New events, facilities sure to delight all 2011

By Emme Nelson Baxter For The Tennessean

The Iroquois Steeplechase would never have become the enduring rite of spring it is for Nashvillians without a team of visionaries tweaking and refining the event each year to top the prior one. Sometimes the refinements target boxholders. Sometimes the changes are to the course itself. But this year, new enhancements and returning features are for all those attending the event, from those in the box seats to infield revelers. These new and recently added creature comforts at the 72nd iteration of the Iroquois Steeplechase promise something for pretty much every

If you need to powder your nose, be sure to pick up a VIP Station wristband for $20. This will afford you access to facilities replete with flush toilets, running water and full-length mirrors to check your look. The wristbands will be sold on race day at the Comfort Stations. Just be sure to bring cash. Before leaving home, text TNSteeplechase to 86974 to receive updates on ticket info and availability, race events, exclusive contests and traffic alerts. This adorable event, which made its debut last year, involves jockeys ages 3 to 10 and occurs between the third and fourth races. Competitors, each with a parent, will line up at the track finish line in front of the bell tower and will be divided into three race groups based on age. The Iroquois Steeplechase will provide stick horses, and winners will receive a prize. To register, call 1-800-6194802. If you are a foodie, you might be tempted to pack your own hamper, but you could get away with leaving your picnic basket at home. Maddie Wright is the 2013 Steeplechase child ambassador.

Child ambassador beating odds 2011

By Emme Nelson Baxter For The Tennessean

Maddie Wright spent the first three months of her life in and out of surgeries, hooked to tubes and equipment in the neonatal intensive care unit where she fiercely battled sicknesses. Fortunately, that NICU was at the Monroe Carell Jr. Children’s Hospital at Vanderbilt. Today, she looks like a typical 5year-old, with a bow in her pretty brown hair and a contagious smile. The kindergartner at Barfield Elementary in Murfreesboro is this year’s Child Ambassador to the Iroquois Steeplechase. The Iroquois supports the vital work of Monroe Carell Jr. Children’s Hospital and has raised more than $9 million over the past 20 years. Maddie’s story began before birth. About 18 weeks into the pregnancy, Leanne Wright learned her child would be born with cystic fibrosis. Since that time, Vanderbilt essentially has become the family’s second

a

home. Maddie’s health is good overall at this point, although the past eight months have brought sinus and lung infections, Wright says. “We spend at least two months each year at Vanderbilt, and we’ve grown to love and cherish the cystic fibrosis staff and the Children’s Hospital staff,” she says. “The nurses have watched Maddie grow each year. We see them more than most of our family!” A vibrant child, Maddie loves painting pottery, visiting the library, gymnastics, Sunday School — and riding horses, of course. She also loves her Nana’s meatballs. She aspires to be a veterinarian someday. Maddie puts it this way: “Children’s Hospital is like being home, just not at your house. It is where you get better, and when you get to leave and go home, you’re like a brand-new self.” Constructed as a freestanding hospital in 2004, Monroe Carell Jr. Children’s Hospital at Vanderbilt is

nationally recognized, not only as one of the nation’s premier providers of pediatric health care services but also as a top-tier teaching and research facility. The hospital was constructed and equipped specifically for children. The care is family-centered because the staff recognizes that family support is a critical component of positive outcomes. The honorary co-chair of this year’s Steeplechase is Dr. Meg Rush, who has enjoyed a long career at Vanderbilt University Medical Center. In addition to conducting research during her 23 years with Vanderbilt, Rush led its Neonatal Fellowship Program for 10 years and served as chief of staff of the Monroe Carell Jr. Children’s Hospital and as acting chair of the pediatrics department. Her research focused on the role of Vitamin A in lung development, as well as lung injury and repair. She has been highly involved in health policy and served as co-chair of Vanderbilt University’s Medical Ethics Committee for seven years.

Artist evokes equine energy By Emme Nelson Baxter For The Tennessean

Years of foxhunting have given artist Lee Baskerville a priceless perspective from the saddle that would be impossible to convey otherwise. He doesn’t just paint horses; he understands them. Baskerville’s art sports a certain verisimilitude because he paints scenes from a life he knows. He understands equine tension and repose and is able to translate it from life to twodimensional Belgian linen canvas. Baskerville’s oil painting “Kinetic Energy” is the official image of 2013 Iroquois Steeplechase. Dwight Hall, chairman of the Iroquois Steeplechase Race Committee, was immediately drawn to Baskerville’s talent. “He used just enough detail

Hon. co-chair: Monty McInturff2011 Also serving as honorary co-chair this year is track veterinarian Monty McInturff. His experience with the Iroquois Steeplechase dates back to 1982, when the soon-to-be Auburn University College of Veterinary Medicine student assisted then-track veternarian Dr. Dewitt Owen during the race. McInturff has been a part of the Iroquois since and became the official track veterinarian in 1991. In that role, McInturff conducts pre-race veterinary examinations and remains on call on-site to administer emergency care.

Step one in planning your perfect picnic for the Iroquois Steeplechase: Turn off Food Network, for crying out loud. Go ahead. Don’t be afraid. Bid “adieu” to Giada. Say “ta ta!” to Ina and give a big “bye y’all” to Paula. Now, turn your attention to the real purveyors of local cuisine. Nashville’s own Danielle Kates, Kristen Winston and Emily Frith have catered countless upscale affairs over the years and packed many a box lunch for Steeplechases. Danielle Kates, owner of dKates, provides this wise counsel for Steeplechase hostesses and tailgaters. “You can’t go wrong,” she says, “with fried chicken and openface tomato sandwiches.” She recommends supplementing those choices with a ham-and-chive cheese biscuit, a roasted red potato Dijon salad and perhaps a bright slaw made with shredded broccoli and apples instead of cabbage. Add deviled eggs to the menu, using the traditional recipe and a second version that incorporates pimento cheese into the stuffing and bacon jam on top. A brownie with chocolate ganache or even banana pudding can round out the repast. “Make mint simple syrup, bring your best bottle of Woodford, silver julep cups and ice from

Sonic to make up some mean mint juleps,” Kates added. If people get the munchies in the late afternoon, have a stash of Stilton, crackers and strawberries at hand. Kristen Winston, of the eponymous catering company, has a simple Steeplechase mantra: “cool, fresh and ready to eat.” Her favorite picnic menu, components of which should be neatly tucked into a cooler with ice packs, is cold sliced tenderloin with herb oil, shaved Parmesan and arugula pesto pasta with grilled veggies, fresh fruit and a crusty baguette or yeast rolls. For dessert, try homemade cookies or lemon squares. “Chocolate is not as forgiving in the heat!” Winston reminds. Emily Frith’s suggestions for Steeplechase vittles begin with a thermos of a delicious cold soup, such as a vichyssoise or curried squash served in small plastic cups. The owner of The Corner Market Catering Co. notes that muffaletta sandwiches, pasta and rice salads and small tomato tarts travel well. She advises leaving at home green salads, which will wilt; shrimp in their shells, which are messy; and any dessert with icing that could melt. All of these caterers will take box orders for the Steeplechase, so try them for the ultimate local flavor.

the food CHICKEN BRINE

BUTTERMILK FRIED CHICKEN Makes 4 to 6 servings

1. Cut each chicken into 10 pieces: 2 legs, 2 thighs, 4 breast quarters and 2 wings. Pour the brine into a container large enough to hold the chicken pieces, add the chicken and refrigerate 12 hours (no longer, or the chicken may become too salty). 2. Remove the chicken from the brine and rinse under cold water, removing any herbs or spices sticking to the skin. Pat dry with paper towels or let air-dry. Let rest at room temperature for 11⁄2 hours, or until it comes to room temperature. 3. If you have two large pots (about 6 inches deep) and a lot of oil, you can cook the dark and white meat at the same time. If not, cook the dark meat first, then turn up the heat and cook the white meat. No matter what size pot you have, the oil should not come more than onethird of the way up the sides of the pot. Fill the pot with at least 2 inches of peanut oil and heat to 320 degrees. Set a cooling rack over a baking sheet. Line a second baking sheet with parchment paper. 4. Meanwhile, combine all the coat-

Two 21⁄2- to 3-pound chickens Chicken Brine (recipe follows), cold FOR DREDGING AND FRYING: Peanut or canola oil 1 quart buttermilk Kosher salt and freshly ground black pepper COATING: 6 cups all-purpose flour 1 ⁄4 cup garlic powder 1 ⁄4 cup onion powder 1 tablespoon plus 1 teaspoon paprika 1 tablespoon plus 1 teaspoon cayenne 1 tablespoon plus 1 teaspoon kosher salt 1 teaspoon freshly ground black pepper Ground fleur de sel or fine sea salt Rosemary and thyme sprigs for garnish

ing ingredients and divide evenly into two large bowls. Pour the buttermilk into a third bowl and season with salt and pepper. Set up a dipping station: the chicken pieces, one bowl of coating, the bowl of buttermilk, the second bowl of coating, and the parchment-lined baking sheet. 5. Just before frying, dip the chicken thighs into the first bowl of coating, turning to coat and patting off the excess. Dip them into the buttermilk, allowing the excess to run back into the bowl. Dip them in the second bowl of coating. Transfer to the parchment-lined pan. 6. Carefully lower the thighs into the hot oil. Adjust the heat as necessary to return the oil to the proper temperature. Fry for 2 minutes, then carefully move the chicken pieces around in the oil and continue to fry, monitoring the oil temperature and turning the pieces as necessary for even cooking, for 11 to 12 minutes, until the chicken is a deep golden brown, cooked through and very crisp. Meanwhile, coat the chicken

drumsticks and transfer to the parchment-lined baking sheet. 7. Transfer the cooked thighs to the cooling rack skin-side-up and let rest while you fry the remaining chicken. Make sure that the oil is at the correct temperature, and cook the chicken drumsticks. When the drumsticks are done, lean them meat-sideup against the thighs to drain, then sprinkle the chicken with fine sea salt. 8. Heat the oil to 340 degrees. Coat the chicken breasts and wings. Carefully lower the chicken breasts into the hot oil and fry for 7 minutes, or until golden brown, cooked through and crisp. Transfer to the rack, sprinkle with salt, and turn skin-side-up. Cook the wings for 6 minutes, or until golden brown and cooked through. Transfer the wings to the rack and turn off the heat. 9. Arrange the chicken on a serving platter. Add the herb sprigs to the oil (which will still be hot) and let them crisp for a few seconds, then arrange them over the chicken.

Makes 2 gallons

5 lemons, halved 12 bay leaves 1 bunch (4 ounces) flat-leaf parsley 1 bunch (1 ounce) thyme 1 ⁄2 cup clover honey 1 head garlic, halved through the equator 1 ⁄4 cup black peppercorns 2 cups (10 ounces) Diamond Crystal kosher salt 2 gallons water

Combine all the ingredients in a large pot, cover and bring to a boil. Boil for 1 minute, stirring to dissolve the salt. Remove from the heat and cool completely, then chill before using. The brine can be refrigerated for up to 3 days. Recipes from “Ad Hoc at Home” by Thomas Keller (Artisan 2009).

A scene captured in sporting art, the spectacle is as much universal as it is synonymous with the Iroquois Steeplechase. A hunter on horseback — clad in hunting scarlets — trots confidently down the homestretch of the Iroquois track surrounded by a large pack of exuberant hounds. It is the Parade of the Hounds, and it’s one of the most famous parts of the Iroquois Steeplechase. For the second consecutive year, the Longreen Foxhounds — a pack originating in Memphis — will capture the attention of many as they show off their best sporting strut. The Longreen Foxhounds was established in 1957 by Bart Mueller. They maintain a pack of 25 to 30 Penn-Marydel hounds, a breed named for the area in which they FUN FACT were developed — Schooling: Preparing where Pennsylvafor a steeplechase race nia, Maryland and by having the horse Delaware come practice jumping over together. The obstacles as part of hounds’ lineage goes the training regimen. back to hounds hunted by President George Washington and given as a gift from the Marquis de Lafayette after the American Revolution. Today, the Longreen Foxhounds hunting territory encompasses the northwestern quadrant of Mississippi. While the hounds’ usual outings involve their favorite activity, hunting, today’s event is purely a time to show off for the Nashville crowd. By tradition, the Parade of the Hounds occurs prior to the final race of the day, the Calvin Houghland Iroquois (Gr. I) Hurdle Stakes. As in years past, about 15 foxhounds will make the trip down the final stretch of the steeplechase course. The audience is asked to hold its applause until the end of the parade so as not to overexcite the hounds.

Go ahead, guys, and outdo James Bond. Try the latest aviator from Ray-Ban, $160 at Nordstrom at The Mall at Green Hills.

Proper shades, footwear are essential gear to rise above the hoi polloi and look like the ultimate jet-setter or socialite. Nothing reads cool chic like a pair of sharp glasses. Think Bond, James Bond ... or Hepburn, Audrey. Second, half of the action at the Steeplechase occurs off the field. With sunglasses, your people-watching can be unabashed as you gawk behind the clandestine cover of dark lenses. No one will know you are really staring at a zany hat, a Spanx-less midsection or a rogue toupee flapping in the breeze unbeknownst to the owner. Moreover, your hostess will never notice that you are ogling the sweet repast in the neighboring box instead of the more humble offerings in your own. You’ll just look aloof behind your Oakleys. Third, if you happen to become over-served with mimosas, mint juleps or Jack and Coke, then the glasses might lend more of an air of sobriety than your naked red and wa-

If you think Steeplechase fashion is all about hats and neckties, you’ve got it all wrong. It’s about the whole giddyup. The goal is to attain a look of natural elegance. That said, your entire ensemble from tip to toe should be taken into consideration when dressing for Nashville’s annual rite of spring. Everyone knows that sundresses are de rigueur for the ladies and loud pants and seersucker are apropos for the gents. So let’s focus on two key elements that the well-dressed Steeplechaser must not leave home without: sunglasses and proper footwear. Sunglasses are essential, regardless of weather. Of course, if the sky is painted a brilliant azure on May 11, then remembering to bring your Ray-Bans will be a nobrainer. But why worry about donning this accessory if it’s cloudy? Three reasons come to mind. First, this is your day

The dilemma: Must a lady wear heels that nattily complement her outfit yet risk ruination? Or should she opt for safe and comfy flats? The best advice is to go with wedges and platforms as they can handle the grass a bit better. Hunter boots are always a safe bet, rain or shine. And everyone will think you are quite the equestrian yourself. The men, as usual, have it easier. For those willing to splurge, a nice pair of Gucci loafers will send the right message. If the pocketbook is a little more humble, just slip into your leather penny loafers, Sperry Topsiders or even Rainbow flip-flops.

Fun facts about the big race

This year marks the 72nd running of the Iroquois Steeplechase. The first steeplechase in the U.S. was run in 1834. Often referred to as Nashville’s rite of spring, the Iroquois is Tennessee’s most celebrated spectacle of horses, hats and hounds. The total purses, bonuses and awards of $400,000 for the race day make the Iroquois Steeplechase one of the richest events on the National Steeplechase Association spring circuit. With a purse of $35,000, the Bright Hour Amateur Hurdle Race is one of the richest amateur steeplechase races in the U.S. When Iroquois, the namesake of the Nashville race, became the first American-bred winner of the English Derby in 1881, Wall Street closed temporarily for a celebration. The list of Iroquois winners includes the greatest steeplechase horses in America. Five Eclipse Award winners — Flatterer, Lonesome Glory, Correggio, All Gong and Good Night Shirt — have

won the Iroquois. Several others have competed in the race. The Iroquois Steeplechase grounds were constructed in 1936 as part of a parks improvement project of the Works Progress Administration. The grounds for the Iroquois have a year-round irrigation system. Even under threatening weather conditions, including the Nashville Flood of 2010, the Iroquois has run continuously since 1941, taking only one year off during World War II.
