It has to be Virginia's on the Bay in Port A. It's not just that the food is fresh and delicious but with the open-air dining right on the water and the marina full of cool boats it just makes you feel like you could be having your meal anywhere in the world.
My go-to is to head over to Water Street Oyster Bar after work for happy hour. Raw oysters and a dirty gin martini – does it get any better?
Though I don’t particularly care for seafood, the atmosphere and service at GLOW are both unbeatable. Karey Swartwout takes such good care of everyone who walks through her doors.
Mickey’s Bar and Grill is my favorite, because it’s the only place I can watch people fish while eating the same type of fish they’re catching. Also, fried oysters are a thing I didn’t know I needed.

MATTERS FAMILY of the
Family traditions are what I love most about the holidays –especially traditions centered around food. I was lucky enough to marry into a family who loves seafood as much as I do. At least once a year, we all gather for a big family fish fry. Early in our marriage, I was just an observer, watching a group of guys gather around the fryer with beers and raw fish in hand. Eventually, I was trusted enough to handle the frying duties. I thought this was a big honor – until I later found out it really was just the grunt work no one else wanted to do. But, that’s beside the point. As much as I love the taste of fresh, sizzling fish after it’s pulled from the fryer, it’s the environment that really matters.
I anticipated this letter diving into the exciting innovations and developments happening within our local seafood scene, but what jumped off the page as I read through Emma Comery’s ar ticle on page 34, was the culture we have developed around our fare. Many of our best, local seafood restaurants aim to create a brand of excellent food in a comfortable and casual environ ment. I think Executive Chef Matt Axtell of Roosevelt’s in Port Aransas says it best, “Here, fine dining is an experience available to everyone, an elevated meal you can roll up to in a golf cart.”
There is a myth that good food has to come in a stuffy setting with white table clothes and various sizes of forks. It can come that way, sure, but Coastal Bend restaurateurs and chefs are proving it doesn’t have to. Our local seafood speaks for itself and our coastal setting adds to the flavor.

A Hand Up, Not a Hand Out
LOCAL CHARITY PROVIDES BASIC NECESSITIES FOR THE LOW-INCOME & HOMELESS POPULATION

The Charity League of Corpus Christi, a local non-profit group of 40 women, has been focused on doing charitable work in our community since 1934. Each year, they choose a local non-profit to raise money and advocate for the entire year, from funds raised by the public. This year, Timon’s Ministries was chosen for “their hard work and the difference they make in the community,” says Michell Ezell, President of Charity League.
Timon’s Ministries, located in Flour Bluff, opened for business in June of 2000 and is under the direction of Kae Berry. The goal of the faith-based day resource center is to help low-income families and the homeless get back on their feet by providing daily meals, a place where they can shower, a food pantry, laundry services, and free medical, dental, and vision services.
Timon’s clients are predominantly the working poor, although 15 percent consist of the chronic homeless. Each week, hot meals are served to about 80-100 guests, Monday through Friday. Timon’s also operates a Crisis Pantry that distributes between 2-3 tons of groceries into the local community.
In addition to the feeding services, Timon’s also provides health services to all low- or no-income individuals in the community.
The William Allen Dental Clinic opened in 2009, and thanks to the tireless work of volunteer dentists, over 3,400 patients throughout the Coastal Bend have been treated. In 2011, Timon’s began offering monthly eye care services free of charge, and family medicine was integrated into the health arm of the ministry in 2012.
Local clients have access to medical treatment three days per week, to help with unresolved health issues, via an in-house medical doctor. The in-house nurse is on board 5 days weekly. The medical center has been very successful and has thus far gained 2,500 patient charts within the parameters whom Timon’s serves. All of the services provided by Timon’s were made possible by various grants including the Howell Foundation and the Methodist Healthcare Ministries.
The grant, written to Charity League earlier this year, focused on raising funds to expand the building to add more showers and laundry facilities. “A lot of people don’t understand that just because you have a home, doesn’t mean you have a place to do laundry,” says Kae Berry.
Timon’s received the much-anticipated phone call from the Charity League in early September, announcing their selection as this year’s charity. In May of 2020, Timon’s will receive a check for 100 percent of all monies raised at the Charity League’s annual Style Show & Luncheon in February.
Kae Berry is grateful and excited to work with such a wellthought-out, organized, and extremely professional organization, and looks forward to the improvements for Timon’s Ministries.

Whether we find ourselves with sudden free time during the holiday season or just thrive on being a part of the community, the Coastal Bend provides volunteer opportunities for any fit. Volunteering isn’t just giving; it’s taking a corner of the community and making it better for the people who share it – including yourself. You can go solo, or rally a group of friends or family to create meaningful experiences for everyone around you by getting your hands a little dirty and potentially learning a new skill. Here are the five best (of many) volunteer opportunities in our backyard.
ADOPT-A-BEACH BEACH CLEANUPS
Although a sweater might be a good beach accessory this time of year, beach clean-ups take place year-round. Living by the coast makes this an important calling for us: creating and living in cleaner beaches. Since the program started in the ’80s, volunteers have picked up more than 9,000 tons of trash … which otherwise would’ve accumulated. To participate, find the next round-up (or register to start your own) at glo.texas.gov under the Adopt-A-Beach tab.
H-E-B FEAST OF SHARING
Nothing makes us feel warmer than the food we cook together, and our neighborhood grocery chain keeps the tradition every year. It comes right before Christmas on Dec. 21st, so anyone who isn’t going out of town for the holidays has a chance to brush up on their cooking for a community cause. Every year, this tradition feeds thousands of people and brings even thousands more closer through the volunteering experience. CASA OF THE COASTAL BEND
Investing in the future means investing in our children; that’s why CASA advocates for them, and invites volunteers who aim for the
same thing. There are plenty of children who would benefit from a CASA volunteer, and by learning about and working closely with a child, the impact you’ll have on their life will be tremendous. At casaforchildren.org, you can learn about the process and get started on your application.
GROW LOCAL LEARNING GARDEN
Over at the Learning Garden, building access to homegrown foods is how hands in the soil contribute to the community. The garden is open weekly to volunteers who want to dip their toes in the soil, as well as event volunteers for their Farmer’s Market and Farm to Table events. HABITAT FOR HUMANITY
A helper at Habitat for Humanity will be a part of giving somebody in our community a place to go home to. Because of willing volunteers, building stable and affordable houses can be done in a short amount of time with a fun group of people, and you may find some hammering and carpentry skills useful in life. HAVE CONSERVATION AND SUSTAINABILITY EFFORTS AL WAYS BEEN SOMETHING YOU ARE PASSIONATE ABOUT?
As far as I can remember, I have always liked to be outside, and I have always liked science. But growing up, I thought that if you liked science, the only job available was to become a medical doctor. As a senior in college, I applied on a whim for an unpaid internship at a marine lab, and I just loved it – the field work, the exploration, all of it. I think this is what ultimately put me on the path toward a Ph.D. in Marine Science. I am particularly interested in providing scientific information to help address environmental challenges and to promote coastal conservation and sensible use of coastal resources.
OF ALL YOUR RESEARCH EFFORTS THUS FAR, WHAT HAS BEEN ONE OF YOUR FAVORITE THINGS TO DISCOVER IN THE PROCESS?
YOU FOUNDED THE "SINK YOUR SHUCKS" OYSTER RECYCLING PROGRAM; TELL ME A LITTLE BIT ABOUT WHAT THAT INITIATIVE MEANS AND ENTAILS.
We started the “Sink Your Shucks” program back in 2009 – we are a decade old! The goal of the program is to recycle shucked oyster shells from restaurants, festivals, and seafood wholesalers for use in habitat restoration. Oyster reefs are key components of healthy Gulf of Mexico estuaries. They filter and clean bay waters, create fish habitat, protect shorelines from erosion, and support a robust seafood industry. However, oyster reefs are severely degraded compared to historic levels. Because free-swimming larval oysters settle – attach and grow – on the shells of older generations, essential habitat is lost when shells of harvested oysters are not returned to bay waters. We have recycled over 1.6 million pounds of shells, engaged over 2,000 volunteers in habitat restoration, and restored over 20 acres of oyster reef in the Coastal Bend.
WITH THE RECENT PASSING OF HB 1300, THE BILL THAT NOW ALLOWS OYSTER FARMING IN TEXAS, WE SEE BOTH ECOLOGICAL AND ECONOMIC GROWTH HERE IN THE COASTAL BEND. WILL YOU ELABORATE ON THAT AND EXPLAIN HOW GROWING OYSTERS LOCALLY WILL BE BENEFICIAL?
Oyster farming (Mariculture) has the potential to bring new jobs and a new industry to the Coastal Bend. The Texas coast is known for fresh seafood, and oyster farming would help ensure a more sustainable supply of seafood for restaurants and consumers. When grown under the right conditions, oysters can also benefit the environment because they filter the water around them and provide physical habitat for many other species. One adult oyster can filter 50 gallons of water or more within 24 hours, so the potential benefits for water quality are tremendous. We have been working with Representative Hunter’s Oyster Task Force and with Texas Parks and Wildlife to provide data to inform the rule-making and site selection process.
Twice a year, in the spring, we host community-based habitat restoration events at Goose Island State Park. The events are open to the public and all sorts of volunteers participate, from school kids and Scout troops to retirees and winter Texans. Over the course of about 3 hours, we work together to create new oyster reefs in areas that need it most. Right now, we are working in an area that experienced a lot of erosion after Hurricane Harvey; as the oyster reef becomes established and grows, it will act as natural breakwater to minimize wave energy. Getting kids and adults involved in restoration is one of my favorite things, because it creates meaningful connections to the bays in our backyard and gives people a reason to care about keeping them healthy.
WHAT DO YOU CURRENTLY SEE AS ONE OF THE MOST IMPORTANT CONSERVATION ISSUES?
Habitat loss. Healthy natural habitats are deeply important to human health and well-being, although the connection may not be immediately obvious. We depend on healthy habitats to support all aspects of our daily lives; from the food we eat and air we breathe to the medicines that keep us healthy and the materials that supply our homes and cities. Habitat loss is also the main driver of declining global biodiversity, and the ability of natural habitats – and the human communities that they support – to bounce back from disasters is a direct function of this biodiversity. The amount of habitat loss on the planet is staggering. Urban sprawl, deforestation, mining, and desertification can all easily be seen from space. Fortunately, there is a glimmer of hope. Conservation and resource management have grown, and some of the best minds in the world are working to conserve and protect our remaining special places.
THE CLIMATE CRISIS CAN SEEM SO OVERWHELMING. WHAT IS SOME ADVICE YOU WOULD GIVE TO PEOPLE ABOUT EFFORTS THEY CAN MAKE THAT WILL ACTUALLY MAKE A DIFFERENCE?
Individual actions CAN make a difference! Eat locally and low on the food chain (like oysters). Visit one of the multiple farmers’ and seafood markets in town to make this easy. Conserve water – pumping and treating water and wastewater is incredibly energy-intensive, and electricity
production and consumption is a major source of atmospheric CO2 Support birds and butterflies (biodiversity!) and plant native plants to minimize water use. Reduce your use of disposable products – especially plastics, both the production and recycling of which are energy- and water-intensive. Carry reusable bags, bring your own water bottle, and skip the straw. Keep your food waste out of the landfill to reduce methane (a potent greenhouse gas) production by setting up a simple compost bin in the back yard (and use the resulting nutrient-rich fertilizer on your lawn or garden). These are all efforts that can make an impact.
WHAT'S YOUR FAVORITE THING ABOUT LIVING IN THE COASTAL BEND?
We moved to the Coastal Bend in 2007, and we never imagined how rich our community experience here would be. I love being part of a community that has so many creative people doing inspiring things to push the boundaries of local food, art, and music. I love seeing new, homegrown businesses pop up downtown. It feels like Corpus Christi is really coming into its own unique identity, and it is inspiring. I aspire to be a part of that community sense of place in some small way.

While old favorites continue to set the bar for classic Coastal Bend fare, our ever evolving restaurant scene and rising national profile means many spots are pushing the boundaries in delicious new ways. In an attempt to take a closer look at the wildly inventive local seafood scene, I ate my way through 11 different hot spots in just one week. The experience allowed us to discover the stories behind two restaurant owners, four dishes, and five eateries that all truly embody the traditions and innovations of Coastal Bend seafood.
Tuna Fusion Ceviche
COSTA SUR WOK + CEVICHE BAR, NORTH PADRE ISLAND
What does chef, restaurateur, and surfer Nick Mackrizz, a Padre Islander born and raised, want from his diners at Costa Sur? He flashes a cocky grin and jokes, “That wow face.” That’s not just big talk. One bite of his Tuna Fusion Ceviche and you’ll be shattered.
Trained at Le Cordon Bleu, Nick cooked in restaurants in Peru before bringing his passion for ceviche home. In the open kitchen of Costa Sur, Nick provides “a live action dining experience.”
Hefty chunks of raw tuna are cured or “cooked” in citrus juices for just five to eight minutes, then topped with fresh mango, avocado, raw and pickled
onions, spicy limo peppers, and canchita (also known as the unpopped popcorn of Peru). Don’t worry about utensils –Chef Nick serves up crispy homemade tortilla chips that double as spoons. Fair warning: this blend of classic Peruvian technique and South Texas flavors is so dynamite that you’ll probably forget your dining companions even exist. There’s little to no talking while eating this ceviche. There is only scooping, dipping, chewing, and wow faces.

At 19, Beth Owens visited Port Aransas for the first time on Spring Break and –sappy but true – met “a very cute boat captain.” Reader, she married him. And good thing, too, because the couple went on to open three of Port A’s most foundational and well-loved restaurants, subsequently helping to define the island getaway as a rising foodie destination.
Though they had owned a fishing charter called Deep Sea Headquarters for several years, in 2005 Beth and Kelly Owens decided to open Fins, a casual family restaurant on the water. Back then, Port A’s seafood scene wasn’t as developed. Despite others in the industry pressuring them to serve box-to-fryer frozen seafood, Beth and Kelly were determined to serve 100 percent fresh fish, or no fish at all. That culinary integrity won Fins a strong base of repeat customers, and today, the restaurant is a waterfront tradition that serves 1,500 guests a day.
Beth now owns six different businesses with her husband (including MacDaddy’s Family Kitchen and Tortuga’s Saltwater Grill), serves on Port Aransas City Council, and recently sat on the judges’ panel at the World Food Competition. “Kelly Owens changed my life,” she recounts. “I didn’t even realize I had it in me to be the person I am today. I never ever would have imagined the life I have right now.” Port A (and especially its seafood scene), in turn, cannot imagine a life without Beth.

How many people can say they have two U.S. Presidents in their family tree? Hank and Hannah Harrison can. As descendants of both William Henry Harrison and Benjamin Harrison (the 9th and 23rd Presidents, respectively), Hannah and Hank can trace their ancestry through the Civil War, the signing of the Declaration of Independence, and the Continental Congress. Self-proclaimed history buffs who “love any excuse to tell the story,” the siblings watched their father, Bill, build a business around this unique history. Today, Hannah and Hank, along with their mother, Cathy, own one of Downtown Corpus Christi’s biggest waterfront dining attractions.
Serving up classic seafood favorites like Fried Calamari, Crab-Encrusted Flounder, and Mahi Tacos, the restaurant literally
floats in the marina, offering the best view of the sunset Corpus has to offer. While the day-to-day of Harrison’s Landing is handled by CEO Lynn Cates, whom Hank calls “part of the family,” Cathy and Hannah take care of the buying for the boutique, and Hank continues to be involved with the brand, though he recently shifted gears to focus on his own downtown business, The Exchange.
Though Harrison’s Landing has expanded over the years to include a boutique, charter cruises, live music, and interactive sailing cruises, the family maintains the humble philosophy of, “Serve good fish. Keep having fun.” Sounds like Corpus in a nutshell, huh?

BLACK MARLIN, PORT ARANSAS
Don’t let the luxury resort atmosphere of Palmilla Beach fool you. Black Marlin is all about casual feel-good eats. “I wait until I’m ravenously hungry,” explains Executive Chef Gail Huesmann, “and then I come up with dishes that push the envelope on the familiar.” A self-proclaimed “freak for seafood” and firm believer that “eating with your hands is the most immersive experience,” Chef Gail slays everything she puts on the menu at Black Marlin, especially the Lobster Tostada.
Swapping out the traditional tortilla for a deep-fried wonton (because “who doesn’t love wontons?”), this dish is
essentially a tower of lobster claw and knuckle meat on a light and crunchy base. Smooth flavors of avocado, mango salsa, and coleslaw (hold the mayo) swirl together – the perfect beachside snack on any South Texas day. Though expertly, artfully plated, this dish doesn’t expect to be eaten with any delicacy or decorum. In fact, it will mock you for trying, tumbling through your fingers to paint a Jackson Pollock of seafood on the plate. Finger food at its finest.

Tucked behind The Tarpon Inn on E. Cotter Ave in Port Aransas, Roosevelt’s earned its name when FDR himself visited Port A for a fishing trip in 1937. Today, the president’s tarpon scale sits in the lobby of The Tarpon Inn, and Roosevelt’s is the fine dining experience in downtown Port A. With seating for just 64, the warmly paneled cottage restaurant offers an intimate alternative to the sports bars and grills crowded with locals and tourists alike. No matter where you’re seated, the open kitchen provides dinner and a show, so to speak, as chefs and line cooks toss pans of jumbo lump crab cakes, pan-seared snapper with ravioli, and parmesan crusted flounder.
Grounded in the two-pronged culinary tradition of Coastal Bend meat and seafood, Roosevelt’s food philosophy is that fine dining doesn’t have to mean molecular gastronomy; sometimes it just means refined comfort food prepared from the highest-quality ingredients. Here, says Executive Chef Matt Axtell, fine dining is an experience available to everyone, an elevated meal you can roll up to in a golf cart.

When Karey Swartwout purchased a tiny sailboat repair shop on the edge of Little Bay in Rockport nine years ago, it was just “a shell of a garage” with a small parking lot still lined with sailboats waiting for a little tender loving care. Today, that cottage is old Rockport reinvented, sporting an outdoor patio, a small bar, and a dining room appointed with shiplap and mirrors. It’s fair to say you don’t really expect great seafood restaurants to sit so far inland from the coast, but The Blue Clove Seafood Bar + Grill has made a name for itself by defying expectations. Father-son duo Antonio and Tony Posada embrace the mashup of their old school and new school mentalities, often veering away from tradition to create offmenu favorites like the Cajun Snapper. Flaky sauteed snapper is piled high with buttery bay scallops and jumbo shrimp, all of which is topped with mushrooms, capers, and a creamy cajun sauce. The lightness of the snapper complements the richness of the sauce, tossing you back and forth between a half dozen incredible flavors with each bite.
There’s something new in the pan every day at The Blue Clove. Both Tony and his father love the thrill of experimenting with new preparations. “Tell us what you want and we’ll make it,” says Tony, eager for a challenge. Spooning the last bite of creamy fish off my plate, I have no doubt Tony would have prepared this snapper to perfection even had I caught it off the jetty at Packery Channel and brought it to him still finning. After tasting this dish, I just might.

Inspired by Chef Paul Prudhomme’s Magic Seasonings, Island Time owner Romeo Galindo developed his Black Magic Grouper as a playful experiment...and instantly discovered an island favorite. Sitting on a bed of jasmine rice and grilled asparagus, this dish looks, tastes, and sounds like sin. In that first bite, peppery grouper and a decadent basil cream sauce hit your tastebuds with a one-two punch. But the second bite is when the magic happens. Led by Brad Lomax and his son, Richard, Water Street continues to expand, offering one of the widest arrays of Gulf seafood in the Coastal Bend.
If you’re not sure where to start with Water Street’s top-notch menu, we suggest a plate of half-shell Gulf Coast oysters.
When in Rome, right? A half-dozen raw oysters come on a bed of ice with lemon, tabasco, horseradish, and saltine crackers. Delicious? Yes. Sophisticated? No. This is finger food. If you’re looking for something more decadent, the Oysters Rockefeller are topped with sautéed onions, spinach, and bacon (yes, bacon!), then sprinkled with jack cheese and baked in the oven. The result is a creamy texture and garlicky flavor that will have you wondering if it would be rude to lick the shells. (It would, but we won’t tell.)

From medical teams to support groups, the fight against cancer is multifaceted. This ever-evolving and growing list of advocates now includes cosmetic tattoo artists. Permanent and semi-permanent cosmetics, such as microblading and microshading, can restore what is often lost due to treatments. What it’s also restoring is confidence.
Tina Lain, owner of Gold Dust Cosmetic Tattooing, is a certified cosmetic tattoo artist with 20 years of experience. She has dedicated the last five years of her career to the art of cosmetic tattooing, working with clients during various stages of cancer, from diagnosis to remission. Tina is considered a master of the cosmetic tattooing technique referred to as microblading, which is both a science and an art.
“The process of medical tattooing is similar to a medical procedure, in that there are legally mandated guidelines outlined to ensure the safety of both the client and the artist alike,” she explains. Gold Dust Cosmetic Tattooing holds the highest rating with the Texas Department of State Health Services, ensuring the studio maintains current licensing and follows proper sterilization protocol.
Microblading is a semi-permanent cosmetic tattoo technique used to create hair-like-strokes, which can be tattooed manually or with an electric machine. In both cases, pigment is implemented into the dermis at the time of the application, creating a three-dimensional eyebrow. As Lain explains, “selecting pigment is done with the client’s natural follicle, skin type, and tone in mind. When pigments are matched properly, and the technique of microblading is applied professionally, optimal results will make it virtually impossible to differentiate between a tattooed stroke and a natural hair follicle.” For her clients, it does much more than recreate eyebrows. “Cosmetic tattooing provides an individual with an opportunity to experience their own version of victory, the joy of seeing themselves as who they once were – or better still, as they’ve never felt before, whole.”
One such woman who has benefited from Tina’s skills is Cherri Durbin.
At the age of 31, Durbin received difficult news. “I was diagnosed with Stage 3 Ductal Carcinoma cancer,” she says. “I began chemotherapy, and they said I would likely lose my hair within two weeks. Sure enough, 14 days later, I lost my hair.” The loss was difficult, because it was a visual acknowledgement of a fight for her life.
It was a battle from which Durbin emerged victorious, having been declared cancer-free by MD Anderson several years ago. However, there were still aspects where cancer left a lasting mark. “After chemo, your hair doesn’t always grow back or grow back the same,” she explains.
“My brow follicle never grew back completely.” After some consideration, she decided to have a consultation with Tina. After the two-part cosmetic procedure, Durbin says, “I had an immediate weight released from my shoulders. I felt like it helped me complete a journey.”
When it comes to permanent or semi-permanent cosmetics and procedures, Lain and Durbin encourage people to make an educated choice and one that’s right for them. “Be informed and well-educated. Go to a professional,” Durbin says. “Be bold. Be brave. Be supportive of each other. Be who you are meant to be.”

Dr. Gabriel Lopez started as an anesthesia resident at Loma Linda University after graduating from the Medical School at UT Houston Health Science Center. He then proceeded to complete a Pain Fellowship at UTHSC in San Antonio. In 2006, he started his own practice, Corpus Christi Pain Medicine. Now, 14 years later he employs a Nurse Practitioner and 16 office staff. They are a mix of medical assistants, receptionists, referral specialists, lab technicians, office administrator, and billing specialists who are all incredibly hard working. Some are bi-lingual and they all treat each other like family. With the motto, “Making Lives Better,” Dr. Lopez goes above and beyond to find an answer to treat each patient’s pain. He knows the importance of listening to each patient along with a thorough physical exam and reviewing their radiology and imaging to diagnose their problem. Dr. Lopez loves to joke with his patients, as humor and laughter can be very helpful in making them feel at ease, they tend to be his biggest marketers. Dr. Lopez’s surgery center, Southside Specialty Surgical Center, will be a multi-specialty ASC which is anticipated to open in the fall and plans to bring the most cutting edge technology to the Coastal Bend. In 1977, my parents Kiko and Grace opened Kiko’s at the advisement of my grandparents, who owned Mi Terra on Morgan Avenue. In 1991, after outgrowing the shopping center next to the restaurant, Kiko built the building we are in today. My parents worked for 32 years until they retired in 2012. As a boy, I worked weekends, summers, and holidays learning the business. I knew this was going to be my life. In 2012, I bought the restaurant and property. We’ve been featured in Texas Monthly and a morning show in San Antonio. We’ve won Best of the Best ever year, as well as The Local’s List. What makes us the Face of Mexican Food? SECLUDED BIRDING AND BEACH RETREAT OFFERS AN ABUNDANCE OF TREES, BIRDS, AND WILDLIFE

welve years ago, Randall Lockridge and his wife, Dawn Grosser, moved to Corpus Chris ti and discovered a love for birding. Six years into their stay, they found a home in Oak Motte Sanctuary – a unique birding retreat. The re treat, nestled comfortably in a wooded nature preserve in the Packery Channel area of the Is land, provided all the necessary elements for a clean and relaxing vacation home.
Randall recalls the first time he and his wife saw the home: “I walked up on a hawk the first time I walked around the home, and we both jumped.” Randall and Dawn both fell in love with the unique environment, and knew it would make the perfect vacation home.
Although they loved the surroundings, renova tions were in order. Randall added a new room, exterior siding, and new windows. A new door in a bright, fun, beachy yellow shade is a won derful addition, which makes finding the house much easier, while adding a splash of colorful personality.
Renovations to the landscaping were essential to enhance the richness of the sanctuary. Randall enlisted the help of Native Dave, a local professional landscaper, to add charm representative of a birding sanctuary. Since native plants are – naturally – suited to the local soil and climate, Native Dave harvested hundreds of plants from a property on the island that was scheduled to be demolished. He brought these plants to Randall’s home to repopulate the area with natural plants, executing a safe, inviting sanctuary that provides a relaxing and peaceful spot for the birds.
The natural look creates a messy and unkempt vibe, but because native plants don’t require the same upkeep as store-bought plants, as long as the plants are left alone, they grow beautifully. The Padre Island Flower, Texas Blue Stem, and

Wild Mustang Grapes are just a few of the local plants that adorn the home. The new landscaping not only offers a sanctuary for the many species of birds, it also provides curb appeal for a relaxing vacation home. During their stay, Randall and Dawn have seen tree frogs, coyotes, and egrets. Although Corpus Christi is naturally a tropical climate, the home attracts different animals that can’t be found in the city.
The distinctive home, which resembles a tree house, is designed with the living quarters on the second floor, sitting atop a 1,400-squarefoot garage. The elevated design of the home offers wraparound decks, with a breathtaking view of the many species of birds flying around atop the tops of the trees. Although a beach house is a staple retreat over the summer, the birding retreat aspect still holds appeal during the fall. The close proximity of the Packery Channel offers a completely different environment and a great place to take a stroll while enjoying the cooler fall air.
The clean white shade of the interior walls creates the perfect backdrop for the coastal birding beach house décor in the home. The furniture, a combination of estate sale finds and furniture store hauls, gives a fresh, local spin different from the traditional beachy décor. Randall makes the most out of the wall space with Charlie Harper birding prints on the wall, offering the perfect touch to the contemporary birding motif. The shelves house a display of books on Coastal Bend birding, poisonous plants, and various elements on the Island. Although unique in décor and location, this residence has the welcoming vibe of a home, perfect for having family and friends over.
Rhonda Bosquez assisted me in updating my home into the 21st century. I could not be more pleased with the results. With a background in architecture, Rhonda is the perfect person to design any project and this one included a completely new kitchen. Rhonda knows the “language” and easily works with contractors, electricians, plumbers and many professionals required to complete a project.
Rhonda was always on call when questions arose. Her attention to detail is unmatched by anyone with whom I have worked. Since I am not a detail person, it was wonderful for Rhonda to take into consideration absolutely every aspect of the project.
Every person who comes into my home comments on how beautiful it is…the openness, the light, the colors. My reply is always, “It’s thanks to Rhonda. She designed and decorated it all.” Rhonda is a true professional who made the remodeling process and the excellent results a true success.

As an added gem, there is a private entrance to the nature preserve in the back of the house, built on an ancient dune with an entrance that steps down into the nature preserve. This addition was made possible by the previous owner when he donated one of his lots to the preserve.
The home is close to all the essential tourist locations: North Padre Island, Mustang Island, Schlitterbahn, and the beach, but the location is in the perfect place for peace and quiet.
Although Dawn and Randall have since moved to Dallas, the uniquely wonderful property remains their vacation home, and the perfect place for a family that still loves their connection to Corpus Christi.

From candy apples at Halloween, to Thanksgiving's pumpkin pie, or the Christmas feast, your family and friends will spend the next few weeks gathered around your kitchen, enjoying time spent together, and time-honored family recipes.

THESE COLD-LOVING HERBS ARE IDEAL FOR THE SEASON

The best home chefs have quick and continuous access to fresh herbs. Herbs bring flavor, nutrition, and medicinal properties to the diet. Fortunately for us, winter is a great time to grow herbs in South Texas!
A small 4’x8’ bed close to the kitchen door is plenty of space for an herb garden. This space can easily evolve from winter herbs to heat-loving herbs in the spring.
Plant herbs in rich, well-tilled, well-drained soil. Use high-quality organic compost as fertilizer. Most herbs are difficult to start from seed, so plant the herbs below as well-grown transplants from a trusted local nursery.
These cold-loving herbs thrive in cool weather. They can even take a light freeze if grown in heathy, well-watered soil. They will “go to seed” very quickly in the spring. That means they grow tall and leggy with few leaves and many flowers and seed heads. Harvest the seeds to use yearround and the flowers to eat or for edible bouquets, then plant basil, mint, and oregano in their place.
These herbs require 7 to 8 hours of direct sunshine per day. Water the soil beneath the herbs when it is mostly, but not completely, dried out – usually about twice per week. Mulch the bed heavily (at least 4” thick) with raked-up native leaves to insulate the soil and prevent weeds.
DILL
Spacing, 12” Height, up to 36”
Easy to grow. Take frequent cuttings at tips of plumes to promote lush growth. Goes to seed in warm weather. Clip flower-heads and hang upside down over paper to catch seeds as they dry and fall, for use all year. Attracts caterpillars (swallowtail butterfly); simply pick them off and relocate them away from the garden.
CILANTRO (CORIANDER)
Spacing, 12” Height, 24”
Easy to grow. Take frequent cuttings. In warm weather, small white flowers form, making an aromatic, edible bouquet. Save all seeds as they turn brown – seeds are the best part of the plant.
PARSLEY
Spacing, 12” Height, 12” to 24”
Easy to grow from transplants; seeds very slow to germinate. Clip all seed heads to keep plant lush and leafy. Don’t cook leaves, which destroys flavor and nutrients; sprinkle fresh just before serving. In warm weather, beautiful and delicious white flowers form. Grows bushy in warm weather with few leaves. Save all seeds for year-round use.
THYME
Upright spacing, 12” Height, 12” to 15”
Two types, creeping or upright. Upright best for herb garden. Thyme is a diminutive plant with robust flavor. Grows slowly. Prune often to keep compact. Gorgeous, fragrant, delicious starshaped flowers form in warm weather. Can clip entire stems and freeze.
CHIVES
Spacing, 6” Height, 12” to 18”
Onion chives or garlic chives, both grow easily and well in The Bend. Grow rapidly once established. To harvest, clip or pinch bunches of chives at the base; they will regrow. In warm weather, onion chives produce purple flowers and garlic chives white flowers. Clip at base and place into vase for gorgeous table presentation.
ARUGULA
Spacing 12” Height, up to 36”
Considered a salad green, but grows like an herb in South Texas. Gorgeous yellow flowers that are delicious and spicy. Sprinkle flowers over salads or use as garnish. Arugula greens are slightly bitter, wonderful in salads. Packed with nutrients. Bolts in warm weather, makes for gorgeous and aromatic edible bouquet.
SAGE
Spacing, 12” to 24” Height, 24”
Can take months to become established, but then grows hardy. Don’t prune until it reaches 24” in height, then prune top four inches of stems often. Clip all flower heads before blooming to concentrate flavor in the leaves.

Mexico has its own species of marigold, known as Cempasuchil, and its importance to the Mexican culture dates back to pre-Hispanic times. Marigolds are especially important in Mexico during the Day of The Dead celebrations.
Cempasuchil is called the flower of the muertos, or dead, and must be present in Día de los Muertos altars and ofrendas (or offerings). It’s believed that marigold’s pungent scent and vibrant color help lead the spirits of the dead back to Earth to visit their loved ones. Typically, marigold blossoms and petals are placed around the altar and also on the ground leading up to the altar, as if to form a path up to it.
I am lovingly drawn to the aroma of marigolds – they remind me of my Abuelita Cuca, who always smelled of fresh-picked flowers and always had a smile for everyone. My cocktail passion stems from my abuelita, who adored sipping a cocktail after a long day in the kitchen. She was the epitome of cool.
Mi querida Abuelita Cuca has left this earth, but has left mi corazon etched with beautiful memories of our time in the kitchen together. I want to share with you two recipes that honor mi Abuelita Cuca…infused with marigolds.
Marigold Pineapple Margaritas
RECIPE BY VIANNEY
Serves 20
PREP TIME: 10 minutes
COOK TIME: 5 minutes
RODRIGUEZ
TOTAL TIME: 15 minutes
Marigold Simple Syrup
1 cup water
1 cup sugar
1 cup dried marigold leaves
INSTRUCTIONS:
In a saucepan, combine water and sugar and bring to a boil, stirring occasionally. Once at a boil, remove saucepan from heat, add dried marigolds, allow to steep for 5 minutes. Strain through a fine sieve and let cool. Spread strained marigold leaves on a baking sheet to make garnish.
Note: Marigold Simple Syrup will keep for up to two weeks in the refrigerator if well-sealed.
For Candied Marigolds
INSTRUCTIONS:
Spread strained marigold leaves on a baking sheet to make garnish. Place strained marigolds in a 200-degree oven. Bake for an hour, stirring occasionally to allow marigolds to dry out. Use candied marigolds to garnish margaritas.
For Marigold Pineapple Margaritas
INSTRUCTIONS:
3 quarts pineapple juice
1 cup freshly squeezed lime juice
Marigold Simple Syrup, recipe above 4 cups Tequila Blanco, such as Tequila Cazadores Blanco
For Garnish: lime wedges, smoked salt, candied marigold leaves, pineapple wedges
INSTRUCTIONS:
In a large pitcher or cazuela, combine pineapple juice, lime juice, marigold simple syrup and Tequila. Stir to combine well. Run a lime around rim of glass, and dip half glass into smoked salt and other half into candied marigold leaves. Fill glasses with ice and serve margaritas garnished with pineapple wedges.
Creamy Marigold
Baked Rice
RECIPE BY VIANNEY RODRIGUEZ
Serves 6
PREP TIME: 5 minutes
COOK TIME: 41 minutes
TOTAL TIME: 46 minutes
1 cup white rice, such as Mahatma
2 tablespoons butter, unsalted
1/4 cup diced onions
1 teaspoon salt
1 teaspoon pepper
1/2 cup dried marigold leaves
1 cup heavy cream
1 tablespoon fresh lime
INSTRUCTIONS:
For rice: Bring 2 cups of water to a boil in a 2-quart heavy saucepan. Stir in 1 cup rice. Cover, reduce heat and simmer for 20 minutes or until all water is absorbed.
To a pan over medium-high heat, add butter. Sauté onion until light and translucent, about 3 minutes. Season with salt and pepper. Stir in dried marigolds and heavy cream. Cook over low heat for 3 minutes, stirring.
Preheat oven to 350 degrees. Liberally spray a baking dish with non-stick cooking spray. Stir together the rice and marigold cream sauce. Bake for 15 minutes. Remove from oven, drizzle with fresh lime juice and serve warm.

While some might say a child won’t remember their first birthday, that shouldn’t ever stop you from pulling out all the stops when creating a beautiful event celebrating your baby’s first year of life! When it came to Miss Libby and her first birthday, a fiesta in the garden was the way to go.
Guests arrived to a festive garden area on the patio of Hester’s Café. The space was transformed with custom papel picado featuring the birthday girl’s name, piñatas, streamers, and handmade flowers all boasting pastel colors.
Everyone knows a party is only as good as its food and Hi-Ho on the Go, a food truck from the popular local taqueria, did not disappoint. Party goers enjoyed delicious street tacos topped with queso fresco and cilantro.
Leaving room for dessert is a common rule of thumb when it comes to a birthday celebration. A proper display to show off your cake will always draw people in. Libby’s sweet treats featured a delicately decorated cactus cake, an assortment of cookies, and dulce de leches candies.
Lastly, a memorable party favor will always help you achieve the goal of guests leaving with smiles on their faces. Cactus shaped macarons in styled boxes for the taking were stacked high for everyone as they left. Needless to say, Libby’s first birthday celebration was a picture perfect party!

his Thanksgiving season, let us rejoice for having the best seafood in the world right at our doorstep!
Certain regions are justly famous for their seafood: the Pacific Northwest, the Mediterranean, the New England coast, the roiling currents of Chile, and the lush islands of Japan.
Here is the not so well-kept secret: Our seafood in The Bend is as good as, or better than, anything else in the world. Our Gulf Coast seafood industry is getting more and more attention as an international fishing and seafood destination.
We only need to step outside to look across the sparkling bays and white-capped waves of our Gulf waters. Those currents hold redfish, speckled trout, flounder, snapper, black drum, shrimp, oysters, and much more. This seafood can be enjoyed the same day, or even within hours, from the moment it was caught.
The trick to finding the freshest fish is knowing where to look. If you know a good angler (or one of our many world-class fishing guides) you can have your fill of trout, red, and other game fish. But the easiest way to get the freshest fish any day of the week is to build a relationship with a good fishmonger.
There are many excellent seafood markets in The Bend. Don’t be afraid to buy bait and seafood at the same shop – these are some of the best!
Our friends at Flowers Shrimp Market in Rockport sell live shrimp and crabs for bait or for the table. As you stand on the dock with seagulls squawking and the sun shining and the wind blowing in your hair, you can see where the fishing boats have just docked. The nice (and super-fast) lady will bag your live shrimp or crabs with ice right in front of you; it doesn’t get fresher than that.
Find an experienced fishmonger and build a relationship. When we call our fishmonger, a friendly voice answers who already knows us and our preferences. He tells us the best catches of the day, will set something aside for us, and can even make cuts precisely to our specifications. This relationship has blessed our table many times with the freshest, choicest, most delicious seafood in the world at a very fair price.

Stuffed Flounder
Serves 4
PREP TIME: 5 minutes
COOK TIME: 25 minutes
INGREDIENTS:
4 flounder fillets
1 tsp salt
1 tsp paprika
1/2 tsp cayenne pepper
1 stick of butter, cubed
CRAB AND OYSTER STUFFING
1 lb crab meat
1/2 lb oysters
1 egg
1/2 sweet onion, diced
1/3 cup bell pepper, chopped
1/4 cup fresh bread crumbs
3 Tbsp mayonnaise
3 cloves garlic, minced
Juice of 1 lemon
1 Tbsp yellow mustard
DIRECTIONS:
Preheat oven to 350°F. Using a sharp fillet knife, cut along both sides of the center seam of each flounder fillet. Place fillets flat in a large baking dish. Season with salt, paprika, and cayenne.
In a medium-sized bowl, combine ingredients for crab and oyster stuffing. Divide stuffing into four equal portions, and stuff the flounder, allowing the excess to mound on top. Top with a light coating of bread crumbs. Disperse butter evenly throughout the baking dish.
Cook flounder for 20 minutes, until fish is opaque and stuffing is starting to brown. Place oven on high broil setting and brown the top for additional 5 minutes, until golden brown. Serve with lemon wedges.
Thai Coconut Seafood Soup
Serves 6
PREP TIME: 5 minutes
COOK TIME: 15 minutes
INGREDIENTS:
2 Tbsp coconut oil
6 cloves garlic
1 stalk lemongrass
1 Tbsp ginger
4-8 Thai chilis, whole
4 cups fish stock or chicken stock
2 (13.5 oz) cans coconut milk
3 Tbsp fish sauce
1 Tbsp brown sugar
1 tsp salt
Juice of two limes
1 lb local fish filet, such as flounder
1/2 lb shrimp, peeled and deveined
1/2 lb mussels, debearded and cleaned
1/2 lb clams, cleaned
1 bunch fresh basil or cilantro
DIRECTIONS:
In a large pot, cook coconut oil over medium heat. Sauté garlic, ginger, lemongrass, and Thai chilis for 2 minutes. (For a milder soup, decrease the number of chilis or add later in the cooking process). Add fish stock, coconut milk, fish sauce, salt, and lime juice to the pot and cook until boiling. Once boiling, add fish, shrimp, mussels, and clams and cook for another 3 min utes, until most of the shells have opened. Remove from heat and serve with chopped basil or cilantro leaves.
Steamed Blue Crab
Serves 4
COOK TIME: 15-20 minutes
INGREDIENTS :
6 local blue crabs, whole
1/2 cup crab boil or Old Bay® seasoning
12 Tbsp salted butter
Juice of 1 lemon
1 lemon, segmented
DIRECTIONS:
Bring a large pot of salted water to a boil. Add seasoning and blue crabs, cooking in batches if necessary. Cook for 10-15 minutes, until crab turns orange. In a sauté pan, heat butter over medium-low until melted. Add lemon juice and stir to combine. Serve crab with lemon butter and lemon wedges.

ort Aransas is one of the most beloved spots in South Texas. With 18 miles of coastal beauty, the small beach town has plenty of fun and engaging things to offer for tourists and locals alike. Adding to the richness of the Texas gem is Barefoot Beans, a new local tropical java spot.
Owner Jace Thompson grew up working summer jobs in Port Aransas, and moved there from Portland, Texas, after high school. Jace shares the story of finding the inspiration to open up Port Aransas’ second coffee shop.
“I've always loved coffee, but never really thought of selling it,” he says. “During a summer trip to Costa Rica, I checked out a couple of coffee farms. One of the interesting things I learned is the detail that goes into planting and caring for the crops. The process is very labor-intensive and mostly done by hand, which I appreciate. What I discovered is that the less handled a bean is, the better the quality. Needless to say, after my visit to Costa Rica, I was inspired.”
Jace returned home on a wave of inspiration, connecting with friends and family to discuss ideas about opening a shop.
“I realized that although Port Aransas is one of the busiest places in the summer, it only had one coffee shop,” says Jace. “I went back and forth with different ideas – should I open a coffee shop on wheels or find an existing location? The ideas are the easy part, but putting them into action is where the real work started.”
Ultimately, Jace decided to find an existing location in Port Aransas. Dream became reality when he met with owner of Port A Beer Hut, Tim Everitt.
“Tim offered me an opportunity I could not turn down,” Jace says excitedly. “He was in the process of building Port A Beer Hut, a drivethru and bar with a super-chill beachfront island feel. Lo and behold, I found my spot to start Barefoot Beans.”
Barefoot Beans is the only spot in Port A offering pour-over, nitro tea, and coffee. Sourced with locally roasted beans from Bloom City Coffee Co., the Almond Joy is a mocha and coconut iced coffee mixed with half and half; or try the Nutella with hazelnut and mocha. Barefoot Beans also serves a mixed berry tea from Egypt with added lavender, and coconut extract served on Nitro tap.

he result of a flavorful passion and a heaping spoonful of hard work, YOLA Cocina Mexicana seems to fit right into the Lamar Park Shopping Center as a new and fresh dining experience that both excites and entices us.
YOLA is meant to embody a lot – even more than what its dishes will surprise us with. Owner Ryan Rios, also behind BKK thai kitchen + bar, pulled inspiration for this new local eatery from his enriching travels and tastes of dishes from roughly 27 countries.
“There is this idea that for something to be ‘Mexican,’ it must be bright and colorful, which is in far contrast to what YOLA has become,” Rios says about YOLA’s style and aesthetics. “When visiting the Polanco District in Mexico City, it is elegant and stylishly fashionable, from the old to the new. The space I created is very intimate and incorporates that mix of styles throughout the years.”
The space features handcrafted tile from Squarefoot Design Studio, as well as work from local upholsterer Mr. Marroquin, who Rios mentioned hasn’t done this type of work in about 30 years.
The aesthetic of the interior is a huge part of the overall dining experience and atmosphere of the restaurant.
What Rios does aim to keep colorful are the dishes prepared for guests. Eating by the seasons, with a focus on high-quality ingredients, are points of emphasis Rios draws from when it comes to the food you will find on YOLA’s menu. These dining elements come from his traditional dining experiences; just as his grandmothers Yolanda and Rosa would recommend.
In addition to maintaining the ever-popular BKK, Rios and his team were able to build YOLA while he was enrolled in the local culinary program at Del Mar College.
“I have this burning desire to see and experience absolutely everything that I can in my day-to-day life, and that is where I get the fuel to run two businesses, be in the middle of opening a third, continue my education full-time, and find time for myself and my personal relationships,” Rios says.
The team and support system who assist Rios allow him to further his culinary experience, investing in his restaurants’ growth and success. Adding YOLA to Lamar Park, which has been around for nearly 64 years, will invite dining enthusiasts throughout the Coastal Bend to perhaps reimagine Mexican cuisine as it breaks the American dining norm.
“Whether you are coming from the neighborhood directly surrounding the center or from the complete opposite side of town, we want to be that neighborhood spot that feels comfortable and has more personal service, not a 200-seat corporate restaurant where you’re just another person in the door,” says Rios. “The family behind Lamar Park is special to me and has believed in BKK and now YOLA.”

When it opened in 1926, crowds of onlookers turned out to view the Bascule (derived from the French word for seesaw) rise and descend to allow ships to pass into the Port of Corpus Christi. The bridge was 121 feet long and 52 feet wide, and its two electric motors easily raised it 141 feet in the air. It took between 12 and 30 minutes for a vessel to pass … which was plenty of time to appreciate the engineering, or to become impatient.
Almost immediately after opening, it was clear that a new, higher bridge would be needed. 183 wrecks were recorded because ships couldn’t navigate through the tight passage, and regularly scraped or crashed into parts of the bridge and its controls.
As the 1950s began, a new bridge was a necessity. Some wanted to build a high bridge like the Harbor Bridge; others, like Mayor Albert
Lichtenstein, wanted a tunnel. And he wanted a tunnel so badly that an argument about it at City Council resulted in him resigning as mayor.
The Department of Highways offered $9 million for a bridge, nothing for a tunnel, and the decision was made. The Harbor Bridge we all know today opened October 23, 1959, and was expected to last the next 50 years. It is 5,818 feet long, 250 feet above the water, with 138 feet of vertical clearance. It weighs 155 million pounds, and quickly became known as “Napoleon’s Hat” for its distinctive shape.
