Many Saturdays of my childhood were spent with my Dad waking hours before the sun, heading to the Marker 37 boat ramp to take a long ride on glass water to a deserted fishing spot. We would fish as the sun rose and dip our toes in the warm water of the Laguna Madre as we watched redfish tail around us.

LL:

A favorite memory of mine comes from when I was young and my grandfather would take us on his boat to fish the oyster reefs in Nueces Back Bay. There were many treacherous places to run a boat in the bay, but my grandfather had been fishing those waters since he was a boy. He knew how to navigate to all the best fishing spots.

KB:

My all-time favorite fishing memory has to be fly fishing the flats with GOAT Chuck Naiser and JT Van Zandt. That one’s going to be hard to beat.

“TOKC is without a doubt one of the best things that has happened to me. In 2016 I joined The Triumph Over Kid Cancer Foundation as a President of a DTOT! Council and fell in love with serving the children afflicted with various forms of rare Pediatric Cancers. I also fell in the love with the story of James Ragan who used his cancer diagnosis to change the lives of other people. I remember being in awe of James, a young man who, despite having a terminal illness, accomplished so much. He never complained, loved others and lived every moment to the fullest. Being a part of this organization has made me a better person, teaching me to look outside myself and that even my worst days can be used to better someone else’s life. I remember sitting up one night and watching James’ graduation speech just being blown away by all that James had done. Not only had he started TOKC, but he graduated salutatorian in high school, played division 1 golf in college, and fought a long hard battle with cancer. I remember thinking if I could ever be half of the person James was that I could be successful. He inspired me to start and lead the DTOT! Council at Incarnate Word Academy, raise funds and volunteer whenever possible. I just love TOKC!” - Paige Lippincott, Texas A&M University College Station, Class of 2021

"The DTOT council changed my life in more ways than one. I always knew that I wanted to pursue a career that allowed me to make a difference in someone’s life and it wasn’t until joining DTOT and volunteering with TOKC that I knew it was possible. My favorite project I had the opportunity to be a part of was when a group of students from VMHS and I drove to Houston and did Christmas activities with the pediatric cancer patients at Texas Childrens Hospital. That day shifted my outlook on how I viewed a lot of things. I think as a high school teenager it is easy to have a warped perspective of life and feel invincible and take things and people for granted. But being around the kids and their families knowing that for some their time was limited taught me so much. The obvious was to not take things for granted but I think most importantly it was how to make the most of every moment you have even the bad ones. The kids had the most infectious spirit despite their battles, and I’ll never forget how grateful the families were that we were there spreading any joy that we could offer. I found my passion of giving and volunteering at an early age. While I’ve had the opportunity to volunteer for multiple organizations, TOKC is the one that I always talk to everyone about because it’s made the biggest impact in my life and as a person. Casting A Wide Net I’ve never been much of an angler myself, but my late grandfather Jack Rohde, affectionately known as Papa Jack, sure was. An avid fisherman, Papa Jack viewed the activity more as an art form – one that requires patience and persistence. As a kid, I remember being fascinated by the vast amount of fishing lures in his garage: neon pink with red glitter, flashy blue and yellow with a little feather-looking bit and on and on. When I was six years old, Papa Jack took me to Kid Fish, a youth fishing event hosted by Texas Parks and Wildlife out at Lake Corpus Christi. He picked me up before sunrise with a gift in hand: a red “Duck Tales” themed fishing pole that would fit perfectly in my tiny hands. He helped me cast the line, reel it in just enough and then … wait. Patience is not often a word associated with six-year-olds, but when you catch a fish alongside Papa Jack, the world’s best fisherman in your eyes, the wait becomes well worth it.

When reading through this month’s cover feature (pg. 34) written by Jessie Chrobocinski, you’ll notice that spark of joy, the wide-eyed reaction to pulling a catch out of the water, is the motivation behind many of the local fishing guides and experts featured. Fishing’s waiting game brings a sense of accomplishment and pride that becomes well worth the time and patience. Aside from a dive into the Coastal Bend’s fishing scene, this issue also shares the story of a local group focused on empowering women to shape their own surfboards (pg. 18), a conversation with Grammy-winning percussionist Camilo Quinones (pg. 26) and a look at Corpus Christi’s first Historic Preservation Plan in 20 years (pg. 43). Plus, a new whiskey lounge featuring fine liquors in an old-European styled setting (pg. 90), a popular Thai restaurant’s expansion to the Southside (pg. 94) and more. The end product you see when this issue arrives each month wouldn’t be possible without the incredible group of people who put it together, and The Bend is delighted to welcome several new team members. Tyler Schultz, who joined as an intern last year, has moved into a new role as Digital Media Coordinator, while Alexa Rodriguez, a Corpus Christi native with a love for all things local, has joined as Managing Editor. The Gulf Coast is home to a vast array of fish, and thanks to shallow bays protected by narrow barrier islands, fishing enthusiasts can find recreational fishing conditions year-round. So grab your gear, lather on some sunscreen and head out to one of these primo fishing pier destinations.

Cole Park Pier 1900 Ocean Drive

Originally constructed in 1971, the newly renovated fixture situated right off Cole Park offers 505 feet of brand-new concrete fishing pier. Equipped with fish cleaning stations, benches, picnic tables, lights and shade structures, it lets anglers enjoy day and night fishing with 360-degree Corpus Christi Bay views.

Keepers at Horace Caldwell Pier 230 N. Port Aransas

Known as one of the most productive fishing piers in the gulf, Keepers’ location, water depth and abundance of fish species make for a terrific fishing adventure. The concrete, lighted pier stretches 1,230 feet out into the gulf and gives anglers access to species such as king mackerel, tarpon, red fish and speckled trout. On site you’ll also find rentals, bait, food and drink.

While out and about exploring all that Goose Island State Park has to offer, be sure to cap your day off by visiting its recently renovated, lighted fishing pier. Don’t worry about bringing your own gear; there are fishing rods for rent and 1,620 feet of pier reaching out into the beauty of Aransas Bay.

Shaping a New Era of Surfboards IN A MALE-DOMINATED INDUSTRY, LOCAL WOMEN WORK TO NORMALIZE FEMALE SURFBOARD SHAPERS BY: JACQUELINE GONZALEZ PHOTOS BY: LILLIAN REITZ

T

hanks to modern technological advances, the surfing industry has moved toward prefabricated mass production of boards. However, there are a handful of surfers who prefer to savor the experience of making their own. Owning a hand-shaped board nowadays is not only an act of artistic appreciation, but also a point of pride — especially when the artisan is a woman. Three years ago, Emma Clarkson became interested in learning about the craft. She figured learning to shape would be a great way to combine her loves of creativity and surfing. As she began this journey, she realized two things: People were shocked to learn she made her own boards, and most people had never really considered women as shapers. “People would acknowledge that I made the art,” she said, “but they wanted to know who shaped the board.” Clarkson thought about ways to normalize the idea of female shapers, in addition to male shapers, in the community — and two years ago, she created the CC Lady Shapers. The Lady Shapers are cohorts of women, led by Clarkson, who work on the entire process of making their own boards, including shaping, sanding, painting and even glassing. “Shaping and glassing are two different skill sets,” Clarkson said. “Most shapers will shape their boards, and then take them to a professional glasser, but these women do it all!”

The ocean has always had a special place in Clarkson’s heart. She has a doctorate in marine biology and coordinates oyster restoration projects.

The first cohort consisted of a group of her friends, and from there, the organization quickly grew into clusters of local women reaching out in hopes of joining. Each cohort operates out of a shaping room Clarkson built in her garage; the ladies simply purchase their own materials and she provides the space, guidance and support along the way. Dara Frandsen, who has been working on her board since January of this year, acknowledges that shaping is a lot of work, but she is enjoying the transformation from the initial block of foam to an almost complete surfboard, and is excited to ride it. A new project can be intimidating, but another Lady Shaper, Kady Kreis, worked through it, especially once Clarkson walked her through the process. “I would definitely shape another board in the future,” she said, and describes the experience as “enjoyable and empowering.” Jena Floyd is enjoying the finished product and said, “knowing I made it with my own two hands, and then have it ride how I imagined it, is a pretty amazing feeling!” Shaping a board is not something Hannah Bueltel ever thought she could do, but the entire experience has inspired her to eventually create her own shaping room and spread that knowledge to other women. She particularly enjoyed learning how the shape affects the way a board rides. Now, Clarkson floods her Instagram with photos of these women at work, and hopes this will not only show their dedication to their project, but also normalize female shapers in the surfing industry.

O

n any given day, just as the sun is rising, the chances of you catching a glimpse of Carl Lee and Suzanne Allen scouring the sandy shores for items such soda cans, plastic bottles, straws and fast food wrappers are pretty high. As intermittent residents of the Coastal Bend over the last 25 years, the Allen family is no stranger to the abundance of trash accumulating on Texas beaches. In 2017, during one of their regular trips to Fish Pass, a stretch of free beach in Mustang Island State Park, they noticed their favorite coastal spot being overtaken by trash. So, they took matters into their own hands. The Allen family first joined Adopt-A-Beach through Mustang Island. Their efforts there led them to eventually starting their own grassroots organization, Beach Keepers, in 2019. The 501(c)(3) nonprofit aims to keep all beaches and parks free of debris. As time went on, so did the continuous accumulation of trash, and it became evident more help was needed. Within a short period of time, their signal was answered and the Beach Keepers’ Facebook group grew to around 1,500 members to help organize and participate in beach clean-ups — although Carl said it can be tough to encourage the members to actually head out for a clean-up. Carl and Suzanne emphasize it takes the strength of the entire community to come together and keep our environment clean. Through Beach Keepers, their hope is to continue bringing awareness to their cause by encouraging the community to participate, promoting clean beach initiatives and advocating for more resources. To get involved within Beach Keepers, join the organization’s Facebook group and mark your calendars for the Mustang Island Trash Out — Camp Out event on Oct. 23.

Carl reached out to local and state-level leaders, bringing awareness to the fact that more trash receptacles on Mustang Island State Park are desperately needed. “One of the reasons we got started was because doing nothing was no longer an option,” Carl says. The Allen family encourages their members to continue cleaning beaches in their hometowns and post to social media to inspire the next person to do the same thing. The idea is to incorporate a culture that can basically be done anywhere. For the nonprofit to continue its valiant efforts, it needs help: volunteers, clean-up participation and donations. A future goal of the organization is to work with school districts to teach the next generation of beach-goers the importance of taking care of our environment. To date, Beach Keepers has hosted 31 cleanups, resulting in the removal of an estimated two tons of trash from area parks and beaches. However, this is only the start and the metaphorical Bat-signal is still in the sky, hoping to inspire others in the community to join the fight in protecting our only home.

mind-blowing! Finding out Native Sons was nominated for a Grammy was such a huge deal to me. I didn’t even know how to celebrate that step without jinxing the possibility of a win … I was at lunch when I found out about the album winning; I remember my head feeling kind of hot. The concept behind Native Sons [was] well-respected L.A. legends Los Lobos returning to their musical influences, paying tribute to their favorite L.A. area bands and songs. In my experience with Los Lobos, it’s always about enjoying the music they’re making, that’s paramount — and it translates to the listener’s enjoyment. Native Sons had a song for everyone who grew up listening to the bands of California.

TS: With Los Lobos being so influential, I can imagine the excitement of getting to work alongside them. What was your initial reaction when they asked to work with you on this album? CQ: I’ve been working with Los Lobos off and on in live settings for close to 10 years now… including a live recorded album and broadcast performance on ACL live, but being invited to participate in a studio recording was always a dream of mine. As you can imagine, I was completely elated when the call for a few shows included a quick mention: “Hey, we are gonna rehearse at the studio where the guys are recording, can you come a day early so we can have you put some percussion on a couple of tunes on the new album?” So I immediately responded, “Hell yes I can!” TS: The album you worked on, Native Sons, took home the Grammy for Best Americana Album, and deservedly at that. What was this experience like for you personally? What do you think made this album such a success? CQ: For me, every part of it has been an incredible honor. I was excited to record one song on a studio album with four-time winning, 12-time nominated Los Lobos. When one song ended up being seven of the 13 songs on the album, that was 26 The Bend

TS: What are your greatest takeaways from being a part of this Grammywinning project? CQ: Really it’s been motivation in its purest form. Being part of an album that got awarded arguably the highest honor in its respective field really does hit differently. I made two songs the day I found out. TS: Americana is known for pulling influences from many musical genres. What do you feel defines the genre today? And what do you think makes your role in it and working with Los Lobos particularly special? CQ: Well, first and foremost, working with Los Lobos is a special honor in itself. The band, as a band, is older than I am. So being part of their legacy and a history that will be forever documented by these future hall-of-famers is an incredible addition to my ever-evolving career in music. I think as a style, Americana was traditionally defined and continues to be defined by instruments and music that evolved during the course of American history. Americana as a style, in my opinion, will continue to evolve to include more traditional influences from different


cultural backgrounds. People from all over the world are now multi-generations deep in America, and their cultures are seamlessly influencing cuisine, art, music and much more in this country. For instance, I played instruments and rhythms on Native Sons that are from two or three different countries. I’m a first-generation half Puerto Rican, half Cuban, 100% Chicano American having participated in an Americana album and that album getting awarded album of the year. I feel like it’s an American dream come true. Obviously, it’s really special and hopefully motivating for people trying to find their musical voice. TS: As a drummer, I know you’re involved with many groups and projects. One project I particularly enjoy is Beach Café, released in 2020. The music you make has a free-flowing groove that’s both chill and energizing. Can you tell me about the influences of these songs and what inspired you in making them? CQ: Wow, thanks, man! I’m happy to hear that type of reception for a project so personal to me. Beach Café was the first instrumental project I produced and engineered. I invited my friend, trumpeter and composer Ryan Montaño, to top-line some music I was making and it turned into this project. The music on Beach Café really represents a lot of my musical influences and inspirations. Traditional Latin percussion and rhythms, mixed with some ’90s R&B, and a little bit of “jazzy” style instrumental trumpet leads, all seamlessly mixed together with computerbased electronic production techniques and approaches. I feel like it’s a natural evolution of all my musical influences, culminating in a new style I’ve been toying around with under the term “Latino LoFi.” I have several other Beach Café EPs already in the works that I can’t wait to put out.

Texas' coastal habitat supports thriving populations of fish species that give anglers a tremendous range of catches to enjoy, making it home to considerable sport and commercial fishing. The 3,700 miles in the Gulf of Mexico's shoreline are home to more accessible common species, and there is ample opportunity to catch different suites of species offshore. With the help of Dr. Greg Stunz, Endowed Chair for Fisheries and Ocean Health and Center for Sportfish Science and Conservation Director of the Harte Research Institute, we’re giving insight into iconic fish species that are the most popular among the local fishing community.

Red Drum

Red drum, also commonly known as redfish or reds, are typically found in shallow waters and grassy flats where anglers can see schools "tailing" the surface as they feed vertically. Fishing from the pier, jetties and the surf during fall and winter gives the best opportunity to reel in this catch.

Flounder

Mature flounder are known to migrate to the Gulf to breed in the autumn season, the time when this fish is considered the best to eat. Caught by rod and reel, flounder takes all types of natural and artificial baits.

Spotted Sea Trout

These trout prefer shallow habitats such as oyster reefs and marshes. Anglers can catch spotted sea trout from wading in shallow areas or piers, using live shrimp as bait.

Black Drum

Generally found in the warm, shallow flats of the Laguna Madre, black drum can adapt to a wide range of habitats, including shallow bay waters to deep Gulf waters. They’re best caught during the summer months.

Sheepshead

Easily spotted by their vivid black and white stripes, sheepshead like to hang around underwater structures like pier pilings, jetties and bulkheads. Handle this catch carefully, as this lively fish has an array of spines along each fin.

Red Snapper

Perhaps the most iconic offshore fish is the red snapper. Heavily regulated federally and by the state, this catch has limited seasons for fishing. Check the Texas Parks and Wildlife handbook for rules and regulations about catching this species.


Dolphinfish (Mahi-Mahi) Not to be confused with the bottlenose dolphin, the dolphinfish is a beautiful, colorful fish found in the deep waters of the Gulf of Mexico. Dolphinfish are a popular aquatic gamefish due to their showy leap in the air when hooked. This catch will take just about any natural bait when trolled.

King Mackerel

Schools of king mackerel migrate from early summer until October, making them a favorite offshore gamefish along the clear green waters of the Gulf coast. The kingfish is often caught with ribbonfish or mullet as bait, but will also take artificial lures.

Cobia

Referred to as Ling in Texas, this species has a shark-shaped body reaching lengths of 70 inches and weighing more than 100 pounds. This highly sought sportfish is considered excellent eating, especially charcoal-broiled or deep-fried.

THE KIDS ARE ALRIGHT ... at fishing

Fishing is excellent for kids to spend time outdoors and interact with nature, plus it makes for some of the best memories. Family Fishing Charters offers inshore fishing excursions geared toward the kiddos and designed to be exciting and fun for the whole family — no prior experience necessary. Based in Ingleside, Captain Dan Wilkerson's fishing guide service specializes in taking first-time anglers out, introducing them to the sport and teaching productive techniques new fishers can apply on their own "I wanted to become a guide since I was around seven years old, when my grandmother purchased a guided fishing trip from a charity auction and gave it to my dad,” said Captain Wilkerson. “I don't think we ever caught any keepers, but I had fun and remember telling my pops on the way home I was going to figure out how to become a captain, and here we are. I just hope one day I inspire some kid to follow his dreams the same way that gentleman inspired me.” Fishing with kids is a different animal, but there are a few tricks to make the experience better. Whether you use a fishing guide or not, taking time to practice with kids is easier than you might think. To help you get started, Captain Wilkerson has a few tips for your next fishing trip.

TIPS FOR FISHING WITH KIDS 1. Lower your standards. Kids don't care

4. Bring a hook remover for catfish and questionable species. When in doubt, do not touch it, but try to release it carefully.

2. Small hooks and dead shrimp on a kid-sized fishing pole will always produce non-stop action off a pier or boat. Usually, you can sneak out a rod to catch bigger fish while the kids stay entertained with perch.

5. Pick up a Texas Parks and Wildlife Department outdoor manual to stay up to date on fishing rules and regulations. Remember, all adults over the age of 17 are required to have a valid fishing license.

A sea change in the sport of fishing has happened in the last decade, with women leading the way. Following female pioneers who blazed a trail for women in fishing, these three local female anglers are not just reeling in their own catch, they're inspiring other women to do the same. Jen Merchant grew up running and fishing the creeks and lakes in East Texas with her dad and brother, and has spent more than a decade as the first female surf fishing guide on Padre Island National Seashore. The thrill of not knowing what's going to be on the line, what's going to bite next, is one element that fuels Merchant’s love for saltwater fishing. Always an outdoorsy type, Merchant shares how she had to learn for herself the differences between fresh- and saltwater fishing. “I would look up a different species, let's say redfish. I know how to target redfish. So, I would read up on them, watch YouTube videos about when they're biting, what they're biting on and the best time of the year to catch them. Then I would target that species until I caught it. I did that with every single species until I got what I was going for,” she says of her early angler days. Upon moving to the Coastal Bend, she didn’t see many women fishing — so she decided to change that. What started as basic lessons for women and children evolved into a full fishing guide service, Fishing with Jen. Now, Merchant is sharing her knowledge to help others learn and experience the joy of fishing. "There were some women who wanted to learn to fish, but didn't know [where to start]. They felt intimidated, which got me thinking about teaching them how and doing lessons

for women and children — that's what got me started with guiding,” said Merchant. “I get joy from fishing when I put somebody else on a fish they've never caught, especially women and children. I love seeing the white in their eyes open. It's so much fun to put that drive and love for fishing into somebody else.” Another female angler who carries a hands-on approach to empowering women to fish is Kelli Green, who owns and operates Blonde Bomber Guide Service. Specializing in bay fishing trips, Green guides in the shallow waters where redfish, black drum and spotted sea trout can be found. She believes consistency is key for a woman in a male-dominated field. "I was super lucky getting into this field. I credit so much of what I've learned and done to Jennifer DeLeon, who's been a guide for about seven or eight years now. She taught me a lot about what to expect being a woman in this field: Just don't stop. There are bullies everywhere. Just keep doing your thing and let them deal with it," Green said confidently. Her motivation to keep going stems from the sheer happiness and excitement she sees on customers when they nab their first catch. “Whenever you have a little kid on the boat and it’s their first-ever fish, you see their face light up. Or when you [hook] into the fish and the customers are so excited. Seeing them light up is the best,” Green said. For local angler Nina Stenholm Garrett, the love of fishing goes beyond catching the biggest fish. Garrett and her husband volunteer their time on the water with

different organizations to help disabled veterans rediscover their purpose and improve their life. Garrett's husband works in public safety, bringing him face-to-face with veterans who have built a career as first responders. Initially, Garrett says her husband's focus on shark fishing with veterans was intimidating for her, but she continued to join him and eventually became more proficient. "The first few trips, I just observed and cooked catches,” Garret said. “I wasn't really all that hands-on, but once we started going year after year, I got more active to the point where I was like, ‘Okay, now we got to get lines in the water, let's do this and that.’ I saw the satisfaction after that because we would stay there all weekend, shark fishing day and night, camping on the beach and cooking all their meals, sitting around talking. It became valuable to me because I saw how much they enjoyed it.” Having experienced that fulfillment time and time again, Garrett found a way to become a more active angler with kayak fishing. Her volunteering journey brought her to take veterans out on kayaks with Heroes on the Water, where she became the organization's first female fishing team leader. The beauty of fishing is that there is something there for everyone, whether you aspire to become a guide, volunteer your time or simply get out there and try on your own. These women are rewriting tradition and inspiring observers of all ages by using their love of fishing, and determination to learn new fishing skills, to set an example of how female anglers can make waves of their own.

The Coastal Bend is a fishing paradise for multiple reasons. Aside from a robust variety of species, the South Texas coast offers some of the most accessible and affordable fishing methods. While particular sportfish are only reachable by boat, there are plenty of local fishing spots to sink your next line.

Pier Fishing

Numerous pier fishing options offer anglers easy access to over-water fishing. One local favorite is Red Dot Pier. Open 365 days a year, anglers come here to catch popular varieties of fish that lurk alongside the Humble Channel. Plus, it sells tackle, beer, soda and snacks to make your fishing an enjoyable experience.

Wade Fishing/Fly Fishing

Driving along the JFK Causeway, you'll see anglers wading out in the Laguna Madre with their rod in hand. Wade fishing requires patience as anglers stand in the water targeting fish with conventional or fly fishing gear. For those new to saltwater fishing, consider booking a lesson with Doc's Fishing Clinic and Guide Service.

Surf Fishing

Corpus Christi offers miles of easily accessible shoreline that's great for reeling in redfish, trout and even sharks. Padre Island National Seashore combines nutrient-rich estuaries with the Gulf of Mexico, creating an excellent habitat for an array of sea animals. Kayak Fishing

Many popular fish species prefer to skim across barrier island reefs and shallow flats that are best accessed by boat or kayak. Near the north-side ferry landing in Port Aransas are the Lighthouse Lakes Paddling Trails, which are a popular kayak launch spot and provide bank fishing along the channel.

Charter Fishing

Corpus Christi is home to multiple top-notch fishing guides. Booking a charter guarantees you the best spot for fishing, depending on the type of adventure you choose. Search for toothy apex predators from the beach with Eric Ozolins at Ocean Epics Fishing Charters, or choose a deepsea fishing trip with Coastal Cowboy Fishing Charters to catch the next "big one."

If you're looking for a first-class fishing experience, the Coastal Bend offers hundreds of fishing guides with various specialties. No matter your expertise, fishing guides are an added advantage to any fishing experience if you want to learn about the fish you catch, tactics and much more. All you need is a fishing license, sun protection and a good pair of polarized sunglasses, leaving the rest to the guides. Depending on the type of fishing you're looking to do, guides tailor the experience so you can maximize the enjoyment of your time on the water. Captain Marcus "Doc" Haralson is the owner and operator of Doc's Fishing Clinic and Guide Service. He serves as a full-time professional fishing guide specializing in year-round fly and light tackle fishing trips in Corpus Christi and Port Aransas. Doc describes fly fishing as a tranquil and intimate experience that requires patience. However, fly fishing in the Coastal Bend is slightly different than most places. With the added factor of wind, fly fishing can be challenging and intimidating to anglers as it requires a certain technique. That's where the benefit of a guide comes in. "It cuts down the learning curve a substantial amount. We're able to help you with your casting, critique you and work with you to get you dialed in better and more efficiently that way. I'd say it's more technique. It's like golf," said Haralson. Whether it's a family-friendly fishing adventure, slow-paced fishing immersed in an

appreciation of nature or an adrenaline rush while reeling in a big catch, considering which type of fishing you'd like can narrow your guide or charter search. One fast-growing popular type is shark fishing. Texas is known for big shark fishing, and while the practice has been iconic in Texas since the ’60s, the mentality of shark anglers has evolved to a conservation mindset. Eric Ozolins of Ocean Epics Fishing Charters has been shark fishing for more than 20 years. As the only licensed shark fishing guide in South Texas, Ozolins focuses his charter experience on education when taking people fishing. "I'm a guide in the surf, the vast majority of my fishing is from the surf, and it's all land-based,” he said. “Most of my [guiding] is done at Padre Island National Seashore. I mainly target sharks and big game. I do a lot of cooperative research with the Harte Research Institute, so I do a lot of tagging and releasing of all the various sharks I catch. My charters display more of an educational aspect, whether it's kids or people who do it all the time; I do more teaching, educating [about] the resources, what we have around here and just the general fishery." While every guide service is unique to a fishing specialty, an excellent fishing experience leaves you with new things learned, laughs and stories to share. Whichever type of adventure you choose, using a fishing guide will leave you with an enriched experience.

BOOKING A FISHING GUIDE AND CHARTER IS THE ULTIMATE WAY TO ENHANCE YOUR EXPERIENCE ON THE WATER


Artificial Lures Lures come in various shapes and sizes, each uniquely designed to catch a wide variety of fish species. Some of the most common include spoon, soft plastic and topwater lures.

SPOON LURES

When deciding which bait to choose for fishing, there are a few tips to produce the most bites. In general, fishing enthusiasts can find most live bait in the same waters they choose to fish. However, if you want to go straight for the jugular, live bait, such as shrimp or croaker, can be purchased from local bait and tackle shops. Marker 37 bait-house manager Ayden Smith breaks down the most common types of live bait and artificial lures Marker 37 provides.

Live Bait According to Smith, this time of year is when guides tend to use croaker and shrimp for inshore fishing, attracting the likes of trout, flounder and redfish. "Typically the pros know how to use croaker properly, and the laymen [fishers] use shrimp. Guides usually switch [to live bait] in the summertime. They use five-gallon buckets of the same water we use in our tanks, so the water follows the fish on the boat," said Smith. “When you throw croaker, you'll want to use a chatter weight. Throw it out and let it swim, and when you feel it stop, you just twitch it to make it start swimming again." Shrimp are among the most common live bait, because nearly every fish species eats them. However, if you want to fish like the pros, Smith says juvenile croaker is the choice for catching trophy fish like trout and redfish. Marker 37 offers a wide selection of live bait and artificial lures, including ribbonfish and offshore trolling lures, which are best for catching kingfish.

Spoon lures were originally actual spoons with the handles cut off. Now they have evolved to a much more efficient concave shape, which makes them glimmer through the water to resemble injured bait fish.

SOFT PLASTIC LURES Soft plastic lures are small rubber baits resembling various sea critters, from worms to minnows, to help anglers fish effectively without using live bait. The color of soft plastics should blend in with the natural surroundings.

TOPWATER LURES Topwater lures mean the lure floats on top of the water, allowing anglers to work with a twitching action to make it walk on top of the water. Smith recommends using this lure in the early morning, as redfish and trout love to bite this bait when the sun is coming up.

historic buildings we enjoy, around the world, across the nation and right here in Corpus Christi, did not survive by pure luck. They survived because they were valued — because people decided over and over again through their history these were places that mattered and should be cared for. Often, it’s the realization that a building matters not just to its owner, but to its community, that ensures its survival. Historic structures are visible signs of our city’s growth and progress through time. Corpus Christi has a lot of history to be proud of, but several cases of neglect or demolition of much-loved buildings overshadow the ones whose fates still lie in our hands. There is work to be done to make sure buildings and spaces deserving of preservation survive, and furthermore, continue to serve the community for generations to come. CITIES CAN EITHER SIT BACK AND LET BUILDINGS AGE INTO OBLIVION, OR THEY CAN PROACTIVELY PUT INTO PLACE WAYS FOR CITIZENS TO RECOGNIZE, HONOR AND PRESERVE THE PLACES THAT MATTER TO THEM AS A COMMUNITY. THIS MAY, CORPUS CHRISTI DID THE LATTER. CITY COUNCIL APPROVED THE CITY OF CORPUS CHRISTI’S FIRST HISTORIC PRESERVATION PLAN SINCE 1992 TO GUIDE US INTO A NEW ERA OF HISTORIC PRESERVATION. Corpus Christi and Nueces County are part of the Certified Local Governments (CLGs) program through the Texas Historical Commission. The CLG program empowers local governments to maintain preservation programs, including eligibility for grant funding and resources to help their communities. Several CLG grants have been awarded locally in recent years, including support for the Old Bayview Cemetery National Register nomination, a Historic Sites

Survey to document existing historic buildings in a portion of downtown and the work to produce the Historic Preservation Plan itself. These projects happening back-to-back are evidence of the momentum building in Corpus Christi’s historic preservation movement. Starting in 2019, city staff and Landmark Commissioners worked to prepare the grant request outlining the substantial need for an updated preservation plan. The city’s more recent planning documents — including 2016’s Comprehensive Plan, Plan CC — tasked the city to support reuse of historic buildings, but did not provide a roadmap for doing so. While multiple buildings had been recognized through listings such as the National Register of Historic Places in recent years, including the Galvan Ballroom in 2015 and the 600 Building in 2016, it had been 15 years since a new local landmark had been recognized before those comparatively recent additions. It wasn’t for lack of deserving spaces, but because there isn’t a general understanding of the process and benefits of being declared a landmark. There are also widespread misconceptions about historic preservation, such as that it will not allow building updates like new paint and windows, when in reality it is just a matter of communicating these updates and choosing solutions appropriate to the historic structure. A new preservation plan to lay out the path for more citizen engagement in and support for the preservation of Corpus Christi’s history was very much needed — before more historic sites are lost to time. “The adoption and implementation of a new Historic Preservation Plan is necessary,” said Landmark Commissioner Madeleine Fontenot. “This is the first step in ensuring the places that matter

in Corpus Christi get the attention and protection they need. It is vital that we do the work now to preserve history and those spaces for future generations. Seeing the progress gives me hope for the future of our city through the preservation of our past.” Hundreds of citizens were involved in the plan, which was written by McDoux Preservation, LLC. Public meetings were held, interviews were carried out with stakeholders and a review of the current and past state of preservation in Corpus Christi was completed. Most importantly, the process of researching and writing the plan got people talking about preservation in a positive manner as they looked to the future, not back at buildings we had lost in the past. SINCE LAST FALL, THERE HAVE BEEN THREE LOCAL LANDMARKS ADDED TO THE REGISTRY, INCLUDING CITY BAKERY (808 S. 19TH ST.), BOARRI (817 S. STAPLES) AND THE TODD-BUDD HOUSE ON PARK AVENUE. IN EACH CASE, THE OWNERS OF THE BUILDINGS STOOD UP TO SAY THAT THEIR SPACE WAS SOMETHING SPECIAL WITHIN THE COMMUNITY AND REQUESTED THE DESIGNATION FROM THE CITY OF CORPUS CHRISTI. THE LANDMARK COMMISSION, PLANNING COMMISSION AND CITY COUNCIL ALL REVIEW AND APPROVE EACH CHANGE OF ZONING TO DESIGNATE A LOCAL LANDMARK. Elias Castillo is the fifth generation of the City Bakery family and after researching the family bakery’s story, he became more convinced than ever it was deserving of recognition. “There were community outreach events at the bakery for the League of United Latin American Citizens (LULAC),” he explained. The local landmark designation “solidifies the bakery’s place within the community and as part of


Corpus Christi history.” Castillo recognizes that “Corpus Christi is changing and progressing” but pursuing landmark designation allows the bakery to take part in “providing stories and providing this history to merge history with new business” as we move forward. It takes engaged citizens to weave historical structures intentionally into the fabric of our 2020s community. Historic preservation for many years focused on the architecture and not on the stories, but the decision about what to preserve is about much more than a physical structure. The Historic Preservation Awards, presented by the Corpus Christi Landmark Commission, highlight the forward momentum the city's preservation movement is experiencing. The awards, presented each May during National Preservation Month, celebrate the rehabilitation and revitalization efforts made by various local entities. "Corpus Christi has a long and storied history of resiliency and preservation. Recently, projects and organizations were awarded for exemplifying best practices in historic preservation, including ButterKrust Storage LLC for the rehabilitation of the historic ButterKrust Bakery building and the Naval Air Station-Corpus Christi for its dedication to retaining and preserving significant World War II-era buildings," said Corpus Christi Mayor Paulette Guajardo, who supported the passing of the new plan. "These tangible symbols instill a sense of pride and cultural identity in residents who see and occupy them, connecting them to their city’s greater place in history." Today, preservation professionals work to recognize the places that matter — the places where community is built and where a community’s history takes place. Sometimes, that’s a place like City

Bakery, where a family’s recipes become a cornerstone of the neighborhood. Other times it’s a home typical of a period from another century, like The MerrimanBobys House in Heritage Park, built in 1851, where the injured were treated during the Civil War; or a grand example of architecture like the 1893 Victorianera Queen Anne style Sidbury House in Heritage Park. The new plan states that “unsurveyed/unlisted potentially historic resources in Corpus Christi represent significant unrealized economic opportunities.” These economic benefits consist of not only tax incentives at the state and federal level for National Register properties, but incentives offered through the Downtown Reinvestment Zone (TIRZ #3) to property owners. The Downtown Management District is working to revitalize downtown with living, office, retail and leisure spaces by occupying vacant and underutilized buildings, many of them historic. Dozens of buildings in the TIRZ#3 zone are eligible for the National Register of Historic Places and its tax advantages, and owners can stack these with TIRZ#3 reimbursement funds. These benefits are in addition to the more general economic impact of bringing a building back into service, extra tax revenue and even tourism dollars gained for the city. THIS NEW HISTORIC PRESERVATION PLAN CALLS ON THE CITY TO INCREASE ITS CAPACITY FOR SUPPORTING PRESERVATION, BUT ALSO GUIDES THE CITY TO TAKE ACTION TO ENABLE COMMUNITYDRIVEN HISTORIC PRESERVATION. THE BALL IS NOT JUST IN THE CITY’S COURT WHEN DETERMINING THE NEXT STEPS IN THIS EFFORT. CITIZENS PLAY AN IMPORTANT ROLE IN IDENTIFYING THE PLACES THAT MATTER TO THE COMMUNITY

AS A WHOLE. MUCH OF THE CHALLENGE OF PRESERVATION IN CORPUS CHRISTI IS THAT PEOPLE REMEMBER THE TIMES WE HAVE FAILED TO PRESERVE THE PLACES THAT MATTER TO US. THOSE STORIES OF TREASURES LOST ARE WHY A NEW HISTORIC PRESERVATION PLAN WAS SO NEEDED. What places would you miss if they were gone? What buildings have witnessed the growth of our city as we near the 100th anniversary of the Port of Corpus Christi and the business boom that followed? What do you want to survive to show the next generation? Those sites are what historic preservation is about. Those places are the ones that need to be recognized, honored and cared for in perpetuity. The Historic Preservation Plan is a guide — it is not a list of things that will happen. Much work is ahead both at the governmental level and in the community to realize the benefits of historic preservation, the history of what makes our city special and the things we can do to preserve it for future generations while enjoying our historic spaces today.

Now Experiencing: Reformer Pilates Created in the 1920s by Joseph Pilates, and further developed by his wife Clara, this popular form of exercise has been around much longer than its existence in the mainstream health and fitness world. Though the practice has evolved through the years, the core of its founders’ methods remains at the center of the practice. While Pilates can be done from a mat, the traditional practice takes place on a piece of equipment designed by its creator, the reformer. There are a handful of local studios that offer Reformer Pilates lessons. We sent two of our team members out to different classes to report back on their experience to our readers in the hopes of inspiring your next workout. "My only prior experience with this practice was in the form of Pilates Matwork YouTube videos in my own living room. Enter: Studio Be Pilates. The studio boasts an intimate and welcoming atmosphere, which made my first Pilates class less intimidating. I had a private session with the knowledgeable Certified Comprehensive Peak Pilates instructor Spencer Gambill. Upon arrival, Gambill and I chatted about my slim familiarity, typical fitness regimen and past injuries to gain insight into my capabilities. Classes are generally around an hour long and incorporate the entire body. I opted to take the class barefoot, although Gambill did say some wear socks with grips. Gambill informed me of the four parts our session would move through, A: Reformer, B: Fundamentals and Matwork, C: Individual Needs and D: End. Parts A and B – which Gambill explained are interchangeable for intro level one and full level one individuals –consisted of various elements of core strengthening, spinal stabilization and mobilization, breathing techniques, flexibility and strengthening. In Part C, we focused on my hips, a problem area of mine, and lastly in Part D, we worked on opening my shoulders in 'Butterfly' on the Tower of Power. "I have always admired Pilates and it’s something I have longed to be 'good' at. Having a background in yoga, I figured Pilates wasn’t too far of a cry from the types of movements and techniques I’d grown to love, especially Pilates on a mat. But it was the reformer machine itself that was new to me, and although I’d participated in one previous introductory session, my recent class at Bayside Pilates still felt like uncharted territory. First, what I loved about the session at Bayside was the intimacy of the class size. There were six reformer machines total and five students in the Saturday 10 a.m. “Semi-Private” session I attended, including me. The class, led by the lovely and highly knowledgeable instructor, Heather McVey, was challenging and engaged the entire body through deliberate, continuous movements. I found the session to be inclusive of all levels with zero judgment and I felt encouraged to go at my own pace, while at the same time supported in the quest to push myself further. While the bulk of the class was done on the reformer machine itself, additional props like resistance bands were added to create stability or up the intensity. Two days after the class, it was evident that I 'earned the burn.' My body was sore but I felt stronger and more mindful of my posture." Read full article online.

H

ealth and wellness has always been on my radar as a former dancer, gymnast and cheerleader. However, it became a priority when I met my husband, who’s owned health clubs for 25+ years. When we met in 2007, as a young woman in my mid-20s coming off my “care-free years,” I was quickly, fully immersed in the exercise and nutrition industry and exposed to information I had never heard before. I started working in the industry and it was an easy transition to incorporate all the new things I was learning. Though there can be conflicting schools of thought on optimal diet and exercise programs within the industry, I’ve never been one to buy into the diet culture. Having spent a portion of my 20s in New York, I became quite the foodie, so finding a balance was and is important to me. My approach to a well-balanced life is consistently moving my body, making healthy food choices and not stressing out about indulging when I choose to. I’m not attached to any specific diet and I love all sorts of cuisine. I believe in being flexible with yourself based on what your body is telling you. My family travels often, and we also love to support local restaurants, so we do the best we can with balance. Lots of veggies, proteins, complex carbs and healthy fats are typically what I shoot for when building a meal. Eating for pleasure and what makes my body feel its best is the ultimate goal. As the mother of two young daughters, it is important to me that my girls see a healthy mom who doesn’t agonize over food choices or a missed workout, but who has healthy habits when it comes to nutrition and exercise. I encourage my daughters to listen to their bodies and stay active and try new things, and strive to do the same for myself. Staying active three to five days a week is nonnegotiable for me – even if it’s just a long walk. It cleanses my body of toxins, keeps my organs functioning and makes me feel like the healthiest version of myself. If I’m not regularly working out, my skin is dull, my hair grows slower and I feel sluggish. My body is also happiest when exposed to natural sunlight, so I get outside as often as I can. I see a huge difference in sleep quality, and mood. Plus, nothing beats the benefits of natural vitamin D.

I lived in New York City for four years in the early 2000s and there I discovered Pilates, which I’ve been practicing regularly ever since. I attribute my overall ability to maintain a healthy body and muscle memory, especially after two children, to my consistent Pilates practice for the past 20 years. A MIX OF MODERN AND VINTAGE DESIGN IN AN ARANSAS PASS NEW BUILD BY: CECILE GOTTLICH PHOTOS BY: JASON PAGE ransas Pass is known as “Saltwater Heaven.” The Coastal Bend town is just a 30-minute drive from Corpus Christi. Its breezes off the bay, incredible fishing and proximity to the beaches and restaurants in Port Aransas make it a destination for tourists and locals alike. Which is exactly why Native South Builders chose the area for its newest development. When Native South Builders approached me to help design a few of its new builds, I was instantly inspired by the modern farmhouse nature of the homes. Modern farmhouses are becoming a more desirable style in Texas, but this architecture isn’t as common in the Coastal Bend, and Native South Builders saw the opportunity to bring this style to the area. The design is intended to embrace tradition and evoke feelings of warmth and comfort — with a modern spin. Departing from a rustic, country look, modern farmhouse adds more contemporary touches like clean lines, a neutral color palette and a mix of old and new. These were the main characteristics I wanted to incorporate when designing the homes; fortunately, we found a buyer who had the same intention in mind.

Homeowner Jackie Otwell became involved while we were still in the design and construction phase, which allowed us to collaborate on the final finishes and add architectural details. Otwell, who grew up in Ingleside, knew she wanted to buy in the area. Although she originally wanted to purchase an older house, she was pleasantly surprised when she discovered the Native South homes. “I was very satisfied with the finishes that came with the house. There’s a lot of thought put into these finishes, and only minimal changes needed to be done by me,” she said. In the kitchen, we chose charcoal gray base cabinets and creamy white uppers. We also selected 60 The Bend

modern brass pulls to add edge to the traditional Shaker style cabinets and framed the vent hood with floating wood shelves. These shelves are the perfect opportunity for Otwell to display her favorite dishes, framed art and potted plants. Once Otwell moved in, she continued the design process and made her own personal touches with thoughtful styling of her home. One of the first projects she completed was the addition of the plaster fireplace. “I needed somewhere to put the TV,” she said, “and I love having a mantel to decorate during the holidays.” The open space under the staircase was always intended as a breakfast nook, but Otwell infused character into this space by

adding wainscoting, floral wallpaper and a new rattan sconce. Salvaged antique frames paired with art Otwell found on Etsy finished off the nook. “I wanted an old house because I wanted the character,” she said. “Since I ended up with a new build, I’ve just added it.” Otwell has added even more charm in the bathrooms. She wanted to showcase the shower wall tile, so she opted for a black paned glass door instead of the typical shower curtain. She also gave interest to the vanity wall by installing paneling, with an earthy mushroom color that adds warmth to the space. Around the corner from the downstairs bathroom is the primary bedroom, where the black four-poster bed is topped with layers of cozy texture. A taupe throw covers the waffle duvet while assorted pillows add subtle color and pattern. The thrifted vintage nightstands received a makeover with a coat of seafoam green paint. My design intention for this home was to create a comfortable, airy space in which any homeowner could add their own style. Otwell’s love for thrifting combined with her keen eye have led her to creating a very personal and charming home. “My home is a good representation of me. It’s very dynamic. Life is chaotic, so my home needs to be peaceful, pretty and suited to me.” 64 The Bend

The Flame of the Woods PLANTING IXORA IN THE COASTAL BEND BY: JUSTIN BUTTS

I

xora is a smallish, evergreen shrub covered with large clusters of gorgeous blooms throughout spring, summer and fall. Because of those clusters of bright scarlet flowers, it is known as “the flame of the wood.” It is native to India, where it’s frequently found growing wild in forests and fields, and the variety coccinea is cultivated in home gardens and backyards for its medicinal qualities. The plant is also known as “West Indian Jasmine” due to its fragrant aroma and ubiquitous cultivation in western India. Ixora grows extremely well in the Coastal Bend, and will bloom year-round if protected from winter frosts and freezes. This dense shrub grows into a mounded shape, and is best grown as a specimen plant in the garden, although you can also plant several ixora in a line as a colorful backdrop for shorter, smaller flowers. It makes a fantastic potted plant on a patio or deck when receiving full sun. When potting, place ixora in a large planter to allow room for full-sized growth. You’ll want to water often in the summer, as it can take any heat, but needs plenty of water to thrive. On the infrequent nights we experience a frost or freeze in winter, bring your ixora indoors until the freeze passes. Protecting your potted ixora from the cold will likely keep it blooming throughout the year.

Spacing, 18” to 24”. Height, 24” to 36”. Plant from transplant in full sun. Requires rich, well-drained soil. Add plenty of organic compost and several cups pastured poultry manure per plant. Add several cups compost and fertilizer each spring for summer blooms. Requires regular waterings throughout summer and does not have pests.

Large clusters of scarlet, orange, golden or white flowers will bloom depending on variety. Blooms last a long time on the plant and in flower arrangements. Take blooms often to stimulate new flowers. If new flowers are slow to appear, add fertilizer to soil at base of plant. Also, add one tablespoon each of molasses, liquid seaweed and fish emulsion per gallon of water; pour fortified water directly over plant as needed.

Ixora grows into a mounded shape. Because the bottom parts of the plant will touch but not the top, they won’t make a traditional hedge. They are lovely planted in a line against a wall or fence with shorter flowers planted in front. The evergreen leaves and colorful blooms create a gorgeous backdrop for smaller flowers. They are also nice as specimen plants in the garden.

Ixora has been used medicinally in India and China for hundreds of years. The leaves, flowers and roots of the variety Ixora coccinea are frequently used in Ayurvedic treatments, especially in teas or added to soups. Ixora is rich in lupeol, anthocyanins, quercetin and many other healthful phytochemicals. It also contains anti-bacterial properties and is used to treat chest congestion and other ailments.

TEXTILE TEMPTATIONS When sourcing vintage linens, natural fibers are key. Cotton napkins are wonderful, but linen is even better, especially Irish or Italian linen. Don’t be afraid of care — even the prettiest sets of napkins were made to withstand washing, and you will be surprised at how durable they still can be. Keep an eye out for interesting patterns — florals or geometrics are always a hit — and beautiful embroidery. The most coveted style of embroidered linens is from Madeira, done by hand on the Portuguese archipelago. Madeira embroidery can range from classic elegance (think flourishes and monograms) to tongue-in-cheek novelty designs. Cocktail napkins are making a big comeback. Often designed with whimsical, playful patterns. Cocktail napkins are easy to find and inexpensive. I especially love the sets that come with the coasters that slip over the stem of your wine glass: clever and adorable.

A Celebration of Rockport-Fulton’s Art Colony A COLORFUL BOOK FOCUSES ON LOCAL ARTISTS WITHIN THE BROADER HISTORY OF TEXAS ART BY: JACQUELINE GONZALEZ

R

ockport is known as one of the 10 best coastal art colonies in the country due to the rich history behind its growth, but after meeting with Kay Betz, one of the authors of The Story of the Rockport-Fulton Art Colony, we learned this was not always the case. So, just how did the neighboring city grow into a nationally recognized hub for creatives? In the 1940s, a charismatic artist by the name of Simon Michael taught art to many local adults and children, while promoting the area as a creative community. This attracted other talented, dedicated people, who moved here to live and work as artists. By the 1960s, with the success of the oil and gas industry, more people came to the Coastal Bend to purchase new homes; many wanting to furnish them with coastal art.

However, Betz noticed gallery owners, collectors and other attendees at national and state art and history conferences were not privy to Rockport’s artistic legacy. She came across a book called 250 Years of Texas Art in which only one Rockport artist was featured. Although Betz was thrilled to see this artist in the book, she felt the larger world, including Texas art collectors and scholars, needed to know more about the area’s rich art history. Betz and Vickie Merchant, fellow educator and author of The Story of the Rockport-Fulton Art Colony, joined forces to bring recognition to the rich Rockport legacy. They became volunteers at the History Center of Aransas County, where Merchant served as president and Betz served as secretary of the board. They decided to raise money for the history center by writing three

books, including The Story of the Rockport-Fulton Art Colony, which helped raise funds and also fulfilled their desire to teach students the artistic part of their heritage. The process to bring this book into fruition was lengthy. It took a total of five years, filled with reading old newspapers and perusing memorabilia from galleries, visiting the art center and meeting with individual artists. They selected art that reflected themes representative of the culture and those that are well known in the community. In addition, they attended many art history conferences and exhibitions, and they tracked down biographies of forgotten contributors to the art world. In the midst of all this hard work, they had to contend with the decimation of Rockport by Hurricane Harvey, and three years later, the pandemic. Their efforts were not in vain, though. In one of its forewords, prominent Texas art historians William and Linda Reaves referred to the book as “a significant contribution to Texas art history.” Betz and Merchant hope this book brings awareness to the multi-faceted nature of the artistic creativity that continues to flourish within this art colony. So, when it comes to the question of how Rockport became one of the country’s best art colonies, you’ll have Betz and Merchant to thank for finding out the answer. 76 The Bend

S

chool supplies? Check! Uniform? Check! Lunch packed? (*screeching tires*) Each new school year brings about a familiar conundrum: how to assemble nutritious, easy and kid-friendly lunches five days a week, 36 weeks per year. That’s 180 lunches, for anyone keeping track. While we love a lunch that’s easy to throw together at the last minute, we also want to empower our kiddos with satisfying nutrition. Research shows kids who pack a lunch often eat less fruit, vegetables, whole grains and protein. Instead, they tend to eat more sugar and empty calories. Moreover, ready-to-eat kid lunch options are high in fat and refined carbs, offering little in the way of vitamins and minerals.

As the school year begins, perhaps you’ll feel inspired to prepare a more “out of the lunch box” entrée for your scholars. We used the following criteria to create the recipes: 1) tasty at room temperature, 2) handheld, 3) packed with veggies and 4) kid-approved. The result: Egg rolls, samosas and quesadillas. We took a nod from some of our favorite street fare with potato and peapacked samosas. Eliminating peppers from our recipe made these fried dumplings tamer on the kids’ palates. Roasting whole spices and grinding them adds intense, authentic flavor. We also used more common spices to make these samosas easier to prepare; no busy parent needs an extra late-night trip to the store.

Crispy egg rolls with sweet and sour are a great way to break up a week of PB&Js. This version is packed with cabbage, carrots, green onions and ground pork. Feel free to substitute in ground turkey, chicken or beef in a pinch. To cut down the prep time, use store-bought sweet and sour. The quesadillas are easily customized to reflect whatever’s in our pantry. While this recipe combines onion, bell pepper and mushroom, black beans, sweet potato, kale, cauliflower, broccoli, eggplant and tomatoes are all delicious when sandwiched between two cheesy tortillas. From meeting the teacher and school orientation to final exams and graduation, parents have a lot to worry about when it comes to their children’s education. Make lunch one less thing on the list.


Sweet and Sour Sauce Whisk 1/2 cup pineapple juice, 1/4 cup tomato paste, 1/2 cup honey, 2 Tbsp rice wine vinegar and 1 Tbsp soy sauce in a medium sauce pan over medium heat. Cook for 2-3 minutes, until bubbling and remove from heat. Serve warm or at room temperature.

RECIPE

Egg Rolls with Sweet and Sour Sauce Makes 1 dozen PREP TIME: 25 minutes COOK TIME: 20 minutes INGREDIENTS:

1 Tbsp neutral oil 1 tsp sesame seed oil 1 lb ground pork 1 tsp salt 1/2 tsp white pepper 1/2 tsp sugar 3 cloves garlic, minced 1 tsp ginger, grated 3 cups cabbage, shredded 2 large carrots, shredded 4 green onions, chopped 1 Tbsp soy sauce 1 16-oz package eggroll wrappers, thawed 1 egg, beaten DIRECTIONS:

Place neutral and sesame seed oil in a large skillet over medium heat. Once oil is shimmering, add ground pork to skillet and season with salt, white pepper, sugar, garlic and ginger. Break pork apart with your spoon and continue to cook until thoroughly browned, with no pink remaining, about 6 minutes. Add cabbage, carrots, green onions and soy sauce and saute another 2-3 minutes, until cabbage starts to wilt. Fill a deep-sided pan with 3 inches of peanut or vegetable oil. Heat oil to 350°F over high heat. While oil heats, set up wrappers by covering them with a damp cloth on a clean workspace. Spoon 1/4 cup of filling into bottom 1/3 of wrapper and fold according to package directions. Brush the edge of the wrapper with egg to help seal each egg roll. Fry 3-5 egg rolls at a time for 5-6 minutes until golden brown. Transfer to a wire rack to cool and serve with sweet and sour sauce (recipe above).

Stir flour, fennel seeds and salt together in a large bowl. Add in remaining ingredients and mix with your hands until you form a tough dough. Roll into a ball and let rest while you prepare the filling. Boil potatoes in salted water for 10-15 minutes, until fork tender. Remove from water and let cool. Once potatoes are cool enough to handle, remove skins (if desired) and coarsely chop. Set aside. Toast seeds in a large skillet over medium heat for 3-5 minutes, until fragrant and brown. Transfer seeds to a mortar and crush with a pestle until finely ground. Return skillet to heat and add in ghee. Once ghee is melted and fragrant, add in garlic and onions. Saute for 3 minutes, stirring frequently. Add reserved potatoes, ground seeds and remaining ingredients to the skillet and cook an additional 5 minutes. Remove from heat. Fill a deep-sided pan with 3 inches of peanut or vegetable oil. Heat oil to 320°F over high heat. While oil heats, divide prepared dough into 6 segments of equal size. Form each into a disk and roll out into an oval shape, about 1/4” thick. Cut the oval into two equal halves horizontally, to make two half circular shapes. Using one half circle, join the ends of the flat side to form a cone shape and press firmly to seal. Fill cone with 1/4 cup filling and close open edge and seal with your fingers. Continue making samosas with remaining dough and filling. Fry samosas in batches (3 to 4 at a time) for about 5 minutes on each side, until golden brown. Turn halfway through cooking. Transfer cooked samosas to a wire rack to cool. Serve with Cilantro Mint Chutney (recipe on pg.87).


Cilantro Mint Chutney In a blender or food processor, blend 1/2 cup plain yogurt, 1 bunch cilantro, 1 bunch mint, 1/2 tsp salt, 2 tsp lemon juice, 1 tsp honey, 1 tsp chaat masala and 1 clove garlic until smooth. Serve with samosas.

Veggie Quesadilla Makes 4

PREP TIME: 7 minutes COOK TIME: 20 minutes INGREDIENTS:

2 tbsp olive oil 1 onion, sliced 1 bell pepper, sliced 2 portobello mushrooms, sliced 2 cups spinach 3/4 tsp salt 1/2 tsp black pepper 8 flour tortillas 2 cups cheddar jack cheese, shredded DIRECTIONS:

Heat olive oil in a large skillet over medium heat. Once the oil is shimmering, add in onion and bell pepper. Cook and stir occasionally until onion begins to turn translucent, about 7 minutes. Add mushroom slices, season with salt and pepper, and cook an additional 3 minutes. Remove vegetables from heat and stir in spinach to wilt. Place a griddle over medium heat. Brush griddle with cooking oil. Place one tortilla on the preheated skillet and sprinkle 1/3 cup shredded cheese evenly across tortilla. Top cheese with 1/2 cup cooked vegetables and cover with a second tortilla. Cook for 1 minute, until bottom tortilla is golden and toasted. Carefully flip quesadilla with a large spatula. Cook another minute on the other side, until golden and toasted. Repeat with remaining ingredients. Cut each quesadilla into quarters and serve with salsa, sour cream or guacamole.

n a corner spot of The Village shopping center, a new delight is waiting to be found: Nueces Whiskey Library, a lounge and dine concept created by Bellino Italiano Ristorante owner Francesco Inguaggiato. The lounge, exuding a luxe and intimate atmosphere, tells a story through a unique evening experience centered on cocktails. “I wanted to detour from the Italian concept and offer something to the city of Corpus Christi that we don’t have,” said Inguaggiato. “When I visit other cities with my wife, we look for more of a cozy lounge space to enjoy a conversation, maybe listen to some nice background jazz and have a delicious cocktail. This space recalls everything I enjoy about that kind of experience.” When remodeling the space for Nueces Whiskey Library, which is just three doors down from the flagship restaurant, Inguaggiato worked closely with interior designer Sarah Gallacher to create a classy, dark-toned, old European-styled space down to the smallest of details. The layout offers different experiences with an option to sit at a table, lounge on an armrest or post up at the bar top. In this library, the shelves are indeed lined with some books, but mostly with bourbon and whiskey selections from all over the world. “From USA [to] Scotland, Japan, Italy — anywhere they make 90 The Bend

good whiskey, we’re trying to bring it in and offer the full spectrum for guests to experience,” Inguaggiato said. While the library will have a heavy emphasis on whiskey, Inguaggiato’s leading mixologists Juan Manuel and Joe Rodriguez have created an exciting new craft cocktail menu for the lounge. “We have so many bottles to experiment with, and I’m proud of the creative cocktail ideas we have so far,” says Manuel. “For example, Joe [Rodriguez] has taken one of our favorite classic cocktails and put it through the clarification process, taking out the cloudy solids and leaving an aromatic, well-balanced, clear cocktail.” Through the clarification process, a new style of cocktail sipping will be offered to Bellino’s sister location. “It’s great to

We want to keep things simple, but complex.” Aside from its focuses on whiskey and craft cocktails, Nueces Whiskey Library also offers tapas and entrees on a menu curated by Inguaggiato himself, although he is leaving his Italian styles a few doors down and instead is expanding into cooking styles from the rest of Europe. From the rich colors and textures and ornate finishings to a libation menu sure to impress, The Nueces Library is a welcome, fresh addition to the Coastal Bend’s everevolving craft cocktail scene. KK thai kitchen + bar is growing its reach in Corpus Christi. The local staple for authentic Thai cuisine is a popular destination for those looking for a nice night out with a delicious menu — and Southside residents can now rejoice, as the acclaimed restaurant has a new location off Staples and Timbergate, bringing a slice of Lamar Park to the growing portion of town. Crediting the support and success of the original location, owner Ryan Rios said, “BKK has experienced consistent growth. And finding success through the pandemic along with staffing issues — the trial by fire that was — it was time to expand and bring a bit of Lamar Park to the Southside.” Opening its doors earlier this summer, the new restaurant’s style is consistent with its predecessor: a clean, white exterior with an outdoor patio (which is currently in the works). The interior is lined with thoughtful design elements meticulously curated and designed by Rios, himself. Elegant handmade terrazzo tiles adorn the restaurant floors, complementing the hand-painted wallpaper and creating a cohesive environment ready to soothe anyone who walks in. The space is divided evenly, providing a clear path of travel for staff and customers to mingle and make their way to the bar positioned centrally as the nucleus of the restaurant. BKK Southside is primed to be a go-to date night spot or evening out for a special occasion.

ishermen from near and far sought a photo like this — triumphantly standing next to their tarpon catch of the day. Port Aransas was once named Tarpon, Texas, in honor of the fish that made it famous. Catching a tarpon was a bucket list item, and fish were often photographed then displayed instead of being released, as they aren’t known to be good for eating. The Atlantic tarpon evolved millions of years ago, and still looks like something prehistoric. It can be enormous, growing over six feet and weighing over 200 pounds. It can be seen jumping up to 10 feet in the air, with gills so powerful they create a sound audible from a nearby boat. In 1932, resident Barney Farley organized the first Tarpon Rodeo, which lives on today as the Deep Sea Roundup. The area thrived with the tourism tarpon brought to town — through events like the Tarpon Rodeo, as well as knowledgeable local guides and a thriving industry for angling supplies including boats and lures. By the 1950s, the tarpon population was smaller and local fishing became focused on a broader range of fish. This continues to fuel Port Aransas’ fishing industry today, although some still search for the thrill of its former namesake. The fight to reel in a tarpon in Port Aransas was certainly something to write home about, as no doubt many did on postcards just like this — with a one-cent stamp for postage.
