Chardonnay
is a green-skinned grape variety used in the production of
white wine
The variety originated in the Burgundy wine region of eastern France, but is now grown wherever wine is produced, from England to New Zealand. For new and developing wine regions, growing Chardonnay is seen as a ‘rite of passage’ and an easy entry into the international wine market. The Chardonnay grape itself is neutral, with many of the flavors commonly associated with the wine being derived from such influences as terroir and oak. It is vinified in many different styles, from the lean, crisply mineral wines of Chablis, France, to New World wines with oak and tropical fruit flavors. In cool climates
(such as Chablis and the Carneros AVA of California), Chardonnay wine tends to be medium to light body with noticeable acidity and flavors of green plum, apple, and pear. In warmer locations (such as the Adelaide Hills and Mornington Peninsula in Australia and Gisborne and Marlborough region of New Zealand), the flavors become more citrus, peach, and melon, while in very warm locations (such as the Central Coast AVA of California), more fig and tropical fruit notes such as banana and mango come out. Wines that have gone through malolactic fermentation tend to have softer acidity and fruit flavors with buttery mouthfeel and hazelnut notes.

Chardonnay is an important component of many sparkling wines around the world, including Champagne and Franciacorta in Italy. For much of its history, a connection was assumed between Chardonnay and Pinot noir or Pinot blanc. In addition to being found in the same region of France for centuries, ampelographers noted that the leaves of these plants have near-identical shape and structure. Chardonnay has a wide-ranging reputation for relative ease of cultivation and ability to adapt to different conditions. The grape is very “malleable”, in that it reflects and takes on the impression of its terroir and winemaker. It is a highly vigorous vine, with extensive leaf cover which can inhibit the energy and nutrient uptake of its grape clusters. Vineyard managers counteract this with aggressive pruning and canopy management. When Chardonnay vines are planted densely, they are forced to compete for resources and funnel energy into their grape clusters. In certain conditions, the vines can be very high-yielding, but the wine produced from such vines suffers a drop in quality if yields go much beyond 80 hl/ha (4.5 tons per acre). Producers of premium Chardonnay limit yields to less than half this amount. Sparkling wine producers tend not to focus as much on limiting yields, since concentrated flavors are not as important as the wine’s finesse. Harvesting time is crucial to winemaking, with the grape rapidly losing acidity as soon as it ripens. Some viticultural hazards include the risk of damage from springtime frost, as Chardonnay is an early-budding vine – usually a week after Pinot noir.

Due to some ampelographical similarities, Pinot blanc and Chardonnay were often mistaken for each other and even today share many of the same synonyms. The grape vines, leaves, and clusters look identical at first glance, but some subtle differences are seen. The most visible of these can be observed as the grapes are ripening, with Chardonnay grapes taking on a more golden-green color than Pinot blanc grapes.
were blended in winemaking. The Italian government did not dispatch researchers to try to distinguish the two vines until 1978. A similar situation occurred in France, with the two vines being commonly confused until the mid-19th century, when ampelographers began combing through the vineyards of Chablis and Burgundy, identifying the true Chardonnay and weeding out the Pinot blanc.
On closer inspection, the grapevine shows slight differences in the texture and length of the hairs on the vine’s shoot, and the veins of a Chardonnay leaf are “naked” near the petiolar sinus – the open area where the leaf connects to the stem is delineated by veins at the edge. Cabernet Sauvignon is one of the few other Vitis vinifera grape vines to share this characteristic. This confusion between Pinot blanc and Chardonnay was very pervasive throughout northern Italy, where the two vines grew interspersed in the vineyard and

Heavily oak influenced Chardonnays do not pair well with more delicate fish and seafood dish. Instead, those wines tend to go better with smoked fish, spicy southeast Asian cuisine, garlic and guacamole dips.

The regional influences of Chardonnay can help it pair with different food styles. Chardonnays from Washington, which is characterized by maintaining more acidity, tend to pair well with tomato-based dishes and items featuring sweet onions. Older, more mellow Chardonnays are often paired with more “earthy” dishes like mushroom soup and aged cheese. Is Chardonnay a dry or sweet wine? Dry
Can you get red wine in Chardonnay?
The short answer is that no, there isn’t such thing as a red Chardonnay wine. Chardonnay is a type of white grape that doesn’t exist in a red version.
How do you drink Chardonnay?
Fuller-bodied whites like oaked Chardonnay are best served between 50-60 degrees to bring out their rich textures and creamy, buttery flavors.
Why is Chardonnay so popular?
The chardonnay grape itself contributes to the wine’s popularity. Made from greenskinned grapes, Chardonnay is a relatively “low-maintenance” vine that adapts well to a variety of climates, resulting in fairly high yields worldwide. These high yields translate into millions of bottles of Chardonnay wines.
Is Chardonnay similar to Champagne?

MOJITO A is a traditional Cuban cocktail. The cocktail often consists of five ingredients: white rum, sugar (traditionally sugar cane juice), lime juice, soda water, and mint. Its combination of sweetness, citrus, and herbaceous mint flavors is intended to complement the rum.

When preparing a mojito, fresh lime juice is added to sugar (or to simple syrup) and mint leaves. The mixture is then gently mashed with a muddler. The mint leaves should only be bruised to release the essential oils and should not be shredded. Then rum is added and the mixture is briefly stirred to dissolve the sugar and to lift the mint leaves up from the bottom for better presentation. Finally, the drink is topped with crushed ice and sparkling soda water. Mint leaves and lime wedges are used to garnish the glass. The mojito is one of the most famous rum-based highballs. There are several versions of the mojito.
HISTORY
Havana, Cuba, is the birthplace of the mojito. although its exact origin is the subject of debate. It was known that the local South American Indians had remedies for various tropical illnesses, so a small boarding party went ashore on Cuba and came back with ingredients for an effective medicine. The ingredients were aguardiente de caña (translated as “burning water”, a crude form of rum made from sugar cane) mixed with local tropical ingredients: lime, sugarcane juice, and mint. Lime juice on its own would have significantly prevented scurvy and dysentery, and tafia/rum was soon added as it became widely available to the British (ca. 1650).

Some historians contend that African slaves who worked in the Cuban sugar cane fields during the 19th century were instrumental in the cocktail’s origin. There are several theories behind the origin of the name mojito: one such theory holds that name relates to mojo, a Cuban seasoning made from lime and used to flavor dishes. Another theory is that the name Mojito is simply a derivative of mojadito (Spanish for “a little wet”), the diminutive of mojado (“wet”). Many bars today in Havana use lemon juice rather than fresh lime. The “Rose Mojito,” which is a Mojito variation containing the rose-flavored spirit, Lanique, was first created at the Albert’s Schloss bar in Manchester, England. A Mojito without alcohol is called a “Virgin Mojito” or “Nojito”. The Cojito adds coconut flavor, often through the use of coconut-flavored rum. What kind of mint goes in mojitos?
Fresh Mint, save the most beautiful sprigs for garnishing your mojitos. Spearmint is a favorite mint variety for mojitos. As a plus, it’s the easiest type of mint to find at grocery stores (if you see ambiguously labeled “mint,” it’s probably spearmint). Spearmint is sweeter and more mellow than peppermint.

could overtake vodka as America’s drink of choice The distillate with denomination of origin in Jalisco, Mexico had an exponential growth in 2021, establishing itself as the second most consumed alcoholic beverage in North America.

The taste for tequila in the United States is at one of its highest points, since throughout 2021 it became the second best-selling alcoholic beverage in the country, and if it maintains the sustained growth of recent months , could displace vodka , which is the most popular liquor. According to the Distilled Spirits Council of the United States, agave distillate was, along with mezcal, the second-fastest-growing category of spirits last year, behind only mixed drinks, placing it first . on top of the whiskey and cognac . Both tequila and mezcal increased sales 30.1% compared to the previous year , growth that accounted for about $5.2 billion in sales, according to the Distilled Spirits Council. The more than 5 billion dollars in sales represent the second largest amount for an alcoholic beverage , only behind vodka, the next rival for agave distillate, which it will seek to dethrone throughout 2022, although the work looks complicated. Despite this sustained growth, its sale in restaurants and bars is still far from equaling that of vodka, since according to a report presented by the CNBC network , there is a difference of 52 million cases purchased by the industry compared to the vodka . This item is headed by vodka with more than 78 million cases purchased during 2021 , more than double that of the second positioned, premixed cocktails. Tequila and mezcal sold nearly 30 million cases, according to data presented by Julian Cox , executive director of beverages at corporate MGM Resorts .

THE ORIGINS
The phrase “to toast” originates from the literal action of adding a piece of toasted bread to your drink. The quality of the wine was so poor that in the 16/17th century it was common practice to add a bit of spiced toast to the wine. A toast was originally only offered to women, from the assembled men who raised their glasses to ‘the toast of the town.’ By the 18th century the term morphed into that of a person being honoured by the toast, rather than the piece of bread. The term cheers comes from chiere, the old French word, meaning face or head. By the late 17th century it was used as a form of encouragement and shortened from of the phrase, ‘have good cheer.’ Today, it is a symbolic act of wishing good health and good times to those around you.
