When we decided to have a Pet Issue here at The Bend Magazine, we knew it had to be good. We posted on Facebook in search of the Coastal Bend’s cutest pets and the nominations flooded in. Once we picked our eight finalists, we then had to pick a cover (which was close to impossible to do). We finally decided upon Ringo, the poised Dalmatian you see on The the cover. Yes, I do! His full name is Doogie Bowser Jr. but you can call him Doogs. He is a dramatic, spoiled, lovely little pup. He spends most of his day getting his beauty rest and looking for anything or anyone to cuddle with—he prefers to be the big spoon. He has his own Instagram @doogiebowserjr so feel free to follow him, he loves the attention. The few hours a day he’s not snoozing he enjoys sprinting around the house with the zoomies, playing tug, or chasing lizards outside. His favorite snacks are peanut butter covered banana chips and homemade snocones.

2. What is it like being a pet owner in the Coastal Bend? Overall I’m happy to be a Coastal Bend pet owner. It’s definitely frustrating at times given the lack of public dog parks or pet-friendly restaurants, but it’s also a blessing in disguise because it challenges me to find new and fun places to go exploring with my pup. The biggest perk of living in the Coastal Bend with pets, especially dogs, is that there are countless beaches to bring them to so they can run, splash, and play in the water on a hot summer day. I’m proud of the progress I see from the city and the residents to provide more opportunities for pet owners and pet lovers to congregate, mingle, and have fun with their fur babies.

My answer for this changes constantly for so many reasons. Growing up, the dog I most identified with was a Dalmatian. To this day it’s still in my top three. I’ve always thought they were so unbelievably beautiful and unique. They have such a statuesque poise and grace that they can’t help but catch your eye. They’re stand outs for sure. The other dog I’d want to be, other than Doogie’s Frenchie brother, is a Great Dane. My love for Great Danes came from my obsession with "Scooby Doo, Where Are You?" when I was younger. There’s nothing I wanted more than to simultaneously hang with and be Scooby Doo.

What We Can Learn from Our Pets
I
t all started with a simple post on Facebook. I never really intended on our Pet Issue being such a big undertaking, it just seemed like a fun way to end the year. We wanted readers to send in pictures and information about their pets. At the time, I was hoping to just to get a few submissions. The post quickly spread around town, and before we knew it, there were over 150 local pets to choose from. As we poured through pictures of dogs, cats, turtles and even chickens, we fell in love with so many different pets. Some people went to great lengths to campaign for their fur babies. It made me realize just how much everyone loves and cares about their pets. We came across so many cute animals, but there were some we just could not stop talking about around the office. We are excited for you to meet some of our new friends on page 36. We refer to pets as our best friends, and even our children in some cases. We work hard to train pets, but maybe pets are trying to train us at the same time. Pets love their owners unconditionally. They are loyal and protective companions and find joy in life’s simple moments. Dogs are being used to comfort overly stressed students during their finals. I think we could all benefit from learning a thing or two from our pets. This issue wraps another great year of sharing the great stories happing around our community. It is an honor to serve you, our readers, each month and we constantly strive to improve with each new year. We are looking forward to launching some new things next year, including our first January issue and an updated website with exclusive, timely articles to keep you in the know throughout the month. A Good Catch Katz 21, a popular dining destination on the South Side of Corpus Christi, is opening a second restaurant under the same roof. The Coastal Bend Scores a Soccer Team – Minor League Soccer is finally heading to the Coastal Bend. The Premier Development League announced in mid-October that Corpus Christi would be one of the new expansion teams in the upcoming 2018 season. The Corpus Christi FC is owned-and-operated by local pediatrician Dr. Kingsley Okonkwo. Dr. Okonkwo hopes the addition of another local sports team will provide fun and affordable ways to engage and entertain the Coastal Bend community. Bill Cox The brains behind a classic Corpus Christmas tradition, Mr. Bill’s Christmas Wonderland By: Kylie Kinnett Photo: Dekwaan Wynn How did Mr. Bill’s Christmas Wonderland begin? Tell us your story!
What part does the community play in the wonderland?
As a child, I always looked forward to going around town and looking at the Christmas decorations. Unfortunately, the amount of decorations seemed to decline each year. In our busy world, it is hard to find the extra time, money, and energy to put up large displays and it takes a lot of all three of those things. In 1998, I decided to invest all three of those things into Celebrating Christmas. I started with just lights the first year, and each year after that I kept building something new. My son, Andrew, bought the corner house across the street from me, so then we had two different themes. I built a full size manger scene for Andrew’s house to show the reason for the season. Across the street at my house was a more fun, festive setup. This is really when Mr. Bill’s Christmas Wonderland began.
I have really been blessed by the community with donations to help offset some of the expenses. The Wonderland is definitely not just me. It takes me, my son Andrew, my neighbors, and the community to keep this display going year after year. We also are a Toys for Tots drop off and always get a lot of donations each year for that.

ing so many wonderful people from all over the world while they are visiting family members in town for the holidays. I really would like to thank everyone for sharing their Christmas with us. It is genuinely nice to see my passion and hobby bring so many smiles to people’s faces. How long does the preparation for the Wonderland take and what does your set up process look like? As I get older and the display gets bigger, it takes longer each year. Since I can’t work as fast as I used to, I now start the decorating process at the beginning of October, starting with the lights on the house and trees. By week three, we bring out the first display, the workshop castle and get it set up and put in place. After that, I begin getting all the lights and motors wired up. I try to have everything ready to be turned on by December 1st. Then, the display is ready for people to see from 6PM to 11PM until New Year’s Eve. I have had some trouble the last three years due to my health, but thankfully I have some great neighbors who have helped me out. If it wasn’t for them, I could not do this anymore!
How does it feel to be a part of so many people’s Christmas memories and traditions?
What does the future look like for Mr. Bill’s Christmas Wonderland?
Thousands of people come by each year to celebrate with us. The display has definitely become a yearly tradition for so many families. Each year I see young couples come by with their children and find out the parents came with their own families when they were little. I’ve had the honor of meet-

Cafe Calypso has been a Corpus Christi staple since 1992. Originally founded by Erdal and Marcy Okumus, this coffee house has moved from Sunrise Mall to its now familiar location next to Half Price Books in Moore Plaza, but the quality has not changed. Did You Know? The name “latte” is short for “Cafe Latte” which the Italian’s use as a way to describe the idea of combining coffee and milk. Paws & Claws to the Rescue Local non-profit seeks to provide a better life for the Coastal Bend’s dogs and cats. Words and Photos by: Marina Riker
T
here’s nothing quite as adorable as puppies bumbling down a runway or frolicking around Santa Claus during the holidays.
These are just a few ways Paws and Claws, a local non-profit, seeks to raise awareness and funding for the Gulf Coast Humane Society, one of the largest no-kill shelters in South Texas. From decadent galas to photo-ops with Santa, all of the group’s events support its ultimate goal to help protect the Coastal Bend’s furry friends. “It’s a pretty wonderful organization that helps out a lot of little puppies and kitties,” said Caitlin Shook, who volunteers with the organization. Over the last two decades, the nonprofit has raised over $1 million for the Gulf Coast Humane Society, which has helped to cover the costs of life-saving surgeries, vaccinations, grooming, and medicine. Some of the original founders are still a part of the organization today. “We’ve just been very lucky that all of the members are deeply committed and rooted in the community,” said Shook. Paws and Claws is the auxiliary for the Gulf Coast Humane Society, which has a mission to provide the best care possible for all of the animals under its roof. Since 1945, the agency has worked to promote responsible pet parenting and the humane treatment of animals—all while saving one animal at a time. Throughout the United States, millions of healthy dogs and cats are euthanized each year because there aren’t enough homes for them. South Texas is no stranger to the pet homelessness crisis either, where there isn’t as much encouragement for spaying and neutering pets, Shook mentions.

“We have a problem with puppies getting born without any possibility of an owner,” said Shook. Paws and Claws works to support the humane society, which aims to educate pet owners about the benefits of spaying and neutering furry friends—in addition to finding pets loving families of their own. But the people who help pets find forever homes need all the financial help they can get. Over the last year, Shook and other members worked feverishly to organize the nonprofit’s most important annual fundraising event, the 20th Annual Fur Ball. On November 18th, Coastal Bend residents enjoyed an evening of dinner and dancing to benefit their four-legged friends. The event was Roaring ‘20s themed in celebration of two decades’ worth of successful soirees. “We [had] live and silent auctions,” said Shook, “and a really sweet, cute and adorable puppy runway.” Now, the volunteers are gearing up to organize an opportunity for Coastal Bend families to meet Santa—who will be surrounded by plenty of adoptable pups, Shook said.

J
onathan Swindle, Avery Pheiffer, and Liza Wisner all have very different backgrounds and skill-sets. Swindle, a Bishop-native who attended college in Maine, is the President and Founder of Hi-Res Media Group, a marketing firm in uptown Corpus Christi. Pheiffer hails from Flour Bluff and, after attending the University of Texas-San Antonio, founded his own software development company, Lionsoft. Last but not least, Liza Wisner (one of our original 7 Most Beautiful Women) found her way to the United States from Kenya, works for the City of Corpus Christi, and founded a non-profit organization Power-Up, which helps bring access to technology to low income areas in Kenya. The question begs, how did such a diverse, seemingly unconnected group of people come together and what exactly are they up to? The answer is very simple, in fact it’s only two words:

Axom Foundry. Axom Foundry is a co-working space based in uptown Corpus Christi and its goal is simply to give “freelancers, entrepreneurs, and early-stage companies the space and tools they need to grow their businesses,” says Swindle. For those who have a great idea they need to get off the ground—whether it be an app, a small business or otherwise—Axom Foundry is committed to providing an affordable workspace where one has access to essential resources and can be surrounded by like-minded, ambitious, and talented people. Creating this environment is key to Axom Foundry. Pheiffer believes that not only will this space help entrepreneurs create the best product possible, but it will “lower the barrier of entry.” Providing easier access to information about founding your own company and giving access to those who have experience can help newcomers get started to

Renting a hot desk (the most basic level of membership), a dedicated desk, or an open or private office not only puts you in a space with like-minded individuals with their own ideas and ambitions, but Axom hopes creating this space will foster an environment in which members hold each other accountable to reach their goals. “Other small business incubators require its members to submit monthly reports about revenue and other details surrounding the business because they’re publicly funded incubators. We hope Axom will be a private sector alternative where there’s no formal accountability. We believe that this will help our members make the most out of their very valuable time spent here,” says Swindle. Most importantly, Axom hopes to create a network of ambitious creatives in Corpus Christi and the surrounding Coastal Bend area. “We want to be the connectors,” says Wisner. By creating a network of people with specialized skills, Axom’s founders hope they can erase the competitive mindset of local talent working against each other, and bring those talents together to help bring more money and bigger projects into Corpus Christi. Axom will soft-launch this month and be at full operating status by January, according to its founders. They will offer a variety of services including a dedicated personal workspace, access to a photography studio, mentorships, networking, and more.

SMALL PUP, BIG HEART: According to Moose’s owner, he might not have a single clue about how small he actually is. He has been around dogs five times his size and has no fear in going up to them and befriending them! MAGICAL POWERS: We think Moose might have secret magical powers that include some type of love potion. The proof? There isn’t a single person who has met him and hasn’t fallen in love with him (this probably has nothing to do with how cute he is). BROTHER/SISTER LOVE: Moose has a sister named Mia who is a Tabby cat. He enjoys chasing her around the house and giving her kisses. Moose is determined to make them be best friends…Mia is iffy about the idea.

BLESS YOU: According to Klaus’ owner, he has a propensity to sneeze on everyone and everything. It’s just his thing. You should be considered blessed to be sneezed on by him…maybe even buy a lottery ticket afterwards. ATTENTION CRAVER: Klaus, unlike some cats, is ready and waiting for your attention at all times of the day. He loves attention so much, he will quite literally slap you in the face to get it. Whether he is waiting for food, a good pet, or to brush out his fur, when he wants it, he will get it. THOSE CHEEKS: Klaus’ cheeks might be his most prominent feature, and they are definitely one of his owner’s favorite things about them. Don’t you just want to squeeze them?! FUN FACT: Klaus is completely orange! He has variations of the color orange throughout his fur—no white. Instead of being a striped tabby, he is marbled. Meaning he has big swirls and a bullseye on both sides that make a symmetrical pattern. CELEBRITY LOOKALIKE: If Klaus was a celebrity, he would most certainly be Harrison Ford. He can be serious, funny, adventurous, and just plain quirky. Plus, he has that deep crease between his eyebrows—an uncanny resemblance to Mr. Ford.

The Cattery Cat Shelter:
The Cattery offers an alternative to traditional animal shelters in providing a no-kill, cage-free environment for homeless, abused, or abandoned cats. Sandra Sue Benson Adoption Center: Formed in
2006, as a 501 © (3) nonprofit organization, the Sandra Sue Benson Adoption Center has worked hard to provide comfortable homes for dogs and cats in the San Patricio County. Their main goals are to provide care and protection for all animals, discourage animal cruelty of all kinds, promote the benefits of spay/neuter programs, and educate others on animal welfare. LAYING LOW: Chicken Nugget’s favorite pastime is people watching throughout the day. She lays by the window and lurks all day long. Her owners are convinced she might be part cat. ANYTHING BUT KIBBLE: Her favorite snack often comes in the form of chicken nuggets (we know… seems a bit weird). She enjoys any and everything other than dog food. NEEDS NO MAN: If you’re wondering what Chicken Nugget jams to throughout the day, the answer is pretty obvious. Kelly Clarkson’s hit “Miss Independent” is her go to because she is an independent woman who doesn’t need a man. CELEBRITY LOOKALIKE: If Chicken Nugget was a celebrity, there is no doubt she would be Kim Kardashian. Mainly because of her fluffy booty, but also because she is fabulous. LEADER OF THE PACK: Did you know Corgi’s are of the herding breed? Nugget’s owner’s favorite story of her comes from a mishap in a field that includes a nip in the behind and Nike shorts being ripped off. Nugget didn’t like the course their walk was on, so she decided to nudge her owner in the right direction. Needless to say, the walk ended with embarrassment on the owner’s end, and a proud smile on display by Chicken Nugget.

THE BEAR: While Hector may share some characteristics of a cat (agility, hunting instinct, raw power), he identifies as a bear, and lives his day to day as a bear (daily hibernation, constant hunger, mildly destructive, and always on the hunt). FAVORITE PASTIME: Hector’s favorite way to spend his days is to sunbathe while blasting the “90s Baby Makers” playlist on Spotify, while talking smack to the seagulls in the front yard. He can also be found using catnip recreationally for his glaucoma. LOVER BOY: According to his owner, Hector believes his girlfriend is an 80 pound Doberman named Nalah. Although they share the same residence, they have their respective places in the house where each can coexist peacefully. However, don’t be fooled. Late at night, if you are very quiet, you can find Hector and Nalah conversing at the back window.
The Jerusalem Tabby Age: 2 years, 11 moths, 17 days
CELEBRITY LOOKALIKE: While Hector’s owner thinks he is a dead ringer for Peter Dinklage (due to his personality outweighing his stature), Hector believes himself to be Jeff Lewis. This is because of his ability to constantly change things up, find new ways of arranging the living room, distressing various articles of furniture, and his constant outbursts over the smallest of details regarding his wardrobe. FAVORITE TV SHOW: Hector—like the vast majority of the world’s population— enjoys watching Game of Thrones on Sunday nights.

A HUGGER: One of Ringo’s best characteristics is his loving nature! He enjoys spreading that love to others through hugging. He loves the beach so much that he eats the waves (and then proceeds to throw up)! He also enjoys getting his cardio in by swimming laps in his pool. ONE OF A KIND: He has one blue eye and one green; but he almost always will give you side eye with the blue one. He also has spots that form all types of shapes! He even has one in the shape of a heart on his behind.
FAVORITE TV SHOW: Ringo’s favorite TV show is anything on animal planet that includes other dogs. According to his owner, he could watch it all day—plus he thinks he is making new friends. PART HUMAN: Ringo quite possibly thinks he is a person, not a dog. He loves to sit in the rocking chair on his front porch and rock away, staring out into the distance. WILD THING: You can find Ringo jamming out to “Wild Thing” by The Troggs on any given day. This is rather fitting considering how often he wants to run, jump, swim, fetch, and play.

A usual day for him looks like this: sleep, sleep, eat, sleep, nap, eat, lick his owner, sleep, sleep. FAVORITE SNACK: Lloyd loves a good spoonful of peanut butter and coconut oil. Healthy and tasty! FUN FACT: Lloyd is named after the famous Jim Carey character Lloyd Christmas from the movie Dumb and Dumber. The name deemed appropriate because he was adopted on Christmas. Plus, his owner instantly knew he looked like a Lloyd. We would have to agree. CUDDLE MONSTER: If there is something Lloyd loves more than sleep, it would have to be cuddles (duh). His favorite thing is skin-to-skin contact with literally any other human. BEST FRIENDS: Lloyd has a 6 year old sister and a 4 year old brother (both humans) and he loves them to death! He enjoys sitting on the couch with them and watching a good movie to pass the time.

PART FOX: While Kira is a Husky/Australian Shepherd Mix, her owners are convinced she is also part fox. She howls constantly! FLUFF IT UP: Kira is very particular about fluffing her blanket just right before going to sleep. Her fluffing habits even extend past her own bed. She has been found multiple times on top of her owners’ comforter that she has fluffed to perfection in the middle of their bed. FAVORITE SNACK: Kira’s favorite snack would have to be her mom’s sandals. Never her dad’s though…she leaves his possessions alone for some reason. CELEBRITY LOOKALIKE: If Kira was a celebrity, she would be MC Hammer. This is because of her leg fur, which looks strangely identical to the musician’s classic parachute pants. FUN FACT: Kira loves water—of any kind! During a hot summer walk at the Botanical Gardens, Kira decided to cool off by jumping over the edge of a large decorative fountain. Her owners heard a loud splash and turned to see Kira swimming around, having the time of her life.

f you build it, they will come. And play. And deter crime. And have a healthier lifestyle.
That’s exactly what’s happening at the Corpus Christi Police Athletic League, which uses organized sports to give local kids a good start in life.

The CCPAL is a spin-off from an initiative that the Corpus Christi Police Department began in 2000, explains CCPD Sgt. David Morris. Three officers – Sgt. Morris among them – began policing certain areas with community efforts by working directly with neighborhoods in need. These new policing efforts had only been installed for a month when a man who ran a baseball league on the Westside of Corpus Christi asked for their presence to cut down on crime happening during the games. Morris and another officer began attending games to call balls and fouls, and to police the illegal activity. Although their impact was apparent as the crime during games was eradicated, the police officers realized the true impression they were making during a routine call. Two children rode up on their bikes and asked, ‘Hey, are you guys the umpires at the baseball fields?’ Morris recalls. “They talked with us for 10 or 15 minutes, shook our hands, and rode off on their bicycles.”

The prices vary per program, but there’s one thing in common: cost is not a barrier. For some sports, the only fee may be as low as $25, and that includes a shirt and cap. Scholarships are also available, because as Morris explains, “no one is turned away.” The group uses physical activity to engage children and teens in a safe and healthy pastime by running schedules year-round, which means this is a fulltime job for Morris. “I’m truly blessed, as a police officer, to be able to do this. I’ve been doing it fulltime since 2005.” His efforts, and those of the rest of the staff, are seen in the incredible growth of the League. The biggest growth spurt yet comes this year, with their very own building. It is expected to open sometime this month and will host even more sports, in addition to their mainstays. While the CCPAL offers games for those up to 18 years old, there’s a place for everyone older as a coach, mentor, or volunteer. It is thanks to volunteers that the League can offer so many programs and run so many games. “Kids who played in programs with us are now coming back as mentors or coaches,” says Morris, “and we have success stories where some have gone on to play college ball. It’s very rewarding.”

hen walking in, the most notable feature is the light shining in from the large windows that decorate the front and back of the house—allowing for natural light to radiate throughout the entire space. The light and cool neutral tones reflect the simplicity and natural beauty of the house, and of the Prewett family as well. “We love how open and inviting the layout of the house is,” Lauren and Trevor both agree. They say their house has been a perfect place to raise kids and for hosting people regularly. As people who enjoy welcoming others into their home, the house has provided an ideal place for comfortable, regular gatherings with family and friends. The front room, most often used as a playroom, doubles as the dining area and living space. “As much as I’d love to decorate this room as a formal dining room, we have kept it a big open playroom full of toys; that’s the stage of life we are in right now so we are just embracing it!” Lauren recalls their need for practicality in a home with three small children. However, the room perfectly marries practicality and natural beauty with light radiating in from large windows overlooking the front yard. Making your way out of the front playroom into the living space and kitchen area, the whole backyard is visible through the large sliding glass doors overlooking their patio space and green backyard. “I love that you can be in the kitchen, living room or patio and still be a part of the action,” remark the Prewetts in reference to the open floor plan of their house. The kitchen, with granite countertops, white cabinets, and subway tile combined with the natural light flowing in, makes the space feel open and airy with plenty of room to accommodate people. The patio has a unique seating arrangement with a large farmhouse style table able to seat 25 people. The spacious yard and patio is perfect for casual family friendly entertaining—whether it be kids running around, an outside dinner with family and friends, or both! Since they just moved in May of this year they have loved getting to make their

With the Santa Fe Swim Club, shops and restaurants all within walking distance there are always families walking or riding bikes around the neighborhood, making it a great area to raise a family and meet other people. The house has managed to be a friendly place to welcome other people. It reflects their familial values all while being in a place where they can enjoy where they live and invite others into that as well. The style and décor of their house reflects a simple farmhouse feel that remains practical, but also true to the things they value. Throughout the house are many family photos of their children at different ages, as well as paintings from Lauren’s dad, one of the most notable being a large black and white painting of the house Trevor’s great grandfather built on their family farm. The painting, sitting above their kitchen table, serves as the focal point of the room and speaks to their deep family values and importance of truly making a house a home.

Winter is the Season for Salad Greens The best salads come from your own garden! By: Justin Butts Photos by: Rachel Benavides
F
or flavor, crispness, health, and variety, nothing is better than a salad picked from your own garden. You can convert a sunny patch of lawn near your kitchen door to a salad garden in a single Saturday morning—then enjoy crisp greens every day. But you must plant now—lettuce grows best in the winter!
Salad Greens Grow Best in Cold Weather Lettuce, spinach, arugula, coriander, and dill need cold weather to maximize their sugars. Frosts and freezes trigger surges in phytonutrients and sugar production in tender greens. These surges are a self-defense mechanism for the plant, but result in a maximum concentration of flavor in each bite. If tender greens are grown in the summer, they will bolt like weeds and turn bitter. Grow your tender greens in a sunny spot that receives at least seven to eight hours of direct sunlight per day. Plant in a wide bed (four feet wide is best) in rich, well-composted, well-tilled soil.
Companion Plant Your Greens for Flavor and Pest Control With your finger or the back of a hoe, draw parallel lines across the width of your bed about eight inches apart. Sprinkle your lettuce seeds down these rows and cover the seeds with 1/8th inch of soil. Alternate rows of spinach, arugula, coriander, and dill into your lettuce bed (two rows lettuce then one alternate). This companion planting will repel pest insects while adding wonderful flavors to your salads.
The Best Lettuce Varieties For gorgeous greens and reds, try Bibb, black seed Simpson, red salad, Pecos romaine, rouge d’hivers, oak leaf, and buttercrunch lettuce varieties. Alternate the varieties so that each short row across the bed features a different color, flavor, and staggered harvesting. Water your lettuce bed every few days until the plants sprout; then water about once per week until spring. Thin the lettuce and other greens to a final spacing of 8” between plants. Make sure to eat the thinnings from all these greens, they are the sweetest of the year.
Harvest in Cuttings from Sprouts to Mature Plants As the lettuce and other greens mature, cut 1/3rd of the greens from the plants each time you harvest, leaving 2/3rds of the plant for photosynthesis to continue. The plants will quickly regrow new leaves. Your lettuce and other greens will continuously replenish themselves, giving you fresh new salads all the way into the heat of early summer.

s children anxiously await the coming of Christmas, the presents, the lights, and the carols, a scrooge will be present—Ebenezer Scrooge, that is!

Christmas Eve, as he is visited by the ghosts of Christmas Past, Present, and Future— ultimately resulting in his discovery of the true meaning of Christmas. Open auditions are held each year, swarmed with hopefuls yearning for a spot in the highly-anticipated Christmas production. Casting for a musical is a much more extensive process than a regular play. Auditions include reading, singing, and dancing numbers. However, vocal, musical, and dancing talent is not sufficient to earn a spot on the cast. The cast members must then perform various scenes together to ensure on stage chemistry. If the audition process itself is not enough to render you breathless, prospective actors must be willing to commit twelve weeks of their time to the production, both for rehearsals and performances.

No stage production would be complete without visuals to epitomize the true meaning of the storyline. Each scene is complete with life-sized, historically accurate props, inviting the audience to become a part of the play’s events. Each prop is built, painted, and decorated in the wood shop housed at the Harbor Playhouse. Josh Goldson, the Technical Director, along with his team, is the mastermind behind the lighting and lifelike movement of the scenery. If you’ve seen photos of past productions, you’ve probably noticed the epic ending scene, where all cast members gather together under a cascade of snow, to which Goldson gleefully states, “we are famous for making it snow in Texas!” Karen Rauch, and her team, join in on the breathtaking scenery of the musical with costumes. In the costume library, you can find Rauch, sorting through the ocean of costumes and supplies; the vast arsenal of accouterments used bring the era alive through their uncanny resemblance to the time period. With so many costume changes throughout each scene, Rauch and her team are always prepared for any lastminute alterations. Every member of the team works in tandem to provide the audience with an incredible performance. As a small community theatre, everyone bonds together as a family, contributing to the success of the annual production, making the Harbor Playhouse one of the best places to view any theatrical production.
Did you Know? -Director, Andres Elizondo, credits the success of the production to the former Director, Joel Earley. Elizondo ensures continued success by maintaining the vision of love, redemption, and family. He also ensures the focus and enthusiasm of the cast as they work in tandem for a successful production. Together, Earley’s vision and Elizondo’s cheerful disposition cast a bright reputation not only for the production, but for the Harbor Playhouse. -The production typically casts 40 actors, but this year the cast reached a whopping 60 cast members! -Playtime Performances are held for local school districts to bring students on field trips. This year, tickets were sold out immediately!

A
gender reveal party should be nothing less than spectacular. When this happy couple wanted to reveal the gender of their child, much detail went into the event. I was hired to complete the vision of the happy parents-to-be at their family ranch and hold the secret of the baby’s gender for months during the planning…I could hardly contain myself! As guests gathered, they sipped blue or pink lemonade depending on what they thought the gender would be. They also picked a button showing their guess, girl or boy? Lunch was served and family and friends enjoyed an array of sandwiches, pasta salad, fruit and homemade chips.

When it was time to reveal the gender, a calf scramble was done in the family arena with the baby cattle. Tags were tied to the calves’ tails and once released, guests chased the cattle around in hopes to pull the lucky tag! The lucky tag said “winner!” and allowed that guest to present a small box that gifted the parents to be a small crochet cap hand knit by the baby’s grandmother. The gift came in on a donkey with a floral halo which was a delight for all the guests to see. The happy parents were elated to see a pink knit cap in the gift box! Pink cotton candy was served and ‘It’s a Girl’ tattoos were handed out to celebrate the big news. It was a great day for the family filled with tons of love and fun. Baby Sidney has since arrived and the family is happy and healthy here in Corpus Christi!

Create a show stopping dessert for your Christmas table!
The biggest challenge in a Buche de Noel is rolling the sponge; in fact, you must roll it twice. But this flourless sponge is quite moist and malleable compared to a typical cake sponge and easy to work. Make sure to roll the sponge tightly the second time around with the mascarpone cream filling to give the center its signature tight spiral layers.

f you are a fan of The Great British Baking Show, you know all about the piercing blue eyes of Paul Hollywood, the regal elegance of Mary Berry, and the unbelievable show stopping desserts that seem impossible to prepare at home. This Christmas, create a television-worthy showstopper right in your own kitchen! Buche de Noel, or yule log cake, is a classic French dessert. In ancient times in France, a specially prepared yule log was ceremoniously burned in the hearth on the winter solstice. The ashes from this log were said to have me-

Buche de Noel Serves 8-10 Prep time: 1 hour Cook time: 1 hour Sponge: Non-stick spray 6 large eggs, separated ¾ cup sugar 1 tsp vanilla extract 1/3 cup cocoa powder (preferably Dutch pressed) ¼ tsp salt Chocolate Syrup: 1 cup sugar 1 cup water 2/3 cup cocoa powder 1 tsp vanilla extract Pinch of salt Chocolate Ganache: 6-8 ounces bittersweet chocolate ½ cup heavy whipping cream Mascarpone Filling: 8 oz mascarpone 1 cup heavy whipping cream ¼ cup confectioner’s sugar 1 tsp vanilla extract Meringue Mushrooms and Fungi: 3 egg whites (about ½ cup) ¾ cup granulated sugar 1 tsp vanilla extract

Directions: Sponge: Preheat oven to 400°F. With a stand or handheld mixer, beat egg whites and salt together until stiff peaks are formed. Clean mixer and bowl. Beat egg yolks and sugar until batter forms a ribbon as it falls off the beater. Mix in sifted cocoa powder and vanilla. Stir a large spoonful of meringue into the yolk mixture. Fold resulting yolk mixture into the meringue until well incorporated. Pour batter into a 9”x13” cake pan lined with parchment paper that has been greased with non-stick baking spray. Bake for 12-16 minutes, until cake is fully set. While cake is still warm, invert it onto a clean dish towel coated with a thin layer of confectioner’s sugar. Using the towel, roll the cake up like a swiss roll and leave to cool. Mascarpone Filling: In a standing mixer, beat mascarpone and sugar until creamy. Set mascarpone mixture aside. Beat whipping cream and vanilla until stiff peaks form. Fold whipping cream into mascarpone and refrigerate until ready to use. Chocolate Syrup: In a medium-sized sauce pan, cook water, sugar, cocoa powder, salt, and vanilla over medium heat. Stirring mixture constantly, heat mixture for about 3-4 minutes. Transfer to a bowl and let cool. Chocolate Ganache: Set up a double boiler and heat the water to a simmer. Finely chop the chocolate. Add the chocolate and cream to the top of the double boiler and cook, stirring constantly, until melted. Transfer to a bowl and let cool.

Meringue Mushrooms and Fungi: Preheat oven to 200°F. In a standing mixer beat eggs, sugar, and cream of tartar until stiff peaks form. Fill a pipette bag or a plastic storage bag with the end cut off with meringue. Pipette meringue disks, pulling the tip off to the side to prevent having a pointy top to your mushroom, onto a baking sheet lined with parchment paper. Pipette small dollops, about ½”-3/4” in diameter, and pull bag straight up to finish. Stems should have a conical shape. For fungi, pipette a small circle and spread it out using a spatula until it’s about 1/8” thick. Dust mushroom tops and fungi with cocoa powder. Bake meringue for about an hour and a half, until dry. To assemble mushrooms, apply a small amount of ganache to the top of the stem, and use it to adhere the top. To Assemble: Unroll cooled sponge and brush on syrup. Dollop filling in the center of the sponge, and spread outward until the surface is covered with a 1/2” cream. Roll the cake in the same direction as it was when it was cooling and place it, seam side down, onto serving tray. Cover sponge with ganache, and if desired, finish with chocolate “bark”. Decorate with meringue mushrooms and fungi. Dust cake with confectioner’s sugar and store in a cool place until ready to serve.

key lesson in starting a business: tap into a market’s unfulfilled need. With a scarcity of places to get top and unique wines in Corpus Christi, this is exactly what the owners of Tannins Wine Bar and Tapas did when they first opened their doors two years ago. While they are more than just a wine bar (they’re also home to delicious tapas and Texas beers), wine is their bread and butter. With a selection carefully picked in accordance to the owners’ taste and personalities comes a varied collection of wines—both familiar and hard to find kinds. The atmosphere at Tannins is not what most people would expect from a wine bar. Its Tuscan ambiance is laid back and comfortable, perfect for a casual night out. Co-owner Mario Fimbres shares that this

difference is definitely intentional, as they wanted to create a place where people can just relax and enjoy great food and wine. One of their more unique and rare wines, and also one of their best-sellers, is a Perez Cruz bottle called Cabernet Sauvignon Reserva 2014. Its varieties include Cabernet (95%), Syrah (2%), and Carmenère (3%). The delicious deep burgundy wine is perfect for the holiday season. It’s light in the beginning and has aromas of ripe red berries. In the back end comes a kick of spice, highlighted by touches of dried fruit and vanilla, and ends with a smooth finish. The drink is best paired with their Vino Italian Meatball Slider, as it gives a spice that fits perfectly well with the wine. If top notch wines and delicious tapas to go with them are not the definition of a perfect chill night out, we don’t know what is!

amily owned business, Hamlin Pharmacy and Fountain, is a local landmark for most people in Corpus Christi. Now, after almost 60 years since they first opened their doors, they are stepping into the next generation with an exciting new venture: the expansion of Hamlin Bakery. Head baker Katie Nicholson practically grew up inside Hamlin. Her grandfather started the business in 1960 and her mom took over in the 80s. “I started working there as soon as I was tall enough to push the buttons on the cash register,” she shared. Incorporating the bakery into Hamlin started in 2008 when Nicholson, who attended Del Mar Culinary School and the International Culinary Center in New York City, began baking small batches of cookies and cakes for the Fountain. From there, the bakery has expanded from just Nicholson to a talented team of lady bakers: the scientist, Vanessa Valadez, the artist, Jessica Reyes, and the “lover of all things bread,” Jill Sansing. As the team grew, so did the business. The now expanded Hamlin Bakery has a bright, friendly, and welcoming atmosphere. Nicholson and the team used refurbished original fixtures from the pharmacy for their bakery cases, as a nod to the legacy her grandfather built—modernizing, and at the same time, keeping its authenticity. As for their pastries, gaining inspiration from the greats, the movers, and the shakers in the scene, Hamlin Bakery serves everything, from Classic French pastry, American sweets, and South Texas Classics.

Hamlin Bakery prides themselves in using only the best ingredients (a distinction that is very noticeable in all their items), such as King Arthur flour, Neilson Massey extracts, and various high-end chocolates. As much as possible, they also try to use local produce, especially for their homemade jams and fillings. ong before South Side shopping malls, Corpus Christians were drawn to the shopping district on Chaparral Street each year with Christmas décor and Santa Claus. Santa’s home base was Peppermint Lane, which, in 1966, included four blocks of Chaparral Street pedestrianized for a month for the occasion.

The stores got into the holiday spirit with special window displays and Lichtenstein’s Department Store billed itself as “Your Peppermint Lane Gift Store.” Planners said the attraction would have “the most elaborate decorations in Texas history.” Crowds found multiple large Christmas trees, with stages below that played host to an array of entertainment throughout the season. City busses even joined the festivities, and were decorated with stripes as they
Santa’s entrance was even given its own Corpus Christi flare. Most towns receive their visit from Santa as he arrives last in the Thanksgiving Day parade, but Peppermint Lane’s Santa parachuted into Corpus Christi Bay! He had plenty of time to take special requests from the children, and answered mail left in mailboxes from those who couldn’t make their request in person—all while readying gifts for Christmas!

There was something for everyone during visits to Peppermint Lane, from art shows to music to novelty acts from around the region. 1960s children may remember riding the miniature train and other rides brought in for the occasion.
