ecember holds a variety of annual celebrations that fittingly take place as the year winds down. Christmas honors the birth of Jesus. Hanukah’s eight-day festival of lights celebrates events from more than 2,000 years ago. Kwanzaa’s seven-day celebration commemorates cultural heritage and traditional values. Omisoka is a Japanese tradition that falls on the final day in December, when friends and family celebrate and prepare for the New Year while reflecting on the one about to end. If there is one tip I could give everyone after my more than 40 years of experience in the nutritional field, then it is to simply LOOK AFTER YOUR GUT. Many people ignore bowel and gut health until it is too late. I’ve had many patients over the years that come in their 60’s, 70’s and 80’s with seemingly otherwise good health, except for gut issues. Regular bowel habits begin in infancy, so making sure your baby does not have these issues from the beginning is imperative. If you do have imbalances in your bowel habits, then it is never too late to start correcting the problem.
of soluble fibre, is that it ‘traps’ cholesterol that is present in food and prevents it from being absorbed, so therefore having enough soluble fibre in your diet is also crucial to maintaining healthy cholesterol levels.
How does fibre help?
Soluble fibre will also entrap bile, which is produced by the liver to aid in the breakdown of fats. The body uses cholesterol to make bile, so in this way, fibre has another indirect way of managing cholesterol levels.
Dietary fibre is the part of the plant that is resistant to enzymatic digestion. These indigestible parts are in the form of cellulose and noncellulose polysaccharides such as pectic substances, gums, mucilages and lignin. In other words, they are still mostly carbohydrates but are indigestible carbohydrates so are referred to generally, as fibre. The role of these fibres is to encourage the movement of the fecal mass along the bowel and result in elimination. There are also 2 categories of fibre: insoluble fibre and soluble fibre. Soluble fibres, as one can see by their name, dissolve in water and form mostly gel-like substances. This creates a softer bulk within the colon. Another function of soluble fibre is that it slows down the absorption of sugar from the gut so is vitally important in keeping blood sugar levels more stable. If foods have sufficient soluble fibre, which then absorbs water and expands in the digestive system, then a feeling of satiety or fullness is much more easily attained. One could also therefore say, that soluble fibres help to prevent excess hunger and are important in managing and maintaining a healthy weight. Medical research, especially that related to gut functioning, has focused much on the microbiome, which refers to the multiples of bacterial colonies that occupy the digestive tract. Having the correct balance of a variety of bacteria in the gut has been found to be critical to maintain health in many aspects. Only some soluble fibres are

known as pre-biotic fiber because the bacteria cause fermentation to produce short chain fatty acids, which keep the beneficial bacteria in sufficient numbers.
Insoluble fibres are completely resistant
to digestive enzymes in the gut and do not actually even absorb water. These fibres are very slowly fermented and may remain completely intact until they are expelled from the gut. The main function of insoluble fibre is to stimulate the lining of the gut, which then creates mucus, facilitating the passage of the food bolus through the colon. Therefore, both soluble and insoluble fibre are important to healthy bowel movements. An important distinction to make at this point is the one between a laxative and bulk-forming compound. Soluble fibre is a bulk-forming compound and insoluble fibre acts by stimulating the muscular lining of the bowel to contract. Laxatives are usually stimulants which cause smooth muscle contraction in the gut forcing evacuation of its contents. Laxatives can be both natural and pharmacologically produced. Both can be habit-forming and once you start relying on stimulation of the gut to prevent constipation, it is difficult to go off them.

Upward Press Forward Gaze

Compared to many stories I read mine doesn’t seem very special. However, I am sure I am not alone in feeling this way. This is why I want to thank AIM for allowing each of us the platform to be brave enough to share! My father was a highly intellectual man and at the age of 20 he was already appointed as manager at the Bank. However, he developed a serious drinking problem and on the 4th of July 1984, when I was 17 years old, my father passed away in a rehab centre in Cullinan, just outside Pretoria. My mother was a dedicated nursing sister and a devoted wife and mother, but suffered severely from stress and nervous tension. As children, we often see our parents fight battles we don’t know much about and it passes by without us ever questioning how they handled it or being curious about the consequences of their behaviour and lifestyle. When we enter adulthood with all its fabulous facets, from choosing a career, marriage, parenting, raising children, forming new friendships, buying or building a new home, and all the financial challenges that go with these things, we learn about life! I joined the South African Police Service when I was 20 and spent 13 wonderful years serving the community and my country as a trainer and media liaison officer. As an editor at the Video Unit, I was involved in filming different crime 8

scenes of gruesome family murders for training purposes. And while working in the Karoo, I was exposed to several brutal farm murders where the horror of crime against young children was forced into my world time after time. Going home after attending to scenes such as these and then being met by the faces of my own two beautiful children, made me literally run to the bathroom, lock the door and sit there for hours just sobbing my heart out!! It is then no surprise, given my family history, that I was inevitably, diagnosed with PTSD (Post Traumatic Stress Syndrome). What followed were years and years of endless medication, ultimately numbing all feelings of pain and trauma in order to cope and just carry on with carrying on. After leaving the Police I followed a few different career paths in marketing and early childhood development. I finally joined my husband for two years in Somalia, where we were both mentors for the Somalian Police Force. Here too, the brutality of war and the total disregard for human life together with the unnecessary loss of friends’ and colleagues’ lives, made it difficult to handle day to day tasks and the norm amongst all of us in camp was to simply self-medicate with either alcohol and or medications.

Usually these events are brought on by things that are out of our control, as we are all globally experiencing right now, or simply by things we would prefer not to have happen to us. We have a choice to either be defeated by negative circumstances, or to embrace a transformation. In doing so, we become new and improved versions of our old selves. And this is where I need to emphasise that my doctor, therapist and life coach are still part of my journey of recovery because I firmly believe that God allows gifted and wise counsellors to assist us in making Godly decisions every day. So, in certain seasons of my life I may need more than just my AIM support and that is okay! At some point in our lives, we all endure times of trial filled with pain and suffering.
Today, I want to compare my story of transformation to that of the cocoon producing a butterfly. Like the cocoon, I did not know why I was going through such a life-changing event, or how long it would take. Believe me, the events of my life have seen me do just that although it still scares the living daylight out of me. But just like the cocoon, I didn’t have a choice. At some point I would have had to break out of the cocoon. And once the transformation happened, would I be a broken butterfly or would I choose to use the tools I have gained from AIM and every beautiful human who has been put on my path, to become who I was meant to be? Through AIM, I have become stronger and found the strength and courage to take care of myself, and to make my own decisions. Blood Sugar Every morsel of food you eat goes into the manufacturing of energy. Your body uses your nutritional input and turns most of it into glucose. What’s the difference between Fresh foods and the Preserved counterparts? By Charlotte Meschede - Nutritionist
We all like fresh food, but with the fast pace of life, especially in urban areas, there isn’t always time to shop daily and let’s face it, fresh foods don’t last, so in the interest of not wasting food, many of us will opt for the preserved option. Does preservation ever preserve nutrients as well as shelf life? Let us look at a few examples and see what the nutrient losses are! Fresh versus Preserved Food
Preservation or enhancing the shelf life of fresh food usually involves one of the following processes: • Canning (with added sugar, salt or oil) • Freezing • Drying whole foods or dehydrating the fresh juices of the specific food into powder As far as canning food is concerned, there are actually 2 processes that contribute to the preservation of the product. One is temperature, as the food is heated to high temperatures to kill any microbes that may be present and the second one is either sugar, salt (brine) or oil, all of which have anti-microbial effects as they prevent oxidation (through preventing exposure to oxygen) and of course bacterial and microbial invasion. Clearly, adding sugar as is common with fruit products, increases the sugar content and makes these foods undesirable to use on a daily basis and definitely will deplete the nutrient content, especially with regard to temperature-sensitive nutrients like vitamin C and the B complex. example, the calorie and sugar content of 1x fresh peach versus 1 x canned peach are as follows: •
1 x fresh peach = 50 Calories and 15 grams sugar

1 x canned peach = 76 calories and 20 grams sugar
Freezing of fresh foods is a popular form of food preservation because the products do not spoil so easily and generally maintain their nutrient content, depending on how long they remain frozen and whether the food was cooked before freezing. If the latter is the case, then it would be the cooking process that causes nutrient loss, not the freezing process. However, the disadvantage is that some people do not have access to either electricity or have freezers, making this option not feasible. Dehydration of food is a popular method of preservation and will also preserve the nutritive value of the food, as long as high temperatures are not used in the drying process. The only negative aspect of dried food, and in particular of fruit and meat, is that

preservatives such as sodium benzoate or Sulphur dioxide to prevent deterioration, are used. Many people are either sensitive or allergic to these artificial preservatives. The other disadvantage of eating dried food is that one tends to eat more than one would if it were fresh. Two pieces of dried apricot are hardly as satisfying as a whole fresh one and we all know how much biltong we can eat at any one point in time. The third and possibly most important disadvantage of eating dried foods, especially those which use salt as a preservative, is that we inadvertently increase our salt intake, which can then have repercussions on overall health. Whole food supplements that come in the form of a powder made by dehydrating fresh juices of specific foods such as leafy green vegetables, certain seaweed varieties, beetroot, berries and a number of other nutrient-dense foods. In my opinion, there is tremendous value in these products, because, not only are they nutrient-dense, they are also convenient and readily available. The consumer should also be able to determine if these products come from a source manufactured without the use of harmful and unhealthy preservatives, colorants and flavor-enhancing chemicals. The main aspects to consider when comparing fresh versus preserved (dried, canned, frozen or dehydrated) are nutrient content and cost. Value for money needs to be determined not only in quantity but also in nutritional value. Although values for food preservation methods differ greatly depending on the type of food, research has confirmed that both freezing fresh foods (such as carrots, beetroot and/or green leafy vegetables) as well as dehydrating the fresh juice does not deplete the product of its nutrients. However, the frozen product and the dehydrated juice (powder) is
more expensive in terms of cost per fresh item, but then add the value of no storage issues and no losses due to food spoiling and this will justify the extra pennies to many. In my opinion, having access to the dried juices is the answer. Firstly, I don’t have to spend any time either shopping for specific items OR preparing them. All the decent juice extractors I have looked at are extremely expensive so when it comes to value for nutrient intake and money I would use AIM Just Carrots, RediBeets and BarleyLife. The current nutrition trend is to make sure you get enough of the so-called ‘Superfoods’ on a daily basis. This can be very difficult if you are relying on fresh foods that you have to prepare or even if you are going to extract the juice. In my busy lifestyle, I know I can rely on this Garden Trio to provide all my superfood requirements. Nutrition, like exercise, requires routine and time. In other words, both the dose and taking these products (or foods) on a daily basis provide the benefits you are looking for. Don’t expect miracles from one day of eating leafy green vegetables and drinking carrot juice. You need to create the habit in order to reap the benefit. In conclusion, I have to emphasize, though, that taking supplements, whole foods or otherwise, CANNOT justify a bad diet. This does not give you the license to eat what you like! Just like you cannot exercise your way out of a bad diet, you cannot supplement your way out of one either.

I am a big fan of CoCoa LeafGreens, both for its taste and for its health benefits. A combination of 5 different leaf powders, including our ‘barley’! Sulphoraphane
One of my favourite ingredients in this CoCoa LeafGreens is broccoli sprouts. It supplies us with sulforaphane, an isothiocyanate found in this powerful plant. Raw cruciferous vegetables contain isothiocyanates (ITCs). These powerful compounds have been shown to detoxify the body. Broccoli sprouts also contain glucosinolate which is the precursor of sulforaphane. In a different part of the plant cell, broccoli sprouts also contain an enzyme called myrosinase. When we blend, chop or chew broccoli sprouts, we break up the plant cells, allowing the myrosinase enzyme to come into contact with the glucosinolates. This starts a chemical reaction that produces ITCs Sulforaphane is an especially powerful ITC. Broccoli is not the only cruciferous vegetable that yields sulforaphane, but it yields the highest amounts, especially broccoli sprouts. Sulforaphane has many benefits. It contributes to boosting your liver’s detoxifying enzymes, protecting your brain and eyesight and helps protect against free radicals.

Another benefit of Sulforaphane is that it activates the Nrf2 brain pathway. This pathway has been named such things as ‘the fountain of youth pathway’ and ‘the anti-aging pathway’. Sulforaphane is a powerful activator of this Nrf2 pathway. This ideal sulforaphane-releasing food retains both glucosinolate and its myrosinase enzyme in the form of a whole broccoli sprout ingredient with nothing but water removed.
