The origin of the Paloma cocktail is unclear, but it is widely believed to have originated in Mexico, and is considered one of the most popular tequilabased cocktails in the country. The name “Paloma” means “dove” in Spanish, and the cocktail is said to have received this name because of the pale pink color it takes on when the grapefruit juice is mixed with the tequila. Paloma cocktails are enjoyed by people of particularly those who enjoy tequila and citrusy, refreshing drinks. It is a popular choice for sipping on a warm day or as a refreshing change of pace from more traditional cocktails. The drink is popular in Mexico and has become increasingly popular in other parts of the world, particularly in the United States, as more people discover the delicious combination of tequila, grapefruit, and lime. The Paloma cocktail has been growing in popularity in recent years and is widely considered one of the most popular tequilabased cocktails in the world. Its refreshing and light flavor, combined with the growing popularity of tequila, has helped to make the Paloma a staple on cocktail menus at bars and restaurants around the world.

Additionally, the ease of making the Paloma at home has also contributed to its popularity, as people are able to enjoy this delicious drink without having to go out. The versatility of the Paloma, which can be made with simple syrup or grapefruit soda, and can be garnished with a variety of fruits, also adds to its appeal.

Why is the drink called a Paloma?

It’s unclear how or when the paloma got its name, which is Spanish for “dove.” Some say it could have been confused or exchanged for pomelo, Spanish for “grapefruit,” as the spellings are similar.

What is the difference between a margarita and a Paloma?

The Paloma and Margarita both contain tequila, lime and salt but that’s where the similarities end. Margaritas are typically flavored with an orange liqueur or a bottled margarita mix but a classic Paloma is sweetened with fresh grapefruit juice, a bit of sugar, and a little sparkling water.

What does Paloma cocktail taste like?

The Paloma Cocktail is a super refreshing grapefruit cocktail. With the perfect balance of sweet, bitter, and salty, it’s no wonder it’s Mexico’s favorite tequila-based refreshment.

What glass do you serve a Paloma in?

Traditionally, a highball glass is used when serving a Paloma. However, I chose to use rocks glass because I love the shape. You may use whatever you have on hand. Wait to add any bubbly club soda or grapefruit soda until just before serving.

Which tequila is best for a Paloma?

Tequila Blanco/Silver or Reposado.

MERLOT WINE

20 | TEQUILA & SPIRITS MAGAZINE

Merlot is a dark blue–colored wine grape variety, that is used as both a blending grape and for varietal wines.

The name Merlot is thought to be a diminutive of merle, the French name for the blackbird, probably a reference to the color of the grape. Its softness and “fleshiness,” combined with its earlier ripening, make Merlot a popular grape for blending with the sterner, later-ripening Cabernet Sauvignon, which tends to be higher in tannin.

HI S T O R Y

The earliest recorded mention of Merlot (under the synonym of Merlau) was in the notes of a local Bordeaux official who in 1784 labeled wine made from the grape in the Libournais region as one of the area’s best. In 1824, the word Merlot itself appeared in an article on Médoc wine where it was described that the grape was named after the local black bird (called merlau in the local variant of Occitan language, merle in standard) who liked eating the ripe grapes on the vine. Other descriptions of the grape from the 19th century called the variety lou seme doù flube (meaning “the seedling from the river”) with the grape thought to have originated on one of the islands found along the Garonne river.

By the 19th century it was being regularly planted in the Médoc on the “Left Bank” of the Gironde. After a series of setbacks that includes a severe frost in 1956 and several vintages in the 1960s lost to rot, French authorities in Bordeaux banned new plantings of Merlot vines between 1970 and 1975.

It was first recorded in Italy around Venice under the synonym Bordò in 1855. The grape was introduced to the Swiss, from Bordeaux, sometime in the 19th century and was recorded in the Swiss canton of Ticino between 1905 and 1910.

In the 1990s, Merlot saw an upswing of popularity in the United States. Red wine consumption, in general, increased in the US following the airing of the 60 Minutes report on the French Paradox and the potential health benefits of wine and, possibly, the chemical resveratrol. The popularity of Merlot stemmed in part from the relative ease in pronouncing the name[clarification needed] of the wine as well as its softer, fruity profile that made it more approachable to some wine drinkers.

24 | TEQUILA & SPIRITS MAGAZINE

Merlot grapes are identified by their loose bunches of large berries. The color has less of a blue/black hue than Cabernet Sauvignon grapes and with a thinner skin and fewer tannins per unit volume. It normally ripens up to two weeks earlier than Cabernet Sauvignon.

Also compared to Cabernet, Merlot grapes tend to have a higher sugar content and lower malic acid. Ampelographer J.M. Boursiquot has noted that Merlot has seemed to inherit some of the best characteristics from its parent varieties—its fertility and easy ripening ability from Magdeleine Noire des Charentes and its color, tannin and flavor phenolic potential from Cabernet Franc.

Merlot thrives in cold soil, particularly ferrous clay. The vine tends to bud early which gives it some risk to cold frost and its thinner skin increases its susceptibility to the viticultural hazard of Botrytis bunch rot. If bad weather occurs during flowering, the Merlot vine is prone to develop coulure.

Merlot is one of the world’s most widely planted grape variety with plantings of the vine outpacing even the more well-known Cabernet Sauvignon in many regions, including the grape’s homeland of France.

Here, France is home to nearly two thirds of the world’s total plantings of Merlot. Beyond France it is also grown in Italy (where it is the country’s 5th most planted grape)

PISCO DRINK FROM CHILE & PERU

Pisco is a grape distillate native to South America, especially in Chile and Peru. It began to be produced in the 16th century, when Spanish settlers introduced the grapes for the production of wine. Over time, they discovered that they could distill the wine to produce a stronger drink with a higher alcohol content and thus the Chilean and Peruvian Pisco was born.

46 | TEQUILA & SPIRITS MAGAZINE

There is no specific information on who the founders of pisco production were, since production developed gradually and indigenously. However, it is important to mention that in both countries, both in Peru and in Chile, the first distilleries were developed with the aim of producing pisco for local use and not necessarily for commercial purposes.

Both countries claim to be the true creator of this liquor. However, Peruvian pisco has a Designation of Origin (DO) recognized by the European Union, while Chilean pisco does not have this distinction.

However, in the 1920s, pisco production declined due to competition with other imported alcoholic beverages, such as whiskey and brandy. During the following decades, pisco continued to be produced in small quantities, but it failed to regain its former popularity.

In recent years, there has been a resurgence of interest in pisco, with a greater number of distilleries beginning to produce high-quality pisco, and increased promotion of the drink nationally and internationally. Currently, pisco is considered one of the typical drinks of Chile and Peru and is used in a variety of cocktails and traditional drinks.

What is this? A Bloody Mary is a vodka cocktail that’s made with tomato juice and other spices including Worcestershire sauce, hot sauces, horseradish, celery, olives, salt, black pepper, lime juice and celery salt.

Is Bloody Mary a healthy cocktail?

Bloody Marys are actually healthy cocktails. In addition to electrolytes, sodium, potassium, and Vitamin C, tomatoes also contain lycopene, which is high in antioxidants. Lycopene helps to combat the toxins in the liver (like the toxins that you consumed while drinking the night before.)

What is a Bloody Mary supposed to taste like?

When should you drink a Bloody Mary?

While the cocktail’s traditional garnishes of celery, olives, and pickles already scream “lunch,” the more recent trend of outrageous garnishes -such as lobster claws, fried chicken, and sandwiches — proves that the cocktail should never be drunk before 11:30, at the earliest.

By participating in WGT, you can profit from both Taiwan and Asia’s expanding market. Given its strategic location and business friendly policies, Taiwan serves as the gateway to Asia.

WGT provides a platform for wine and spirits from lesser known countries and regions. This year, we have placed an emphasis on wines from Ukraine through a partnership with Wine Travel Awards. Riesling from several German locations can be found in the German Pavilion. Sake from all over Japan will be displayed at the neighboring sake exhibition. Take advantage of WGT to showcase your products to a new market! Taiwan is ready to welcome participants and wineries of the industry.
