PUBLISHER’S NOTE It’s that time of year again. We ring in the holidays with an abundance of overindulgences and then vow to get in shape, improve ourselves and get rid of bad habits. Every year we say, “This is the year I turn it all around”. Somehow we miraculously believe that we can take a whole year’s of bad habits and change them in less than a month’s time. What ends up happening is similar to the scene from the movie Groundhog Day, where Bill Murray wakes up and everything is just like it was the day before. Is being similar to Bill Murray in Groundhog Day a bad thing? Not necessarily, but I do believe that being stuck in neutral can wear on you both mentally and physically. I have found that if you don’t do or try new things, you become stagnant and your life follows that same pattern. I think we have all had periods where you just cruise along and hope for the best, and that’s when nothing positive happens. This year, don’t make false promises to yourself. Don’t set extreme goals that you can’t reach and definitely don’t give yourself a small window to reach those goals. Set small goals, do little things daily in order to reach that place you want to be. Don’t expect to lose fifty pounds in 30 days or to run five miles on your first jog in ten years. Try to lose a pound a week, or to run a little more each time out. If you smoke, don’t try to quit in one week when you have been smoking for twenty years. Our Fitness expert, Christy Baroni of CrossFit Hilton Head wrote a nice article in this issue (pg. 44) that really hit home with me. The holiday season is filled with enticing food, parties and celebrations making this time of year even tougher to maintain or start your promise of getting healthy. Christy’s message is not to starve or work yourself to the extreme, but to be smart and pick your times to indulge or reward yourself, but still maintain your healthy habits. This will enrich your life as well as the people around you. Everyone is different and has their own way of doing things, but the majority of people I know point to this time of year to make those changes and vow to do a complete overhaul immediately. Long term results come from long term solutions. As you get in the routine of doing the small things, you will notice a difference and that will give you the confidence to continue forward and gain momentum to a healthier and happier lifestyle. Be sure to enjoy the holidays with friends and family and take advantage of all the island has to offer this time of year. With all the food cooked to order and homemade down to the last cornbread crumb, Annie O’s is sure to please your palate and become part of your A-list when it comes to eating out. Annie O’s serves that true southern soul food that envelops your senses. The aroma captivates you and then that first bite brings you home. It’s one of those meals that you dive into with a smile on your face and every mouthful is better than the last. If you manage to come up for air before your plate is clean, you are probably among the few at your table who does so. This is Down Home Cookin’ at its finest. While it will please your palate, what Annie O’s will not do, happily, is take a big dent out of your billfold. Owner Tom Egerton started his restaurant with 8

a vision of “gourmet food that would not cost an arm and a leg.” He was looking for a niche market that was affordable and chose southern fare because he enjoys cooking and eating it. Tom grew up in Upstate, NY and eventually ended up in the Navy. After his service, he decided to go to the New England Culinary School in Vermont where he buffered his education and appreciation for fine food. He moved to Hilton Head in 1991 and spent the better part of the next two decades working his culinary magic in some of the finer restaurants on the Island and in Charleston. He decided in 2012 that it was time to spread his wings and start his own restaurant that would serve the same
great food that he knew how to prepare, but not at the high price point of fine dining. With an eye on constantly improving his dishes, Tom takes great pride when describing his menu and his goals. “I always feel the need to be better. I strive for perfection and expect the same from my staff. I have that well oiled machine philosophy,” said Tom. He is his own worst critic when it comes to his dishes. “If my chicken isn’t perfect or my gravy is a half shade off the color I want, then it is back to the drawing board.” They say that with so many restaurants on Hilton Head, the only ones that will make it are the ones where the owners are involved and immersed. Open six days a week (they are closed on Sundays so Tom can shop for the week ahead), Annie O’s is infused with love’s labor. Tom does all of the cooking himself and arrives at 9 a.m. for an 11 a.m. opening time and leaves after 11 p.m. By all accounts, a fourteen hour day would definitely
qualify as an owner putting heart and soul into his investment. Annie O’s is named after Tom’s mother who was his mentor and inspiration. He wanted a name with meaning. “Annie O loved to eat and was a great cook. I used to like to watch her cook and finally one day she said, ‘Tom – you’re right in the way.’ So she put a spoon in my hand and from then on I always helped her prepare our meals. She showed me the basics and instilled in me a love of food.” There is a picture of Annie on the wall as you walk in the door. Tom says that perhaps she is watching over his shoulder or perhaps the meat mallet in her hand is ready to dole out a good whack if his grits are a tad runny. Off the beaten track a bit, Annie O’s is located in a small strip mall at the corner of Arrow and Target Roads on the south end of Hilton Head near the Sea Pines Circle. Dianne Flowers will treat you well if you sit at the bar, or you can cozy into one of the tables or booths and be wined and dined for the duration of your stay. A party of four can have a fabulous meal and a beer to compliment it and walk out the door for $50. Tom calls it Quality Affordable Cuisine. “We offer good value,” said
Tom. “Our portions are big enough to fill people up and we use a lot of ‘to-go’ boxes for leftovers.” Tom described the most popular dishes at Annie O’s as the Tomato Pie and the Pork Shoulder. The Tomato Pie has a light crust made with cream cheese, butter, and flour and is served with a salad. “It makes the perfect light lunch,” explained Tom. His Pork Shoulder is slow roasted for seven hours and is tenderness times ten. Tom’s personal favorite is his Chicken Biscuit served with sausage gravy and a side of Collard Greens. The biscuit is homemade. The gravy is homemade. Even the sausage that goes in the gravy is homemade. The menu at Annie O’s has something for everyone. Diners can go light with a choice of salads or Crab Cakes, fried with chicken or catfish, traditional with shrimp and grits or meatloaf and gravy, or the meat lover in the group can get a burger that was ground fresh that morning. At $16, the Strip Steak is the most expensive item on the menu. The sides will be hard to choose from as they include Black Eyed Peas, Stone Ground Grits, Fried Green Tomatoes, Collard Greens, and Braised Cabbage among others. People can mix and match as
Tom will cater to your whim. He will try to accommodate special dietary needs and will prepare food gluten-free or even salt-free if necessary. Desserts are all homemade daily and range from Coconut Cream or Chocolate Chip Pecan Pie to their popular Chocolate Pudding. The Kids’ Menu features all the hits like burgers, mac and cheese, and chicken fingers. Annie O’s sports a full bar that has all domestic beers and wines or alcohol. Tom believes in “quality stuff that is made in America.” Again, it is the value concept at work. “I don’t want to gouge people. You can order a drinkable bottle of wine for $15 or if someone wants to bring their own bottle, that’s okay with me,” explained Tom. Aside from his passion for food, Tom is a dog lover and staunch supporter of Noah’s Arks Rescue which raises money for abused dogs and nurses them back to health. He tries to get the word out as much as possible with a donation jar inside his front door and asks people to visit Noah’s Arks on Facebook and adopt a dog. Annie O’s is open all day, Monday through Saturday, 11 a.m. to 9 p.m. They choose not to shut down between lunch and dinner so anyone with a 4 p.m. hankering for fried chicken can get their fix. Hugo’s

For more than 35 years, Hugo Arrieta has overseen memorable dining experiences on Hilton Head Island. Manager of the popular Fitzgerald’s Restaurant for nearly three decades, Hugo cultivated lifelong friendships with Island visitors, annual timeshare guests and locals who frequented the popular beachside restaurant at the Adventure Inn. After Fitzgerald’s closed in 2005, Hugo moved the staff and signature menu items, such as the Lowcountry crab cakes and honey pecan fried chicken, to The Village at Wexford where he opened a small namesake restaurant. Meanwhile, Brandon Arrieta had returned to Hilton Head to assist with a business startup. An accountant and business consultant with a Columbia firm, he decided to remain in his hometown after the project was finished and joined his father at Hugo’s Seafood & Steakhouse. The hospitality industry was especially hard hit during the Recession and many restaurants cut their advertising budgets, raised menu prices and slashed portion sizes to keep the doors open. Hugo’s, on the other hand, focused on marketing and forging business relationship to gain new customers while maintaining the food quality and impeccable customer service its loyal patrons expected. A prime example of this new strategy was the decision to participate in Hilton Head Island’s inaugural Restaurant Week. Hosted by the Chamber of Commerce in January of 2008, the event was created to boost business during the off season, as well as soften the blow caused by the economic downturn. “Restaurant Week is an opportunity to showcase what you can do and we went really crazy,” Brandon adds with a laugh. So crazy, in fact, Hugo’s had to turn away 1,000 people during the event. Rather than lose potential customers, the restaurant then hosted a Rain Check Week for those who couldn’t get in. Word quickly got out and as patronage continued to increase, the family-owned and operated business required more space. After a year spent searching for the perfect spot, Hugo’s Seafood & Steakhouse relocated to South Island Square in December of 2011.
With the move, the casually elegant restaurant more than doubled in size and now boasts a multi-level dining room, private party room, wine cellar, bar area, outdoor seating and two kitchens. The additional space and increase in staff allowed Hugo’s to expand its menu offerings and wine list, provide on- and off-site catering and compete in culinary events. Open weekdays for lunch, nightly for dinner and Sundays for Brunch from 9 a.m. to 2 p.m., Hugo’s now has one of the Island’s largest menus with numerous vegetarian and gluten-free options. All of the favorites from Fitzgerald’s are still available, served alongside new classics and seasonal items including the award-winning Crab & Asparagus Cappuccino Soup, Lobster Lollipops and Filet Lollipops, Lobster Thermidor, Grand Marnier Lobster Souffle, NY Steak Au Poivre, Prime Rib, Steak Diane, Kentucky Bourbon Ribeye, Southern Sweet Tea BBQ ribs, Chicken Cordon Bleu, roasted duck, rack of lamb and whole crispy flounder. “We were really able to grow the types of offerings we have,” notes Brandon. “For instance, we now have tableside desserts.” Back in its heyday, tableside service was the rule at Fitzgerald’s with an array of appetizers, entrees, desserts and cordials prepared for guests in the dining room. Carrying on this fine dining tradition, Hugo’s now offers Hilton Head’s only flaming desserts with a choice of Bananas Foster, Cherries Jubilee, Cinnamon Apple Crisp, Southern Peach Delight, Strawberries with Cognac & Cream and Raspberries with Chocolate, and Vodka. “We’re trying to find that balance here and create a new little niche,” adds Brandon. “We want people to experience fine dining without the stuffiness. And without the ridiculous price tag associated with it.” This focus on quality extends to every item on the menu, as well as the service. “Everything is very deliberate,” he says. “Everyone knows that I don’t ever
want to hear the term ‘good enough.’ If someone thinks it’s good enough, then it’s not good enough. It’s got to be amazing.” To this end, all of the beef served in the restaurant is 100% Certified Angus and a large portion of the menu is devoted exclusively to lobster. Madefrom-scratch soups, sauces, dressings, desserts and more are the order of the day with Early Dining deals available nightly from 4:30-6 p.m., as well as Happy Hour drink specials. The “Hugo Nights” menu offers the chance to try a different featured dish every night of the week, from crab legs to stuffed Angus filet, for only $17.99. Painted in the same hues and featuring the same chairs as the former establishment, the private room seats up to 40 people and can be reserved without a booking fee. Extremely popular and constantly in use, guests are welcome to order off any of the menus or have their private event catered. Currently, the second smaller kitchen is devoted exclusively to catering. Recently named “Best Caterer” by readers of The Island Packet, Hugo’s can accommodate the needs of virtually any function, from private in-house parties and casual backyard barbecues to formal sit-down dinners and multicourse meals for those with special dietary needs. To promote the restaurant and its fullservice catering business, Hugo’s decided to compete in one of the Island’s biggest culinary events last November. “When we entered Taste of the Season last year it was with great concern and trepidation,” recalls Brandon. “We felt like we really, really needed to blow people’s minds.” Following months of preparation, he was more than a little disappointed to find out their booth was randomly placed next to the 2011 winner. However, after more than 1,000 Surf & Turf Lollipops and flaming apple crisps were served to the ravenous crowd,
Hugo’s was named “Best Cuisine” by a landslide of votes. The larger location in South Island Square also allows Hugo’s to cater to families with a special kid’s menu, reasonable pricing and casual atmosphere. On the other hand, patrons of the Arts Center can reserve one of two Dinner & A Show packages and enjoy a leisurely meal without worrying about the time. With its private dining room, as well as Thanksgiving, Christmas Day, New Year’s Eve and Valentine’s Day specials, Hugo’s Seafood & Steakhouse is a popular spot throughout the holiday season. Take-out is available at all levels, from a single sandwich to four-dozen stuffed mushrooms. Every once in a while you come across a bartender that you cannot forget and you make a mental note to go back and visit. Perhaps you remember his Bloody Mary that rescued you from near death. Or maybe it was that perfect blend of fresh fruit mixed with rum. While you may keep going back for his amazing cocktails and friendly manner, you will 20

mostly remember Steve Flannery, bartender at Okko, because he will remember you. He will remember your name, your occupation, your cocktail of choice, and probably even your favorite sports team. “People care about being cared for. They want to feel special. I just take the time to do that,” explained Steve. Steve Flannery has been a familiar
face in the hospitality industry on the Island for the better part of thirty years with a few “journeys” in between. He grew up in a small town in upstate New York and played basketball at SUNY Oswego. With the hopes of going pro, Steve moved to England but eventually aborted his aspirations. He then moved to Hilton Head where his cousin lived with “nothing to show for (his)
overseas efforts except a girlfriend.” Jobless, Steve convinced the owner of WG Schuckers that he and his girlfriend were both well seasoned waiters (I’m sure that shooting hoops is quite similar to slinging dishes). After waiting tables for a month, Steve was promoted to manager and thus his career in food and beverage took flight. He has made his mark on several Island restaurants, managing and bartending and continually learning lessons, names, and faces along the way. He has been at Big Rocco’s, Alexander’s, 211 Park, Robert Irvine’s restaurants, Asian Bistro and he helped open up the new version of the Skullcreek Boathouse. Some of his ‘journeys’ include opening the third Wild Wing Café in Atlanta and a four year stint managing a hotel in the Bahamas for friend and former NY Ranger superhero, Mark Messier. It was a year ago that he started working at Okko and has been relishing the opportunity ever since. Steve
attributes the success of Okko to owner Wei Zhu’s vision. “Everything here is so clean and polished. Spotless. A big city vibe. Wei has filled a great niche and hired an amazing bunch of people. We have a United Nations feeling here with staff from all over: Nepal, Thailand, China, US. I am so lucky to be here,” said Steve. So after thirty years in the hospitality industry, what keeps Steve coming back to work every day? “I love meeting and talking to people. I get to know them. When Juliann comes in, I know that she wants Spicy Beef and it has to be sliced, not ground, because it gets stuck in her husband’s teeth. The Johnsons like to drink Sake, and Chrissy and Jan, who come every year from California, like a special vodka drink.” Steve feels he is on stage every night. “It’s fun to have fun. I like to be in bars with people watching sports which I love too. It’s easy for me to make people feel comfortable.” Steve also stressed the importance of
the locals to their success. “Without the focus on the locals, you will die,” he explained. It’s easy to see how Okko has built such a wide base of local support as well as repeat vacationers. Just take a look at the queue for a seat at the bar and you will know that Steve is working his magic. Personally, I like to belly up to the bar, have a chat with Steve, enjoy his amazing Shogun Samurai (citrus liqueur, ginger vodka, pear sake, and his homemade habanero vinegar), and then just let him order dinner for me because the choices are overwhelming and each dish is better than the next. Charlie’s L’etoile Verte is a wonderful restaurant located in an old Southern house with a big porch and three large rooms for dining. Owner Charlie Golson and his family have operated the restaurant for 31 years, from the original single room restaurant on Highway 278, to the present low country bungalow near Sea Pines Circle. Opened in the winter of 1982, Charlie’s L’étoile Verte was the Southern salute to the little family-run French restaurants where Charlie ate during his time in France in the early 1970s. The original Charlie’s was the materialization of several mentors and a desire to cook and live well. But let’s talk about the new executive chef at Charlie’s, Lloyd Alberson. He grew up in Butler, Alabama, and began working in the restaurant business as a dishwasher while in high school. After graduation, he pursued a degree in marketing and anthropology at Troy State in Troy, Alabama. “When people began asking me what I planned to do with that rare combination of degrees, I began to admit to myself a preference for the kitchen over the classroom.” He moved on to culinary school at Gulf Coast Culinary Institute in Gulf Shores,
receiving southeast regional awards both years from the American Culinary Federation. Following graduation from the Culinary Institute, Lloyd moved out west, gaining experience and sharpening his skills in several fine dining restaurants, while serving under top chefs who prided themselves on training the next generation of chefs. He valued the experience but missed the south and his family. So several years ago, he moved back to the south and worked as a chef at Halyard’s Restaurant in St. Simon’s Island. “It was a great opportunity and a very popular and well-known, family-owned-andoperated restaurant, but I wanted to move up and knew I had to move on to do so.” Lloyd began looking for new opportunities in the area and was fortunate to have people in the business who notified him of the potential position with Charlie’s. “I would have never known about the position, had it
not been for these people.” He hit it off with the owners immediately. In fact, he even comes in early some days to catch up and shoot the breeze with Charlie, daughter Margaret, and their son Palmer, who are also very involved with daily operations. At Charlie’s, they never proclaim a few things to be fresh as everything served is prepared that way. Everything is made from scratch – seafood, beef, poultry, game, sauces, soups and sweets. One of Lloyd’s favorite dishes to prepare is beef short ribs, and he also has an affinity for preparing duck and beef, but here on Hilton Head, everyone wants fresh seafood. In fact, grouper is one of the most popular dishes at Charlie’s. “It’s not a production-line kitchen and I’m fortunate to work with owners who trust me to change preparation of dishes often.” Menus carved in stone are a dime a dozen. At Charlie’s, the menu is written daily based on the freshest seafood,
vegetables, and fruits available. Lloyd plays with different preparations – grilled, broiled, seared, or baked, with and without sauces, but never fried. “We’re probably one of the few restaurants on Hilton Head without a fryer,” Lloyd boasted. When Lloyd is not at Charlie’s, he loves spending time with his wife Jenny and children Eli, 11, Annajane, 4, and Jack, 3. He is a fan of college football and a big baseball fan. Chamber Restaurant Week is coming to town once again, bringing locals and visitors a chance to enjoy some of the area’s top restaurants at a fraction of the cost. What has turned into a week-long food odyssey, the 6th annual Chamber Restaurant Week runs from January 25 through February 1, 2014, with most restaurants in Hilton Head and Bluffton participating. These 8 days of culinary exploration awaken the dining scene that thrives around us, from coastal seafood to city-style American eats. For the week, locals and guests are invited to dine at some of the finest restaurants the area has to offer with special fixedprice menus. Mark your calendar! More than 75 restaurants will invite diners to indulge in delicious prix-fixe lunches and dinners during Chamber Restaurant Week this year. Diners will 36

have a plethora of options to choose from – making it all the more difficult to decide which restaurants to choose. Each restaurant has created a customized menu with their chef’s culinary talents and the type of food they specialize in. Last year, more than 40,000 people visited the Chamber Restaurant Week web page to view participating restaurants, with links to their special menus and offers available during the event. Modeled after successful restaurant weeks in New York, Boston, Houston, and other cities, Chamber Restaurant Week is an opportunity for residents and visitors to sample menus at some of the area’s best restaurants at a significant savings. These prices represent quite a value in a resort area where dining out can be expensive, and
most of the area's top restaurants participate in the annual promotion. It doesn't turn much of a profit for area restaurants, but it gives their owners an opportunity to showcase their food to local people who -- they hope -- return over and over for regularly priced meals. According to Anne Feldman, Communications Manager for the Hilton Head Island/Bluffton Chamber of Commerce, the event is scheduled to pump up business during the slower season when tourists aren't around. "When we started Chamber Restaurant Week six years ago, we asked a group of restaurateurs what their slowest month of the year was, and they all spoke about the end of January traditionally being a very slow time for business," said Feldman.
“Taste the best our community has to offer with the Chamber of Commerce and participating area restaurants. This event provides a wonderful opportunity to showcase our fabulous foodies as well as feed the hungry...a true win-win for our community,” Feldman said. Behind the scenes, the chefs of more than 75 local restaurants participating in the Chamber Restaurant Week have a frantic, fixed-price dining production to execute flawlessly. The competition was tight last year as participating restaurants vied for the annual champion title, chosen by dining establishment patrons who selected their favorite dining experience by voting on the chamber’s website. The People’s Choice Award for last year’s Chamber Restaurant Week was Hugo’s Seafood and Steakhouse. “We had our best Chamber Restaurant Week yet,” said Brandon Arrieta, owner of Hugo’s
Seafood & Steakhouse. “We served over 1,500 guests during Chamber Restaurant Week and closely matched that number in rain-check reservations as well.” According to Arrieta, they go into overdrive for Restaurant Week, perfecting new menu items to debut, which last year included a flaming key lime meringue tart.”We always go back and look at what we can improve each year to make it a better experience for every customer.” Diners selected Hudson’s Seafood House on the Docks for second place last year. Hudson's employs the largest and one of only two remaining fishing fleets on the island which brings fresh local seafood straight from the docks to your table. General Manager Andrew Carmines, when asked how they are preparing for this year’s Restaurant Week said, “We always prepare to be incredibly busy. It’s a great time to bring
in people who haven’t been in before, and to bring in regulars for some new and exciting dishes created just for the occasion.” Third place last year was awarded to the Sea Grass Grille. During Restaurant Week last year, they provided a special 3 course dinner menu including appetizers, entrée, and dessert for $23. The main difference that needs to be considered for this week is that customers will be ordering three courses rather than just splitting up a couple of appetizers and some entrees. The Sea Grass Grille strives to prove that excellent food and personal service can be found at affordable prices. “We want people to feel they can come any night, including Restaurant Week, and have a reasonably priced meal,” said owner Kathy Jannott. Orchid Paulmeier, an owner of One Hot Mama’s said, “We always look forward to Restaurant Week. It’s a great way to showcase what we offer, and it brings in a lot of new people.” This family-friendly restaurant offers delicious baby back ribs, authentic pitto-plate BBQ, hand-cut steaks, chargrilled chicken, the world’s best wings, and fabulous salads. “We offer a great Restaurant Week menu for both lunch and dinner,” Paulmeier said. Diners will again be able to select their favorite restaurant week establishment by voting on the website as well as via email and on Facebook for the Chamber Restaurant Week Champion. Reservations should be made at individual restaurants, and not all restaurants take reservations. But all offer their Restaurant Week menu to everyone, in addition to the regular menu. It is hard to believe that 2014 will mark the 29th year of the Hilton Head Wine & Food Festival. “If you think about it, our Wine & Food Festival is almost as old as our town,” expressed event director, Tami Bream. Its growth through the years, like our population, has been exponential and now it is written up in travel magazines and event calendars and is putting us on the map as a culinary destination. “When making their travel plans, people now look for great food and great chefs. We have renowned tennis and golf, but also great food and we are trying to showcase that,” said Tami. The Hilton Head Wine & Food Festival has evolved into a series of events that span two months and draw on the talents of master chefs and winemakers alike. It has incorporated 40

the energy and ambitions of countless people and numerous organizations over the years. The festival has become a much anticipated tradition not only for Islanders, but for many visitors from all
over the southeast. The events are now organized by the Hilton Head Island Wine & Food Association which formed after the Island Hospitality Association dissolved. Tami explained that the new team is basically a lot of the same faces under a new name. To trace the origins of this mega festival, you would have to go back to the days of the FoodFest, which was held in Park Plaza and the Wine Festival which was held down at South Beach Marina. FoodFest originally housed only one tent for wine while the WineFest had a mere two tents for food. They were both part of a month long Island festival every March called “SpringFest” which was designed by the Chamber of Commerce to jumpstart the tourist season. Eventually there was a merging of minds and efforts and the two
festivals were married. The original creators of WineFest, who had a dream of creating one of the largest festivals on the east coast, have seen their vision turn into reality. After 29 years, this event has really evolved into an incredible partnership - a merger of food and wine. It is not about them separately anymore; it is about the beauty of food and wine together. “Food is better with wine and wine is better with food,” said Tami. The festival kicks off on January 24th with the International Wine Judging Competition. This is the real deal in the wine world. Vineyards pay a fee for each label they enter in the competition. They hope to gain recognition and awards for their grapes from the festival’s 25 certified judges. The judging portion of the festival started 25 years ago with 200 wines. There are now well over 800 entries and wines are flighted into over 30 categories or classifications including Cabernet, Chardonnay, Merlot, Pinot Grigio, Pinot Noir, Riesling, Rose', Sauvignon Blanc, Syrah, Zinfandel, Sparkling Wine, and the list goes on. Tami noted that as the variety of wines has grown, so too will the categories for this year’s judging. Aside from awards for Best of Shows and Best Values in both red and white and champagne, double gold, gold, and silver medals are presented. Last year’s Best of Show Award went to the Bello Family Vineyard’s 2009 Cabernet Sauvignon which sells for a modest $100 a bottle. Best Value Wine went to J. Lohr 2010 Paso Robles Syrah for $15 per bottle. Another tradition of the Judging Competition weekend is the Uncork the Festival party where wine enthusiasts can spend an evening with the judges and share a favorite bottle from their own cellar. This is an event where judges and connoisseurs can meet and share their love of fine wine, a gourmet meal, and a few laughs and stories. Now we fast forward to March when the fun really starts. There are many events in the week leading up to the Public Tasting on the 15th including
wine and cheese educational luncheons and the Great Chefs of the South Wine Dinners. These popular dinners allow restaurants and their chefs to choose a theme and a pairing. Themes change every year and Chefs choose what wines and vineyards they want to accompany their incredible dishes. The one guarantee with these dinners is that they all showcase our finest chefs’ talents. Last year, Ela’s did a “Coastal Wine Tour” and for $80, guests feasted on a five course meal and wines from some of California’s best vineyards. Red Fish did a “South by Northwest” theme and served flavors of the northwest with a southern flair, complimented by choice wine selections from King Estates. One of the favorite events of the wine dinner week is the Sommelier Smackdown which will again be held at Charlie’s L’etoile Verte. Two sommeliers will compete to choose the best wines to pair with a gourmet meal. All wines will be served anonymously to guests in brown bags and then votes will be cast for the best wines that compliment each course and the winning sommelier will be crowned. New to the festival this year will be Wine Knowledge Sessions. These will take place during the judging weekend in January as well as the week of the Public Tasting in March. There will be Wine tasting 101 and Intermediate and Advanced classes. The Grand Tasting and Silent Auction will be held at the Sea Pines Country Club on Friday, March 14th from 5:30 to 7:30. This event, which sells out well ahead of time, features high end wines and gourmet samplings. This is a great opportunity for wine connoisseurs to interact with vineyard representatives and distributors and to sip and swish from bottles that all sport price tags over $50. At press time, Tami said they were expecting an exciting new addition to both the Grand and Public Tastings and she said to stay tuned into their Facebook page and website for updates. Everything leads up to the marquis event of the Hilton Head Wine & Food
Festival which is, of course, the Public Tasting on March 15th. “This event is a great opportunity to showcase the hospitality of our Island,” said Tami. “We see more people coming year after year from places like Atlanta, Charlotte, and Jacksonville.” This afternoon-long event is not just about eating and drinking. There are entertainment and educational components as well as opportunities for you to take home what you sample. There will be live music and the entertaining Waiter’s Race and Bartender’s Challenge. A silent auction which benefits local scholarship funds
offers a chance to garner great deals on mixed cases of wine. There will be local cookbook authors on hand and the Outdoor Gourmet cooking demonstrations so you can go home with new recipes and preparation secrets. There will be food vendors galore and the wine tent, with over 1,000 wines to sample, will be full of favorite vineyards that come every year as well as those that won awards at the January judging. In fact, one of the things that sets our festival apart from others is that we boast the component of an earlier judging competition and welcome back those vineyards to share their award winning grapes. The Single Husbands Band An Island Classic BY RISA WILLIAMS McMILLAN
The first thing that comes to mind when listening to Mark Husbands and his Single Husbands Band is that this musician is a consummate professional that makes what he does look easy and what you hear sound great. He loves his music and it shows. The creativity of musicians is amazing to me and Mark is right up there with the most amazing I have met. While all musicians try and find their niche, Mark has found his by turning himself into a one-man-band. Most solo artists prefer to play the acoustic guitar and sing. Many of these artists will use a drum machine for their rhythm. Mark, on the other hand, twisted this idea and sings while playing the drums. He further twists his act by adding customized background music using a mixing sound board which infuses the rest of the band equation into his music. He will blend separate tracks of piano, bass, congo drums, or whatever else he needs to compliment his solo act. The result is The Single Husband Band that if you could not see the stage, you would swear there were five musicians out there. “A lot of people find it a novelty. You don’t usually see a drummer playing solo and it’s also unique because I sound like a whole band,” he explained. Although Mark is a one man band on stage, his wife, Lise, is his partner every step of the way from set up to tear down. “We are like Siamese twins. I can’t even lift the speakers without her,” said Mark. Lise is responsible for mixing his music, taking requests, whispering into the secret mic in his ear when he needs to speed it up or tone it down. She tells him when a friend has arrived so he can welcome them to the fold and she graciously greets friends in the audience while trying not to miss her cues. 42

Mark loves to take requests and Lise will proudly hand out his song list which is 400 songs deep of all genres and speeds – oldies, latin, jazz, funk, country. Mark refers to his playlist as ‘Cover Songs’. “I like to stick to the popular stuff that is recognizable – the Classics,” said Mark. His transition from song to song is seamless and he rarely even takes a break, often going 4 hours non-stop. While enjoying his performance one night at Reilley’s South, I took inventory of the audience and was struck by the fact that he was entertaining tables of all ages. The older couples were on their feet dancing and the younger ones were not shy about whooping their approval at the end of songs. Mark grew up in Panama City, FL. He received his first drum set at age eleven and formed his first professional band at twelve. “We had a booking agent who would drive us to clubs to play,” said Mark. “My young bands always practiced at my house. We didn’t have a garage, so we were a living room band. My parents were very tolerant and loved having all the kids and their parents hanging out.” Recognizing his love for music, Mark attended the famed Berklee College of Music in Boston. After many concerts and nightclub stints all around the world from Japan to the Middle East, Mark landed in Waikiki dazzling audiences with his talents. In 1988, he received a phone call from Larry Perigo, band leader for local favorite The Headliners, who asked if he would like to move to Hilton Head and join their band. Happy to move somewhere that actually had a bridge to the mainland, Mark agreed to join them. Twenty five years later he is still mixing it up with The Headliners as well as doing his solo act. Mark will tell you that music chose him, not the other way around. “I follow the music. It takes me where it wants me to go. It’s what I do,” he expressed. Mark works on his vocation daily, constantly trying to improve and add to his repertoire of songs. He calls it his ‘Labor of Love’. After 46 years in the business, he has certainly perfected his trade and Hilton Head is lucky that he calls our Island home as he certainly could make a name for himself anywhere. Have you ever found that perfect gift for a loved one or friend? You know what I mean, the one that you take extra care to wrap perfectly? The one you are so excited to give because you know the recipient is going to absolutely love it? That’s one of my favorite things about this time of year! We tend to be a little fancier around the holidays. The casual island vibe dissipates for a few weeks and we celebrate the holidays with some polish and panache. Celebrating with friends and family becomes the center of our social calendar. But what about your health and fitness goals around this time of year? Do they tend to take a backseat to the holidays? Does the promise of the new year overshadow the hundreds of small daily choices you have to make? January 1st has forever been viewed as the ultimate clean slate. A fresh new calendar feels like a fresh new chance to get back on track with taking care of yourself. But that leaves December as the most difficult month of the year. With the promise of a new start right around the corner, and holiday treats coming at us left and right, how is it possible to stay on track? First, it is possible. Trust me! Sticking to your goals is 100% completely in your control. But it does require some planning. Consider saving up your indulgences for a night that you are attending a party. Don’t waste your calories on cookies at the office or your 44

money splurging on that overpriced pumpkin spiced latte. During the week stick to your normal plan. You will enjoy that decadent dessert at the office holiday party because you’ve waited for it. You saved your calories for it. And with that comes the peace of mind to enjoy it guilt-free. Second, I have noticed a cycle that I think you might relate to. When I take the time to get outside, breath fresh air, and move my body, I feel great about myself. That leads me to make better food choices which in turn gives me more energy and helps me get refreshing sleep at night. With good sleep and a clear head I can handle all the extras that the holidays bring, both good and bad, with more patience and less panic. The opposite cycle is also very real! When I overeat or eat lots of sugary treats, my energy is zapped. Then, I am more likely to lounge in front of the TV instead of getting my workout done. This in turn makes me toss and turn at night which leaves me tired and unprepared to handle the busyness of the holidays. You can change that cycle at any point in time! You don’t have to wait for a new calendar page to turn it around. Make the small choice to
spend 30 minutes walking outside. Get your heart rate up and get a little sweat going. Even just this small investment of time can start the cycle to you feeling great, and getting a jump on that January 1st promise to yourself. And finally, remember that gift we were thinking about? The one you can’t wait to give because it is exactly what your loved one is wanting? Isn’t YOU at your best self what your loved ones want the most? YOU at your happiest and healthiest is the best gift you can give to your family, friends, and the world around you. RED VELVET CHEESECAKE Courtesty of A Lowcountry Backyard
INGREDIENTS Red Velvet Cheesecake 1 lb. Milk chocolate 1/2 cup butter 1 9-ounce package chocolate wafer cookies 1 cup semisweet chocolate pieces 1 cup slivered almonds 1/2 cup packed brown sugar 1/2 cup butter, melted 4 8-ounce packages cream cheese, softened 1 8-ounce carton sour cream 1/3 cup granulated sugar 1/3 cup buttermilk 2 tablespoons red food coloring 4 eggs 2 egg yolks Whipped cream or hot fudge topping – optional In a medium saucepan, combine milk chocolate and 1/2 cup butter. Cook and stir over low heat until melted. Cool. Preheat oven to 350 degrees. For crust, in a large food processor, combine cookies, semisweet chocolate, almonds, and brown sugar. Cover and process until nuts are finely ground. Add 1/2 cup melted butter, cover and process until combined. Press mixture evenly onto the bottom and 2 1/2 inches up the side of a 10x3 inch springform pan with a removeable bottom. For filling, in an extra large bowl, combine melted chocolate mixture, cream cheese, sour cream, granulated sugar, buttermilk and food coloring. Beat with an electric mixer on medium to high speed until smooth. Add eggs and egg yolks, beat on low speed just until incorporated. Pour filling into the fresh crust lined pan, spreading evenly. Place springform pan in a shallow baking pan. Bake in the preheated oven about 1 hour or until a 2 inch area around the outside edge appears set when gently shaken. Cool in its pan on a wire rack for 15 minutes. Using a small knife, loosen crust from side of pan. Cool for 30 more minutes. Remove sides of springform pan and cool cheesecake completely on rack. Cover and chill for at least 4 hours before serving. Don’t cut it til its cooled! If desired, serve with hot fudge topping or whipped cream. 46

For more than 35 years, Hilton Head Health has been recognized as the premier weight loss and health retreat in the United States. Hilton Head Health (H3) is an exclusive resort delivering individualized experiences in the areas of nutrition, fitness, and stress management. Yet many locals and vacationers don’t know that it’s located right here on Hilton Head Island. Weekly participation varies from 30 to 65 people year round, and the majority of participants are from other states and other countries. Back in the late 80s, when the program was known as the Health Institute, some locals knew it as the “fat farm” and many of the people who came were obese and were there to lose 100 or more pounds. That is no longer typical. The majority of people who attend today are there to lose 20 to 35 pounds, or just to tone and strengthen their bodies. It’s a health retreat, with emphasis on creating and maintaining a healthy lifestyle. ISLAND WINERY Hot Sherry Pepper Sauce History For more than two hundred years, Sherry Pepper Sauce has been a well-kept Bermuda secret. In the heyday of the British Navy, Bermuda’s Royal Naval Dockyard was one of the busiest maritime bases in the world. Sailors coveted locally cultivated pequin peppers, which they would add to their barrels of sherry to create a seasoning to mask the taste of their less-thansavory ship rations. Becoming a favorite sauce among local Bermudians, they refined the recipe and soon began producing and selling it themselves. Nowadays, a bottle of Sherry Pepper Sauce can be found tableside in just about any restaurant in Bermuda and in nearly all kitchen pantries. Sherry Pepper Sauce is an essential ingredient in Bermuda’s world famous Fish Chowder. Hilton Head Island Sherry Pepper Sauce Although Bermuda is practically our neighbor – just a couple of hundred miles off the coast - here at Island Winery in Hilton Head South Carolina, we decided to adapt the recipe a bit to make it the perfect accompaniment to our Low Country cuisine. We started with our barrel aged semi-dry sherry. Then we infused the sherry with smoky chipotle and habenero peppers for several weeks to give it a little extra kick. Finally, we bottled it with a couple of pequin peppers to keep true to the original. And just to give it that special spice which Low Country cooking is famous for, we added some of the same Caribbean spices that were once traded in the ports of Charleston and Savannah centuries ago. Brand Manager at H3, Adam Martin, took time out of his busy schedule to show us at Taste around the facility and to explain how the company continues to grow and now expand into the local community. Recently H3 built a stateof-the-art kitchen, called Healthy Kitchen, for the purpose of providing healthy cooking lessons, as well as providing fine dining at their Chef’s Table dinners. Participation in cooking classes and at the Chef’s Table dinners is limited to provide a truly interactive experience. Over the first few months after the Healthy Kitchen opened, these events have been for guests of H3. The good news is that now locals and vacationers are invited to make reservations and participate or book an event for family, friends, or co-workers! While healthy and delicious meals served to H3 guests contain 350 to 400 calories, based on a 1200 calorie a day diet, guests say they are rarely hungry during their stay, even while taking as many as 5 workout classes per day. Executive Chef Jen Welper said, “What we do is called ‘tricking the palate’ – presentation makes the food look and taste as delicious as if it had twice the number of calories, and is seasoned so that it is completely satisfying.” Chef Jen received her bachelor’s degree in Culinary Nutrition from Johnson & Wales University in Providence, Rhode Island. Whether you’re looking for a unique dining experience or a participatory cooking class, H3 Healthy Kitchen offers an array of sessions with a variety of options. For those who want to learn to prepare healthy meals, the Healthy Kitchen participatory cooking classes are great. With the guidance of chefs, participants gain valuable insight on how to prepare flavorful, low-calorie dishes in their state-of-the-art kitchen while sampling and learning cooking techniques from around the world along the way. Sessions are typically 2.5 hours, and topics vary seasonally and emphasize local and fresh ingredients. With six fully equipped workstations—complete with a four burner range, sink, refrigerator and prep area— participants are able to experience cooking as if they were in their own kitchen. Participation at a Chef’s Table dinner is limited to 14, and is truly a fine dining experience, unlike any other on the island. “It is a 6 course meal with wine pairings, and fewer than 650 calories, at least half of what you would expect with a similar meal in other restaurants,” according to Chef Jen. Diners at
the Chef’s Table leave with a take-home menu and recipe cards, a list of wines served, a CD of music featured during the themed event, and a commemorative photograph with the chef. It is an evening that will be remembered, for the knowledge gained as well as the food and wine served. Anthony Triceri manages Healthy Kitchen. Chef Karla Williams provides cooking demonstrations and leads hands-on classes, and is usually the head chef at the Chef’s Table dinners. A graduate from The Chef's Academy in Indianapolis, Karla's past experiences include Sous Chef at Kona Grill in Carmel, Indiana. Over several courses at the Chef’s Table, diners will watch her prepare recipes from around the world from start to finish. Two television monitors allow a close-up view of every move and technique. There are a variety of Chef’s Table dinner offerings from which to choose. Participants can select from different themes such as New Zealand: Kiwi Experience, France: Sundays in Alsace, American Chop House, and a host of seasonal themes! One of the most popular choices at this time of year at the Chef’s Table is Holiday Traditions, featuring traditions from around the world - Cornish hen, smoked salmon, and for dessert, a beautiful Buche de Noel, a yule log and traditional dessert served near Christmas, especially in France. Finish the evening with a house made eggnog that is to die for! The Shalom Chef’s Table is a healthy version of a traditional Jewish holiday celebration, including latkes (potato pancakes) kugel (baked pudding or casserole similar to a pie), chocolate cake, and tastings of a special braided bread, Challah, which is typically eaten on the Sabbath and holidays. One of the most popular meals prepared and served at the Chef’s Table is Italy: A Taste of Umbria. This dinner allows participants to explore truly authentic Italian cuisine, including Sea Bass, and accompanied by regional specialties. Another themed Chef Table’s offering is America by Three’s, where participants will enjoy a trio of American favorites within each course, including filet mignon, pork tenderloin, and Mahi-Mahi.
