doctor or nutritionist would tell you that breakfast is the most important meal of the day. I recently read an article claiming that people who eat breakfast actually burn more calories throughout the day than people who don’t. Sounds like my kind of diet! Ironically, as much as I love breakfast, I barely have time to chug down a cup of coffee in the morning before running out the door. Our culture idolizes the “quick,” “instant,” “on-the-go” mindset, but I think we miss something vital when we brush off breakfast.

Cattle Baron’s Ball is an annual fundraiser for the American Cancer Society. Possibly the longest running fundraiser in the Corpus Christi area, CBB has contributed more than $7.2 million to groundbreaking cancer research and support services to cancer patients. This year’s restricted gift will be transportation for local cancer patients to and from doctor’s appointments and treatments. Donations made directly to the restricted gift will stay within the service area of the local American Cancer Society office.

The 28th annual Goodwill Run is the largest of Goodwill’s fundraising events, drawing in over 600 runners from the Coastal Bend annually. Registration is open now until the day of, but register early and save money!
The Corpus Christi Chorale will present a Broadway Extravaganza fundraising concert. The impressive 75-voice Chorale will feature a mix of Broadway’s greatest hits, including such songs as “All The Things You Are” from Very Warm for May; “Do-Re-Mi” from The Sound of Music; “Always Look On The Bright Side Of Life” from Spamalot; “All That Jazz” from Chicago; and “Home And The Heartland” from Riverdance. Clarissa Serna – a local favorite and finalist on NBC’s hit show, The Voice, will sing a selection of solo numbers, also in the Broadway theme, and will finish up with “Over The Rainbow” from The Wizard of Oz as an ensemble piece with the Chorale.

Local bar owner brings St. Patricks Day to life in downtown Corpus Christi. • What do you love most about St. Patrick’s Day?
downtown for the Greek Festival, Dia de los Muertos, Jazz Festival, and now Saint Patrick’s Day. Last year we had 10,000 people show up for the food, beer, music, and entertainment. That still blows my mind!
My favorite part of the festival is seeing people have a great time with their family and friends. Also, I love it when people discover new local talent, whether it is music or art at the festival. For example, there are a lot of people who see local Irish dancers and bands for the first time and that is amazing to be a part of that experience.
• How does the St. Patrick’s Day festival and other downtown festivals help downtown? Festivals downtown help all businesses in the area. Restaurants, bars and hotels can all benefit from the large groups that attend these events. For example, during the Dia de los Muertos event, Cassidy’s gets packed with people after the festival because we are down the street. I have heard from businesses around our festival that they get more business that weekend too. I try to work with other business owners downtown, because we can all benefit from working together and encourage the owners of empty buildings to do more to improve downtown.
• What was your inspiration for starting the Downtown St. Patrick’s Day Festival? My inspiration would definitely be all of the local festivals that already exist. I really look up to the people who have been putting on the Texas Jazz Festival and Dia de los Muertos because they always have a variety of local talent and run smoothly. • How has the event grown and changed over the years? We started our first year with one city block, one stage, and six bands. This year we will have three city blocks shut down, two stages and twelve different acts playing. Every year grows because more people want to get involved and the word has spread. The first festival, I tried to do everything by myself and I was a little overwhelmed. Now I have a group of people who help me plan, organize, and accomplish it all, which makes it better for me and the festival as a whole because of the different strengths and personalities. • How many musical acts do you expect this year and is there a particular act you are excited about? We have ten musical acts, one dancing academy act from Glor na Daire and a Celtic marching band. I am excited to see all of them perform and work together because every year the performances are unique. I love watching the bands feed off of the energy from the crowds that we have because I am used to seeing 14 the bend magazine
• Is there anything new or special festival goers can look forward to this year?

It’s completely different and amazing to see them thrive in this setting. • What kind of beer selection is available at the festival? We have 50 different beers available throughout the year in the pub. We will obviously have green beer flowing throughout the festival for everybody to enjoy. We will also have some imports including Bass, Harp, Newcastle and, of course, Guinness inside and outside.
For those folks that like domestic beer, there will be Miller Lite, Coors Light, Bud Light and Michelob Ultra. • How has the community contributed to and supported the festival? The community has supported this event by bringing us art and food vendors to make this event incredible. Each year we get more vendors to show the best of what Corpus Christi can offer. It is amazing how our community embraces different cultures and traditions. We now see huge turnouts

This year, we will have more bands from around Texas. The line up will be announced soon and it is going to be filled with great local talent. We will have two stages so one band will be setting up while the other is finishing up, allowing us to have non stop live music throughout the day. We will also have more vendors, including more things for kids, because we saw an increase in families early in the day last year.

ontemporary Art Month in Corpus Christi (CAMCC) is a celebration of modern art throughout the month of March in multiple venues across the city. As part of CAMCC, modern art will be on display in K Space Contemporary and the Art Museum of South Texas. Art will also be placed in several businesses across Corpus Christi.

Michelle Smythe of K Space Contemporary organizes the event. “We hope to call attention to local contemporary artists,” said Michelle, “and the exceptional artwork being created right here in the Coastal Bend.” Beginning March 6th, K Space Contemporary, at 415 Starr Street in Corpus Christi, will host the work of Joe Meiser. Meiser is a print and virtual 3D artist who has shown his work in museums and universities across America.

Throughout the month of March, the Art Museum of South Texas will feature “Bayou City Chic”, a collection of contemporary pieces from Houston area artists. As part of its mission to place contemporary art where people live and work, K Space Contemporary will display art in several Corpus Christi businesses. Porgy &Bess Words: Whitney Noble
For its time, Porgy and Bess was really a new category of music – folk opera. Written by George Gershwin in 1934, it was first performed in New York City just one year later and featured an entire cast of classically trained African-American singers. At the time, this was a daring and controversial artistic choice. Over time, however, Porgy and Bess has become one of the most recognizable and most frequently performed operas, a huge feat given its initial unpopularity! Gershwin read Porgy, a novel written by DuBose Heyward in 1925. Porgy, a crippled street-beggar in the black tenements of Charleston, South Carolina, in the 1920s, seemed the perfect muse to Gershwin. So he and Heyward teamed up to create an operatic version of this novel, renaming it Porgy and Bess. The libretto of Porgy and Bess tells the story of Porgy, this disabled black beggar living in the slums of Charleston. It follows his attempts to rescue Bess from the clutches of her possessive lover, Crown, and her drug dealer, Sportin' Life. Gershwin wrote his own spirituals and folksongs for the opera. Adding authenticity to his work, Gershwin drew inspiration from the James Island Gullah community as he believed they preserved authentic African musical traditions. The music itself reflects his New York jazz roots but also draws on southern black traditions. A perfect musical buffet, Gershwin borrowed from various musical genre including jazz, blues, gospel, jubilees, street cries, etc. to create this eclectic masterpiece. Gershwin’s legend strongly lives on, for example, the song "Summertime" has become a popular and still frequently recorded song. Today, the CCSO has a cast of the most talented and accomplished musicians, debuting this masterwork and piece of history to our greater Coastal Bend audiences. But, the music is only half the equation – the musicians undoubtedly comprise the other half ! 26 the bend magazine

At 12, he was the Artist-in-Residence at the Canandaigua Lake Music Festival in New York. Then at age 14 he made Juilliard history as the youngest-ever admittee to the College Division. Continuing to make history, in 2010 he flew into war-torn Baghdad and was the first American soloist to perform in Iraq. There, he performed another Gershwin composition. Sanchez-Werner has performed for our President twice, once in 2009 as a solo recital and again in 2013. But his Presidential experience doesn’t end there! In Rwanda, Sanchez-Werner performed for President Kagame and a gathering of humanitarian and economic leaders in an effort to help Rwandans continue rebuilding from the 1994 genocide. At 17, Sanchez-Werner’s accomplishments reach far and wide and all across the world.

For some, fitness is about conquering personal goals. For one Corpus Christi man, it is a catalyst to change an entire community. Victor Betancourt has always had a vision to create a tide of change within the Corpus Christi community. He makes it a personal goal to share a role in shifting our national rank among the unhealthiest cities in the nation. As a personal trainer for over 16 years, Victor is constantly working to educate and inspire the community around him.

When opening V-Fit personal training in 2010, one of the first projects Victor launched was the V-Fit Challenge- partnering with influential city leaders, along with members of their staff, to take on personal fitness and health challenges to serve as models within our community of the profound effect fitness and nutrition can have. The Challenge flourished, and city leaders from mayors to school superintendents, health care system executives and local TV personalities were provided the impetus to bring health and fitness to their workplace!
brainstorming that ensued, a new program was developed to serve the youngest members of the Corpus Christi community, and Kids Get Fit was born. Originally the trainers of V-Fit personally volunteered and funded the enterprise, raising additional funds through donations. Recently, Kids Get Fit was established as an official 501 c(3) non-profit organization, and full multi-phase program is now in full swing. The target group is underprivileged youth who are most at risk for diabetes and obesity.
Following the Challenge success, V-Fit set its sights on the community leaders of the future. Partnering with the Boys and Girls Club, their first endeavor was a joint effort in putting on a Boys and Girls Club 5K race. Through the

THE 3 PHASES
PHASE I provides Fitness training and nutritional education 4 days per week at the Boys and Girls Club- there are a total of 120 participants ranging from age 7-17. The fitness program offers a variety of fitness skillsets from general conditioning to Zumba and meditative yoga, and a running club. Additionally, the program offers an educational nutrition program through licensed registered dietitian, Kayla Butts, to teach both kids and perhaps, most importantly, parents, about food and lifestyle choices.
PHASE II is the start of a clinical trial of 20 at-risk children monitored by Driscoll Children’s Hospital physicians. Each child’s progress will be tracked through routine clinical lab data to establish a pattern of improved metabolic function and overall health. This phase is perhaps the most exciting for all involved in Kids Get Fit; “We KNOW it works,” says Victor. “We have seen it working in youth and adults alike, and by partnering with Driscoll for the clinical trial, our goal is to obtain the tangible clinical proof through clinical
studies and get results published, making the program a model for greater expansion in public youth programs.”

ayla Butts is the Licensed Registered Dietitian on staff for the program, and her role is vital in the realm of educating both kids and parents on the importance of nutrition and healthy lifestyle choices. “Within Corpus Christi there is a huge opportunity for someone in my position to make a real impact. A lot of the early education is in dispelling food myths, which are very prevalent in South Texas culture.” Kayla’s role is as an educator, teaching classes for kids ranging from age 7-12, with parental involvement. The classes are geared to be fun and interactive, built on science, the human body, and the vital role that the right foods can play in health and healing. Side by side parental involvement is vital, as they hold the key to providing the healthy choice foods that will keep each child on the road to success.
For Kayla, the personal interaction with each child is very rewarding. She recalls one 10 year old girl who really struck a chord with her. “This little girl has such a beautiful spirit. She arrived early one day and with such charisma she offered to help me prep for class. She opened up to me about her home life, that she is wanting to go live with her dad whom she misses dearly, and is due to get out of prison soon. What struck me most was despite her troubles at home, she thrived in the moment to be a part of something. She loved to help me set up, and you could tell it gave her such a sense of pride. After we finished, I asked if I could give her a hug, and I got the biggest bear hug in return!” Ever since then this little girl always loves to arrive early to help and Kayla loves to see her flourish with the program.
Kayla shared that working with Victor is inspiring. “He is so motivated and creative in this endeavor, he is fully invested in creating a program that leads to sustainable life change.” Together they have come up with the idea to host a monthly dinner for the Kids Get Fit participants, inviting the kids and their parents to a special dinner, creating an opportunity to present healthy food prep skills and the basics of providing better choices in meal planning.
V-fit Studio, 2001 S Staples, will be taking applications based on risk for diabetes and childhood obesity. The long term goal is that this will provide a catalyst for shifting an entire community from the ground up, by teaching and inspiring fundamental change, instituting a new standard and a healthy pattern of life to the families of Corpus Christi.

Steps to Making Healthy Delicious Super Shakes
“A community of people committed to an authentic and lasting enhancement of their general physical fitness that extends into their whole body and life.”
1. Get a Good Blender - You will want a blender as you will be using whole food and sometimes frozen food. The Magic Bullet is a good inexpensive choice. For those with a bigger budget and want more horsepower the Vitamix is the top of line blender. 2. Pick a Liquid. – Add about 4-8oz of liquid per serving. Several options are milk, iced green tea, hemp milk, and coconut water. 3. Choose a Protein Powder – One or two scoops should be enough per serving. Add between 20-50 grams of protein to your super shake. A few protein powder options are whey, casein, rice, pea, and hemp. Find a protein powder that digests easily and tastes good. 4. Pick a Veggie or Two – Add 1-2 handfuls of raw veggies. A few ideas might be Spinach, kale, Swiss Chard, Pumpkin, Sweet potato, beets, cucumbers or powdered greens. Spinach works with almost all Super Shakes since you can barely taste it. 5. Pick a Fruit – Add 1 handful of fresh fruit or frozen fruit. A few suggestion might be apples, avocado, bananas, berries, cherries, pineapple or powdered fruit supplement. Avocados and bananas give the shake a smooth texture. 6. Choose a Healthy Fat – Add 1-2 thumb size portions per serving. Some good fats might be walnuts, flax, hemp, chia seeds, cashews, almonds and nut butters. 7.Pick a Topper – If you need to add a little more flavor, fiber or protein you may want to consider one of these toppings. Coconut, dark chocolate, yogurt for more protein and a smoother texture, oats for more fiber, cinnamon, and ice if using fresh fruit.
Perfect Super Shake If you are like many of my clients you don’t have time to sit down and eat a healthy breakfast and/or lunch. Better than going through the drive through at the nearest Taqueria or Starbucks, I recommend my clients make themselves a Super Shake. Making a Super Shake can take less than 5-minutes and may be the most nutritious meal of the day. Super Shakes can be used as a meal replacement and/or a post workout drink. Don’t confuse a homemade Super Shake with a smoothie from a smoothie bar. Many drinks from smoothie bars will contain large amounts of sugar, use low quality protein to keep their costs down, rely on heavily processed ingredients and use artificial flavors.

W
ithin Heritage Park stands a historic home whose two-story wrap around porches give it a distinct elegance; the Ward-McCampbell house is not the grand popular center of the park’s attraction, but a quiet yet prominent establishment that speaks to strength and endurance. It most recently has fulfilled a role in housing the Corpus Christi Chamber of Commerce. As we delve into the history of Ward-McCampbell house, and the family that had its start in Corpus Christi in that very dwelling, you will come to appreciate the full circle aspect that makes this a fitting place to host the center of small business support within our community. Mary Alice Ward-McCampbell, widow of Nueces County Attorney William Berry McCampbell, built the Ward-McCampbell house in 1908. Set on Water Steet, just feet from the Corpus Christi Bay, Mary Alice enjoyed the home with her three sons. The protective sea-wall that shields downtown from hurricane tides and floodwaters was not constructed until 1941. So it was that when the great hurricane of 1919 struck, downtown Corpus Christi was vulnerable to catastrophic destruction. The Old Irishtown sector where the home stood was hit hard. Mary Alice and her sons weathered the storm inside their 3 story home. Flood waters rose 20 feet to the base of their second story porch, and the family described the horror of watching debris, animals, and entire structures swept out in the treacherous flood waters. While much of downtown was all but swept away, Ward-McCampbell house and its inhabitants were able to escape the storm intact. In fact, historical photos show the house as one of the few structures left erect in the downtown landscape. Family lore has it that Mary Alice survived the storm, but due to prolonged exposure to the elements of the storm, was weakened by illness that developed into pneumonia several months after. She passed away in February of 1920. The Ward McCampbell house remained in the family until it was moved as a historical marker within

Heritage Park in 1983, where it served as the Irish Cultural Center. While many families sought higher ground and dispersed from Corpus to other Texas cities, the McCampbell’s stayed on. The three brothersThomas Ward, William B. and Edwin Atlee, all remained and personally invested in Corpus as diligent local businessmen. What is remarkable is that this family has held firm to tradition and a strong work ethic and that has been true in all five generations spanning the last century. Reaching out to local present-day McCampbells residing in Corpus Christi, we discovered families still rooted in the same quiet, yet staunch, dedication that has kept many traditions alive and fostered continuous involvement in the local community. “Growing up, if we heard of someone with the name McCampbell, there was an immediate special connection,” shares Liz McCampbell. “We always knew with certainty that if their name was McCampbell, we were related…McCampbells are pretty rare.” Liz is the daughter of Ward McCampbell, owner of Ward McCampbell CPA. Sitting down with Ward, Liz and sister Sara to look back at their family history uncovered a great amount of nostalgia. As we looked over the family tree and the roles taken on by each generation, it was interesting to observe the pattern that remained very steady throughout. The McCampbell legacy is not of vast wealth and riches, instead it is a generation upon generation respect for the small business entrepreneur. There are 4 generations of lawyers and judges within the family, in fact the photograph of William B. McCampbell hangs in a place of honor at the Nueces County Courthouse. Each of these generations, including the 40 the bend magazine
current one, have all lived and worked within the downtown area, and all were personally invested in the community through various organizations and charities of their time. “It’s not something that was ever forced, but it was definitely ingrained by sheer example of generations before us,” says Ward. Ward himself has spent the last 26 years serving on the St. James school board where his children attended school; he was also active in the Rotary Club, Aggie Club and the former treasurer of the local Republican Party. Liz perhaps sums it up best. “My sister and I only left Corpus Christi for college, attending A&M College Station. After graduation, there was a decision to be made.” While childhood friends, natives of Corpus Christi, were flocking to the big cities of Houston and San Antonio, both Liz and Sara decided to return home. “I felt that what I could DO in Corpus Christi would have a greater impact socially and economically on a greater scale, I could not wait to get home!” Sara agrees, “Corpus Christi I knew was not a place I could return to unless I was planning on leaving an imprint and being involved. The size of this city along with the work ethic of its people makes it a place you can truly mold for the future.” For Ward growing up, there were plenty of family stories and references. He was especially close to his Great Uncle and namesake, Ward McCampbell. As a young adult he also encountered a published biography of the McCampbell family history The McCampbell Family in America by family genealogist Bill McCampbell, and enjoyed the history and family connections brought to life therein. For his daughter Liz, it was a school project in 1st grade that her family history first became relevant. She did
a report and a scale model of the aftermath of the 1919 hurricane. “It always cemented in my mind the dramatic effect that natural disaster had on shaping the future of our city, and it was always neat to have the family name associated with the dedication to stay rooted here no matter what.” While searching amidst the research and family archives for that project, they came upon a final letter from Mary Alice Ward-McCampbell to a relative, describing first hand their life after the hurricane; this has become a family heirloom. For the McCampbell girls now starting new lives and families of their own, they are making sure that their McCampbell heritage is honored not only by their community involvement, but also in personal ways. I had an opportunity to sit in on a marketing class at HBU, the professor and what they were learning just captivated me. What is your best softball memory, childhood or recent? All of it really. When I look back, all of my best memories have to deal with softball. Long trips with my Dad to tournaments, running the halls of the hotel with my teammates, the hard loss speeches, the times we’ve overcome, everything. Softball is a rush that I just can’t seem to get enough of. What do you love about softball? 2 Andy’s Country Kitchen Andy’s Country Kitchen has come a long way since its beginnings in 1958. It originally opened as Andy’s Coffee Cove on Shoreline Drive, and 20 years later the coffee shop relocated to its current location embarking on a new era of customers. Here it became known as Andy’s Kitchen, where the then owner, Jim Dolson, wanted to present good old fashioned country cookin’. Dolson even added a G Scale Train that still graces the ceiling of the restaurant. Consistency has always been the key to Andy’s Country Kitchen’s success, where many of the wait staff has served for over a decade, and the food is always delicious. One particular waitress knew how special Andy’s was, and after 25 years of exceptional service, Agueda Dominguez’s dreams came true when she took ownership in 2008. Coming from Mexico at the age of 15, “Agie” worked hard and has successfully made the ‘American Dream’ come true. Try the muffins – they’re her staple! Restaurant - OmniHotel Overlooking the magnificent, panoramic view of Corpus Christi Bay is the Omni Bayfront’s Glass Pavilion. Executive Chef Dean C. Sprague is an American Culinary Federation Certified Chef, with 32 years of cooking experience and holder of nine medals in culinary competitions. The Omni’s take on the most important meal of the day is summed up in their “Art of Breakfast” manifesto. It states that “breakfast should be a stimulating and healthy start to your day, so we are committed to providing a culinary experience that tempts your palate and challenges the traditional breakfast fare.” Beyond its beauty and aesthetic appeal, the menu is highlighted with regional and authentic ethnic breakfast fare. The Crab Benedict is a coastal take on Eggs Benedict, with two sautéed jumbo lump Rockport blue crab cakes topped with a chipotle hollandaise for a nice South Texas twist. The Chilaquiles, a combination of tortillas, salsa verde, queso fresco, ranchero sauce, pico de gallo and avocado comes served in an iron skillet, maintaining a home-style and rustic presentation. One or the most popular menu items, the griddle fresh French toast was actually created from the same King Hawaiian Bun used for the house hamburger.
In 1939, “The Chef,” as it was originally named, first opened its doors on S. Alameda and Palmero St. where it still stands today. Dan Price purchased the restaurant in 1940, and eventually the restaurant took on his name. Over the century, this cozy diner has outlasted nearby buildings and served generations of Corpus Christi diners. Many of its regulars include some of Corpus Christi’s most influential politicians and leaders. The walls serve as a local history lesson, covered in stories and familiar faces from the present and past. Current owners, Louis Guerrero and his family, are committed to preserving this local landmark and its traditional recipes. Price’s Chef is famous around town for their Eggs Benedict and giant Cinnamon Rolls. The Eggs Benedict is second to none, primarily due to their secret Hollandaise Sauce recipe made fresh daily and hard to keep in stock. The Cinnamon Rolls, normally weighing in at a whopping 16 ounces, can actually be made as large as desired.

Nano’s Taco Run Opening their doors in 1985, Nano’s Taco Run is famous beyond the Coastal Bend’s borders. You can’t talk about breakfast in the Coastal Bend without mentioning breakfast tacos and you can’t mention breakfast tacos without mentioning Nano’s. Their tacos are known for their large, made from scratch tortillas that are cooked up fresh on the grill. Nano’s knows how to serve up a delicious breakfast taco, but it doesn’t end there. Nano’s hot sauce is the local craze. Restaurant goers can’t get enough of their jalapeño and tomato based hot sauce. It is light and smooth, but finishes with a big kick. The Carne Guisada is the most popular item on the menu. With thick chunks of beef covered in rich, peppery gravy, it’s definitely worth a try.

10 Gate’s Donuts Gate’s Donuts has served up hot and fresh donuts to Corpus Christi residents for the last 75 years. The little donut shop, recognized by its vintage sign along South Alameda, is a local icon. There is no seating. Guests either walk up to the window or drive through to make their order. There is a vast selection of made-from-scratch goodies to choose from, but it’s not every day you come across a maple bacon donut, with crispy, homemade bacon resting on top of creamy maple icing. The maple bacon donut and other local favorites will often sell out before noon. So, it’s a good idea to arrive early and beat the crowd. Make sure to eat them quickly, because we are told that when the donuts are still warm from the oven, they melt right in your mouth.

n evening of cocktails and delicious food was carefully planned by Nina with JoAnne Howell of Oh Goodie Designs + Events. No detail was overlooked in this carefully planned and executed evening. The custom detailed invitation suite included triple thick cardstock, a blind emboss of their family crest and emerald green painted edges. Much care and attention to detail was also taken to serve the best food and desserts. The drinks were flowing all evening as meticulous choices in wine were served. Guests enjoyed cocktails and dinner overlooking the Corpus Christi Bay all through the elegant affair. Food choices included an assortment of fine cheese wheels, gourmet olives, figs and honey as well as crab and pork selections and truffle oil risotto. Music kept the guests moving as the entertaining Matt Wilson Band of Austin, Texas filled the patio with any song you wanted to hear. As the champagne toast neared the guests gathered around as Nick and Nina thanked them for all their love and support and finished their toast as they savored the champagne. Dancing resumed into the late night as friends and family showered their well wishes on the couple. The sweet couple cut their cake and then the evening was topped off with a fine cigar bar. This was a great addition to the night as both men and women enjoyed the selections including custom cutters and matchboxes. The happy couple resides in Corpus Christi.

e toured 64 Nassau with the builder, Ethan Wells, who explained the design challenges and personal touches of the architecture. The homeowner wanted to maximize the space of the smallish lot, so Wells built the two-story home nearly to the edges of the property lines. The back of the house rests only three feet off the bulkhead. 64 Nassau is a vacation home for the owners. Separate living areas were built to allow family or guests to stay in their own private quarters at each end of the house. To create more space, a 1,600 square foot deck was built over the water. The back porch leads up to a wall of picture windows with an elegant upstairs balcony. The homeowner wanted a deck worthy of hosting weddings or parties for friends and family. The family congregates around the tremendous granite island in the kitchen. The living room features a vaulted ceiling with wooden beams across the grand room. Shiplap siding is a clever and beautiful design element throughout the house. A weathered appearance was achieved in the wood and touches of color were added to suit the different rooms. The rooms are drenched in sunlight, and every room offers views of the bay. “We do

This collaboration led to massive walk-in baths and sleek tile offset by distressed hardwood. These tasteful details give the house its character. Ethan Wells studied the architecture of The Florida Keys and in the colonial homes of Charleston, South Carolina. “I love that timeless look,” he told us, “something you could see in a house that is a hundred years old, but with a few modern touches.” The house at 64 Nassau certainly achieves a timeless feel. As you stand on the deck in the bright sunshine, you can listen to the waves lap against the porch and watch the yachts and sailboats dock at the marina. Or, you can walk through the rooms of the house for new and unfolding views of the water. This beautiful home reflects coastal living at its finest.

Jan Moore remembers a time when American veterans were not welcomed home as heroes. Her husband Mike, a veteran of the Vietnam War, knows the experience firsthand. “Years ago we did a reunion for all the guys in Mike’s unit,” says Jan, “you got to hear all of their stories, and one that most of them told was how they would have to take their uniforms off when they got to the airport because they were being disgraced, spit at and having things thrown at them because people didn’t understand. They were not seen as heroes. The mindset at the time was, ‘You fought for our country – shame on you.’ Today, I am so proud that times have changed and America is bringing our troops home as heroes!” Jan and Mike Moore are the owners of Redfish Bay Boat House in Aransas Pass, TX. They noticed a lot of great programs for U.S. Veterans, but wanted to put on a fun and relaxed event for all vets and, with access to plenty of boats and fisherman, knew just how to do it. The Moore’s partnered with The Spirit of Aransas Pass, a Texas nonprofit corporation, along with a team of committed volunteers to present the first annual Vets Fishing With Vets (VFWV) 2-day Veteran’s fishing tournament. The concept is bigger than a fishing tournament benefit: it is a celebration of service! “We created this Veteran’s Celebration as an opportunity for us to honor, and give back to, our Veterans”, said Jan. “We want everyone to join the fun -- whether fishing or watching the weigh-in and having fun at the party -- and help us honor and support these courageous men and women who deserve our thanks and support for serving our country.”

This annual event will benefit the Fisher House, providing a “home away from home” completely free of charge for families of veterans receiving medical care through the South Texas Veterans Health Care System in San Antonio, Texas. “We had looked at the Fisher House one time, but it was linked to the United Way. At first we thought they are so big, that our donation will make no difference. We started looking a little closer and spoke with the director, who indicated that the United Way builds the house, and then they walk away. The Veterans Administration is responsible for all the administration fees and utilities. All the furniture is donated, along with everything else needed to run the Fisher House.” The Spirit of Aransas Pass committee was pleased by what the Fisher House does for the families. Any Veteran family who has a loved one traveling to the VA Hospital in San Antonio can stay there for free. The goal is to raise $50,000. They would like to build an outside patio area with a kitchen and grill. “Families come home from the hospital drained and although Fisher’s has a wonderful indoor kitchen, the families love to sit outside and get some fresh air. This project our mission 100% of the money we raise will go directly to the Fisher House in San Antonio.” Don’t miss this exciting celebratory event of dinner, dancing, fishing and live entertainment featuring an awards presentation, silent auction, and a star-spangled Veterans salute! The word frittata comes from Italy, but every culture in the world has a version of this humble and hearty dish. A frittata is a savory egg pie without the crust. It is similar to an omelet, only it is not folded, and it is richer, heartier, and easier to make than an omelet. And unlike an omelet, the frittata is finished in the oven to brown the top layer of cheese.

All the ingredients for your frittata can be harvested from your garden or found at a local farm: vegetables, herbs, cheese, and pork. BACON AND SPINACH FRITTATA Frittatas are the perfect way to incorporate seasonal produce into breakfast, a meal that often misses out on healthy vegetables. And frittatas are just as good for lunch or dinner. Serves: 6 Prep time: 10 minutes Cook time: 15 minutes Ingredients: ½ lb fresh bacon, roughly chopped ½ medium onion, finely chopped 2 carrots, chopped 3 cloves garlic, minced 1 cup spinach, rinsed and roughly chopped 1 cup kale, rinsed, stemmed and roughly chopped ½ cup mushrooms, sliced 8 pastured eggs, beaten ½ cup fresh dill, chopped salt and pepper, to taste 1 cup shredded cheese (recommend: mozzarella, gruyere, or cheddar)
SWEET ENGLISH SCONES
2 tbsp remain in the pan. Add onion and carrots to oil and cook for 3 minutes, stirring occasionally. Add garlic, greens, and mushrooms, continuing to cook for 2-3 more minutes, until greens are wilted. Season mixture to taste with salt and pepper.
Scones are simple to prepare and ready to eat within 30 minutes. An English version of a biscuit, this recipe has less sugar than most scones, so feel free to add a little of your favorite jam or jelly.
In a bowl, combine eggs, dill and reserved bacon. Pour egg mixture into pan and continue to cook on medium-low until eggs begin to set up, about 4-5 minutes. Top egg mixture with cheese and place pan into oven. Broil for 1 to 3 minutes, or until cheese begins to turn a golden brown. Enjoy with a slice of fresh avocado and a dollop of sour cream.
