Slow Down and Savor the Coastal Bend
I don’t know if this is a universal behavior, but when I am at the grocery store, I typically have large headphones on and avoid eye contact with other shoppers. I want to get in, get my items and get out. However, when I shop for groceries at a local farmers market, my strategy is quite different. For starters, the noise-canceling headphones are left at home.
I spent the evening before this issue’s cover feature photoshoot at the GROW Local Farmers Market. I had two lists in hand, one filled with items to acquire for the shoot and the other filled with items to acquire for my home. Instead of walking in the opposite direction from someone I knew, I stopped and chatted with them. Instead of listening to a podcast while shopping, I conversed with each vendor about their products, what’s in season and what’s coming down the pipeline for their business. Instead of racing through the errand, I slowed down and savored it.
This isn’t exclusive to farmers markets. Stop into a local meat market, bakery or
provisions shop and I am confident a similar experience will transpire. That’s the thing about shopping local: You not only have access to high-quality products made right here in the Coastal Bend, but you also have the opportunity to learn about the person behind the product. You have the chance to put a face to the name and hear the story behind the product you’re buying.
This month’s cover feature, “Local Checkout,” is inspired by that idea, and provides a guide to help take your grocery shopping local. Though that might mean making a couple of extra stops to check each item off your list, what you’ll lack in speed you’ll gain in quality, locally sourced or made items and a sense of community.
Beginning on page 39, contributing writer Luis Arjona, managing editor Alexa Rodriguez and I break down the standard shopping list into a handful of categories: produce; bread, dairy and eggs; beef, poultry and fish; pantry staples; and items you’d find at an international market. Each section shares a handful of businesses to consider when shopping for these food items to help you eat local, even from the comfort of your own home.
On page 42, Arjona perfectly articulates the good that comes from shopping for food locally. “Beyond the personal benefits, the embrace of local ingredients serves as a means of individual and communal fortification. It’s a commitment to vibrant health, a gesture of regional solidarity and a pledge to nurture the very soil from which our sustenance springs.”
So, as you prepare for your next family dinner, summer barbecue or just next week’s grocery list, I encourage you to take stock of what you can purchase from a local retailer instead of a big box store. Chances are it will taste better, be better for your health, support a neighbor’s dream and aid in sustainable practices — that’s what I like to call a win-win-win-win.

The Marty McPies owner discusses switching from a food truck to a brick-and-mortar, menu expansion and more
By Kylie Cooper Photo by Robin BlackshearMartin Flores, affectionately known to most as “Marty,” is the brains behind one of the most popular food trucks in the Coastal Bend, Marty McPies. The food truck first opened its service window in January of 2021 and its reputation as one of the best pizza places in town began to spread quickly. Now, just two and a half years later, Flores is opening a permanent location.
Before 2021, Flores hadn’t ever actually worked in a kitchen. He spent the majority of his career in the military and working in the railroad and refinery industries around the country. “Everywhere I went,” he said, “pizza was there.” Similar to seeing a familiar face in a crowd, eating a slice of pizza became a way for Flores to feel connected to the communities he resided in. “There are so many styles of pizza, but I didn’t have a favorite,” he said. “So I took my favorite parts of each pizza and created Marty McPies. I wanted to come home and make pizza for my people.”
Kylie Cooper: After running a popular food truck for the last few years, Marty McPies is moving into a brick-andmortar. How did you decide it was time to expand in this way?
Martin Flores: Weather definitely played a big factor in the decision to expand. If it rains, we can’t operate; if it’s peak summer temps, we risk heatstroke. The struggles of a food truck are real and our business depends on the weather. Also, being limited on space and manpower, we could only serve so many pizzas at a time and we were selling out constantly. The demand is growing and so are we. We just want to offer a better experience with more consistency at a permanent location — with air conditioning.
KC: How did you land on the Best Western building downtown?
MF: We knew we wanted to be downtown; that’s where we planted our roots. After working with the Downtown Management District for over a year, and facing the ups and downs of missing out on locations, we were beyond lucky to have landed the old Blimpie at the bottom of the Best Western Hotel off Shoreline. We had our eyes set on multiple locations that could have worked but fell through. It was basically our last option, and it was the most perfect option. We fell in love with the potential immediately.
KC: Describe the new space for us! What can customers soon come to expect?
MF: We are keeping the same open kitchen experience you get with the food truck with a 30-foot bar, seating and dining room tables and chairs on the inside. Outside we will have a large deck patio with views of the water from Shoreline with picnic tables and high-top tables and chairs to enjoy pizza and vibes.
KC: Going from a food truck to a bigger space to design, what was the inspiration behind the look and feel?
MF: Well, I’ve only designed one thing in my life and that was the food truck. Everyone has seemed to like it, so basically, I’m just making a bigger version of the food truck with seating and an amazing view. It doesn’t hurt that we also have the “Opalescent Octopus” mural
painted by artist Kip Toe on the side of the building. We want to bring a cool, nostalgic, modern pizza vibe to Corpus. Pizzerias are typically, pizzerias. We just want to make it fun. I’m a big kid at heart and you’ll notice that with little design things here and there once it all comes together.
KC: Talk to us about the food — with expanded kitchen space, will the menu change at all?
MF: Of course, but baby steps. With a bigger kitchen, we will offer more of your favorite specialties like the Elote Pie and The Mikey permanently with our already unique pizza lineup. Just like most pizzerias, we plan to offer wings, salads, sandwiches, calzones, desserts and beer/ wine. We also plan on offering gluten-free pizza on certain days.
KC: What have been some of the biggest challenges in switching from a food truck to a permanent location?
MF: Still working and having to operate the food truck while also having to be there to build a restaurant at the same time has been the most difficult. I’ve never worked in a restaurant, so learning everything has also been a challenge. I am just grateful for all the knowledge and help fellow restaurateurs have given me. Most of all, I’m grateful for my crew — which consists of my amazing girlfriend, Amber Flatt, who left her teaching career after 10 years as an elementary school art teacher, and my best friend Jefte Flores — to keep this boat afloat. The support from every angle has gotten us here and I greatly appreciate it.
KC: What is the planned open date, and what will your hours look like?
MF: Our hours will be Tuesday through Saturday 11 a.m. to 10 p.m. and Sundays 11 a.m. to 4 p.m. We’re aiming to open by June — crossing our fingers we make that happen. Wish us luck!

The 2024 La Merienda event, hosted by the Corpus Christi Cotilion Club, took place on Feb. 23 at Texas A&M University-Corpus Christi's Weil Gallery. Funds raised at this event benefit the university's Visiting Artist Program.

Held at the American Bank Center on Feb. 15, the annual Charity League Style Show & Luncheon benefited the Corpus Christi Literacy Council. In collaboration with Julian Gold Corpus Christi, the showcased designer was Cara Cara. Charity League's fundraising efforts resulted in over $358,000 for the local nonprofit.

Putting Children First
The Children’s Advocacy Center of the Coastal Bend seeks to minimize the trauma of abuse investigations while caring for the children at the center of them
By Lauren PieperImagine children, whose lives have been altered by unspeakable trauma, having to retell their stories of abuse repeatedly to doctors, lawyers, investigators and judges. Through its multidisciplinary team approach, this is exactly what the Children’s Advocacy Center of the Coastal Bend (CACCB) seeks to avoid.
Established in 1994, the CACCB was created in response to poor execution of child abuse investigations. According to Executive Director Clarissa Mora, “In the late ’80s and early ’90s, law enforcement and the Department of Family Protective Services (DFPS) were not trained on how to interview children. Now we have specialists who undergo professional training to interview children in a developmentally appropriate way.”
The CACCB provides free services, including specialized forensic interviews, community education, case management, teen support groups and therapeutic recovery, and CACCB serves 10 counties — Aransas, Bee, Brooks, Jim Wells, Kenedy, Kleberg, Live Oak, Nueces, McMullen and San Patricio — across the Coastal Bend. It is now the third busiest Children’s Advocacy Center in Texas, providing services to 1,400 children annually.
The CACCB has interviewed more than 40,000 children since 1994. “Our goal is to only do one interview with a child,” Mora explained. “The child tells their story once to a trained interviewer, who collaborates

with DFPS and law enforcement to formulate the right questions to ask in a way that does not retraumatize the child and moves an investigation forward.”
When child abuse is reported to DFPS, the CACCB also receives the report. If the case meets the criteria for services, the Center coordinates case review meetings with its multidisciplinary team, consisting of representatives from district attorney offices, law enforcement, DFPS, Driscoll Children’s Hospital, forensic interview specialists and mental health professionals. The CACCB creates a child-focused meeting environment, encouraging partners to communicate and make effective decisions together about how to respond appropriately to help the child.
When asked how the community can help the organization, Mora replied, “There are financial implications involved when a family is going through this, so tangible and monetary donations are tremendously helpful.”
The CACCB houses a Rainbow Room, or a resource room, that promotes the well-being of affected children and families. Donations needed to supply the room include new, non-used socks, shoes, hygiene products, blankets, stuffed animals and books. “We also need individually wrapped snacks and drinks to provide to children to help make them more comfortable,” Mora said: “water, juice, Rice Krispie treats and pretzels are examples of snacks we accept.”
From ensuring an appropriate interview process to connecting children to a comprehensive treatment plan, the Children’s Advocacy Center of the Coastal Bend strives to put children first by facilitating a competent response to child abuse investigations in the community.

A Nod to Charleston
Hints of South Carolina warm this Port A beach house

In the seaside community of Sunflower Beach stands a grand structure with the ocean at its back door.
Designed by Merideth Owen and built by UWC Custom Builders, this remarkable abode has six bedrooms and seven bathrooms reaching a total of 4,576 square feet, and was intended to suggest a nod to the architectural styles seen in Charleston, South Carolina, while maintaining its South Texas coastline integrity.
The large living room on the second floor — an ideal space to lounge — exudes a relaxed atmosphere by combining natural textures, such as a pair of wooden tables, with neutral-toned linens and furniture pieces and a black marble fireplace. The room is accentuated by expansive white walls, a dark gray accent wall and
black framed windows reaching up to the 22-foot ceiling and anchored by black chandeliers, giving a nearly panoramic ocean view.
The kitchen is a pure expression of the littoral mood the homeowners desired. Blue-gray cabinets enhance the coastal influence while the stained oak pantry with gold-toned mesh and matching open shelving add warm tones, creating an ideal balance. Eye-catching quartzite adorns the backsplash, drawing attention to the French range, hood and decor. The dark oversized island paired with natural raffia chairs adds functionality and completes the space. Establishing cohesion with the remainder of the kitchen, the open butler’s pantry adds architectural significance with its stained oak archway, providing extra storage and an opportunity to showcase the owner’s unique glassware.

decor pieces. The black wallpaper modeling marine life, the ocean blue quartzite vanity and the wallmounted faucet demonstrate the exceptional sense of design.
Of the home’s seven bathrooms, the most notable is the primary. Its stunning blue and white ombre mosaic tile wall exudes the ocean's essence and fortifies the room. The white walls, neutraltoned enclosed shower and large pedestal bathtub beneath an ornate coral chandelier establish a warm sense of sanctuary.
Contrasting the moody and deep tones of the common areas, the owners chose lighter and more traditional beach house hues for the guest bedrooms. Coral pink wall color and palm leaf wallpaper provide an ideal background for the queen-sized beds, and aid in telling the home’s full design story. The large double-bunk bedroom features custom built-in bunk beds and wardrobes highlighted in an ocean blue tone, accenting the white paneled wall. A surfboard focal point rounds out the space and ties in the decor and furniture’s lighter shades. In all of the bedrooms,

Cullen Francis Goodman a 5th generation Corpus Christian, is the son of Ada Weil Fish and the late Gregory D. Goodman. He attended Incarnate Word Academy and W.B. Ray High School in Corpus Christi and the University of Texas at Austin. He married Brett Allison Boeck of Corpus Christi in 2013 and together they have two children, Celia Frances (8) and Thomas Boeck (5). After working in the construction industry in California, Cullen returned to Corpus Christi in 2010 to learn the oil and gas industry. After a decade of gaining valuable knowledge, Cullen moved on to establish his own business, Lighthouse Contracting, specializing in residential and commercial construction.
Cullen grew up hunting the Brush Country of South Texas and fishing the coastal waters of the Gulf of Mexico. He is an avid conservationist and enjoys his South Texas landscape. With his passion for the outdoors, he enjoys teaching his children the values of conservation and protecting our natural resources. Cullen has volunteered his time to multiple civic, educational, and community organizations, including CCA, DU, The ARK, and University of Texas Marine Science Institute, and is a former member of the Bucaraders Organization. Cullen is also a proud tournament official for the Port Aransas Piggy Pachanga, educating youth on tournament fishing which establishes and enriches their bond with the incomparable natural beauty of our Coastal Bend.

Growing, harvesting and using cucumbers
in the Coastal Bend
By Nick OttensmanThere is nothing quite like a fresh salad with crisp cucumbers cut from the vines in your garden. Cucumbers are refreshing ingredients for adding texture to salads and sandwiches, and are great for mixing in smoothies and infusing water. At our house, we like to grow cucumbers for both salads and canning jars of pickles.
Our favorite is the Boston Pickling variety, available online from Baker Creek Heirloom Seed Company. The Straight 8 is an English cucumber, perfect for salads and found at many local nurseries in the Coastal Bend.
Here is an easy-to-follow recipe for dill pickles. All you need are mason jars with lids, a pan for brine and a large pot.
Ingredients: Water, distilled white vinegar, pickling salt, cucumbers, fresh garlic, fresh dill, peppers and whole peppercorns
1. Sanitize jars and lids in boiling water.
2. Chop off the ends and then slice cucumbers lengthwise to make four spears. The size of the jar used will determine how many cucumbers are needed.
3. Mix and boil 3 cups water, 2 cups white vinegar and 1/4 cup pickling salt to make brine.
4. Tightly pack the cucumbers, dill, 2 cloves of garlic, peppers and whole peppercorns.
5. Add the brine to the jar, leaving approximately 1/2” of space between the brine and the lid.
6. Clean off any debris from the mouth of the jar to ensure a good seal with the lid.
7. Hand-tighten the lid of the jar with the ring. Set out in a cool, dry place and listen for the popping sound of the lid sealing into place.
There is no need to refrigerate these canned pickles. Store them in the cupboard and enjoy them months or years later.
GARDENER'S NOTES
GROWING UP
Now that it’s May, you’ll be looking for transplants at your local nursery that can go straight into the garden. Make sure the soil is loose and drains well. Add compost to your beds and give the plants a boost by adding fertilizer; we prefer Medina Growin’ Green 3-2-3. Separate the plants evenly at approximately 18 inches and use a soaker hose to water them in. Consider attracting birds to your garden for natural pest control.
PROFILING
Cucumbers are a vine crop, so plant in full sun beneath a trellis or post with wire. Give the vine plenty of room to run; at least 6 feet. When it’s time to harvest at approximately 60 days, the fruit should be green. If the fruit is orange, it has overripened and surpassed the optimum time to harvest the best flavor. Keep a close eye out, because this fruit will do its best to hide from you.

Tempting carne asada tacos from 1915 Farm

I was sipping a Modelo under a sprawling oak tree, recipe developer Sarah Bomkamp to my left and farmer/entrepreneur Catherine Klemcke to my right. We traded stories like old friends over a plate of tacos.
I last caught up with Klemcke in 2019, but much has changed for her family’s business over these five years. Klemcke and her husband Tanner expanded 1915 Farm’s agricultural footprint by several dozen acres and added 11 teammates to its roster. The team now includes a wholeanimal butcher who relocated his family from California for an opportunity to work with the Klemckes. The 1915 Meatery Butcher Shop opened last September and offers an impressive variety of specialty meats.
Some things, though, will never change at 1915 Farm, like the Klemckes’ commitment to restoring local lands back to nature by serving regenerative, beyond organic, grass-fed beef, pork and chicken.
Klemcke looked across the table to her red-haired companion and said, “Sarah came into the picture about a year ago and has been instrumental.” Sarah Bomkamp
smiled as she reminisced about her introduction to 1915 Farm in 2021. Her husband surprised her with two beautiful steaks and 1915’s signature seasoning for Valentine’s Day. As is true for many of the farm’s loyal customers, the quality and taste of 1915’s dry-aged tenderloin made a big impression. “We were doing our best at the grocery store, buying organic and grass-fed, but food labels are limiting and they don’t tell you about the treatment of the animal,” she said. The Bomkamps became members of 1915’s Grass Roots Club, a subscription service to receive a monthly shipment of assorted meats. Bomkamp’s passion for cooking started as a hobby and has evolved into her mission as she joined the 1915 family.
Conversation stalled as we dug into Bomkamp’s carne asada tacos, featuring 1915 Farm skirt steak marinated in citrusy lime, oranges, a punch of jalapeno and a little garlic. “I love using a marinade because you can toss it in the fridge and it’s ready when you are,” she said.
Bomkamp topped the tender beef with a vibrant mango salsa, adding fiery jalapeno and ancho chili powder for a smoky note. With waves of flavor and good conversation, our plates were clean and our hearts were full.

Grass-fed Carne Asada Tacos with Fresh Mango Salsa
Serves 4-5
INGREDIENTS
For the Carne Asada –
1 - 1915 Farm grass-fed skirt steak (hanger steak or flank steak work well too)
Kosher salt to taste
2 limes, juiced
5 cloves of garlic, minced or finely grated 1/2 cup freshly squeezed orange juice
1/4 cup avocado oil
2 tablespoons apple cider vinegar
1 large jalapeño, minced
White corn tortillas, warmed (ideally over open gas stovetop burner)
Cilantro, finely minced, for garnish
Lime wedges for serving
For the Mango Salsa –
1 small red onion, minced
1 jalapeño, minced (or serrano if you like it spicy)
Handful of cilantro, minced
2 ripe mangos, finely diced
2 limes, juiced
Sprinkle of ancho chili powder
Pinch of kosher salt
INSTRUCTIONS
For the Marinade – Remove the steak from the package and pat dry with a paper towel. Generously season both sides of the meat with kosher salt. In a gallon-sized storage bag or large baking dish, combine all ingredients for the marinade. Add the steak and mix to ensure even coverage. Refrigerate for at least 2 hours and up to 8 hours (though if 30-60 minutes is all you can manage, it’ll still be great). Make sure to flip the steak over every once in a while during this time to keep the marinade from settling too much.
For the Salsa – Combine ingredients for the mango salsa in a medium bowl. For best results, chill in the fridge for 30 minutes or more. This will let all of the flavors meld.
For the Carne Asada – Take the marinated steak out of the fridge for about 30 minutes to let it come up to room temperature before you get cooking.
Heat an outdoor grill to high (alternatively, you can do this on a cast iron pan or plancha/flat griddle on your stove). Once the grill is up to temperature, remove the steak from the marinade, letting the excess drip off. Discard marinade and pat steak dry.
Add a splash of avocado oil to the pan or griddle and cook steak 5-7 minutes each side, or until desired internal temperature is reached (we love ours medium rare, or 130-135°). Don’t forget the steak will continue to cook as it rests, usually by about 5 degrees. Once rested for 10 minutes, slice steak against the grain, then dice into small bitesized pieces.
To Serve – Lightly toast tortillas over a gas range or outdoor grill, or simply warm them in the microwave using a tortilla warmer or wrapped in paper towels. Layer two tortillas per taco, add carne asada and top with mango salsa. Serve with extra lime wedges on the side and dig in!

Originally a bar and eatery from Lubbock, Bier Haus has called Port Aransas its second home since the summer of 2023 and has quickly become a staple among locals. Whether folks are passing through or back from the beach, trying something new on a weekend outing or just looking for a cold beer and a burger, Bier Haus provides an experience friendly for all.
“The owner [Tommy Bonner] really enjoys Port A and was looking forward to bringing the community a nice place to hang out, especially for college students,” said Conner Byrd, manager of the Port Aransas location, on the inspiration behind the move to South Texas.
Beer aficionados and casual drinkers alike may find new and old favorites with Bier Haus’ impressive curation on tap, by the can and by the bottle. Among its most popular beers are IPA favorites Hoppenheimer by Manhattan Project Beach Co. and Hazy Session IPA from Four Sixes Grit & Glory, while local favorites like Lazy Beach Blonde and Nueces Original find places among the ranks. Bier Haus also offers flights for drinkers in search of new go-to beers.
“All our kegs are held underground, so our taps run really cold,” Byrd said. “Overall, we have a wide variety — beers, cocktails, seltzers and wine.”
Cocktail drinkers need not be discouraged by the name of the establishment, as the house prickly pear margarita is more than ready to help. Bier Haus staff take pride in this house-made classic, which features natural ingredients from prickly pears sourced directly from a ranch in South Texas. From the company that brought us Diamond Point Catering and Rockit’s is a new concept at the Art Center of Corpus Christi: Gallery 41 Water’s Edge Grill. This corner bistro space at the Art Center has seen many occupants over the years, but none are as complementary to the neighboring art galleries as this.
Hospitality giant CC Turnkey has mastered the catering and events space, but launching a fine-dining establishment of this kind is a new venture. Beginning in the summer of 2023, the space underwent an extensive renovation and as of March 2024, Gallery 41 is bringing patrons a chic atmosphere to pair with an upscale menu.
“From ribbon cuttings to weddings, quinceañeras, corporate parties, reunions and everything in between — we love investing in the people around us,” said Volkan Koç, managing partner of CC Turnkey and Gallery 41’s General Manager. This new venture exists as an extension of the company’s mission in a smaller setting, focused on progressing and contributing to Downtown’s thriving art scene.

After numerous late-night diaper changes, they quickly realized most baby pajamas on the market couldn’t handle the frequency of washes that come with newborn territory. Not to mention, as fast as little ones grow, the Morgans found the number of new pajamas they were going through wasn’t sustainable, either.

Together with her husband, she set out to make functional, high-quality childrenswear complete with features like double-zippers, fold-over mittens and fold-over feet to make diaper changes a breeze and protect newborns from scratching their faces. These premium features are made to convert from a footed sleeper to a footless romper for an easy sleep-to-play transition.
“Our pajamas are designed to grow with your child,” Lexi said, “so that they fit much longer than standard pajamas and reduce the amount parents will have to buy.”
What started as two parents needing a product that was more conducive to the demands of their new baby had turned into a full-fledged business as of August 2022 when Pax & Lucy officially launched. The owners then welcomed their daughter, Eleanor, later that year. “Eleanor inspired us to expand Pax & Lucy into smocked childrenswear,” Lexi said. “Today, we offer a variety of pajamas, crib sheets and smocked daywear.”
The Morgans spent over a year researching and sampling fabrics to find one that checked all the boxes; including using Tencel Modal (an environmentally responsible fabric made from beech wood) for all pajamas, sheets and blankets because it’s “buttery soft, stretchy

One hundred years ago, Nueces Farms became Chapman Ranch under the management of J.O. Chapman. Six years earlier, his father, P.A. Chapman, had purchased the land from the King Ranch and divided it for use by tenants. Generations have worked the land, growing cotton and other crops. The population was made up of those who worked for and around the ranch, and the settlement had its own post office (which remains today), cotton gin, barber shop, schools, hardware and grocery stores and a service station.
In the 1920s, the ranch built partnerships with farm equipment manufacturers and tested the modern
machines on its over 20,000 acres of crops. Some of the crops themselves were the experiment — a new strain of cotton was developed on Chapman Ranch. These new methods inspired other new ideas, and multiple farming implements to improve cotton production were patented by residents. At one time Chapman Ranch claimed the title of largest mechanized farm because of its use of hundreds of tractors and other machines.
As other industries grew around Corpus Christi, and those machines became more powerful, the town of Chapman Ranch faded away. The land, though, is still owned by the descendants of P.A. Chapman and produces not only crops, but enough wind power to power 64,000 homes a year with its wind turbines.
