More Than Just Food

In my household, my husband Carlos is generally the one in the kitchen. Breakfast is his forte, but he’s also acquired permanent dinner duties.

We subscribe to a weekly meal plan service to make the last meal of the day a bit easier. It removes the planning, shopping, and measuring chores from the equation and lays each step out in a “Cooking for Dummies” manner. For our lifestyle, we’re all for anything that aids in saving us time and energy; but admittedly, it pretty much takes away all creative aspects of making food. You see, cooking is undeniably an art form, and with all art comes a creative process. An idea is formed from inspiration, materials are gathered, and (hopefully) a masterpiece is crafted. Our cover feature this month celebrates that very idea.

Readers are familiar with Kayla Butts, our in-house culinary expert, via the Farm to Table section in the magazine. Each issue, Kayla develops and shares recipes for you to recreate at home. However for this issue, our team decided to shake things up. We created “Feast de Resistance,” a challenge presented to the home cook with two simple rules: Create a five-course meal of edible art, and utilize a required list of ingredients consisting of two locally sourced items and one curveball.

Some might feel daunted by this task, but Kayla stepped up to the plate and delivered five thoughtfully prepared dishes that were

almost too pretty to eat. Along with the vibrant colors, bold flavors, rich textures, and intentional plating you’ll find beginning on page 28, you’ll have the opportunity to peer inside the creative process that led to the beautiful end results.

In this month’s issue you’ll also find an ode to food blogger, published cookbook author, cooking show host, and all-around superstar Vianney Rodriguez. I’ve had the wonderful opportunity of eating a meal prepared by this woman and let me tell you, it’s an experience I’ll always remember. Her creative process is fueled by the love she has for her family, her culture, and the art form that is preparing a meal. Beginning on page 40, we explore the road that led to her awardwinning blog Sweet Life and the idea that every time she cooks a meal, she’s creating a tangible representation of where she’s from, where she’s been, and where she’s going.

Seeing these two women produce incredible meals bursting with creativity is certainly enough to inspire us all to get into the kitchen. It doesn’t have to be a multicourse meal with artful plating or a traditional Tex-Mex dish filled with flavor and history. It can be something simple that brings you joy; something that makes you pause and appreciate the ingredients you have to work with and where they came from.

Don’t get me wrong; the Cooper household will continue to eat three meals a week by preparing components sent to our home in a cardboard box. But taking a moment to admire and appreciate all the people and their individual processes and efforts involved in making the food we’re eating—whether we put it together ourselves or are sitting at someone else’s table—is something we should all do a bit more often. Because food is so much more than just food. It’s countless hours of hard work; centuries of cultures and traditions; a creative outlet; a moment of togetherness. Especially in this month of giving thanks, it’s something for which we can and should share sincere gratitude. Enjoy … and thank you, readers.

Spirit of The Island

Sunset Island has several restaurants, bars, and entertaining venues where fun and family entertainment happen all year round!

Opening soon, Snoopy’s Pearl Oyster Bar is the latest venue added to Sunset Island offering steak and seafood options, plus a wide selection of oysters, including half-shell, fried, steamed, grilled, and smoked.

The Giving Day

ONE DAY, THOUSANDS OF DONATIONS, AND HUNDREDS OF THOUSANDS OF DOLLARS FOR LOCAL NONPROFITS

In November 2009, nine area foundations initiated the Coastal Bend Day of Giving, a matching gift program in response to the need for food and shelter in the area. Administered by the Coastal Bend Community Foundation (CBCF), it is an online community-wide event to show off the Coastal Bend’s spirit of giving, raise awareness about local non-profits, and celebrate the collective effort it takes to make our area great. This community give-together begins at midnight every year on Nov. 9, and with a minimum donation of only $10, it allows locals and additional funders to be philanthropists in the Coastal Bend.

Following the economic downturn between 2007 and 2009, the Coastal Bend Community Foundation board of directors wanted to do something to help local nonprofits. They decided to come together with eight additional funders and were able to pledge a total amount of $150,000 in matching funds for local nonprofits. That first year alone, $400,000 was raised through online giving, and was distributed to 25 participating organizations.

Each year since, they’ve been able to hold a successful Day of Giving, continually surpassing the amount raised the previous year. The CBCF continues to reach milestones time and time again. After 12 successful years of giving to the community,

Tracy Ramirez, communications operations director, can happily say the Day of Giving event has raised over $26 million for local nonprofit organizations.

Ramirez said the millions of dollars that have been raised have allowed for these nonprofits to improve the lives of others. The Coastal Bend Day of Giving services nonprofits that meet four core criteria of providing medical care, shelter, food, and childcare in the community. This year, a total of 56 nonprofit organizations are participating, and 27 fund donors will be matching each nonprofit that meets or exceeds the amount of $21,800.

As a 24-hour, online matching gift event, it is astounding to see the amount of donations they have been able to receive and give back to the seven servicing counties. As CBCF embarks on the 13th year of the Coastal Bend Day of Giving, Ramirez said their hope is to always exceed what they raised the year before, and for the participating nonprofit organizations to all hit their match amounts of $21,800.

Coastal Bend Day of Giving provides locals a chance to give back to their community, even in the smallest of ways. “This event is so great because with a minimum donation of $10, everyone can be a philanthropist and give to their favorite charity,” Ramirez said. She also mentions the early giving period for those who are unable to give on Nov. 9: Early donations can be made Nov. 1-8, with all funds raised at that time dispersed right away.

Ramirez said they are hopeful of reaching new heights with the Coastal Bend Day of Giving this year, and look forward to continuously giving back to their community.

A CONVERSATION WITH THE RECORD LABEL OWNER AND MUSICIAN ON SIGNING NEW BANDS, THE LOCAL MUSIC SCENE, AND MORE BY:

KC: You co-founded, own, and operate Otitis Media Records. Tell me a bit about the label's origin story.

ND: I was always a bit reluctant to start my own record label; it always seemed like a real hassle compared to just writing and playing music. My longtime friend and label partner Chris Puryear convinced me to put out my surf band Total Death Mechanics on our own as our first release, and just see how it went. I had the name Otitis Media Records, which was a tongue-in-cheek reference to an ear infection or earache. Being in the medical field, I thought it was kind of witty. Now if we could just get people to pronounce it right … I never thought it would snowball into what it has become; I’m glad I listened to him.

KC: Your label roster includes musicians from all over the world. How do you go about finding new artists to work with, and what makes an act a good fit for Otitis Media Records?

ND: Back to the beginning of our little label in 2017, we made a social media page. From there, we were approached by a few bands from around the world who were looking for a label to release their music. Chris would forward me the music files the bands would send, and we made a few CDs and a couple of vinyl records to start out. From there, it was pretty much word of mouth as our releases started getting out there. It’s amazing the reach you can get from just messaging on social media. We’ve put out releases from bands by way of Brazil, Sweden, Japan, Russia, China, Italy, the U.K., Argentina, Mexico, and of course the U.S.

We look to put out music that we are into: surf/instro, garage, punk, psych, jazz, hardcore punk … it is a pretty broad spectrum of music genres. The last thing I want to do is get stuck doing only one type of music. I think that sets us apart from many other labels out there. I’m very particular [about] a band’s visual artwork, too. I think the cover of the album should be just as attractive as the music. I should add, a band’s message also means a lot. I have no interest in bands who promote racist, misogynistic, or homophobic propaganda. Don’t even bother with them.

KC: What is your first cognizant memory of music?

ND: Some of my earliest memories of music are of my dad playing “Yellow Submarine” by The Beatles, and my mother playing and singing along with Linda Ronstadt records. Both my parents played guitar, and every once in a while, they’d let me pluck on the strings. When I was a kid, there was this ad for a Beach Boys greatest hits LP that you could order, which my mom did for one of my birthdays. So there’s my first vinyl that I owned. Sadly, my uncle “borrowed” it, and I never saw it again. My next music purchase would then be Weird Al’s “Dare To Be Stupid” on cassette tape, which changed my life.

KC: What advice can you give to emerging artists who are trying to get started?

ND: Once you get some songs written, record them, and get them out there. Don’t

In each issue’s Farm to Table section, The Bend’s in-house culinary expert Kayla Butts shares recipes for readers to recreate at home. This month, however, our team decided to up the ante. We challenged Kayla to create an elevated and artful five-course meal. To spice things up a little more, our editorial team provided Kayla a list of required ingredients per course: a set of two locally sourced ingredients and one curveball. So, what happens when a home cook is challenged to not just make a meal, but craft edible art?

LET’S FIND OUT...

CURVEBALL INGREDIENT

Shiso, known to some as perilla leaf, is a fresh herb common to Japan, Korea, and Vietnam. Due to its complex flavor profile—a spicy mint with hints of cinnamon and clove—shiso is used to pickle plums and garnish meat and noodle dishes, or can be battered in rice flour and deep-fried.

I showcased shiso in two dish components. Adding shiso to the beet puree gave it a compelling “What is that?” flavor, and also lent complexity to the brine for our pickled beets. Shiso is stocked in the produce section of Asian Market, a frequent stop for any self-proclaimed foodie.

When to Buy – Late fall through early spring.

Tasting Notes – Beets have an earthy taste, thanks to geosmin (a volatile, organic compound that is formed by soil-dwelling bacteria, such as streptomyces, and aquatic cyanobacteria). We can attribute the same compound to the “dirt” taste in most mushrooms as well.

Quick Tip – Assuage the bitter notes of beets by roasting them or pairing them with bright, acidic ingredients.

Shiso-Pickled Beet Carpaccio with Goat Cheese, Microgreens, and Pomegranate Reduction

Tasting Notes – These nutrientdense legume, flower, or herb sprouts are one of the workhorses in haute cuisine, adding crunch and freshness to an otherwise much-too-rich dish.

Quick Tip – Use microgreens as a bed for a poached egg, in between sandwich layers, or even in your morning smoothie.

The colors of fall inspired the hors d’oeuvres. I kept the preparation of the locally sourced beets simple to show off their variegated interiors. The beets were steamed, sliced, then pickled overnight in a brine of shiso, white wine vinegar, sea salt, and granulated sugar. We alternated the thinly sliced red and golden beets with blood orange and grapefruit, and topped them with local microgreens, goat cheese, and shaved pecan. We garnished the dish with a shiso-infused beet purée and balsamic pomegranate reduction.

The balance of acidity from the citrus, salinity from the goat cheese, and sweetness from the pomegranate reduction pulls this dish together. Most of these ingredients are companions, like peanut butter and jelly, and are often paired because they complement each other so well. Put a plate of beets, balsamic vinegar, and goat cheese in front of me, and I’m all over it.

CURVEBALL INGREDIENT

I’d like to introduce you to my new favorite ingredient: lychee. Okay, so some of you already know about lychee—I mean, it has been cultivated in China for over a millennium. Lychee has a thin, red outer shell and large seed, making fruit access an onerous task.

For this dish, a lychee coulis was incorporated into the sashimigrade ahi tuna. To create a coulis, you must puree, reduce, and strain the lychee. Canned lychee is equally delectable and hassle-free, and can be found at the Asian Market. One word of caution: Lychee can be toxic. It’s recommended that children avoid under-ripened lychee and its seeds. Otherwise, please enjoy lychee in cocktails, boba tea, desserts, or salsas.

Tuna Tartare with Panela, Avocado, Mango Mostardo, and Lychee Coulis

Tasting Notes – With lovely notes of orange zest and lavender, the Afterglow Sea Salt adds an ideal balance of floral acidity to any dish.

Quick Tip – Try finishing off your next cocktail with an Afterglow Sea Salt rim; the bright and floral notes of this hand-harvested salt make the perfect final touch to a refreshing libation.

When to Buy – Soft cheese varieties are available for purchase year-round.

Tasting Notes – The Untar de Queso Panela is by far my favorite cheese from Knolle Dairy Farms. It features a sweet and nutty flavor profile while maintaining a mild punch.

Quick Tip – Knolle Dairy Farms recommends cutting this cheese into thin strips and pan-searing in oil until brown.

For the second course, I created an ahi tuna tower. Standing at a whopping 5” tall, this sizable tower was no small feat. Advanced prep included smoking sea salt in the oven and creating a coulis out of lychee. Sashimi-grade ahi tuna was lightly seasoned with smoked sea salt, drizzled with lychee coulis, and wrapped in a thinly sliced cucumber. I then spread on an ample layer of fresh panela, added diced avocado, and topped the behemoth with fried beets. Caviar served in a rambutan shell (a bigger, furrier cousin of the lychee) was included to cleanse the palate after each bite.

This appetizer took shape as I reflected on the many great sushi offerings we have in town. My favorite element of the dish may just be the coulis I created from the curveball ingredient, lychee. The sweet tropical flavor with floral notes was a nice contrast to the umami tuna and rich cheese.

CURVEBALL INGREDIENT

Yuzu is a citrus fruit native to China. Highly aromatic and as tart as lime, the yellow fruit isn’t often eaten raw, but instead used as a flavoring in ponzu, cocktails, marmalades, and desserts. The Japanese immerse themselves in yuzu-infused bathwater during their winter solstice to fight off colds and improve circulation.

Opening up the yuzu extract I procured from our beloved Asian Market, I detected floral notes and an intense acridity. It’s true that the aroma of yuzu is nothing like the citrus we have in the States. Importation of fresh yuzu is actually banned in the U.S., making this a hot (and pricey) commodity. Utilizing yuzu extract as the base of this dressing was a no-brainer. It added the perfect touch of acidity and tartness needed to balance out the rest of the ingredients. Yuzu is also a great stand-in for vinegar.

When to Buy – Late November through early February.

Tasting Notes – The varied avantgarde greens seen in this salad feature a mixture of flavors. Baby greens are sweeter and less bitter than mature greens, while the Malabar spinach is crisp and has a bright, slightly sweet taste.

Quick Tip – Local growers experiment with heat-tolerant greens in early fall and capitalize on the greens of growing root vegetables. The colder the temperature, the more crisp the lettuce. As temps warm up, greens get bitter.

SHERRY’S GOODIES

When to Buy – Available for purchase year-round.

Tasting Notes – The jam texture was spot on with this one, as was the immaculate strawberry flavor. The fresh strawberry taste is paired with a subtle hint of lemon, yielding just the right amount of sweetness.

Quick Tip – Trying to choose just one jam from Sherry’s Goodies is no easy task. Strawberry was the chosen flavor for this course, but I recommend selecting a few different varieties and spreading them across sourdough bread with creme fraiche to find your favorite.

A note on salads: they should be vibrant and rich in color and texture. A good salad has sufficient crunch and perfect symmetry in salt and acid components. Taking all of that into consideration, it’s now time to break out the tweezers!

Tender frisée, baby chard, beet greens, and local Malabar spinach require a lighter touch. Young greens tend to be less bitter and won’t overwhelm other ingredients. I often gravitate toward watermelon cubes and cucumber for their fresh flavors and higher fluid content, as was the case here. Radishes add a peppery bite to otherwise subtle flavors, and tart yuzu dressing and a few dollops of jam compote add sweet and sour elements to finish off the dish.

CURVEBALL INGREDIENT

A jet black, sticky pudding that is unwaveringly umami, it’s no surprise squid ink can intimidate even the most seasoned home cook. Once you get past the smell and consistency, squid ink can be a wonderful flavor and color additive to explore in pasta, sauces, or grains.

Squid ink gets its coloration from melanin. Cephalopods use the liquid to confuse and evade predators, leaving them in a cloud of ink. Cuttlefish ink can be substituted in a pinch, as squid ink can be more difficult to find. This culinary treat can be delivered to your door in about three days (usually from a producer out of Italy), but is not available locally. The savory nature of squid ink provided a nice richness to the dish, and playing off the luminescence of the ink allowed for creative plating.

Bird Beak Peppers

Tasting Notes – While bird beak peppers are potent, they also feature a profile of grassy, piquant, and smoky flavors.

Quick Tip – This pepper is not for the faint of heart. Despite their size, bird beak peppers pack a punch. Bird beak peppers, or Chiles de arbol, are hotter than cayenne, but milder than habanero peppers.

For most, the only selling point I need mention in our entrée is the tenderloin.

I begin any beef preparation by letting the meat reach room temperature before exposing it to heat. This extra measure prevents muscle strands from shortening with a dramatic change in temperature. It also cuts down on cooking time, which reduces the likelihood the meat will lose valuable juices or cook unevenly. Large cuts of meat should also be allowed to rest for 10-20 minutes to let their juices redistribute. Get these things right, and the rest is cake.

Now we need something to sop up the goodness at the bottom of the pan. I sautéed enoki mushrooms in a heaping spoonful of ghee, making sure to scrape up any bits stuck to the bottom of the pan. The ghee combined with the curveball ingredient, squid ink, is delightful. The Chiles de Arbol screamed salsa, so I pureed them up with garlic, white wine vinegar, salt, and bell peppers to mellow them out. The heat from the peppers and acidity from the vinegar added a bright contrast to the rich constructs of the dish.

CURVEBALL INGREDIENT

Tamarind is a legume originating in the tropical regions of Subsaharan Africa. When ripe, its brown pods contain a sweet and sour pulp. Also known as the “date of India,” tamarind is one of the many flavors in Worcestershire sauce. The acrid pulp is also used as a condiment, pickling agent, or in desserts. It’s likely you’re most familiar with tamarind in candy form, as it is commonly eaten in Mexico.

Tamarind is available in several forms. I prefer the compressed pulp known as tamarind paste, which can be found at various grocers. Fresh pods are also available at a local food grocer. For this final course, the tamarind served to cut the richness of the panna cotta.

Bourbon Panna Cotta with Tamarind Date

Panna cotta is a rich custard made from cream, sugar, and gelatin. You’re probaly thinking, “What more do you need?”

The answer is bourbon. Bourbon adds a richness and intensity, sending this pudding to the next level. Shaved kettle corn and ginger snaps added contrasting texture and whimsy to the scrumptious panna cotta. The ginger snaps also provided a spicer bite to keep the palate interested.

Tamarind proved to be a more challenging ingredient than most. Its gummy texture is unforgiving, and it desiccates when heated and clumps when pureed. Through trial and error, I discovered diluting it with hot water produces a tangy sauce. Medjool dates were a natural sweetener substantial enough to stand up to the dynamic tamarind to help create this magical panna cotta.

first memory in the kitchen is—as one might guess after having even just one conversation with her— completely centered around her familia. Rodriguez takes me back in time to her abuelita’s kitchen, where she is hiding under the table watching in awe as her abuelita and mami lightly pinch the empanada dough together with apparent ease.

“My abuelita caught me looking,” Rodriguez remembers. “She patted the chair next to her and showed me how to add the filling to the empanada disk, and how to pinch it closed with a fork.” Her fondest memory, Rodriguez explained that she can still so clearly smell her abuelita’s perfume, the cooked pumpkin filling, and the cinnamon all mingling together in the kitchen.

Just as her adoration for cooking began with her family, so did her unparalleled work ethic. Each morning when her papi would take the kids to school, he’d say “a trabajar,” as they hopped out of the car. “At the time, I didn’t understand this,” Rodriguez said. “But I clearly understand it now. We work hard for what we love. My familia y comida are my most treasured gifts. I work hard, I work passionately, I work with love to create a delicious life.”

Decades later, Rodriguez is now an award-winning cocinera, published cookbook author, cooking show host, recipe developer, and food blogger with a considerable and dedicated following. But to understand where the 2020 Southern Living Cook

Sweet Life, Rodriguez’s food blog, is at the cornerstone of that journey. In 2009, Rodriguez’s husband was completing his master’s degree while she homeschooled their children. In her downtime, she began to discover the realm of online food blogs; a wonderful world filled with colors and flavors and stories. With a DIY studio set up in the bathroom of their tiny apartment, she’d wait until the girls went to sleep and then begin her process—cooking the food, styling the plate, taking and editing the photos, she did it all. With each new recipe and story, she began to find her voice, style, and audience. She poured all of herself into every single step. Rodriguez knew that if she was going to do this, she was going to do it at 150% and no less, just as her father instilled in her as a child. “When I would sit at the computer to type out a recipe, I could hear my papi saying, ‘a trabajar.’”

Twelve years, hundreds of recipes, and over 32,000 Instagram followers later, Sweet Life is more alive than ever. Yet the heart of everything Rodriguez does remains the same: familia y cultura. From start to finish, every project Rodriguez works on involves her culture, from the flavors and spices to the childhood memories wrapped up in the recipes and the barro dishes she uses to plate everything. “My culture plays a huge role in my work,” she said. “It’s in every aspect of [what I do]. I want my readers to see who I am, where I am from, and the beauty of my culture.”

When inspiration strikes, she sends herself text messages, including anything from flavor notes to ingredients. Those texts go on to become recipes that are tested and tweaked and tested again before ever being styled or photographed.

The fruits of Rodriguez’s labor are undeniable. It’s a gift, really, to witness someone with as much talent and passion as she has exponentially excel at what they do. HOW HARKNESS YOGA INCORPORATES THE LYT YOGA METHOD INTO ITS PHILOSOPHY

The benefits of yoga stem from incorporating a combination of movement and breath, plus mindfulness while doing both. Most traditional styles of yoga are accessible to anyone regardless of age, physical strength, and flexibility. However, not all yoga is created equal.

The LYT Yoga Method—developed by and named for licensed physical therapist Lara Heimann—is based on three principles to offer a smarter, safer, and more effective approach to yoga. By targeting movement sequences, LYT Yoga aims to retrain habitual movement patterns and posture imbalances to help practitioners feel stronger, more energized, and more balanced both on and off the mat.

After sustaining a neck and back injury, Lacey Lawrence discovered LYT Yoga and practiced under Heimann. She learned how to mindfully practice yoga again in gentle ways that affected her nervous system and improved her physical condition.

"Sadly, I got injured soon after finishing my first yoga teacher training. I tried to teach for a little bit, but I didn't know how to modify my practice for this new injury, which wasn't yoga-related as it was posture-related," said Lawrence.

Lawrence has since opened Harkness Yoga, which prides itself on being the first studio in the Coastal Bend to offer classes grounded in LYT Yoga. Lawrence said she hopes to help people develop an awareness of their body, breath, and emotions while finding balance among stability, mobility, and adaptability.

Anybody can do yoga,” Lawrence said. “Most think it's all stretching, but it is that balance of strength, stability, and stretching mobility. When figuring out how my head was kind of [leaning] forward, I learned how to pull it back by creating a balance starting up the pelvis, working up to the ribs, opening the chest, and holding the head back. And my breath correlates with everything by connecting with the core and nervous system."

I’ve learned a lot about makeup application, skincare routines, and hairstyling techniques throughout the years. I’ve also committed some truly heinous beauty crimes—the most detrimental being shaving between my eyebrows. One silly boy tells me I have a unibrow in middle school and my naturally full and beautiful brows were forever gone.

As I’ve grown up, I’ve realized that having self-confidence allows your true beauty to shine through. This is something I have to remind myself of daily. Selfconfidence doesn’t necessarily come easy, but you should always tell yourself that you are worth it and that you matter. Believing in oneself is what beauty means to me.

After living in Colorado and Wisconsin, Amy Ehle and her husband, Todd, moved to Corpus Christi for work, and found that a neighborhood in Del Mar encompassed everything they looked for in a home.

With a love for old houses, they were drawn to a charming green cottage-style home that was built in 1930. But it wasn’t just the house: The family-friendly environment and its close proximity to both of their jobs made it the perfect place for them to raise their daughter and begin their life in the Coastal Bend.

artistic appeal is showcased through the interior, where Amy and Todd get to display their love of artwork and unique furniture.

When choosing artwork thoughtfully, the right selections will infuse personality into each room, and Todd’s talents for choosing the perfect pieces helped provide an instant color palette for their décor. “Todd has a great eye for all the artwork,” said Amy, and it is proven by the paintings and handmade art throughout each room. Other works were procured through various visits to antique shops during their travels to Germany, France, Costa Rica, and Africa, and offer unique bursts of personality in the dining area, kitchen, and den—also known as the “comfy room,” it’s where they unwind after a long day at work. The toy trains, various paintings, comfortable couches, and television are perfect for a relaxing aesthetic.

Todd has an eye for artwork and a talent evidenced in his personal paintings, but Amy said, “The only painting I do is the walls.” Since the pandemic forced everyone to stay home, she made use of that time by transforming some of the home’s gray walls, such as the kitchen's, into soft, vibrant, mint green backdrops perfect for displaying colorful artwork.

Accent chairs also breathe new life into any space while adding stylish seating. Todd loves chairs so much that he collects them in all shapes, sizes, and designs—including several from famous designers. The chairs’ varied colors and fabrics create a focal point to draw the eye into the room.

In addition to the visual appeal, these chairs also maximize functionality by providing optional seating arrangements for guests. With each chair purchased, the Ehles were able to mix, match, and blend with the other furniture—such as the living room’s bamboo-style couches with colorful, inviting accent pillows— to complement their chosen vintage style. Just like the artwork in their home, the chairs transform each space into a beautiful and uniquely designed room.

The blonde wood of the table, hutch, and accent cabinet in the dining area offers a neutral addition to the mintcolored walls and colorful artwork,

making it a very relaxing and comfortable space to eat or just gather with friends and family.

The winding, wooden staircase adds the perfect finishing touch to the artful displays throughout the home. When they moved in, a pull-down stairwell gave access to a storage area. The Ehles understand that when living in a smaller home, it is best to maximize functionality, so they replaced it with the narrow, winding staircase that would allow them to access that space at any time and use it as a family gathering area.

From the patterned vases from Italy and Antique Row displayed on the mantel to German license plates from Amy’s father’s time in the service, the Ehles are happy to house their collection of personal trinkets, distinctive furnishings, and engaging artwork, and look forward to adding more pieces to their collection in the future.

A vintage Danish lamp, an original poster of a Salvador Dali work from 1969 featuring the French National Railroads, and an antique wall hanging with musical instruments are a few of the Ehle’s favorite pieces in the home.

Treat aphids with ladybugs and pinch harlequin bugs. Healthy soil (strong plants) deters these pests.

New mustard leaves are tender and mild. Bigger leaves are tougher and spicier. Each mustard plant will continually offer new leaves until spring. By cutting often, new growth is encouraged. In spring, warm weather will trigger mustard to flower and go to seed. The yellow flowers are a spicy delicacy; add to salads or to garnish fish. The seed pods can be cooked whole for powerful flavor or cut open for seeds.

Mustard greens are an unsung hero of the Coastal Bend winter garden. While kale, cabbage, and other brassicas are lovingly planted, mustard greens, due to their spicy flavor, are often ignored. But this spicy flavor, as well as the durability and rapid growth of mustard plants, are just the reason to grow them. Mustard greens have been an essential dish in India for thousands of years, because they add so much flavor to curries, soups, and lentil dishes.

Mustard has been grown in Europe for at least 2,000 years. Before the Silk Road began moving spices in bulk from the Orient in the 1400s, mustard was one of the only spices that could be locally grown in Europe. European courts employed a full-time “mustardarius” whose sole job was to produce mustard for the table.

Mustard the condiment is made by grinding mustard seeds and mixing them with water to trigger the enzyme reaction that creates the unique taste. Adding vinegar or wine to the paste allows that mustard flavor to be preserved in a jar.

But mustard greens are the real attraction for Coastal Bend gardeners during winter. The new leaves on mustard plants are tender and mild in winter salads. As the leaves grow, their bitterness and toughness increase, making them perfect for stir-fry, soups, or curry dishes. Once the weather warms in the spring, the mustard plants will shoot stalks with gorgeous yellow flowers and prolific seed pods. Carefully cut open the pods to remove the seeds.

Mustard greens are delicious when sauteed with onions and garlic. They also add a peppery bite to stews and pasta. I love throwing them in my scrambled eggs or on top of a pizza as soon as it comes out of the oven.

In spring (usually early March), mustard will be attacked by aphids and flea beetles. This simply means the cool season is over and the mustard will soon go to seed. Protect your mustard from these pests by companion planting turnips nearby as an insect trap crop—these pests will attack the turnip greens first, giving you time to harvest your pristine mustard. You can then kill these pests on the turnip greens using organic methods and still harvest the turnip roots!

Start your Halloween wreath with a base of greenery that can be modified for November. If you have a sturdy and minimal base, you can reuse it for each holiday by adding in seasonal elements.

Switch out your jack-o’-lanterns for a variety of pumpkins in different shapes, sizes, and colors. Not only will your plethora of pumpkins generate a fresh fall vibe, but they also offer an assortment of styling ideas that will elevate your front porch.

BENJAMIN SORRELL’S MENDING AND PATCHWORK TALENTS CREATE NEW LIFE FOR TEXTILES

For Benjamin Sorrell, playing a role in shifting people’s relationship to clothes and fashion is at the core of what he does. He hopes to help people learn more about the work we might take for granted that actually goes into making clothes, and to help extend the life cycle of garments.

Sorrell, a multitalented local maker and creative, is primarily a textile artist who has a skillset in other crafts focusing on recycling fabric, mending clothing, and printmaking. In tune with quality over quantity, the work and clothing he makes promote sustainability through reuse and mending. “A large focus for me is mending clothes that people love a lot and want to keep wearing for a long time,” he said.

Though his exposure to printmaking at Del Mar College has pushed the young artist to new heights in creative capacity and work, Sorrell also attributes his interests and developed skill to his great-grandmother and grandmother.

A precious memory involves his grandmother's Singer sewing machine being left behind in Mexico after moving to the United States. She and Sorrell's grandfather went back decades later to retrieve it. After much time apart, the sewing machine was there under a tree when the couple arrived. It continued to serve Sorrell's grandmother, with some tending, and illustrates the innate compassion developed to care for cherished belongings, which carries on in Sorrell's collections.

When discussing his hopes for his work and what he can achieve, Sorrell aims to promote mindfulness and "enough-ness.” Focusing on mending and upcycling, his work includes wearable art, effervescent blankets and quilts, and vibrant fabrics which can

act as curtains, room dividers, or anything else the imagination can conjure up.

"I love hearing that my work is part of someone's daily life in some way … there for the mundane as well as the celebratory," said Sorrell.

As a celebration of the support he’s received, special relationships he’s developed, and time doing garment mending and textile art, the creator is planning a fifth anniversary collection for the summer of 2022. Each piece is unrivaled and unique; Sorrell said he lets the clothing speak for itself as he is guided by the contours of the object he is working with.

How Sorrell speaks about the medium of his work shows a relationship with anything he creates exemplified in his collections. His inspiration comes from an earnest nostalgia for a time in which clothing (and most items) were more cherished and less disposable. Sorrell views his mending work as a continuation of the apparel's history, and a time capsule of the era from which it came. Garnering momentum and honing his craft, it will not be a surprise if Benjamin Sorrell begins to make history here in the Coastal Bend.

TWINING TREE FARM’S OWNERS ON LOVING THE LAND AND SELF-SUSTAINING PRACTICES

Starting From Scratch T

he road leading up to the house is rocky, slow. It allows you to take in the surrounding landscape, the way the sun pushes off the grass, expands its eye toward the rest of the land. In front of the house are two trees twined around each other, one a hackberry, one a mesquite, hence the name of the property: Twining Tree Farm.

Owned by Dawn Dowell and Dave Wallace, the homestead that sits in Mathis, Texas, and borders the Nueces River contains 12.1 acres of land that had always been somewhat on the periphery of the couple’s imagination, a sentiment that may have started in theory, but quickly became a practice of love and patience.

“It was always [Dave’s] dream to own land, but I kind of hopped on,” Dowell said.

“There’s something about the isolation of it,” Wallace said. “Self-sufficiency, I guess— that appeals to me, and has since I was a kid. My expertise is in environmental theory and literature, and I’m really conscious of how much we use all the time. I thought that it would be nice to have a lifestyle that sustains itself.”

Though they started raising chickens a few months after moving to the property, they’ve steadily been gaining traction for selling their eggs and sourdough bread, thanks to word of mouth from customers, local markets, and social media.

A quick scroll down their Instagram page immediately leaves the online peruser yearning for simpler times: a brisk walk through the trees, a lazy afternoon in a hammock, the sound of roosters crowing in the distance, the smell of fresh sourdough permeating the wood. However, life on a homestead is anything but lazy, especially for two working people doing it completely by themselves.

Twining Tree Farm offers a variety of delicious sourdough varieties such as sourdough boule, olive and parmesan sourdough, chocolate sourdough batard, and Italian-seasoned sourdough.

“We’re both full-time teachers, so time is a huge thing,” Dowell said. “Above time, is money...it’s not cheap to buy property, especially for people with a lot of college debt.”

“A lot of farms we follow on social media or things we read, there’s this idealized version of what it means to build a sustainable farmland, and it seems like they only present the lifestyle of farm or back-to-the-land movement as a done deal,” Wallace said.

“It doesn’t show how much the tractor costs, the fencing costs, the time and the labor of those things,” Dowell added.

Though right now, the couple is only focusing on selling bread and eggs in an effort to not overextend themselves, they reiterate that this is just phase I of a long plan to see the farm become something bigger, greater, and more self-sustaining.

“Phase II is setting up hydro farming, aqua farming, a greenhouse, and get some goats [to expand to cheese and butter],” Wallace said.

And though the couple has many dreams of what they hope the farm can one day become, they’re under no illusions that it’ll easily happen overnight. However, the desire to teach has extended beyond the classroom and onto the land itself. “We are learning from scratch,” Wallace said.

“Maybe if someone sees us trying to figure it out, then they’ll want to figure it out too,” Dowell said. “I’d love to teach everyone to bake sourdough and teach everyone to raise chickens. Small steps, but teaching people those things is very valuable.”

Dr. Gabriel Lopez attended and graduated from Texas A&M University, College Station in 1996 and then graduated from University of Texas Health Science Center at Houston Medical School in 2000. He then completed his Anesthesia Residency at Loma Linda Hospital in California in 2014 where he was Chief Resident. He then pursued a Pain Management Fellowship at The University of Texas Health Science Center in San Antonio.

He started his own practice, Corpus Christi Pain Medicine, in 2006 with just two staff members, but expanded the clinic quickly to now having 15 full-time employees and a nurse practitioner. The clinic is his home away from home and he treats all his staff like family. With the motto “Making Lives Better,” Dr. Lopez goes above and beyond to treat each patient’s individual pain.

Dr. Gabriel Lopez has resided in Corpus Christi for 16 years now along with his wife, Angelina and his two beautiful daughters, Gabriela 14, and Carolina 10. In his spare time he enjoys wake surfing and training in martial arts.

Dr. Lopez’s vision for improving and expanding patient care includes the addition of his new surgical center, Southside Specialty Surgical Center, which opened in December 2019 on Holly Road. BELLINO’S TASTEFUL RENAISSANCE OF CELEBRATED SPIRITS AND ITS TAKE ON THE GRANDFATHER OF COCKTAILS

On a fine evening at Bellino Ristorante e Bottega, to sip is a simple pleasure; for a fan of re-crafting the classics, the newly expanded bar is stirring things up. However, there is one particular libation on the restaurant’s newly constructed bar menu that signifies Bellino’s signature innovation. The Martinez holds everything that tastes so good about European-region ingredients. Found on the new cocktail menu, it’s served with a craft influence and an in-house twist.

“The Martinez is an old recipe—some say it’s the precursor to the martini,” explained Bellino’s head mixologist Juan Manuel. “It’s like a grandfather, and all these other drinks fall under the umbrella; it all started with this one.”

Dating back to the late 1800s, The Martinez holds deep roots in cocktail history and remains a quiet gem in the mixed drink scene. The spirit-forward cocktail is made authentically using Old Tom gin for its milder and more clarified notes. The main spirit combination is gin and sweet vermouth, specifically a red Italian; for this, Manuel uses Cocchi Vermouth di Torino, a traditional vermouth with its own history and role in the

classic cocktail era. The bold red, with aromatic layers of rhubarb, wormwood, and a slight hint of vanilla, tastes both sweet and bitter on the tongue harmoniously.

The mixologist then adds maraschino liqueur, which binds the two main spirits together with its saccharine flavor. The mixture is dashed with orange bitters and stirred in a mixing glass, then poured into a chilled martini glass, where the combined spirits have agreed to a clear shade of amber. Finished with a twist of a lemon peel, that is the Martinez. “It’s bitter, it’s sweet, and it’s balanced,” Manuel said.

The cocktail gives off a more whiskeyforward look because of the caramel-colored end result. One might even be surprised to find the simplicity of Old Tom gin creates the perfect canvas for the shining flavors of red vermouth and maraschino. In the end, it makes the gin feel as rounded and spiced as a bourbon.

“This is one of those drinks that was at the forefront for awhile,” Manuel said. “At some point, it broke off into a lot of drinks; people kind of just tried new things. The Martini rose as a further-translated spin off the Martinez, which also bears similarities to the Manhattan.” The humble recipe, unique and timeless, upheld its enigmatic nature, making it a delicate cocktail to be re-mixed again under the influences of 21stcentury craft mixologists.

The style of cocktails at Bellino’s celebrates tradition, both perfecting the classics and gently modernizing them with in-house bitters, newer spirits, and modern mixology methods. “When we built up the bar, I kind of had that in mind. This is our specialty: traditional, classic cocktails,” Manuel said. “It’s one of those things; if it isn’t broken, don’t fix it.”

A NEW STYLE OF MEDITERRANEAN TAPAS IS ON VIEW AT ELIZABETH’S AT THE ART MUSEUM

Have you heard about that new cafe in the Art Museum of South Texas (AMST)?

Yes, the one that is owned by Water Street Restaurants, but rumors are swirling that it’s a far cry from anything you’ve ever experienced from those dining experts? Of course you have. The buzz is so wild that hearing about it and getting a reservation are two different things—the latter being an incredibly soughtafter dining experience.

Inspired by the vibes of AMST, Elizabeth’s at the Museum was conceptualized according to its location, both at the museum and perched on the edge of the bayfront with those spectacular views. “Knowing it was such a unique venue, we wanted an equally unique concept that matched the museum’s purpose and energy,” explained Richard Lomax, owner and operator of Elizabeth’s and Water Street Restaurants and Catering. “In working with the creative team, we started with what we thought would fit AMST’s history, bay views, and most importantly its purpose to display beautiful and novel things to the community.”

Elizabeth’s is a surprising departure from expectations. Both Water Street Restaurants and AMST have long-standing histories in the community, so to take on the task of bringing something new meant putting the best cutting-edge culinary team together to curate a dynamite menu.

With a regional Mediterranean flair, and the desire to invoke a shared eating experience, Elizabeths' menu is full of tapas-style nosh that is rooted in highquality, fresh ingredients, and honoring those ingredients to let them shine.

Banquet and catering manager Jackson Hayes said he, Chef Jeremy Battle, and the rest of the team tested five different recipes for the burrata dish alone. “We ended up going with a super simple rendition because with quality ingredients, you don’t need to overdo it,” said Hayes, who is starting to be known affectionately as “Bread Bae.” (If you haven’t seen the photos of Hayes’ megapopular focaccia bread, head over to Instagram ASAP.)

Speaking of bread, on the menu are two flatbread dishes that are simply luscious. The Casablanca is adorned with a white sauce, ricotta, caramelized onions, garlic, fig jam, and basil. While it is enough to share, be warned that you won’t feel so inclined to do so. In which case, an order of the Blistered Shishito Peppers with whipped feta and pimento aioli will be the next star to steal the show.

Chef Battle says having the opportunity to develop such an exciting lunchtime menu has been fuel for unleashing creativity while working on the dinner menu. “With the dinner menu, we have a lot more room to play around,” he said. Keeping focus on the experience they are striving to offer diners – one that is specially curated for people and meant to be casual, educational, and enjoyable –is the secret ingredient to this successful new venture.

USS Lexington’s First Visit

It seems clear why Corpus Christi, with its history of training naval aviators, would be chosen as home to a decommissioned aircraft carrier. But what isn’t much discussed about how the USS Lexington came to its final home on North Beach is that the ship has a long history of service in the Coastal Bend, even prior to its decommissioning 30 years ago this month.

The USS Lexington we know is the fifth U.S. Navy ship to bear the name, and was built just 20 miles from the location of the Battles of Lexington and Concord in the American Revolution. With 21 months in combat in the Pacific theater during WWII, she then operated from San Diego before

being transferred to Pensacola, Florida. From there, she made regular trips to the Coastal Bend as a training carrier, beginning in the 1960s.

Naval pilots training at Corpus Christi, Kingsville, and Beeville practiced landings and takeoffs on the USS Lexington for decades, as visits continued through the 1980s. When she docked in Port Aransas in 1963, an estimated 30,000 people toured the 910-foot-long aircraft carrier.

The USS Lexington holds many records for her service and for being the first Navy ship with female crew members, so her status as museum is well earned, as is her place as part of Corpus Christi’s history.
