The Bend’s home base is located in the heart of Water Street Market. When I get a craving for tacos, I stroll on over to Surf Club and grab some delicious blackened fish tacos smothered in their signature sauce. The fish is so fresh and they’re spiced perfectly – my mouth is watering just thinking about them. Is it lunch time yet?

For me, it’s not just about the taco, but the moment. Every Sunday, my wife and I have sat across the table from each other enjoying breakfast tacos at La Michoacana. Over the years we have become like family to all the employees. My go-to is simple, a straight up bean and egg. Inadvertently, tacos brought us a new family of friends who connected every week on Sunday morning. So, thank you tacos.

Gearing Up for Tacos

A

t this year’s Local’s List Party, I ran into Gerald Flores. He is pretty easy to spot in a crowd. Maybe it’s his perfectly trimmed beard any man would envy, but most likely it’s the fact that he is always decked out in taco covered apparel. We hadn’t spoken in a while, but I still considered him a key contributor at the magazine. We exchanged small talk and I pointed to the giant projection of the Local’s List logo spread out across the wall, which he designed a few years back. It is a brand he helped us create, along with our 7 Most Beautiful Women: Inside & Out and Brunch on the Bay event logos. I don’t know of anyone who loves Corpus Christi and tacos more than Gerald Flores. He started a graphic design company and named it Taco Creative after his favorite food

In spite of Hurricane Harvey destroying their farm and transforming their lives and careers, they have never missed an issue. In some special way, the spirit of Four String Farm lives on in these pages.

group. Around that time, he couldn’t find many t-shirts or hats celebrating tacos, so he took his love for tacos a little further and started Taco Gear. His apparel company, dedicated to tacos and taco lovers, has gathered a massive following around the country. When the time finally came for the magazine to showcase the best tacos in the Coastal Bend, I knew we needed the help of a local expert. With the release of this issue I would like to introduce Gerald as the magazine’s official Taco Editor. He comes highly qualified as a local “Taco Ambassador” and contributor to Tacos of Texas, published in 2016 by University of Texas Press. He also played a big role in launching the first annual Que Bueno Taco Fest this year. The guide on page 36 was compiled in under a week, but the list was years in the making. I have always loved tacos, but thanks to Gerald, I now have a greater appreciation for the food group. Tacos are a staple of our local culture and bring people together. Handing someone a taco is as much a form of bonding as it is fulfilling a basic need. Everyone loves tacos. And it just so happens some of the best tacos in Texas, or the nation for that matter, are found right here in the Coastal Bend. Jordan Regas, Publisher

KIMONOCOOL THE INHERENT GLAMOUR OF THE KIMONO — A GARMENT STITCHED IN JAPANESE HISTORY By: Jarred Schuetze Photos by: Aaron Garcia

Fitting in and standing out. Since it’s debut in the late eighth century, the traditional Japanese garment has evolved in a major way. Translated, the Japanese word “kimono” simply means “something to wear,” and because of it’s easy, versatile silhouette, the kimono is not mearly ‘something to wear’ but THE something to wear. Now in the mainstream of both eastern and western fashion, the kimono is a staple of any au courant wardrobe. The lightweight, fluid ensemble, embellished with charming prints, has been seen on every major runway around the world and shows no signs of slowing down. You can thank the garments’ utilitarian nature for that. It’s functionality is perfect for any season. Kimonos can be worn in layers to provide warmth in colder months, while linen or cotton kimonos are breathable and comfortable during spring and summer. These advantages are why kimonos have become a huge element in current fashion and why the kimono is arguably the most iconic fashion influence hailing from Japan.

Fresco is a new establishment owned by Jesus Maldonado and Svani Quintanilla who have a goal of providing the community with a fresh and innovative approach to Mexican Cuisine. Fresco will be offering unique menu items which include their Tejano Poutine (hand-cut fries topped with carne guisada and cotija cheese), Corpitos Burger (Fresco’s blended patty with melted American cheese on a toasted concha bun, topped with caramelized onions and pickles), and a Mercado Bowl, (named after the famous Walter Mercado) which will be a changing menu item as they strive to bring everyone the freshest ingredients. Say farewell to the gallery wall. It’s had a good run, and while it may be charming, it’s really not worth the hassle. Curating the perfect gallery wall, both in content and spacial proportion, is no small feat. Stop the meticulous measuring and try giving your gallery wall an update. Lose the hammer and nails and focus on these two words: float and layer. If you want your wall to look laid back and stylish with almost no effort, simply display your art like you can’t be bothered to hang it up. If you don’t already have a set of floating shelves, that will be the only manual work required. This technique can work for any form of shelves present in the home. When arranging frames, instead of placing them uniformly, try layering them together using varying heights to establish visual interest. A common color story in frames and images create cohesion, but don’t hesitate to add in the standout pop of color.

ounded in 1981, The Coastal Bend Community Foundation (CBCF) was established to provide a vehicle for individuals to make donations to charitable organizations within the seven-county Coastal Bend area. Starting with an initial gift of $150,000, the foundation has grown to over $84.3 million as of June 30, 2018. These funds allow CBCF to provide grants to local nonprofits and post-secondary scholarships for local students. CBCF’s funding is unique because it comes from countless donors who have supported the foundation over the years. In a private foundation, one family or a small group of donors typically generates funds. Therefore, CBCF is known as “every person’s foundation.” The 2008-2009 economic downturn severely impacted many nonprofit organizations. The recession birthed the creation of The Coastal Bend Day of Giving. CBCF joined forces with eight other funders to provide $150,000 in matching funds for a one-day, internet-based fundraising campaign. During Fall 2009, the first ever Coastal Bend Day of Giving raised $410,000 for 25 different nonprofits in a 24-hour period. “Every year since, the event has grown, raising over $2.36 million in 2017,” Karen Selim explains. Selim is the President and CEO of the Coastal Bend Community Foundation. “One of the most exhilarating privileges is distributing the checks to the participating charities in early December,” she says. “Being able to see the thanksgiving and gratitude from these charities is unmatched.” For the upcoming 10-year anniversary, The Coastal Bend Day of Giving will have the largest number of participating charities in the history of

the event. Fifty charities will be seeking online donations for their causes and have their raised funds matched by CBCF. These organizations encompass foundations that support the arts, education, environment, human services, families and children, and almost any other charitable endeavor imaginable. Additionally, the largest amount of matching funds CBCF has to distribute has been raised for 2018 – over $875,000. November 13th marks the 2018 Coastal Bend Day of Giving, and it is shaping up to be a memorable and record-breaking event for the 10-year anniversary. The CBCF team believes the growth they have seen this year will continue for years with donations given by individuals who want to help the community into the future. These individuals are the backbone for which grants and scholarships are made and ultimately provide support to the Coastal Bend.”

Corpus Christi takes pride in being pretty to look at, but the beauty transcends the skyline. You’ll find the streets bedecked with colorful hues as the city flourishes in self-expression. Murals, an outlet for the artistic revolution, paint the town in vibrant colors and make landmarks out of places we’d never expect.

letter shows exactly what we love about Corpus Christi in this postcard inspired mural. The viewer will see unique city landmarks, including the Harbor Bridge and the City Cathedral, as well as a likeness of Selena Quintanilla Perez. Jeremy Flores painted the mural on the north wall of Richline Technical Services. Completed in April 2018, this heartwarming work of art appeals to both “Corpitos” locals and tourists. It’s almost tempting to add this one to a personal postcard collection.

Endless Sunset - The Colors of Our City: This mesmerizing piece adorns the side of the Caller Times building, brightening up N. Lower Broadway St. with hues of pink, lavender and coral. Sandra Gonzales, the artist, included intricate paintings of local wildlife, which spotlight the beauty of nature in kaleidoscopic designs. This mural, composed of a hypnotic myriad of colors, is as breathtaking as a Coastal Bend sunset.

The Sound Vibrations Mural: It’s as if Texas natives Janis Joplin, Stevie Ray Vaughan, and Freddie Fender teleported back into Corpus all at once. Spot them during the day or under a violet spotlight at night on the side of Sound Vibrations. This colorful mural is a dedication to deceased Texas artists,

giving off a groovy sentiment for music lovers. Names of remembered artists are painted on the mural, including George Strait, Corey Jackson, Steve Miller, and plenty more.

Dia de Los Muertos: The Dia de Los Muertos mural shows the Chicano culture that runs deep within the bones of many Corpus Christi residents. This multifaceted piece showcases the beauty in death, reminding us what a gem of a town we get to enjoy while still being alive. The K Space Contemporary Art Camp was in charge of the project, allowing citizens to give back to the community. Located on the balustrade on N. Upper Broadway and Starr St., this hidden masterpiece encapsulates the Day of the Dead in lively colors.

The Mercats: Who doesn’t love felines or ocean life? You can thank the 2016 K Space Contemporary Art Camp for this elegant hybridization of mermaids and cats on the humble wooden fence right outside of Black Tie Roses on Chaparral Street. The simple floral designs and charming creatures create the perfect backdrop for a quick selfie and provide an uplifting view when buzzing around downtown. Apparently, mermaid cats do exist here in the Coastal Bend.

MEET Joe Brock With two Food Network shows under his belt, this local chef is making a name for himself, one Texas-Asian infused dish at a time By: Kylie Kinnett Photos by: Rachel Benavides

HOW DID COOKING/FOOD BECOME SUCH AN INTEGRAL PART OF YOUR LIFE? Growing up, I had the pleasure of being blessed with

five older sisters and one baby brother. So, there were a lot of mouths to feed. My mother, being an only child raised in the countryside of Thailand, always cooked meals from scratch. Coming home from school, I would remember hopping off the bus and running into a house filled with earthy aromas. As you can see, I never skipped a meal and was always in the kitchen with my mom helping out (really just taste testing). That’s when I fell in love with cooking. It was more than sustenance to me. It was nourishment for the person I would become in my later years.

HOW WOULD YOU DESCRIBE YOUR COOKING STYLE? My cooking style is 100% Asian-Texas-Fusion. Even though I was not born here in Texas, there is no other place I would rather hang my hat at the end of the day. I moved here from Japan when I was 5 and have been eating like a Texan since then – WHATABURGER! I enjoy mixing the flavors from my Asian background with the Hispanic cuisine that I’ve grown to love more than one could know. HOW DID THE OPPORTUNITY TO BE ON TWO DIFFERENT COOKING SHOWS ON THE FOOD NETWORK COME ABOUT? One day I got a call

from a mysterious Arlington number, so I answered it. Thinking it was a fraud caller, I greeted with, “Howdy, is this the Texas Rangers finally

calling me up to the big leagues, cause if it is I ain’t pitchen’ unless the ‘Stros ask me to throw the cheese.” Baffled, the lady said, “Excuse me, but this is Kassie from the Food Network. I’m trying to reach Joe Brock.” I completely thought it was a joke and asked which friend had put her up to this. She assured me this was a serious endeavor about being on a cooking show. Kassie then told me she had come across my Instagram page and said the food on my page looked really amazing. Still in awe, I said I would definitely be down to come out and try my hand at Food Network. WHAT WAS THAT EXPERIENCE LIKE? It was surreal. Everyone who worked with the show was super amazing and helpful. The first show I did was Guys Grocery Games Season 18 episode 1. I did so well on my episode, the network asked me to come back again and compete on another show called Ultimate Summer Cook Off! I said yes, of course. The whole experience was super beneficial to launching my culinary career, both locally and nationally. I still keep in contact with everyone from the show. I made awesome friends and amazing memories. Also, it really helped validate the reason I do all this in the first place. PLANS FOR THE FUTURE? Well I am super stoked for what is to come. Right now, I’m working on opening a place on the Island with a few partners. We hope to have it open before the end of the year.

Life without tacos would be no life to live. Why do we feel so invested in an item of food? A simple

answer could be summed up in to one word: culture. Although, it goes a little deeper than that. There is an emotional attachment we all feel towards the taco. The taco is essentially, one way or another, a part of everyone’s lives here in South Texas. In the Coastal Bend, tacos reign supreme over all other food groups. It is a simple fact known to all. However, the amount of choices one has when it comes to narrowing down their pick can be a little overwhelming. We partnered up with Gerald Flores – whose brand, Taco Gear, revolves completely around the food item – to create a helpful guide to the taco scene. As our local taco expert, we thought it fit to seek his help in producing a list separated into 7 different categories to assist you in navigating all your options. GERALD FLORES TACO EDITOR Gerald Flores knows a thing or two about tacos. His brand, Taco Gear, has an identity wrapped completely around the taco. While the brand as a whole started almost by accident, his love for tacos is no coincidence. With three taco tattoos adorning his body and a want for more, he is not messing around. One day, he began searching online for a shirt that would help him express his love for the taco and came up short. With a graphic design day job, he decided to create the perfect shirt himself. It was only after posting on Instagram, to his then 150 followers – which has since sprung to over 21K followers who share a love for all things tacos – that Taco Gear became a full-on brand. Tacos are a cornerstone in Flores’ life. “Like many Latinos, tacos were and continue to be a huge part of my life,” he says. “I was raised on tacos – they were everywhere. No matter your skin color, tacos (especially in South Texas) are all something we love and can agree on.” He goes on to explain that the statement, “Let’s go get tacos,” alone can trigger more emotion than any other food. “It symbolizes the act of bringing people together. I realize all food does that; but, there’s just something about the taco that drives home so much more emotion.”

BARBACOA Barbacoa is believed to have originated centuries ago in Barbados. This method of cooking was eventually taken to Mexico where the meats are slow-roasted over an open fire, or more traditionally, in a covered fire pit. The meat (typically sheep, goat, or beef) is cooked until tender and succulent.

SONNY’S BARBACOA

Sonny’s Barbacoa is a rather small joint that packs in a whole lot of flavor inside its doors. Trey Hoskins took the restaurant over from his father, Sonny, and kept their traditions alive. Preparing Barbacoa tacos is second nature to Trey and his family. He remembers Barbacoa being a special weekend treat when he was a child. Mom would be in the kitchen getting everything ready, while Dad would go out and buy the meat. With Sonny’s, they wanted to share that special feeling with their patrons. Trey refers to the Barbacoa taco as their “calling card.” It is their identifying mark on the Coastal Bend taco scene, which would explain why it’s in the name. FISH TACO What would a Coastal Bend taco guide be without mentioning fish tacos. People have been eating fish tacos in the coastal areas of Mexico for quite some time. However, it is in Baja, California where the fish taco we know and love today was born. Lightly battered, deep-fried white fish and a corn tortilla are the key elements to any tasty fish taco.

JAYCOB’S DELICIOUS FISHES It could be said Jaycob’s Delicious Fishes and Other Dishes was written in the stars. Jaycob Jones started cooking when he was just eight years old. He would help prepare dinner for his family. By the time he was twelve years old, he had thought up the name “Delicious Fishes” and knew serving food to others would be his life mission. The original plan behind the food truck was to serve workers in Port Aransas after Hurricane Harvey. However, Jaycob did not stop there. He brought the truck to Corpus Christi and began serving anyone he could. When ordering a fish taco from Delicious Fishes, you can expect, you guessed it, delicious fish. Yet, some things you might not expect are flavors like jalapeño and lemon tartar sauce or cilantro and lime coleslaw. Both their flavors and attitudes are vibrant, and you can taste it in every bite. TAQUITOS MI TIERRA The idea for Taquitos Mi Tierra came into existence years ago when Ino Lugo’s mother decided to quit her job and buy a food truck. After many trials and tribulations, Ino and his sister decided to join in and help create what would soon become Taquitos Mi Tierra. They knew the success of the business would come from their mother’s authentic Mexican cooking, so she became the head chef behind the food truck.

NONA’S COCINA Nona’s Cocina has only been open for a little over a year and a half and has already gained a tremendous following with nothing but rave reviews. The mastermind behind the restaurant is Erica Franco, who immigrated to the United States from Victoria, Mexico in 2014. She came equipped with a genuine love of cooking and a treasure trove of family recipes passed down through generations. What started as a catering

gig soon turned into Nona’s Cocina, and Erica has been serving up delectable food ever since. Initially, Nona’s exclusively sold food through the Howard’s BBQ drive-thru. They quickly evolved their business into a food truck and now have a brick-and-mortar restaurant set to open soon in the Hamlin Center. While each of their menu items is equally yummy, their tacos definitely don’t disappoint. UNIQUE

A unique taco can mean many things. Being different than others is a hard thing to do nowadays, but we found someone whipping up tacos using a most unusual method. There are no meats or veggies involved in the making of said taco. In fact, there is nothing savory about it at all.

ROCK AND ROLLIN A dessert taco that everyone could love. These are both fun and delicious!

This taco is unlike any of the others you’ll find on this list, but it definitely belongs in this category. One of the best things about tacos is the convenience of eating something delicious using one hand and no utensils. The same can be said of this uncommon menu item, the Ice Cream Taco from Rock And Rollin.

Owner, Charoen Kaewmanorom, brought the method of rolled ice cream – a method she picked up in Bangkok – to the Coastal Bend earlier this year and has continued to see great success. The Ice Cream Taco is made with the freshest of ingredients, rolled up on their cooling ice pans. The rolls are then placed into a waffle cone shaped like a taco shell. TORTILLAS Without the tortilla, a taco would just be a plate of mixed ingredients. While it would still be appetizing, it wouldn’t be a taco. Therefore, it is safe to say the tortilla can make or break a taco. Dating back as far as 10,000 years B.C., the tortilla gets its name from the Spanish word “torta,” which means round cake.

SOUTHSIDE BARBACOA

Southside Barbacoa has many great items on their menu. However, their homemade flour tortillas are top notch. While the ingredients seem simple, creating the perfect tortilla is no easy task and quite frankly comes down to a science. Flour, salt, and baking powder are the three mainstays in any tortilla recipe. But how good the tortillas turn out is dependent on the quantity of the ingredients and how they are mixed, kneaded, and rolled out, and the team over at Southside Barbacoa does it pretty much perfectly. 5894 Everhart Rd. A Corpus Christi staple for breakfast tacos where Selena would eat! What more could you ask for.

As one of the most cherished and oldest taquerias in town, Hi-Ho Restaurant, which opened 41 years ago, is undoubtedly the go-to place for breakfast tacos. The current owner, Ray Garcia, took over about eight years ago and has continued with the restaurant’s original recipes. To him, the key to the perfect breakfast taco is the tortilla. Over 2,500 tortillas made from Hi-Ho’s recipe are cooked up fresh every day. When arriving at Hi-Ho, you’ll be greeted more often than not by Ray, himself. The connections and friendships he has made over the years is one of his favorite parts of owning the place. The Suicide Taco – which is essentially three tacos in one, consisting of chorizo and egg, potato and egg, bacon, beans, and cheese – is one of their best sellers. THE FIRST THANKSGIVING About 140 people attended the first Thanksgiving in 1621. Ninety were Wampanoag Indians who traveled two days to participate in the celebration. The rest were English immigrants. The Wampanoag were key to the survival of many Pilgrims during their first winter when many others died. In their memory, Abraham Lincoln declared Thanksgiving a national holiday by proclamation in 1863.

But before you grab your stretchy pants and belly up to the dining table, consider how mindful eating during the holidays will make you feel less pressure to hit the gym hard come January. What is mindful eating? Well, here’s what it isn’t. Mindful eating is not how most Americans have their meals every single day. We are normally on our phones, watching television, or working on the computer. These distractions prevent us from really knowing how much food we are consuming and how quickly we are consuming it. Ultimately, distracted eating is how we unintentionally gain additional weight, which can lead to obesity. The key to prevention is to eat mindfully. Eating mindfully starts with being aware. “When you pay attention to what you’re eating, you can make small changes that make a big difference,” says the American Heart Association. Start by looking at your portion size. Typically, you’ll find that there is more on your plate than your body really needs. However, we’ve been taught since birth that a “happy plate” is the epitome of being a good human. Therefore, we eat it – all of it. One way to mindfully monitor how much you’re eating is by controlling portions. First, grab a smaller plate.

Slowing down and enjoying every bite of food is another way to practice mindful eating. When we slow down and pay attention to each bite, it gives the body enough time to trigger your brain that you are satisfied. Once the brain feels satisfied, you are less likely to continue eating past your limit. The brain plays a huge role in mindful eating. Finding that inner voice and actively listening to what your body is telling you it needs will help you eat only when you are hungry. Before going back for a second helping of turkey or slicing an additional piece of pecan pie, ask yourself, “Am I actually hungry?” If the answer is no, fight the urge to indulge further. Finally, cut yourself a little slack. Since you know you will want to enjoy a few extra sweets here and there, plan ahead by being mindful of your portion sizes, enjoying every bite of food, and eating only when you are hungry. The holidays are meant to be fun and enjoyable, and food is a part of that. So, don’t stress too much about delighting in an occasional treat. However, consider practicing mindful eating to keep yourself happy and healthy through all of the festivities. Your waistline will thank you later.

Quality Healthcare, Evaluated Results of the Nueces County Medical Society Quality Survey are in By: Kirby Tello Illustration by: Sierra Lutz

T

he 2018 Nueces County Medical Society (NCMS) Physicians’ Hospital Quality Survey results are in. The survey is conducted to gauge the overall quality of healthcare in the Coastal Bend. While many aspects of the survey focus on medical staff and administration, hospital policies and procedures, and even potential issues that can arise at healthcare facilities, the main objective of this study is to provide a benchmark for how our medical community can continue to raise the bar in offering stellar healthcare to our residents.

The healthcare needs in the Coastal Bend are as prevalent as ever. With Spohn Memorial closing its doors last year and the community awaiting the opening of the Spohn Shoreline expansion, Corpus Christi Medical Center (both Doctor’s Regional and Bay Area) continue to support the area by taking on increased patient volumes. In turn, physicians are bearing a lot of the burden. Inevitably they are at an elevated risk for burnout. This factor is identified in the survey noting that 45 percent of physicians believe the nurturing of their stress levels and risk of burnout needs to be of top priority to the hospital system.

“The goal of the survey is to stimulate productive conversations between our members and the hospitals that operate in our county,” states Nueces County Medical Society President, Justin Hensley, MD. “We want to promote collaborative relationships that result in quality care for area residents, as well as meet the needs of NCMS member physicians.”

“Surveys like these give voice to the concerns of physicians and create a platform to drive productive, collaborative conversations with area hospitals,” says Gelb Consulting representative Ed Tucker. “Bringing the voice of the customer, in this case physicians, to hospitals helps ground anecdotal observations with solid research to inform and support decisions on where to improve and how to improve.”

The survey reveals statistics and results from the six hospital facilities in Corpus Christi: South Texas Surgical, Driscoll Children’s Hospital, Corpus Christi Medical Center (CCMC) Doctor’s Regional, CCMC Bay Area, CHRISTUS South, and CHRISTUS Shoreline. From the physicians perspective, the study revealed that 62 percent of doctors are satisfied with the healthcare facilities overall. Although, over the past two years physicians have identified that organizational changes have seemed to negatively impact their practice, the highest rated attribute among all six hospitals was the overall quality of nursing and support staff.

While the collected information identifies best practices and areas of opportunities for Corpus Christi’s healthcare system, the survey results point to a potential collective solution. All medical providers and individual hospital systems are needed to combine their available resources to support the entire healthcare needs of the community. With a collaborative approach to patient care and the support of all providers, physicians, and medical staff, the patients can have the best and safest quality care.

A Home Well Traveled Celebrate your inner wanderlust through travel-themed decor

ome people are born with a feeling of wanderlust. Dr. Macy Kinzel is one of those people. She brings her world citizen personality into her home with decor from all over the globe, allowing anyone who enters her home to indulge in the feeling of international travel. A monumental blue and black striped sailfish, encased in a black and white striped crate from Puerto Vallarta, greets visitors when they enter the home. Photographs taken by Dr. Kinzel during her trip to the Amazon line the walls. She took the photos from a close angle, and each captures a personal moment. Statues from Guatemala and Haiti grace a chest of drawers, adding to the museumesque theme of Dr. Kinzel’s home. Dr. Kinzel’s den and dining areas display gems from England. A pew from Westminster Abbey, dating from the 70s, sits proportionate to the fish, giving guests the perfect place to sit and contemplate the intensely sentimental meaning behind the home’s decor. The dining room also houses antiques that are equally valuable and sentimental. The dining room table, from England in the 1920s, once belonged to her grandmother. To complete the dining room set, Dr. Kinzel adds another family heirloom - chairs from the 1970s. A Norman Young painting from Belize hangs on the wall, adding a decorative touch. Since Norman Young is also responsible for the creation of the Brazilian dollar, the artwork prompts the perfect story to tell over dinner.

Dr. Kinzel’s unique style continues into each bedroom with an array of room-accenting colors. The computer room has whimsical styles in shades of teal that enhance the room’s visual interest. Sitting gracefully in a corner is a vintage 1900s Singer treadle sewing machine that belonged to her mother. The bright colors lend a playful vibe, while the vintage pieces from Jerusalem and Nicaragua bring her travels to the forefront. The master bedroom showcases more artifacts mixed with DIY techniques. A chandelier from an old San Antonio theater was transformed into a lamp. The walls are divided by two different colors with an overlay of white paint “splotched” on with a plastic grocery bag, giving the walls a unique faux texture. In an effort to maximize space, a wall in her room was knocked down and replaced with a sliding door, leading straight to the pool. The dock bottom pool, a personal addition, adds a serene vibe to the home with water sprockets that create a cascade of water over the pool. Sitting alongside the pool is a small shed, which was once used as an art studio. Dr. Kinzel turned the shed into a pool house and added a kitchenette, making it a perfect guesthouse. Whether you are bitten by wanderlust or simply love museums and cultural artifacts, Dr. Kinzel’s home proves that travel-themed decorative objects offer practical function as well as beauty. The kitchen in Dr. Kinzel’s home displays a more traditional setting with gray cabinetry and granite countertops. To add pizzazz, Dr. Kinzel replaced the regular windows in the kitchen with gorgeous stained glass, which allows beams of color into the living room when sunlight hits the window. Sitting on the kitchen bar is a treasured gift from her daughter - a colorful Moroccan bowl used to hold fruit. Many of the furniture pieces in Dr. Kinzel’s living room are savvy purchases made at garage sales. Together with interior decorator Kelly Gale Amen, Dr. Kinzel turned these purchases into unique, travel-themed pieces. One of the famous pieces created by Kelly is the “poof,” a small, multi-purpose ottoman covered in a combination of fabrics. The poof can be used as an ottoman, a floor pillow, or a pet bed. The living room shelves hold a myriad of decorative objects collected from Africa, Nicaragua, and Israel. The bonds made with people she met and the memories she brought back home will always offer a distinctive touch to her home. Track lighting adorns the ceiling, offering the living room area a modern yet spectacular flair. No home is complete without artistic accents. For Dr. Kinzel, art is a wonderful addition to any home. She proudly displays renderings from famous artists like Pablo Picasso and Salvador Dali. In fact, the inlaid wood frame that caught her eye as a highly valuable piece, led her to a painting of Picasso’s “Two Ladies on a Beach.” The artwork comes with an official Pablo Picasso seal, making it a one of a kind treasure. Redesigned vintage trunks, collected from as far as Costa Rica, offer practical function as well as beauty while enhancing the travel theme. The showstopper of the living room is a bright, colorful rug that once belonged to her aunt. Not only does the rug have sentimental value, it also has historical significance. I

t is possible to repel pests from your garden simply through the selection and arrangement of your plants. No toxic chemicals are required to keep your plants free of pests. The garden design itself can act as a form of pesticide.

INTENSIVE PLANTING CREATES A MINI-ECOSYSTEM Begin by planting your beds intensively. Intensive planting is the tight spacing of plants across the bed. This close spacing allows the leaves of mature plants to overlap and form a thick canopy over the garden. This canopy protects and insulates the soil. The canopy also provides a sanctuary for beneficial predators--frogs, toads, lizards, wasps, and other garden helpers. These good guys hunt in the dense foliage and patrol among the vegetables continually cleansing your garden of pests.

PEST-RESISTANT PLANTS FORM BUG TRAPS! The ideal garden bed is five feet wide and twenty feet long, which is enough space to create a mini-ecosystem (smaller 5’x4’ beds also work well). Plant your vegetables across the five-foot width of the bed, rather than long-ways from one end to the other. These short five feet rows are the second part of the design to control pests, as you alternate between rows of pest-sensitive and pest-resistant plants. Pest-sensitive plants, such as lettuce and chard, are more susceptible to insect attacks. However, pest-resistant plants, like radishes or collards, emit an odor that pest insects abhor. In your garden, plant several rows of sensitive plants, like lettuce, across the five feet width of the bed, then plant a row of hardy radishes. Next, plant a few rows of delicate chard, then a row of collards. Continue to alternate between rows of sensitive and resistant plants. The pest-resistant plants will form bug traps in your garden! Insect pests stop feeding at the line of pest-resistant plants and get trapped into localized areas. The beneficial predators in your garden (frogs, toads, ladybugs) will swarm to that spot and quickly devour insect pests before they become a problem. HERBS AND FLOWERS FOR FLAVOR, FRAGRANCE, AND PEST CONTROL! Strong-smelling herbs, such as cilantro and dill, are fantastic pest-resistant plants. Winter flowers, such as cosmos, Queen Anne’s lace, and nasturtiums also repel and confuse pests.

athering around this table would be a perfect way to celebrate the Thanksgiving holiday. An oversized raw wood table and chairs set the scene for a collage of mixed metals and glassware. The foundation of this tablescape is a gold edged metal charger placed on top of a shimmery silver pottery style dinner plate. Layered on that is a black ceramic salad plate nestled against a tousled dark gray napkin. Each place setting is graced with a boldly printed card reminding guests to be So Very Thankful. Pampas grass plumes and bay leaf stems are arranged in tubular glass vases resting in black metal racks. These unusual and striking displays of greenery create a dramatic effect lengthwise down the table. The layering of feathery grasses and crisp leaves celebrates the joy of fall with an airy, on trend look.

he women of DWNTWN CC Collective are bringing a communal experience that includes a full yoga studio, a Kevin Murphy hair salon, and an Etsy design studio to the enchanting Water Street Village. Yoga Time Studios founders, Erica Bertero and Leah Murray, are making a breakthrough in community-based leadership by collaborating with Angela Acuna of Sunkissed by Elle and Morgan Lang of Beau Monde Hair Gallery. “This is a huge thing for Leah and me to have something unique and original, a co-op where small business helps small business,� says Erica Bertero. Before Yoga Time Studios acquired their own space, Leah Murray and Erica Bertero lived their passion of teaching yoga through a preliminary collective with Island Time Sushi Bar. Both women shared the vision of a collective space with other businesses as means to lift one another up.

What began as a weekly after yoga hangout at Island Time Sushi Bar quickly grew into an offer for the women to practice yoga on Monday nights when the restaurant was closed. Classes became so popular that restaurant patrons thought the sushi bar was open on Mondays and would mistakenly come in to eat dinner. Island Time eventually began opening on Mondays. Now, Monday is one of their busiest nights. The lounge evolved into a full fledge studio during the day, but Leah and Erica agreed they were outgrowing the space. Coincidentally, that realization and the chaos of Hurricane Harvey caused Erica and Leah to seek a new space and revamp the yoga community in the heart of Corpus Christi. The women worked together to find a space for a studio. However, the DWNTWN CC Collective encompasses more than just yoga. Sunkissed by Elle offers unique custom-made yoga wear, designed to fit your body and meet your needs. After being introduced to BUTI yoga by Erica, Angela took to designing her own yoga clothes. “I knew what I wanted out of a yoga pant, so I found what I needed in a pattern that was especially suited to my body. That’s hard to find in a store. I knew it couldn’t just be me, so I decided to offer that service out of the Collective studio.” You can make an appointment and then go in to take measurements and discuss fabrics and fits. Once you

decide on the look you want, she’ll make it. The third component of the Collective is Beau Monde Hair Gallery, an eco-friendly Kevin Murphy salon. Within the studio, Morgan provides wellness and beauty services without the use of harsh chemical products. The salon offers haircuts, color treatments, blow outs, and styles. A fellow yogi herself, Morgan has always aspired to work on hair and do yoga in the same space. By encouraging and empowering local businesses and women, DWNTWN CC Collective has transformed what it means to be a community by instilling yoga life philosophies of abundance, teamwork, and generosity in the Coastal Bend. “I’m really hoping this shared studio space becomes a bit of a getaway for the community!” Angela says. “We put a lot of time and thought into the feel and décor of what we want for people to experience as they take a yoga class, book a hair appointment, or have a fitting. A Crisp Autumn in the Hill Country A traditional and romantic affair By: Jo Anne Howell

O

n a crisp autumn day in the Texas Hill Country, guests witnessed a beautiful, traditional ceremony of love. As they approached the chapel, fall leaves crunched under their feet. Once inside, everyone found a seat on the dark wooden pews bathed in light gleaming from the stained-glass windows. The romantic sounds of organ music filled the room. After the ceremony, guests gathered at the Riverhill Country Club for dinner and dancing. Grand centerpieces of greenery, white hydrangeas and white peonies greeted guests. More gorgeous greenery was arched and draped across the fireplaces and waiting areas.

The outdoor patio overlooked a green hill full of trees. This scene was very different from what the couple first envisioned. Originally, the wedding was planned for a day in Rockport, but Hurricane Harvey changed those plans. However, this new venue turned out to be picture perfect. Guests enjoyed a varied selection of harvest pies while they waited for the bride and groom to cut the cake. As the heartwarming celebration came to a close, the happy couple left in a shower of bay leaf confetti.

TACOS Flat Iron Fajita Tacos, Gulf Shrimp Tacos with Avocado Cilantro Cream, and Homemade Flour Tortillas By: Justin & Kayla Butts Photos by: Rachel Benavides

he mighty Aztecs had been enjoying tacos for a thousand years before Cortez and his warriors arrived in Mexico in 1519. Tacos were daily fare in Tenochtitlan. For the Aztecs, tacos were corn tortillas (they did not yet have wheat from Europe) with a filling of venison, fish, or lizard, topped with fresh salsa made from tomatoes and peppers. They did not use cheese, because they did not yet have milk from Spanish goats. The Conquistadors brought their own long-cherished taco traditions with them. For the Spaniards, tacos were flour tortillas (they did not yet have corn from America) with a filling of meat or seafood, plus cheese, but no salsa (they did not have tomatoes, either). When these magnificent cultures collided, their first argument was most likely about who made better tacos. But there is one thing we know for sure: whether Aztec or Spanish, the ingredients were locally harvested and completely fresh. Local ingredients remain the best (and only) way to make truly world-class tacos. Because tacos are so simple, it is imperative that every ingredient is of the highest quality. To begin, we make our tortillas from scratch. We use pastured lard from a local farm because there is really no substitute. Let the tortilla dough rest for

ten minutes before rolling to give the baking powder time to do its work. For our fajita-style tacos, we source our beef from Tim Fitch of Palo Verde Cattle Co. Fitch raises grass-fed beef on his ranch outside Beeville. This dry-aged beef has the amazing flavor of local grass, rather than the aftertaste of GMO corn from some distant cattle feedlot. We prefer the Flat Iron steak instead of the actual fajita cut, which can be a little tough. The Flat Iron steak has the tenderness and flavor of a Ribeye but is quite a bit cheaper. For our shrimp tacos, we begin with live shrimp from the iconic Mom’s Bait Shop in Rockport. You can buy live Gulf shrimp off the trawlers at the Corpus Christi Bayfront or Roberts Point Park near the ferry in Port Aransas. Shrimp this fresh is one of the true joys of living in The Bend. Find your vegetables freshly harvested at a local farmers’ market, or from a neighbor’s garden, or best of all from your own garden. This avocado cilantro cream is from heaven—make plenty. What worked for the Aztecs and the Spaniards still works for us today. Fresh ingredients, locally harvested and prepared with love, always make the best tacos. Even if we still argue about whose tacos are best!

GULF SHRIMP TACOS WITH AVOCADO CILANTRO CREAM MAKES 4 TACOS Prep time: 40 minutes Cook time: 7 minutes INGREDIENTS: 4 corn tortillas 1 cup cabbage, thinly sliced 1lb Gulf shrimp, peeled with tails and head removed ½ tsp salt ¼ tsp black pepper ¼ tsp cumin, ground Juice of 1 lime 3 cloves garlic, minced 2 tbsp olive oil Quick-pickled radishes 3 radishes, thinly sliced ¼ cup white vinegar 1 tsp sugar, granulated Pinch of salt Avocado Cilantro Sauce ¼ cup sour cream

1 avocado, pitted with skin removed

FLAT-IRON STEAK FAJITAS WITH HOMEMADE FLOUR TORTILLAS

Juice of 1 lime

MAKES 8 TACOS

3 cloves garlic

Prep time: 15 minutes

½ jalapeno (seeded for mild)

Cook time: 25 minutes

½ tsp salt

INGREDIENTS:

DIRECTIONS:

2 lbs grass-fed, flat-iron steak at room temperature

¼ cup packed fresh cilantro 3 tomatillos

In a medium-sized bowl, combine shrimp, salt, pepper, cumin, lime juice, and olive oil. Let marinate while you move on to the radishes. Combine white vinegar, sugar, and salt in a small bowl and stir to dissolve. Add in radishes and immerse in vinegar solution. Set aside while you prepare the avocado cilantro sauce. Place remaining ingredients in a blender or food processor. Blend for 5 minutes or until smooth. Preheat a skillet over medium-high heat. Add shrimp and cook for 3 minutes on each side or until no longer translucent. Meanwhile, heat corn tortillas on a skillet over medium-high heat for two minutes on each side. To assemble tacos: Place a layer of shrimp in the center of a warm tortilla. Layer on slices of radishes and shredded cabbage, as desired. Sprinkle on fresh cilantro and top with a thin line of avocado cilantro cream. Serve with slices of fresh lime.

2 tbsp olive oil 1 tsp sea salt ½ tsp freshly ground black pepper 1/2 tsp ground cumin ¼ tsp chili powder ¼ tsp ground coriander 3 tbsp butter, divided 3 cloves garlic, minced 1 large, sweet onion, peeled and sliced 2 bell peppers, seeded and sliced DIRECTIONS: Place a medium-sized cast-iron skillet on high heat. After steaks have reached room temperature, pat steak dry with

paper towels to remove excess moisture. Brush steak with oil. In a small bowl, combine salt, pepper, cumin and coriander and mix well. Massage spice mixture into steak. Once pan is preheated, cook fajita for 5-7 minutes on each side (or until internal temperature reaches 130°F for medium rare). Remove steaks from heat and let rest for at least 10 minutes Reduce heat under skillet to low-medium flame. Add 2 tbsp butter, scraping the bottom to free up any bits clinging to the pan. Once butter is melted, add garlic and stir constantly until garlic is fragrant (about 30-45 seconds). Pour butter-garlic mixture onto prepared steak. Replace skillet over low-medium heat and add remaining butter, onion, and peppers. Stirring occasionally, cook about 7 minutes, or until tender. Slice steak thinly going against the grain. To assemble tacos: Place four to five slices of steak in the center of a flour tortilla (see recipe below). Top with onion-pepper mixture, sliced jalapeno, and guacamole or sliced avocado.

HOMEMADE FLOUR TORTILLAS MAKES 16 TORTILLAS

DIRECTIONS:

Prep time: 30 minutes

Combine dry ingredients in a large bowl and mix well. Using your fingers or a pastry blender, incorporate lard into flour until the mixture resembles rolled oats. Add water and knead for about 1 minute, until a smooth dough is formed. Let dough rest for 10 minutes.

Cook time: 35 minutes INGREDIENTS: 3 cups all-purpose flour 1 tsp sea salt 1 tsp baking powder 1/3 cup lard 1 cup water

Preheat a cast-iron skillet over medium heat. Sprinkle a clean work surface with a generous amount of flour. Divide dough into 16 pieces and shape each into a disk. Roll out the dough to a 6-7� diameter. Cook each tortilla for about one minute on each side, until golden spots form. Transfer to a warmer or cover with a tea towel to keep warm.

hen most people think cotton candy they aren’t quick to visualize a marg and vice versa.

“Here at Green Light, we never really do anything straight up,” laughs Zak Kaszynski, barista and Southside manager. “We always add some funky twist or weird hybridization to offer alternatives.”

The Cotton Candy Margarita was created from a hand-spun original house recipe to make adult beverages just a little bit sweeter on the edges. “I try a lot of recipes. I test them and tweak them. There are plenty of avenues we can take with the cotton candy, and this was just the first one on liquor,” says Sarah Hans, owner.

Cotton Candy Margarita Ingredients: 1 ½ fl oz tequila 1 ½ fl oz cream soda ½ oz grand marnier ¼ fl oz lime juice 1 fluff of lemon cotton candy


“Balancing the tart with the sweetness just seemed to make sense. It’s a drink I’d have on my birthday, but even just as a happy hour drink.” If it’s not the silver milagro tequila, it’s the tang of fresh squeezed lime juice that gives this iced drink the crisp flavor of an authentic, well-rounded marg. Pure cane cream soda and grand marnier upgrade the laid-back party classic to a pinkie up cocktail. “It’s not the kind of drink that you slam back and shout ‘TEQUILA!’ It’s the kind of drink for when you want to let your inner kid out while being adult,” says Kaszynski. “You’re creating the drink on your own by pushing the cotton candy in. You’re sugaring the rim. You’re the pro and creating your own unique drinking experience. You’re pretty much the bartender yourself.” For every order, the lemon-flavored sugar tuft that rims this drink is spun from Green Light’s homemade sugar recipe right in front of you. It goes straight from the dome to the top of your glass where it can either be tucked in to dissolve, left on top to sip through, or pulled apart and dipped in your marg. The margarita glass lends itself well to the shape, allowing room for the lemon-flavored cotton candy to sit pretty on top and slowly dissolve on its own. T

he growth of local businesses in Corpus Christi is booming, and Coastal Confections is one of the many new additions. With a coastal flare and menu items made from scratch, Codie Crawford brings her palate pleasing talents to the Lamar Park area.

As a small child, Codie spent quality time with her mother, baking up delicious treats for friends and family. This passion for baking grew into a desire to own a small bakery as an adult. Codie knew that when the time was right to pursue this dream, Corpus Christi would be the perfect location. “ I’ve always loved Corpus and its great sense of community,” she says. After spending some time pursuing her career in San Antonio and Dallas, Codie received a phone call from her mother about a vacant location on South Alameda, perfect for a bakery.

Codie also bakes custom cakes from scratch. Some of her kid-friendly creations include unicorns and Fortnite. She also offers more sophisticated choices such as a chocolate cake covered in Oreo frosting and a white chocolate ganache. Not one to stray from her coastal flare, Codie also includes ocean sunsets, sharks, and waves in her custom themes. Codie’s creativity is endless. She and her team are always on board for new additions to the menu. In anticipation of opening new locations on the South Side and possibly the Island or Port Aransas, she hopes to add cafe style food to the menu. The movement made its way to Corpus Christi’s Mayor, Roy Miller, who sought to enrich the city with beautification projects. Miller’s vision came to life with the support of community property owners and voters. What came to be known as the Broadway Bluff Improvement took an erosion-prone bluff from unattractive to a distinctive border between two sections of the business district, uptown and downtown.

Supported by voters via bond, the improvements included the commission of Corpus Christi’s first piece of public art, the sculpture Queen of the Sea by Pompeo Coppini, completed in 1914. The bluff was also graded, and retaining walls were built between Upper and Lower Broadway. Walkability of the area was improved with staircases and balustrades, as well as the pedestrian tunnel, opened in 1929, that reaches between Peoples and Schatzel and Upper Broadway. Nearly 100 years later, these improvements all still stand today. The tunnel opens only for special occasions, like this year’s inaugural Frontera festival November 2-4. The other improvements can be enjoyed every day we visit the area, thanks to Mayor Roy Miller’s dedication to making our city beautiful.
