Q: What type of animal do you most identify with and why?

BO: I see myself as an otter. They’re positive, intelligent, unassuming, lovable, and have great problem-solving abilities. They may distract easily, but are dedicated and eager to prove themselves!

JG: I identify the most with an owl. Like an owl, I am analytical and detail-oriented, but my creativity is at its peak at night, so I’m most productive with my work while everyone else sleeps.

TB: I would have to say a cat. They’re calm and collected, but also have a lot of personality. Also like cats, I too spend most of the day sleeping and waiting for other people to do things for me.

Lessons Learned

In the summer of 2018, my husband Carlos and I took a trip to the Gulf Coast Humane Society. After seeing a Facebook post from the shelter about a few of their new pups, we decided to take a field trip to boost our serotonin levels. It was naïve of us, I’ll admit, to think we would leave the shelter that day without having adopted a dog. “It will be fun to just look,” we thought.

After walking through each of the kennel rooms, talking in obnoxiously high-pitched voices, we mentioned to one of the employees that we had a rather territorial cat at home already. It was only then that we met “the King of Chill,” as the staff had come to refer to the mixed-breed pup who had just been returned to the shelter that day. His name was Dilly Dilly (we would later drop the second Dilly due to the fact that he indeed had been named after a Bud Light commercial – spoiler alert, we got the dog) and we were hooked. Our hearts had been stolen. So, a couple days later, our Art Director Jarred Schuetze and I drove to the shelter after work to pick up the newest addition to the Cooper household.

No matter the animal, we usually attempt to teach our pets a thing or two. However, we might not always think about what they, in turn, teach us. Dilly has taught Carlos and I about the true meaning of patience; the value of just being a little silly sometimes, and the

importance of understanding a living being’s past and how that might affect their current state. True, these are lessons we both had learned at one point or another, but they were further cemented into our minds because of a 75-pound rescue dog.

Beginning on page 30, you might just learn a few different lessons from a cat, three dogs, a monkey, and a pig. Such as: The best anxiety cure is driving down Ocean Drive; vocalizing your needs usually helps you get what you’re looking for; and the best fast food option is always Whataburger.

The Pet Issue is an biennial favorite among readers, and this year’s does not disappoint! We put out a call to find the cutest pets in the Coastal Bend, and were met with an inbox full of adorable photos and endearing stories. We left the ultimate decision up to our readers and put our team’s top 25 nominations to a vote in order to find this year’s roster. Aside from fun personality profiles about each of this year’s pets, you’ll also discover local groomers and treats to check out, ways to help the vast stray population in the Coastal Bend, and insight into the skyrocketing adoption rates in 2020 due to COVID-19.

Also inside this month’s issue, you’ll read about Corpus Christi’s H. Boyd Hall Branch of The National Association for the Advancement of Colored People (NAACP) and its new president, Jeremy Coleman. Beginning on page 42, Coleman speaks to Senior Writer Kirby Conda about the importance of our youth, why diverse representation in leadership is vital, and what the next chapter of our local NAACP branch will look like.

The induction of Coleman reminds us that with change, growth inevitably follows. Which can sometimes be a hard lesson to really learn; and often even harder to actually implement. But if we know one thing to be true here at The Bend Magazine, it’s that growth – be it a new member of your family in the form of a pet or a new president leading an organization into a better tomorrow – makes your community stronger.

A Rescue Story

My life changed for the better in 2019 when three lost puppies wandered up into my driveway. Their condition showed they were not just escapees from a nearby home, but had been on the street for a while. My first instinct was to shoo them away, but my wife – who is one of the biggest animal lovers I know – shooed my idea away instantly. We gathered them up, took them inside to get fresh water and some food, and then took them to our veterinarian to check for a microchip. They were not chipped. They were now three of hundreds of dogs in Corpus Christi who had been abandoned to fend for themselves. We already had two dogs and four birds, so adopting them was not really an option for us. That’s when our vet asked the question that instigated the Big Change: “Would you be willing to foster the pups until they can be adopted?”

I knew children were fostered in homes, but dogs? Our vet introduced us to an amazing woman, Connie Bowen (whom you get to meet in this month’s Giving Back) and her organization called FurEver United Rescue, and within about 30 minutes we went from being dog rescuers to dog foster parents. In that year, we rescued and fostered nine dogs, mostly puppies. Some came to us so emaciated we wondered if they would make it, others covered in ticks from living on the streets. There were times that our living room was converted into a temporary kennel room, housing pups that loved to bark at every noise and had no problems waking you up in the middle of the night to go potty in the backyard in 45-degree weather. Of course, that happens after they smell every inch of the yard in search of the perfect spot, leaving you begging them to “Please, please, please just do your business.”

We came to know about the amazing group that made up FurEver United Rescue. They had an unending passion for helping those unable to help themselves. The foster period typically lasted about 6-8 weeks, during which FurEver United ensured the health of the pups by arranging visits to the vet and getting neutered or spayed, and sought forever homes for the rescues. Almost all our fosters were relocated to the upper northwest (Washington, Oregon, Idaho, etc.), and the big moment when we were notified that our pups had been adopted was so wonderful and exciting: These dogs would have a permanent home and family to call their own. Delivering our fosters to join all the other dogs heading to a new life was a day of mixed emotions, as we gave our last hugs, said our goodbyes and then helped load them into the truck kennels for the long trip to their new home.

We still keep track of most of our fosters. Some live in the mountains and some have homes that overlook the Pacific Ocean. The photos all speak volumes about how happy and healthy they are; full of love and full of life. We are just honored that we got to play a small part in getting them there. I would never have known all that were it not for three lost puppies who wandered up one day.

Dr. Hnatow (pronounced “NATO”) is a native of South Texas. Born in San Antonio and raised in Carrizo Springs, he visited the Costal Bend frequently while growing up and fell in love with the area. After graduating from Carrizo Springs High School, Dr. Hnatow earned his undergraduate degree at St. Mary’s University in San Antonio, TX where he met his wife Tiffany and graduated summa cum laude.

He spent the next 10 years training at the world’s largest medical center and the nation’s busiest trauma center in Houston, TX. During that time, he earned his medical degree and completed residency and fellowship at the University of Texas Medical School in Houston, TX. There he served as Chief Resident and later a Clinical Instructor of Orthopedic Surgery. During his training, he focused on orthopedic trauma and complex joint replacement. He brings years of experience and expertise from the big city to South Texas.

Dr. Hnatow is fellowship trained in Adult Reconstruction & Complex Hip and Knee Replacement.

Dr. Hnatow enjoys spending time with his wife, two children, and their dog Penny. He likes spending time on the beach, camping, and hiking. He’s finished two half Ironman triathlons and aims to finish a full event.

Lending a Helping Paw

FUREVER UNITED RESCUE AND ITS LIFE-SAVING EFFORTS

o matter how old you are, at one point in your life you probably had a furry companion to keep you company through the rough patches. When we think about pets, we often look back on fond memories from our childhood, or think about the excitement we get coming home to them every day.

If you’ve ever wondered who looks after the unfortunate animals who don't have a place to call home, FurEver United Rescue is a team you should get to know. This organization has made it a mission to help strays across the Coastal Bend community.

“FurEver United Rescue is a temporary solution to a problem that we have in South Texas,” founding member Connie Baird Bowen said of the impact FurEver United Rescue has on the community as a whole.

While FurEver United Rescue succeeds in helping strays in the community, Bowen understands that the problem is more than just stray animals. In some cases, pet ownership isn’t taken as seriously as it needs to be. “[People] adopt a puppy and then it turns into a dog. It's no longer a six-pound little cute thing. Now it's a full-grown dog, and it winds up back in animal control – and it's usually sick or has heartworms,” Bowen said.

While animals are being rescued on a daily basis, she also understands that more responsibility is needed from owners to help curb the immense stray problem here in South Texas.

Bowen also knows how serious cases can get when animals are not properly cared for by their owners, or the community in general. She shared a handful of awful stories

depicting some of the unimaginable scenarios from which FurEver United has rescued animals.

Despite the horror stories that inevitably come with this line of work, when Bowen or her team are performing rescues, they try to ruminate on a brighter side that makes it all worthwhile. “You know what makes it worth it? I don't want my children to have to do it. I want them to live in a place where humanity to animals is thriving.”

Bowen understands that animals are just as much a part of a family as any human, and should be treated as such. “I want our area to understand that this is what we do with an animal,” she says. “We bring it in and treat it as part of the family.”

FurEver United Rescue is just one of the rescue organizations in the area that works diligently to help rescue strays and find good homes for them to live out their lives. “It's very rewarding and fulfilling, working with some of the best volunteers in this area,” Bowen said. “There's a very big rescue community and they have amazing hearts.”

Community support also means a lot to the rescue efforts. Through its extremely active Facebook page, folks can follow along with rescue journeys and donate money or supplies to help with ongoing efforts. With the stray community acting as its biggest motivation, FurEver United Rescue truly strives to help as many dogs as possible in the Coastal Bend live their lives to the fullest potential.

IN THE NEWS INDUSTRY, JOE GAZIN HAS TAKEN HIS FINAL BOW

KC: You contributed more than 43 years of anchoring and reporting the news at KIII-TV, and 50-plus years in the broadcast industry as a whole. I’d love to hear what your journey looked like, and what initially drew you to the field.

JG: Wow, that forces me to think way back! I think as far back as junior high school, I discovered I enjoyed speaking to groups of people. Others at the time urged me to take advantage of that “gift.” I remember being enthralled with the various radio personalities in Los Angeles during the early ’60s, when I was in my teens. Just by coincidence, I met one of the DJs, Sam Riddle, at what was then the No. 1 rock station in L.A., KHJ-AM. He happened to be eating at a restaurant right next door to the station in Hollywood. Somehow, I got up the nerve to ask if I could sit in on his radio show. He agreed … and I was hooked!

I soon gravitated to talk radio, and then shortly after that, I began working for KABC Radio, the No. 1 talk station in Los Angeles. Eventually, in 1975, I moved to the small town of Wausau, Wisconsin, to get into television. In 1976, I began working for a TV station in the state capital of Madison. Then, in 1977, after a particularly brutal winter in Wisconsin, I was invited to come to Corpus Christi.

KC: How have you seen the industry change throughout the years?

JG: The television news industry has changed in so many ways since the early days. I like to take out my phone when talking to groups, and say, “The idea that you could use a phone like this to shoot video and broadcast live from anywhere in the world was simply unthinkable when I started.” The technology has been improving so fast, it’s almost scary! It’s difficult to imagine what we’ll see in the next decade. Also, if it seems that the people on the air have gotten younger, it’s not your imagination. That is kind of what got me thinking about moving on. When I had trouble understanding what my co-workers were saying and thinking, I knew the time had come.

KC: You've covered some of the area's biggest news stories, from massive hurricanes to the death of Selena. Do you have any breaking news stories that still stand out to this day?

JG: Well, the murder of Selena in 1995 certainly stands out, as does the Rossler office shooting just a few days later. In that one, five people were fatally shot by a disgruntled employee, and then that person took his own life. There was also the grain elevator explosion in 1981 that claimed nine lives, and our live reports from Havana, Cuba; Tianjin, China; Bogota, Colombia; and Linz, Austria … talking about new economic opportunities involving the Port of Corpus Christi. We also broke the story from Washington, D.C., about Ingleside being selected as the new home port for the battleship USS Wisconsin. Those are just a few that come to mind.

KC: What was your favorite part of being on air? Any favorite memories you'd like to share?

JG: It was especially rewarding to me to see evidence that we actually used our influence to help people; to make things better. For example, at the end of a Driscoll Telethon, when we would announce a grand total, usually in the millions of dollars, I was often overcome with emotion knowing those funds would result in countless young lives being saved. That was always a really big deal to me.

KC: What is one behind-the-scenes aspect of local news people might be surprised to know?

JG: People always asked me if we were, in fact, delivering the news LIVE? The answer is yes, absolutely! Very often, what people see on the air was finished just moments before. Also, many people are surprised to learn just how many people it takes to put a newscast on the air. Aside from the anchors and reporters, there are producers, camera and teleprompter operators, a director, an audio operator, video editors, engineers, several other production people, and of course, management and support staff.

KC: Tell us about your video production company and what this new chapter of your career looks like.

JG: My company is Legal Video Specialists LLC. We work with top-notch attorneys around the country in producing minidocumentaries about their clients who have been severely injured, or about families that have lost loved ones due to someone else’s negligence. These videos are used primarily before or during mediations, in order to convince opposing attorneys or insurance companies they need to fully compensate those victims. These videos are considered “state of the art,” and often lead to settlements in the tens of millions of dollars. Frankly, there’s nothing like the feeling you get when you help deserving people get their lives back on track after a devastating injury or death.

KC: What are a few of your go-to local spots?

JG: The fact is, we don’t go out a lot. A night at a Hooks game at Whataburger Field or an event in Downtown Corpus Christi is about it for us. We tend to stay close to home on Padre Island, and frequent the local Island restaurants.

When encountering adorable things, our brains release dopamine, a chemical that makes us feel happy. So, to give our readers a dose of happiness, we put out that famous call for the Coastal Bend’s cutest pets, and the community really came through. After sifting through 120 entry forms filled with photos of adorable pets, we narrowed it down to 25 finalists (even though we wanted to feature them all). Once we had that list, we turned the voting over to our readers to decide who their favorites were. From a playful Persian cat to a smart and protective mastiff, we present to you the six cutest pets in the Coastal Bend!

A Good Boy

Christopher has many dog-like characteristics. He loves to greet his family at the door when they get home from work, and he just loves to visit with guests. He’ll even carry his toys in his mouth to indicate play time. While most cats are territorial with their food bowls, Christopher will wait patiently until his two sisters are finished eating, and then he jumps in.

If He Fits, He Sits

Christopher loves to sit and peek through the back of kitchen chairs while viewing everyone in the house. He’ll prop his head up with one arm, or he’ll lay on his back and show off his cute tummy. Oh, but that’s not all – Christopher also loves to jump on your lap, even when you’re sitting on the toilet!

Q: TELL US A LITTLE ABOUT FERALS. A: FERALS stands for “For Every Rescue, A Life Saved.” It is a non-profit organization that focuses on reducing the overpopulation of stray and feral cats through advocacy, education, and the TNR (trap, neuter, release) method. Our goal is to save lives while making a difference in the welfare of the animals in our community. After meeting some convincing people who pushed me to go for the 501c status, we proudly announced our nonprofit status in November of 2019.

Q: HOW DID YOU DECIDE TO START FERALS IN THE COASTAL BEND?

A: Texas has the second-largest stray population in the country, so there is definitely a problem. More specifically, Corpus Christi has a huge feral cat problem that needs to be addressed. After living on the island for a few years, my husband and I moved inland and a feral cat begin to visit our backyard for food. You know how they say, “Never feed a stray; they won’t go away” – and she didn’t. After Harvey, she brought me her first litter of 4. After two more litters from this same mama, I decided that she had to be fixed. I started fixing all the cats that came to my property and reached out to nearby neighbors to see if I could fix their feral cats. After fixing 118 cats in my first year alone, I realized that this is a much–needed service for our area.

Q: HOW HAS FERALS EVOLVED OVER TIME?

A: In the process of thinking I would help the furry four-leggers, I realized I was also helping people. I firmly believe that TNR is the most humane way to manage colony cats. Euthanasia is not the answer. People don’t usually know what to do with these cats, so they call animal control, and sadly, most of these cats run the risk of being euthanized if they aren’t adopted. After meeting several like-minded folks and teaming up with other organizations, we have built a network to allow us to take in feral cats to be fixed for free or at discounted pricing. With the help of several community organizations and the support of generous donors, we have worked to create a name for the feral population

in Corpus Christi. While they may have no voice, we will be their voice and help to educate and promote awareness to the lives of outdoor cats and to provide a second chance for those that can be pulled off the street for adoption into “Fur-Ever” homes.

Q: WHAT DO YOU THINK IS CAUSING OUR STRAY POPULATION TO RISE?

A: Our community has created this problem – this is not an animal problem. Each pet owner and feeder is responsible for fixing/vaccinating their pets. Many are not doing this, and then later dumping them, which is adding to the already huge stray/feral cat population. One of the biggest problems is that many feeders try to befriend their colony, which puts the cats at risk. A feral cat will not compromise itself – meaning it will need to be wild to survive the street life. However, a cat that becomes domesticated does not need to be outdoors, as its guard is down against risks and predators.

Q: WHAT IS THE VACUUM EFFECT?

A: This is a huge problem! This occurs when a portion of an animal population is permanently removed from their habitat. Removal can occur by killing, being picked up by people, or a natural disaster, just to name a few. This results in a temporary dip in population levels. What people don’t understand is that even though these population levels decrease, the population was once high because there was shelter, food, and water, so in due time, other members of the same species will return to the area. From there, they begin to reproduce and we’re back to square one.

Q: HOW CAN PEOPLE GET INVOLVED TO HELP WITH FERALS?

A: At the moment, donations are the best way to help. As you know, nothing metal lasts, so we’re constantly going through our traps. Donations would also help with replenishing trash bags, potty pads, food, zip ties, odor ban, and tons of cleaning supplies. We’re currently looking to upgrade to a larger area. I work out of my home, so I want an area where I can eventually have a full-time vet to

bring more relief to the animals, and volunteers to help. I believe that TNR is the solution and having more vets will facilitate this process. I pray that Corpus Christi can get the vets it needs, as well as getting the community on board with fixing every animal.

If we could just put more vets and vet staff in the low-cost shelters and clinics, they could work through their wait list and then start to get to regular scheduled appointments to assist right when someone needs it – not weeks later when a mama cat has given birth and we can’t do anything for 3 months. It’s all about timing, and right now we have no time and no vets to help take care of this issue we face.

Q: WHAT IS SOME ADVICE YOU WOULD LIKE TO SHARE WITH THE COMMUNITY REGARDING FERALS AND STRAYS?

A: Don’t be a Feeder-Breeder! This will continue to add to the problem. To be part of the solution, the feeder also needs to help fix these cats. If you feed, be invisible – pick up your trash and extra food. Don’t leave more food than what the cats can eat, or you will be inviting other wildlife to partake in upsetting your neighbors. Remember if you do feed an animal for more than three days, the city determines it your pet, and you are only allowed six animals per household per the city ordinance.

If you find kittens, please leave them alone. Too many folks pick up kittens when the mom is probably around; she just left them to go eat, and will be back. Do not hang out where mom can see you or she will not come get her kittens. If you see one kitten in a place that is not normal, like in the middle of a road, for example, then it probably is not waiting for mom to return. Only in extreme circumstances would we suggest you pick up a kitten. Otherwise, leave them be and watch for mom to return. Alley Cat Allies suggest this trick: Sprinkle flour around the kittens, and if mom returns, she will leave paw prints. Fix cats sooner than later, so you don’t have to make the choice to terminate a pregnancy if you are against this.

Do Not Disturb

Pigs are very smart, and if given the chance, Pistol would love to prove it to you. He has a Pig IQ of 104, which is basically Albert Einstein in pig intelligence!

Pigging Out

Pistol loves grass, and would eat it all day if he could. He’ll basically eat anything that falls on the floor –including a Hot Cheeto that he loved. Once, Pistol climbed completely inside his food bucket, and was caught eating all the mini pig food pellets!

Cruise Control

Pistol loves going on car rides, because he knows they mean trips to visit family or shopping at pet stores and home improvement stores. Pistol is a social butterfly, but during the day, he stays busy rooting around his blankets and stuffed animals, or he enjoys naps on a heating pad.

Don’t wake Pistol up from a nap – he doesn’t like it! He’d much rather stay asleep, dreaming of yummy food and endless fields of grass to play in and frolic.

It’s Show Time

Get ready to find Pistol on “American Ninja Warrior,” because he’ll do anything for the ultimate prize –food! Porky Pig will narrate these adventures, and his kindred spirit, Kevin Bacon, will be in the audience, cheering him on! Mr. Clean

Contrary to popular belief, pigs are super clean animals. The only reason pigs roll in mud is because they don’t sweat, so the mud keeps them cool. Pistol was house-trained early on, and he’s never had an accident in the house. He proudly uses his litter box, or he goes outside if he prefers.

Tiny Tornadoes

Dusty’s cream-colored curls and long, silky ears are definitely eye-catching characteristics, but when those curls grow a certain length, they form tiny tornadoes throughout his entire body. As pretty as those tiny tornadoes are, Dusty does not enjoy having his beard or feet groomed!

Just a Chill Dude

This grumpy old man isn’t much of a TV buff, but he’ll surely bark at any doorbell sound coming from the TV. He’s super calm and relaxed, and you can catch him jamming out to “Tennessee Whiskey” by Chris Stapleton.

Running the Show

When Dusty was little, he loved to be chased, but he was tough to catch, so everyone made bets on who would be the lucky one! He loved it so much, that it’s all he looked forward to after his mom would get home from a long day at work. The adorable way he’d scoot his behind while running away made the entire experience fun and cute.

Grumpy but Lovable

Although he’s a grumpy old man who doesn’t like to cuddle much, Dusty will definitely curl up next to you. He is also very talkative with his needs; he’ll let you know exactly what he wants from you, whether it is food and water or he’s craving some play time.

Playful Pup

Dusty loves to run! He can run a good five miles with his mom. He also loves to play with his little squeaky ball, and enjoys a good piece of cheese for snack time.

Silly Genius

If Dusty had a celebrity doppelgänger, it would be Walter Matthau – because he’s silly, cute, and grumpy all at the same time. Dusty is great at doing basic moves, but he’d be a great contestant on “Is Your Dog a Genius?” because when his mom asks him to do something, he pauses to contemplate his next move and after considering his options, often follows through with his own independence.

SKYROCKETING ADOPTION RATES IN THE COASTAL BEND

The surge of the COVID-19 pandemic was lifechanging. We were quarantined in our homes, and our only human contact was over FaceTime or Zoom. During this time, feelings of loneliness were at an alltime high, and pet companionship was the cure. We sat down with Kristen Parris, marketing manager from the Gulf Coast Humane Society (GCHS), to discuss the skyrocketing adoption rates during the pandemic and just how much this affected the shelter.

In March 2020, when the first outbreak of COVID-19 hit the Coastal Bend, the GCHS closed its doors to the public, but after a couple of weeks, the staff noticed an increase in messages on social media inquiring about pet adoption. People were starting to feel lonely and disconnected from the world, and they were eager to revive that feel-good energy they were missing in their lives, so they sought out pet adoptions to fulfill that need.

When the staff learned of this need for companionship, they put their heads together to find the best way to help the community and the pets. The result – virtual pet adoptions! From searching for companions for their elderly relatives to finding the perfect virtual learning buddy for their children, adopters were eager to log in and see which pets were available, and in no time, the number of adoptions began to skyrocket.

In 2020, the GCHS had about 1,600 adoptions, which is a few hundred more than what it typically sees in a year. That increase really aided the shelter that

normally struggles to find room for the many strays that are brought in. It was beneficial for finding fur-ever homes for the animals, but also aided the community at large by helping to curb the overpopulation problem in the Coastal Bend.

Another successful venture that helped with adoption rates was the implementation of its pet therapy program, which opened in May. Since the shelter was only allowing a minimal amount of people in the facility with masks and social distancing, it wanted to do something extra for those at home who were unable to leave or wear masks. The pet therapy program brought the pets to those people, virtually, and allowed them to partake in the fun. The pet therapy program increased in popularity, and the staff was happy to bring smiles to anyone regardless of their situation.

The ultimate goal of the GCHS is to be a beacon of hope for the animals and the community, and while there was a lot of negative energy behind 2020, there was also a lot of positivity behind the success in animal adoption and the prevention of depression and loneliness. The staff enjoyed the surge in adoptions that brought smiles to the faces of every new pet parent, and they hope that this surge carries into 2021 and continues to be successful.

JEREMY COLEMAN

WHERE THERE IS THERE IS

In 2016, Jeremy Coleman began his journey to run for president of the H. Boyd Hall Chapter of the NAACP. Feeling passionate about helping to pursue political, educational, economic, and social equality for every person in the Corpus Christi community, Coleman saw an opportunity to influence positive change on the programs and events produced by the NAACP. Despite his decorated experience in community service and organizational transformation, it wasn’t yet Coleman’s time to lead the group. However, his commitment to being a part of the NAACP and connecting with activists locally, and across the world, did not waiver. Coleman began praying and preparing for his next opportunity to run again – and keep running until he achieved his goal. With the support of his pastor, and a family legacy of NAACP activism, Coleman again vied for the presidency in 2021 and won. Now, his sights are set on “implementing change and guiding the chapter in a new direction.” Coleman is excited and motivated; his unique perspective on youth and college-aged students being change-agents for diversity is vital to the continued growth of the NAACP. And he’s just getting started.

HOW IT STARTED

The National Association for the Advancement of Colored People, known predominantly by its acronym NAACP, has a 113-year legacy as the largest and oldest civil rights organization in America. Originally established in 1909 in New York City, the NAACP was formed by Black and white activists

coming together, largely in response to the racial injustices plaguing African Americans throughout the country. This was an interracial endeavor that aimed to seek justice for Black Americans facing horrific physical, social, and legal violations against their basic rights as human beings.

It didn’t take long for the efforts of the organization's founders to start spreading among other major cities across the nation. By 1913, the focus was on expanding NAACP’s local chapter presence, and by 1919, there were more than 300 active local branches, amounting to roughly 90,000 memberships; on April 4, 1919, the Corpus Christi branch became the 68th chapter, created and founded by H. Boyd Hall. Corpus Christi’s African American population was very small then, but they were no less discriminated against than the Black people in other communities around the nation. Given this small population, it was fertile ground for all members of the community, regardless of racial identity, to come together and fight injustices together – thus fulfilling the NAACP’s vision of multiracial membership.

Over the years, however, a number of political, social, and cultural shifts in America have changed the membership landscape across the board. In many chapters, more commonly in smaller, more rural towns, the chapters are sustained by the dedication of the Black community. Suffice to say, Corpus Christi remains an outlier in the midst of cultural climate change in that to this day, the H. Boyd Hall Chapter is populated by a diverse range of races, ethnicities, and socioeconomic statuses.

HOW IT'S GOING

The groundwork for a thriving NAACP branch here in Corpus Christi has been laid out through decades of grassroots campaigning and advocating by past leadership and members who felt passionately about equal rights for all. And it is this foundation that the organization’s new president, Jeremy Coleman, stands upon to lead the group into the future.

Coleman, who has replaced the NAACP Corpus Christi Branch’s long-time chapter head, Terry Mills, understands the magnitude of the footsteps in which he will follow.

“There is a legacy to uphold for the H. Boyd Hall Chapter of the NAACP, and the torch has been passed on to me,” said Coleman. “It's important for everyone to understand that before I took over the NAACP, I committed to changing the direction by providing programs for youth and college students, specifically for Black students. So this new phase for the local chapter of the NAACP simply means we will be doing what we are equipped to do: civil rights and the protection of everyone's human rights.”

In a sense, he sees his role as a way to bridge the gap between the past and the future. While there has traditionally been a way in which the NAACP has achieved positive impact in the community, Coleman sees the opportunity for more young people, and more Black people, to take leadership roles in the community.

As a native Corpus Christian and lifelong member of the NAACP, Coleman has been vocal about his desire to see more Black representation in political roles in the city. Creating more diversity in city-wide leadership roles not only allows for more equal representation at the highest levels, but for those

leaders, provides opportunity to create real, lasting change for their constituents. “As leaders, we are provided the awesome task to make impactful change in a person's life,” said Coleman.

Thus, a major initiative for the NAACP’s Political Action Committee will be finding those individuals who are active in the community and who are service-driven. He envisions those types of people will be the catalysts for moving the chapter forward.

And being service-driven isn’t just a requirement Coleman has for future leaders of the community, it is a passion that is ingrained in the new president, whose calling has always been serving the community. It was from this dedication that fueled his decision to run for the president position, coupled with fierce motivation by what he was seeing nationwide following the death of George Floyd.

Today, the H. Boyd Hall Chapter is funded through community support, as well as through the solicitation of local, state, and federal funding. One of its annual fundraisers is the Martin Luther King, Jr. Awards, which is a banquet to celebrate wins and accolades of NAACP supporters and members.

Operating on a rather small scale in comparison to other major U.S. cities presents an ideal opportunity for the local NAACP chapter not to solely focus on the promotion of equality for African Americans, but to extend those efforts to anyone, such as low-income residents, who may be affected negatively by discrimination.

WHAT’S ON THE HORIZON

On each of these fronts, discrimination and equal representation are battles that still need to be fought, and will continue to require the attention and support from organizations like the NAACP. But they can’t do it alone. Coleman feels empowered by the relationship the community has with the Corpus Christi Police Department, saying that he believes the community has a strong relationship with law enforcement and it is his mission to help in continuing that effort.

Coleman wants relationships with local authorities and government to be a precursor to making inroads with growing the NAACP’s presence in the Coastal Bend and promoting the knowledge that the organization is here and active in striving to abolishing discrimination by adding more diversity in places where crucial decisions, laws, and policies regarding our city are being made.

The foundation has already been set, reiterates Coleman, and now it’s time to get to work.

While the H. Boyd Hall Branch of the NAACP has seen many changes throughout its 100-plus-year history in Corpus Christi, Coleman said he is looking forward to catapulting the organization to new levels, while remaining true to its core values, as he humbly walks into the role as the new president.

GLENOAK THERAPEUTIC RIDING CENTER PROVIDES EQUINE-ASSISTED THERAPY TO SOUTH TEXAS

Horseback riding is not only a relaxing and de-stressing activity; it's also a great way to exercise. Depending on the level of intensity, the type of riding engages your pelvic muscles, adductors, hip flexors, quadriceps, and hamstrings. From trail excursions to trotting around a drill course, riders are required to engage their core muscles. In fact, horseback riding uses the entire body, making it a great form of exercise and a unique tool for therapy programs.

Not too far from the coast of Oso Bay rests a stable of horses at Glenoak Therapeutic Riding Center. The accredited equine-assisted therapy at Glenoak serves as rehabilitation for all ages with physical, mental, emotional, and cognitive disabilities.

Charlene Thomas, founder and an Equest Certified Instructor, said, “What we try to do is get [the rider] as independent as their particular circumstances allow them. We don’t address the disability. We address the ability.”

From muscular dystrophy, multiple sclerosis, and Down syndrome to cerebral palsy, hearing or vision impairment, paralysis, attention deficit disorders, autism, and more, Glenoak's certified therapeutic riding instructors and the Center's special therapy horses are the catalysts for miracles in handicapped lives.

Emphasized individual attention and motivation is both staff- and volunteerintensive, but the reward for every rider is directly proportional to the effort expended. Glenoak's philosophy challenges disabled riders to achieve their maximum potential by

helping them achieve the most complete independence that their circumstances will allow.

"I have one individual that comes to us, and he's so tight through [his pelvic area]. He was a twin and born with cerebral palsy," Thomas said gently. "What I do with him is lay him back down and put his legs around my hips as I'm seated backward on the withers of the horse, so that as we progress, the heat from the horse relaxes him. Because when he starts, he's [tense]. When we get going, and he's relaxed, he begins to flatten out [his back]. I'm then able to do arm extensions and leg extensions with him. He's happy because it's non-weight bearing for him, which it has to be, and he's getting all the movement from the horse throughout his body. That's just one way I improvise different techniques to maximize reaching their maximum potential."

Equine-assisted therapy provides an array of benefits, from strengthening and stretching muscles to coordination, balance, and fine motor activities. Riders are taken through a complex series

of movements that consciously and subconsciously utilize full-body training. As the horse rhythmically moves the body, this naturally improves posture, balance, and muscle control. This form of therapy also enhances mental function by developing spatial awareness and engaging concentration, sequential thought processes, and emotional articulation.

"Cognitive-wise, what happens in this situation, [riders] have an instructor telling them what to do. Then they have to process that internally and tell the horse what to do. So it's a three-step sequential process," Thomas said.

As riders experience independence, some for the first time in their lives, new abilities, self-discipline, and improved concentration nurture positive selfimage and increase self-confidence. Glenoak's program focuses on aiding children and adults to reach beyond the confines of their disabilities through the intervention of unique therapy and a remarkable team.

After many years of making the sixhour drive between their home in Victoria and their vacation home in Fredericksburg, David and Kathleen Edwards felt that it was time to make some changes and find a closer vacation home. David owned a condo in Port Aransas years ago and enjoys the serenity and family-friendly environment of the area, so the location was definitely a contender. When they came across the condos on the ship channel, they knew the waterfront location with the gorgeous views and relaxing atmosphere was the perfect site for their new vacation home. Luckily, the condo only needed minor refurbishing, not major renovations, so they let the layout dictate how they would incorporate décor, using the beachfront landscape as a backdrop.

Kathleen and David wanted to steer clear of vibrant hues. “When you lay down a color on your canvas to begin with, you’re almost compelled to continue,” says Kathleen. For this reason, she opted for a nautical color scheme, which didn’t necessarily dictate a specific shade, but more of an ambience. The neutrals and blues laid down would work with any supplemental color scheme, and changing out their décor over time would be easier. The neutrals in shades of ivory, cream, and white are soft enough to resemble the sand and contribute to a restful living area, while the different shades of blue offer the richer and more saturated tone of a modern coastal living space.

David also wanted to steer clear of common coastal décor that mimics the beach. Instead, he sought accessories that would set the tone for a nautical ambience to achieve a conventional yet comfortable space, accentuated by artwork Kathleen chose with oceanside references.

With the help of designer Susan Castor, David and Kathleen were able to bring their nautical design to life and ensure that their space gives off a comfortable and easy-going vibe, while still being stylish. The custom fabrics in a crisp navy blue and white palette

lend a simple, yet contemporary, theme to each room, while the splashes of coral and teal give the space a cool, coastal vibe. Kathleen enjoys adding rugs for warmth, so when David’s preferred oriental-style design didn’t match the nautical décor, they opted for a similar design in warmer shades to add depth to the blues and neutrals.

Being outdoors isn’t always an option in the South Texas heat, so an interior that showcases the gorgeous landscape is a major benefit. The condo offers a front-row seat of the coast through panoramic views and ambient lighting that varies based on the time of day. The dark colors from the nautical theme are accentuated by the natural light shining through floor-toceiling windows. To accommodate that view,

The kitchen was another area where the layout of the condo worked perfectly for their chosen décor. David wanted slate floors, which paired nicely with the dark gray countertops and the bright white cabinetry installed by Christi Palmer with Palmer Todd of San Antonio. The glossy dark blue tile backsplash, chosen by Kathleen, adds just the right splash of color.

They’ve only had their condo for 9 months, but David and Kathleen are enjoying how far their décor has come along, and are excited to see what new designs they can come up with in the future.

GROWING UP

Spacing, 12’ to 20’. Height, 8’ to 10’. Full sun, possible light evening shade. Figs grow well in any welldrained soil. Plant with generous compost and fertilize each spring with compost. Water until established and then as needed, perhaps one good soaking per week during drought periods. The key to healthy fig trees is native leaf mulch; mulch heavily (at least 6 inches) with native leaf mulch year-round.

PROFILING

Never plant fig varieties with “open eyes,” such as Mission, in the Coastal Bend. The fruit beetle enters figs through the eyes and destroys the fruit. Plant varieties with “closed eyes” (or mostly closed), such as Brown Turkey, Everbearing, Celeste, and Alma. Harvest figs in summer as soon as they ripen (no white, milky sap), for they will not continue to ripen once picked. Birds, squirrels, raccoons, and possums are major pests of fig trees.

Figs Are Forever

THE TASTIEST TREE THAT SURVIVES HOT AND COLD BY: JUSTIN BUTTS

After the epic freeze of February, fig lovers in our area enjoyed a delightful surprise. While most of the tropical and sub-tropical plants in the Coastal Bend froze to death, fig trees survived!

Figs are a deciduous, ornamental bush that can be pruned into a small tree. They are remarkably drought tolerant, and can bear the excruciating heat of Coastal Bend summers – and can also survive an intense freeze; even if figs freeze to ground level, they will regrow from the roots. If someone does not quickly cut down the shoot, a new fig tree will burst from the crack to dismantle the concrete and tower above the walkway, dropping figs to passersby.

Any plant that grows so hardily gets our attention. The fig, in addition to being easy to grow in any soil, produces one of the best-tasting and most nutritious fruits on the planet. Figs are a power-packed, healthy fruit that tastes delicious fresh, in pies or desserts, or dried. They are also one of the easiest superfoods to grow in your backyard.

Figs never need to be fertilized; chemical fertilizers cause figs to put on excessive leaves at the expense of fruit. However, to prevent nematodes, figs must be mulched deeply (at least six inches) throughout the year with native leaf mulch. Deep leaf mulch protects and enriches the soil while maintaining even soil moisture. Each spring, add two pounds of compost per plant beneath the leaf mulch.

If you like bushy figs, there is no need to prune the plant. You can even let suckers and cross branches grow, as long as you can reach in to collect figs. Or, prune the lower limbs of a fig bush early to create a tree shape. Removing lower limbs makes it easier to keep a thick mulch bed beneath the plant.

The only problem with figs is all the squirrels, coons, possums, and birds that will swarm your plants the moment your figs begin to ripen. This is not the worst problem to have, because these critters know what is good. Just make sure you get the figs first!

Thrift stores, estate sales, and garage sales are great places to find frames at a bargain. Look past the often dated art in them and focus on the frame and mat style. I often paint frames and mats to update them, which is a quick, easy DIY project.

Many popular museums offer free downloads of art in high-resolution format that you can have printed at a photo lab for a few bucks. I have a highlight about this on my Instagram (@monicabenavidez) with links to free museum art sources.

For a streamlined, polished look, pick larger frames in the same finish, so they take up more wall space and don’t look as visually cluttered. If you like the eclectic vibe, use an odd number of frames to create some balance and symmetry.

Gallery walls don’t have to be all about art and frames. Get creative with vintage plates, candle sconces, and mirrors to curate something beautiful.

Save your sanity and walls by creating templates using newspapers of each item you want to hang. Make note of where the hole(s) will go on the template and use masking tape to put it on the wall to see how it all looks before you use the hammer. A contractor that provides a lowball bid is probably cutting corners, not including all costs in the bid or worse desperate for work and in the end will not be able to complete the project within budget.

3: Provide 3-D renderings of your project so you can visualize what the space will look like after completion of the work

4: Possess a trustworthy reputation among customers and have positive reviews on Angie’s List (these reviews are verified) and with the Better Business Bureau and are they willing to provide you the names of previous customers to contact to ask about the client’s experience with the company? Can you establish a track record of success?

5: Carry professional insurance that protects you from liability? Ask for a copy of the remodeler’s insurance certificates to be sure?

6: Have an established presence in the community? How long has the company been in business and how long has the contractor worked in residential construction? What is the owners professional background?

Celeb rating - 50Years

Jim and Bam Benning married in Rushville, Indiana, in July 1952. Jim was an engineering student at Purdue University, Bam was studying Design at Indiana University. Mike, their first child was born in El Paso where Jim continued his electrical engineering training while an instructor in the Army’s Nike missile training center.

After his release from the military, Jim worked for a defense contractor installing radar equipment and training military personnel in the use and maintenance of the equipment. During this time, the family moved to Ohio, where daughter Ami and second son Andy were born, followed rapidly by moves to Michigan, Minnesota, North Dakota, Northern California, and upstate New York where youngest daughter Kathy joined the family. The family then moved to Baltimore and later to Prince Georges County, Maryland, which coincided with the beginning of Jim’s career with NASA. After several years at The Goddard Space Flight Center in Maryland, Jim’s career with NASA took the family to Guaymas, Mexico, and several years later in 1968 they arrived in Corpus Christi, Texas.

After years of working on ice encrusted radar fighting the snow and cold of upstate New York, the desert of western Mexico and subtropical climate of South Texas were a welcome respite. “I’m never living farther north than we are right now!” declared Jim shortly after arriving in Corpus Christi, “I think we are home.”

A few years later, as NASA was phasing out the obsolete chain of tracking station that circled the globe and permitted uninterrupted communication with the early orbiting spacecraft, Bam and Jim recognized that they were going to need a new source of revenue. They decided to open a custom picture frame shop.

Prior to this time, picture framing was done primarily at paint stores and similar venues, the concept of a store devoted to custom picture framing was relatively new. Do-It-Yourself custom framing was even more novel.

The Benning family spent the summer of 1971, at 5503 South Staples in the process of modifying part of an old building to fit their needs. They built walls, installed drywall, painted, built store furniture and counters, installed tile and carpet and built a store.

On August 23, 1971 The Frame Up opened for business. As daughter Kathy put it, “We drove to Houston, dropped Mike off for his first year of college, turned around and drove back and opened the store the next day.”

Any new business has its problems and The Frame Up was no exception. Original hours were noon to nine in the evening, giving Bam and Jim time to work outside jobs and keep the shop open late. Fortunately, the idea of installing a ping-pong table for the slow times did not need to be implemented. There was a policy that on a Saturday, if the proceeds for the day exceeded $200, the family would go out to eat, usually to The Black Diamond Oyster Bar or maybe Sizzler. Eleven-year-old Kathy became very adept at explaining to customers that no, there was not anyone there with more experience than she had, but she would be happy to get someone older to assist them if they preferred.

The time when Bam cut off the end of her finger with the molding frame chopper and was rushed to the emergency room by a customer who directed Jim to follow as soon as he had found the end of the finger. The finger section was reattached without further trouble.

Bam always said of the employees that she did not take them on so she could raise another set of children. The reality, however, was that she could never stop being a mom. Bam and Jim guided employees through marriages, divorces, births, and deaths. They helped them with college, stood up with them at Eagle Scout ceremonies, and basically made them family. Ex-employees would return years after leaving The Frame Up to start a career, just to say hello and have a cup of coffee with Jim and Bam.

The Frame Up celebrates its 50th anniversary on August 23, 2021. The shop is still going strong, operated by the second generation of the Benning Family. The Frame Up started as a small 900-square-foot shop but now occupies approximately 4,000 square feet of space in the same building in which it opened. With the largest selection of framing options in South Texas and the best trained and most experienced staff south of Dallas, The Frame Up continues its tradition of excellent customer service and exceptional design and production.

24 Hours in a Play

AN INSIDE LOOK AT THE RIALTO THEATER’S 24-HOUR PLAY FESTIVAL

There are 24 hours in a day. Usually, they’re split – and hopefully somewhat balanced – among sleeping, working, eating, grooming, running errands and personal time. But for the Rialto Theater, located in Aransas Pass, all 24 hours will be devoted to creating a production for their 24-Hour Play Festival happening this month.

Russ Walker, the director of the Rialto Theater, explained that writers and actors will come in on an all-call on a Friday night, then the writers will stay as late as needed in order to come up with a script. The following morning, the actors will meet with the writers, rehearse until 6:30 PM and then present the productions at 7:30 PM. The productions are about 8 to 10 minutes long, and can be anything from straight plays to short musicals. Walker said, “It’s something different to do in the area ... all the directors and people I know that operate local performing venues, I don’t know that anybody’s done this.”

He continued, “I know some people that have done it in the past, which are going to be a couple of our writers that are going to work with us. It's something different, and something that’s just a lot of fun.”

For local theater, Walker said he hopes the festival will draw more actors from different places. Being from Aransas Pass, “sometimes we’re considered the other side of the bridge, which is interesting to us because people won’t drive 20 minutes across a body of water to come to the productions,” he said.

As for the writers, the pool will include Mariah Massengill, a graduate from Texas A&M’s theater department who now attends the University of Houston in Victoria. “I've done similar festivals in the past, so I'd be happy to be a part of it … [Walker is] planning on bouncing some ideas off of me for that. But I'm excited to see what we can come up with, and I think it's a really good idea for the community here,” Massengill said.

During her time at A&M, Massengill participated in a similar festival, a studentrun, -written, -directed, and -produced play festival. “I think it’s really great, it’s a more casual attempt to get into writing or trying to get people involved, where they might be a little [less] intimidated at the concept of it. So I’m hoping the same goes for here at the Rialto Theater,” she said. “For me, as a writer, I definitely go into these things with some sort of my personal experiences and things I know that I would like to talk about in some type of way. They follow me everywhere I go in my writing. And so I'm sure something will work its way in.”

Massengill said she isn’t sure what she’ll be writing about, as typically the subject matter is revealed on the day itself, so that everyone is on an equal playing field. “That’s part of the fun; just seeing what you’re handed – and sometimes it can be pretty wacky – and just making it work,” she said.

Overall, the goal of the festival and the productions it will create is to further explore the relationship between writers and actors, and to push people out of their comfort zones. With the hope of encouraging locals to tap more into their theatrical side, The Rialto’s 24-Hour Play Festival will not only serve as a vehicle for the theatre to interact with the community in a creative way, but will also help spark innovative and imaginative

along the way.

The Chamberlain and Its Beacon

From exquisite furniture to thoughtful amenities and refreshing areas bolstered by meticulous spatial organization, The Chamberlain is elevating the standard in Corpus Christi. Frazier Companies will establish its home base on the top floor, underscoring its commitment to Corpus Christi and the uptown district, and three floors are currently available for tenants.

The magnum opus of The Chamberlain is definitely The Beacon, a rooftop terrace with spectacular views of the bay and Downtown Corpus Christi. To maximize the use of such a perfect backdrop for business or celebratory events, The Beacon will serve as an event space available by reservation to tenants and their guests. Named for the original 1857 Corpus Christi Lighthouse that stood in this very spot, once again The Beacon will shine on the shore for a new generation.

When Frazier talks about the importance of this endeavor and what he hopes to bring to the Coastal Bend, his words reaffirm belief in our coastal city's potential – especially with residents

willing to invest their time and passion into such projects. Frazier mentions the opportunity in Corpus Christi and how the spaces in The Chamberlain are unrivaled in the area. "We are leading the charge to show what people deserve in Corpus Christi," he said.

The Chamberlain will be an exciting project to watch unfold, from its design and locale to the wave of growth it can hopefully bring by being a centerpiece as Downtown Corpus Christi continues to evolve and develop. Efforts like those from Frazier Companies help provide iron into a once anemic part of town. The Chamberlain will maintain the legacy of the once-forgotten lighthouse as the building continues to be a significant landmark overlooking the bay.

THREE SPICY RECIPES TO IGNITE THE PEPPERS OF SUMMER

When I watched in horrified fascination as my grandpa doused his eggs with Tabasco sauce, my curiosity at people’s obsession over spicy foods began. Fast forward to now and the hot temperatures of summer, which produce the hottest peppers of the season. Every year around this time, I wonder: Why do some crave the piquancy of ghost peppers, while others (me included) balk at a dash of chili powder?

Science offers a compelling answer. According to sociologists, the same folks who seek out rollercoasters and skydiving are often those who prefer eye-watering, sweat-inducing peppers. These thrill seekers love the endorphin rush that follows after a seedy jalapeño triggers the pain receptors on their tongue.

Further stirring of the proverbial pepper pot reveals that women are more likely to crave this culinary “kick,” while men tend to choose the five-pepper plate for attention and bragging rights.

While there is no heat-seeking gene to help overcome your piquant qualms, taking a cue from spice-loving cultures can help. In countries like India and Mexico, repeated exposure to peppery foods from an early age helps indoctrinate youngsters to enjoy the spice of life.

Kids in Mexico suck on chamoy lollipops after school, while children in India are introduced to their mom’s curry in infancy. Thus, topping your entree with a few drizzles of Red Hot can’t hurt your chances at tolerating a chili pepper challenge in the near future.

Then there are those of us who like our mucous membranes clear … Since we may not delight in runny noses or a scorching head rush during dinner, we can always save any fiery ingredients until the end of cooking or as a condiment at the serving table. It’s arguably more enjoyable to watch our daredevil dinner companions squirm and sweat, than it would be to eat a mouthful of blazing peppers.

RECIPE

Gumbo

Serves 8

PREP TIME: 10 minutes

COOK TIME: 1.5 hours

INGREDIENTS:

2/3 cup bacon drippings

1 cup all-purpose flour

1 bell pepper, with pith, stem and seeds removed

1 medium onion, with stem and skin removed

4 garlic cloves, with stem and skin removed

2 stalks celery

4 jalapeños, with stem removed (optional)

1 lb link andouille sausage

16 oz lump crab meat

2 lbs shrimp, peeled and deveined

1 quart chicken stock

2 tbsp Cajun seasoning

2 tsp salt

1 tsp thyme

2 bay leaves

DIRECTIONS:

In a large dutch oven, heat bacon drippings over medium heat. Once liquid and beginning to shimmer, whisk in flour. Stirring frequently, continue to cook until roux turns a deep caramel color and develops a nutty fragrance, about 30 minutes. Reduce heat if necessary to ensure mixture doesn’t burn.

While roux cooks, combine vegetables in a food processor or blender. Pulse/blend until minced. Add mixture to prepared roux and cook until vegetables are tender, about 10 minutes. Add in remaining ingredients and stir well to combine. Simmer on medium-low heat for 45 minutes. Serve hot over steamed white rice.

PREP TIME: 5 minutes

COOK TIME: 70 minutes

INGREDIENTS:

1 48-oz bag chicken wings

1/4 cup cayenne pepper sauce

1/4 cup sriracha

4 tbsp butter, melted

1 tbsp honey

1 tsp paprika

1/2 tsp garlic powder

1/2 tsp chipotle chili powder

DIRECTIONS:

Preheat oven to 375ºF. Lay wings in a single layer on a parchment or foil lined baking sheet. Cook wings for 55-60 minutes, or until juices run clear. Combine remaining ingredients in a medium-sized bowl. Brush sauce liberally on wings and enjoy with blue cheese or ranch dressing.

PREP TIME: 5 minutes

INACTIVE PREP TIME: 4-24 hours

COOK TIME: 55 minutes

INGREDIENTS:

2 lbs beef stew meat

2 tbsp olive oil

1 medium onion, chopped

1/4 cup tomato paste

1 cup beef broth

2 tbsp red wine vinegar

1 tsp sugar

1 tsp salt

1/2 tsp ground black pepper FOR MARINADE:

3 tbsp red wine vinegar

5 dried red chili peppers

8 cloves garlic

1 tsp fresh ginger, grated

2 tsp coriander seeds or 1 1/2 tsp ground coriander

1 tsp turmeric

1 tsp cumin seeds or 3/4 tsp ground cumin

2” cinnamon stick or 3/4 tsp cinnamon

1 tsp mustard seeds or 3/4 tsp ground mustard

1/4 tsp cardamom pods or 1/8 tsp ground cardamom

1/4 tsp peppercorns or ground pepper

4 whole cloves or a large pinch of ground cloves

DIRECTIONS:

If using whole spices, bloom the spices in 2 tbsp olive oil over medium heat for 3-4 minutes, until fragrant but not browned. Transfer whole spices to a food processor and blend until very fine, or crush into a fine paste using a mortar and pestle. Combine spices and remaining ingredients for marinade, along with stew meat, into a large Ziploc bag. Refrigerate for at least 4 hours, or up to 24 hours.

Heat olive oil in a large pan over medium heat. Once oil begins to shimmer, add onion and sweat until translucent, about 3 minutes. Add marinated beef, salt, and pepper, and cook an additional 15 minutes, or until browned on all sides. Finally, add remaining ingredients and heat to a boil. Reduce heat to a simmer, and continue to cook until meat is tender, another 30 minutes. Stir vindaloo occasionally and add additional broth, as necessary, to maintain desired sauce viscosity.

To be free of any cares, swaying in an Italian breeze, and sipping a cocktail in a hammock: that is the L’Amaca, a curated escape in a glass, and a fresh introduction to the craft revolution at Katz 21’s nightspot, Club 21.

When professional mixologist Devin Hoefling returned to the Coastal Bend, he brought back a few tricks with him from his time as a craft bartender in Houston. L’Amaca, a cognac-based newcomer to the Club 21 cocktail list, is his original recipe that pulls in different influences from his experiences. Like a lot of great creations, it started simple: with a good shrub syrup.

“This drink was one I made up while in Houston. Up there, we had a nonalcoholic drink program, and we made shrub sodas. So, I wanted to incorporate that into a cocktail,” Hoefling says. “Shrub syrup is basically one part of juice, sugar, and vinegar. It’s refreshing, it's fruitforward; it’s different, but it’s a really, really good ingredient.”

While cognac may typically be overlooked as a cocktail spirit, the L’Amaca brings out the bright side of this oaky-aroma brandy. When combined with high-quality meletti, a good solid

ReTooled breathes life into the unexpected subject of tools by profiling 28 visionary artists from the Hechinger Collection. coconut-vinegar shrub, a little lemon kick, and a dash or two of flavored bitters, this cocktail sips as easily as kicking your feet up in that hammock and feeling a little tipsy bliss.

“It’s like looking over at the Mediterranean, just chilling,” Hoefling laughed. “That’s the garnish, the little lemon peel up with the thyme sitting across—that’s me, chilling on that hammock.”

Balancing out different tastes and introducing new ingredients is Hoefling’s specialty. Making a fresh, easy-to-drink cocktail that also introduces the sipper to something they typically wouldn’t try otherwise is how you trust a bartender for a good experience.

“My goal for Katz at this moment, as far as getting all these new drinks in and our bartenders trained, is to introduce people to these new spirits and into cocktails that may be new to them,” Hoefling said. “It’s not only the bartenders expanding their skills, but a guest is able to learn too; like, ‘What is this? Why are you putting this in that drink?’ That way, we can give them a new experience as well as a story behind every cocktail.”

Besides the L’Amaca, a great refresher for South Texas heat waves, the Katz 21 bar crew is releasing fresh, exciting new cocktails all season with a focus on unique spirits and their unpredictable pairings.

Asian Sensations at Oyshi

Oyshi Sushi is a fresh, inviting sushi spot with a revitalizing take on Asian-style cuisine. With a diversified menu and an ever-growing sushi list, its three locations are welcome to anyone who wants to try something new.

Joining tradition with culinary modernity, Oyshi Sushi by Sith has offered a unique dining experience to the Coastal Bend since opening its doors in 2013. The venture began in its Portland location, and continued into Calallen, then on to the Southside of Corpus Christi. Since then, the sushi and Thai spot has consistently introduced locals to new flavors.

Besides being known for its synergetic sushi collection, Oyshi specializes in high-quality Japanese and Thai inspired food. The kitchen’s dishes vary from spicy Mongolian to different hibachi-style dishes to traditional sashimi preparation.

The salmon mango curry is from the original menu created by owner Sith when he and his wife came to the States from Laos and experimented in the dining scene. Justifiably, it stuck—and now remains a local favorite, or a delicious way to introduce an expanding foodie to some really good authentic curry.

“The salmon mango curry is a sweet and spicy dish; it all starts with the red curry, which is homemade with our own

spices,” said Southside manager Carson Nemeth. “A lot of people like to mix white rice into the curry—it kind of soaks it all up nicely.”

For being one of the most popular plates, this one sure is a looker: a beautifully pan-fried salmon resting on a thick, warm blanket of curry, accompanied by fresh cut mango cubes and sliced avocado, in a plate big enough to eat with your eyes. The sweet mango and the spicy coconut milk-based curry flavors dance with each other, and the salmon gives up so tenderly to a chopstick.

At Oyshi Sushi, sometimes customers have ended up as the best collaborators. Alongside the original Oyshi creations, the extensive sushi menu is joined by rolls that ended up being really tasty customs; that’s the origin of the Christie, the James, or the Spicy Diane. “We have over 50 rolls on the menu we created, and over 20 that were created by our customers and friends,” Nemeth said.

Typically, the delicious dishes at Oyshi come from innovation; this is how the kitchen came up with one of its new appetizers: shotgun shells, a hot new take on the classic crab Rangoon.

Knitting for a Purpose

In talking about the role Corpus Christi played in the war effort during World War II, the conversation is often centered around the more than 35,000 pilots trained at NAS-CC and its airfields. But like cities across America, there are ample stories of everyday citizens pitching in, too.

During German bombing campaigns in the United Kingdom in 1940 and ’41, more than two million homes were damaged or destroyed. “Bundles for Britain” was born in New York City as people across the world raced to send aid to these civilians. This was prior to Pearl Harbor, and people of all ages looked for a way to help ease the suffering of America’s allies abroad.

For Corpus Christi, that meant a dedicated group of volunteers staffing an office daily to collect

donations, distributing knitting yarn to those crafting new garments, mending and cleaning used bedding and clothing, and coordinating the shipment of the packages by sea from Houston. By the end of July 1941, 83 shipments had made their way from Corpus Christi to Britain. Work on Bundles for Britain continued until America entered the war after Pearl Harbor, when hundreds of men crowded the military recruiting offices on Dec. 8, and focus shifted to supporting them and their families at home.

For a generation growing up during wartime, Bundles for Britain was one way for their skills to be useful to those in need, and these Girl Scouts and others across the Coastal Bend rose to the occasion.
