A LOVE LETTER TO LOCAL’S LIST
Oh, The Local’s List, how we love you so. It never ceases to amaze me how much our annual readers’ choice poll continues to grow and how involved our community is with it. Now in its ninth year, The Local’s List rounded out at 291,703 votes in 191 categories from 21,825 participants. During the course of the nomination and voting rounds, our website saw over 1.2 million pageviews.
As the annual poll continues to expand its reach, and as we gear up for its 10th year in 2025, I can’t help thinking about how The Local’s List really is so much more than an online contest.
It’s a comprehensive list of local recommendations from the very people living in this community. It’s a physical representation of the entrepreneurial spirit and the work it takes to open and sustain a small business. It’s a reminder of why The Bend exists in the first place: because of you, your stories, your passions and your visionary ideas. We’re simply along for the ride, pen and camera in hand.
From beginning to end, it takes six months to produce the celebrated July issue. We start in February with The Local’s List nominations; come April, voting is in full swing, by May we’re working on the individual components to put the issue together and before the second week of June ends, we’re off to press. But, wait––that’s not all. As we announce the winners and begin sharing the issue with readers, our team is putting the final touches on The Local’s List Party, which, this year, will be held Aug. 1 at the American Bank Center.
Though it’s a beast of a project, it’s undoubtedly a labor of love. On behalf of the entire team here at The Bend, I’d like to extend heartfelt congratulations to each business that won its respective category, made it into the top five voting round or was even nominated in the first place. My suspicion tells me small business owners don’t do what they do for the accolades, but to be recognized as the best in your field or industry must be a rewarding feeling nonetheless.

Kylie Cooper: The shop moved locations in early 2023. What growth have you seen since its move, and why was it important for you to stay in downtown Corpus Christi?
Jonathan Winfrey: Since our move in 2023, the store has seen tremendous growth in all aspects of our business, from social media engagement to our community involvement within downtown. Because of this amazing community that downtown Corpus Christi has to offer, and the potential we saw for our business here, we knew we wanted to stay in the area when we were looking for new potential storefronts.
KC: How would you describe the shop to someone who has never been?
JW: I’d describe the shop as a blast from the past! We want everyone who walks through our door to have that nostalgic feeling while browsing through our selection of vintage clothing.
KC: What are the behind-the-scenes challenges customers don’t see?
JW: Like any other small business, there are many challenges we face on a dayto-day basis to keep running smoothly. Vintage clothing is just getting harder and harder to find as the years go by. To ensure we are providing the best vintage shopping experience for our customers, we are constantly searching for clothing in any and every way possible—from traveling from city to city to the walk-ins customers bring to sell at the shop. We are always searching.
Born in San Diego, Jonathan Winfrey moved to the Coastal Bend at a young age and spent the rest of his adolescent years calling Corpus Christi home. His interest in fashion began early in life, offering a means of self-expression. Winfrey always wanted his attire to stand out against his peers, and while in high school, his desire to don a unique wardrobe gradually grew into an interest in vintage fashion.
In 2018, Winfrey and two of his closest friends, Jimmy Canela and Emilio Trevino, opened VNP Gallery to provide the community with the clothing store Winfrey had always longed for growing up. Six years and two locations later, the shop is thriving and others around the country are taking notice, as the shop and Winfrey's team recently received the State of Texas Governor's Small Business Award for Outstanding Small Business Innovation and are involved with one of the highest-regarded vintage clothing conventions in the world. IN CONVERSATION WITH
KC: VNP Gallery received a State of Texas Governor’s Small Business Award for Outstanding Small Business Innovation at the 2024 Governor’s Small Business Summit. What was that experience like and what does the honor mean to you and the shop?
JW: The experience of winning the award was an amazing one, to say the least. Being surrounded by many other small business owners and important people within the Coastal Bend was very motivating. That’s the first award the store has ever won, and it’s always nice to be recognized from time to time for all the hard work we put into running this business.
KC: Do you believe clothing can affect a person’s confidence or emotions? How does wearing a great outfit improve your self-esteem or mood?
JW: Yes, I do believe clothing has an impact on how you feel—whether it’s a vintage t-shirt giving you a happy nostalgic feeling or you just know you’re rocking the best fit in the room, people find confidence and express themselves in the outfits they pick out every day, and we’re here to help make that happen.
KC: You’ve partnered with local shops such as Washed Out and Threads to host events. Why do you feel collaborating with like-minded shops is important?
JW: As a small business, we feel it is very important to collaborate and work with other like-minded businesses here locally. Not only to grow all of our businesses together but to strengthen our local thrift and vintage community here in Corpus Christi. Our THRIFTSTOCK event we hosted with Washed Out and Threads this spring was a true example of the fact that if we all work together, we can provide an even more amazing experience for our community.
KC: Any exciting projects you have in the works that we should be on the lookout for?
JW: Make sure to check out our monthly ArtWalk vintage market, held every first Friday in front of our store; we take over the street with racks of clothes and a DJ. We have plans for market events and pop-ups throughout the summer, so be on the lookout for those details on our social media. Also, we’ve been traveling the country with Thriftcon, one of the highest-regarded vintage clothing and collectible conventions in the world with traveling pit stops. We just finished the Houston stop in June and are looking forward to being at the Portland, Oregon, event July 20-21.

Heroes on the Water provides recreational therapy to local veterans and first responders

Perhaps you’ve seen dozens of kayaks on the water while driving over the JFK Causeway or passing through Port Aransas on a Saturday morning. If so, you’ve most likely witnessed a special event organized for local heroes of our country.
Heroes on the Water (HOW) is a non-profit providing free kayak fishing events to veterans, active military and first responders to foster community and wellness. Led primarily by volunteers, HOW chapters extend across the United States—the Coastal Bend chapter was established in 2012.
Research has found HOW provides opportunities to build relationships, reduce anxiety and stress and improve mood. Those who have experienced trauma, or never enjoyed outdoor recreation, can receive free recreational therapy. “Once participants leave the shoreline, they leave all the demons behind,” said Joseph Briones, Coastal Bend chapter coordinator.
Three key volunteer groups make these events successful: kayak fishing team leaders, the shore crew (which takes care of tents, food and water) and a safety boat team that ensures no kayakers are lost or injured. Participants kayak fish from morning until early afternoon and are provided a delicious meal afterward where they often open up and share their experiences.
The local chapter hosts events from March through November; each month, it takes an average of 40-60 participants across different bodies of water in the Coastal Bend. In 2023, the Coastal Bend chapter was awarded HOW Chapter of the Year for its dedication.
HOW also encourages family participation, allowing heroes and their families to enjoy events together. Families of fallen soldiers (Gold
Veterans, first responders, active military or Gold Star Members interested in participating or volunteering at the next HOW event may submit an interest form online.
Star Members) and wounded heroes are also welcomed with open arms. “We’ve only had a few amputees participate but, being brothers and sisters, we will pick them up and put them in the kayak,” Briones said proudly.
For those interested in contributing, Briones said, “Volunteers are our backbone. It doesn’t matter whether you are a civilian or a veteran, we always need help with events. Monetary donations are used for maintenance, replacing equipment and storage, and fundraising helps immensely as well.”
HOW allows participants to build camaraderie while experiencing recreational peace. Emphasizing the serene nature of HOW, Briones remembered a veteran who truly treasured his experience. “I leaned over in the kayak and asked one participant, ‘How do you feel?’ and he looked at me and said, ‘Like I’m in heaven.’”

How do you know what type of cleanse is best for you?
It really depends on where you are on your journey. Figuring out what type of cleanse works best for your body and goals is a part of our education process.
We have some general guidelines online, but prefer you come by and chat with us about your goals so we can work together and see how we can help you achieve them.
How often should someone do a juice cleanse?
There isn’t an answer to this question that fits everyone. We have guests who will do a 1-day cleanse once a week and some people who will do a 30-day juice cleanse a couple of times a year. Our general suggestion is one day a week, three days per month, seven days per quarter or two extended cleanses a year that are 10+ days. But, it really depends on each individual.
Can you eat at all when on a juice cleanse?
Ideally, no. The point of a cleanse is to allow your digestive system to have a break so it can do all the other things it is responsible for.
Do you need to prepare your body at all before starting the cleanse?
A juice cleanse takes discipline, focus and self-control. How you prepare for your cleanse determines the amount of success you will achieve. We do recommend guidelines to prepare for cleanses of 3 days or more: Four days before you begin a cleanse, eliminate meats, dairy, sugar and alcohol from your diet. Three days before, eat salads and plenty of fruits and vegetables. Two days prior to starting your cleanse, eat fruits, steamed vegetables and light soups. Then, the day before you start, only drink raw smoothies and lots of water.
Is there anything to be mindful of post-cleanse?
You should mostly be mindful of slowly adding foods back into your diet with healthy choices.

A modern farmhouse with rustic influence offers a rural escape from bustling city life

Corpus Christi has plenty to offer those seeking leisure or excitement—however, there is nothing quite like the serenity the countryside can provide. Liza and Dr. Michael Winnie, the proud owners of TW Ranch, can attest to the beauty of nature and the joy it brings.
“We’ve always wanted land out in the country,” Liza said. “This one presented itself and the timing was right.” Surrounded by a panorama of woodland and fields, the all-American ranch house in Orange Grove, Texas, was originally an ordinary residence built in the early 2000s. The bones of the house were solid and showed potential, but it lacked the space and bucolic essence the Winnies desired.
In 2023, they signed the deed to their dream, and Caleb Briden with MCB General Contractors set to work making the three-bed, two-bath house a Southwesterninfluenced modern beauty. The structure was gutted and stripped to the studs, giving Liza—a designer by trade—a blank canvas to create a masterpiece.
Liza’s primary design goal in their open-concept home was to instill modern improvement with a rustic motif. “I wanted to keep a very natural feel, but I was going for modern with a touch of rustic while keeping it refined,” she said.

connection to the outdoors and supply abundant natural light, illuminating every interior detail. The vaulted and wooden beamed ceiling and large iron chandelier emphasize the verticality of the newly captured space while organic textures, like the driftwood collage, flatweave rug and the family’s framed collection of centuries-old arrowheads, connect to the primitive influence of the land’s history. A balance of clean-lined and lowslung contemporary furnishings in earth-toned textiles enhance its farmhouse charm.
In the primary bedroom, a deep cerulean paneled statement wall and the colorful hues of the custom abstract canvas, equestrian artwork and glass windchime wall hanging generate a clever palette of rustic sophistication. Echoing the panel’s texture, the woven leather headboard is the foundation for crisp
neutral bed linens which bring out the subtle tones of gold and tan in the surrounding decor.
In the guest bedrooms, an emphasis on the ranch aesthetic shines in the details of Liza’s design. Black shiplap creates a custom built-in headboard for the queen bed, while cowboy hats, raw wood and leather finishes reinforce the western roots of the home. The longhorn painting, by local artist Rebecca Bradford, was specifically chosen for its unmatched authenticity and unique cold wax and oil paint technique to create a tactile leather-like finish. Each bedroom embodies individual ranch flair with varying finishes and furnishings.
The kitchen is the Winnies’ favorite part of the home. “I just love gathering with our family, it’s the perfect place,” the couple said. An extended island centered in the large space seats up
to eight guests, providing plenty of counter space for holidays and gatherings. Initially, the kitchen was small and the natural light was scarce: “There was just a tiny window here before, so we added more windows and it really opened up the room,” Michael recalled.
The farmhouse style stands out with white shiplap walls, open wood shelving and clean lines punctuated by the black frame windows and schoolhousestyle pendants. Raw wooden textures and antique wildlife paintings, inherited from Dr. Winnie’s greatgrandmother, mix seamlessly with the bronze library wall lights and modern appliances to produce the perfect blend of designs.
Most notable to the modified structure is the iconic wraparound porch, virtually doubling their living space.
“The porch wasn’t here, so we extended the roofline to add it,” said Michael of the space prior to renovations.
A mixture of timeless furniture, including a porch swing and a large wooden dining table, affords the Winnies a view of the shaded pasture and a life-size chess board, ready for the family to enjoy. Spanish mossdraped trees line a dry creek that bisects the property, offering a serene escape to observe the many species of birds and wildlife that visit.
Offering a wonderfully rural escape from the busy city life, the Winnies’ ranch retreat provides the family a home away from home that looks and feels just as beautiful as the nature surrounding it.

How to grow this magnificent succulent in the Coastal Bend

Natural wonders hold a special place in the hearts of many Americans. This is evidenced by enduring efforts to preserve and protect the natural world with park designations and wildlife conservation throughout our nation.
This is especially true of Texans. We love nothing more than to boast to our out-of-state friends about the majesty and grandeur of Texas’ natural beauty.
There is one overlooked Texas gem that is truly aweinspiring and somehow left off of murals, postage stamps and country songs: the century plant. It transforms from an unassuming agave into a 20-foot-tall tree-like plant that you might find in a Dr. Seuss book. If you happen upon this magnificent Texas treasure, you simply can’t help but stop and take in the splendor.
Despite its name, on average, it will take a century plant around 20 years to bloom. As it nears the end of its life, a towering, half-foot-wide stalk is thrust into the air from the middle of the plant—picture a giant asparagus emerging from the ground with enormous leaves surrounding it like a banana peel. It will grow upward several inches daily and after a remarkable flower display, the century plant dies.
But out of death comes new life; while it was marching toward its dramatic show, resources were being used to make new plants, also known as “pups.” These pups pop up as new plants that will surround the old one to keep the life cycle going.
GARDENER'S NOTES
GROWING UP
You’ll want to give this giant succulent room to stretch out. Spacing, 8’ to 10.’ Height, 4’ to 6.’ Provide a stage for the show by avoiding planting under a tree or structure; the flower tower can reach 20’ or more. Century plant is low maintenance, so little to no pruning is necessary. Harvest the pups to replant elsewhere or give them away as gifts. Few pests threaten the century plant as long as it’s healthy.
PROFILING
Century plant requires some consideration and planning. This succulent has spiky, teeth-like edges along the leaves and each leaf comes to a sharp point. Although striking, these plants tell us, “Look but don’t touch.” Like most succulents, century plant’s heat tolerance is incredibly well adapted to our warm climate and it will do just fine even in our worst summer conditions. It prefers full sun, good air circulation and well-drained soil. Water sparingly to avoid root rot.

A captivating drone video was shot in 2022 of a century plant in bloom near our home in Bee County. The footage captures pollinators of all kinds jumping at the opportunity. Like a remote mountain seemingly creating its own weather, the century plant suddenly became an elevated oasis buffet with a flurry of activity and beauty. summer grilling menu

You’ve grilled hot dogs and hamburgers, steaks and fajitas. You’ve lit the embers dozens, maybe hundreds of times and you’re tired of cooking the same old, same old—but grilling is a tradition you return to each summer. You love cooking outdoors, the sunshine and evening heat, the friends and family around the grill. However, it’s time to throw something on the grill that inspires you and delights your guests.
How does this sound: grilled brie with marinated grapes on a toasted baguette? Follow it up with warm Texas peaches topped with vanilla bean ice cream. These unexpected recipes are so good, they’ll claim a perpetual spot on the grill.
Preparing familiar ingredients in a new way can transform them into a unique culinary experience. Grilling causes a chemical reaction that breaks down the amino acids and sugars in the food when it comes into contact with the heat of the grate. This Maillard reaction results in a characteristic deep brown color and distinctive taste. Using pecan, mesquite or oak wood can also inform the essence of a barbecued dish.
When grilled, the flavor of soft brie amplifies, taking on smoky notes, and its contents transform into a molten liquid that oozes onto the plate when the rind is pierced. Red grapes on the grill (tart green grapes or seeded red grapes don’t work as well for this recipe) become warm, slowly developing a char, then bursting once their juices heat to a high temperature. Served on a toasted baguette, gooey brie with macerated grilled grapes marinated in a balsamic vinaigrette is an easy appetizer that friends won’t forget.
On hot summer nights, a dessert straight from the grill is a decadence. We chose a seasonal favorite, Texas peaches. Their golden flesh heats up and releases more juices and natural sugars, a great contrast to woodsy cinnamon and creamy vanilla bean ice cream. Choose ripe but firm peaches, as their stones are easier to remove. A peach that is too soft will lose its shape and its skin may stick to the grill.
This summer, reinvigorate your love for cooking outdoors by trying these unique grilled dishes.
RECIPE
Grilled Brie with Marinated Grapes on Baguette
Serves 4 appetizer portions
PREP TIME: 1 hour
COOK TIME: 15 minutes
INGREDIENTS:
11 ounces of red grapes on their stems 1/2 cup olive oil, plus extra for drizzling on baguette slices
3 tbsp balsamic vinegar
Sea salt and black pepper, to taste 7-8 oz brie wheel
1 baguette, sliced into 3/4” slices
Fresh thyme
DIRECTIONS:
Combine olive oil, balsamic vinegar, salt and pepper in a leak-proof bag. Add clusters of grapes to the bag, remove any air and close to seal.
Marinate the grapes for about an hour, inverting the bag every 10-15 minutes to ensure all the grapes are covered. If you’re pressed for time, skip this step and merely cover the grapes with the vinaigrette.
Preheat your grill or grill pan over medium-high heat. Brush the baguette slices with olive oil or spray with olive oil cooking spray. Grill slices for 2-3 minutes, until golden with browned edges. Remove from the grill and set on a serving platter.
Line the grill with aluminum foil. Remove the grapes from the marinade and place on the preheated grill for 5-6 minutes, turning every 3 minutes using the grape stem. The grapes are done when they are charred and starting to burst. Transfer grilled grapes to a bowl along with reserved marinade. Using the back of a fork or pestle, macerate the grapes to release their juices.
Grill the brie for 3-4 minutes on each side, transferring it carefully to the serving platter after it’s developed a nice char.

RECIPE
Grilled Peaches with Vanilla Ice Cream Serves 4
PREP TIME: 10 minutes
COOK TIME: 6 minutes
INGREDIENTS:
2 peaches, halved with stones removed
1 tbsp avocado oil
1/2 tsp ground cinnamon
4 scoops vanilla bean ice cream
Fresh basil
DIRECTIONS:
Preheat grill to medium heat. Brush peach flesh with olive oil and sprinkle with ground cinnamon.
Grill peaches for 3 minutes with the cut side down. Invert the peaches and grill an additional three minutes in order to heat the peach through.
Top each peach half with a scoop of vanilla bean ice cream. Garnish with basil chiffonade and a cinnamon stick.

Paradise at The Palm

The ideal Coastal Bend summer night consists of sipping a cocktail, listening to live music and feeling the warm, salty breeze blowing by. Situated on the waterfront in downtown Port Aransas, The Palm Social Club is the perfect summer spot to do just that.
Established in August 2023 by Collie Farley and Winston Caraker, The Palm pays tribute to the historic music culture in downtown Port Aransas. “Downtown was and still is a central hub for live music, boating and fishing,” Farley said. “The outdoor portion of our property is where Shortys was previously located, and as kids, we’d always sneak into Shortys to hear live music. When we heard the property would be coming available, we had to have it.”
The Palm continues the legacy of welcoming music to the area while blending tradition with modern design. Inside the club, comfortable lounge chairs line the green and salmon walls with accents of palm-patterned wallpaper. Outside, zero gravity loungers facing the main stage allow customers to relax and enjoy a cocktail while directing their attention to the musicians. Outdoor lights illuminate the patio in the evenings, creating a cozy atmosphere.
And as for the cocktails, “You’re going to find something you’ve never tried,” Farley said. “Whatever the fresh fruit is for the season, we plan to include it.” The Palm updates its drink menu seasonally and has produced a summer menu filled with vibrant ingredients, including a Sparkling Cucumber Martini, made with freshly squeezed limes and cucumbers, and a Watermelon Margarita, made with fresh watermelon juice and Palm Republic punch. Country, soul, jazz and funk are a few music genres you will find coming from the stage at The Palm on any given night, and weekly house bands include Los Locals, Riptide and the John Elijah Band. “We have incredible songwriters who perform, and welcome anything easy to listen to,” said Farley. “We also love finding hidden gems. Last year, we booked Uncle Lucius, who has really taken off. Catching people on the comeup is key.”
The true heartbeat of The Palm Social Club is the exceptional music it celebrates. “It takes bravery to be a musician. We receive hundreds of emails from undiscovered artists weekly and listen to all of them. Everyone deserves a spin; it just takes the right person to hear you.”

Jefe’s Next Chapter
From food truck to restaurant, Jefe’s Street Tacos & More’s flavorful menu delights

In 2017, Sammy Silva introduced Jefe’s Street Tacos & More to Corpus Christi through a vibrant food truck that quickly became beloved. After six years of culinary adventures on wheels, he has taken a significant step and realized a long-held dream by opening a brick-and-mortar location.
Once the COVID-19 pandemic hit, the plans for the restaurant were stalled, but as usual, our wonderful community came through and the food truck saw a surge in popularity as people sought out convenient and delicious options, reinforcing Silva’s confidence in expanding his business. The new restaurant not only provides a permanent home for Jefe’s but also addresses the limitations faced by the food truck.
“With the brick-and-mortar, we have more space and can offer a bigger menu,” Silva explained. “We can also include new items we couldn’t in the food truck due to space limitations and time constraints.”
Jefe’s Street Tacos & More is known for its titular menu item, but the new restaurant now caters to a wide range of tastes: Diners will still find classics like quesadillas, tacos, corn cups and asada fries, plus welcome additions packing a flavorful punch.

signature Jefe sauce, promises a delicious bite—well, several, especially served with a side of crispy fries.
Other innovative menu items include the quesitaco, with homemade corn tortillas fried tostada-style and transformed into crispy, sandwich-style quesadillas, and the Papa Asada, a loaded baked potato filled with melted Monterrey jack cheese, carne asada, onion, cilantro, butter and sour cream.
Silva’s training as a chef also allows for creative experimentation, and bulgogi, teriyaki and even smoked birria tacos are on the menu’s horizon.
Heather Garcia, Silva’s fiancée, brings her baking expertise to the table, crafting delightful desserts like Tres Leches and sopapillas, with plans to introduce homemade pan dulce and a variety of other cake flavors, providing a sweet ending to an already flavor-packed meal.
Opening a restaurant comes with its own set of challenges, and Silva noted the differences in logistics between running a food truck and a restaurant. “In a food truck, you can move to where the people are, but with the restaurant, you have to attract people to your location,” he said. Fortunately, the community’s support has been overwhelming, helping to build a loyal customer base.
Silva’s vision doesn’t stop here— he plans to expand the brand through franchising, targeting areas like Calallen and Portland, where the food truck has already established a strong following and the restaurant will be welcomed.

For Gomez, Lyng and Perez, the most rewarding aspect of CC Creators is witnessing the power of community. The meetups are attracting an array of talented individuals whose work might have otherwise gone unnoticed. The collective’s strength lies in its diversity and the shared commitment to pushing creative boundaries.

Big Tree Oyster Co. sustainably grows oysters in Copano Bay, restoring the environment in the process

Oyears ago. Beginning summer of 2023, Big Tree was the seventh permitted mariculture operation in Texas.
“We love oyster mariculture because it is considered one of the most sustainable forms of food production in the world,” Belaire said, noting that oyster farms are regarded restorative for the environment due to the net benefits they provide to their ecosystem. “The oysters on our relatively small farm filter nearly 10 million gallons of water each day [and] do not require any food, fertilizer or chemicals.”
ysters have long been acknowledged as a crucial line of defense in environmental conservation along our coasts, from their natural nutrient filtration to the barrier their reefs provide for our shores. Big Tree Oyster Co. owners Amy Belaire and Seth Gambill answer the call to a life in conservancy through their dedication to oyster mariculture— raising, farming and harvesting oysters— in Copano Bay.
Born and raised in Rockport, this husband-and-wife team fostered their sensibilities for serving the coast through a life dedicated to learning more about it. By trade, Belaire is a conservation biologist and Gambill is a marine hydrographer and a professional boat builder.
“Our annual hometown celebration, OysterFest, celebrates everything oyster-related and it was a real highlight of our childhoods,” Belaire said of her earliest connection to life in coastal conservation. “Growing up here inspired a deep love in both of us for all things related to the coast, nature and environmental protection.”
The Gulf of Mexico sources the most oysters consumed in the United States, making their harvesting a multibillion-dollar industry that is uniquely sustainable and necessary for our coasts. A newer aquaculture industry, oyster mariculture has taken the forefront of farming on the Texas coast since a dedicated grant started up several

Big Tree farms and harvests its oysters through means utilized for decades on both the East and West Coasts. Oyster baskets float at the water’s surface, for ideal growing conditions and clean water, where they are tumbled and flipped, mimicking the tide. Oysters can be harvested year-round after being hand-selected for ideal shape and size.
“Oysters are really special because they take on the flavor of the environment where they are grown,” Belaire said. “Big Tree oysters are grown in clean, healthy waters with a relatively high salinity.”
The result is an oyster featuring a “bright, clean and salty” profile with a slightly buttery and sweet finish.
While the products yielded in this process have an air of luxury and are undoubtedly delicious, they are also necessary components for contributing to a clean bay. Currently in its first harvest, Big Tree distributes locally and to San Antonio, while operations are ramping up for local pickup options in Rockport with plans to grow throughout the fall and into 2025.
“To us, growing oysters in this way is a true collaboration with nature,” Belaire said on Big Tree’s mission. “It’s our way of living out our commitment to a thriving and sustainable Texas coast.”

A Long Way Down
Drilling artesian wells was a major undertaking at the turn of the century

Getting enough fresh water to the right place has always been a challenge in South Texas. With the population and business investments growing, this demand surged as the year 1900 approached. Locals searched for prime locations to drill artesian wells—wells deep enough that the pressure would make water flow without the use of a pump. For some, this meant drilling over 700 feet underground.
The struggle was not just for those trying to grow a more densely populated city of Corpus Christi—ranches also needed fresh water for animals and to facilitate travel across the long expanses of ranchland. Richard King wrote, “Where I have grass, I have no water. And where I have water, I have no grass.” The empire he built was done without the benefit of artesian wells.
The first successful artesian well on King Ranch was witnessed by King’s son-in-law Robert J. Kleberg and his widow Henrietta King on June 6, 1899. Kleberg reportedly cried as he watched the water flow at a steady 75 gallons a minute. He undoubtedly believed more would be found, resolving his freshwater issues and unlocking enormous potential for the land he had dedicated his life to.
By 1903, King Ranch had 52 artesian wells. More development was on the horizon, including the ability to extend the railroad through South Texas, fence pastures, irrigate crops and expand into the citrus industry—thanks largely to the availability of fresh water.
