, as well as beef or shrimp burgers. The Lowcountry Favorites portion of the menu features down-home goodness including Dave’s father’s chicken recipe which he calls ‘The Bischick’ – marinated chicken, lightly breaded and fried, over a homemade biscuit topped with lowcountry gravy. The Seafood Purloo will get your taste buds aflutter as it is prepared with sautéed shrimp and smoked sausage over rice topped with grilled or blackened fresh fish of the day, ranch sour cream and sweet chili sauce. Delicious side dishes include Dave’s mom’s macaroni salad, collard greens, and Apple n’ Raisin Coleslaw among others. Their homemade desserts feature

Banana Puddin’ or Key Lime Pie and there are often specials like Fresh Apple Cake or Chocolate Torte. There are separate menus for the kids as well as a specialty Saturday and Sunday Brunch menu. Their Kid’s menu has favorites like Grilled Cheese, Burgers and Dogs, but also veers a bit off from the norm as the kids can feast on Meatloaf, Peel and Eat Shrimp, and can have a healthy side like fruit salad. The Brunch menu will set your day in the right direction with Biscuits and Gravy and various Benedicts like the Backyard Benedict featuring biscuits topped with sausage, hash brown casserole, poached eggs and gravy. When it comes to the bar menu, think Moonshine. “The lowcountry was always a source for moonshine because it is made with corn,” explained Dave. Their moonshine drink menu is “unique and fun and fits the area.” There are moonshine flights, as well as moonshine punch, Double Dew (made with Mountain Dew), and a moonshine Peach Cosmo. Dave’s favorite is Apple Pie Moonshine that “tastes like Christmas in a cup.” They also offer a full selection of beers with a focus on South Carolina and an array of wines and cocktails. Dave describes the staff at A Lowcountry Backyard as what sets them apart. “We are very selective with who we hire. Our servers are genuinely nice,” commented Dave. The chef, David White, has been in the trade for 20 years and many of the kitchen crew have been there since day one. “They are our family,” he said. A Lowcountry Backyard also has a retail store to share some of their favorite memorabilia with their guests. “So many people asked me where they could get certain things from our walls that I decided to open a store to make everything available,” said Dave. The store is filled with local arts and crafts, metal art, wind chimes, food items, and tee shirts. A Lowcountry Backyard is open Monday through Saturday for lunch and dinner and they serve brunch on Saturdays and Sundays starting at 9 a.m. They are available to host private parties and rehearsal dinners and do catering in the off-season. It’s taken almost 25 years, but it seems as though, at long last, the restaurant industry has caught up with CQ’s. Think about three of the big restaurant trends right now – the ageless character of reclaimed materials, the devotion to local sourcing and the abiding respect for putting premium ingredients firstthese are all standards that have defined CQ’s since it first opened its doors in 1973. Sorry hipsters, CQ’s had perfected timelessness before it was cool. “It’s very in right now to talk about restaurant character,” said CQ’s Manager Linh Craig. “The building and it’s interior are authentic and aged. We’re very unique on the island.” He’ll show you around the restaurant, sharing the unique history of everything you pass. How the softly bending heart pine floors came from a church in Savannah. How the moose head over the bar (so the legend goes) came from an animal struck by a car driven by the owner’s son. (The legend also states that the remainder of the moose is currently on display at Jump & Phil’s. If it’s true, somebody hit a two-headed moose). “The bar itself came from a church. Rather, the materials for the bar. The church did not actually have a bar and the staircase running up to a loft came from a house of ill repute,” said Craig with a laugh. Everything in here has a story, even the plates along one wall signed by golfing legends and regulars alike. “I really don’t know who started it.”said Craig. “Somebody had the brainy idea to have our tournament golfer guests autograph the chargers and it became a tradition.” There’s an immense value placed on tradition at CQ’s. Very little physically has changed here since Sig Winehandle converted Ralph Ballantine’s art studio into a restaurant, and that is very much the intent. “We’re carrying on a tradition,” said Craig. “We get comments sometimes of people saying our place is dated. It’s timeless, not dated. Because we are older, we cherish and respect our age.

That is the point.” Anyone calling CQ’s dated is missing this. There’s a nostalgic air to the place of a quieter time on Hilton Head Island, and that’s a big part of the restaurant’s appeal. “A lot of people that dined with us in the ’70s and ’80s brought their kids to CQ’s. Those kids are now bringing their kids,”said Craig. “You come to Hilton Head, you come to CQ’s. It’s just one of your stops. That tradition is one we want to continue.” But a restaurant can’t live on nostalgia alone, particularly among locals. Which is where CQ’s delicious dishes of carefully sourced products comes into play. The menu rotates with the season, but in keeping with the dedication to tradition, some items remain year-round, like the famed “Butcher Block” Prime Pork Chop and the Seared Ahi Tuna. They’re complemented with seasonal additions such as the Maple Leaf Farm Duck Breast and confit of leg. “Our favorites were developed by really wonderful chefs over the years,” said Executive Chef Broderick “Brodie” Weaver. Weaver has been with the restaurant off and on since 2010, first serving as Chef de Cuisine. As such, he has great respect for the famed menu, as well as his opportunity to put his own unique stamp on the culinary legacy it represents. “Creatively we are an open book. If we want to try something different, we do. If a dish isn’t working, we change it” he said. “I admit every idea is not a home run and when it is, it’s awesome. There’s always room to grow”. And just in case today’s hipsters think they invented dock to table, know that fishermen have been docking in Harbour Town for decades to have their fresh catch served at CQ’s. It’s another tradition Craig and Weaver are happily carrying on. “I love to fish,” said Craig. Craig has a commercial fishing license, and both he and Weaver have recently received their dive certificates. What this means for the restaurant, Craig explains with a gleam in his eye, “is fresh

flounder, cobia and sheepshead, and perhaps just a little more important, a chance to get out fishing three to four days a week.” “One of the things we’ll probably do is put together some dive videos and put them on our bar screens. You can see, and know that’s what you’re eating,” said Craig. “Whether I’m fishing or spearing we’re having fresh local fish and we’ll have the pictures to prove it.” Craig’s fresh catch adds so much to the appeal of the restaurant that pursued dock-to-table before that buzzword existed, pioneered the

reclaimed aesthetic and always respects the customer’s experience first and foremost. “It’s all about each dining experience. You’re not having food, you’re having dinner. Meaningful conversation and wonderful cuisine is a recipe for a memorable evening.”said Craig. It’s a tradition that’s well worth carrying on.

Thinking back a year ago, we were just getting back to normal after Hurricane Matthew shook up our island home. Along with changing the landscape of the island, Matthew also blew in change for Ela’s Blu Water Grille by introducing Chef Doug Vernon to us. Chef Doug has been an islander since 2016 and made his debut here on the island by opening Ela’s Blu Water Grille back up after Hurricane Matthew blew through. He came to the island to care for his wife, Kelly, after her diagnosis of breast cancer. You’ll be pleased to know that they celebrated her One Year Cancer Free in September! Chef Doug has been in the kitchen since he was 13 years old. Growing up in the small town of Hickory, NC he needed a job and started washing dishes in a local steakhouse. Fast forward to his early 30’s where he had stayed with this group through 8 concepts and iterations of their restaurant group. He remembers watching the owners and executive chefs create a vision for what would be next and then make that vision a reality. His connection with this group took him everywhere from Vail, CO to San Francisco, CA. He ended up attending culinary school at Le Cordon Bleu in San Francisco. It brought a smile to his face to recount that he had spent 2 decades in the kitchen before getting a formal education. While working with a high profile international chef he was encouraged to pursue this step to broaden his knowledge of not just the back of house kitchen side, but also to fully understand the business side as well. This included learning kitchen legal, marketing, inventory management, and staffing challenges. What he enjoys most about being in the kitchen is that no two days are alike. One thing he especially enjoys about Ela’s is that it reminds him of his early days in San Francisco, where the Chef would walk down to Fisherman’s Wharf to find what fish was brought in that morning. It solidified a commitment to using the freshest catch he can. He points to the dock downstairs at Shelter Cove Marina and smiles that he can head right there to see what the fresh catch will be today. While the fan favorite on the menu is the scallops, his personal favorite item from the Ela’s menu is the grouper. He loves that the grouper on your plate was swimming in the ocean last night. And while he loves to prepare these seafood dishes for Ela’s patrons, he confesses that at heart he’s still a steak guy. When he’s not here at Ela’s he loves to spend time grilling simple cuts like a ribeye paired with a baked potato, or a pan seared filet with some garlic mashed potatoes. In closing, he reflected back on what he’d tell that 13 year old kid washing dishes, daydreaming of an Executive Chef role in the future. “If this is really what you want, be willing to work the long and hard hours. Appropriately named, Amigos has been making friends since the day they opened in Circle Center in early 1995. From the authentic Mexican food to the fresh salsa bar and the ice cold cervezas, Amigos has amassed a vastly loyal following of friends and fans from near and far. Owner Jimmy Prignano who recently returned to his rightful place behind the counter is back and Amigo’s is better than ever. Jimmy has teamed with local Rich Connolly, who has over 40 years combined experience as franchisee of Burger King and Panera Bread, to form the perfect pair to give customers the food and service they expect. Prignano was a restaurateur in Killington, VT before he decided to trade up snowshoes and Jimmy’s Bayside Dining for swim trunks and Amigos Cafe’y Cantina back in 1995. He saw Amigos as filling a niche on the Island as the first authentic Mexican taquería. When asked what the keys to his success are, Jimmy did not hesitate to give the credit to the “girls in the kitchen” who have been slicing and dicing for him for 20 years. “That’s why we keep it so consistent,” he commented. “Everything is made fresh daily and my wife and I are here all the time. We have no absentee ownership and the food quality is the

best.” Aside from a loyal local population, Amigos has a stalwart reputation with visitors too. “Tourists drive on to the Island and stop here before checking into their villa. Then they will come back and eat here 4 times in their weeklong stay.” Jimmy goes to great lengths to get the freshest and best ingredients for his dishes. The guacamole is made fresh daily and he only uses Californian Hass avocados when they are available. For Tonya’s famous Queso Dip, he has a special cheese shipped in from Wisconsin. Their chips are made only after an order is place, served piping hot with some of that homemade salsa on the side. The menu at Amigos is the same for lunch and dinner. “I would rather stick to a few things and do them well than do a lot badly.” They serve the traditional tacos, burritos, quesadillas and tortas with fillings that will please the meat, chicken, and seafood lovers as well as the vegetarians. A torta, for those unfamiliar, is a Mexican sandwich served on a big roll, like a Kaiser. “Our veggie burrito will turn people into vegetarians. It’s full of bell peppers, mushrooms, zucchini, onions, rice and black beans,” commented Jimmy. They have oyster and fish burritos and an assortment of salads. For the little Amigos, there is a choice of taco,

quesadilla, burrito or even a hot dog. The number one seller at Amigos is the barbecue chicken salad, which is enormous and served in a crisp flour tortilla. To find the bottom of this salad is a feat in itself, so you may split it with a friend and they will cut it right down the center for easy sharing. Enough to feed two or three people, the nachos are another popular choice and are loaded with beans, cheese, jalapeños , tomatoes, sour cream, guacamole, olives, green onions and optional additions of steak or chicken. Folks do not just flock to Amigos for the food. There is also the matter of Jimmy’s world famous margarita which is a thing of beauty. Jimmy mixes up his own concoction and, “People love them. I get so many compliments.” While the Gold Margarita is the biggest seller, he whips up many a Coconut Margarita and even an occasional cinnamon one. The bar at Amigos is fully stocked with all of your favorite Mexican beers which are kept on ice in a big tub and served super chilled, the way they should be. You can choose from any of your favorite flavors -- Corona, Dos Equis XX, Sol, Pacifico, Modelo, Tecate – and for a non-alcohol drink there are Jarritos, which are sugary, flavored sodas. If it seems like the Hilton Head Island Wine and Food Festival has been around forever, it’s because in terms of island time it pretty much has. The story of the festival encompasses 33 years and counting, making it one of the longest-running events on the island (behind only the Heritage and the Kiwanis Chili Cook-Off). But, as you would assume from the island’s premiere celebration of the fine art of wine, it only gets better with age. You might be surprised to learn, however, that even an event as storied and as woven into our island’s social tapestry as the Hilton Head Island Wine and Food Festival still has a few surprises. “One year on the Saturday of the public tasting I went up to the admission gate and started walking the line of people waiting to buy a ticket. I was talking about the scholarship program we run with USCB and TCL. No one knew anything about it,” said festival volunteer and scholarship chair Dr. Bob Hohman. “It’s probably one of the least-known facts about the wine and food festival.” Yes, there is more to this festival than beautiful spring weather, mouth-watering cuisine and a dazzling array of wines from all points of the globe. There’s a long-standing tradition of giving back, and helping the next generation of culinary and hospitality giants get their start. Since 2011, the festival has given $66,000 in scholarship to University of South Carolina Beaufort and Technical College of the Lowcountry. There are a few criteria a student must meet, namely that they must be a full-time student studying hospitality at USCB or pursuing a culinary certificate at TCL, and have a 3.0 GPA overall and in their major itself. Otherwise, as Hohman put it, “We don’t really have tight strings on it. We let the institutions choose the recipients because they know the students better.” One such recipient was Haley Miller, who received her scholarship in the fall of 2015 while majoring in hospitality management at USCB and interning with the festival. “For a hospitality management major in that area it was such a huge deal, because it helped me afford school in a place that’s such a huge hub for high-end hospitality,” said Miller. “It was a great work experience down there, and it helped me study in this really special hospitality environment.” The John and Val Curry Educational Scholarship not only helps the next generation of hospitality students get their start, it honors a couple who helped define hospitality on Hilton Head. This year, USCB alone gets nine applicants for the scholarship, from which they must choose four recipients. “From an educator standpoint it’s a win because it provides students the opportunity to focus their studies on something tangible,” said John Salazar, professor of hospitality management 24

at USCB. “Second… they have something great on their resume and the chance to advance in their field here on Hilton Head.” While early events from this year’s festival were delayed due to Hurricane Irma and were being rescheduled at press time, the bulk of the festivities March 5-11 should be safe from this year’s wildly unpredictable hurricane season. “This festival gets better and better every year, and we’re really excited about what we’re bringing to the table this year,” said Executive Director Jeff Gerber. First up will be the Knowledge Sessions, in which local sommeliers take guests on a journey behind the labels of some of their favorite wines (as well as a few new discoveries). More than just a tasting, this is a chance to learn about the regions each wine originates from, hear stories of journeys the sommeliers have made to that region and gain an appreciation for the vintners who create it. That will be followed by the three main events along three blissful days of sampling the best in food and wine. The famed Sip and Stroll will be held March 8 in Harbour Town Yacht Basin, letting you soak in the scenery while you dine your way along the waterfront. Along with fantastic wine, you’ll get a chance to enjoy special event-exclusive discounts at the many shops in Harbour Town. This will be followed March 9 by the festival’s most exclusive event: The Grand Tasting. Held at the Harbour Town Clubhouse, the grand tasting features some truly special wines selected via double blind judging by a panel of experts and served in a setting of magnificent elegance. But the main event will be March 10, when the public tasting hits the Harbour Town Yacht Basin. As you stroll the waterfront, you’ll have a chance to try more than 250 wines from all over the world, watch culinary craftsmen work their magic in the Sysco Outdoor Gourmet Challenge and, of course, cheer on your favorite servers during the annual waiter’s race. After that, head to the silent auction and bid on award-winning wines, knowing that your winning bid will help a local hospitality student pursue their dreams. Think 1975, when CBS first started broadcasting the Heritage. These are the moments where a homegrown festival becomes iconic. And the Hilton Head Island Seafood Festival, Feb. 19-25, 2018, may have just found its moment. This year, for the first time ever, the festival will host a special Thursday night VIP dinner organized by the James Beard foundation and The AdFish Group, headlined by Chef Maneet Chauhan. “To have the James Beard Foundation come in and bring chefs with them on Hilton Head is really a feather for the cap of Hilton Head,” said Chef Clayton Rollison, famed locally as the owner of Lucky Rooster. Along with being a fierce advocate for the local restaurant scene, Rollison has been working with festival organizers to coordinate the James Beard dinner. “Not only is it showing Hilton Head beyond the beach, golf and tennis, it’s showing us as a culinary destination on the 32

rise. It legitimizes that we’re doing the right thing on Hilton Head. We’re evolving and advancing.” The celebrity chefs coming to Hilton Head for the Thursday dinner were still being finalized as Taste of Hilton Head went to press, but what has been lined up so far reflects some serious talent. First up, famed for Chicago’s The Purple Pig, is Jimmy Bannos, Jr. who was named a “Rising Star” by the James Beard Foundation in 2014. “He cooks some really cool Mediterranean food,” said Rollison. “You have to be under 30 to win the Rising Star.” Another celebrity chef confirmed for the dinner will be Martin Rios of Santa Fe’s Restaurant Martin. “He cooks refined European-influenced food, but he definitely has these strong local influences from his childhood and cooking in his region,” said Rollison. “What he cooks is really progressive and interesting.” This infusion of world-class chefs cooking alongside some of the island’s top talent represents a huge next step for the festival, which has seen steady growth since its first iteration in 2008. But that willingness to grow in exciting new ways has been part of the key to its appeal, as well as a reflection of the


creativity of our local chefs. “We’re always trying to find ways to make the event just push the envelope and do something that’s never been done before,” said organizer Andrew Carmines. “When the opportunity came up to partner with the James Beard foundation, we felt a sit-down with some of the best chefs in the world was something we couldn’t pass up.” The James Beard dinner isn’t the only way in which the festival is growing with the 2018 edition. It’s also growing in a very real, very physical sense, with a move to Honey Horn. “We knew last year that we’d outgrown Shelter Cove,” said Carmines. Indeed, the original plan was to host last year’s event at Honey Horn. Unfortunately, the site was still being used to hold debris from Hurricane Matthew, forcing the festival to squeeze into Shelter Cove Community Park. The lines were a little longer, but according to Carmines, “Fortunately, people were very patient.” There won’t be any long lines at Honey Horn, where the larger footprint will give the weekend room to breathe, while still feeling extraordinarily intimate with food vendors setting up beneath the twisting boughs of live oaks. During the Saturday festival, Deas-Guyz will be keeping the crowd tapping their toes while they sample some of our area’s finest seafood from the likes of Benny Hudson’s, Black Marlin, The Crazy Crab, Hudson’s Seafood House on the

Docks, Mellie Mel’s, The Old Oyster Factory, Poseidon Coastal Cuisine & Rooftop Bar, Skull Creek Boathouse and more. Of course, the Saturday festival is just the exclamation point on a week of seafaring festivities. Christopher and Matthew Shoemaker of May River Excursions will be guiding two-hour tours Monday-Thursday that let you experience first-hand how our local watermen harvest seafood and get it fresh to the table. If you can’t make the James Beard dinner on Thursday, you can head to Waddell Mariculture Center for Pitmaster 101 and learn how true barbecue is created in preparation for Friday’s Pig Pickin’ and Oyster Roast (“That’s one of my favorite events. It’s awesome,” said Carmines). That event will serve as an intimate, tented prelude to the big event Saturday. It all comes to a head Sunday with a Seafood and Champagne Sunday Brunch at Hudson’s On the Docks featuring bottomless bloody marys and raw bar. Yes you read right. Bottomless bloody marys. “Fortunately our liquor sponsors are very gracious,” said Carmines with a laugh when asked about the bravery it takes to serve bottomless bloody marys on Hilton Head Island. NO TIME TO EXERCISE?

I’ve been training and coaching small groups and individuals for years now, and a common denominator in why our health and fitness goals are elusive are grounded in one falsehood: that working out takes up too much time. Leave work, drive to the gym, change clothes, figure out what machines are available, hop from one to another, cool down, stretch, shower, etc. It could take hours to get it right! Right? THANKFULLY, THAT’S WRONG. Look up Dr. Izumi Tabata and Martin Gibala, both exercise science experts who have spent decades testing and researching the impact of movement and intensity on the human body. Both agree that long duration workouts are simply not necessary for achieving a healthy body weight, lean muscle mass, regulated blood sugars, a strong heart, and healthy lungs. It comes down to a simple and universal principle: the intensity of your exercise matters far more than the duration. For example, doing 5 rounds of :30 sprint intervals in a rower or stationary bike will have a greater impact on your endurance than doing 30 minutes at a steady pace. That’s right, higher intensity leads to greater results. If this is a new concept for you, consider trying a few of these intervals to get started. The only equipment you need is a clock or stopwatch, and your self!

TRADITIONAL TABATA WORKOUT In a Tabata workout, each exercise only lasts for 4 total minutes, but it will be the most intense 4 minutes of your day!

It goes like this: 8 rounds per movement, maximum effort for 20 seconds followed by 10 seconds of rest. Incorporating 3 - 4 movements into this routine can give you a whole body workout in less than 20 minutes. Consider starting with air squats, followed by pushups, then finish with sit-ups or leg raises. This type of interval workout is so popular you can even find music tracks that have voiceovers or beep tones in 20/10 second intervals to keep you on track. Simply search ‘tabata’ on YouTube or Spotify.

15 MINUTE HIIT (High Intensity Interval Training) In this routine, you will complete 5 rounds of 3 exercises where you alternate 30 seconds of max effort with 30 seconds of rest. You can incorporate any number of exercises and you’ll find that keeping it simple is the best way to start. 5 rounds :30 max effort, :30 rest of burpees, walking lunges, and plank jacks will elevate your heart rate and fatigue every part of your body. Last but not least, the foundation to your wellness is your nutrition. Follow your high intensity workout with some lean protein and fast acting carbohydrates to fuel your body to build muscle and shed fat. Giving a Helping Hand to Neighbors in Need

[ The year was 1967 when Charlotte Heinrichs, a public health nurse from New York City, retired to Hilton Head with her husband. One problem – Charlotte was not fond of retirement. While that may not have been good news for her husband, it was great news for the Island for she founded Deep Well, an organization that has been helping neighbors in need for decades. “The Island back then was full of poverty and many of the natives lived in shacks,” explained Betsy Doughtie, executive director of Deep Well who was a friend and neighbor of Charlotte’s. As the story goes, a large population of the Island back then had intestinal parasites. They were treated but kept becoming re-infected. Charlotte discovered that it was because their wells were bad because they were too shallow so she procured funding for ‘deep wells’. Recognizing a further need to help these people, she then went on to get them septic systems. It’s not hard to see why they then started turning to Charlotte for other needs. “That is how we evolved into a social service agency,” described Betsy. Deep Well’s mission is simple but comprehensive: “Help neighbors in need by providing basic assistance in emergency situations…” According to Betsy, they primarily help the working poor, disabled, and ill. “Most of the people we work with make little better 40

than minimum wage,” she said. “These people are so important to the Island – hotel workers, landscapers, dishwashers. They run into problems because the rent is high and their pay is low.” The “Big Three” issues that Deep Well assists most often are problems with rent, electricity, and food. They also provide help with water bills, propane, medicine, and furniture. They have a furniture warehouse on sight and a truck that picks up furniture donations and does deliveries. “Everything we do we validate,” explained Betsy. That means that they screen every person who applies for assistance. For example, if someone cannot pay their rent because their hours were cut, Deep Well calls the employer. If another person cannot afford their medication because they just had a pricey car repair bill, Deep well wants to see the bill. Deep Well has also expanded their reach into Children’s Programs to provide basic items for kids in need. “We started in the school systems where teachers or guidance counselors would call us when someone needed clothes, school supplies, or a jacket. We have now evolved into a Back to School program where we provide uniforms and school supplies,” said Betsy. This year alone, they provisioned uniforms for 780 children and supplies for 650. Infants are not left behind as Deep Well also helps with

diapers, formula, and paying the Day Care bill when there is a problem. “We always want those children taken care of and would rather see them go to Day Care than be watched by a sibling,” she added. Christmas is by far the busiest time of year for Deep Well as they are trying to see that everyone has a joyous holiday. They work in conjunction with churches and VanLandingham Rotary to provide Christmas meals for hundreds upon hundreds of families that include a full turkey dinner with all the fixings. Last year Deep Well alone fed 250 families. Every December, Deep Well turns their back room into a Santa Shop where (after going through an application process) parents can come and pick out presents for their children -- new toys, games, stuffed animals, books, jackets, clothing. It is a winter wonderland and a room full of hope and happiness as parents know the presents under their Christmas trees will bring so much joy to their little ones. “This is the time of year that donations come pouring in – groups, businesses, individuals,” said Betsy. “Our community is extremely generous in so many ways. They volunteer, donate toys and food, and give financially through the Island Packet campaign.” Deep well has one real estate agency that gives 100 bikes every year and another company that splits employees into two teams and each gets


two hours and $2,500 to buy toys for the Santa Shop. While Betsy who has been with the Deep Well for 21 years used to be in charge of everything from furniture pick-up to decision making, they now have a modest staff to tend to their expanding responsibilities. Rita Jones is in charge of Livable Housing where she works with volunteers to fix up homes. This can be anything from repairing a broken window for an elderly lady to fixing up a whole house. Sherry Pritchard, Operations Manager, does everything from bookkeeping to the validation of clients. Jean Veahy, described by Betsy as “the most exuberant person,” heads up the pantry efforts and organizes food donations and volunteers. Last year, Deep Well helped over 1,700 families in need which translated to over 5,500 people. While this number was extraordinary due to Hurricane Matthew, they worked tirelessly to respond to neighbor’s needs. In fact, they are still repairing roofs that were damaged over a year ago from the hurricane. There are thousands of stories about lives that have been touched by Deep Well. Here is one of them: Susan called Deep Well in early January for help with her rent payment. She was caught short when her partner was arrested for domestic abuse, which was confirmed on the Beaufort County website. Susan was working 2 jobs and had not expected to have to pay the full amount of the rent on her own. In addition to a 2 ½ year old, she had given birth to another child 2 months previously! Deep Well was able to assist her with her rent. Having a newborn baby plus a toddler would put stress on anyone but to compound it with working 2 jobs and dealing with abuse would be more than most people could take. Susan is obviously a very strong woman and thanks to Deep Well she is back on track to pay her own bills. Deep Well is always looking for help from the community in the form of donations – toys for the Santa Shop, food, furniture, and financial. All donations are tax deductible. ARTS CENTER OF COASTAL CAROLINA

It was many moons ago that some local thinkers and dreamers thought big thoughts and dreamed big dreams and brought their idea of an arts center on Hilton Head to fruition. The Arts Center of Coastal Carolina, originally known as the Self Family Arts Center, ushered in its first guests 22 years ago and has not looked backwards since. This large and vibrant Arts Center has put the Island on the map as a spot that attracts big name talent and has earned us the badge as a desirable destination for entertainment and educational programs for all ages. It was and still is quite a coup for the Island and community to have the means to build and support an arts venue that can seat close to 300 and draw national talent to the place we call home. The Arts Center is known as a Regional Equity Theatre – not to be confused with a community theatre like what we initially had in the Hilton Head Playhouse on Dunnagan’s Alley which showcased local talent. The difference is that they bring in equity actors from New York and elsewhere to perform. “What sets us apart from other coastal communities is that we bring in big names and culture that you would normally only get in a city,” said Andrea Gannon, VP of marketing for the center. “I have been told by a lot of people that the Arts 50

Center is the reason they moved here,” she added. While they may bring in a lot of the stage talent, everything else they do ‘in-house’. The Arts Center is loaded with talented people and production crews who take care of all facets of their shows including casting, directing, costumes, set design, painting, and lighting. They are also blessed with a major supporting cast of volunteers that see to things like ushering, bartending, and even stitching a costume hem. The line-up of shows for the next season is spectacular with 4 musicals and a murder mystery. Major upcoming productions include Disney’s Newsies, Andrew Lloyd Weber’s Evita, and 70’s favorite Saturday Night Fever as well as Tony Award winning Dial M for Murder, which was an audience top pick. Aside from the theatrical productions each year, the Arts Center intersperses “Great Performances” that go from one to three nights. Pilobus, an acrobatic dance company, will be here in January, comedian Colin Quinn in February, and the Celtic Tenors and Music of Queen will be on stage in March. With their central Island location, the Arts Center also fields three community events each year which are all free to the public. On February 3rd, a Taste of Gullah Festival will bring the parking lot to life with a masterful celebration of all things


Gullah from their music and food to their dance, storytelling, crafts, and traditions. Gullah artwork will also be on display inside the building all month long. In honor of National Youth Arts Month and in conjunction with the Island School Council for the Arts (ISCA), Youth Artsfest will be held on March 3rd. This will feature drama and dance classes, an art exhibit, talent show, and entertainment for the children by jugglers and magicians. Their final community event of the season every year is the Annual Christmas Tree Lighting. On the educational side of things, the Arts Center has done a tremendous job in putting together and constantly expanding upon programs for our local students. To help expose our children to their programs, they bus kids in from schools all over the area to their productions and Great Performances. For handson learning, the Arts Center offers numerous summer camps in visual arts and acting, and new to the line-up are after school acting classes. While the Arts Center does an epic job presenting us with entertainment and educational programs throughout the year, they also need our support to thrive. According to Andrea, “We have to keep our ticket prices down based on our audience, so we hold two fund raisers every year.� Their Spring Gala will be held on March 16th, replete with live auction and fabulous food and drink and they have a tennis and golf tournament in the fall. Inasmuch as we get winter here, winter has arrived. Our northern neighbors may be spending the next few months digging themselves out from feet of snow, but here in the Lowcountry it’s the perfect weather to bundle up and stave off the brisk temps with a choice beverage and a cigar. Whether your go-to cold-weather drink is a warm flavorful brandy or a nerve-toasting whiskey neat, there’s simply nothing like pairing it with the perfect cigar. And boy, does Tobacco Road have the cigar for you. “You want to got a little more full-bodied, like a La Flor Dominicana,” said Tobacco Road owner Mickey Fulton, sweeping between rows of colorful cigar boxes in her Arrow Road shop. “With a full-body cigar you get a lot of different flavors out of it.” Indeed a draw off of a La Flor Dominicana Suave rests heavy on the palate, evoking notes of spice and pepper that beg to be paired against the bite of a good whiskey. Fulton knows her stuff, and is only to happy to share some insight into the many different brands and varieties she carries. The aforementioned La Flor Dominica brand’s “Andalusia Bull” topped Cigar Aficionado’s 2016 Best Of list, and you can travel back through the list just by walking the rows at Tobacco Road. There’s the 2015 winner La Bijou by My Father, or the 2014 winner Oliva Melanio. And in between you’ll find a cornucopia of colorful labels and rich intoxicating aromas. There’s the glass case full of Padron, Fulton’s favorite, followed by shelves with names like Punch, Macanudo, JFR and La Gloria. And for every cigar, Fulton can lead a master class in what makes each cigar special. Like the Perdomo Habano, and how its name can evoke Cuba even if the tobacco comes from Nicaragua. “When the refugees came from Cuba, they were cigar rollers or they had farms where they grew tobacco. They brought the seeds with them.” Or the Camacho cigars advertising their Connecticut tobacco. “In Connecticut you have shade tobacco that is grown as a wrapper. Soil and climate make a difference in the taste of the tobacco, and Connecticut tobacco makes for a milder, lighter cigar.” She can tell you which countries produce the finest legally available tobacco, (“Nicaraguan tobacco, they say, is as close to a Cuban as you can get as far as flavor”) and the science behind each wrappers flavor (Maduro wrappers, she says, offer a little sweetness from a process that draws out the leaf’s natural sugars). It’s a level of expertise and a dedication to customer service that have kept customers coming back to her shop for 17 years. According to its official “food philosophy,” Mellow Mushroom Pizza Bakers “is a state of mind, a culture, a way of being” and always focuses on fresh ingredients and a devotion to creating an artistic sense of place. Nowhere is this “state of mind” more beautifully realized than inside John and Kim Boyce’s locally owned and operated Mellow Mushroom Pizza Bakers Bluffton. The décor is authentically Bluffton, bursting with color and rife with the folksy irreverence that has long defined our funky little river town. “It’s a great place and we’re proud to be part of the community,” said Kim Boyce. She and John first opened their Bluffton location seven years ago alongside a Hilton Head location that first opened in 2001. “Bluffton just has a different vibe and an energy to it that we love. Our employees feel that, too and they take ownership in our business.” The vibe and energy of Bluffton is on brilliant display throughout the main dining space, with J. Banks-designed décor that lets you feel like you’ve stepped into a quaint riverhouse on the 66

banks of the May and walls adorned with the kind of freewheeling folk art that has defined Old Town Bluffton for decades. You want to talk about a “state of mind?” Bluffton practically defined the concept, and Mellow Mushroom captured it with an admirable devotion to authenticity. “A lot of the art was bought right on Calhoun Street,” said Kim. “We bought a lot at Eggs n Tricities and there were quite a few pieces made by a local artist (R.A. Miller) to give it that Old Town feel.” And while the décor perfectly captures Old Town’s quirky artistry, the real works of art are made in the stone ovens lining the semi-open kitchen along one side the restaurant. Here, we see Mellow Mushroom’s dedication to fresh ingredients as performance art, with pizza bakers rolling and tossing dough to the delight of diners young and old. And as much fun as it is to watch, it’s even more enjoyable to taste. There’s the array of specialty pies from the sophistication of truffle oil and Montamoré cheese on the Holy Shiitake to the unapologetic gutbomb that is the Mighty Meaty. There’s the range of

hoagies, burgers and salads built with an eye on fresh unique ingredients. And then there are the calzones, taking that famed Mellow Mushroom dough and stuffing it to the bursting point with mouth-watering ingredients. “It’s all about offering the most natural ingredients. There is never a corner cut. It’s always about taking a step forward in making the best product we can make,” said Kim. The endless options get even more customizable when it comes to the ingredients – any pie can be made using gluten-free dough or dairy-free cheese and they’ve even begun offering thin crust. Don’t see something you like on the menu? Missing an old standby? Have a wild hair to try a dozen different ingredients on the same pizza? Just ask! “We’ll take things off of the menu, we leave some things on, but for the most part if you have a favorite from the past we can always make it,” said Kim, who takes her pizzas with feta and black olives. But what is great food without a delicious beverage to wash it down?


What two elements of the universe ever paired with greater symbiotic grace than pizza and beer? “They go together, hand in hand,” said Kim. Mellow Mushroom’s philosophy of freshness and flavor is beautifully expressed on its beer list, a kaleidoscope of regularly rotating tap handles behind the wide circular bar that reads like a who’s who of the finest regional, national and international craft beers. A CLASS ACT With the restaurant industry at a crossroads, Technical College of the Lowcountry aims to fill our workforce shortage with a new culinary school. BY BARRY KAUFMAN • PHOTOS PROVIDED BY TCL

It’s no secret that Hilton Head Island lives and dies by its food service. Hospitality is our biggest industry, and the skilled workers in our kitchens are on the front lines of that industry. In Beaufort County, we’re home to roughly 950 business with some form of food service operation. That’s a lot of restaurant and food service workers. Furthermore, analysis by the Technical College of the Lowcountry predicted 500 new food service jobs a year being created by 2020 with a third of those requiring culinary training. “We all agree that there is an ever growing (CRITICAL) need for trained entry and middle level culinarians in the BlufftonHHI area,” wrote Jeff Kruse, vice president for food and beverage for The Sea Pines Resort. In the business plan for the new institute he points to a need for 50 international cooks in the resort’s restaurants. “All these positions could be filled by locally trained culinary staff, but they are just not here to hire.” It’s not just the big resorts - putting trained people into those

local culinary jobs will soon be one of the biggest challenges our area faces. And Technical College of the Lowcountry is getting ready to face that challenge with a brand-new multimillion-dollar culinary school that will deliver the region’s next generation of chefs. Estimated for completion within two years at Buckwalter Place, the proposed $11.5 million, 26,000-square-foot facility will serve a student body of 300. “The industry is at a critical point to where it’s at a disadvantage because of the workforce shortage,” said Leigh Copeland, assistant vice president for marketing & public relations for TCL “It’s really about having a trained workforce.” “We need it desperately here in the Lowcountry,” said Dr. Bob Hohman with the Hilton Head Island Wine & Food Festival. “We need an institution like that.” What’s remarkable about this new facility is not just that it finally gives the Lowcountry the same kind of platform for growing its base of restaurant workers as Myrtle Beach and (continued on page 70)

Charleston, it’s the degree to which TCL has sought out area restaurants and resorts to guide the school. Copeland points to a steering committee featuring experts from SERG Group, The Sea Pines resort and Sonesta, who will not just guide the school’s creation but help define the curriculum based on the needs of our local industry. “What we plan to offer is a variety of associate degrees and additional certificates depending on what the workforce demands,” said Copeland, citing such possibilities as health and nutrition, baking and pastries and fish and seafood as potential specialties. “It’s all locally driven.” In addition to a steering committee made of our area’s industry titans, TCL has also sought consultation from some of our area’s most renowned chefs including Lucky Rooster’s Clayton Rollison. “(This school gives students) a skillset to work in the kitchen or even in executive-level management at a hotel or restaurant,” said Rollison. “It gives them the ability to have an honest career and support themselves and their family. And they’re already here. You don’t have to go find them.” That last part plays a crucial role in the culinary school – its deep local ties. Copeland points to the successes of similar culinary schools in Myrtle Beach and Charleston. “When we started to look at the full picture of hospitality and tourism in the state, we’re third behind Myrtle Beach and Charleston. We don’t have a culinary institute, whereas they do,” she said, adding, “The graduates from those programs are working in those areas. There aren’t many that trickle down to this area.” Clayton echoed her thoughts, pointing to the fact that we’re third in hospitality in a state where that industry generates $20 billion in revenue. “Why would we not invest?” Local town and county governments seem to agree, with the Town of Bluffton recently agreeing to invest $500,000 over 10 years, Beaufort County School District investing $2.5 million over 20 years and Beaufort County giving preliminary approval to a $5 million investment over time. For area government, it makes sense. It’s not just an investment in the school, it’s investment in an industry that plays a tremendous driving force in our region’s economy. “We see our role as being directly related to economic development,” said Copeland. That has two pillars: retention of existing business and creation of new business. We’re always looking to new technology programs, the needs of the future workforce, but the other part of that is making sure the industry we have can sustain itself and continue to grow.” 70
