Editor From all of us over here at Temecula Valley Vibe Magazine, Happy New Year! 2020 is upon us— gym memberships are being purchased, diets are being started, new hobbies are being explored, and household budgets are being put in place. That’s right, it is New Year’s Resolutions Season! Our hope for this issue is that we are able to give you— our readers—some inspiration and ideas for New Year’s Resolutions You Can Keep. It is easy enough to start working on most resolutions, but it is another thing entirely to keep them going past January 31st. Resolutions can usually be categorized into two broad categories: Health and Wellness, and that is exactly what we based this issue on. The dawn of the new year is the perfect time to take a good long look at your life as it currently stands—and make the decision to do something about the things in your life that do not serve you. In this issue, we will take an in depth look at hearing health, our recent experience with acupuncture and Eastern medicine, and the truth about wine being good for your health. ome people view life as a blank slate—ready to be filled with adventure, laughter, beauty, and love. Like a painter with brush poised in hand over a pure white canvas, the possibilities are as endless as the depths of the creator’s imagination. For the Shelby family of Temecula, the art of design spills over into all aspects of their life together. Just as every antique treasure that they lovingly choose for their picturesque home has a story, so are they creating their own unique story—designing the life of their dreams in a community they love. James and Felicia’s paths first crossed years ago, when they were just fresh-faced teenagers. 17-year-old James, living in Hemet, first laid eyes on his striking future wife through some of their mutual friends. Felicia—just 14 at the time—had been living with her family in Temecula since 1998. Though they immediately noticed one another, it would be years before they would reconnect in a much more meaningful way. A true designer in every sense of the word, young Felicia dreamed of a future filled with gorgeous clothing and decor—with rich colors, intricate patterns and fabrics, and an overall look that was entirely her own. This passion for fashion and design led her to study at the beloved Fashion Institute of Design and Merchandising—known by its acronym “FiDM”—in San Diego. After her time at FiDM, Felicia decided to leave the hustle and bustle of the large seaside city. She felt a calling to move back to her roots—to her hometown of Temecula.

James Shelby has always been a hard worker. After high school, he started at his family’s business, Shelby Auto Glass. Originally from Oceanside, James spent time in Fallbrook before moving with his family to settle down in Hemet. After rekindling the spark they felt years before, James and Felicia reconnected in the Temecula Valley before becoming engaged in 2009, and were married in 2010. The Shelbys have been living in the Temecula Valley as a pair for the past nine and half years—and in the charming Temecula community of Harveston since 2017. With a kind of East Coast charm, the homes in this community are far from cookie cutter. Tree-lined streets, siding on the homes, upper and lower porches, and a beautiful central lake make Harveston the perfect backdrop to the Shelby family’s picturesque day-to-day life. For Felicia, their home in Harveston was love at first sight. “All I needed to see was the outside of the home to know I already loved it,” she adds, “We walked inside and sure enough—I fell even harder. The home was beautiful, but I saw so much potential with what we could do to make it our own.” Their two talented and well-rounded daughters, Skylee and Riley, are both students at Julian Charter School in Temecula. 15-year-old Skylee Jade Marie Shelby is a sophomore. A blend of athleticism and artistic ability, Skylee plays club volleyball at Viper Volleyball on a Nationals 16’s team. When she isn’t on the court, you can find her practicing her moves on her skateboard. With a natural eye for composition, Skylee also enjoys photography and keeping up with the

(#shelbysold). He is also very active in training and speaking on real estate in the area and beyond. His podcast, the “Stay Hungry Show” can be found on iTunes, Stitcher Radio, and YouTube. Follow him on Instagram (@james_shelby) for men’s fashion inspiration, real estate updates, and of course, adorable pictures of him and the three most important females in his life. Felicia has combined her background in beauty, visual merchandising, and interior design to bring her into the Wedding/Event industry. Coordinating, styling, and planning events in Temecula led her to meeting and collaborating with tons of local businesses in the area and the industry. Felicia admits, “…but interior design is my true passion. My biggest, most cherished project is our current home. It was completely remodeled top to bottom. Travel is definitely a huge part of the Shelby family’s life. One of their favorite recent trips as a family was to New York City last December. “It was so much fun and magical,” Felicia remembers, “We went ice skating in Central Park, tried new foods, watched a Broadway play, and saw snow fall in Times Square.” On the quieter side of the spectrum, the family has been spending more and more time out in Montana—which is quickly becoming one of their favorite vacation spots. The slower pace, wide open sky, and surreal scenery make it the perfect place to get away from the stress and speed of everyday life. They even recently bought a property in Hamilton, Montana that they will be transforming into a gorgeous Airbnb with the one-of-a-kind Shelby touch. Though the family has many hobbies that they love doing together—including skateboarding, playing board games, boat rides around the lake, watching the Dallas Cowboys, checking out local vendor marketplaces, going to the movies, and hosting parties—one of their most beloved family pastimes is frequenting the local antique shops. Each outing an adventurous treasure hunt, they never quite know what will be waiting for them around the next dusty shelf. “We collect old books and paintings,” Felicia mentions, “We enjoy interior design and finding hidden and unique treasures for our house—tucked away in thrift stores and antique shops.” Being that James is the resident foodie—especially for breakfast foods—the family will often find themselves at many of Temecula’s culinary hotspots for breakfast and beyond. Some of their favorite local haunts include Nightingale, Havana Kitchen, Swing Inn, Akash Winery, and of course, Naughty Pig for their amazing sandwiches. At the end of the day, the Shelby family knows where their priorities lie. “We try to spend as much time together as a family as possible,” Felicia muses, “However, we try to balance work and family at the same time. It is not always easy, but when you can learn to blend work and play to where there is almost no differentiation between the two—that’s where life really becomes fun and interesting.” Above all, there is a beautiful balance that exists in the Shelby household. Like the gorgeous rooms in their Harveston home in Temecula, balance is achieved by design. Like the art of interior design—when life becomes a dance of color, texture, and pattern—there is adventure around every turn. F

Following in the footsteps of her chic and stylish parents, Riley is just as comfortable in a gold shimmering skirt and perfectly placed black beret as most kids her age would be in jeans and a mismatched T-shirt. Matched with her inherent fashion sense, Riley also loves attending her gymnastics classes with friends at Agility Kids in Temecula. Coming up on 10 years together in the Temecula Valley, the Shelby family have developed a deep love—and quite the presence—in their community. James, now a successful real estate agent, owns the Shelby Sold Real Estate Team

sounds, often having trouble differentiating between softer consonants. “For example,” Teresa explains, “someone with this type of loss may have a hard time deciding if they heard the word ‘face’ or ‘vase’ in a conversation.” The other type of impairment people will encounter is volume loss. This type is exactly as it sounds—the patient has trouble hearing sounds unless they are at a very high decibel level.

It’s 2020, everyone! Over here at Temecula Valley Vibe, we love New Year’s resolutions. Finding ways to improve your health, wellness, and happiness is always a good idea in our book. Make more time for family, take more—or less—pictures, spend less time on social media, travel, and clean eating—all of these resolutions sound great in theory, but how do we keep them going past January 31? For starters, try to focus on small lifestyle changes rather than drastic quick fixes. Sometimes, the best way to make a new habit stick is to make changes gradually. Start with baby steps that you increase over time—pretty soon you will notice changes in yourself you never thought possible. Here are five of our favorite New Year’s resolutions for 2020 that you can actually keep.

Instead of scarfing your meals with your eyes glued to a screen, try to spend at least two meals a day eating your meal in peace—without distractions. If you take the time to pay attention to each bite, savoring the flavors and textures, you will naturally start to slow down. More time spent eating will make sure your stomach has time to let you know when you’ve had enough—and help you avoid overeating.

Practicing a mindset of appreciation and thankfulness can do wonders for your outlook on life. It will shift your perspective from the things that are going wrong in your life, to the things that are going right. Start a journal of positive aspects. Every day write at least one thing that is going well in your life that you are grateful for. Do this daily when you wake up or are about to go to bed. We live in a busy world, there is no doubt about that. Sometimes, especially for the ones you see every day, “hellos” and “goodbyes” can start to fall by the wayside. Getting to the Point: Utilizing Acupuncture as a Treatment for Pain and Disease

he use of acupuncture dates back over 2,500 years. Traditional Chinese Medicine was practiced thousands of years before Western Medicine even came on the scene. Since the 1970’s, acupuncture has become more and more accepted in the US as a legitimate treatment for disease and chronic pain. Its benefits are numerous, and many have found acupuncture to be a successful method of managing their pain and ailments. Traditional Chinese Medicine tells us that there are patterns of energy—“Qi” or “Chi”—that flow through the body. The steady flow of this Qi energy is essential to the health and wellness of the mind and physical body. The energy pathways, called meridians, that run through the body all relate and correspond with different organs and physiological systems. When this energy flow becomes disrupted, this imbalance is responsible for disease and pain that will manifest in the body. Acupuncture involves the placement of sterile, hair-thin needles that are inserted into the skin in strategic areas—corresponding to the areas in the “meridian grid” of the body that correlate to the affected organ or system. Dr. Yue Wang has been practicing Traditional Chinese Medicine for nearly 30 years. Kelly was bit by the modeling bug while she was in her early twenties—a typical age to start a career in print and runway fashion. here is a new head chef in Temecula Wine Country, and he is bringing the international flair to fine dining—along with a brand-new perspective on healthy eating. Executive Chef Anthony Bar joined Meritage Restaurant at Callaway Winery at the end of 2019 and has been working hard to put his own spin on this popular restaurant’s farm-to-table menu. With the vision of a revolving menu filled with delicious seasonal vegetables and locally sourced meat and seafood, Chef Anthony has a passion for showing people that there is more than one way to cook a vegetable. Meritage at Callaway Winery sits atop a vine-covered hill in the heart of wine country—alongside the picturesque Callaway Winery. Offering incredible panoramic views of rolling hills and lush vineyards, the restaurant has an almost greenhouse-type feel to it. With large windows, luscious plants hanging from iron trellises, and graduated dining areas built with the sloping hills, Meritage encourages its guests to enjoy the views, atmosphere, and experience of Temecula Wine Country as they dine. As patrons explore the menu upon arrival, they will immediately notice the incredible diversity of the seasonal selections. Chef Anthony believes in designing his menu according to what is in season at the time—guaranteeing the freshest and healthiest food possible—with absolutely nothing that is frozen or canned. produce you will eat at Meritage comes from their actual on-site greenhouse—carefully curated by Chef Anthony at the start of every season. The few things that cannot be grown in the greenhouse are locally sourced from farms in the area—including the meat and seafood items on the menu. Chef Anthony is truly an artist. He sketches out the composition and layout of every dish before he makes it. “That is really what I like about cooking,” he explains, “I can design the plates—I work with colors and different textures—like an artist chooses colors to put on a canvas. First, I choose the produce I want to work with, and then I can add the ingredients I need in order to get where I want to be with the plating.” And from that, you get the gorgeous natural colors of the season working together to create a dish so visually stunning, it would be almost too beautiful to eat—if it wasn’t so delicious. French-born Anthony has a passion for healthy eating and finding new ways to cook and present vegetables. “There are more ways to cook a vegetable rather than just steaming or blanching it—these methods take away all the flavor,” Anthony continues “I want to show people that vegetables can be really delicious if they are cooked right. For example, in one plate, I can use sunchoke puree, sunchoke chips, and roasted sunchoke. I am using one seasonal vegetable, but I am cooking it in three different ways with different flavors.” He also compares tasting a dish with reading a story. Each component of the dish is a character in the story—remove one piece, and the story ceases to make sense. Experience it all together, and the story unfolds just as the chef designed it. Chef Anthony intends to change peoples’ minds about vegetables, especially children. You won’t find any Kraft Mac n Cheese or Chicken Nuggets on this menu for the kiddos. He encourages parents to expose their children to delicious vegetables early on, to inspire healthier palates at a young age. When we spent the afternoon dining in Meritage’s beautiful dining room, we had our taste buds absolutely dazzled by dishes like a Salade du Jardin, the Yellowtail Catch of the Day, Canard a l’Orange, and Diver Scallops with creamy Butternut Squash Risotto. Every dish to come out of the kitchen was even more beautiful and unique than the last—truly a breathtakingly visual culinary adventure. With every bite, we were able to taste the quality ingredients that were grown less than 100 yards from where we were sitting. And of course, Callaway’s incredible wines were there to pair with each dish—working together with the flavors of each plate to bring out new and unexpected aspects of each. As we sipped our wine and looked out over the gorgeous scenery, the sun began to set over the sun-kissed vines. With a perfect view of the horizon out the large windows in front of us, we could not imagine a better experience of life in Temecula Wine Country. F

EACH STOP ON THE TRAIL PAIRED THEIR SELECTION OF THREE WINES WITH A DELICIOUS APPETIZER-SIZED DISH, MEANT TO BRING OUT THE MANY INTRICATE FLAVORS OF THEIR CHOSEN VARIETALS.

or those living in the Temecula Valley, it can be hard to get to every single winery in wine country. And as much as we would like to be able to spend all of our time among the vines, busy schedules and lives make that impossible. This event is the perfect time to hit every single winery along the De Portola Trail. Take it from us, the De Portola Wine Trail Harvest Festival is a must for anyone who loves wine—just be sure to take an Uber or Lyft there and snag a couple seats on the Grapeline Wine Tour to make your adventures in wine country worry-free and—most importantly— safe for you and everyone else. Our first stop on the trail was the incredible Fazelli Cellars, where we sampled their selections while enjoying views from their upper patio that can only be described as picturesque. After leaving Fazelli, we had a hop, skip, and a jump across the way to the beautiful Somerset Winery. We relished the rays of the sun while we sipped in their beautiful outdoor grounds. Robert Renzoni was next on our wine-soaked adventure— where we had a taste of one of their newer vintages, straight from the barrel! It was at Gershon Bachus Vintners where we sampled one of our

favorite wines of the day—their 2014 Hesperus Grenache. As we headed farther up the trail, we started to hear the sweet sounds of live music coming up over the vines of the beautiful Leoness Winery. While their guests rocked out, servers poured their three delicious selected wines out on their oneof-a-kind patio overlooking the vineyard. At the top of the trail, we visited the memorable Masia de la Vinya Winery— with more incredible Instagram-worthy lookout points than you can

hope for. After taking in the views from their patio, we headed back down to the trail to Cougar Winery. With a special “behind the barrels” look at the operation, we enjoyed our Italian-inspired wine alongside a tasty homemade mini meatball sub from their famous deli. Cougar’s next-door neighbor, Frangipani (whose name is another word for the tropical Plumeria), offered their best wines to be enjoyed either inside their tasting room or out on the patio where we were serenaded by the pleasing tones of a live acoustic guitar. As our stomachs grew fuller by the moment, and giggles started to escape often from our wine-stained lips, we knew we still had two winery stops left on our De Portola Wine Trail adventure. As the sun started its descent towards the horizon, we continued our journey back down the trail toward where we began. Before long, the stunning Danza del Sol Winery appeared among the sun-kissed vines. As we enjoyed their three selected wines, we were able to experience their

upper esplanade—usually reserved for their events—that we had never seen before. The grand finale of a nearperfect day was the glorious caves of Oak Mountain Winery. With the only true wine caves in Southern California, Oak Mountain quickly became one of our favorite stops of the day. Combined with the novelty of sipping wine in a cave, the glorious views of the De Portola Trail, and their incredibly tasty wine—we were hooked. And with that, we had another Temecula Wine Country membership on our hands. With full bellies, smiles on our faces, and a new wine membership to enjoy, our escapade in wine country at last had come to an end. Already counting down the days until next November, we rode off into the sunset with the promise that we would soon be back to the unforgettable De Portola Wine Trail. F

B

eldon Fields purchased the land that would someday become Briar Rose Winery back in the 1970’s. One of the original “Imagineers” that helped Walt to make his Disneyland a reality in the 1950’s, Beldon bought the piece of land in Temecula’s young wine country with the hopes of creating a special, magical place for his beloved wife. He got to work designing and constructing a little sanctuary on the hill, right out of the pages of a fairytale. With a life-sized replica of the Grimm Brother’s Snow White’s cottage, a beautiful rose garden, and magnificent views of the countryside, Beldon’s attention to detail would have made Walt proud. Years later, in the late 1980’s, the property’s love-filled history would change hands again—this time, it was purchased by Les Linkogle as a gift for his beautiful bride, Dorian—and promised not to change a thing about the Disney-inspired, storybook cottages that Beldon had designed. By the mid 90’s, Les realized that he was sitting on the perfect soil and climate to grow grapes. After the first vines were planted, winemaker Les began selling his luscious grapes to neighboring wineries. Once the wines created with the Linkogle grapes began turning heads and winning awards, Les decided to start making his own wines—and with that, Briar Rose was officially born in 2007. Known as a boutique winery, Briar Rose offers delectable handcrafted artisan wines in a seated tasting setting--unique to many of the bar tastings typical of Temecula Wine Country. For this reason, Briar Rose is reservation only (though they do accept same-day reservations). Beloved by Disney-lovers and wine-lovers alike, people come from near and far to experience the magic and enchantment of Briar Rose Winery. HERB ROAS TED C H I C KE N A N D ROO T VEG ETABLE S ¾ c. olive oil 2 tbsp. fresh rosemary, minced or 2 tsp. dried 2 tbsp. fresh thyme, minced or 2 tsp. dried 2 tbsp. fresh sage, minced or 2 tsp. dried 6 chicken thighs, trimmed of extra fat and skin 1 bulb of fennel ½ lb. brussel sprouts 1 medium onion 1 bulb garlic 1 medium sweet potato 1 bunch of tri-color carrots 1 tbsp. salt, or to taste 1 tbsp. pepper, or to taste 1 8.45 oz. bottle of Temecula Olive Oil Company California Balsamico Bianco Oo La Pomegranate Preheat oven to roast at 400° if your oven has the option, and if not bake at 400°. Place chicken thighs in a large zip

lock bag, add ¼ c. of olive oil and ½ of each herb (1tbsp): rosemary, thyme, and sage. Seal well, and move chicken around bag to distribute herbs evenly. Set aside while preparing vegetables. Cut green top off of fennel bulb as well as root end. Take outer layers off and discard as they tend to be tough. Cut in

half lengthwise and then cut into 1” pieces. Cut off root end of Brussel sprouts and discard any loose leaves. Leave smaller sprouts whole and cut larger in half lengthwise. Cut onion to 1” pieces. Separate each clove of garlic from bulb, smash, and peel. Peel sweet potato, and cube to 1” pieces. Cut off green ends of carrots and wash thoroughly. Cut into 1” pieces. The goal is to get them all to be about the same size for even cooking. In another large zip lock bag, add remaining ½ c. olive oil along with remaining 1 tbsp. of each herb. Add prepared vegetables. Seal bag and move around vegetables until evenly coated with herbs and olive oil. Empty contents onto large sheet pan and spread evenly into one layer being careful not to crowd them or they will

steam rather than roast. Sprinkle with ½ of the salt and pepper (1 ½ tsp). Place in oven and roast for about 15 min. to give them a head start. After the 15 min., carefully take out the sheet pan and place chicken thighs on top of vegetables, skin side up. Sprinkle just the thighs with the remaining 1 ½ tsp. of the salt and pepper and return to oven to finish cooking together for another 30-40 min or until chicken registers an internal temperature of 165°. For a vegetarian option, cook the chicken on a separate sheet pan. Toss vegetables a few times throughout cooking time. While chicken and vegetables roast, pour vinegar into small saucepan and bring to a boil. Turn down to simmer and let simmer slowly for about 7-10 min. or until slightly thickened— stirring every so often, making sure not to burn. Remove from heat and let cool, as it thickens into a glaze. Turn oven to broil for the last couple of minutes to turn the chicken and vegetables a nice golden-brown color.
