Pinot noir is a red wine grape variety of the species Vitis vinifera. The name may also refer to wines created predominantly from Pinot noir grapes. The name is derived from the French words for pine and black. The word pine alludes to the grape variety having tightly clustered, pine cone-shaped bunches of fruit. Pinot noir grapes are grown around the world, mostly in the cooler climates, and the grape is chiefly associated with the Burgundy region of France. Pinot noir is now used to make red wines around the world, as well as Champagne, sparkling white wines such as the Italian Franciacorta, and English sparkling wines.
Regions that have gained a reputation for red Pinot noir wines include the Willamette Valley of Oregon; the Carneros, Central Coast, Sonoma Coast, and Russian River AVAs of California; the Elgin and Walker Bay wine regions of South Africa; the Mornington Peninsula, Adelaide Hills, Great Southern, Tasmania, and Yarra Valley in Australia; and the Central Otago, Martinborough, and Marlborough wine regions of New Zealand. Pinot noir is the most-planted varietal (38%) used in sparkling wine production in Champagne and other wine regions. Pinot noir is a difficult variety to cultivate and transform into wine. The grape’s tendency to produce tightly packed clusters makes it susceptible to several viticultural hazards involving rot that require diligent canopy management. The thin skins and low levels of phenolic compounds lends pinot to producing mostly lightly colored, medium-bodied and low-tannin wines that can often go through phases of uneven and unpredictable aging. When young, wines made from Pinot noir tend to have red fruit aromas of cherries, raspberries, and strawberries. As the wine ages pinot has the potential to develop more vegetal and “barnyard” aromas that can contribute to the complexity of the wine. TEQUILAANDSPIRITS.COM | 13

The leaves of Pinot noir are generally smaller than those of Cabernet Sauvignon or Syrah. The vine is typically less vigorous than either of these varieties. The grape cluster is small and conicocylindrical; shaped like a pine cone. Some viticultural historians believe this shape similarity may have given rise to the name. In the vineyard, Pinot noir is sensitive to wind and frost, cropping levels (it must be low yielding for production of quality wines), soil types and pruning techniques. In the winery it is sensitive to fermentation methods and yeast strains, and is highly reflective of its terroir with different regions producing very different wines. Its thin skin makes it susceptible to bunch rot and similar fungal diseases. The vines themselves are susceptible to powdery mildew, especially in Burgundy infection by leaf roll, and fanleaf viruses causes significant vine health problems. These complications have given the grape a reputation for being difficult to grow: Jancis Robinson calls pinot a “minx of a vine” and André Tchelistcheff declared that “God made cabernet sauvignon whereas the devil made Pinot noir.” It is much less tolerant of harsh vineyard conditions than the likes of cabernet sauvignon, syrah, merlot or grenache. However, Pinot noir wines are among the most popular in the world.

The tremendously broad range of bouquets, flavors, textures and impressions that Pinot noir can produce sometimes confuses tasters. Broadly, the wines tend to be of light to medium body with an aroma reminiscent of black and/or red cherry, raspberry and to a lesser extent currant and many other fine small red and black berry fruits. Traditional red Burgundy is famous for its savory fleshiness and “farmyard” aromas (these latter sometimes associated with thiol and other reductive characters), but changing fashions, modern winemaking techniques, and new easier-to-grow clones have favored a lighter, more fruit-prominent, cleaner style. The wine’s color when young is often compared to that of garnet, frequently being much lighter than that of other red wines. This is entirely natural and not a winemaking fault as Pinot noir has a lower skin anthocyanin (coloring matter) content than most other 16 | TEQUILA & SPIRITS MAGAZINE
classical red / black varieties. Callistephin, the 3-O-glucoside of pelargonidin, an orange colored anthocyanidin, is also found in the berry skins of Pinot noir grapes. Pinot noir is almost certainly a very ancient variety that may be only one or two generations removed from wild, Vitis sylvestris, vines. Its origins are nevertheless unclear: In De re rustica, Columella describes a grape variety similar to Pinot noir in Burgundy during the 1st century CE; however, vines have grown wild as far north as Belgium in the days before phylloxera, and it is possible that pinot represents a direct domestication of (hermaphrodite-flowered) Vitis sylvestris. Pinot gris is a pinot color sport (and can arise by mutation of Pinot noir or Pinot blanc), presumably representing a somatic mutation in either the VvMYBA1 or VvMYBA2 genes that control grape berry color.
Pinot blanc is a further mutation and can either naturally arise from or give rise to Pinot gris or Pinot noir; the mutation–reversion path is multi-directional therefore. The general DNA profiles of both Pinot gris and blanc are identical to Pinot noir; and other Pinots, Pinot moure and Pinot teinturier, are also genetically similarly close. Almost any given Pinot (of whatever berry color) can occur as a complete mutation or as a chimera of almost any other pinot. As such, suggestions that Pinot noir is the fundamental and original form of the Pinots are both misleading and highly tendentious. Indeed, if anything, Pinot blanc may be the original human-selected form of Pinot, although given the genetic variability of this longstanding genetic line, thinking of Pinot as a familial cluster of grapes sharing a fundamental and common genetic core is almost certainly nearest the truth. It is this core around which the sub-varietally identifying color variations (blanc, rouge, noir, gris, rose, violet, tenteurier, moure, etc.) occur, along with the more striking chimeric
morphological mutation that is Pinot Meunier, and the interesting further mutations of this variety as Pinot Meunier gris and as the nonhairy mutation which the Germans classify as ‘Samtrot’ (effectively ‘Pinot red velvet’). Gamay Beaujolais is a Californian misnomer for a UCD clone series of upright-growing (‘Pinot droit’) Pinot noir. Planted mostly in California it also became established in New Zealand. In general, these upright growing ‘Pinot droit’ clones are highly productive (in suitable, hot-to-warm, flowering conditions) and in California and New Zealand they give robust, burly, wines favored by those who like muscle rather than charm and velvety finesse in their Pinot noir wines. In Burgundy, the use of (highly productive) Pinot droit clones is reportedly still widespread in inferior, Village appellation, or even non-appellation, vineyards and Pinot droit is consequently regarded, arguably with very good reason, as a (genetic) sub-form significantly inferior to classical, decumbent, ‘Pinot fine’ or ‘Pinot tordu’, clonal lines of Pinot.

son un postre hecho a base de hielo Raspados are a dessert made from shaved ice to which sweet condiments or syrups are added. This syrup is added to the ice after it has been shaved or scraped by hand using a locally-made tool called “raspador.” Its preparation is very simple; just shave ice from an ice block. Although there are people who prefer a manual machine to grind the ice, nowadays there are electric ones. Raspados are very common in festivals where they are sold by street vendors in a scrap-metal cart. Before the existence of plastic cups, they were served in paper cones.

Los raspados son un postre hecho a base de hielo “raspado” ( de dónde viene el nombre de raspados), al que se le agrega ciertos condimentos dulces o jarabes; este jarabe se le agrega al hielo una vez que éste ha sido raspado con un cepillo para raspar hielo. Su preparación es muy sencilla, basta un cepillo para raspar y un trozo de hielo, aunque hay personas que se les complica y utilizan desde algunas máquinas manuales para moler hielo, hoy en día las hay eléctricas. Estos raspados también han sido muy comunes en todas las ferias, donde se venden de forma ambulatoria, o bien en algún carrito de raspados, donde antes que existieran los vasos se servían en conos de papel.

Raspados are known by different names depending on the state or country. In Mexico, they are called raspado; in the north of the country, they are called “yuki” which in Japanese means ice; in Guatemala “granizadas”; in other places “copos,” “frescos”; in El Salvador “minutas”; in Peru “cremolada”; and in Bolivia “raspadillo.”

In general, raspados are a temporary delight, very common in summer time when you want to enjoy a refreshing, cold and delicious raspado. There are so many flavors to choose from, and you can find them throughout the year. In my very subjective and personal opinion, I dare say that raspados reached their perfection precisely here in the city of Guadalajara, Mexico. Others, however, will claim that the best raspados are in the city of Saltillo or in the states of Coahuila, Guanajuato, Colima, or even other countries. When I was a child, we would delight ourselves with a delicious raspado in a park named Parque Morelos, very close to the downtown of Guadalajara, Jalisco. Next to Parque Morelos there were several places where these raspados were sold and famously named “Raspados del Parque Morelos.” Today there are several raspado shops throughout the city that advertise Raspados Morelos “park style.” The truth is that whether in Saltillo, Guadalajara or elsewhere, what makes raspados special are the syrups (which have their own style and even culinary secrets). There are many delicious flavors: vanilla, strawberry, tamarind, coconut, pineapple, lemon, cajeta, tequila and the list goes on. And as if that were not enough, you can order your raspado with two or three different syrups, so the mixture gives it a very special and very tasty flavor. Or how about a raspado with a combination of bittersweet flavors called “diablitos,” prepared with a touch of lemon, chamoy and Tajín? My personal favorites are raspados made with strawberry, vanilla, vanilla with walnut, or tequila. What flavor are you craving?

Por lo general estos raspados son un deleite de temporal, si, pues es muy común en tiempos de calor cuando se antoja disfrutar de un refrescante, un frío y delicioso raspado, habiendo seleccionado de entre tantos sabores. Aunque claro que los podrás encontrar durante todo el año. Me atrevo a decir, desde mi muy subjetiva y personal opinión de que los raspados llegaron a su perfección precisamente aquí en la ciudad de Guadalajara, digo que es desde mi opinión personal, pues otros dirán que los mejores raspados están en la ciudad de Saltillo, en el estado de Coahuila; Guanajuato, Colima, en fin. Pero bueno es que desde que yo era niño solíamos ir a deleitarnos con un delicioso raspado a un parque que hasta la fecha lleva el nombre de Parque Morelos, muy cerca del centro de la ciudad de Guadalajara. Junto al parque Morelos había varios locales donde se vendían estos deliciosos raspados, y pues de ahí el nombre que los hizo tan famosos: “Raspados del parque Morelos”, tan famosos que hoy en día existen varios puestos de raspados por toda la ciudad, con la leyenda que dice: “Raspados estilo parque Morelos. Lo cierto es que ya sea en Saltillo, Guadalajara u otro lugar, lo característico y lo que hacen especial a estos raspados son las mieles( que seguramente tienen su propio estilo, y hasta secreto culinario), las cuales hay de muchos y deliciosos sabores: desde vainilla, fresa, tamarindo, coco, piña, limón, cajeta, tequila y la lista sigue y sigue; y por si fuera poco puedes, pedir tu raspado con dos o tres sabores diferentes, así la mezcla le da un sabor muy especial y muy sabroso. O bien que tal un raspado con combinación de sabores agridulces, llamados “diablitos”, con un toque de limón, chamoy y Tajín. It’s made using fully ripe agave and rock-filtered water with no added sugars, colours Tequila producer Corralejo or flavourings. According to has unveiled an extra añejo Codigo, the new tequila has expression to celebrate the notes of cinnamon, cocoa brand’s 25th anniversary. powder and vanilla, with a spicy and ‘peachy’ aftertaste. The spirit is then aged for five years in rye whiskey barrels from Templeton in Indiana.

YOLA MEZCAL 1971 Yola Mezcal is handcrafted using a family recipe using agaves harvested on a family farm that was purchased in 1971. It is produced in San Juan Del Rio and bottled by women in Oaxaca. On the nose, there are clean agave flavors with vibrant smoke. The flavors are bright and refreshing, yet complex with earthy mineral flavors. The finish is long and has notes of smoked fruits and peppery spice.
MEZCAL DERRUMBES OAXACA DOÑA VEGA ESPADIN MEZCAL. Doña Vega Espadin Mezcal. Designed to be more approachable yet still sophisticated, [this] mezcal [is] made from 100 percent Maguey Espadin agave. It’s female-owned and -operated, and originally began as a passion project by Sonya Vega Auvray.
