SPREAD THE LOVE ack in September, I attended Casa De Amor, where Callie and Rajan Ahuja were honored at the annual fundraiser benefitting Ronald McDonald House Charities of Corpus Christi. In 1990, Rajan’s parents, Peggy and Avinash Ahuja, organized the first fundraising event for the house, raising enough donations to fully fund the home’s opening. The house had 15 rooms at the time and was fully staffed by volunteers. In fact, it was the only Ronald McDonald House in the United States that was entirely founded by community efforts. Although McDonalds is very generous and is able to provide special amenities for the homes through corporate partnerships, much of the funding comes from local fundraising and donations from local businesses and patrons. All of the funds raised in Corpus Christi stay local.
This month, Ronald McDonald House Charities of Corpus Christi or, “The House that Love Built” celebrates 25 years in Corpus Christi this month. If you get the chance to visit, you might notice the brick walls that line the interior of the home. Written on the small, tan bricks are names of community members who contributed to the home over the past 25 years. What amazed me was how many names I saw. You can’t do much with one brick, but when an entire community of bricks come together, you get a house that provides shelter, joy and hope to so many families year after year. It stands, in my opinion, as a shining example of a community that exemplifies love. As part of our mission, we do not just want to create nice looking magazines, but contribute to creating an even better community for everyone in the Coastal Bend. Last year I kept looking for big ways to contribute and would get down on myself when we couldn’t make a major monetary donation to a worthy cause. Spending time with the people of the Ronald McDonald House has made me realize that while not every getsture can make a huge impact on an entire community, there are many small things we can do to show we care. I ask you all to keep this in mind throughout 2015. This time of year we associate love with red hearts and roses. However, in this issue, we celebrate love in all its many forms. From our list of romantic getaways to our team of brave bachelors, we have an exciting issue the team put together this month. We love the Coastal Bend and we hope to spread that love to the people in our community. I hope you will join us!

HARBOR BRIDGE FACELIFT Companies are submitting design bids this month for a replacement to the 56-year-old Harbor Bridge. Rickey Dailey, public information officer for the Texas Department of Transportation (TxDot) Corpus Christi, says the new bridge will likely be a cable-stay bridge and is tentatively slated for completion in 2020, depending on approval for permits and construction. HBO actress returns home from Hollywood to open local scouting agency. • What was your first role? My first acting role ever was a farmer in a play in preschool at Molina Day Care Center. My first role in a TV show in Hollywood was Lifetime’s Strong Medicine.
have growing up. I opened up a studio called Spotlight Talent Studios where I hold my acting classes and workshops. And I just opened a talent agency in town to represent the local talent for projects shooting all over Texas and beyond. And I am constantly trying to help move production to this neck of the woods. There is too much talent and beautiful scenery NOT to shoot here more often!
• Who was your biggest inspiration? I think Rita Moreno was every little Latina actress’s inspiration. Seeing someone who looked like me in West Side Story was big when I was a kid. I also loved comedic geniuses like Carol Burnett and Lucille Ball. That made me feel like a woman can be center stage and be just as entertaining as their male counterparts.
• How much time and effort does it take to make it in your industry? A lifetime. The old saying goes, “If there is anything else in the world that you want to do aside from acting - do it.” It’s a tough business with no guarantees. You can get your doctorate in this field and never reach the level of success you aspire to. Or you could find someone with no experience who happened to get “discovered.” But that’s not the norm. It takes passion, drive, persistence, and training.
• What was the best word of advice you ever received? “Don’t just wait for an opportunity to be handed to you - go MAKE your opportunities happen. You can’t rely on someone else handing over your dream - you have to go out there and take it. Make that dream a reality.” That has made me a do-er more than a dreamer. • What is the culture like in Hollywood? There are beautiful people at every turn in Hollywood. It was very image obsessed. Everyone was at the gym all the time. And people seemed a little self-serving - they wanted to know if you could help their career. If you weren’t a producer or director, or someone who could hire them, then the conversation was over. I couldn’t get into that so I stayed away from “networking parties.” • What was your favorite television/film job? I have to say that The Terminal is at the top of my list. Nothing could top working with Steven Spielberg and Tom Hanks. They are legends in the industry and they were a joy to work with. Very down to earth and real - I still can’t believe how fortunate I was. • Who are some of the biggest stars you have rubbed shoulders with? Name dropping time - ok, 14 the bend magazine
let’s see…I’ve worked with Tom Hanks and Steven Spielberg, of course, and Kate Winslet, Jack Black, Catherine Zeta Jones, Natalie Portman, Ashton Krutcher, Eva Longoria, Mary Louise Parker, William Shatner, Larry David, John Stamos, and Mark Ruffalo. • What inspired you to return home? I felt the need to explore other experiences in my life other than just my career. I wanted to have a family and Los Angeles isn’t the first place I think of when wanting to raise children. And I missed Texas terribly. Every year for about eight out of my 10 years I would daydream about moving back to Texas.
• What opportunities were available to you in the Corpus Christi area when you were growing up? I had an amazing education at the Drama Departments at Del Mar and TAMUCC. But when I graduated, there weren’t opportunities for actresses like me who wanted to do this for a LIVING. There weren’t any talent agencies that represented actors, or production shooting in Corpus Christi. So I headed to Austin to get my first talent agent and start working. • What are you doing to change that? Since moving back to Corpus Christi, I have been committed to offering opportunities that I didn’t

• As a local talent scout, what kind of opportunities are available to actors and actresses in the area? It’s exciting to be a part of the local community and be the bridge between local businesses, advertising agencies and production companies with the local talent. I have cast talent in print jobs, commercials, voiceovers, and feature films in the short two months I have been back in town. And I look forward to what the New Year brings for all of us!

VISIONARIOS OF THE BEND Picasso began to paint at age seven and produced his first work of art at age nine. The great artists of the future are the children of today. To see the work of the best young artists in our area, visit the Visionarios exhibit on display at the Art Museum of South Texas beginning February 15th. Visionarios is an annual art competition for the students of the Coastal Bend. The program is open to all public, private, and homeschooled children. Students compete within their own grade levels. The categories include wet, dry, and mixed media, photography, and digital art.

The “Renew-Reuse-Restart” theme for Visionarios 2015 encourages children to incorporate recycling into their art. The art is judged on perception, creative expression/performance, historical and cultural heritage, and critical evaluation. The winners are selected by a panel of distinguished jurors and placed on exhibit at the museum. Research indicates that children who study the arts perform better in school. Art requires discipline, focus, creativity, and self-discovery. The winners of the contest demonstrate a high level of maturity in their artistic expression. The Visionarios exhibit is worth seeing simply for the sheer beauty of the works themselves. These works demonstrate more than the skill of the artists; this art reveals the spirit of our children. Entries for the annual Visionarios competition are submitted and judged each January. The Visionarios 2015 exhibit will kick off February 15th with an awards ceremony and will run through March 22nd on the second floor of the museum.

“Mendelssohn’s Italian”
T
he faint sound of one final violin tuning, the woody smell of a practiced cello, the audience senses change and chatter turns to whispering with nuances of vibrancy. Darkness. Anticipation. The calm before the storm. This is the conductor’s moment. Baton is raised, and the symphonic banquet begins. Since 1945, the Corpus Christi Symphony Orchestra (CCSO) has provided classical and pop orchestral experiences to the Coastal Bend’s diverse population. This professionally contracted orchestra currently contracts over 110 musicians and staff and 20 different instruments.

In 2005, the CCSO moved their venue to the Performing Arts Center at Texas A&M University - Corpus Christi. This renowned performance hall features choice acoustics for live performances. Although the hall can accommodate approximately 1400 concertgoers, it still feels incredibly intimate. Much of the symphony’s success can be attributed to its fearless leader, Maestro John Giordano. Prior to joining the Corpus Christi Symphony Orchestra as Music Director in 2004, Maestro Giordano served as Music Director and Conductor of the Fort Worth Symphony Orchestra for 28 seasons. During that time, he elevated the orchestra to a fully professional and artistically outstanding ensemble. Maestro Giordano holds Bachelors and Masters degrees in music from Texas Christian University. Only skimming the top of his resume, Maestro’s multifaceted talents include composing,

arranging, teaching, as well as conducting. His published compositions include award-winning film scores for multiple documentaries. “The responsibility of the performing artist is at the core of the struggle to reassert the cultural and ethical values that have characterized our Country since its inception. It is imperative that we re-creators of the great masterpieces of the symphonic world strive to uphold them. This concert season will be extraordinary. It always is, and we’ll continue to present a concert season filled with marvelous musical moments.” explains Giordano. The CCSO strives to be a leader for the performing arts and aims to “introduce orchestral music to new listeners, develop the appreciation of experienced listeners, support and mentor young artists, and provide education and outreach programs.” “It is the mission of the Corpus Christi Symphony Orchestra to inspire, engage, and educate diverse audiences through live, high quality musical performances.” On February 21st at 8 pm, the Corpus Christi Symphony Orchestra will follow through with this mission statement with a colorful and impressive program titled Mendelssohn’s Italian, beginning with Rossini and ending with a special guest. Rossini’s Overture to Il signore Bruschino is a musical farce to start the evening off on a high, upbeat note. Born into a family of musicians, Gioachino Antonio Rossini, nicknamed “the Italian Mozart” was an Italian composer whose first opera was produced at the ripe young

age of 18. Overture to Il signore Bruschino was first performed in Venice on January 27, 1813. This Italian parody had its beginnings as an opera, composed of intimacy, sentimentality and comedic talent. It encompasses Rossini’s classic style of twinkling tunes that are meant to lift the heart, lighten the mood, and keep audiences grinning from ear to ear. For Rossini’s time, he was a forward thinker and brought many modern musical concepts to the forefront; for example, the second violins tap their bows on their music stands at one point during the overture. With a Rossini performance, you’re sure to experience hilarity and exhilarating crescendos and intensifications. Next in the program comes the main event, Symphony No. 4 in A major, op. 90 commonly just referred to as the “Italian.” German composer Felix Mendelssohn was one of the brightest musical masterminds of the 1800s, creating complex compositions while just a teenager, much like Rossini. 30 the bend magazine
Mendelssohn’s inspiration for the piece was Italy – the colors, the ambience, the mood, the flavors. First performed in London on May 13, 1833, this lively, jovial and sunny piece is said to have influenced the course of British music for the rest of the century. A perfectionist, Mendelssohn remained unsatisfied with the composition. He continued to revise it, and even planned to write alternate versions of the second, third, and fourth movements. Although it only appeared in print and was never actually a published symphony, it is numbered as his ‘Symphony No. 4’, even though it was the third he composed. Ending on an upbeat note, the finale is saltarello (leaping Italian folk dance). But please, refrain from grabbing your partner and doing the do-se-do, as the show isn’t over yet! We move finally into the deepest musical massage imaginable, Gamelan D’Drum. Drums are primitive, calming, and elicit internal strength. This composition is a
3 movement, 35 minute piece by Stewart Copeland, being performed by the five member percussion group from Texas, D’Drum. As the Maestro Giordano elaborates, “February’s concert will be very special and unusual. We will present the D’Drum percussion ensemble in a new work by Stewart Copeland.” Copeland was the drummer and founder of musical group “The Police” and has now broken into Hollywood film composing. The work, Gamelan D’drum, is both rhythmically exciting and visually stimulating. This performance has garnished nothing but unmatched audience appreciation and enthusiasm. Copeland was introduced to the music of D’Drum in 2008 and immediately wanted to collaborate. With D’Drum’s résumé including an Emmy award winning PBS short film following their travels, and Copeland’s many Grammy awards, this is a match made in drum heaven that you will not want to miss. First time parents Hardy and Robin Robertson took their newborn son, John Hardy, home from the hospital with instructions to not let him cry. Their infant son was born with a heart defect, and crying could cause pressure which may trigger extreme cyanosis (bluish skin coloration due to deficient oxygen in the blood).

At two weeks old John Hardy was diagnosed with Tetralogy of Fallot, a cyanotic heart defect that affects normal blood flow through the heart. It’s diagnosed in one of every 1000 children born with a heart defect. The defect develops during pregnancy and causes the heart to form incorrectly. Driscoll Children’s Hospital cardiologist Dr. Mohammad Khan explained to the Robertsons that their infant son would need open-heart surgery to repair the defects in his heart, which included a hole in the heart wall, narrowing of a pulmonary artery and valve and an enlarged aortic valve. His open-heart surgery was to take place in seven months. However, at just three-monthsold his blood oxygen levels were dangerously low and his surgery became immediate. At three months old John Hardy underwent surgery on his tiny, plum-sized heart, performed by Corpus Christi surgeon Dr. Mark Morales. “It was very scary, being first time parents,” explains Robin of the stressful experience. Receiving periodic updates on a pager from the lead nurse helped ease the new parents’ tension during the eight hour surgery.
OUR MISSION:
The Driscoll surgical team was successful. But just 10 months later an obstruction in the baby’s left pulmonary artery was detected, and John Hardy required a second open-heart surgery to provide a replacement artery and valve. John Hardy grew with his repaired heart into a healthy seven-year-old, enjoying little league baseball, football with his dad and golf and video games with his younger brother. During those years Robin continued to rub his chest with Vitamin E oil until his scar was hardly visible. When he asked about the scar, his parents explained: “You were born with a golden heart, and sometimes the doctors have to fix it.” Robin regularly listened with a stethoscope for the familiar whoosh and rhythm of her son’s special golden heart. Six month check-ups were advised but Robin often took John Hardy every four months, unable to wait. It was during a routine check-up that Dr. Kahn discovered that the pulmonary artery and valve that John Hardy received at thirteen months needed to be replaced, as he had outgrown them. In March of 2014, two weeks shy of

his eighth birthday, Dr. Morales performed John Hardy’s third open-heart surgery. This time John Hardy was old enough to ask questions about the surgery. His mother told him he was getting ‘The John Hardy Heart 2.0: newer, better, faster.’ “He loved it! It was something he understood, with all the electronics and videos. It was something he could relate to; he wasn’t scared,” Robin says. He spent four days in the hospital and once home, he was running, playing and never had any pain, Robin recalls. The Robertsons credit the Driscoll staff of nurses and doctors, as well as prayer from supportive family and friends in helping them cope with the stresses of their son’s surgeries. “Every single day with John Hardy is a blessing, and we know that. Every birthday I try to make just bigger and better than the one before. Always in the back of your mind, you know, even with a healthy child, it could be their last birthday, but with a heart patient it is a little more evident,” Robin says.
OUR IMPACT:
The American Heart Association has advocated for appropriate screening for heart defects on newborns before being discharged from the hospital. The Pulse Oximetry newborn screening test is used to detect critical, life-threatening congenital heart defects which might otherwise go undetected. Along with 35 other states, Texas has passed legislation requiring this simple, life-saving test ,and it went into effect on Aug. 7, 2014. Men, women and children are affected by heart disease or defect. The Corpus Christi American Heart Association holds an annual Heart Walk and Go Red For Women Luncheon to raise awareness that heart disease is the #1 killer of both men and women. The #1 killer of infants with birth defects is congenital heart defect. The Corpus Christi American Heart Association will host its annual Heart Ball on Feb. 14, 2015, and a survivor will be presented. That survivor is John Hardy.
By 2020, to improve the cardiovascular health of all Americans by 20 percent while reducing deaths from cardiovascular disease and stroke by 20 percent.

he Ronald McDonald House (RMH) is a modern organization that provides a powerful human need: a home. It’s the first home for countless children, including Dana and Adam, twins from Cairo, Egypt, who were born premature. Their father, Ayman, checked into the house in December with Dana while his wife, Amira, was upstairs waiting with Adam. “This was the first time their family of four was together,” says Executive Director Michelle Horine. “How special is that?” Special, indeed. It was Fernando’s first home, too. The 10-year-old from Laredo, Texas, has leukemia and lived at the RMH for 10 months. He still visits every 15 days for treatment. When he came back in December, the staff threw him a birthday party. “To this day he calls me,” Horine says. “This is like his second home and his second family.” Part of a brand of global charities, the Corpus Christi RMH provides families of seriously-ill or injured children a place to stay at little or no cost. But it’s not just living space: the RMH creates a home-like environment, from private bedrooms and pantry space to a giant backyard and a house dog, an eight-year-old Maltese named Sophie. The top diagnoses the RMH sees include premature birth, cleft palate, and

cardiovascular-related health issues, though it extends its services to all types of patients – with wide-open arms. In 2013, the RMH helped more than 1,000 families and 2,800 individuals. “We’re not just helping those people who have cancer or those people who need a kidney transplant,” says Horine. “We’re helping people with every type of diagnosis.” Dr. Raymond Lewandowski, a local geneticist, founded Corpus Christi’s RMH 25 years ago. Along with the RMH’s other founding board directors, Dr. Lewandowski organized fundraising for seed money to build the house. They succeeded. “McDonald’s was a big partner,” says Horine. “Russ Ellis, a local owner/operator, was on the founding board at the time. He did some campaigns where they designated a penny per order of French fries, and a penny per hamburger [to the House].” Naturally, a lot has changed since then, Horine says. When the RMH first opened, it had 15 guest rooms and was run by a small staff, volunteers and the board directors. “We have seen years and years of this house growing and changing as the needs of our families change,” she explains. Currently the RMH stands at 25,000 square feet, including 25 guest rooms, and employs a full-time staff that operates 24 hours per day year-round.

“That has changed what we have been able to do to support our families,” says Horine. Horine says their budget is more diversified now as well. About eight percent comes from the McDonald’s corporation, while the rest comes from a mix of house fundraisers, private donations and Medicaid funding. The house’s most well-known fundraiser, Casa de Amor, was held for the 13th consecutive year last September. The fundraiser features a silent auction and a special guest each year, typically an individual from the entertainment industry. Last year’s entertainer was Regis Philbin, who helped the house raise $210,000. “We try to find someone who empowers the house and wraps their arms around it’s mission,” says Horine. The house operates under a $900,000 budget each year, so it’s incredibly efficient. On the first floor alone, there’s a library, great living room, play room and large kitchen space, where families can cook and eat a sit-down meal. Each family receives a private pantry and refrigerator space. The guest rooms are mostly located on the second floor and offer two beds and a private bathroom for each family. But what truly makes the RMH special is the support and empathy families receive as soon as they walk through the doors. Horine says the staff does whatever it can to alleviate a family’s stress, and that overall, the house is a happy one. Horine says. “We have a lot more hugs and kisses here than we have tears.”

Common Misconceptions
There are a few misconceptions that Horine has noticed during her oneyear stint at the RMH:
“I DON’T KNOW HOW YOU DO IT” Horine says she hears it all the time. The assumption is that the RMH is a sad place to work, but that’s not the case. “This is not a sad place,” she says. “It’s a very powerfully triumphant home. It gives you a lot of strength. It’s my daily reality check.”
THE RMH AND DRISCOLL CHILDREN’S HOSPITAL ARE THE SAME ORGANIZATION. They’re not. “While we’re great handin-hand partners with Driscoll, we’re both separate entities,” Horine says.

Built in the 1920s, owners Donna and Larry Frederick bought the home in 2001. VICTOR BETANCOURT AGE: 38 OCCUPATION: Owner, V Fit Victor has been dedicated to the fitness industry for 18 years. His commitment to his clients and community led him to open now two V Fit Training Centers in Corpus Christi. Through V Fit he caters individual client, which ranges from general fitness to the elite athlete. Victor’s commitment to exercise and its effects on the community has a special place in his heart. Keeping the Corpus Christi community active and healthy are his top priorities. Victor started the V Fit Challenge in 2010, which challenged Corpus Christi city leaders to incorporate a healthier and active lifestyle into their demanding work life. V Fit Productions is an offshoot he is most proud of, with the mission of producing quality running and fitness events to keep the community motivated and moving. Much of that focus is on the youth in our city. He is the creator of Kids Get Fit, a program geared at introducing local youth to health and active lifestyles. Nothing slows this guy down! JOE PEREZ AGE: 43 OCCUPATION: Owner, Smoothie King Joe has a passion for helping to turn the tide in this city, once known for being one of the unhealthiest in the nation. Former government wildland fire fighter, Joe spent years away from Corpus and returned to realize that Corpus was stuck, and it became his mission to help bring change from the inside out. He is an active member of the Mayor’s Fitness Council, and coupling his background in fitness as a fire fighter, he introduced Smoothie King to the Southside, which has become a central hub for nutrition and fitness throughout the city. In his spare time he loves to enjoy time with his greatest gift, 18 year old son Anthony. He also loves movies and travelling near and far! BEST FRIEND DON SAYS: “Joe is a real unique person, a leader in everything he does. He is always the first to drop everything and help someone. This is true both personally and professionally. MICHAEL HUNTER AGE: 27 OCCUPATION: Borden Insurance - Account Executive Corpus Christi raised and son of State Representative Todd Hunter, Michael is very active in the community’s charitable organizations, a long list that ranges from Texas State Aquarium, Corpus Christi Museum of Science and History, TAMUCC, Young Business Professionals of the Coastal Bend, The Corpus Christi Town Club, CC Tennis Association, H.E.L.P., Corpus Christi 2020, Junior Achievement, Corpus Christi Rotary Club, and the Rising Tide Society. Michael is an avid coastal sportsman, loves anything outdoors, especially boating and fishing. He is well rounded, with a love for baseball and all sports (he was a pitcher at Trinity University), and he also has a literary edge, dabbling as a writer of short stories. WHAT HIS BROTHER TODD JR. SAYS: “At 6’4”, Michael is my big-little brother, he’s fun loving and known for his positive and encouraging demeanor. He’s noted for referring to people as ‘Champion’, and he is the guy willing to stick up for the underdog. Michael also happens to be a great dancer- ballroom, swing, two-step, and any girl that ends up with Michael needs to know he has a huge heart. As long as it’s for a good cause, he is always out volunteering. He is down to roll up his sleeves…. as long as it’s later in the day. Michael isn’t much of a morning person, known to [the Hunters] as the ‘sleeping giant’.

SCOTT BARBER AGE: 42 OCCUPATION: Vice President & Independent Financial Advisor / Sovereign Coast Wealth Advisors This dashing former New Yorker has made Corpus Christi home since 2001. He is the numbers guy- managing investors local and abroad as a financial advisor. His 8 year old daughter, Bella, is the light of his life. He loves introducing her to events in the Coastal Bend, spending time at the beach together, and they both participate in programs and happenings at the Museum of Natural Science and the Art Museum. It was hockey that first introduced him to Coastal Bend life! He was a goal tender on multiple semi-pro teams in the 1990’s, including our very own Corpus Christi Ice Rays! He holds bragging rights to being ECAC West Player of the Year, MVP and All American in 1995. Between work and Bella, his downtime can be limited but he loves staying active playing sports- golf, hockey, softball…and of course Bella plays too! Travel is always a passion, and he loves returning to the East Coast to revisit his old stomping grounds. WHAT HIS DAD SAYS: “Scott is a fantastic & devoted father. He is very laid back, always calm in a crisis. Perhaps it was his years as a semi-pro hockey goal tender that created his knack for handling stressful situations- he learned how to accept pressure as the pucks came flying towards him!”

Many months of planning went into this fancy affair. It all started with their love of art, literature and all things French. Create a
perfect in the sanctuary filled with herb garlands and soft pink peonies. Herb wreaths greeted guests on the front doors as well as rosemary bundles on the pews wrapped with luscious tulle and satin ribbons. The ceremony was filled with pleasant surprises as family and friends sang in chorus as well as a groomsmen coordinated version of Danny’s Song. No eye was left dry as these handsome men sang to the Bride and Groom. As the happy couple recessed, another song belted out from the back of the church, Stevie Wonder’s own Sir Duke. It was a ceremony not to be topped for these music lovers.
Event!
After the ceremony the wedding party and guests were greeted with a signature cocktail at The Chart Room. The patio overlooking Key Allegro was the perfect setting for the summer evening. With Communal seating arranged, guests took their seat as hand drawn menu cards pleased the guests with the dinner selections. Fine dining at its best as guests were served a five course meal including handmade raspberry gelato as the couple cut in to their vanilla bean and rosette butter cream cake. Special to the Groom is his Mother’s very own pound cake. Much care was taken to have the family recipe given to Oh Goodie Designs and the bakery to prepare small bear shaped cut outs for these spirited Baylor Bears. After dinner came much dancing into the late night. The Glen Garcia Band helped the guests dance way into the night under the lights. No one seemed to mind the summer heat as too much fun was being had on the dance floor. As the wedding came to an end, the couple was showered with metallic streamers as they made their way in to a floral decorated pedi cab with hand drawn signage with special chosen literary quotes. Nothing was more darling than the Groom Pedaling his lovely bride away in to the Rockport Key Allegro moonlight. The Newlyweds enjoyed a week away in Paris, France. They currently reside in Longview, Texas.

Unfortunately duct systems have been mostly ignored because there has been no simple method to measure leakage or to seal the ducts after they are installed. Some ducts, like those for the first floor of a two story home, are impossible to access without tearing out drywall. But the growing amount of research by organizations like Texas A&M’s Energy System Lab and others are finally making the HVAC industry, utility companies, energy experts, building and homeowners more aware of the importance of a tight and properly designed duct system. Extensive testing shows that more than 90% of the homes and buildings in Texas and the rest

Fortunately, technology is providing a solution to the health, comfort and efficiency problems caused by leaking ducts. Lawrence Berkeley National Labs, with funding from the US government and others, has developed a system that uses a computer to control a device that measures duct leakage and then seals the leaks from the inside thus eliminating or reducing the need to access the ducts for repairs. This process can reduce duct leakage by an average of 95%. The sealant used is a polymer similar to that used in bubblegum so it is non-toxic. There is only 1 or 2 ounces of the sealant left behind in your duct system after the sealing process is completed. The process has been around for about 15 years but has not been available in this area until now. My company, Aire Serv of the Coastal Bend, is very excited to be the first to introduce this technology to The Coastal Bend.. Studies show that sealing your ducts by this method can be a much more effective means of reducing your electric bills than replacing windows, insulating the attic, upgrading appliances or even installing solar panels. give the Seafood Co. its own individual personality. There is a new menu releasing in a few months full of seasonal, local produce, seafood and meats. It won’t be static; the selection of local, fresh ingredients will change daily.

ravelers are at risk of droning in local cuisine and culture along Water Street’s iconic stretch of shops and restaurants. One of those restaurants, somewhat hidden in the shadow of its sister restaurant, The Water Street Oyster Bar and Sushi Bar, is the Water Street Seafood Company. If you get the chance to dine at this local establishment, don’t worry so much about what you will wear. It’s a rare breed of fine dining where guests can feel comfortable in flip flops or a sports jacket. The newly renovated interior is the perfect blend of elegance and coastal chic or “polished casual” as Lee Kupferman, Water Street’s new Corporate Executive Chef, describes it. Since Kupferman entered the scene back in August, there has been a bit of polishing to the menu as well. Kupferman and the Water Street team hope to
“We’re going to go further from just a seafood restaurant to a true bistro,” says Kupferman. “We’re trying to change a food culture here; we are hoping to create something different, something new and exciting downtown. Kupferman might be new chef on the street, but he comes highly qualified to start making changes. He is a rare breed of executive chef who loves to fish as much as he loves to fillet and cook it. In fact, he has fished all over the world. After training under Jamie Mimmano, one of Boston’s premier chefs, Kupferman spent four years at one of America’s most prestigious culinary schools, The Culinary Institute of America in Hyde Park, NY. Although Kupferman only moved to Corpus Christi a year ago, he’s been visiting the Coastal Bend since he graduated high school. “I fell in love with Corpus the moment I got here 12 years ago, the first restaurant I went to was Water Street. I still remember the waitress telling me to order the walnut dressing. I just knew I needed to get down here,” says Kupferman. He felt so called to be in Corpus and become a part of the community that, although he did
not have a job lined up at the time, he followed his instincts , deciding to take his chances. It wasn’t looking good at first, but one day a friend introduced him to owner Brad Lomax, and a few days later they were out fishing together. “It’s the type of business I wanted to work for. A big company ran by family – and they are such a great family,” says Kupferman. Water Street Seafood Co. gets fish and oysters from Nueces and Corpus Christi bay. All of the shrimp are from the Gulf. If they can get it local, they only get it local. All desserts and dressings are made fresh in-house. Kupfermann hopes to feature food that the Coastal Bend offers in a simple and fresh way. He describes it as French-Mediterranean & Regional American fare; food prepared very minimally, highlighting the natural flavors. Longtime restaurateurs have no need to worry; house favorites, like the fresh Walnut Dressing, the rich and creamy house tartar sauce and the zesty Shrimp Picayune, are here to stay. Kupferman recommends the Mahi Mahi as well, but same room for desert. Key Lime pie is one of his specialties.

entlemen, Valentine’s Day is imminent. It’s make or break time. Do you have a game plan?
Let’s be honest, no man on earth actually likes Valentine’s Day. We are under enormous pressure to get this date right. We are supposed to be clever and romantic, even though we don’t have a romantic bone in our bodies. We are asked to be spontaneous while simultaneously executing a well-designed date that requires a lot of obvious advanced preparation. Get this date wrong and you will be in the doghouse until the next visit by St. Valentine. This year, a box of chocolates and a long wait at the same old restaurant isn’t going to cut it. It’s time to up the ante. Delight your loved one this year by planning the perfect, romantic picnic! Valentine’s Day is on a Saturday this year, so you have some flexibility and time to prepare. You can schedule your picnic for the afternoon, and still have a night on the town, or you can have an evening picnic, lit by candles, just the two of you. Making homemade bread is not nearly as difficult as you might think. Baking is science--just follow the directions precisely. Baking bread is easier than your fifth grade science project, and unlike that experiment, this one won’t blow up in your face. Good bread is the foundation of your picnic; get this right and you’re golden. If you are unsure about your bread-baking ability, make a trial loaf. As you eat the entire thing in one sitting, plan your romantic picnic. A perfect loaf of bread requires perfect butter. All you need is cream and a blender, and you can finish your butter faster than a rerun of Duck Dynasty. Be creative with your picnic accompaniments. Does your date prefer hummus or tapenade? Don’t know? Get both. (Bonus points if you have no idea what they are.) Definitely bring a variety of high-quality cheeses, local honey, dried and fresh fruit, and nuts. This picnic requires advanced planning on your part, but once you have your items baked, assembled,
and packed, you are ready to take the love of your life on a romantic adventure. Here is the simple truth: you love this woman, and you want to give her a beautiful Valentine’s Day. The preparation for your picnic shows how much you care, and your flawless execution will create a date so unique and fun you may even enjoy it.
CHOCOLATE TRUFFLES Makes 30 truffles Prep Time: 30 minutes Inactive Prep Time: 1 hour 15 minutes Cook time: 10 minutes Ingredients 8 oz high-quality bittersweet chocolate (at least 55% cacao) 4 oz high-quality semi-sweet chocolate 1/3 cup heavy whipping cream, preferably organic 2 tbsp unsalted butter Optional add-ins to cream: ½ cup fresh herbs, 2 tbsp citrus zest, ½ vanilla bean, or 1 cinnamon stick Optional add-ins to ganache: 1 tbsp liquer, 1/8 tsp cinnamon, 1/8 tsp ancho chile powder, 1/8 tsp fleur de sel, 1/3 cup pureed fruit, 1 tsp instant espresso For coating: high-quality cacao powder, powdered sugar, toasted coconut, or finely chopped toasted nuts Directions Combine 4 oz bittersweet chocolate and all of the semi-sweet chocolate into food processor bowl. Process until the size of hazelnuts, then pulse until pieces are very fine and uniform. Place in a small, dry stainless steel bowl. Process remaining bittersweet chocolate in the same matter, and set aside. Heat cream and butter (as well as optional ingredient, as desired) in a small saucepan over medium heat until boiling. Add cream mixture to bowl of chocolate. Using a wooden spoon, begin quickly stirring in small concentric circles until all of the cream has been incorporated into the chocolate. If unmelted chocolate pieces remain, place bowl over hot (not boiling) water, and

continue to stir until all of the chocolate melts. Remove from heat (add in optional ingredients, as desired) and let stand at room temperature for one hour (or place in the refrigerator for 15 minutes). The ganache should be close to the consistency of frosting. Using two teaspoons, form a ball from the ganache approximately 1” in diameter and place on a parchment lined cookie sheet. Continue forming the truffles, working quickly, until you have used all of the ganache. Place cookie sheet in the refrigerator for an additional 10 minutes. Place reserved chocolate over medium-low heat in a double boiler and stir until melted. Remove from heat. Form an assembly line with coatings and melted chocolate. Remove ganache from the refrigerator. Roll the chilled ganache in between your palms to achieve the desired round shape. Using a fork, dip the formed ganache into the melted chocolate, tapping the excess chocolate back into the bowl until no additional chocolate drips from your truffle. Roll the truffle in the coating of your choice and place on a clean parchment-lined cookie sheet. Store in the refrigerator up to one week.

RUSTIC WHITE BAGUETTE This bread is versatile, great for dipping, and can hold up to heavy spreads. Serves 4 Prep time: 10 minutes Inactive prep time: 10 hours Cook time: 40 minutes Ingredients 4 cups bread flour 1 package (2 ¼ tsp) yeast 1 ½ cups water 4 tbsp butter, room temperature 1 tbsp salt Directions Combine 2 cups flour, yeast, and water in a large bowl. Stir until a thick batter is formed. Cover with a tea towel and let sit overnight. The next day, mix in butter, salt, and the remaining flour. Knead dough until smooth and elastic (about 5 minutes). Return dough to bowl, cover with tea towel, and let rise one hour. Punch down dough and remove from bowl. Form into a baguette

If using a mixer, secure plastic wrap around the circumference of the bowl by starting it at the top of the mixer and cascading it down the sides. Make sure lid to blender is tightly fitted. Mix or blend on medium speed for 10-15 minutes, until cream has solidified and there is liquid at the bottom of the bowl. If desired, reserve this buttermilk in the refrigerator for later use. Wrap the butter in cheesecloth and squeeze out additional buttermilk. Rinse the butter with ice water several times, wringing out the buttermilk with each rinse, until the liquid becomes clear.
