My first instinct is to always see what local beer is on draft, but if all else fails, I’m going straight for a Guinness.

If I don’t have a Mexican Martini in my hands by 5:30 it’s because a bottle of wine is breathing in the kitchen.

On the Subject of Craft

I

have a confession to make. I don’t usually order cocktails when my wife and I head out for a night on the town. My go to drink is typically a craft beer or a fine wine. So, when Kylie Kinnett pitched the idea of a mixologist cover story at our annual planning meeting over a year ago, I had no idea how this was going to turn out. Fast forward to today, as I make my final edits to our last issue of 2018, I am blown away with the final product. Kylie joined our team a year and a half ago. She practically walked off the stage after graduation, got in her car, and headed home to Corpus Christi to start her career at The Bend Magazine. She has grown with each issue – learning from mistakes and working hard to outdo herself each

I love this photo on page 32, taken by Rachel Benavides. It captures the essence of the entire feature in one scene. Along with Jarred Schuetze and Kylie Kinnett, the three of them made a pretty perfect team to portray the story of craft cocktails through a photograph. The mixologists end goal is to create an experience patrons love and that is exactly what you see here. Speaking of experiences, Brunch on the Bay is making a move to Bar Under the Sun, pictured here, in March 2019. There is so much more to come next year! 14 The Bend

Kylie does more than describe a few local cocktails and where to find them. She takes readers deep into the process – from the hours spent perfecting each drink behind the scenes, all the way down to ice selection. “Endless hours of experimentation lead to a long trail of successes and failures until the perfect drink, a special concoction pleasing to all five senses, is created,” states Kylie in the introduction. Based on Kylie’s portrayal of mixology, I believe this issue is a deep dive into the subject of craft more so than just cocktails. Like these local mixologists, Kylie is someone who continues to perfect her craft. Thanks to her reporting, I plan to order a few more cocktails in 2019. riscoll Children’s Hospital is an important part of the Coastal Bend, almost everyone has a story connecting them to the hospital. My son had an extended stay during infancy. The artwork is submitted by current and former patients and over the years, the production of the charm has become very special to me. The artists have included children of close friends and customers – which makes you realize how important this hospital is to our community. We have witnessed the heartbreak and devastation of pediatric cancer personally, so we feel compelled to help out in any way we can.

Terry Schade is the President of Casa de Oro Jewelers, serving the Coastal Bend for 40 years. Born and raised in Corpus Christi, Terry served in the U.S. Army after high school. After his tour, he returned to complete his B.B.A. from Texas A&M-Corpus Christi. His goal at Casa de Oro Jewelers is to sell and

The Project Artwork program started in 1988 and it is run by The Auxiliary to Driscoll Children’s Hospital. Over the years they have awarded hundreds of thousands in scholarship money to Driscoll oncology patients. Money was initially raised by selling Holiday Cards designed by Driscoll patients, but has expanded to the annual ‘Angel’ charm, Christmas ornaments, and this year’s offering includes t-shirts. Day Drinking There’s a simple, beautiful truth and this is it: day drinking is the best. We’re not talking about sipping on a glass of pinot grigio while tending to your niçoise salad. We’re talking about a steady flow of alcohol from early afternoon ‘til the sun goes down. Long reigning as the puerile choice in drinking occasions, often regarded as less “acceptable” than say happy hour or a cocktail party, day drinking in contrary, is glorious and rewarding. An occasion unto itself, day drinking should be enjoyed on firm, yet convivial terms, and yes, there are terms. Day drinking shouldn’t become a consistent activity. It shouldn’t segway into drinking all night. Starting too early is definitley a thing. That said, a good rule of thumb is waiting until after lunch. This is when the pace has eased up, the post-work vultures have yet to circle the watering hole, and bartenders are less occupied allowing for more attentive and personlized service.

Special Hearts in the Arts Fulfilling a need in the community one painting at a time By: Jessie Monsivais Photos by: Rachel Benavides

S

pecial Hearts in the Arts is a nonprofit organization that promotes art, music, dance, and theater for people with special needs. Sherri Davis, the woman behind the program, shares how the idea came to her.

“It was a dream of a butterfly princess and a frog on stage. The frog, who was chasing the princess, was a young boy in a wheelchair with frog legs on the wheels that made it look as if he were hopping on stage.” Sherri says she woke up with a newfound sense of purpose. After sharing her idea with everyone she knows, Special Hearts in the Arts has grown with support from the community, family, friends, and students. “It’s a need in the community. We didn’t realize how much of a need it was. I’ve just always

wanted to do it because I have a 42-year-old nephew that has Down Syndrome. When he was born, I fell in love, and it just continued from my love from that.” In December 2016, Special Hearts in the Arts came to be a place where individuals with special needs explore the fine arts through classes led by trained professionals, culminating in live performances for the community. Malai Riley, a 20-year-old woman who participates in the program, loves Special Hearts in the Arts. “I think it’s pretty cool! I love art, and I love to draw horses,” says Malai. Her mother tells the story of the day she brought Malai to Special Hearts in the Art’s second class and found everything to be so perfect that she thought the organization had been running for years.


“THIS IS NOT ‘ME RUN;’ IT’S MY VOLUNTEERS. THE VOLUNTEERS THAT HAVE WALKED THROUGH THE DOOR ARE TREMENDOUS PEOPLE. PEOPLE THAT WALK IN AND STAY ARE FAMILY,” SAYS SHERRI.

“This is not ‘me run;’ it’s my volunteers. The volunteers that have walked through the door are tremendous people. People that walk in and stay are family,” says Sherri. The support from other organizations in the community, including Harbor Playhouse, Del Mar College, John Paul II High School, and many more, have played an integral role in the organization’s success. Six months ago, the organization acquired their building. The Special Hearts community came together to clean, paint, and plant, making their new space warm and inviting. Today, more than 25 students enroll in every

class. Special Hearts in the Arts plans to expand by offering afternoon classes and using the areas upstairs. As an educator for over 40 years, Sherri says she hopes the program grows to be more than just classes for special hearts. “My goal is that these kids run this place. I’ll open the door, and they’re in charge. I want them to be directors, the performers, everything.”

MEET Ashley Arevalo Local philanthropist has a mission to end the stigma on periods and provide women with the proper products

WHAT EXACTLY IS THE PERIOD MOVEMENT? The PERIOD Movement is all about celebrating periods and trying to erase the stigma when it comes to talking about them. We also get involved in the community by making period packs to distribute to local shelters. These include items all women would need for their period! HOW DID YOU FIRST GET INVOLVED WITH IT AND ULTIMATELY START A CHAPTER HERE? Sometime in 2016, I saw an ad on YouTube

from Kotex about a product drive they do to donate to homeless shelters. I thought it was such a good idea and I felt kind of guilty because I didn’t realize this was an issue the United States was facing. In November of 2016, I decided to do a Go Fund Me to raise money to donate period products to local shelters. I ended up raising a little over

$1,200 in 13 days. I was doing more research and discovered PERIOD. The Menstrual Movement, and I then decided to start a chapter here in Corpus Christi. WHY IS THIS CAUSE SO IMPORTANT? I never have to worry if I have enough money to buy pads and tampons and it breaks my heart that some women/girls have to skip school and miss out on opportunities due to their period. So, with PERIOD. Corpus Christi we try to bring awareness to an issue that usually doesn’t receive a lot of attention. WHEN YOU AREN’T BUSY HELPING THE COMMUNITY, WHAT DO YOU DO FOR FUN? I love spending all my money on concert tickets to see

my favorite bands! I also love relaxing and watching movies then recreating the outfits on my style blog.

This story, like most, starts with curiosity. Regardless of how one fell into the craft of mixology, each individual origin story begins, and also kind of ends, with inquisitiveness and the idea that pushing boundaries is an endless quest. Some might say mixology is just a fancy word; however, there is meaning behind it. Endless hours of experimentation lead to a long trail of successes and failures until the perfect drink, a pleasing concoction appealing to all five senses, is created. Here in the Coastal Bend, a handful of people stand out when it comes to the local mixology scene. Lomax Ben

Bar Under the Sun

Ben Lomax has been in and around the bar business for almost his entire life. Even when we left the bar for a career in the oil industry, his love for crafting a good cocktail never left him. He and his wife, Lesley Lomax, decided to take a risk and open up Bar Under the Sun. They hoped to not only expand the craft cocktail scene in Corpus Christi, but to also be part of the growing evolution of the downtown area. Putting BUS’ cocktail menu together was one of Lomax’s favorite parts of opening the bar. “Research and development,” he says with a laugh. Experimenting in his kitchen with various ingredients and sharing those experiments with friends and family proved to not only be an exciting experience, but a beneficial one, all contributing to the end products you can now order when visiting the bar. In a world where most things are reinventions of what came before, mixology is no different. “I pull inspiration from a flavor or a feeling I want to experience,” Lomax says in regard to his creative process. “But, when you look around, almost everything has been done already. So, you kind of have to riff off of things and put your own twists on something in order to create something new.” Quality ingredients and learning how to do things the right way are key components to what makes

mixology what it is according to Lomax. “Mixology is really about knowing your craft. It is about knowing where something comes from, how it was made, what flavors will affect other flavors – there is so much information and knowledge behind it all” It’s no secret people taste with their eyes and Lomax is well aware of this fact. “The aesthetics of a drink are a much bigger deal than people might think,” he says. “Really, if something doesn’t look good, it might as well also not taste good because the person has already judged it before they’ve even taken a sip.” It is this very reasoning Lomax has put so much time and effort into perfecting each of their signature cocktails. Like all seasoned mixologists, Lomax knows trial and error is a huge part of the process. “A lot of the stuff you end up making tastes terrible. I mean, for every cocktail on this menu there are 10 other crappy versions of it.” He knows it only takes that one stroke of genius to create a drink worth sharing with hundreds of other people every Friday night. In the simplest of terms, Lomax refers to the personal, gathering aspect of sharing a cocktail with someone as an experience. “It just provides an atmosphere for memories to be made, and the cocktail is at the center of it.”

McClain The Pioneer

One could say Jacob McClain is the progenitor of the craft cocktail scene here in town. He’s had his hand in creating the cocktail menus for places like The Post and The Gold Fish. When the topic of mixology comes up, area bartenders mention him, crediting him for their own inspiration and passion. McClain, simply put, has helped pioneer the way for what the current craft cocktail movement looks like and the future it holds here in the Coastal Bend. 20 years ago, at a family-owned bar in Houston, McClain decided to try his hand in what would soon become one of his biggest passions. From barback to bar manager, he worked in several different spots around town before eventually moving to the Coastal Bend in order to put his degree in Marine Biology to use. Instead, thankfully, the bar industry pulled him back in. After hearing that a bar specializing in craft cocktails was on the verge of opening, he knew he had to put all of his knowledge and fervency for mixology to good use. He took his talents to The Post and began paving the way for the craft cocktail in Corpus Christi. “People started coming in and being shocked that we could make a good, and correct, Old Fashioned,” he says about the early days of The Post. For McClain, efficiency and precision are key. He’s a methodical man and believes each craft cocktail

has a base formula and, once becoming more experienced and knowledgeable about the craft, can be tweaked in order to create innovative spins on the classics. When it comes to the perfect marriage of science and art in order to create a drink, McClain takes it seriously. “I’ve done the research and I am constantly learning new things. I’ll never be done learning,” he says, “There is a lot that goes into this: the way you muddle something, the way alcohol gets broken up when certain components are added, the type of ice you need in order to create the right amount of surface area – these are all things that matter.” In a word, he describes mixology as a dance. One, that overtime, can be perfected to a T. If you watch while he’s looking at a bar and all of its contents, you’ll see his mind begin to race. He is thinking of all the combinations he can make with the various liquors available. He is surveying his options in a way that will allow him to create a drink perfectly suited for the person ordering it. Although he describes his craft as a dance, McClain’s creative process resembles that of a painter beginning a new masterpiece – meticulously choosing each ingredient, for he knows each element will have a very specific effect on one another. His commitment and enthusiasm to the craft of the craft cocktail is uncanny, and quite honestly, unmatched.

Green Michael

The Post

I learned about Michael Green’s “mad scientist” reputation before I even met him. Needless to say, the reputation exceeds him. Like a lot of people behind the bar, he started in the kitchen. Like a lot of people behind the bar, he started in the kitchen, and when asked to get behind the bar, his go-to mentality of learning how to do something as fast and as good as possible kicked in. He poured himself into his research and found he loved the idea of being able to get creative behind the bar. When describing mixology in his own words, you can see the wheels in his brain begin to turn. The passion he has for crafting a cocktail is uncanny. A light in his eyes turns on and you are compelled to sit back and listen. His answer? “The art of combining flavors in a palpable way and having a design aesthetic in mind, to where you take every sense into account. It is really understanding all of that and then going from there” It’s often difficult to know how well different flavors will blend together until you try. Green describes this guess as the combination of faith and art. “I’ll come up with something at home, and I don’t have the same selection of ingredients at home obviously as I do here at The Post, and so I will think I have a great epiphany of a new drink and won’t really know it until I get here and make it,” he says.

Only eight years into his career as a mixologist, Green is just getting started. He studies both herbology and botany and has even picked up gardening. His homegrown herbs become ingredients in the drinks he makes at The Post. He is continuously learning and soaking up new information all contributing to the final product a patron ends up sipping. “Just like any artist, someone looks at your craft and judges and dissects it and that’s scary,” he says. “But it just comes with it, and you have to roll the dice to create something new.” For Green, education is the key for both the mixologist and bar patrons. Having conversations with people sitting at the bar about how the drink they have ordered is made or the flavor and texture components of it is one of his favorite things. “It really creates a full experience for someone and then they get to leave here knowing something they didn’t before, and maybe even have a broadened concept of the craft cocktail,” he says. He jokes about how shocked he is that more people in this town aren’t drinking out of tiki glasses and how “more umbrellas in drinks” is an issue we should all be caring about. However, he ends on a more serious note. “These drinks elicit feelings from each person and you then get to share those feelings with others and it becomes one shared experience, and that is something pretty special.”

Green Light Coffee For Zak Kaszynski, the scents, aromas, and execution behind coffee, wine, and cocktails, and the experiences they provided him with at his previous jobs, all meshed together in order for his love for mixology to arise. When it came time for Green Light’s newest location to fashion their cocktail menu (a path they they had yet to travel down), they knew Kaszynski was the perfect man for the job. “We had always wanted to start doing cocktails,” he says in reference to the origin story of the newest addition to their menu. “We wanted to also show people cool twists on something they may have already seen before and kind of upset the norm. We wanted to show everyone cool, new flavors and experiences for people looking to get a craft cocktail.” Being able to taste each element in a cocktail, in all of its layers and complexity, enthuses Kaszynski. He describes each component of the drink as helping the others out, allowing the drink to be one cohesive product that will allow someone else to experience it in awe. “That experience really is what 40 The Bend

drives me to do this,” he says. “Being able to combine things in different ways and feel that shift on your palate – that’s something else.” “Mixology really is alchemy and in that, you are trying to appeal to each of the senses,” he says. He talks about the combining of ingredients in a way that makes it sound like a math equation. There are multiple ways to solve it, but finally reaching the answer provides a glorious aha moment. “You are trying to take all of these weird things – grains that have been fermented and distilled and weird fruits all thrown in together and filtered out – all of these different processes that go through a thousand hands before it’s bottled and brought to you, and then you’re combining them in a way to basically make gold.” This concept energizes him. When creating the cocktail menu for Greenlight, Kaszynski – along with Sarah Hans, the owner – had two goals in mind. They wanted a nice variety of items to where someone from any walk of life would find something they would be interested in. They also wanted to feature a lot of the work they did to discover the cool beverage flavors with which they were already working. The result? Eight signature cocktails, each with an intriguing story of its own. Kaszynski describes his favorite kind of art form as one that is experienced and then gone. That is exactly what a craft cocktail is – a moment of pure artistic experimentation that is enjoyed by the observer before it slips into a memory. Simple, yet impactful.

The Top Sider Lounge

Inside the Omni Hotel on the second floor, a cozy bar, The Top Sider Lounge, welcomes visitors with smiling faces and the freshest of cocktails. Behind the bar, you’ll find Sky Shook, a friendly and fun-loving mixologist, whipping up some of the best craft concoctions in town. However, Shook hasn’t always been behind the bar. She once spent her shifts rolling up sushi until one of the bartenders suggested she step out of the kitchen and bring her talents to the forefront. From there, the rest is history. Her engaging personality allowed her to come into her own behind the bar. “Especially working in a hotel bar, you get to meet so many people from all over the world,” she says. “It’s so crazy to have conversations with these people as they sit at my bar.” Creating a mood or a feeling with a drink for someone is what mixology is all about for Shook. She will never tire of being able to serve a total stranger something that could lift their whole day. “You really can paint a picture with a drink,” she says in regard to using mixology as a creative outlet to serve others. “Then you are able to pair it with a nice meal, and you create an entire mood for someone.” Taking classics and tweaking them slightly is really how Shook begins her creative process when coming up with new drink ideas. “A simple twist on a classic can create a whole new drink no one has ever had,” she says. When it comes to sharing a drink with others, Shook believes your sense of urgency evaporates and you’re able to sit, relax, and enjoy the people around you. In a world where we are constantly on the go, it might be smart to take a page out of her book.

The Gold Fish When recalling how mixology became a part of his life, Al Juarez says, “I fell into it by, well, not a total accident.” He had been working as a chef for a while and when struggling to go back to school, he realized he needed to make more money, but work couldn’t interfere with his class schedule. So, he started as a bar-back and worked his way up. Now, as the lead bartender at The Gold Fish, he has really been able to embrace his role and creatively come into his own. He looks at his craft as a way to challenge himself every day and with every drink he makes. “Not all the time, but every now and then, you’ll strike gold,” he says. “You might have 100 attempts and 99 of them all fail, but it only takes that one successful attempt to change everything.” He explains how the quality of ingredients determines the way a cocktail will taste. “You know, even something as simple as a vodka soda can be altered with the freshest of

ingredients. It’s all about providing the customer with a drink, regardless of how complicated or not the order might be, that they will enjoy.” Collaboration and understanding that everyone has different palates is how Juarez begins his creative process of creating a new drink. Say a customer comes to the bar and says they don’t know exactly what they want, but they know they want something salty and with pineapple. It is instances like these were he finds his inspiration. “It might not be something I would drink, but I am interpreting what they are they say they want and then creating it for them to enjoy.” He compares it to being commissioned for an art piece. The consumer describes their vision, and it is then up to the artist to interpret those ideas in a way to please the consumer. Juarez refers to the craft cocktail as something you’ve never done before. “I’m going to not only push the boundaries of mixology, but push my own boundaries,” he says. “It can start with one component, but when you start layering all your other ingredients – I mean, you are crafting something special.” When it’s all said and done, he says one should expect the unexpected when it comes to a craft cocktail. Juarez’s end goal for each drink is to make the person who ordered it not just happy with the outcome, but excited about it, and for them to leave with the intentions of returning.


Peppers Mary

LATITUDE 28°02’ One could say Mary Peppers was born to be a mixologist. Her over 40 years of experience in the bar industry has stretched cross-country. She spent 10 years in Los Angeles, 22 years in Chicago, 4 years in North Carolina, and lastly, she brought herself and her craft to Rockport. The staff at Latitude jokes that instead of them offering the job to Mary, Mary offered her skills to them. And, thank God she did, because no one can make a martini quite like Mrs. Peppers. Peppers, having lived all over the country, has curated Latitude’s entire martini menu with drinks she says you can’t find anywhere else. “All I ever wanted to do was be a bartender,” she says in reference to how she got started. “You can point at anything behind that bar and I will tell you everything you would ever want to know about it.”

In her own words, she describes mixology as simply cooking with liquids. Attempting to create something unique and brand-new keeps things interesting. There are no limits. The bar business is constantly changing, and Pepper knows her creativity has to keep up with the innovation. “The beauty of creating a new drink is that everyone sits here and drinks. And we drink…and drink…and drink…and then you’ve got it.” Trial and error come into play every time Peppers concocts a new drink for the menu. “When you get that final product,” she says, “something you’ve totally created, and you see someone else’s reaction, it’s awesome.” Peppers knows her craft like the back of her hand. Hearing her talk about how certain liquors taste with other ingredients is mesmerizing. You can’t help but to listen in awe when she speaks about the craft. When asked what people should know about getting a cocktail from Latitude, her response is simple, and having spent only thirty minutes with her, I couldn’t agree more. “This is a place you will remember, and you’ll sure as hell remember me.”

T

here is one thing most people can agree on: sharing a beer can turn even the strangest of strangers into friends. Entire social groups have developed around this popular libation. People meet to share their favorite brews or connect with people across the country to share their regional offerings. However, it’s not only the beer connoisseurs that make microbrewing special but the microbreweries themselves. They’re diverse, eclectic, and they support one another in hopes that not just one, but all micro-breweries are successful. What would the world look like if businesses cooperated with each other in attempt to grow their industry and help one another succeed, rather than drive each other out? Instead of fighting against each other and staking out territory only for themselves, microbreweries in the Coastal Bend have formed a community, which allows several breweries to thrive in the area. Each one adding a unique contribution to the city. In today’s American craft beer landscape, microbreweries operate in a spirit of community and solidarity that is often unheard of in any other industry. They embody a spirit that capitalism has attempted to squash out of existence. This cooperative spirit has caused the craft beer craze to explode across the country and around the world. That same inter-business camaraderie can be witnessed in the microbreweries serving our Corpus Christ community. Lazy Beach Brewing Co., located on Saratoga, provides an easily accessible spot for sharing a locally produced craft beer with friends. Rebel Toad Brewing Co. brings attitude to their brewing methods, while serving the greater downtown area with bold, in-your-face ales. With its large outdoor seating area, Flour Bluff ’s Lorelei Brewing Co. provides a laid-back vibe while staying current with the latest brewing trends. Psi Brewing, located inside Garrett’s BBQ on Ayers, brings the Haze for Daze, a unique approach to the Hazy (New England) IPA to the Coastal Bend. To round out the list, B & J’s Pizza and Railroad Brewing Co. are our local brewpubs. The rest of the microbrews can be found all over town at local watering holes and chains like TGI Fridays. While each brewery has its own vibe, niche, and energy, there is one thing that threads them all together: a love for beer and a community that supports one other.

However, with all of this growth and expansion, even the most knowledgeable and experienced brewers need some help. Where there’s a problem there’s always a solution. In a bold move that breaks with the norm of the local Corpus Christi entrepreneur community, the band of brewers created a Brewers Meet-Up. The group gets together monthly to discuss the latest beer trends and to share tips and tricks with one another. “This is what everybody across the country does because, why do this alone? We should do this together, talk to each other about what works for everyone and grow as a community. We all jumped on it and have been doing the meet-ups for over a year now,” says Varian Criser, co-founder of Lorelei Brewing. But it’s not purely altruistic; there are clear-cut benefits to more breweries popping up and supporting one another. In regard to other cities that have experienced a craft beer boom, Varian says, “Every city has seen the more breweries that arrive, the better they all do. Most people don’t want to just sit at one brewery for the entire night, they want to go to several breweries.” Corpus Christi is well on its way to becoming a thriving place for this kind of culture with it’s 7th brewery, Nueces Brewing Co., opening in 2019. “We really want to focus on lagers and make beer you can drink and #GoPlayOutside,” says Cale Moore, co-founder of Nueces Brewing Co. The focus behind this newest craft beer purveyor is to seamlessly fit into the community they’re a part of. Being right by the Bayfront, their brewing philosophy is centered on spending days outdoors and by the water. In regard to the sense of community in the craft beer scene, Cale says “Varian and everyone else doing what we aspire to do in Corpus have been very supportive and have helped us out along the way.” A look at local microbrewery scene wouldn’t be complete without a special acknowledgment of B & J’s Pizza. Since the beginning, they have had a very dedicated following and a customer base which is crazy for craft brews. Some customers have logged thousands of unique beers, earning themselves a special spot on the wall at the original B & J’s location on SPID. B & J’s has been promoting the culture and knowledge of craft beer for years.

All of the local microbreweries share a similar beginning. Typically, the brewmaster began home brewing and eventually decided to branch out. Cory Mathews, founder and brewer at Lazy Beach Brewing Co. says, “It started as a hobby and we said, ‘Why not start a brewery?’ We started in a few bars around town, and now we’re in about 50 different bars and restaurants.”

It looks like that spirit will continue to boom in South Texas over the next decade, as long as microbreweries continue to support each other in hopes that they will all succeed. “That’s the good thing about craft beer. Everyone has their own style, and there’s room for everyone to succeed,” says Hector Cavasos, co-founder and brewmaster of Rebel Toad Brewing Co.

But Lazy Beach isn’t the only brewery experiencing success. Since opening, Lorelei, Rebel Toad, and Psi Brewing have achieved great things. Lorelei expanded into canning and now distributes to San Antonio. Rebel Toad increased their capacity, and Psi sells out of new brews almost instantly.

And there you have it. Not only do microbreweries supply us with the latest craft beer trends, but they also give us a glimpse of what the world would be like if businesses worked together instead of tearing each other down. Here’s to good brews and entrepreneurial teamwork – bottoms up!

FOR THE CHILDREN How the CARE team fights for child abuse prevention

M

eet Ada Booth, M.D., F.A.A.P. and attending physician with the Child Abuse Resources and Evaluation (CARE) team at Driscoll Children’s Hospital. The CARE team primarily provides medical forensic services to children who are victims of physical abuse, sexual abuse, and neglect. The team consists of two board-certified child abuse pediatricians (Dr. Booth and her counterpart), forensic nurse examiners, social workers, and support staff with involvement from hospital administration. Before joining the CARE team, Dr, Booth received her medical degree from Indiana University School of Medicine in 2006. She completed her pediatric residency training at University Hospital and Clinics at the University of Missouri in Columbia. While Dr. Booth had been interested in medicine her entire life, she quickly realized that her passion was pediatrics. “I like peds because the patients are always positive,” says Dr. Booth. “Pretty much regardless of the situation, they are happy, smiling, and laughing – even through the toughest situations.” Therefore, she knew early on that child abuse prevention fulfilled her professional interests. The prevention work is still her favorite part of her job. Having spent seven years in Corpus Christi so far, Dr. Booth is all too familiar with the child advocacy needs in the community. Much of her work starts with the medical staff at Driscoll, where the medical office alerts the CARE team of suspected neglect of a child. However, Dr. Booth receives child abuse patients from many sources. “We receive referrals from inves-

tigative agencies or even families if they are aware of our services,” explains Dr. Booth. “We hope people don’t ever have to use our services, but we want people to know that we exist and can come directly to us,” she says. That’s where the prevention work comes in. Dr. Booth and the CARE team often partner with local non-profit organizations that partake in child advocacy initiatives to spread awareness about non-accidental trauma and child abuse. One particular non-profit, Court Appointed Special Advocates (CASA), has a more specific relationship with CARE. At times, CASA will consult the CARE team when they need more information about a child’s medical issues and injuries to support a case in the event of a trial. Dr. Booth understands the enormous responsibility that falls on pediatric physicians. She explains that in a way, “the ownness is on peds to fix the world…because it is the children who grow up to be the future of the community.” The work of the CARE team is more vital than anyone might think. Before CARE existed, children in abusive environments would essentially be returned home to more potential harm. Now, Dr. Booth, who currently serves as the Child Abuse Prevention Specialist for the Texas State Fatality Review Team, has banded together with her local teams with the singular focus of helping to reduce the number of preventable child fatalities in our community.

The Anatomy of a Doctor Ready to Serve Solving radiology imaging puzzles to save lives By: Kirby Tello Photo by: Rachel Benavides

D

r. Robert Yang is one of the newest Radiologists to serve the Corpus Christi community. Dr. Yang came to Corpus Christi in July 2018 to join the Radiology Associates practice. Originally residing in Houston, Chicago, and finally Dallas during his residency, he was certain Corpus Christi was the right place for him because of the immediate need to help women in this community. Dr. Yang didn’t always know he would become a radiologist, however. He started his career as a Personal Trainer at the American College of Integrative Medicine. During his time in fitness, he started to become more and more interested in human anatomy. His friends and family, having seen his passion come to life, suggested he consider going to medical school. It was in his third year at Chicago Medical School at Rosalind Franklin University he was able to choose electives as a part of his clinical rotation. There, he got to experience radiology. Radiology is what drew him in because he could really see the anatomy and how it ties directly back to a patient’s physiology. Dr. Yang found that extremely rewarding because “it was like solving a puzzle through imaging,” explains Yang. Once he decided to go into radiology, Dr. Yang sought out continuing education and training in an area a little closer to home in Dallas, TX. Although his family lives in Houston and he has extended family in Dallas, it was ultimately the culture of the training at Baylor University Medical Center that drew him back to Texas. The environment and the hardworking and congenial atmosphere were elements that allowed him to excel in his Breast Imaging Fellowship. In June of 2017, after his Radiology Residency at Baylor University Medi-

cal Center in Diagnostic Radiology, Dr. Yang started looking for a place in Texas where he felt he could provide the most impact on the patient level. Corpus Christi topped the list for him because radiology is not a crowded space, which means there are a lot of opportunities to provide value in serving the Coastal Bend population. “Fifty percent of the total population in Corpus Christi are female and the city is anticipated to keep growing,” says Dr. Yang, “and there are just around six dedicated Breast Imaging subspecialists providing this medical service.” What is so fascinating about why Dr. Yang is excited to wake up and come into work is that breast imaging and mammogram is one of the few screening processes in healthcare that has been proven by multiple studies to reduce the mortality rate in patients. Along with Dr. Yang, each of his colleagues are advocates for creating a very strong relationship with the community. The entire Radiology Associates team is unique in the sense that Dr. Yang’s entire team is a cohesive unit. That includes the community awareness efforts, led by Carmen Arias, Director of Marketing, who does a phenomenal job executing a grassroots approach for spreading the importance of women’s imaging by way of annual mammograms. Dr. Yang sees his future in Corpus Christi involving more immersion into the community and continuing to serve the people of Corpus Christi through his radiology work. He finds the Coastal Bend community to be one where the people are kind and hardworking. So much so, that Dr. Yang is excited to continue to help build the Radiology Associates practice and hopefully recruit some of the colleagues he has worked and trained with in other cities to join him in the sparkling city by the bay.

iffany Batchelor never imagined she would be leaving her home in Dallas. When her husband found a job in Corpus Christi, the Batchelor family was ready to embrace the change.

Tiffany had an idea of what she wanted in a home, but the stars aligned when she discovered this home in Bessar Park, one of Corpus Christi’s premier neighborhoods. She quickly fell in love with the two-story canary yellow house. Built in the 1940s, this house showcased every element of an old-style home that Tiffany desired. The home was recently renovated with designs, colors, and a layout perfectly matched to her tastes. The stunning black and white palette offered crisp lines to complement minimalistic ideals. With ample room, this grand house welcomes guests with large brick columns at the foot of the brick pathway. The lush, green yard and the brick edged garden provide curb appeal. Enchanting, statuesque oak trees add charm and character to the scene. The updated kitchen includes honed granite countertops, a gas range, a warming drawer, a plethora of pantry space, fabulous lighting, and a wonderful view overlooking the large dining area. The humble charm of the subway tile backsplash creates a stunning array of uniform lines, adding to the clean, fresh ambiance. A love of family and memories abounds in the family room. The focal point of the family room is Tiffany’s childhood piano. The vintage brown shade is a lovely contrast against the soft colors of the furniture and decor. The bright white surfaces of the family room allow the space to feel as open and roomy as possible. The spacious room also makes for great acoustics. Tiffany values art and friendship, and what better way to adorn the walls of her family room than by displaying artwork created by a friend in Dallas. She and her husband received the beautiful oil painting with a “13” emblazoned over the pastel shades for their thirteenth wedding anniversary. Every entrepreneur needs her office space. What was once a porch is now a closed-in area with large French doors offering a beautiful, natural setting with an unobstructed view of the backyard. The woven wood shades offer the option of a more subdued aesthetic for working. Artwork from Paris adds a touch of color, along with memories of her travels and friends made. The L- shaped staircase leads to a stained-glass window making a brilliant focal point. The stained-glass window lends color and character to the hallway, while inviting light without surrendering privacy. The grand and gorgeous master bedroom on the second floor provides an inviting entrance to a private balcony overlooking the front yard. The floor is painted in black and white grid squares, creating a nice contrast with the canary yellow exterior. The airy and fun vibes of the balcony beckon for a quiet, relaxing time with a great view to admire. In a clever attempt to maximize space, a large bedroom was split into two smaller bedrooms, perfect for Tiffany’s schoolaged children. At the end of the hallway sits a large shelf with books and games, allowing the children to claim their space. ardeners have long recognized the important role birds play in pest control. In the pioneer days of America, farmers strategically located birdhouses throughout their fields and orchards to protect their crops from pests.

The birdhouses were made from bark or twigs or even the hollowed-out skulls of cows and horses. These birdhouses were a lot of work, but farmers went to the trouble because they saw results. The crops nearest the birdhouses always showed the least amount of pest damage. Benjamin Smith Barton was a leading botanist in early America. He trained Meriwether Lewis for the Lewis and Clark expedition. In 1800, Barton wrote an essay called The Usefulness of Birds, which explained the role of wild birds in pest control. This work shed scientific light on a fact that farmers already understood.

But the farmers of that day soon realized that habitat destruction was hurting bird populations, which in turn caused problems in agriculture. As early as 1823, garden writer James Worth blamed increased crop damage on what he called “the wanton destruction of the feathered tribe.” He said birds are the “link in creation [that keeps] the insect race within bounds.” In that long-ago age, when birds still flourished in unimaginable numbers, farmers were already feeling the loss of their feathered helpers. Today, we need birds in our gardens more than ever. To bring birds to your landscape, hang bird feeders close to your garden. Feeders provide a supplement to the natural diet of birds, which is especially helpful in December when seeds and berries are scarce. Birds will soon congregate in your trees and drop in and out of the garden to eat pests. A feeder plus a birdhouse and birdbath is the ideal way to keep birds close to your garden. Birds love water. At a minimum, place a few shallow pans of water at the base of your vegetables and flowers. The birds will visit your garden to drink water and eliminate insects while they are there. They bring color, song, and joy to the landscape and powerful natural pest control to your garden.

W

hen Jenny Espino first assembled the Corpus Christi Dance Collective, a community dance school and arts movement, she knew she wanted it to become an award-winning company.

Serious dancing can be compared to standardized testing. There’s an evolving way to do both – with gain rather than strain – and that comes from a well-stretched mind and body. With instructors Jenny Espino, James Vargas, and Carlos “Los” Cano, the collective has given dancers in the Coastal Bend area ownership of their dance education instead of an overload of techniques to absorb. A lot less to carry makes these dancers lighter on their feet. Like any other artist and their art, dancing becomes an outlet for the dancer. That’s Espino’s vision of the program: hardwood studio floors for a (well-stretched!) artist to develop healthy coping mechanisms and forms of expression. The art of dance in its many forms has let Espino

witness breakdowns in a dancer as well as breakthroughs. “My teaching principles are guided by Paulo Freire and Bukovsky, people who have developed more collaborative learning,” says Espino. With a background rich in training and teaching, her decade of teaching dance in both private and public institutions has not been limited to hip-hop, jazz, contemporary, and lyrical dance styles. “As any educator, it is your responsibility not just to teach the discipline or the field you know you’re teaching, but also to get learners closer to figuring out the things that make them feel the most human and live their most purposeful lives,” Espino explains. “It will be different for everyone. While it’s not necessarily in my interest to determine what that is for each dancer, my hope is that through dance and through the type of learning environment we create, dancers are able to get closer to the things that make us feel the most human and the most purposeful.”

Curriculum at the CC Dance Collective partners knowledge of dance with knowledge of self. Developing muscle memory and work ethic and then translating those lessons inward doesn’t happen overnight. In terms of competitive dance, students will spend all season training and go to five, seven, or as many as eight competitions in a year where they’re judged on very specific criteria. “We try not to pressure dancers who are just looking for a creative outlet or a physical outlet,” she explains. “But we do have some dancers who are incredibly invested in what they’re doing at the moment and have this deep interest in what the future of dance might hold for them, whether it’s in college or professional commercial business.” Those dancers, for instance, usually take about three or four hours of dance a day. The collective also works towards annual showcases and recitals in Corpus Christi as a way to let the community know what’s going on inside the studio walls.

“Live dance is really an important thing, and it’s such a dying art form, and it horrifies me,” Espino says. In addition to learning light turns, leaps, and stretching and strengthening techniques, the dance collective’s mix of competitive and non-competitive dancers also practice video and music video work. These projects will aid them in their journey going into academia or commercial professional dance. “There is something we’re offering and trying to offer. Development, creativity, all of the stuff you should be trying to foster in young artists. But I think the approach to developing those things is different for different studios,” Espino says about her collective, where she helps dancers achieve their goals on their own terms.

n Christmas morning, one thing is different in our house than every other day of the year: our little ones wake up first.

We hardly hear their running footsteps before they jump on top of us in the bed to tell us about the presents beneath the tree and the signs that Santa Claus found their cookies and milk. We start opening the presents right away. The wrapping paper flies. One grandmother arrives, then the other, then Grandpa, each with more presents. Next the cousins arrive, then Nan, then aunts and uncles, friends of family, and friends of friends. Wrapping paper is piling up in all directions. Our Christmas tree flashes and glitters with homemade ornaments. Old-fashioned carols play on 90.3FM. Children race in shouting packs from one room to the next to try out their new toys. Someone let the dogs in and they have wrecked half the living room before we swat them out. Our home is filled with laughter, joy, and a raucous Christmas spirit. But there is one major problem with all of this. Mom and Dad (that’s us) have not had their coffee yet! We have not had a second to make breakfast and it is still a long time till lunch. This houseful of people, starting with our sweet babes, will spiral out of control if we don’t

serve some good food soon to fuel their Christmas morning. That is where the Swedish Tea Ring comes into play. This regal cousin of the cinnamon roll is the perfect Christmas morning breakfast. First, it is simply beautiful. The colorful ring shows all the goodness inside oozing out with icing over the top like an exquisite frost. The children gently tear apart their own pieces. Of all things in the house on Christmas morning, the tea ring gets the most respect! This dish is not what we might call health food, but it is much healthier than your standard issue cinnamon rolls. The bread is dense and delicious. The filling of dried fruit and nuts gives a great energy boost. The cardamom and cinnamon create a wonderful, unique flavor. The natural sweetness makes this dish work. Best of all, you can prepare the Swedish Tea Ring the day before and simply set it out for breakfast—instant goodness on the table and ready to go. The Swedish Tea Ring completes the picture of joy on Christmas morning. A hungry family can quickly become an angry family. But this dish will keep them happy and well until lunch. Now, where is our coffee? Merry Christmas to all!

SWEDISH TEA RING SERVES 8

Prep time: 30 minutes Inactive prep time: 1 hour 30 minutes Cook time: 25 minutes INGREDIENTS: DOUGH

1 cup whole milk ¼ cup granulated sugar ¼ cup unsalted butter 1 tbsp active dry yeast 4 cups all-purpose flour ½ tsp salt 1 egg FILLING

6 tbsp unsalted butter 4 tbsp granulated sugar 4 tbsp light brown sugar 1 tbsp cinnamon 1 tsp ground cardamom ¾ cup golden raisins, or mixed dry fruit 1 cup chopped pecans or walnuts ICING

1 cup powdered sugar 1 tbsp milk ½ tsp vanilla DIRECTIONS:

Combine milk, sugar, and butter over medium-low heat and cook until butter is melted. Let cool to lukewarm (around 100°F) and add yeast. Set mixture aside and let it ferment until foamy bubbles form. In a large bowl, combine flour and salt. Add milk mixture and egg to dry ingredients and knead (for about 5 minutes) until a smooth dough

forms. Cover with a tea towel until dough doubles in size (about 1-1.5 hours). Heat butter in a small pan over low heat until melted. Meanwhile, combine sugars, cinnamon, and cardamom in a bowl. Add melted butter to sugar mixture and mix until a paste is formed. On a floured surface, roll dough out to an oblong rectangle (about 6”x 16”) about ½“ in thickness. With a spatula, spread a thin, even layer of sugar-cinnamon filling to cover the dough’s surface. Sprinkle dried fruits and nuts evenly across the dough’s surface. Starting with a long end, roll the dough inward, forming a swiss roll. Bring the ends of the roll together, and pinch all of the seams together to seal them. Using a sharp knife, cut the ring ¾ of the way through, leaving the center of the ring intact. Repeat this cut, every 1 ½” with the remainder of the ring. Rotate each piece of dough until the cut portion faces upward. Cover the ring with a clean, dry cloth and let proof. Preheat oven to 375°F. In a small bowl, combine ingredients for icing. Bake ring for 25 minutes, until dough is golden brown and sounds hollow when thumped. Let cool on a cooling rack and drizzle with prepared icing prior to serving.

Wholesome & Pure How one local gal turned her passion for clean eating and creativity into her dream business

M

any of us make health resolutions for the new year, but the challenge of change can be daunting. Often, our good intentions diminish faster than we can get started. However, a juice cleanse could be the perfect way to fire up a productive new year. One young woman who has incorporated fresh pressed juice into her everyday diet for the past four years is now running a successful juice company. Coryn Wenger is not your typical 18-year-old. Her entrepreneurial skill set comes from helping run her parents’

business. “Growing up around business energy and throwing your creativity into something that makes you feel alive, I always wanted to do something on my own, something creative,” she says. In January of 2017, she launched Roots Juice through pop-up shops and by selling to friends and family. Her first Instagram post blew up, and the next day she had an order for 100 bottles of her fresh pressed juice. “I was really excited; it was such a beautiful shock.” Roots Juice specializes in detox juice packages. The most popular


is a three-day cleanse that helps reset your mind and body as well as cleanse your organs. “In our daily lives, we breathe in pollution and just gunk. The things we eat, even if you do eat a healthy diet, still just kind of have clogged gunk that builds up in our organs, and it gets heavy,” says Coryn. She recommends a three-day cleanse every month to shake off that sluggish feeling and reawaken energy and mental clarity. Coryn found her passion for healthy living throughout her four years of being vegan. “Juice alone has always been a ritual for me, just to get in something so pure and wholesome. Raw juice is full of vital minerals and nutrients our body needs. To me, connecting nature and health consciousness really grounds me. I try to incorporate as much fresh produce as I can in my life. I find it easiest and the best tasting in juice form. Whenever I incorporate raw produce, it makes me feel the most energized and just kind of vibrating at a higher frequency. Spreading that around has just been the best.” Roots Juice’s ultimate goal of opening an entirely plant-based café is in the works. Coryn hopes to bring something that is welcoming to all, not only vegans. “I love recreating food that I grew up on – street tacos, buffalo wings…it’s not just going to be just salad,” she says with a contagious laugh. Roots Café will offer vegan meals for anyone who loves to eat! Of course, the quintessential fresh pressed juice will also be on the menu. he dynamic trio, Michelle Annette Donnelly, her mother Rocki Remington, and her son Jon Donnelly, teamed up to bring the sweet and savory tastes of the Parisian crepe and other goodies to the Coastal Bend. Let Them Eat Cake has been in operation for 13 years as an appointment based bakery. In an effort to provide a more family friendly and relaxing environment, they opened a restaurant style location in May. Living by the philosophy that “All the flowers in the world are not red for a reason because we have a beautiful garden; so why not

enjoy every flower out there?” allows these ladies to offer a varied menu that caters to all customers’ eating preferences. Sugar free? They’ve got it. Vegan or Keto? They have a recipe for those, too. Customers can enjoy the judgement free, family-friendly environment, where welcoming hugs, good food, and pastries are served. Using a farm-to-table concept with fresh local food and fruits, they prepare an array of handcrafted pies, turnovers, brownies, and muffins in small batches daily. However, delicious mouth-watering crepes are their true specialty.


Traditional Parisian crepes take center stage, setting them apart from other bakeries and restaurants in town. Most other establishments offer Swedish crepes, which have a thick pancake texture and are only served with fruit fillings. Parisian crepes are paper-thin and hold a wide range of ingredients. Michelle and Rocki’s crepes are made with buckwheat flour, a healthier alternative to regular flour. Their crepes, filled with unique as well as traditional ingredients, are large enough for a full meal. Every Tuesday, the bakery announces a “flavor of the week” crepe. Rich and savory flavors such as King Ranch Chicken, Philly Cheese Steak, Beef Stroganoff, Turkey and Cranberries, and Chicken and Pesto are only a few of their creations. Although these flavors are not permanent menu items, customers are welcome to make requests for past flavor combinations or suggest their own.

In the future, Michelle and Rocki hope to open a new location. For now, they are focusing on perfecting their craft. The attention to detail and welcoming atmosphere found at Let Them Eat Cake has quickly made the bakery a staple in the Coastal Bend.

ow known as La Retama Park, the area in the triangle between Schatzell and Peoples streets at Mesquite, served as a gathering center for downtown Corpus Christi for over a century.

Built in 1871, Market Hall was Corpus Christi’s first public building. On the first floor, vendors rented stalls and sold basic wares, including meat and vegetables, to the citizens of Corpus Christi. Dances and other community social events were held in a large hall. A belfry, housing the bell used to alert Corpus Christi’s all-volunteer firemen, stood on the west end of Market Hall. Today,

a historical marker recognizes this site as the original home of the Corpus Christi Fire Department. The bell, donated to the war effort during WWII, sailed aboard the USS Houston as the ship’s bell. It is now on display at the Corpus Christi Museum. Market Hall stood until 1911, when a new brick city hall was built on the site. Builders repurposed the wood from Market Hall for a house on the bluff. This continued the role of the location as a civic center for the citizens. Today, when you browse the vendors at La Retama park during Artwalk, know you’re doing just what this land was always meant for—supporting local people.
