History of london beers
The history of beers in London is rich and fascinating, dating back centuries. Here’s a brief overview of the history of London beers:
Medieval and Tudor Period: Beer production in London can be traced back to medieval times. During this period, beer was a staple beverage for the population, as the water quality was often poor and beer provided a safer alternative. Monastic breweries played a significant role in brewing beer, and alehouses became popular gathering places.
The Brewing Industry Flourishes: By the 16th century, brewing had become a prominent industry in London. Brewers formed guilds and became organized, and regulations were established to maintain quality and control prices. In the 17th century, brewing expanded further with the influx of Dutch and Flemish immigrants who brought new brewing techniques and introduced hopped beers.
Porter and Stout: London is renowned for its contribution to the development of porter and stout beers. In the 18th century, London brewers began producing a dark, strong beer called porter, which became immensely popular among the working classes. Porter was later refined and evolved into stout, with the Guinness brewery in Dublin being a prominent producer.
Industrialization and Consolidation:
In the 19th century, the brewing industry underwent significant changes due to industrialization. Largescale breweries emerged, utilizing steam power and advanced brewing techniques. Some notable London breweries from this period include Fuller’s, Young’s, and Truman’s. These breweries expanded their operations and established a strong presence in the city.
How london beer is served
London beer is typically served in a variety of ways, depending on the type of establishment and the preferences of the consumer. Here are some common ways in which London beer is served.
Pint:
The most common serving size for beer in London is the pint (568 milliliters or 20 fluid ounces). Pints are served in pubs, bars, and restaurants, and they are the standard choice for many beer drinkers. Pints are typically served in glassware specific to the type of beer being poured, such as a pint glass, tulip glass, or tankard.
Half-Pint:
For those who prefer smaller portions or want to sample multiple beers, half-pints (284 milliliters or 10 fluid ounces) are also available. Halfpints are often served in the same types of glassware as pints.
Cask Ale:
Traditional cask-conditioned ales, also known as “real ales,” are an important part of London’s beer culture. Cask ale is typically served at cellar temperature (around 12°C/54°F) and is handpumped using a device called a beer engine. It is served directly from the cask, with minimal carbonation, resulting in a more subtle and natural texture.
Keg Beer:
Many London pubs and bars also serve beer from kegs. Keg beer is usually carbonated and served using pressurized systems, such as beer taps or draft systems. It is commonly used for lagers, IPAs, and other beer styles that benefit from higher carbonation levels.
Craft
Beer Styles:
With the rise of the craft beer movement, London has seen an increase in the availability of beers served in different ways. Craft beers may be served in various glassware, including snifters, goblets, or specialized glassware designed to enhance the aroma and flavor of specific beer styles.
London Beer Aroud the World
London has made a significant impact on the global beer scene, with its beers and brewing traditions being recognized and enjoyed around the world. Here are a few ways in which London beer has made its mark internationally:
Beer Styles: London has been instrumental in the development of beer styles that have gained global popularity. One notable example is the porter style, which originated in London in the 18th century. Porter and its refined version, stout, have become beloved styles worldwide, with breweries around the globe producing their own interpretations of these dark, roasted beers.
Craft Brewing Movement: London has been at the forefront of the craft beer revolution. The city’s vibrant craft brewing scene, characterized by innovative and experimental beers, has influenced brewers worldwide. London-based craft breweries have gained international recognition, with some exporting their beers to various countries. This has helped put London on the map as a hub for craft beer enthusiasts.
Beer Festivals and Events: London hosts several beer festivals and events that attract beer enthusiasts from all over the world. For example, the Great British Beer Festival, organized by the Campaign for Real Ale (CAMRA), showcases a wide range of British beers, including those from London breweries. These events provide opportunities for brewers to showcase their beers and for visitors to sample a diverse selection of London brews.

SANGRIA DRINK
BY T&S MAG TEAMThe origins of sangria can be traced back to Spain, where it is now a popular traditional beverage. The word “sangria” is derived from the Spanish word “sangre,” which means “blood,” referencing the deep red color of the drink.
The exact history and origins of sangria are not entirely clear, as its creation predates recorded history. However, it is believed that sangria emerged during the Middle Ages in Spain. At that time, clean drinking water was scarce and often unsafe due to contamination. As a result, people turned to alcoholic beverages like wine as a safer alternative to quench their thirst.
The basic concept of sangria involves combining red wine with various ingredients such as fruits, sweeteners, and sometimes spirits to create a refreshing and flavorful beverage. The mixture is typically chilled and served cold, making it a popular choice during warm weather. Originally, sangria was made with red wine,
but today there are various versions, including white wine sangria and rosé sangria. Traditional ingredients include red wine, sliced citrus fruits (such as oranges and lemons), sweeteners like sugar or honey, and occasionally a splash of brandy or liqueur for added depth of flavor.
Sangria gained popularity beyond Spain’s borders through tourism, particularly during the latter half of the 20th century. It became a signature drink associated with Spanish cuisine and culture, enjoyed by people around the world.
While sangria has evolved over time, it remains a beloved and refreshing beverage, often associated with summer gatherings, tapas bars, and festive occasions.
Coktails made with sangria:
Sangria can be used as a base for creating delicious cocktails. Here are a few cocktail ideas that incorporate sangria:
Sangria Margarita:
Combine equal parts sangria and tequila in a shaker with ice. Shake well and strain into a salt-rimmed glass. Garnish with a slice of lime.
Sangria Spritzer:
Mix equal parts sangria and sparkling water or club soda in a glass filled with ice. Add a splash of citrus juice like orange or lemon for extra flavor. Garnish with fresh mint leaves or a slice of fruit.
Sangria Mojito:
Muddle fresh mint leaves and lime wedges in a glass. Fill the glass with ice and add equal parts sangria and rum. Top it off with a splash of soda water and garnish with a sprig of mint.
Sangria Punch:
In a punch bowl, combine sangria, orange juice, pineapple juice, and a splash of rum. Add sliced fruits like oranges, apples, and berries. Stir well and serve over ice.
Sangria Martini:
In a shaker, combine equal parts sangria and vodka with a splash of orange liqueur. Shake well and strain into a chilled martini glass. Garnish with a twist of orange peel.
Remember, you can get creative with the ingredients and ratios to suit your taste preferences. These cocktail suggestions provide a starting point, but feel free to experiment and add your own twist to make a sangria cocktail that suits your palate.
Sangria around the World:
Sangria, originating from Spain, has gained popularity around the world and is enjoyed in various countries. Here are some examples of how sangria is enjoyed in different parts of the world:
Spain
As the birthplace of sangria, Spain is where you’ll find the most authentic and traditional versions of the drink. Spaniards often serve sangria during social gatherings, festivals, and celebrations. It is commonly enjoyed alongside tapas or as a refreshing beverage on hot summer days.
Portugal:
Sangria is also popular in Portugal, where it is known as “Sangria de Vinho.” Similar to the Spanish version, Portuguese sangria is made with red wine, fruits, and sometimes brandy or Port wine for added richness.
United States:
Sangria has become a beloved drink in the United States, particularly during the summer months. It is commonly served at backyard barbecues, parties, and outdoor gatherings. Many restaurants and bars offer their own variations of sangria, incorporating local fruits and flavors.
United Kingdom:
Sangria has gained popularity in the United Kingdom, where it is often enjoyed as a refreshing summer drink. British variations of sangria can include additional ingredients like elderflower cordial or sparkling wine to add a unique twist.
Latin America:
Sangria has made its way to many Latin American countries, where it has become a popular choice for celebrations and social gatherings. Each country adds its own flair to the drink, incorporating local fruits, spices, and spirits. In some regions, white wine or even regional spirits like rum are used as a base instead of red wine.
Other countries:
Sangria has also gained popularity in other countries, including France, Germany, Australia, and Canada. It is often enjoyed as a festive and fruity beverage that can be customized with local fruits and spirits.
While the above regions have notable sangria consumption, it’s important to note that sangria has gained popularity in various other countries worldwide. Its appeal as a refreshing, customizable, and sociable drink has led to its adoption and enjoyment by diverse populations.
Ultimately, the consumption of sangria varies based on personal preferences, cultural traditions, and availability. It continues to captivate the taste buds of people from different backgrounds, making it a globally cherished beverage.
TEQUILA AÑEJO
PAIRING WITH C I G A R S
BY T&S MAG TEAMThe pairing of cigars and spirits, including tequila, has a long history, but it is challenging to pinpoint an exact origin or specific individual who first started the practice. Cigars and spirits have been enjoyed together for centuries, as both are considered luxury indulgences that can be savored for their complex flavors and aromas.
Cigars have a rich history that dates back hundreds of years, originating from indigenous cultures in the Americas and later gaining
popularity in Europe. As tobacco cultivation and cigar production spread, the practice of enjoying cigars alongside various beverages, including spirits, became common among aficionados.
Tequila, as a spirit, has deep roots in Mexican culture. The production of tequila dates back to the 16th century when Spanish conquistadors introduced distillation techniques to the region. Over time, tequila became synonymous with Mexican heritage and traditions.
The specific pairing of tequila with cigars likely emerged as a result of the appreciation for both products and the desire to find complementary flavors and experiences. Cigar and spirit enthusiasts have long experimented with different combinations, seeking to enhance their enjoyment and explore the interplay of flavors between the two.
In recent years, there has been a growing interest in pairing tequila with cigars, driven by the increasing popularity and awareness of tequila as a premium spirit. Cigar lounges, bars, and aficionado communities often provide recommendations and guidance on pairing tequila añejo and other types of tequila with cigars, further contributing to the practice.
Guidlines to pair tequila with cigars
Tequila añejo, with its rich and complex flavors, can be a wonderful accompaniment to a fine cigar. When pairing tequila añejo with cigars, it’s important to consider the characteristics of both the tequila and the cigar in order to find complementary flavors. Here are a few general guidelines to help you with your pairing:
Consider the strength of the cigar: Tequila añejo tends to have a robust and fullbodied profile, so it pairs well with medium to full-bodied cigars. The intensity of the flavors in the tequila should be able to stand up to the boldness of the cigar.
Look for complementary flavors: Pay attention to the flavors present in both the tequila and the cigar. For example, if your tequila añejo has notes of caramel, vanilla, or oak, you might consider a cigar with similar flavor profiles, such as a Maduro or a cigar aged in oak barrels.
Balance the sweetness: Tequila añejo can have a natural sweetness from the aging process. If your tequila has a sweeter profile, you might want to pair it with a cigar that has some sweetness as well, like a Connecticut or a cigar with a Cameroon wrapper.
Experiment with contrasting flavors: Sometimes contrasting flavors can create interesting and enjoyable pairings. For example, a tequila añejo with citrus or fruity notes can be paired with a spicy or peppery cigar, creating a contrasting flavor experience.
Consider the body of the tequila: Tequila añejo can have a rich and velvety mouthfeel. Consider pairing it with a cigar that has a similar texture, such as a cigar with a smooth and creamy smoke.
Ultimately, personal taste plays a significant role in pairing tequila añejo with cigars. It’s a good idea to experiment and try different combinations to find the pairings that you enjoy the most. Additionally, seeking recommendations from knowledgeable tobacconists or tequila experts can provide valuable insights and suggestions based on their expertise.
Which tequila añejo can be paired with cigars?
There are several tequila añejos that can be paired with cigars, and the choice ultimately depends on personal preference.
Tequila añejo can be paired with cigars for a few reasons:
Flavor Harmony:
Tequila añejo often possesses rich and complex flavors that can complement and enhance the flavors of a cigar. The aging process in oak barrels imparts notes of caramel, vanilla, spice, and oak to the tequila, which can harmonize with the flavors of tobacco in a cigar.
Balance and Contrast:
Pairing tequila añejo with cigars can create a balance or contrast of flavors. The smoothness and sweetness of añejo tequila can offset the intensity or bitterness of certain cigars, creating a more enjoyable experience. Conversely, a bold and full-bodied cigar can provide a contrasting flavor profile that complements the tequila.
Mouthfeel:
Tequila añejo often has a rich and velvety mouthfeel due to the aging process. This texture can enhance the overall sensory experience when paired with a cigar, as they both contribute to the tactile aspect of the pairing.
Ritual and Relaxation:
The act of sipping tequila and enjoying a cigar can create a relaxing and indulgent ritual. The combination of flavors and aromas can contribute to the overall sensory experience, enhancing the enjoyment of both the tequila and the cigar.
It’s important to note that pairing tequila añejo with cigars is a matter of personal taste and preference. The flavors and characteristics of both the tequila and the cigar should complement each other to create a harmonious pairing. Exploring different combinations and experimenting with various tequilas and cigars can help you discover the pairings that you personally find most enjoyable.
Which is better tequila añejo or cognac to pair with cigars?
The choice between tequila añejo and cognac for pairing with cigars ultimately depends on personal preference. Both tequila añejo and cognac can offer unique and enjoyable experiences when paired with cigars. Here are some factors to consider:
Flavor Profiles:
Tequila añejo typically presents flavors such as caramel, vanilla, oak, and spice, while cognac tends to have notes of dried fruit, oak, honey, and floral elements. Consider the flavors you prefer and how they might interact with the flavors of the cigar you are smoking.
Strength and Body:
Tequila añejo can have a robust and full-bodied profile, while cognac can range from lighter to richer and more full-bodied. Consider the strength and body of the cigar you plan to smoke and choose a tequila or cognac that will complement it in terms of intensity.

Personal Preference:
Ultimately, personal taste and preference play a significant role in choosing between tequila añejo and cognac for pairing with cigars. Consider which spirit you enjoy more and how it interacts with the flavors and characteristics of the cigars you typically smoke.
It’s worth noting that there are no definitive rules when it comes to pairing cigars with spirits. Experimentation and trying different combinations is the best way to discover your own preferences and find the pairings that you personally enjoy the most.

This prom-dress-pink beauty engages with scents of rose petals, vanilla, and grapefruit. The citrus is enveloped by hibiscus, a noteworthy floral tone that adds dimension to this satisfying and delicious cocktail.
SEIS SOLES GRAN RESERVA WINE
Seis Soles Gran Reserva Cabernet Sauvignon is inspired by the savory and structured wines from the Bordeaux region in France. I use three vineyards of Cab that contribute to a balanced wine. My wines tend to be fruitforward but this vintage is a balance of dark mature fruit and French oak. If you tend to drink mostly reds wines you’ll appreciate my approach to achieve a bolder wine with supple tannins.
DOUBLE DIAMOND CABERNET SAUVIGNON
A unique expression of the Napa Valley region from which it’s born, Double Diamond Oakville Cabernet Sauvignon 2018 Red Wine is a dazzling and harmonious integration of decadent fruit, refined structure, and exotic spices. Made with quality red grapes from acclaimed Oakville vineyards known for highly diverse, resilient soils and an ideal blend of sun, cooling wind, and rain, this Napa Valley cabernet sauvignon red wine keeps company with some of the most sought-after cabernet sauvignon in the world.
BONDLE ORANGE WINE BY LES TERRES PROMISES 2020
This wine is a rare gem, made with a single varietal of Carignan Blanc grapes macerated for 6 months in concrete. Combines toasty notes of cider with stone fruit and herbs, best enjoyed with luscious, creamy, and nutty dishes.
SANDARA PREMIUM SANGRIA
Distinguished and Elegant — Made with premium, Spanish red wine and Mediterranean fruits. Sandara is a Valencian style Sangria with lots of citrus and hints of cinnamon and secret spices. Drier than most Sangrias. Fun, fizzy, fresh!
Delicious served cold over ice or may be heated for a wintry treat! Ideal to serve with spicy tapas, barbecue, an elegant tailgating, or simply out on the deck with friends.
HEAVEN’S DOOR DOUBLE BARREL WHISKEY
Comprised of a unique blend of three different whiskeys, the Heaven’s Door Double Barrel finishing process utilizes hand toasted, new American Oak barrels for a secondary aging worthy of another year’s wait. Double Barrel’s high proof balances perfectly with the complexity of its flavor and notes of caramel, oak, citrus, and spice.
RARE HARE LAPINE
Cognac Petite Champagne harvested and barreled in 1961, widely regarded as one of the most exceptional French vintages of the 20th century. In the remote village of Échebrune, nestled within the rolling hills of southwestern France, the Herbelot family of winegrowers harvested the grapes that would become this rare and exquisite cognac. Rather than sell this harvest to an established cognac house as was customary, the Herbelots reserved these coveted grapes to be distilled by their family and barreled to age for 60 years.
