About a month ago, I popped into Lucy’s Snackbar in Downtown Corpus Christi. I’m always excited to check out new, local busi nesses in the Coastal Bend – especially those specializing in food or coffee. It turns out I’m not the only one. Within minutes, cus tomers were pouring through the door faster than the staff could artfully pour a fresh latte. The space was trendy with an industrial vibe and the menu complimented the atmosphere. Towards the end of lunch, Justin Gainan, one of the owners, ran through the door. I congratulated him on a successful launch and we talked for a while about the new café and how guests were commenting on how much they liked the space and how having an “Austinlike” business in town was nice. Then, he looked around the space and said: “This isn’t Austin, it’s Corpus Christi.” He wasn’t aiming to emulate Austin, or any other city for that matter. As Corpus locals, the owners wanted to create something new, born right here in the Coastal Bend, that could contribute to the local culture.

That conversation has stuck with me for a while now. Especially as I see more and more people wanting to get the local experience when they travel to a new city. As Coastal Bend locals, we are proud of the people and businesses who do their very best, day in and day out, to make this community a better place to live, work, and play. This is why each year, for the past four years, The Bend Magazine has curated the Local’s List in the July issue. I say curated because the list is chosen by our readers. Over a period of two months, our dedicated readers nominate and then vote on their favorites in over 90 categories related to lifestyle categories, such as Arts, Culture, Wellness, Food, Nightlife, and Entertainment. Nominees are vetted based on their local engagement and category fit – then, it is off to the races. This year, over 120,000 votes were tallied. I never could have imagined that much community

Making Promises Happen
The Surfrider Foundation makes dreams come true, one wave at a time

The Coastal Bend Surfrider Foundation hosts a swim camp for individuals with special needs every year with Make Promises Happen – a program north of Oklahoma City that serves youth and adults ages 6 and older with any disability. Make Promises Happen is one of the nation’s largest camping and outdoor recreational programs for persons with disabilities and serious illnesses. 2019 is the 20th year for the Make Promises Happen surf camp, and the 15th year for the Coastal Bend Surfrider Foundation to host the event.
Cliff Schlabach, Chairman of the Coastal Bend Surfrider Foundation, started hosting this program in 1999. For him, painting a verbal picture of the Foundation’s origins is like a trip back in time.
"The first six years were run by my wife and I only,” he says. “The group we had at that time were visually impaired individuals from a Christian camp in Arkansas, who contacted me one day to help some of their campers catch their first wave. We came up with about three or four volunteers thinking it was going to be a few people. It ended up being a huge bus full of about 75 people."
In 2005, the unthinkable happened: The director of the Arkansas camp lost his life in a car wreck, and the camp lost its funding. However, Cliff and his team knew their work needed to prevail. They rallied together and brainstormed ideas as to how they could continue to help the disabled and special needs families. The Texas Coastal Bend Chapter of the Making Promises Happen project is one of the biggest and best-attended programs they have.
The Coastal Bend Surfrider Foundation began hosting the "Make Promises Happen" camp the following year, and from that point on,
the group from Oklahoma has come down for two days in Port Aransas to surf every single year.
About 15-20 campers, each one with a counselor assigned to them, come filing out of a bus for this one-of-a-kind surfing experience. This year, the surf camp has expanded the program to include campers from the local area. Most of the volunteers are from the Coastal Bend area, and Port Aransas lifeguards watch over the group and ensure all safety is taken into consideration. The surfers ride in waist-deep water with two to three watermen who help to control their surfboards, and push the campers into a wave down the center of a line of people. It’s an unforgettable experience.
Year-round, the Coastal Bend Surfrider Foundation receives donations specifically for this camp, and all the surfing equipment is provided by the Texas Surf Museum. The camp ends with a barbeque to celebrate all the hard work and fun had by the campers.
"You don't know who has more fun by the end of it – the volunteers or the campers. They're a very happy group and just happy to be doing what they’re doing,” Schlabach says about how much this camp means to everyone involved. “Everyone gets a chance to feel the stoke, and that helps all of us. These folks wouldn't have any other chance of experiencing the greatest sport on the planet otherwise.”

3. MATCHA WITH OAT MILK FROM BIEN MÉRITÉ. Matchas have never been creamier than when they’re made with oat milk. The

My husband and I met in Trujillo, Honduras while both working as physicians. We moved to Corpus Christi in 2015, and have been raising our four bilingual children to appreciate the Spanish language and their Hispanic heritage. As a 3rd generation Mexican-American from Texas, the Spanish language has been very important my whole life, both professionally and personally, and it has opened so many doors and connections. My husband is a native immigrant of Honduras, and when we got to Corpus Christi, he felt empowered to become a teacher of the Spanish language in the public school system. We as a family wanted to find a way to offer Corpus Christi something it is missing culturally: a professional Spanish Language School. For all those who want to connect to their heritage, or to learn Spanish for
I continue to practice OB/GYN in the community as an OB hospitalist helping to elevate maternal safety at Bay Area Hospital. My husband has truly loved coaching soccer and teaching the youth of Corpus Christi about the beauty and value of the Spanish language in the public school system while concomitantly inspiring these teenagers to strive for their best.
We envision that HABLAMOS will help the community relish the beauty of the Spanish language, while allowing everyone to connect on a deeper cultural level.

In November of 2016, Thanksgiving week, John Mills suffered three strokes. Immediately his doctor recommended he undergo double bypass surgery and eight months later, in July 2017, he was scheduled for the operation. During the operation, John’s surgeon discovered that Mills was also suffering from a major cerebral vascular accident in which two heart valves needed to be replaced. Then, just one day after his surgery, Mills had another stroke.
Recognize a Concussion
Any bump or blow to the head has concussion potential. Concussion symptoms may occur immediately or days/weeks later and can include:

Prior to Mills’ elaborate medical episode, he was in the business of designing and creating golf clubs. When he lived in San Diego many years ago, he worked for a prestigious golf course where he met many influential people and personally made golf clubs for them. Mills explained how grateful he felt for the CCRH team and their positive outlook. Their continued happy dispositions greatly influenced his recovery and helped him to heal faster. The medical staff pushed Mills to go as fast as he could in terms of regaining mobility because they truly cared about him being able to get back to what he loved doing: playing golf.

Even at 4 o'CLOCK on a Monday afternoon, the Water Street Oyster Bar buzzes with the thrill of leaving the office and the promise of mouth-watering fresh seafood. Plates of mesquite-grilled salmon, shrimp harpoons, and fried calamari drift seductively by as I find my way to the table where Richard Lomax, the President and CEO of the Water Street Restaurants, welcomes me with a handshake and a smile. We are joined by Dr. Joe Fox, professor of Mariculture, Environmental Science, and Coastal & Marine System Science at Texas A&M University - Corpus Christi.
Richard orders a half dozen half shell oysters for the table, and between bites, the two men share with me the story of the very creatures we are eating. Specifically, the story of how Dr. Fox and Richard’s father, Brad Lomax, are leading the charge to save the Gulf Coast oyster.
WAIT. THE OYSTERS ARE IN DANGER?
Yes, not endangered, but in danger. This is news to me, (though it doesn’t stop me from tossing back an oyster like a little shot of mollusk-y goodness).
Richard walks me through Texas’ oyster history. The world has changed a lot in the past 100 years, but the technology for harvesting oysters is the same that it was at the turn of the 20th century: take a big bucket and drag it along the bottom of the bay. While this is certainly an effective method for dredging up oysters, the process also demolishes the entire reef. “It’s like mowing your lawn with a bulldozer,” Dr. Fox comments wryly.
Case in point: In January 2016, South Dollar Reef in Galveston was harvested for oysters. It took one million dollars to build the mile-long reef … and three days for 20 boats to fish it out completely. In the end, they had $300,000 worth of oysters and one completely demolished reef. A net loss. Sadly, this is not a unique case, but rather the everyday reality of oyster harvesting all along the Texas coast.
Years of such aggressive harvesting and archaic methods have left the Texas Gulf Coast hurting for wild oysters. In fact, the reef area for oysters in Texas has de-
creased by 80 percent since Texas’ oyster heyday in the 1900s. “All you have to do,” says Dr. Fox, “is look at the bag limits.”
Once upon a time, the daily bag limit for oysters was 100 sacks; today it’s down to 50. “There’s just nothing out there.”
This explains why, in recent years, oyster fishermen, vendors, and restaurants have been scrambling to find good local product. Sure, there’s always the option of flying oysters in from another state, but this is the Gulf Coast! From Galveston to Corpus Christi, we have a long and storied legacy of seafood to protect. And, luckily, Corpus has its top people on the job.
In 2009, the Harte Research Institute’s Gail Sutton (a former student of Dr. Fox), developed a long-term program to combat reef destruction. “Sink Your Shucks” is the first oyster shell recycling program in the Coastal Bend, and the first program in Texas to reclaim more than 1,000,000 pounds of shucked oyster shells from local restaurants and wholesalers, and return them to the bays. Essentially, the recycled shells seed the waters for new reefs by providing substrates and forming nutrient-rich habitats for fish, crabs, and other organisms, including young oysters, which attach to the recycled shells of their mollusk brethren and grow in abundance.
As a restaurant owner, “Sink Your Shucks” was the answer to Brad Lomax’s prayers. “My dad had a simple business problem,” Richard explains. “He was spending a ton of money throwing away oysters and dealing with the mess. When we started recycling, our dumpster bills went down by 60 percent.”
Not only has Water Street been recycling its oyster shells with HRI ever since, but the program inspired both Brad and Richard Lomax to team up with Sutton and Dr. Fox on another project: legalizing oyster farming in Texas.
Oyster farming, which can be done either by building a bed or suspending net bags above the ground, has been a game-changer in other states where wild oysters have been overharvested. In fact, Texas is the only oyster fishing state that has not legalized oyster farming.
“It goes back to the State of Texas and the state agencies,” explains Dr. Fox. “Most have the attitude that oysters are a natural resource to be enjoyed and harvested by the citizens of the state … they’ve tried to maintain [the water bottom and reefs] as an available natural resource. It’s not that they’re against [oyster farming], they just want to know more about it. There’s no legal framework that allows you to do it.”
elaborates, “is to give the reefs a break.” Simply put, the oyster industry is not sustainable without incorporating farming. By lessening our reliance on natural reefs, we can give them the much-needed opportunity to grow and revitalize, thereby improving their long-term health and yield potential. Truly, it’s in our best interest to treat these reefs well, especially since they provide invaluable ecosystem services that clean up the bays and estuaries. The average acre of reef provides $30,000 in ecosystem services that we would otherwise need to provide ourselves. Allowing the natural reefs to rebuild would go a long way toward adding that extra sparkle to the “Sparkling City By the Sea.”
The other big reason to legalize oyster farming is increased production and industry expansion. “We have about a million and a half acres of water along our Texas coast in bays and estuaries,” says Dr. Fox. “About half of that is probably reasonable for oyster aquaculture. For oyster aquaculture to double production in the state, we only need 2,000 acres.”
Doubling production would open up the market, offer vendors and restaurants more options, create jobs (wild oyster farming requires days out on the boat; oyster farmers are home for
dinner every night), and restore the Texas Gulf Coast’s reputation for unparalleled seafood. Farming also offers control over oyster shape and size, which helps create a better product for the consumer. “The industry has gotten too conglomerated,” Richard Lomax says. “We want to encourage more boutique players.”
It wouldn’t take long. In the wild, it can take seven to eight years for a reef to produce oysters. In an oyster farm, it only takes eight months to get an oyster from seed to market. “We have a competitive advantage with the heat: Hot bays grow oysters fast,” Richard Lomax points out. “We can actually grow oysters twice as fast as the east coast.”
“There’s also the ecotourism aspect,” he adds. “Visit Corpus Christi has been a big supporter, and they think the idea has legs. Plus, I think it’s my dad’s dream to give tours of the oyster farms and show kids how it gets from seed to something you can eat.”
The story they tell me is the nutshell version of the case Dr. Fox, Brad Lomax, and Gail Sutton spent years presenting to countless fishermen, judges, wildlife organizations, grant committees, potential oyster farmers, and local representatives
in a years-long effort to garner support for the beleaguered mollusk. That dedication paid off when big-league supporters like the Texas Parks & Wildlife Department and the Coastal Conservation Association jumped on board. Dr. Fox believes the success of oyster farming in other states and the growing body of information on aquaculture also encouraged state agencies to support the project.
In July 2018, Representative Todd Hunter began collaborating with the team to draft legislation, and this past May, the Senate passed SB 682 almost unanimously, legalizing oyster farming in Texas. Now, all that’s left to do is hammer out the rules and regulations for oyster farming, a
conversation that will be driven mostly by the Texas Parks & Wildlife Department. They expect the first farms to start seeding in the fall of 2020.
“We’ve had research scientists, academics, politicians, and regulatory organizations working together with a common cause,” says Sutton in a closing thought. And soon, everyone from residents to tourists will be able to enjoy the benefits of the oyster cause. “From creating jobs to boosting the economy, saving fisheries to improving water quality, there’s something in this for everyone,” Sutton underlines. “Even someone who just wants to eat an oyster on a cracker.”

Olympic trials and beyond, one stroke at a time

Itwas a neighborhood pool that beckoned Jacob Huerta every day the summer he was five years old. His playful immersion into the water soon led to a year-round sport for the now 21-year-old college swimmer for the University of Texas in Austin.
Competitive swimming has been part of Huerta’s life for well over a decade. He also swam for Carroll High School, and while there, he attended the Olympic trials for the first time in 2016.
Now he’s gearing up for the trials once more. In June 2020, Huerta will travel to Omaha, Nebraska, with quite a few other members of the UT swim team, to compete in the 100-meter fly and the 100- and 200-meter freestyle. The Olympic trials will welcome 150 of the nation’s best swimmers in each category.
“The trials are huge; there is a lot of pressure on this meet,” says Huerta. “It’s super competitive, friendships are put aside, and nerves are at an all-time high.”
An invitation to the trials is initiated by a time standard that a competitive swimmer must meet. Huerta’s time has improved in the 100-fly since his first invitation, and he has moved up in the national rankings. Only the top two swimmers in each race are awarded a spot on the United States Olympic swim team.
“I look forward to it,” he says, noting that the 2020 trials might serve as his swan song in swimming.
But the ongoing preparation for the highly anticipated event continues daily. Huerta is training in the pool at UT twice a day, three days a week, and to free swim every afternoon. He is found in the weight room three times a week, and twice a week he engages in “dry land”
exercises: high-endurance cardio training, such as rope climbing and interval exercises.
With the university’s cafeteria open and available, Huerta has daily access to a wide variety of healthy foods and plenty of carbohydrates to keep his body fueled.
His family – mom, dad, and a younger brother – have been the backbone of his support system. His brother is a runner and the more “competitive sibling,” Huerta said. “He’s got me on land, but he could never take me in the water.”
“Corpus Christi has been super supportive of my swimming, as well, once I became a bit more public during my senior year in high school. I’ve received lots of support from people I have never met,” he says.
Huerta doesn’t expect to make the 2020 Olympic team. “That would just be wild,” he smiles, “a little crazy.” But his plans are certainly not contingent on a coveted spot on the team. He is preparing to graduate from the University of Texas with a degree in history, and plans to pursue a master’s degree and a career in healthcare administration.
“Swimming has been super helpful in teaching me time management throughout my schooling, and it has taught me self-discipline, keeping me focused on my goals as I move into the real world,” he says. “I might not swim for a few years after the trials. I will always love it, but I would like a bit of a break to try something new.”
Whatever Huerta finds to try, that competitive streak that has driven him for so long will keep him active and engaged in life-long fitness, no doubt.

hen searching for the perfect home, location is a major factor in the decision-making process. Jennifer Lee and her husband, Monty, were on the hunt for a neighborhood with a strong family dynamic, a great school district, and a strong sense of place where their children could play outside and make lots of friends.
In addition to the location, the Lees sought an untouched, un-remodeled home that would serve as a blank canvas for a design project. Originally, they were drawn to the variety of lot sizes and architectural styles of the Lamar Park neighborhood, but soon discovered a hidden gem among the Mid-Century Modern homes in the Ocean Drive area.
Jennifer, a Corpus Christi native, was familiar with the area, and was excited to find a small, 1959 original Paul Blanchard Mid-century modern home – tucked away in the Port Aransas Cliffs area, between Bessar Park and Lamar Park subdivisions. She was immediately drawn to its potential, and the close proximity of the water and the bayfront was a bonus!
Jennifer, owner and designer for ŌCKERLEE DESIGN, loved that she was able to see directly through the home into the large backyard, pre-
senting the perfect canvas for future add-ons and renovations. They purchased the home in 2004, and although it was a work in progress, Jennifer and Monty lived in their home for several years until they fine-tuned the design and saved money to expand it for their growing family. In 2009, they completed two new wings, one for adults and one for kids, and a slew of additional renovations, tripling the size of the home from 1,400 square feet to 3,466 square feet.
The hard work put into their home was well worth the effort. Immediately upon arrival, guests are struck by the masterful front door curb appeal, making a personality-packed statement. The sway of the concrete entryway adds architectural interest, as guests enjoy the landscaping before being greeted by the front door, dressed in a bold shade of orange.
Originally, the house was a shade of beige that Jennifer was not happy with, but she set out to showcase the natural materials, bones, and era of the house, embracing the natural beauty and location. The color palette was inspired by the colors on the rich print of an Orla Kiely shoulder bag. The brown bag showcases a fun print, filled with shades of taupe, grey, ivory, orange, and green, Jennifer’s favorite color - it proved to be a handy shopping companion.
Passing the Test
ON THEIR HONEYMOON, JENNIFER AND MONTY DECIDED TO SKETCH OUT AN IDEAL HOUSE PLAN AND COMPARE DRAWINGS. THEY LOOKED AT EACH OTHER’S SKETCHES AND FOUND THEY WERE VIRTUALLY IDENTICAL. TWENTY-THREE YEARS LATER, THEY LIVE IN THE EXACT HOUSE DRAWN ON THE NAPKIN.
The Lees’ decor is best described as eclectic. Each room has perfectly displayed family antiques and heirlooms, including hand-medowns and Mid-century modern pieces they have collected over the years. A few pieces were purchased specifically for their first home, but Jennifer’s mantra is “work with what you have,” and her vision is slowly, but surely, coming together. She states, “While we would love to fill the whole house with architect-designed furniture pieces, a tiny budget is our reality, so we have to work with what we already have and fill in the pieces we can afford.”
Inspiration for the interiors comes first and foremost from each other, random pieces they find in shops or create themselves, or any pieces they are gifted from friends and family. Two lovely Charles Eames lounge chairs sit in front of a wall of books, creating a cozy reading corner. The treasured chairs were gifted to Jennifer by her architect neighbor, the late Sam Pennington, and add the perfect touch to the area. A vintage Sputnik chandelier, purchased from their photographer friend Brenda Miles, sits atop the dining room table, overlooking the front yard. This room, often referred to as “The Library,” showcases a wall of books, and a cus tom-made sectional couch, making it an ideal place to spend quality time with family. Taking advantage of the darker color palette of the library, the Lees use this room to escape from the heat in the summer, host dinner parties, watch movies, and gather around the fireplace in the winter.
Although the home has a strict color palette, there are a few breaks, allowing the house to showcase a different aspect of its owners’ personalities. From Jennifer’s love of differ ent shades of green to Monty’s minimalistic preferences, the bright colors in their daugh ter’s room, and the low-key, casual area where their son plays his video games, the Lee home reflects charm, family, and comfort.
Jennifer’s best advice for anyone experiencing a home decor quandary: “Define your style before you buy anything. Pinterest is a great tool, but don’t get caught up in aiming for an Instagram-perfect home - focus on the reality of your lifestyle and embrace it through the decor!”

TOADS
are not pretty. In fact, they’ve been downright disliked since the day a sassy princess was ordered to pucker up and kiss one on the lips. But don’t let their frowning faces fool you – toads are a powerful ally in the garden.
A toad can eat hundreds of insects and other pests in a single night: caterpillars, slugs, beetles, ants, mosquitos, flies, and more. Toads capture these nasties by snatching them with their long, sticky tongues and using their front feet to shovel bugs into their mouths.
CUTANEOUS ABSORPTION
Toads eat with their mouths, but they drink water through their skin. This process, called cutaneous absorption, is the reason you see toads sitting in pools of water but never see them drink.
Toads have pockets of glandular toxins on their skin that look like warts. These toxins are a self-defense mechanism against predators –they can be fatal to coyotes, foxes, and raccoons.
Because of this amazing skin, toads are tough and extremely resilient. But there is one thing that absolutely will kill a toad: chemical pesticides. Because of cutaneous absorption, toads are forced to drink chemicals through every pore of their skin. Even a drop can be fatal.
When toads are killed, it takes a long time, sometimes years, for their offspring to be able to help in the garden. Unfortunately, the insects that toads would have eaten reproduce in a matter of weeks, or even days, and quickly grow out of control. That is why pest problems tend to return after a spray of chemicals and become worse than before.
To attract toads to your garden, plant your vegetables intensively so the leaves grow together to form a thick canopy over the soil. This canopy provides cover and protection for toads and other beneficial predators. A dense planting of flowers or shrubs nearby also provides an excellent sanctuary when the vegetable garden is bare.
Additionally, place a few shallow pans of water in your garden, flush with the level of the soil, so toads can easily climb in and out to drink. Refill the pan every few days. In the burning heat of summer, your garden pans will invite toads from far and wide to cleanse your garden of pests.
Protecting toads is simply a matter of economics: A single Coastal Bend toad can eat 10,000 bugs or more during the long summer. A few toads in your vegetable garden will eradicate swarms of pests that you will never have to combat with pesticides. And that saves you a lot of time, money, labor, and produce.
Toads work at night, so you never have to see their unpretty faces. So, unless you are a sassy princess in search of a husband, you will never need to touch a toad, much less kiss one.
But if you offer them a cool drink of water and decline to spray them with chemicals, you can count on your friendly toads to cleanse your garden of pests all summer long.

Colors, light refraction, and balance all come into play for Candice Hanna when creating a new stained glass piece. We sat down with the owner of local brand, The Snake and Sparkle, to learn about the craft of stained glass art.

The Snake and Sparkle brand refers to balance: a balance between light particles reflecting off glass, a balance between colors and design, and a balance keeping up with a business life and mom life. For balancer and glass-worker Candice Hanna, it’s all about trusting the flow and having a patient hand.
“The snake is the same thing as the moon,” she says of the inspiration behind her brand name. “It’s always shedding its skin and always changing, like the moon cycles.” Working with stained glass as an art form and a business means that sometimes Hanna will be cycling fresh ideas for pieces, and sometimes she’ll have the greatest concepts come to her while changing a diaper. More technically, it also means that sometimes her husband will point out that there’s glass dust in her hair after finishing a piece. That’s where the "Sparkles" part come from in the name.
That’s how Candice Hanna delicately balances out Snake and Sparkle with full-time mom life. With careful hands and fragile tools, Hanna creates reflective ornaments of all shapes and colors in her hometown of Aransas Pass – with the companionship of her children, who will occasionally draw cat whiskers on her face while she’s sleeping.
“That’s real life for me...you wake up as a cat, try and get your coffee in, stay in your pajamas, run outside, do a little bit of grinding,” she says. “When I’ll do it, I’ll do like six pieces at a time. But some days, I might just decide not to. I don’t ever want to force it.”
Between making commissioned pieces and collaborating with other local business owners, Hanna comes up with designs for the glass as she goes. Her ascending color, seven-piece chakra-inspired hangings caught attention in the January CC Bliss Box as a spur-of-the-moment design idea. She’s worked on pieces for Wildflowers and Archer Soapworks in Corpus Christi, as well.
Previously in the tattooing field, some of Hanna’s inspiration comes from classic tattoo designs, which explains the vintage, folk aura of her translucent pieces. Her glass creations can range from colorful geometrics to muted colors of crescent moons that create vivid light patterns when hanging by windows.
“I’ll finish a piece sometimes, and just like hold it up to the sun for 30 minutes, because it shines so beautifully,” she says with a smile.

The tangible artwork of these concepts comes from the drawing pad of Hanna’s eldest daughter Sidney, who is also a tattoo artist in town. Hanna usually will ask her daughter to draw her visions when she’s inspired for a new piece. A Super Sweet First Birthday

Friends and family gathered at the Corpus Christi yacht club for sweet Berny’s first birthday! Swimming and sweets were the party’s main to-dos.
Vintage boats and a water-colored back drop set the scene for the dessert tables. A tiered cake, petits fours, cookies and gourmet lollipops were perfectly placed poolside.
As guests sang Happy Birthday, Berny enjoyed his smash cake! He was all smiles as he dug in.
Guests received Swedish fish candies as “the catch of the day” in place of a party favor. Proud parents Nick and Nina Rothschild, big sister Alexandra, and all the loved ones had a splashing good time!

The long-haired, Birkenstock-wearing vegan is a stereotype of the past. Vegetarians, vegans, or those of us choosing more plant-based meals, are a rapidly growing percentage of the American population. Registered Dietitian/Nutritionist and health and wellness guru John Massengale, tells us why we should be eating our greens (not to mention many other plants).
Vegetables Increase Our Blood pH
By eating more plant-based options, you will be consuming more foods that have an alkalizing effect on the body. When we’re stressed or eat certain animal-based foods, our pH drops, and our blood becomes too acidic. Unfortunately, low blood pH can cause fatigue, kidney stones, and the loss of bone mass. Minerals found in plants are exceptionally alkaline-forming and maintain a healthy blood pH.
Chlorophyll in Plants Cleans and Oxygenates
Chlorophyll – the pigment that is responsible for giving plants their green color – has many health benefits, including its ability to remove toxins from our blood, increasing red blood cell production. More red blood cells means easier transport of oxygen into your cells, thereby increasing energy levels.
Plants Reduce Inflammation
Stress, toxins, pollution, and the foods we eat can cause inflammation, which can lead to conditions like cancer, diabetes, and heart disease. Many plant-based foods are high in phytonutrients, antioxidants, and flavonoids, which reduce inflammation in the body. If you’re an athlete, plant-based foods are essential for reducing inflammation caused by intense workouts.
Lose Weight with Plant-Based Foods
Plant-based foods, like non-starchy vegetables, are very high in nutrients but low in calories. By consuming nutrient-dense foods, you will turn off the body’s hunger signal with fewer calories. Many plant-based foods are also high in fiber; consuming high-fiber foods will keep us feeling fuller longer periods of time.

Lentils
A staple in many vegetarian communities, lentils are high in protein, fiber, vitamins, and minerals. They can be eaten soaked, germinated, boiled, fried and baked, but the most common preparation method is boiling in liquid for about 30 minutes.
Quinoa
Quinoa is a high-fiber, gluten-free grain that contains all the essential amino acids our bodies need. Quinoa contains more protein than any other grain while also packing in iron and potassium.
Strawberries
Widely appreciated for its aroma, bright red color, and juicy sweetness, strawberry is great in salsa or salad. Strawberries are an excellent source of vitamin C and a good source of manganese. Bring out the sweetness by adding a sprinkle of balsamic

Vegan Spring Roll
Makes approximately 8 rolls
PREP TIME: 40 minutes
INGREDIENTS:
1 (7-12 oz) package rice paper wrappers
1 cup fresh spinach
1/2 cup red cabbage, julienned
1/2 cup carrots, julienned
1/3 cup jicama, thinly sliced
1/4 cup basil, julienned
1 medium avocado, thinly sliced
1 red bell pepper, seeded and thinly sliced
1/2 cup soy sauce
1 tsp rice wine vinegar
1 tbsp mirin
1 tsp brown sugar
1/2 tsp red chili paste
DIRECTIONS:
Fill a shallow bowl with water. Organize a large work space with sliced vegetables. Immerse the rice paper wrapper in water and let soak for 15-20 seconds, until malleable. Spread wrapper flat on your work surface. Starting on the side closest to you, add a small pile of an assortment of each of the vegetables and herbs about 1/2 ” to 1” from the bottom of the wrapper.
Fold the edge of the paper over the vegetables, fold the sides in as if you were making an envelope, and continue to roll until the wrapper has formed a cylinder. Repeat until you have no ingredients remaining.
In a small bowl, combine the remaining ingre dients until a cohesive sauce is formed. Rolls are best enjoyed fresh, with a side of dipping sauce.
Vegan Bowl
Serves 1
PREP TIME: 30 minutes
COOK TIME: 30 minutes
INGREDIENTS:
1 cup fresh greens (spinach, kale, lettuce, chard, arugula)
1/2 - 3/4 cup whole grain (couscous, brown rice, bulgur, millet, amaranth)
1/2 - 1 cup legumes (lentils, beans, peas, edamame)
1-2 oz healthy fat (avocado, nut butter, nuts, olives)
Cook dry legumes and whole grains according to package directions. Place greens inside a bowl. Top with remaining ingredients and season with salt and pepper. If desired, dress with your favorite dressing, oil and vinegar, or citrus basil vinaigrette (recipe as follows).
Citrus Basil Vinaigrette: Whisk 3 tbsp olive oil, 1 tbsp freshly squeezed orange juice, 1 tbsp minced basil, a dash of salt and a pinch of pepper in a small bowl. Serve immediately, as dressing will naturally separate.
Chia Pudding with No Added Sugar
Serves 1
PREP TIME: 15 minutes
INACTIVE PREP TIME: 2 hours
INGREDIENTS:
2 tbsp chia seeds
1/2 cup coconut milk
1 tsp vanilla extract
1 ripe banana
1/2 cup fresh blueberries
1/2 cup fresh strawberries
DIRECTIONS:
In a food processor or blender, blend each of the fruits, keeping them separate. Set pureed fruit to the side. In a small bowl, mix chia seeds, vanilla extract, and banana. Pour pureed blueberry into a clean glass jar. Layer chia seed mixture and pureed strawberry on top. Store in the refrigerator for at least two hours. Serve chilled, topped with whole fruit.

It’s around a table that friendships are made and business is handled – and that’s precisely the atmosphere driving Corpus Christi’s newest full-fledged production brewery, Nueces Brewing Company. Located on South Water Street, the addition complements the growth in the city’s downtown district at the perfect time.
What started as a dream ten years ago began to take shape in 2016 when Cale Moore, co-owner of Nueces Brewing, landed in Corpus Christi because of a job move. Six months later, co-owner Brandon Harper showed up and said, “Let’s do it. Let’s open a brewery.”
They found their building right away, but it was unavailable at the time. “We drove by it and knew it would be awesome,” Moore says. “It was old, it looked like an expired skating rink.” By the time they got other business logistics in place, it was up for lease, and the owners jumped on it.
There’s a huge wall in the back of the tap room that still features some retro painted palm trees. “With that ‘Miami Vice,’ beach feel from the 1980s,” says Moore. It’s a tribute to the paintings they first found on the walls throughout when they made the move.
The brewery boasts 3,000 square feet of space to mix and mingle among both friends and strangers. There are large, wooden picnic-style tables in the main room, as well as a 1,800-square-foot deck out back, for all kinds of conversations to be had. “That’s how I got into home brewing,” says Moore, “by sitting across a picnic table from a friend and starting a conversation.”
Both Moore and Harper thrive on the laid-back atmosphere of our city by the sea, and set out to implement that same vibe into their new business through both atmosphere and décor choices.
“The theme of everything we do here is basically ‘go play outside,’” says Moore. The tap room features earth-like materials such as wood, stone, and concrete, a color palette of coastal blues is seen throughout, and tons of big windows allow natural light to flood in. All of these design choices were made in an effort to bring the outside in, so customers can sit, chat, relax, and enjoy a brew.
The brewery’s overall goal is to make quality beer that will bring people together. “We just make good beer,” says Moore. “We are not caught up in the who’s who of beer and who does what to their beer. It’s just good.”

Since opening their doors in late June, Nueces Brewing is creating four different brews, all well balanced in flavor with one thing in common: They are light and refreshing.
The brewery offers plenty of space for food trucks, and the owners plan to build their own kitchen in the future. But first, they will work toward canning their created beers and delivering to stores, bars, and restaurants around the city.
Moore knew when he arrived in Corpus Christi it would be a place to stay. “I saw a good thing happening here. Even in the last three years, the revitalization of the downtown area has been incredible.”
And Nueces Brewing Company is thrilled to be on the forefront of more development for the south side of downtown. “This is going to be the place to be,” he says...“with a cold beer in hand.”

a new fresh face in Downtown Corpus Christi, is serving up Mexican fruit cups and antojitos to the on-the-go lunch crowd and bustling late-night scene. With a prime location in the heart of Downtown, Fresco aims to bring Hispanic culture and representation to the area through food, community, and entertainment.
Oneida and Tony Maldonado, the masterminds behind Fresco, share their reason for bringing the spot to Downtown Corpus Christi. “I felt like Corpus needed this. There is a lot of Mexican heritage here and we felt it needed to be represented downtown.”
The couple started working on recipes at Recess Bar & Grill. They both share a joy for experimenting with ideas and seeing them come to life – and so, Fresco was born. Upon renovations to Recess, Oneida and Tony decided it was the perfect time to spread their wings.
But finding their new space wasn’t a simple process. Oneida shares that the Downtown Management District helped them find their ground. “We bothered everyone who had a place for lease. [This
space] was not for lease at the time we were looking. I owe it all to the Downtown Management District, because they’re the ones who got us in contact with the landlord we have now.”
Thankfully, Fresco will now be able to serve their delicious dishes to all. That includes the Lonches, a Mexican sandwich served on a bolillo roll with Fresco’s homemade chicken salad or pulled pork, topped with queso fresco and pico de gallo. Alternatively, their Ceviche Bowl features fresh drum and shrimp in lime juice with jalapenos, onions, and tomatoes, served over cilantro lime rice with a side of black beans and corn salad, and topped with an avocado. An added bonus? A lot of their dishes have vegetarian options, as well!
The menu will also include a fresh selection of fruit cups, fruit cocktails, and frozen treats such as the Mangonada, a mango sorbet mixed with chunks of fresh mango, lime, and chile powder, served with a tamarind straw. They’ll also be whipping up homemade Aguas Frescas that come dressed with a rim of lime and chile for an extra kick of flavor.
The dining area will be opened up for guests to enjoy their fresco inside – safe from the Coastal Bend heat. It will also serve as a new gathering space for locals and tourists alike, with the hope of cultivating a new community meeting spot for all. Oneida hopes for the space to welcome more local artists to showcase their talents: The front window of the restaurant will feature new artists every month, from art to clothing and woodwork.
“We have been so lucky to have such great friends to help us get our name out there. I’m lucky that we have a small group of local artists that help us bring change – be more open to things. I want to bring more people downtown and expand the bubble. I hope this is a step in the right direction to bring more diversity and representation,” says Oneida.

A Corpus Christi Building Grows Up

Out of the 17 buildings on the National Register of Historic Places in Nueces County, there’s only one that locals call “home.” Located at the corner of Peoples and Chaparral, this 1930 six-story commercial building was built by H.G. Sherman. Now the Nueces Lofts, it was home to offices for companies in the oil, insurance, and real estate businesses, as well as doctors and Sherman’s own offices. In 1937, architects Brock, Roberts, and Colley seamlessly added four more stories to the cast stone and concrete building at the direction of its new owner, W.W. Jones.
The Jones building provided locals with office space through the early 2000s and saw the city through the economic prosperity that followed the opening of the Port of Corpus Christi in 1926. Sherman always
expected the addition of more stories, although he had planned six, not the four that Jones added. The exterior design is eclectic, with Art-Deco-influenced belts separating the floors and classical influences that are unusual for commercial buildings from the time. The Sherman-Jones stands out. It is one of only two tall downtown buildings from the pre-WWII years that retains its exterior integrity – the other is now Sea Gulf Villa down Chaparral.
The next time you’re walking down Peoples or Chaparral, look up. You’ll get to enjoy many of the original architectural details of the building, and you’ll find yourself wondering why they just don’t build them like that anymore.
