Q: If heading out for a staycation, what would be your one must-pack item?
AG: This might be a bit of a cop out, but it would have to be my camera. I love capturing new places, whether that’s the architecture of a city or town or the beautiful nature views of wherever I’m visiting.
JC: Why, the latest issue of The Bend Magazine, of course! If I am going on a staycation, I definitely want to take advantage of the extra downtime and catch up on my reading.
LA: Since a staycation in the Coastal Bend has to include going to the beach, a musthave for me is some COLD water. Don’t be like young me thinking a small bottle of water will hold you over. It won’t. Can’t be caught getting thirsty under the hot Texas sun.

I recently read a New York Times article titled “The Virus Changed the Way We Internet.” The article was from last spring, but the contents led me down a Google rabbit hole, where I discovered the pandemic drove the peak internet traffic growth rate to 47% … and it had been predicted to be just 28%.
This time last year, you could virtually visit just about any place you wanted to: Video tours of museum exhibitions, Facebook and Instagram Lives for virtual pet therapy, the list goes on. I remember coming across a virtual beach sunrise experience on social media at one point, and thoroughly enjoying it. Maybe even tricking myself into thinking this was better than actually sitting on the shore, viewing the picturesque scene in person.
While the drastic internet increase makes complete sense, it still leads me to think that after a year of being more plugged-in than any of us have ever been, a moment to unplug –like really unplug – is long overdue for us all. I no longer want that picturesque beach scene to exist solely within the 13-inch area of my laptop screen; I’m longing for the real deal. That’s where this issue comes into play.
Escape, retreat, getaway – these are the type of words we use when referring to vacation. It’s only natural to long for a departure from the mundane and habitual nature of everyday life, especially after only doing so virtually for so long. Luckily for us Coastal Bend natives, the ability to achieve such a thing is really just a quick drive away.
The staycation possibilities in our region run the gamut from modern and luxury beachside resorts to no-assemblyrequired tent cabins that are really more glamping than camping. The best part? You can experience a swoon-worthy change of scenery without driving more than about 45 minutes. Whether you’re looking for the chance to reconnect with your significant other, spend quality time with your family, recenter yourself, or simply have a day to spare and need a change of pace, staycation options in the Coastal Bend abound on page 32 in “Staycations: Discovering Local Getaways.”
In this issue, you’ll also find – similar to the theme of greatness lying right in our own backyards – stories ingrained in the concept of community and local culture. In “All For One and One For All,” on page 44, writer Jessie Chrobocinski explores the history of the League of United Latin American Citizens as it celebrates 90 years of service, and how its roots are deeply ingrained in Corpus Christi. You’ll also learn about Dr. Tammy C. Francis, a visionary set on bringing justice, equity, diversity, and inclusion to community conversations. You’ll discover a children’s opera aiming to teach the importance of conservation and sustainability, too.
I always like to think of The Bend Magazine as a reprieve for our readers; a way to unplug in its own right. So by the end of this issue, whether you’re loading up the car for an epic staycation or have simply managed to not look at your device for a couple of hours, I hope that you feel a sense of renewal. After all, sometimes when you disconnect something, plugging it back in means it will run a little smoother – even you.

Q: Aside from creating beautiful smiles, what is a passion of yours?
A: One of my greatest passions is surfing. I started surfing while attending dental school in Southern California, I have been hooked ever since. Recently I have started shaping a few surfboards and had an article I wrote in a surf publication.
Q: What attracted you to South Texas?
A: I am originally from a small town in Oklahoma. Gaining my passion for surfing I wanted to live by the coast and South Texas happens to be the closest coast to my hometown in Oklahoma. It gives me proximity to family and also allows me to live at the beach.

A DEEPER LOOK AT THE NUECES CENTER FOR MENTAL HEALTH AND INTELLECTUAL DISABILTIES

aving peace of mind is always important, no matter what stage of life you’re in. This past year managed to take so much from communities around the world. From establishments closing doors to many individuals losing their jobs, the pandemic’s effects have left many people still in recovery.
HThe Nueces Center for Mental Health and Intellectual Disabilities (NCMHID) is one of the many organizations that have helped citizens cope with the effects of the pandemic – and, well, life in general. During every stage of life, this center makes sure that members of the Coastal Bend community have all the utilities they need to get their lives back on the right track.
“I think one thing we’ve done a good job of over the past few years is trying to get the word out of the services we provide and making sure we provide that outreach, and we’re going to continue to do so,” says CEO Mike Davis.
When patients seek treatment from the NCMHID, there are more than 30 programs that provide optimal care and guidance. Operations Director Mark Hendricks oversees these programs to make sure patients are receiving the best possible care.
“We want them to know that recovery is possible. At the end of the day, they do not have to be defined by the malady they have experienced, whether that is bipolar disorder, major depression, or anxiety,” Hendricks says.
“I think everyone realizes that it’s not just a certain group out there, it’s pretty much all of us in the same boat together,” Davis adds, pointing out how common mental health issues are within the community as a whole.
While the center offers many programs to help patients, some serve more specific roles than others. The Jail Diversion Program, one of three programs started in coordination with the county in 2018, aims to minimize the number of arrests throughout the city for those awaiting adjudication.
“The program focuses on us identifying those individuals in collaboration with the jail staff, working with the district attorney’s office to determine the individual’s eligibility for diversion,” says Hendricks. The program aims to minimize arrests so patients can receive the treatment they need to become stable citizens.
“Generally, within six months to a year if they are successful, then those charges are dropped. It basically gives people who need access to mental health care access to that care, rather than taking a purely punitive approach,” Hendricks says.
While the center has many programs for adults, its reach expands to children and young adults as well.
“We have an entire division of our organization dedicated to serving youth and adolescents, and those services are provided primarily in schools throughout the community,” Hendricks says.
The center offers specialized mental health first aid training for educators and counselors across many levels of education, from primary all the way to collegiate level.
While many individuals suffer from mental health issues, the Nueces Center for Mental Health and Intellectual Disabilities has shown just how dedicated they are to serving our community. Through outreach, education, and volunteer service, this center has paved the way for mental health awareness in the Coastal Bend community for years to come.

KC: When did the entrepreneur element of your life come into the picture?
TCF: In 2016, I made the decision to do more of what I am meant to do and impact more people. I had done consulting several years before then, but it was fall 2016 when I strategically began to work on my vision and plan to impact change globally. As an entrepreneur and strategist, I help purpose-driven leaders move in the direction of more and prepare for what’s next by providing the tools and strategies needed to plan and live on purpose in life and/or business. I also offer goal setting/vision sessions, purpose planning workshops, and conscious connections retreats. Additionally, I support Black women on their journey to earning doctoral degrees or just wanting to advance in their careers. I even have a podcast, “Journey Toward More” available to encourage and inspire.
KC: Self-awareness and selfdevelopment are two key components to a lot of your work. Why do you think working on those aspects of ourselves is so important?

KC: Let's start with where you're from and how you got to where you are now.
TCF: I am from Corpus Christi. I am affectionally known as Dr. Tammy, the Catalyst. I am a proud daughter, granddaughter, sister, and mother. It is because of all my family and my ancestors that I am here. They are my inspiration and motivation for doing all that I do to be a catalyst for change, empower others, and build generational wealth.
I have been an educator for more than 20 years. I taught at the secondary level for 10 years, and it was during that time I pursued a Ph.D. in Curriculum and Instruction. Now, I help adults improve their reading and writing skills as well as their ability to be successful in college and life. I offer my services as a consultant and professional developer, and support educators in the secondary and postsecondary classroom.
TCF: In order to create change in the world, we must be self-aware. Selfawareness is not about what you like and don’t like; true self-awareness is not only to recognize those things but also our ability to understand our impact on others. We can’t do that when we don’t know ourselves and seek to learn more about ourselves; self-development.

KC: You actually have a global, online reading community called Women Aspiring for More. What was the inspiration behind that group?
TCF: I'm a literacy educator and advocate. I wanted to do what I do in my community on a larger scale, so I decided to open it up to the world, specifically women who need encouragement and inspiration from other like-minded women. Since founding Women Aspiring for More four years ago, I have expanded again. In 2020, I established Catalyst 4 Change Global Reading Community to include purpose-driven men, because I have had so many men also want to join us during the pandemic.
Women Aspiring for More and Catalysts 4 Change Global Reading Community focus on pushing you toward “what’s next” and equipping you with the tools, strategies, and resources to do so. They are also personal and professional development book clubs, where we read nonfiction books around the topics of mindset, empowerment, self-care, leadership, collaboration, encouragement, inspiration, business, financial literacy, and so much more. We choose a book and speak about the topics, themes, and/or ideas in the book during our discussions.
KC: Let's talk about your nickname "The Catalyst." How did that come about and what does it mean?
TCF: People would always ask me what I do and to describe it. The best way I would do that was use the metaphor of being a catalyst. The person who precipitates change by offering tools, strategies, and mindset work to move in the direction of more and prepare for what’s next. I help purpose-driven leaders get unstuck or figure out what’s next. We clarify the vision, create an action plan,
and establish tasks to execute. When they finish their work with me, I help them identify content or subject matter experts to help with the next phase of their journey toward more.
KC: You're active in several community organizations and always have been. What would you say is the importance of giving back to your community in this way?
TCF: When it comes to service and serving, my philosophy is simple: Leave a lasting legacy by serving and impacting others. I am only as successful as the people I help. If I can impact and inspire one person to affirm their greatness and help them on their journey, then I have left a legacy; I have been successful; I have made my contribution to the world during my time here on Earth. Of course, my goal is to help millions, not just one, on their journey toward more.
KC: Which leads us to the TEDx series. Let's talk about TEDxCole Park, which you co-founded with Liza Wisner and are the curator of. How did this event come about and what exactly is it?
TCF: Liza Wisner had the vision to host a TEDx event in Corpus Christi. She applied for the TEDx Cole Park license. She is a real visionary. Liza put out a call for people to help with the event; I responded and attended the initial planning event. When she asked for a volunteer to serve as curator for the event, I found myself saying, “I’ll do it!”
TEDx Cole Park is one of many TEDx events planned and coordinated independently, by a local community, under a free license from TED. In the spirit of TED’s mission, “ideas worth spreading,” the TEDx program helps communities, organizations, and individuals produce TED-style events locally around ideas or themes relevant to the local community. This year’s theme is J.E.D.I: Justice. Equity. Diversity. Inclusion.
KC: Why were you drawn to those four words and how are they incorporated into the event series?
TCF: This year we are exploring ways our community can be JEDI advocates
by eliminating barriers, practicing equitable access to resources – including people from different backgrounds – and amplifying the voices, perspectives, and styles of those silenced.
As an educator, researcher, and scholar, my work has always been centered around these four pillars and the idea of freedom. In addition, the events during this past year in our country have increased the necessity to address inequities and bring injustices to the forefront. It is impossible to discuss or target one of these ideas or pillars without addressing them all. Each pillar impacts the other and how effective we are at implementing it and impacting change. It is time to have courageous conversations around what is happening to marginalized people and communities. Therefore, it was our idea to use this event as a way to begin those conversations together. The TEDx speakers will be addressing these ideas within their talks based on their perspective, their industry, and personal experience.
KC: By the time this issue comes out, the May 1 event will have just happened. What do you hope comes from the event and will there be more in the future?
TCF: It is my hope that this will be a catalyst for courageous conversations in our community and inspire people to take action toward dismantling inequities in whatever space they occupy and have influence. It is my hope that folks are more conscious of their biases and inequitable practices, and work to create more inclusive environments. And yes, there will be more TEDx events in the future. It is our hope to host these regularly, so stay tuned.
KC: What are your favorite local businesses to support?

It’s a sunny Saturday morning and you suddenly find yourself with an itch to get out and experience something new. Maybe you don’t have time for a full weekend getaway, but the travel bug is real and has made its presence known. The perfect solution? A daycation. Start a group chat with your closest friends or hit the road solo. Regardless of the number of passengers in the car, we’re headed to Rockport for the day.
Once you’ve made it into town, a pit stop at Rockport Daily Grind first on our list. The local coffee shop packs all the personality of this coastal town and serves caffeinated goodness via locally-roasted beans. Owned by Michell Mock-McMahon, this spot also offers small bites to help in your fueling process.
What would a daycation be without at least an hour spent basking in the sun at the beach? You guessed it, we’re heading to Rockport Beach, Blue Wave certified as clean, healthy, and environmentally well managed by the Clean Beaches Coalition. But first, a fully-stocked beach bag is a must. Deidra Ciriello and her husband Lowell Rothschild own Italian Cowboy Food and Provisions in Rockport, a modern Italian market specializing in Italian wines, cheese,
antipasti, imported and domestic artisanal pantry provisions, and more. Grab all the makings for a delightful beach picnic and then head out! You’ve gotten a good amount of UV rays, and around 2 PM or so, the afternoon slump begins to settle in. That’s where craft coffee house and beer pub Quirky Birds Coffee Bar comes into play. Whether your midday pick-me-up comes in the form of java or alcohol, they’ve got you covered before moving on to the rest of your daycation fun.
Now, you’re prepped and ready to explore Rockport’s main attraction: arts and culture. The rest of the day is dedicated to browsing museums and galleries in this quaint beach town nationally known for its arts community. Our tour begins with the Rockport Center for the Arts, the hub for all things arts and culture in town. Throughout the month of May, you’ll find exhibitions such as Richard W. Nine Decades of the League of United Latin American Citizens

ecades of history rife with immense struggle can be found in the lead up to the creation of what is now one of the nation’s oldest and largest Hispanic civil rights organizations. In an effort to celebrate the League of United Latin American Citizens’ 90 years of service, we must first look back at how, and perhaps more importantly why, the organization was founded in the first place.
Concluding the Mexican War, the United States annexed a third of Mexico's territory, inheriting nearly 77,000 Mexicans as U.S. citizens. For generations, Mexican-American citizens were targets of prejudice, resulting in overt acts of discrimination and segregation, including infamous signs reading "No Mexicans Allowed" posted on all fronts.
Mexican-Americans were disenfranchised and unable to vote, and many could not pay voting taxes. Professional jobs were frequently denied because most Anglo-Americans perceived Hispanics as lazy, poorly dressed, dirty, ill-educated, and likely to be criminals. Mexican-American children often didn't go to school, as they spent most of their time helping their family earn wages for food and shelter. Children fortunate enough to attend school had to go to segregated schools known as "Mexican schools," which were institutions in deplorable conditions.
Specifically, in Texas, discrimination reached extreme levels that brought together Mexican-Americans to create organizations to defend themselves. Among them were three leading organizations: the Knights of America, the Corpus Christi Council of the Sons of America, and the Latin American Citizens League.
A local businessman and leader of the Corpus Christi Council of the Sons of America, Ben Garza, brought a group of educated Latinos together and formed a
council in Corpus Christi under one title, objective, and constitution – United Latin American Citizens, later changed to the League of United Latin American Citizens. In 1929, the first-ever uniting convention took place at the Obreros Hall in Corpus Christi. The motto "All for One and One for All," proposed by J.T. Canales, became the basis for future LULAC pursuits.
Today, the organization stands as the oldest and largest active Latinx political association in the United States, with more than 135,000 members in 37 states (including Puerto Rico), and four active councils in Corpus Christi.
Former Corpus Christi LULAC Council #1 Historian Dr. Cynthia E. Orozco is the daughter of Mexican immigrants, a historian, writer, filmmaker, museum consultant, and a two-time Ford Fellow. Dr. Orozco's extensive and impressive knowledge of LatinAmerican and Hispanic women’s activism enabled her to co-edit Mexican Americans in Texas History and Latinas in the United States: An Historical Encyclopedia. As a research associate at the Texas State Historical Association (TSHA), Dr. Orozco published 80 articles on Texas history for the Handbook of Texas, a digital state encyclopedia developed by the TSHA.
One of her published entries shares the vibrant history and context behind the League of United Latin American Citizens.
LULAC was "organized in response to political disfranchisement, racial segregation, and racial discrimination. It responded to bossism, the lack of political representation, the lack of a sizable
independent Mexican-American vote, jury exclusion of Mexican-Americans, and White primaries in such places as Dimmit County," Dr. Orozco wrote.
"It also dealt with the segregation of public schools, housing, and public accommodations. It attempted to solve the problems of poverty among Mexican-Americans and sought to build a substantial Mexican-American middle class. It has persisted, despite occasional acts of intimidation from law authorities."
For nearly 100 years, LULAC has been credited with the formation of critical advocacy efforts, including a veterans' committee to address Hispanic G.I.s’ rights, which later became the American G.I. Forum organized by LULAC member Hector P. García. The Ford Foundation grant established the Mexican American Legal Defense and Educational Fund, the most significant employment agency for Hispanics in the United States. LULAC's efforts also focused heavily on school desegregation efforts and education in general, awarding its first scholarship in the 1930s. By the ’70s, LULAC National Education Service Centers and the national scholarship fund were established.
In the Handbook of Texas, Dr. Orozco continues, "In the 1940s, LULAC member Edmundo E. Mireles promoted the Spanish language teaching in Texas schools, and worked with the Federal Employment Practices Commission to open up jobs for Mexican-Americans in the defense industry. LULAC members were also involved in Hernández v. State of Texas, which gave Mexican-Americans the right
to serve on juries. LULAC supported the Texas farmworkers' march in 1966 and endorsed the Equal Rights Amendment in 1974."
LULAC's civic ideology encompasses liberalism, individualism, support of freemarket capitalism, anticommunism, and United States patriotism. Its success and longevity are partially due to its programs that focus on helping children, the impoverished, and the elderly. Though LULAC originated as a refuge for Latinx communities, it is established to help all communities suffering from injustice nationwide. Today, the growth of diversity from age and communities to races and gender empowers LULAC to continue supporting as many groups and individuals as possible.
LULAC Council #1, the Founding Council whose origins are rooted in Corpus Christi, has proudly made strides over the past decades on the idea of helping those in need, working to advance the economic condition, educational attainment, political influence, housing, health, and civil rights of the Hispanic population. Made up entirely of volunteers, Council #1 is communityoriented, advocating for those in need. Surrounding it are LULAC Council #4869, 4-Star Council, the Tejano Council, and LULAC Para Todos LGBTQ.
President of LULAC Para Todos LGBTQ Eric Holguin says, "As years have passed since the initial formation of LULAC, we've seen the foundation and what it strives for – equality and equity for all – we have seen the definition of that evolve.
"Back then, there were no LGBTQ organizations," Holguin continues. "In
Nueces County, the stances LULAC has taken have evolved with the times, ensuring that we are not leaving any disenfranchised community behind. Whether it's LGBTQ or Black Lives Matter or the healthcare workers on the front lines of COVID-19, our mission has evolved to be a voice for those who feel like they don't have a voice. That has always been the goal for LULAC," he says kindly. "But, now it's not just focused on the [Latinx] community but the disenfranchised community as a whole. As a historically underserved community, we, the [Latinx] community, believe it is our duty to be allies to other disenfranchised communities. We want to use our voice and power we've accrued to help and uplift other voices that need that.
"Over the past couple of years at the local level," Holguin continues," our organization has held political leaders and faith leaders accountable for using disparaging language. While we understand the stances we take are not always going to be the most [mainstream], there's this idea in South Texas that we can't rattle cages, and we always go with what they say. [This] organization has explicitly gone against the grain on that. If you're in a public position and not acting in the best interest of all constituents, we are going to be there to let you know it's not okay to be disparaging to communities."
As LULAC celebrates 90 years of work, we remember the decades since the founding of our country, and all the Hispanic Americans who have added to the backbone of the United States. What began here in Corpus Christi as a force
for developing social and educational programs for Hispanic Americans has evolved to lead the nation in bettering opportunities and ensuring equity for the Hispanic American community and disenfranchised communities as a whole. From elderly assistance, adult education, and prisoner rehabilitation to equal employment programs, scholarships, youth organizations, and many more, LULAC members, local and nationwide, continue the legacy of the courageous early pioneers who risked it all for the generations that would follow to form what has become LULAC today.

Asweet treat and a unique service are under one roof at South Texas Apiaries. This dynamic local business is the brainchild of Michael Leidner, who initially started beekeeping as a hobby. The pastime officially became a full-time career in 2016.
“I’ve always been interested in bees. I got my own almost 10 years ago, in 2011,” Leidner says, reflecting that it gradually began to grow as he sold honey and bee removals. Leidner, who lives in Orange Grove, says his apiary has expanded from approximately 10 to 100 hives over the last five years. It has thrived under his watchful eye and attentive care.
“It’s like any livestock that must be cared for, with food, medication, monitoring,” he says. “You can start with a small colony – a queen, workers, brood, larva, baby bees –and after about a year you can grow that into something large enough to produce honey.”
Honey has many health benefits. It’s rich in antioxidants, was linked to heart health benefits in multiple studies, and has been shown to help lower triglycerides, blood pressure, and “bad” LDL cholesterol. Not to mention the fantastic taste. Patrons of South Texas Apiaries often say once they’ve tried it, they cannot stand store-bought. There’s a reason for that.
“A lot of honey sold in grocery stores is produced out of the country, and we don’t always know all of what is in it. It could be flavored rice syrup,” Leidner says.

could taste different,” Leidner explains. “Because I have bees in Orange Grove, I may have bees in Calallen, Aransas Pass, Flour Bluff – and each one of those locations will produce a different flavor of honey, because those bees are going to different flowers.”
The color of the honey could range from dark amber to nearly crystal clear. Much like the color and taste, the uses for honey from South Texas Apiaries also run a full gamut.
“People put it on their face, in their hair, there’s tons of people who claim that it helps their allergies, and then there’s the use of honey as a sugar substitute in everything –coffee, tea, pancakes, waffles.”
As a sugar substitute, honey offers an ideal way to cut out artificial sweeteners and replace them with something natural that helps raise “good” HDL cholesterol in your body at the same time. Honey was also shown in some studies to promote heart health, because it increases blood flow while reducing clot formations, thanks to the phenols and other antioxidant compounds found in honey.
The other side of South Texas Apiaries relates to bees’ health, because Leidner performs human bee removal and relocations.
“Bees are great, unless they're somewhere they’re not supposed to be,” he says. “I physically remove the comb itself - I cut it out, and the bees are vacuumed into a wire cage that keeps them alive and safe, so I can relocate them into one of my bee hives.”
Through this process, he has been able to rescue countless bees, who went on to happily produce delicious honey that our community craves.
While the COVID pandemic affected Leidner’s ability to sell at in-person events and farmer’s markets, he still takes orders directly, producing custom-sized amounts that range from a single jar to a 5-gallon

Anyone who knows me can tell you that my approach to beauty, wellness, and all things that make me feel my best starts with what my family and I are putting into our bodies and how much we’re moving them.
Growing up, running and playing any sports my friends were playing instilled in me the need to sweat and challenge my body on a daily basis. After a few years in college when that movement took a backseat, I finally dusted off my jogging shoes, hit the ground running and never really looked back. It wasn’t until my mid-twenties that I started to truly make the connection between what I was eating and how it affected me on the inside, and therefore on the outside.
This was long before the wellness industry grew to be what it is today, and the only expert I really knew on the subject was Dr. Nicholas Perricone. He had written The Perricone Prescription, and it was unlike anything else people were talking about at the time. While most “diets” encouraged low-fat packaged and processed foods, he encouraged full-fat everything (the good kind), proteins from the sea, all the fruits, and especially all the vegetables you could handle (which, in my opinion, is never enough).
My journey has slowly evolved to what works best for my family and me. Our general opinion is, “If we’re making it at home, it’s probably OK,” and constantly consuming the most nutrient-dense foods we can. We live in a world where it’s easier and cheaper to eat badly, and the consequences result in diseases we never knew could exist. For us, to keep out of doctors’ offices and instead live our lives with ease and no chronic pain starts in our kitchen and in our grocery baskets. When Britany and Jake Cummins moved to Corpus Christi in 2020 from Hanford, California, they began searching for the perfect place to call home. They looked at many houses in different neighborhoods, but there was something about a soft pink house located on the South Side of Corpus Christi that really grabbed Britany’s attention.
Although the pink exterior offered a playful and feminine vibe, the home’s interior was predominantly painted in neutrals, which presented a tame and subdued palette that didn’t appeal to Britany. It did, however, give her a clean slate from which to weave her vibrant personality through each room. Taking a cue from interior designer and well-
known “color queen” Sophie Roberts, Britany adopted the method of choosing 3-4 colors and building on different hues of each. Roberts’s color psychology course helped Britany choose green, yellow, blue, and orange as her starting points.
When it came to choosing her décor, she looked for items that reflected her love of Palm Springs and Mid-century modern styling in her chosen color palette, and worked from there to furnish each space.
One of the first rooms to greet guests is the dining room with its bold contrasts. A blackand-white striped rug provides a platform for the bold teal velvet chairs on gold legs, paired with a wooden table, and champagne-colored tufted couch. The chartreuse walls are an
appropriate backdrop for the dark curtains with bright flowers and gold accent pieces. The real eye-catching piece is in the form of wall art, which Britany created by taking a calendar from an Italian café, cutting the photos out, and framing them to add a touch of vintage and unique décor.
The bright orange barstools used in the kitchen, juxtaposed with the palm tree leaf wallpaper, offered the perfect coastal yet eclectic ambience in this space. The design created a seamless transition from Palm Springs into Corpus Christi, and it fulfilled Britany’s love of eclecticism and color.
The bursts of color continue in her breakfast nook, with the combination of robin’s egg blue and bright yellow offering an ambience of joy and optimism, making it the perfect place to enjoy a meal first thing in the morning. When she found the rectangular, white wooden table, Britany knew she needed bright shades to pair with it, and had carte
blanche on the color scheme she could run with. Although she originally wanted wallpaper with bold stripes, she found an alternative in white curtains with large, bold yellow stripes, and decided to pair them with the blue paint on the walls. The color combination not only matches the bright blue wooden chairs, but it also provides the best launchpad for the natural lighting coming from the window. A glass vase filled with lemons in the center of the table makes a fun and whimsical addition. Britany didn’t want to overdo the brightness in one area, so she added a kaleidoscopic print rug in darker shades to provide a good transition into the designs of the nearby rooms.
In the living room, the bold, green shade of the velvet couch became the starting point for the décor. To add personality, she combined a striped armchair in dark, bold colors, orange and white floral curtains, vintage artwork, and a bright yellow fireplace, and transformed the living room into a masterpiece of charm.
After reading that neutrals work best when they’re intentional, Britany decided to take a different spin on the décor in her daughter’s playroom. She painted the walls the purest white she could find and used them as a canvas for the many shelves, toys, and trinkets to color the space with the uplifting spirit of a child’s

This is only the beginning; Britany has many more fresh ideas to come, and although her family is still new to the area, they are looking forward to learning more about the Coastal Bend and discovering all our area has

The flowers of cockscomb can grow quite large and heavy. If stems bend, stake flower or take immediately as a cut flower. Spiked celosia grows tallest, up to 36”, though the colors are less vivid. Plumed celosia, the shortest variety, grows to about 12”.
Plant celosia strategically in the garden bed to serve as a dramatic backdrop or foreground for other flowers. Dwarf celosia makes beautiful low borders at the edge of the bed.

Celosia comes from the Greek word keleos, which means “burning” – a perfect description for these flowers that look like red, orange, and yellow flames in the garden.
Celosia is an easy-to-grow annual in the Coastal Bend. Cockscomb, with its fascinating blooms that resemble a rooster’s comb, is the most popular variety. Plumed and spiked celosia are equally gorgeous with their unique flower shapes. Each variety grows to different heights, to satisfy different needs in the garden.
Crested celosia (Celosia cristata) is the cockscomb variety, available in vivid shades of red, white, pink, and a deep magenta. The flower heads of cockscomb can grow quite large and heavy for the stems. If multiple flowers emerge, or particularly large flowers, they may need to be staked or the stems could tip over or break.
Plumed celosia (Celosia argentea) offers flowers in yellow and orange hues that resemble a long feather with a pointed tip. Plumed celosia grows shorter than crested, about 12” in height, and makes nice low borders in the garden bed. Plumed varieties are less heat tolerant, as well. Plant plumed celosia to receive afternoon shade, perhaps from taller plants in the garden.
Spiked celosia (Celosia spicata) resembles heads of wheat. The white, pink, or red colors of spiked celosia are less vivid and bright than the other varieties, but the effect of the spiked flowers is quite dramatic in the garden. Spiked also grows taller, up to three feet.
To use as cut flowers, clip the plant at the base of the stem. The stems are tall and straight, perfect for a vase. Don’t cut flowers to stimulate new growth; once the flowers are cut, the plant will likely not regrow any blooms.
Celiosa comes in so many bright colors and textures – it is easy to fall in love with its universality. From plume shape to ruffles similar to a sea coral, these fun flowers are easy to dry after a flower arrangement fades – and the best part: it actually drops little tiny black seeds you can easily plant in your garden! They come in oranges, reds, yellows and fuchsias – vibrant tones to spice up any arrangement.

All celosia varieties make gorgeous cut flowers. The flowers maintain their rich colors up to two weeks in a vase on a table or shelf with plenty of sunshine but not too much heat. To preserve cockscomb through the winter, clip the flowers at the base of the stem and hang upside-down in a paper bag. Once fully dry, they will hold their vibrant colors all through the winter.

Shop for vintage and secondhand books! Estate sales, garage sales, thrift stores, Half Price Books, and local bookshops are all great places to hunt.
• I often buy specific titles online through sites like eBay or Etsy. They can be great resources for out-of-print titles.
• Don’t overlook antique malls! I stock secondhand interior design and art books at my space in Red Crow, and other vendors will also sell vintage books alongside their other wares.
• I get asked a lot about dust jackets – some people love them and others hate them! No matter what side you’re on, always save them, because a book’s value plummets when it is without its original dust jacket.

– the design of older volumes often goes beyond the dust jacket, and they present so well on shelves. But I’m also not a book snob; you’ll find trashy trade paperbacks next to 19thcentury tomes with marbled end-papers on my shelves!

Olivia, a 13-year-old Corpus Christi local, found a sense of empathy for ocean life after learning an important lesson while out fishing on her grandpa’s boat. In a tantalizing tale, she faces a storm of complications she must weather by putting faith in her new sea creature friends. She gains a new perspective on the value of ocean life and the role we play in it by the end of her journey.
Ocean lovers, opera patrons, and children who love a good story are invited through Olivia’s Ocean, a children’s opera produced and performed by a collaboration of departments and institutes at Texas A&M University, commissioned by the Harte Research Institute for Gulf of Mexico Studies (HRI).
Through marine research and numerous missions to “ecologically and economically” sustain the Gulf of Mexico, the HRI took an interest in the arts to convey some of their most important messages to the public. The alliance between marine research and musical theatricals became relevant and blossomed, and an original opera became the product.
The opera came to fruition through experienced TAMUCC professors Dr. Ellen Denham and Dr. Ross Bernhardt. Denham wrote Olivia’s Ocean when she combined her science-fiction fantasy writing knowledge and her fascination with children’s operas; to fit right in with it, Bernhardt composed an entirely original, variety-filled score including funk, classical, pop, and waltz influences.
“Why couldn’t we have a children’s opera about ocean sustainability?” says Dr. Denham. “It’s near and dear to my heart: I love birds, I love sea creatures, the beauty of all of it.”

As stage director and writer, Dr. Denham works closely with the vocalists and storyline. In the past year, she was recognized for her talents in stage directing for the American Prize national competition in the performing arts. The non-profit celebrates American excellence in the arts.
“So,” she says, “Dr. Ross Bernhardt and I sat down with them [the Harte Institute] and discussed what would be a great takeaway message for children – and for adults, too. We basically came up with the easiest thing for people to do: to not trash the ocean, to try and keep it clean.”
Olivia’s Ocean is projected to reach more ocean enthusiasts by becoming a film opera after their live debut of the show. That’s where TAMUCC professor Daweon Kim stepped in as the film director to ensure camera operation, film editing, storyboarding, and hairline details.
“We are going to use the stage and cameras to record their live performance,” Kim says. “The film form of opera uses film language, with intentional camera movements and a variety of camera angles. Visual effects and split screens also make a huge distinction in film opera from just a stage opera.”
Bringing Olivia’s Ocean to a wider audience, considering the circumstances, has led the production to find adaptable ways of translating the experience. The art of the opera is complemented by tactics like kinetic camera work, multiple cameras, advanced light work, and closer, more intimate performances by the vocalists.
As producer and director of photography Scott Thurman says, “We want to capture and convey this performance in a way that preserves the energy and visceral experience of attending a live show, while delivering an incredibly important message – both cinematically stunning, and emotionally captivating.”

COLORFUL, UNIQUE ITEMS FROM RESORT WEAR TO FURNITURE IN A PORT ARANSAS BOUTIQUE

Walking through the doors of Indigo Eclectic, guests are greeted by vintage and retro-inspired flair, plenty of color, and a friendly atmosphere. The shop, filled with beautiful coastal resort apparel and accessories, offers visitors a grand selection of one-of-a-kind items unique to the Port Aransas area.
Owner Roxanna Blanchette felt that her creative talents were not being challenged at her previous job, so after moving to the Coastal Bend from San Antonio in 2010, she decided to channel her energy into opening her boutique. In 2016, Indigo Eclectic became the newest attraction in one of her favorite locations: Port Aransas.
Growing up, Port Aransas made an impression on Blanchette every time she visited her grandmother’s coast house. She recalls visiting Things and The Sandpiper, two boutiques that inspired her love of vintage, coastal, and classic resort apparel, and thought it would be fun to bring that style back to Port Aransas. Taking inspiration from the styles of the ’60s and ’70s, Blanchette began searching antique shops and estate sales across the state to secure the gems that fill each shelf, table, wall, and rack.
Over time, the inspiration for her boutique grew from resort apparel, coastal vintage, retro, Mid-century modern, and bohemian-inspired items to include more accent furniture and a men’s department … but she would require more space to house these items. When she originally opened the boutique, she discovered that commercial
spaces don’t open up quite often in Port Aransas, so she jumped at the chance when a location became available. When the need for extra space presented itself, she was fortunate enough to find another location in close proximity, giving her another 600 square feet to encompass her new items.
When deciding which items to feature in her shop, Blanchette has one rule of thumb: Each item has to be something she doesn’t mind owning herself, so each piece has her 100 percent stamp of approval. Rather than housing mostly mass-produced items, she focuses on up-and-coming designers who are just breaking into the world of fashion and who may not be well known yet.
Blanchette also has a philanthropic nature, so she loves to stumble on purposedriven lines that allow her to support that love while bringing unique items to the community. “Usually, once these items are gone, they’re gone for good. It’s kind of a neat thing and it keeps the store fresh,” she says. For now, Blanchette only operates from her brick-and-mortar location, although she occasionally sells items on Instagram and ships them to customers. One thing is for sure – she has a steady flow of customers every day! Tourists love to stop by her shop to take in everything Port Aransas has to offer, but locals and vacation homeowners form her loyal clientele.
Anyone who walks into her shop will be overwhelmed, but in a good way, as their eyes are pulled in multiple directions by the wide array of gorgeous items. “There’s a lot to look at,” says Blanchette. “I think guests are expecting beachy items, but they’ll be surprised to find the variety of items we have here.” With the ever-growing selection of oneof-a-kind items, Indigo Eclectic is a must-see shop on your next stop in Port Aransas.

hen it comes to Mother's Day, you might be wondering the best way to show mom how much you care. We suggest bringing some elevation to the typical breakfast in bed with a special brunch. You may call it a Bismarck, an oversized Yorkshire pudding, or our favorite, a hootenanny. By any name, the Dutch Baby will be a guaranteed hit for mom’s special day. The Dutch Baby is basically a larger-than-life pancake, which puffs up to more than twice the height of the cast iron pan while baking. When it emerges from the oven, it slowly and magnificently recedes back into the pan.
WPlan to serve the Dutch Baby just as it comes out of the oven. Set the cast iron pan on the table in front of mom and dress the puffy pancake with powdered sugar as it slowly deflates. Mom will be highly impressed with your kitchen skills. Humbly tell her, “Aw, it was nothing. I just whipped it up from scratch especially for you!”
Too much drama for mama? Try serving her the dressed-down cousin of the Dutch Baby, good old-fashioned French toast. Buttermilk gives this French toast a light texture and tangy note to balance the sweetness of pure maple syrup. We use both vanilla extract and whole vanilla bean to intensify the flavor.
Fresh eggs from pastured hens from a local farm are a must for both dishes. The richness of pastured eggs amplifies the taste profile while improving the texture of the dish. Breads like homemade challah and brioche have a slightly airy crumb that makes the perfect base for French toast.
No celebration of the woman who bore you would be complete without a proper toast – and this time, by toast, we mean cocktails! This Raspberry Fizz is a lovely shade of pink with many happy bubbles zipping to the surface. It is a gorgeous cocktail, the perfect touch for mom’s special brunch. The combination of sparkling wine and raspberry sorbet is a cocktail and dessert all in one.
With all the carbs and cocktails, who knows, this may just be your best Mother’s Day yet.
Buttermilk French Toast
Serves 4
PREP TIME: 10 minutes
COOK TIME: 10 minutes
INGREDIENTS:
2 tbsp butter
1 cup buttermilk
4 eggs
1 tsp vanilla extract
1 vanilla bean pod
1 tsp cinnamon
1/4 tsp nutmeg
Large pinch of salt
1 large loaf challah, brioche, or French bread, cut into 1/2” thick slices
Optional, for serving: 1/2 cup crème fraiche or Mexican crema
2 tbsp favorite preserves (we like orange marmalade)
DIRECTIONS:
Place a cast iron griddle or skillet over medium-low heat. While cooking surface is preheating (about 5-7 minutes), combine buttermilk, eggs, vanilla extract, and spices into a shallow bowl. Cut open vanilla bean pod and scrape seeds into the buttermilk mixture, whisking well to combine. Working in batches, soak each slice of bread until it absorbs the buttermilk mixture all the way through (about 2 minutes on each side). Add butter to griddle/skillet and swirl until surface is oiled. Cook prepared slices until golden brown on each side and cooked through, about 3 minutes per side. Serve immediately with banana slices browned in butter, toasted pecans and warm syrup, or crème fraiche sweetened with orange marmalade – or both.

Add raspberry liqueur to the bottom of a martini glass. Pour in champagne or sparkling wine and top with raspberry sorbet. Garnish with orange curl.

Stirring the zest of citrus into the tint of a blush sky, the YOLA Sol brings a suggestion of warmth, even on ice. Since YOLA Cocina Mexicana’s opening day, this craft cocktail has been a favorite. “I describe it as tart, spicy, and strong. A tad sweet,” says bartender A.J. Juarez. “One of the things you want to go with when making a cocktail is a mix of those experiences.”
The gin-based cocktail introduces the sipper to the spirit of blood orange with ginger by its side, a little bit of agave, and not much else. Through simplicity and specified measurements, the flavor palette blends seamlessly.
“Blood oranges have a nice, super sweet taste. Instead of adding sugar to the recipe, we just use a dash of agave,” says Juarez. “But the real sweetness that you taste comes from the blood orange itself.”
While the gin is accompanied by Solerno blood orange liqueur, the bartenders at YOLA also prepare and preserve fresh blood orange juice for this recipe. The ruby-hued fruit has a season that falls between winter and spring, ranging months depending on the region where it’s grown. “Whenever we get blood oranges in, we have to juice … a lot,” Juarez laughs.
The Cocina Mexicana has a detail-oriented bar filled with original cocktails and passionate mixologists who know how to make them. With an arm’s length of tequila and mezcal options, the cocktail selection isn’t limited to just a classic margarita.

GRECIAN FUSIONS ABOUND AT THIS SOUTH SIDE EATERY

Savory, sweet, and unique are under one roof at A&A Gyros and More. This Greek restaurant nestled in the shopping center at Yorktown and Cimarron just celebrated its one-year anniversary and is already an area favorite – and should definitely be on your list of must-try places. A&A’s owner and head chef Alex Loukanaris is excited to be serving up favorites, classics, and brand-new creations to the Corpus Christi area.
A&A Gyros and More makes traditional Greek dishes, including the perennial fan favorite lamb gryo; cuts of savory, tender meat drizzled with creamy sauce and served in warm pita bread. There are also various well-loved options ranging from stuffed bell peppers to fish dishes to kebabs – depending on the day of the week. “Our specials are popular,” Loukanaris says, “Monday through Saturday, there’s a different special that’s usually only available on that day.”
What makes so many plates so popular is the home-made taste. “Everything is authentic and made in-house, down to our onion rings, which are cut to-order,” says Loukanaris.
While flavor and quality are found at this local spot, so is culinary creativity. Because at A&A Gyros and More, the “more” is no exaggeration, thanks to a menu filled with gyro fusions and fresh creations.
“We do all sorts of different pita bread sandwiches; we play around with them,” Loukanaris says, citing the buffalo chicken ranch gyro, the Jaws Sandwich’s fried fish and tartar sauce, the popular Greek Ribeye Philly’s grilled onions, peppers, and cheese, and the Italiano Pita, which has Italian sausage and mozzarella.
You cannot skip dessert at A&A. A dish that flies off the shelf is the baklava cheesecake – a twist on the classic Greek treat. According to Loukanaris, the ingredients that go into this dish include, “Filo dough, walnuts, cheesecake, and more filo dough. It’s a layer of baklava on the bottom, a layer

For Loukanaris, the restaurant business runs in the family, which is what inspired him to open A&A Gyros and More in the first place. His family are restaurateurs in New York and also here in Corpus Christi – Bay Area favorite Eirinis Gyros and More on Alameda.
A&A opened in February 2020, just before the COVID-19 pandemic began taking hold, so they are especially thankful to their faithful patrons for support during the first tumultuous year. Eating local is vital for area restaurants, especially while COVID-19 is still underway. A&A makes it easy with several options, including drive-thru, pickup, and curbside as well as dine-in. Today, some of the most iconic views of Corpus Christi's skylines can be seen from Cole Park. We –depending on age – share memories of concerts, giant wooden playgrounds, fishing, swimming, picnics, civic club meetings, movies, and just taking in that iconic skyline view across the bay. The Cole Park of tomorrow, with a brand-new pier, is a far cry from what its original owner saw in his lifetime.
Attracted to the area by the influx of development in the 1890s, real estate developer E.B. Cole donated just six acres of land to form a public park along Corpus Christi Bay nearly a century ago. Cole’s name is on not only the park, but a street nearby as well, in recognition that he sold the land that became the Del Mar, Six Points, and Lindale neighborhoods.
Cole certainly couldn’t have expected the way the City would grow the acreage of Cole Park by the 1960s: by building a seawall and backfilling 20 acres. Decades of tides and storms had worn down the original park’s land, and the city’s big investment helped to create the park we all know today. The expansion came with improvements like the amphitheater, pier, parking, and plenty of places for kids to play and adults to relax and enjoy the scenery.
As we enter the next phase of development for Cole Park with a new pier coming later this year, the city’s investment in this destination is setting up future generations for their own memories at E.B. Cole Park.
