My favorite memory would have to be a dinner date I had at Elizabeth's with my sister. We marveled at the beautiful view and indulged in fine wine, tapas and dessert while sharing laughs and stories of our week.

Thanks for the Memories On each issue’s masthead page, we ask a handful of contributors a question pertaining to the cover story’s theme. Six pages prior to this one, you’ll find three answers to the question, “Do you have a favorite memory involving one of this year’s Local’s List winners?” After posing the question, I began to think of my own fond memories with a few of this year’s honorees. Putting on puppet shows with my sister in the old kids’ activity room at the Art Museum of South Texas; each of my birthday parties until the age of seven at Executive Surf Club; sitting at the Carroll Tigers table at SnoBall on a hot summer day; finding my dream wedding dress at Julian Gold; anniversary dinners at Bellino Ristorante Italiano; being a guest on the Leading Ladies of Corpus Christi podcast; editing and writing pieces for this very magazine at Coffee Waves … the list goes on and on.
As you discover this year’s winners, beginning on page 34, you might find yourself taking a trip down memory lane to think of your own cherished experiences with these places, people, businesses and services. Or perhaps you’ll begin planning new memories to be made at a restaurant you’ve yet to try or a shop you’ve yet to give your patronage. If you think about it, The Local’s List in its entirety is a collection of memories that make up a community. Behind every winner, there are locals who have cherished visiting these attractions, using these services, interacting with these people, and are now passing those memories on to their friends and families. When you look at The Local’s List that way, it becomes so much more than an accolade, because at the end of the day, the passionate people behind each of these winners do what they do not for the recognition (though it is nice), but for the greater good of a thriving community, one where dreams come true and memories are made. Our team would like to personally congratulate everyone who won their respective category, made it into the top five or was nominated in the first place. The Local’s List numbers this year included 163 categories, 206,929 votes and 37,396 participants. That’s a whole lot of sweet, sweet memories. We’d also like to thank each person who took the time to share their favorites with us and participate in this year’s readers’ choice awards. W
hen you live on the coast, taking at least one surf lesson at some point in your life seems like a necessity. After all, getting in the car and driving 30 minutes to reach sandy shores isn’t a luxury everyone has. Enter Texas Surf Camps. Director Morgan Faulkner started the surf camp in 2005 as he began his professional surf career with Quicksilver — aiming to instill confidence, knowledge and respect for the ocean and the sport of surfing so everyone can enjoy it. The camp started with a small crew — close friends of Faulkner's who grew up surfing together — and has grown to employ 15-18 instructors. The program offers week-long sessions during the summer for kids six and up, and private lessons for kids under six. 24 The Bend
Faulkner said Texas Surf Camps “was born out of my love of surfing. It's become a business that supports my wife and me, but more importantly, it's something we love to do. Aside from making a living at it, we love being around the kids and in the water all the time, and we wouldn't trade it for anything.” Aside from learning a new skill, Faulkner said surfing acts as a huge confidence builder. The sport teaches you a lot about how the ocean works and how to deal with it, as opposed to fearing it. "You might get put into situations that could be scary, like getting tumbled by a wave or something like that, but doing it with our instructors, who are all great surfers, will help you to build that confidence,” he said. “Having someone there with you that's already been through those things can reassure you

that everything's fine. I think that's a big deal with making kids comfortable with the ocean. Surfing is perfect for that because they're learning all this stuff about the ocean, but you don't even realize that it's such an educational experience because you're just having a lot of fun.” The program also imparts ocean education and awareness through hands-on activities and partnerships with local organizations, including the Surfrider Foundation, Texas Surf Museum and others. It also aims to instill the concepts of being good stewards of the environment and being conscious of the impact of trash and littering. Faulkner said they speak to the kids about leaving the space around them better than they found it, respecting all the marine life and participating in beach cleanups. "I think when you're a surfer, you're just kind of naturally accepted into the environmentalist crew

because you're in nature all the time. You're exposed to anything that has been put into that environment — and many people don't realize a lot of those things," Faulkner said. Therefore, teaching campers the importance of taking care of our beaches is a cornerstone of the lessons. The summer camps happen as week-long sessions from June through August, but the program is also offered in the fall and spring, and private lessons are available year-round. The Texas Surf Camps experience is a unique opportunity for kids to learn a great sport and skillset. An added bonus for parents? Finding a great, kid-friendly activity to keep everyone busy this summer.

magine you're a parent of a special needs child who longs to play baseball alongside their peers. Yet the criteria for children to gain a spot on a league team are performance-based, therefore your child is at a disadvantage. This was the reality for children with special abilities in Corpus Christi in 2007. As crushing as it was, many parents were at a loss for recreational sports teams on which their children could play baseball regardless of their ability. The need to remedy this disparity was evident — and later that year, the Rockdale Youth Baseball Association (RYBA) formed the Miracle League to further its mission of providing opportunities for all children to play baseball regardless of skill level, and with an added focus on eliminating potential safety hazards. “The Rotary Club initiated the formation of [the local chapter of] the Miracle League,” said executive director Grace Gonzales, “with the objective to support fundraising for a specialized complex that would be accessible and meet the unique needs of our kids and adults.” Corpus Christi was just one of many local chapters that started popping up all around the country. Now, there are 250 Miracle League organizations across the United States, Canada and most recently, Australia, serving over 200,000 children and young adults with disabilities. Kristi Hallgarth, parent representative on the board of The Miracle League of Corpus Christi, was involved in the inception of the local league and continues to volunteer her time and resources for the board to this day. years now. “We were very excited to find a sports program that supported youth and adults with special abilities,” said Hallgarth. “This is one of only a couple of programs that serves children aged five all the way through to adulthood.” The league offers opportunities in various sports programs such as baseball, basketball, kickball and its most recent addition, boccia ball. With the wide array of programming here locally, there is no shortage of need for volunteers. “One of the most important elements of a Miracle League game is the ‘buddy’ program. where each player is paired with an ablebodied friend to assist them on and off the field,” Gonzales explained. “We have 200-250 volunteers who participate in our buddy program each year.” The buddy program is open to anyone; the main criteria are enthusiasm and compassion. Gonzales is planning for a bright future for The Miracle League of Corpus Christi. In the coming months and years, the organization is hoping to expand by building a specialized gymnasium to support its basketball program and partnering with other local area organizations to expand its program offerings. “Our main focus is continued outreach,” said Gonzales. “We currently serve between 400 and 450 players annually, and there are many other children and adults with unique abilities that we want to make aware of our programs.” As a parent and a special needs advocate, Hallgarth knows how important an organization like the Miracle League is for the overall development of the players involved and the positive impact it has on a community as a whole. “I would love to get our information out to the community,” she said. “We have been blessed by this amazingly supportive community and everyone who gives their time, talent and gifts.”

and there were two of us that made it but they were over the limit on the number of Third Class you could have aboard the ship, so we both got transferred. The other guy got orders for a cruiser in the Asiatic Fleet, and he was killed his first day at Pearl Harbor. On December 7, 1941, I was in the enlisted barracks and we were awakened by a noise. We thought it was a drill at first, but we then saw the torpedo planes just outside our windows already at their release point and we knew then it wasn’t a drill. KC: When did fighter pilot get added to the resume? BB: The Navy opened up flight training for enlisted folks, and I applied thinking “This guy from West Virginia will never get into Navy Flight Training” — and by darn, I was selected. So I started flight training in 1941 and ended up here in Corpus Christi to get my wings. In all, I served 35 years.

IN CONVERSATION WITH THE 101-YEAR-OLD RETIRED U.S. NAVY CAPTAIN AND USS LEXINGTON MUSEUM ON THE BAY VOLUNTEER BY: KYLIE COOPER PHOTO BY: LILLIAN REITZ KC: Where are you from, and when and why did joining the Navy become part of your life story? BB: My home state is West Virginia. I joined the U.S. Navy in 1939, primarily because of my financial situation. We were in the middle of a depression and jobs weren’t really plentiful. I wasn’t able to save money to go to college, and my parents couldn’t afford to help. I remember this RKO newsreel that showed battleships riding the waves, and it always looked so interesting to me. The first time I tried to enlist, I actually got rejected because of a scar on my eardrum, even though I passed the aviation physical, which is one of the toughest. So that delayed me another year, but I finally joined in 1939. KC: You were a U.S. Navy Captain on the sister ship of the Lexington in World War II. What was that experience like? BB: After boot camp, I went to a cruiser off Long Beach, California, and I went with the Pacific Fleet, which was then transferred to Pearl Harbor; we operated out of Pearl Harbor as our normal home port operation. I made Petty Officer Third Class, 32 The Bend
KC: What eventually brought you back to Corpus in 1974? BB: My wife went through a lot throughout the years of my service. We had five kids and I left her many times for this line of work. I always said, “Honey, the only thing I can promise you is that I am going to buy you something on the water when I retire.” Padre Island was being developed, and I found a lot on the end of a canal and I got half of that lot, so I kept that promise. KC: Let’s talk about the ship a bit. What did it mean to you for the City of Corpus Christi to be chosen to host the USS Lexington? BB: I was really amazed, pleasantly surprised, that we won the competition against five other cities. The reason it meant so much to me is that it is the sister ship of the carrier ship I flew from as a fighter pilot in World War II, The USS Bennington, which was a CV-20, and the Lexington is CV-16. They are the same Essex class and so they’re built just the same. When I come aboard this ship, it feels like I am going aboard the Bennington. So, can you imagine that feeling? In the town you call home? It’s incredible.
KC: You started volunteering for the Lexington in 1992 when the museum opened. Why are you still lending your time and energy after all these years? BB: Well, I really just enjoy it. I love to speak to groups of people. I work in the Pearl Harbor exhibit and whether I am speaking to moms and dads or grandparents or children, I really enjoy it. I also get to stress to people the importance of voting, but also the importance of getting involved. Because it’s our country and our kids’ country, and you can do something about what the future looks like if you get involved. KC: Why is it important no one forgets the history housed within the exhibits? BB: The ship and the [Pearl Harbor] exhibit provide me with the opportunity to share important history with others. There is so much history here, and the exhibits are just tremendous. To me, this ship is still on the firing lines — the firing lines of preserving our history. The people who served aboard this ship and all the others who fought and died for our country, we can’t let them be forgotten, we have to keep their memory alive, and I think this ship helps in doing that.

KC: You just had a pretty big birthday. How did you celebrate 101 years of life? BB: Well, I spent it here on this ship. I was more than overwhelmed by the love. I was told I was going to get just a little thing, and then there was a whole big party. I even had two cakes! The group of people who run and operate this ship made my retirement that much more rewarding. Working with this group of people is a great joy of mine. It keeps me young. KC: After 30 years, can you imagine yourself ever not volunteering for the Lexington? BB: I love being aboard the Lex. It’s like coming home when I come aboard this ship every day. As long as the ol’ Lex is around and I can still qualify to come aboard, I’ll do it. I’d like to stay aboard this ship for as long as I can. She did a remarkable job in WWII and as long as I am around, I won’t let anyone forget that.

A
s a spiritual worker and public figure, it’s essential for me to nurture my mind, body and spirit every day. These principles were instilled in me at a young age, so it has now become second nature to me: I have to make time for myself. My morning wellness rituals take a few hours. I start with a simple cup of coffee or tea, and take time to set my intentions for the day. Each morning, I speak out in gratitude at my boveda (an altar to honor ancestors) and immerse myself in prayer. As a card reader, I may pull a card to get some divine insight into the day. I do not skip this spiritual moment. My beauty time brings me joy, so I soak up every second! I rarely leave the house without a full face of makeup. I spent over a decade as a makeup artist, so I use this time to exercise my artistry. Winged liner and a nude lip is my signature look. As far as hair, I don’t do much. I have a “bespoke” haircut from local salon Fevered Moon Beauty Lab, so I just shake it out, but highquality products make all the difference. In the evenings, I love unwinding with a cup of tea. I take time to let my partner (and my cat) know how grateful I am for them. I love to affirm how much I appreciate them for being my little family. I feel good when they know they’re deeply loved and appreciated. Right before I fall asleep, I take a moment to reflect on things I’m grateful for. Even on my worst days, I try to find the light to keep the vibes nice and positive. Outside of my habitual routines, there are a handful of products and tools I always go back to when it comes to keeping my outer and inner beauty in check.

ust steps away from the Corpus Christi Bay is a home straight from a storybook. The Federal Colonial-style home owned by Donna and Larry Frederick is rich with character and charm, and the palette of red, white and blue makes this home distinctive — and definitely American. When the Fredericks first moved to Corpus, Donna struggled to find a home to fit her style — but when she stumbled upon the traditional home, she knew it was the one. “It was the kind of house I had always wanted to live in. It was my dream home,” she said. The nearly 100-year-old home hasn’t changed much over the last century. Maintaining its idyllic charm and rich history, Donna has taken inspiration from its character. The home is filled to the brim with early American antiques, primitive pieces and red, white and blue accents. In the dining room, pine cupboards are styled with artifacts one would find in Colonial Williamsburg, like antique pottery and Civil War pewter pieces, while Windsor chairs, which are an early American classic, frame the oval dining table. The charming kitchen with its blue tile, white cabinets and red accents flows into the adjacent sunroom, which features fundamental Americana motifs like stars and stripes.

The Fredericks’ American pride, which is apparent throughout their home, stems from their family history. Donna and Larry’s two sons, Joe Bob and Jake, and Donna’s father were all Marines. “My dad was a veteran and Marine,” says Donna, “and then my two boys became Marines. I always say my dad was the first Marine I ever loved.” The den houses one of Donna’s most beloved possessions: a small plaque featuring two stars. The plaque, given to mothers during WWII, sat in her grandmother’s window until her two sons returned home from war. 82 The Bend
Another markedly American detail featured throughout the home is Donna’s extensive collection of quilts. “Twenty-five years ago, I started collecting antique quilts because my mother, grandmother and great-grandmother were wonderful quilters,” she said. “I put an ad in the paper looking for antique quilts, and for three years, I got calls nearly every day.” Now Donna has a collection of around 80 quilts, all displayed like works of art throughout the house. She is also a collector of antiques and primitive furniture, and has effortlessly incorporated the

quilts, keepsakes and furniture she inherited from her mother into the design of her home. One of the upstairs bedrooms features the most significant and meaningful part of the home — the childhood bedroom of the Fredericks’ son, Jake. Five years ago, Jake, who was an F-18 pilot, was on a mission off the coast of Japan, and he had to eject. “He died doing something he loved,” Donna reflected. “They had a three-year-old and a baby on the way. His wife continues to be so supportive of the military and teaching their kids about freedom.” Donna and Larry have set up a memorial for Jake in his room. When the Fredericks first moved into the home in 1994, they painted a red stripe around the ceiling of Jake’s bedroom, and coincidentally “Red Stripe” ended up being Jake’s call sign when he was a pilot. The Fredericks' home is a true reflection of its owners. Their patriotism is evident in every corner. Donna and Larry’s connection to their family, the past and their love of all things American has given this home a soul that will continue to enrich their lives for years to come.

A Different Kind of Firework HOW TO GROW FIRECRACKER PLANTS IN THE COASTAL BEND BY: JUSTIN BUTTS

ou can enjoy fireworks in your garden on Independence Day — and every other day throughout the year. Firecracker plants bring sparks of color to your garden in the summer and winter seasons alike. This is a spreading shrub native to Mexico with long, slender branches that bend and arch to from the shape of a wave. The green leaves grow like soft needles along branches covered with small, tubular, scarlet-red flowers. The firecracker plant is so interesting and beautiful that it could be featured as a specimen plant in a flower garden, but the best presentation is a low hedge along a walkway or as a backdrop for a garden of short flowers. A firecracker hedge creates a stunning presentation. These plants spread through runners that grow beneath the soil, so a garden bed planted with firecracker plants will eventually fill out in lush growth. A hard freeze will kill the plants; however, as we saw after the great freeze of 2021, the plants will regrow from their roots and soon refill the bed. They can endure the worst of our summer heat, have no problem with our relentless Gulf winds and can even take salt spray from the ocean. They are extremely drought tolerant, and you will probably never need to water your mature plants. Plus, the firecracker plant does not suffer from pest problems at all. Hummingbirds and butterflies love firecracker plants. Your hedge will host dozens of hummingbirds at a time as they zoom in and out of the flowers for pollen. A firecracker hanging plant is easy to care for and offers a fascinating appearance on a patio or deck. Make sure to keep the plant in full sun year-round for maximum blooms.

Firecracker plants are a major hummingbird attractor. A hedgerow of firecracker plants can attract dozens of hummingbirds at a time, hovering around the flowers and drinking pollen. However, the cover and concealment of these gorgeous plants creates the ideal ambush zone for cats! Each September when the hummers arrive, we bring our farm cats inside to keep them from feasting on hummingbirds who are just stopping by for a drink on their long journey south.

F
lorida in the summer might typically conjure visions of South Beach or family vacations to Disney World, but nestled on the western edge of the state’s panhandle, a seashell’s toss from the Alabama state line, Pensacola is a smaller, underrated city with a flavor, vibe and lore all its own. It ticks all the requisite summer road trip boxes — patio bars aplenty, adrenaline-pumping water sports, miles of sugar-white sandy beachfront — but beyond the sunbathing and dolphin-spotting, it still feels like the most un-Floridian of all of Florida’s beach towns. That’s largely due to its history as America’s first settlement, ahead of even St. Augustine — though later abandoned, it was founded in 1559 by Don Tristan de Luna. It’s such an old city that its nickname, “The City of Five Flags,” is indicative of the fact that Pensacola has been under five flags in its history: Spanish, French, British, Confederate and American. That lore is on full display in Historic Pensacola Village downtown, an 8.5-acre collection of colonial cottages, houses and churches where old-timey homesteaders and historians offer museum tours, cooking demonstrations and a glimpse into another epoch. Today, though, Pensacola is the kind of singular place where one can step back in time in a historic village or a military fort, then drink a Bushwacker on the beach.

HOW TO DO PENSACOLA

WHERE TO STAY Pensacola is a tale of two cities, with Pensacola Beach — on the western end of Santa Rosa Island — offering more of that iconic Florida summertime vibe, while inland downtown feels more New Orleans, with its wrought-iron balconies and French Creole architecture. If it’s the former you’re after, the Hilton Pensacola Beach towers like a beachy beacon, rising 17 stories on the Gulf shoreline, with balconies and views from every vantage point — the ocean to the south, and Santa Rosa Sound to the north, with both indoor and outdoor pools in between. For something a bit more quaint, New World Inn is a boutique charmer on downtown’s historic Palafox Street, with 16 cozy rooms across two floors, in a building that once served as a box factory. After being repurposed and restored in 1983, the hotel now includes a French Quarterlike courtyard, a martini bar and an ornate wooden grand staircase lined with vintage Pensacola photography.
WHERE TO EAT & DRINK With its abundant seafood and affinity for Creole-style cookery, the dining scene in Pensacola is filled with fresh surprises. Chief among them is Seville Quarter, a sprawling dining, drinking and dancing complex downtown that’s been open since 1967. Today, the multi-tiered haunt contains several rooms and courtyards, each with its own style and character, but wherever you hole up, don’t sleep on the po’ boys and beignets. A bit newer, The Garden at Palafox + Main is an outdoor food hall anchored by several food trailers, like Calavera Tacos and MELT Gourmet Sandwiches, plus a rum-centric bar and a fast-casual seafood restaurant, Pearl & Horn, where buttery broiled oysters and BBQ shrimp are served in a turquoise-tinted space.
The same folks who run the bar at The Garden also operate The Well, a Miami-chic cocktail bar on the opposite end of downtown, dolled up in tropical plants, neon lights and hot pink decor, with Instagram-ready drinks and snacks like raw oysters and spicy tuna tostones. For that quintessential Gulf Coast experience, drive 22 miles west along the shore to Flora-Bama, a rollicking relic of a restaurant that straddles the FloridaAlabama line. Nowadays, the company spans multiple buildings, but the original complex, The Flora-Bama Lounge right on the beach, is an old-timey institution home to live country music, bingo tables, multiple bars and nautical comfort food — the shrimp nachos are enough to feed a shark. Be sure to try its signature drink, the Bushwacker: a milkshake-like medley of rum, Kahlua and creme de cacao (plus a few secret ingredients) that goes down way too smooth.
WHERE TO PLAY With 18 miles of shimmering shoreline, there’s no shortage of oceanic recreation to be found in Pensacola. The main part of the beach, most used for swimming, surfing
and frisbee-flinging, is the area surrounding Pensacola Beach Pier, itself a destination for anglers. Lined with casual beach bars, like the nearby Bamboo Willie’s Beachside Bar, you’re also never too far from a mai tai. Farther west on the beach, where commercial development wanes to make way for nature, Gulf Islands National Seashore is a 25,000-acre national park site filled with naval history — especially at Fort Pickens, a brick garrison that remained under Union control throughout the Civil War — and undeveloped beachfront prime for picnicking, swimming and dolphinsighting. If you’re adamant about dolphins, your best bet is to hop on a jet ski (beachside rentals abound, at companies like Radical Rides and Key Sailing), or embark on a guided dolphin tour with Jolly Sailing and Dolphin Cruise or Frisky Mermaid Dolphin Tours. Beyond the beach, immerse yourself in Pensacola’s past with a guided tour of the Roaring Twenties-era Lear/Rocheblave House in Historic Pensacola Village, and a stroll through the Pensacola Museum of History, home to the anchor Don Tristan de Luna dropped way back in 1559. thebendmag.com 97

riving down the streets of Corpus Christi, one might notice the vibrant murals — the brush strokes that tell stories, the colors that transmit their energy, the way the sun beams down on the details. What one may not know upon first glance is that, depending on the mural, a group of teenagers most likely painted it, and it’s more than likely that K Space Contemporary had a hand in that. Founded in 2001, K Space’s street-level galleries opened in 2007, and since then, they’ve housed numerous solo and group art shows every year, giving newer and established artists a chance to show their work to the public. On top of that, K Space leads the Mural Arts Program, a summer camp of sorts where local teenagers apply and, if accepted, get to spend the summer helping to paint a mural in a specified location. 98 The Bend
“This year, it’s different,” said Mayra Zamora, local artist and one of the camp instructors. “We received a generous donation from a patron, so this is the first year that students don't have to pay to come to camp, which is amazing. It’s unheard of. [Because] this year is different, campers had to submit an online application, write a statement of intent, provide previous experience and upload 3-5 works of art. So it’s more of a selection process based off their portfolio, statement of intent and previous experience.” Though K Space provides a vehicle for teenagers to explore the various avenues of artistic expression, one of the things it prides itself on is bringing people of different backgrounds together to learn the ins and outs of respect and collaboration.

“The most enriching part for me is, yes, they get to learn process, but to me, I find it more enriching that they develop friendships, they find friends who love the same things they do, which is art,” Zamora said. “Another thing is [this camp] teaches the students what it’s like to be in a work environment. There will be days where you don’t want to interact, but you have to respect one another and collaborate with one another.” It isn’t just the act of a teenager picking up a brush and painting on a wall that makes the program special. It’s that each student who participates has a hand in something that will be visible for many years, and that they invariably become part of the fabric of the community through their work and talent. “I think it’s important for the community because there are a lot of programs here for elementary students, right?” Zamora said. “But we lose students in those teen years, so K Space is one of the few programs that’s geared specifically to teenagers and gives them a place to go — for the LGBTQ+ teen community as well. Twenty years from now, when the students are my age, they’ll remember they were a part of this mural. Not just K Space history, but Corpus history.”

ave you or a loved one suffered from Backyard Barbecue Angst (BBA)? BBA, which affects three out of every four people invited to a potluck, can be described as that moment of panic when you realize you have no idea what to bring to the neighborhood cookout. Some may experience brain fog when searching their cerebral rolodex for a dependable recipe for weekend festivities; others report side effects of confusion, anxiety and occasional sweating when scouring their cabinets for a perfect side dish. Disclaimer: There is no documented medical condition known as “Backyard Barbecue Angst” — I made it up. But I’m betting there’s a few folks out there who may have experienced something like it. These simple and satisfying summer recipes are the cure for any cookout qualms (and they come together in less than 30 minutes). Caprese salad is a crowd-pleaser. Vine-ripened tomatoes, creamy mozzarella and citrusy basil marry seamlessly with only a drizzle of good-quality olive oil and a dash of salt and pepper. Our version includes salami, which adds an umami element to round out the dish. Customize your caprese with cucumbers, olives, prosciutto or oregano. Okra is a seasonal favorite in late summer when little else can survive the heat. Stewed okra is a natural conduit for North Indian flavors, as in this Bhindi Masala. The grassy notes of fresh okra are complemented by bloomed coriander and cumin. Desiccating the okra prior to cooking helps quell any unwanted mucilage. Everyone has a favorite potato salad recipe, and this is ours. The fresh dill and grated cucumber in homemade tzatziki add a creamy base to waxy potatoes. This take on potato salad is lighter than its mayonnaiseand mustard-based cousins. Be prepared to spend half the potluck sharing the recipe. This summer season, skip the cooking anxiety, and focus on having fun with friends and family. Let these no-brainer recipes do the hard work so you can spend your time sipping iced tea and breathing in the best parts of summer.

Tzatziki Potato Salad Serves 6-8 PREP TIME: 10 minutes COOK TIME: 10-15 minutes INGREDIENTS:
2 lbs potatoes, chopped 1/2 cucumber, grated 3 cloves garlic, grated 2 tbsp olive oil 1/2 cup plain Greek yogurt 1 tsp salt 1 bunch (1/4 oz) dill, chopped 5-7 chives, thinly sliced DIRECTIONS:
Bring salted water to boil in a large pot over high heat. As water boils, strain grated cucumber in cheesecloth or paper towels to remove moisture. Once boiling, transfer chopped potatoes to water. Cook for 8-12 minutes, until tender. Strain potatoes and transfer to the refrigerator to chill for at least 10 minutes. While potatoes chill, combine cucumber, garlic, olive oil, yogurt, salt and dill in a medium-sized bowl. Stir cucumber mixture into chilled potatoes and top with chives. Store potato salad in the refrigerator and serve cold.

Ultimate Caprese Salad Serves 8 PREP TIME: 10 minutes INGREDIENTS:
3 oz salami 8 oz fresh mozzarella 2 pints sweet tomatoes 3/4 tsp salt 1/2 tsp freshly ground black pepper 3 tbsp extra-virgin olive oil 1 cup (1.33 oz) fresh basil DIRECTIONS:
Combine torn pieces of salami, mozzarella and tomatoes in a serving bowl. Season with salt and pepper and drizzle with olive oil. Top with fresh basil. RECIPE
Bhindi Masala (Curried Okra) Serves 8 PREP TIME: 5 minutes COOK TIME: 15 minutes INGREDIENTS:
2 lbs fresh okra 1 tsp salt, plus more for drying okra 2 tbsp oil 1 onion, chopped 1 1/2 tsp cumin seeds 1/2 tsp coriander seeds 2 cloves garlic, minced 1 cup tomatoes, chopped 1 serrano pepper, chopped 1/2 tsp ground turmeric 1/2 tsp garam masala 1/4 tsp chili powder DIRECTIONS:
Wash okra in cool water and dry with a clean tea towel. Lay okra on a paper towel and sprinkle with salt. Let okra dry for 10 minutes, then pat with the paper towel to remove excess moisture. Remove okra stems and chop into 1/2” slices. Add oil to a large cast iron pot over medium heat. Once the oil is hot, add onion, cumin and coriander seeds. Sauté onion mixture for three minutes, stirring frequently. Add garlic, tomatoes and remaining spices and cook an additional 1-2 minutes. Add okra to onion mixture, cover with a lid and reduce to medium-low heat. Simmer okra for about 10 minutes, until tender. Stir frequently to prevent from sticking. hen Bluffalo Wings Co. joined the Southside dining scene, it brought the craft beer scene with it: Domestic or import, ambers or blondes, stouts or porters and many, many pints in between, Bluffalo Wings Co. has a tap selection that could take some wing lovers straight to heaven. Indulging in the varied flavors of Bluffalo’s wing sauces only gets better by adding an ice-cold beer. 52 taps stay ever-chilled with the restaurant’s built-in Glycol draft beer system, ensuring a fresh glass from the keg all the way to the tap. The selection of taps lining the span of the bar is displayed on a large multi-screened, ever-updating beer menu, as well as updated on Untappd, an online craft beer community where each beer is listed with descriptions and flavor profiles. After moving to Corpus Christi from Colorado, where breweries flow plentifully, co-owner Allison Reinert was excited to play a part in expanding local pint options. “We go through several distributors and have certain breweries that come to us directly, like V!VA, Nueces 116 The Bend

New, less discovered beers find their way into town through this local restaurant too, like Clown Shoes Space Cake IPA or Ranger Creek’s Laguna Madre Blonde Ale. Along with having beer flights as an option, trying different beers is a great way to find what you might actually have a taste for. The staff prides themselves in bringing in new brews to not only expand the options available locally but to also expand the palates of local beer lovers. “Some local beers, like Nueces, are suddenly gateway beers,” Reinert says. “They’ve got the Supremo, which is a light, easy drinker. So someone might try the Supremo and that might lead them to the Nueces OG, which might lead them to a different blonde, like the Lazy Beach Blonde, which might then lead them to the V!VA Blonde. Maybe, they’ll wanna try the Catty Corner — and then, they start working their way up, trying different beers on the list. f you hear the name Chef Natalie Trevino and your palate does a happy dance, then you’ve probably enjoyed a meal from one of The Roughian Supper Club’s uniquely themed menus. Well, we have good news: Trevino is ready to serve up something new for the Coastal Bend. Traditionally, The Roughian is known for its reservation-only, pop-up dinner service that brings an elevated dining experience to groups of people in locations that are only revealed the night before the event. Now, it has expanded into a space of its own, a “home” where guests can attend dinner and brunch events with a curated multi-course meal. In this new space, Trevino hosts supper club on Thursday and Friday evenings, and brunch on Saturday mornings. With few Saturday brunch options in Corpus Christi, this is an exciting and welcome addition. The new space, located in the Meadowbrook Plaza, was initially purchased to meet the growing demand of dinner parties — more dinner parties meant more frequent trips to the grocery store, 120 The Bend
which limited Trevino’s ability to meet the demand. “Last Christmas, I had to say ‘no’ more than ‘yes’ because I didn’t have the physical capacity to grocery shop, pack and go to someone’s house every single day,” she recalled. This new space was intended to serve as a licensed hub to store grocery items and prepare some of the menu items, then finish the rest at the guest’s home. However, when she entered the space, another idea took over. The large bar was the perfect size for plating multiple meals at once, and the space was ideal for intimate gatherings. That’s when she decided she would host supper club at this location a couple of nights a week, using the same method she uses for the pop-up dinner parties. The space was perfect to meet the demand and grow her business from serving 25-50 people per week to serving 200 per week. The Roughian’s new space reflects an elevated dining experience, but also one that is approachable and comfortable. The ambience is achieved with dim lighting, comfortable furniture and a small, intimate

In addition, Trevino explained, “All the main cooking happens in the kitchen, and the large butcher block table serves as the place where we plate the food, so everyone can see the process.” With only 30 people per time slot, the dining experience remains distinctly intimate, as old friends reunite and new friendships are made. Guests can obtain tickets to these new supper club events the same way as the pop-up dining events; the only difference is they will know the location beforehand. Even though this new chapter is just beginning for The Roughian, Trevino hopes to expand her kitchen staff to offer more dinner options, lunches during the week and an all-day Saturday brunch with bottomless mimosas. With this unique twist to fine dining that Trevino has brought to the Coastal Bend, the future is looking rather tasty.

Take to the Sky WHEN THE BLUE ANGELS CALLED CORPUS CHRISTI HOME BY: JILLIAN BECQUET PHOTO COURTESY OF: CORPUS CHRISTI PUBLIC LIBRARIES, LA RETAMA SPECIAL COLLECTIONS & ARCHIVES For decades, residents of the Coastal Bend have gathered to watch the Blue Angels perform in the skies around Corpus Christi during air shows. Naval planes in the sky have been common since the 1941 opening of Naval Air Station Corpus Christi and its outlying airfields, but seeing the Blue Angels in action is always something special. Founded as a U.S. Navy flight exhibition team in 1946, the Blue Angels were charged with maintaining interest in naval aviation following the end of WWII. The team followed the Naval Air Advanced Training Command in its move from Jacksonville, Florida, to Corpus Christi in 1948, calling NAS-CC home for just a year before returning to Florida and briefly disbanding during the Korean War.

In 1951, the Blue Angels returned to NAS-CC and the skies over the Coastal Bend. Residents got to watch not only the air show demonstrations they’re known for, but the day-to-day workings of the team as they trained and traveled across the nation. Even though the team hasn’t been based here since relocating back to Florida in 1955, it’s not uncommon for Blue Angel pilots to return to familiar skies when flying demonstrations in Corpus Christi: NAS Corpus Christi and NAS Kingsville are both hubs for training Navy and Marine aviators. With yearly demonstrations in the Coastal Bend, we still have opportunities to participate in this small slice of Corpus Christi tradition.
