BOTH SIDES OF BEAUTY Fall is finally here. It’s hard saying goodbye to summer; however, fall brings along a few welcomed changes. For one, football is back in full swing. We might not all pull for the same team, but one thing we can agree on is that football and BBQ go hand in hand. So this month, we break down five Coastal Bend BBQ spots that are a must try. Fall fashion is another hot topic, and we offer a few great local finds for a new look this fall. There is much to discover in this month’s issue, but there is one thing in particular I would like to draw your attention to. You’re likely familiar with People Magazine’s annual “Most Beautiful People List” that has been around for over 25 years. There is something about beauty that captures an audience and inspires readers. Let me be the first to assure you that The Bend’s 7 Most Beautiful Women: Inside and Out is very different from traditional beauty lists, competitions, and events. We believe that outward beauty comes in all different forms; however, many beauty contests miss the opportunity to celebrate and encourage people to show off their inward beauty. We want everyone to know that the Coastal Bend is not only full of beautiful women, it is full of beautiful women who look beyond themselves to the needs and concerns of their community through differing charities and the world around them. That is what this issue is all about. What started as a great editorial concept quickly turned into something bigger. Our primary goal is to make each participant feel special; to honor their achievements and to say “thank you” in what little way we can. Moreover, we want to partner with them. We hope to take advantage of this opportunity and publicity to not only raise awareness, but to help fundraise for each of their charities. This is not a competition in the traditional sense. Ultimately, everyone will be a winner by the time we gather on October 1st for an exciting cocktail party at the Omni Bayfront Hotel to celebrate and make one last push for each charity. So mark your calendars, as we hope to see you there!

WHAT’S GETTING HOT AROUND THE BEND?

WINDSTORM REFORM BILL
The Learning Center, owned and operated by the City of Corpus Christi Parks & Recreation Department will open this Fall! The 162-acre Preserve of coastal wetland ecosystem is located at the intersection of North Oso Parkway and Wooldridge Road in Corpus Christi. Not only will the preserve offer a network of over four miles of nature trails with scenic overlooks, but it will be outfitted with teaching space and education exhibits, also slated to open this Fall. Future education plans for the site include summer youth programs, school field trips, guided tours, public nature programs, interpretive signs, and exhibits.
It’s no secret that it costs a lot to live on the coast, especially once you add up your taxes, homeowner’s insurance, flood insurance, and windstorm insurance. In 2012, the Texas Department of Insurance (TDI) proceeded forward with several proposals to fund the Texas Windstorm Insurance Association (TWIA), the provider of last resort for windstorm insurance on our coast. It was then that TWIA adopted a 5% increase on all residential and commercial windstorm insurance policies to policyholders in the 14 counties comprising the Texas Coast. This was the third rate increase since 2009. But the long fight is finally over. Back in May, State Rep. Hunter announced that Senate Bill 900 has passed the Texas House of Representatives, a major victory. And now after years of the unknown, Texas Governor Greg Abbott has
just signed into law the Windstorm Insurance Reform Bill. The bill will spread the cost of storm-related increases to the rest of Texas instead of having the lion’s share being paid by the 14 coastal counties. The bill will benefit property owners along the Texas coast should a hurricane strike and creates a new funding structure to provide fair and better insurance rates throughout the 14 coastal counties in Texas. It also changes the makeup of the Texas Insurance Board. Over the years, there has been a lot of support from our local power forces. Mayor Nelda Martinez explained this surcharge would have a burdensome affect on the momentum of our community, and that an increase in insurance over the past 14 years will economically sink these 14 counties. “Mother nature doesn’t discriminate.”

Being constructed by Brite Star Construction, this townhome community will offer a resort style pool and city maintained sidewalk to beach. Most units will have a car port or garage. The development is zoned for shortterm rentals, so get yourself a piece of investment before they’re gone! Bonus? The developer is even offering a 4-seat golf cart to the first 10 buyers that reserve and close on a unit. Each unit even comes with a fun name like, “Venice Beach” “Hollywood Beach” and “Miami Beach.” These units are coming just in time, as Port Aransas is growing faster than Kudzu.

JULIAN L. “KIKI” DEAYALA
Longhorns football legend turned real estate developer breaks ground on Phase II of high-end Islands of Rockport community. Tell us a little about your background?
into a different real estate career, and I thoroughly enjoy real estate developing.
I was the first American-born person in my family. My parents fled communist Cuba in 1959, and I was born in Miami in 1961. We lived in Miami, Dallas, and Rio De Janeiro Brazil, but we finally made Houston our home. That’s where I attended Houston Memorial High School. I entered the University of Texas in 1979 on a football scholarship, following in my brother Carlos’ footsteps. All five of my brothers graduated from UT.
Are there any principles you learned on the field that you apply to real estate development? You better be pretty tenacious, because you have a lot of competition out there. You better have a better mousetrap and a better piece of property and idea. You need to negotiate contracts with city and county officials, especially here on the water where you are dealing with the core of engineers. It’s all full contact; it’s just done in a suit and tie.
What records did you establish at UT that still stand?
What brought you to Rockport? In 1999, a buddy of mine said, ‘Hey, let’s go down to Rockport and go fishing.’ I had never been to Rockport and I really enjoyed myself. For the next eight years I was traveling here and having a good time. We were working on a project in Laredo, so this was a good halfway point to come up and go fishing. Then, in 2007, we had the opportunity to buy this property.
I hold the record for most career sacks and pressures and single season sacks and pressures. Also, I hold the record for most tackles for a loss of yardage in a single season. Did you have a pro football career? Both the United States Football League and the National Football League drafted me in the 1983 draft. I played two seasons in the USFL, earning 1st team USFL honors as a linebacker and played two more seasons with the Cincinnati Bengals before ending my career in 1987. Have you stayed connected to the Longhorns football program? I would say that it’s hit or miss. Some people stay pretty close, especially if you are around Austin. I go back and watch about one or two games a year 20 the bend magazine
and every three or four years I’ll take a tour of the athletic facilities. I’ll talk to the coaches and see the athletic director; just show my face and say hello. For me, football was a wonderful time. It was a lot of work, a lot of sacrifices, and a lot of surgeries, too. I have had shoulder surgeries and had my knee replaced. Football is something that I did, but now I have moved on to other things.
How did you get involved with Real Estate development? I got my degree in advertising, but because of football, it’s hard to get a six-month job in the offseason. So I went and got my real estate license and then my broker’s license and ended up going into commercial real estate. So I pretty much transitioned right into commercial real estate. After about ten years, I got into developing. That just transitioned

What does the future hold for Islands of Rockport? Phase I has been an incredible success, and we are planning now Phase II, which will hopefully break ground in a year. We are going to put in a wider canel and have a center with nice, high-end townhomes. There will be more of a resort-style hotel and we will do a mini marina. The area will be gated and more like a town center.

Cheerful, generous and compassionate. Silly and playful. Joyful. Determined. Green-eyed eightyear-old Brooke Hester fought cancer since age three. Afflicted with stage IV Neuroblastoma, Brooke never let her painful disease or subsequent treatments stop her from helping others.
countless blood and platelet transfusions, stem cell bone marrow rescues, immunotherapy, and targeted therapy/personalized medicine. “Nobody knew better than Brooke that there wasn’t anything we did not try to stop her resistant form of neuroblastoma cancer from growing,” says Hester.
What started as a misdiagnosis of juvenile rheumatoid arthritis in late 2010, turned into the devastating diagnosis of stage IV Neuroblastoma cancer, “the most common extra cranial solid tumor cancer in infants and young children,” according to Brooke’s mom, Jessica Hester. For the rest of her life, Brooke underwent surgeries, multiple rounds of traditional radiation, chemotherapy, blood radiation,
A lover of flowers, Brooke was unable to keep a live bouquet brought to her in the hospital due to the risk of infection. Sad at the loss of her flowers and missing her hair, she was ecstatic to be gifted a floral headband from a neighbor, and Brooke wore it proudly. But, at the age of three and a half, she selflessly gave it to another pediatric cancer patient she met while in the hospital.
That generous act was the beginning of Brooke’s Blossoming Hope for Childhood Cancer Foundation. More blossom headbands were made and shared. Word spread. People got involved. Donations started pouring in. To date, Brooke’s nonprofit foundation has raised almost $200,000 for pediatric cancer research, in addition to “nearly 20,000 care packages [of handcrafted headwear] now distributed in 40 countries,” says Hester. “It is important to note that we do not sell blossoms and headwear but give them away to children with cancer and to patient’s siblings as requested and make headwear not just for girls but boys as well because these were Brooke’s wishes,” explains Hester. Campaigning for improved pediatric cancer medication, Brooke says in a YouTube video, “I think kids should have a chance to try the drugs first, before the grown-ups.” During this time, Brooke became a champion for pediatric cancer research in the community. Her fight for more research and treatment options led her to meet Rick Perry, Amy Grant, Taylor Swift, Bailee Madison and more, and to interact with Miranda Lambert mid concert, a video that has gone viral. This attention to Brooke and her blossoms has brought to light the lack of adequate cancer drugs for children. Brooke succumbed to one of the leading causes of death of children on June 26 at 8 years, 2 months young at Cook Children’s Hospital in Fort Worth. “We hope that by indefinitely sharing Brooke’s life and story that we can bring about change to stop cancer from being the number one disease killer of our children and bring new hope to each tomorrow,” says Hester.

n the edge. At the Center.” A city’s downtown should be its epicenter thriving with culture and bustling with restaurants, nightlife, and family activities. The Downtown Management District (DMD) calls for Coastal Bend residents to join them on the edge and at the center. They are striving to bring vitality to our district through their dedication to bringing culture and art to our city. Established in 1993, the DMD represents the property owners and stakeholders within the Downtown District. The District consists of the area bounded by Kinney Street to I-37, and Lower Broadway to the Corpus Christi Marina L and T Heads. The mission of the DMD is to promote and create a vibrant District. Last May, the DMD Board developed a Three-Year Strategic Plan to transform the Downtown District into a sparkling entertainment destination by the sea. According to DMD Executive Director Terry Sweeney, “it’s a strategic plan that that addresses operational needs like safety and cleanliness, facilitates product development i.e. attracting new businesses and new projects like the Cosmopolitan, and provides marketing and programming to attract customers and drive sales to our businesses.” The plan focuses on four priorities: 1. A cleaner, safer, and more beautiful District, 2. Attracting a wave of new district and downtown investments and businesses, 3. Improving consumer perceptions of the district and downtown, 4. Attracting new financial resources and regional leadership to support the DMD mission. Sweeney says, “Increasing the living options downtown to create a vibrant, 24 hour, seven-days a week Downtown is one of the most important priorities to revitalizing the Downtown. Those residents will grow the downtown customer base that is within walking distance to our businesses and help them be more successful.”
What can you do to help? Sweeney says, “Residents can help by increasing their visits and spending and consider living downtown as more residential projects come online.” The downtown area already boasts an impressive attendance record. A consumer perception survey done by the DMD showed that 74% of the market visits downtown in a six month period and spend on average $67 per visit. Increased visits and residents brought on by the upcoming development of both retail and housing can only bring that number up. The DMD aims to achieve success through rebranding downtown into an art-centered district called the Marina Arts District. The new Marina Arts District will feature a new lighting design to complement the already improved Chaparral Street and branded wayfinding to attract and direct pedestrian visitors to the area. In addition to the beautification and development, the DMD’s plan will enhance existing downtown events like the ArtWalk, which takes place on the first Friday of every month, and they’ve added new art-focused events like the upcoming Masterpiece in a Day Competition on September 12th. Masterpiece in a Day is a one-day art, music, and spoken word competition and parade. The competition will be open to any artist with a desire to create an original work and will take place in one day within the Marina Arts District. Check-in will begin at the Art Center of Corpus Christi, and from there, participants will have the afternoon to create their own original work of art, music, or spoken word. The competition, which is themed “make art, be art, and buy art,” will have two categories: Scholastic and Open. Scholastic will be open to anyone currently registered as a student in college or high school, and the open category is for anyone 18 or older. The event will also feature a parade where attendees of all ages can walk in dress inspired by their favorite work of art. Hopefully, those inspired by sculptures won’t hold up the parade.

Mr. G’s “We always make our sausage fresh and homemade in house.” Mr. G’s BBQ recently celebrated its four-year anniversary, but don’t let the age fool you. These guys are far from rookies. Mr. G’s pit-master, Ramiro Candela, started learning from Joe Cotton himself, the longtime famous Corpus Christi BBQ restaurant owner, at a young age. Candela eventually became the pit master for Joe Cotton’s BBQ before a fire destroyed the restaurant. The same goes for many members of the Mr. G’s crew, including former Joe Cotton’s BBQ manager Jesse Pena. George Gonzalez, Mr. G himself, previously ran a Mexican Restaurant out of the current location of Mr. G’s. Jesse Pena, Gonzalez’s neighbor, was in need of a job. Pena brought on some of the other guys, and Mr. G’s was born. The most popular item on the menu, their stringy brisket, is smoke infused with mesquite wood and a special spice rub, savory, spicy, sweet, and top secret! The brisket smokes in the pit for 6-8 hours. Another popular item is their homemade pork sausage, made in-house weekly. With the perfect amount of bark and delicious smoky flavor, you won’t need any BBQ sauce!

iza Wisner wears many hats. From Nairobi, Kenya, Wisner ventured to America on a golf scholarship from Texas A&M University-Corpus Christi. Since then, her incredible list of achievements include TV personality, awarded golfer, local public figure, entrepreneur, radio host, executive leader and independent global distributor of healthy organic gourmet coffee by Organo Gold, Jamba Juice ambassador, and best of all, avid volunteer. PowerUp!, a volunteer organization she founded in 2009, strives to creates technology-rich environments in which everyone can reach their full potential. “There is an unspoken expectation that today’s child must be prepared for the high-tech world of tomorrow. Despite the widespread availability of technology and connectivity, many children who come from disadvantaged areas and technologically-disengaged home environments are at risk of being left behind. Having access to learning tools is critical to the development of children and their future contribution to a global society,” explains Wisner. “It is my belief we can bring about greater positive change in the community by more effectively coordinating our resources, allowing each charity to do what it does best while working together to address the challenges. It’s all about focusing on the primary objective, providing people in need with a network of organizations that can help them meet their greatest challenges and get them powered up for a better tomorrow.” Taking frequent trips back to Kenya, Liza works hard to identify and empower these young minds and ensure that every child has access to the tools and technologies that will help them become assets to their families and communities. “The most rewarding part for me is visualizing the future in the eyes of a person,” Wisner says. She made her first PowerUp trip in 2010 to Kenya as a goodwill ambassador to inspire children of all ages, demonstrate the societal gains of technology and contribute to much-needed resources at schools, hospitals, and children’s homes. “I believe everyone needs a support system. That’s my role in our community.” Wisner does this by bringing people and technology together to help us succeed. She is truly powered by a passion for living her best life!

It is undeniable that humans are attracted to things that are beautiful on the outside, but inner beauty is something we all have in abundance. What I have realized is that inner beauty demands that we accept the beauty of others. We need to work to understand each other on a more emotional level, understanding and accepting each other by first attempting to see things from their point of view then seeking out ways in which we can turn each interaction with them into a win-win situation. I feel like inner beauty is a challenge for me to cultivate and appreciate, like a sunrise. A beautiful sunrise that gradually shines through and can inspire all who take the moment to view its beauty. wo of the main mottos at the Coastal Bend Wellness Foundation are #Knowyourstatus and #beHuman. Hashtags are IN, but the Wellness Foundation wants AIDS OUT. Belinda Cantu, Committee Member on the Red Ribbon Ball and originator of Corpus Christi’s World AIDS Day is on a mission: To end the stigma. But it doesn’t end at AIDS. The foundation, once called the Coastal Bend AIDS Foundation, changed its name in 2013 to better identify what they’re all about. Over the years, the agency turned into a multi-faceted organization providing an array of services, including substance abuse treatment, youth wellness programs, and addressing additional community health needs. Cantu has intimate ties and a compassion for empowering women, the LGBT community, and of course, those with HIV/AIDS. Friends of Cantu had passed due to the disease, and she started to branch out to the transgender community because it hit home for her. Thus #beHuman was born. #beHuman is a mission to support transgender teens and their families. A place they can come and take refuge. “I am currently organizing a benefit concert with local artists and guest speakers sharing their stories to bring awareness of the transgender community and to unite us all in the same mission....#beHuman,” says Cantu. Becoming personally involved in this foundation is where Cantu is fulfilling her purpose. “I advocate safe sex and living a safe and healthy lifestyle. I am not here to judge anyone. I have met some great people who have turned into wonderful friends who are living with HIV/AIDS. This disease does not discriminate. It can affect anyone,” Cantu wants everyone to understand. The foundation offers free and confidential HIV testing along with educational materials. “We serve the 12 surrounding counties with more than 800 people affected with the HIV virus. Although the numbers world-wide have decreased and the medical advances have helped patients stay healthy, we still have so much to do,” reminds Cantu. HIV/AIDS should never define someone. Education. Awareness. Strength through diversity. Confidence. Humor. Life. These are the things that matter.

Women’s Shelter of South Texas
T
he unfortunate truth is that there is an increasing domestic violence epidemic in our 12-county area. But the fortunate truth is our Coastal Bend is made up of incredible individuals who are passionate, empathetic, and go above and beyond to help. Merritt Kennedy is a perfect example. She was nominated by a friend to serve on the board of The Women’s Shelter of South Texas two years ago. Just last year, The Shelter served more than 2,600 clients. Of those, 1,200 were children and 32 were men. About half of Corpus Christi’s 25 criminal homicides last year stemmed from domestic violence. These statistics speak for themselves. Prevention programs are just as important for the shelter as intervention programs. However, the funding for prevention is far too low. But education is key, Kennedy explains. “The shelter is hard at work maintaining and growing their eight-week education sessions for junior high school students about domestic violence. We have to start early!” In these past two years, the hard work and dedication of everyone associated with the Women’s Shelter of South Texas has been Kennedy’s biggest inspiration. “It’s quite an honor to be part of a very solid and respected organization. Our community must confront domestic violence head-on and stop the cycle of abuse,” says Kennedy. Kennedy learned from an early age the act of giving back, as both her grandmother and mother were passionate about their volunteer work and were instrumental in passing this on. Kennedy and her husband, Paul, work at teaching their two children (ages 9 and 7) the importance of volunteering. As a proud South Texan, she feels immense passion to give back to a place that has enriched her and her family’s lives. Kennedy would encourage everyone to stop and do what you can to extend yourself in kindness and grace to another person or organization. There is a plethora of causes in which everyone can become involved in philanthropic acts, regardless of financial means. In the words of Charles Dickens, “No one is useless in this world who lightens the burdens of another.”
Inner character, confidence, love, positivity and strength, are the qualities that make a person truly beautiful. Sure, we all want to look attractive, but true beauty lies in acts of kindness and generosity. The staff and counselors of the Women’s Shelter of South Texas are shining examples of “inner” beauty on a daily basis. American Cancer Society, Cattle Baron’s Ball
C
harity work is one of Michelle Ezell’s first memories. Nearly 30 years ago, her parents chaired the Cattle Baron’s Ball, where Ezell can vividly remember an early awareness of the importance of giving back. In 2012, she and her husband were approached by the Cattle Baron’s advisory board and asked to get involved. The answer was a quick ‘yes’ and led to the couple co-chairing the 2015 “South Texas Strong” Cattle Baron’s Ball. Ezell explains, “It is easy to become so involved and passionate about the American Cancer Society (ACS) and its mission, because cancer has truly affected someone close to everyone.” She, herself, has a long list of loved ones who have fought and beat this awful disease, including her mother-in-law. “[My husband] Matt and I knew in 2012 when we were called by the Cattle Baron’s committee that it was meant to be, because his extraordinary mother was fighting her battle,” Ezell recalls. Volunteering for the ACS has hit home in so many ways and continues to bring inspiration to Ezell. “I spend a lot of time at the ACS office, and I will always remember the time I saw a man and his beautiful, bald, brave wife stop by to obtain and use the resources that ACS provides. Countless individuals and families from the Coastal Bend receive support, transportation, housing, wigs, and so much more from the local American Cancer Society office and being able to see that makes me want to work even harder to raise money and awareness.” “Matt has always been so calm and patient, and our 2-yearold son, Easley, has taught me to be patient, and I believe that patience is a valuable trait to have. I get to volunteer with the most amazing, hardworking, selfless people in the Coastal Bend. It is a privilege to know these people and to see the difference that they are making or will make in our community,” Ezell shares. Patience and patients: a rewarding combination.

orn and raised in Corpus Christi, Mary Jane Garza believes she owes her family and community for the woman she is today. Each morning as she walked out the door, Garza’s mother would give her a blessing and remind her that every day is a gift and we were here to serve our fellow man. “I heard these same words every morning for 25 years,” recalls Garza. Then, at the end of each day around the dinner table, Garza’s father would ask the same three questions: 1. What did you learn that you did not know? 2. How will this help you? 3. How did you help someone? “I was very blessed to be raised in a family that loved life and in so doing loved their children and taught us to maximize each day for ourselves and others,” says Garza. It’s due to these core values that Garza is as passionate about her charity work as she is. “I try to make a difference by being actively involved every day by my words and most important by my actions,” explains Garza. Although Garza volunteers at multiple charities, the USO of South Texas exemplifies the engrained notion of helping those who help you. The USO provides critical support to forward-deployed troops, military families, wounded, ill and injured troops, their families, and caregivers, families of the fallen and troops in transition. The USO of South Texas recognizes all that our troops and their families do to protect the freedoms we, as Americans, enjoy daily. It’s here that Garza feels the devotion to give back. One of the better-known benefits of volunteering is the impact on the community. “Unpaid volunteers are the glue that holds a community together. Volunteering allows me to connect to my community and make it a better place. It expands my circle of friends, my knowledge, and I learn new skills. arol Scott is no volunteer newby. Her dedication and past with the American Heart Association (AHA) goes back decades. Since the late 1980s, she’s supported their work. A few years ago, she and her husband Mark were asked to co-chair the Heart Ball. That experience ignited Scott’s involvement in the Circle of Red to promote awareness of heart disease in women. This has evolved to holding a position on the local AHA Board of Directors. While lifestyle changes can prevent cardiovascular disease, investment in research must continue to provide new surgical techniques, better emergency interventions and improved medications for treatment. Scott explains that the AHA is the leading private funding source for this research. “An extra moment with close friends and family members who have been stricken with cardiovascular disease is proof to me that my volunteer time and financial resources are well spent,” expresses Scott. Synergy is the main ingredient. Satisfaction is gained from working with other people, learning from them, sharing ideas, and in the end, developing something bigger and better because talents were pooled to elicit the desired results. Scott’s parents instilled in her a strong work ethic, and she hopes she’s passed on that work ethic by inspiring and teaching her children to contribute something of value to the world. It’s not about being the best, but doing your own personal best.

Dina Zughni-Esquivel Charity Walk With Pride
D
ina Zughni-Esquivel has a few addictions: Bringing a smile to a child’s face, and shoe shopping. And the Walk With Pride foundation, a Corpus Christi Association of Realtors (CCAR) non-profit charity, allows Zughni to do just that. As a former Realtor, Zughni got involved in this charity back in 2005, as the CCAR encourages its members to give back to the community. The charity raises money to help kids start the school year off with not only a new pair of kicks, but also a bag filled with school supplies. Each year, just before school starts, children get to come and pick a new pair of shoes that the foundation has gathered. “There is nothing like watching the excitement in a less fortunate child’s face as they pick their very own NEW pair of shoes. I see the same children come back year after year. Rightfully named, watching the kiddos ‘walk with pride’ in their new shoes is the most rewarding thing. It puts a spring in their step,” Zughni revels. Zughni and husband, Sam Esquivel, have two boys ages 8 and 3, and as parents to younger children, they know the importance of not only the necessities, but also the confidence kids crave going into a new school year. “Children are our future. I hope by helping the less fortunate children in the community start off the first day of school on the right ‘foot’ will help them feel good about themselves and encourage them to focus on their education,” wishes Zughni. As far as her own energetic boys, she aspires to teach them to always be involved and help make a difference in the community in which they live. If not us, then who?

This was the field of Jeff and Traci Klepac’s dreams back in 1981 when they started the farm. Jeff is a third-generation farmer. Jeff ’s grandfather began farming in the 1900s and his father returned to it when he was released from the military, farming in Banquete, Mathis and West Sinton, Texas. Their sons, Wade and Brandon, joined the partnership in 2006, making Wade and Brandon fourth-generation farmers. But it’s the women who run the fun. Traci, Kourtni (Wade’s wife) and Rachelle (Brandon’s wife) are the tourism ambassadors to the farm.
“Creating the walkways,” says Kourtni, “is really a trade secret, but it’s similar to the cross-stitching technique.” They go in and pull the stalks to ensure no new growth encroaches on the walkways. The strategy is to cut the stalks at their internal growing point to avoid regrowth. In the U.S., mazes typically are cut down around the first week of November. Here at the farm, once they take the maze down, the haygrazer then gets sold as hay. Grazing livestock rejoice!
Quite possibly the most exciting attraction at the farm is the maze at Rockin’ K! This year marks the second year of the maze, after an incredibly successful first season. Traci, Kourtni and Rachelle are the masterminds behind the design. Last year, they decided to incorporate what they grow on the farm into the blueprint. After rounds of brainstorming sessions and strategic planning, this second design will be uniquely different – but they’ll keep it a secret until they’re ready to release it early-mid September. Mazes have become popular tourist attractions in North America and are a way for farms to create additional income. So take your chances in navigating the twists and turns that make up the Rockin’ K Maze. Come for the maze, but stay for all the other activities! You, the kids, and the grandparents can ride the cow train, score at the farmer’s end zone, climb in a rope spider web, try dummy steer roping, go pumpkin bowling, play corn hole toss, roll in the hamster wheel, visit the little farmers playground, navigate through the hay bale mini-maze, visit with the goats, and then feed yourself! Their kettle corn is homemade.
Opening September 19th, this six-acre maze field, carved with trails, wandering paths, and mystery, is actually made from the plant haygrazer, not corn. Haygrazer is a hybrid of Sorghum and Sudan grass, is more durable than corn, and can grow up to 10 feet high! The crops get planted around the 20th of July and take approximately 2 months to get to the desired height.
However, this IS a farm, after all. Crops grown in both Nueces and San Patricio counties include corn, cotton, grain, and wheat. “Due to all the rain this season, we got a bit of a late start and harvest may be pushed back,” explains Kourtni. But even with the rain setback, nothing will stop the Klepac’s from doing what they do best. These products will be sold mainly to local grain elevators and cotton

gins. The Klepac team has such a passion for the agricultural industry and, coming from an extensive background in farming and livestock shows, they have a strong sense of obligation to educate. There is shared knowledge at every turn, and even before patrons enter the maze there is an educational lesson on the planting process and land maintenance. “CREATING THE WALKWAYS,”
says Kourtni, “is really a trade secret, but it’s similar to the cross-stitching technique.” They go in and pull the stalks to ensure no new growth encroaches on the walkways. The strategy is to cut the stalks at their internal growing point to avoid regrowth. In the U.S., mazes typically are cut down around the first week of November. reating a Latin infused evening was what was on this family’s mind when designing the rehearsal dinner for their son. They knew his love of Latin America culture and food would make for a beautiful evening in the backyard. They were right.
Much detailed planning went into this affair as JoAnne Howell of Oh Goodie Designs + Events worked closely with her client to design and plan this elegant event. Guests were invited by the perfect invitation. A delicate blood orange cut papel picado banner with beautiful dark brown wood grain envelopes hand lettered in gold. As guests arrived they were greeted by Mariachis in the yard surrounded by floral lanterns strung in the large oak trees as well as festive lighting accenting the house façade. Through the front glass pane windows delicate large custom hand cut papel picado banners hung vertically showing the event logo within beautiful hand cut palm leaves. The event took place in the back yard under large tents. The walkway to the event area was draped in lights as well as the up lit palm trees and oak trees in the yard. An arch of large cactus, protea and roses framed the way to a wall of palm prawns with escort cards hung between trees to direct each guest to their table. Guests were served passed appetizers of empanadas, shrimp and cilantro bites and olive with pecan bites along with an array of homemade salsas and a variety of Spanish infused salsas, guacamole and quesos. The bars were dressed with Saltillo tiles hand lettered with Spanish drinks. “Salud” was seen on a large palm wall that was installed as a backdrop to the cerveza and el cocteles.

Create a Event! As guests took their seats each place setting was set with their own Saltillo tile charger plate inscribed with their name hand lettered in gold. A papel picado menu was placed on top to allude to the evening’s events. Salads with grilled citrus were served by waiters as an array of marinated vegetables was presented on the tables along with spicy chutney sauces, chimichurri sauce and fried plantains. Cactus and roses combined making for an elegant centerpiece with custom designed Spanish table numbers. Each table was covered in custom serape style floor length linen. Gold satin napkins were tied with leather tassel napkin rings that could be kept by guests as a bracelet favor.
The dinner highlight was the presentation of meats by Gaucho servers brought in to town by the family. Meats straight from the grill were skewered on swords. Guests were directed to show their Loteria card determining if more meat was to be served. It was an interactive evening full of food, wine and celebration. To surprise guests and the couple, a special guest appearance was made by “Selena” to garnish off the evening with that Spanish/ Latin flair. Tambourines and white roses were passed out to guests as they were taken by surprise and “Como la Flor’ and “Bidi Bidi Bom Bom” entranced the guests into dancing the night away. It was a celebration into the night and wedding weekend!

ales reminiscent of a message in a bottle, a postcard heralding the Islands of Rockport development found its way to Houstonians Marina and Bruce Jefferis. Fueled by Bruce’s passion for fly fishing, the couple had been coming to Rockport for many years and often talked about acquiring a vacation home. Being a beautiful day for a road trip, they decided to drive down and take a look at the new community. When they walked onto a premier point lot, with panoramic views of the Intracoastal Canal and ideal waterways for fishing, it was a moment that defined serendipity. They had discovered the ultimate setting for their coastal retreat.
Expertly capturing the Jefferis’ vision for their home, designer Michael Mahoney created plans for an artful rendition of southern coastal ambiance blended with period-style influences. Impeccably crafted by builder Mark Emery, the residence is brimming with distinctive appointments and rich architectural detailing. The Jefferis’ mission was to establish individual accommodations for their grown children and five grandchildren ranging from two infants to a six year old. The entire first level encompasses a living room with a walk-in bar for drinks and snacks, two guest suites in separate wings, a children’s bedroom, a morning room, and a large porch overlooking the pool area. The splendid design voices a resounding “come one, come all!” A handsome staircase and an elevator ascend to a stunning Great Room entirely surrounded by breathtaking views of the Intracoastal Canal. he American Heart Association, founded in 1924, has conducted a Heart Walk in Corpus Christi for the past 15 years. The non-competitive 5k walk, which originated in New England approximately 20 years ago, is “the American Heart Association’s premier community fundraising event,” explains Rosalyn Mandola, Communications Director for the American Heart Association. The walk, which provides participants with an opportunity to share their stories and commiserate with others who have similar experiences, helps raise money to combat the country’s number 1 and 3 killers, heart disease and stroke.
Companies can form a team with their employees, individuals can walk on their own, form a team with family and friends, or join an existing team. “There’s a lot of different ways to get involved,” says Mandola. Last year 1,000 people participated in the Heart Walk. The goal this year is 2,000. The expanded goal for participants and fundraising is due to Executive Director Erin Wilder. “It’s under her leadership that we have been growing the Heart Walk and that it’s been as successful as it has been,” explains Mandola. The increased success of the walk allows participants to reach others and share life-altering advice. Survivor Steve Moody stresses the importance of being in charge of your own medical care. “You have to be proactive and be your biggest advocate for good health,” he says. Moody, who watched his father die from complications stemming from prolonged, untreated high blood pressure. A minor abnormality at a yearly physical prompted Moody to request a follow-up with a cardiologist. That specialist discovered he, by all outward appearances a healthy individual, was also a sufferer of high blood pressure. He underwent triple bypass surgery in 2010 and has been involved in the walk ever since. Moody appreciates the chance the walk has given him to meet, “with others who have been through this same experience and worse.” This sense of community for those involved is tremendous. “You get to see all these other stories, all these other individuals who are fighting the same fight,” explains Mandola. The same companies and survivors walk year after year, with new participants joining the ranks. “That’s the real reason we have the Heart Walk. To help people take ownership of their health and feel excited about it,” says Mandola.
“This year our goal is to raise $325,000, which is kind of huge for Corpus Christi,” says Mandola. Seventy-five cents of every dollar raised stays in the community and is used to bolster a variety of programs. Education, research, outreach programs and advocacy initiatives all benefit. “We educate the public on knowing their risks, knowing their lifestyle factors and knowing what they can do to lead a healthier lifestyle,” explains Mandola. This year’s Heart Walk will be held October 3rd. In the traditionally male-dominated field of orthopedics, Corpus Christi Orthopedic Surgeon, Dr. Stephanie Baker, stands out among the pack. The new CHRISTUS Physician Group (CPG) surgeon says she became curious about bones and joints as a young girl, which led her to pre-medical studies in college where she continued on to become one of only a few females in her specialty. “If you are a woman pursuing a career in a male-dominated field you’ve got to grow a thick skin and learn how to roll with the punches,” Dr. Baker said. There are nearly 25,500 orthopedic surgeons practicing in the United States, according to the American Academy of Orthopedic Surgery. While nearly half of all medical students are now female, in certain specialties such as orthopedics, only about 14 percent of today’s resident physicians study orthopedics.
It’s something that surgeons like Dr. Baker hope to change by being a role model to young doctors. She advises female medical students to branch out in their studies in medical school and break the stigma of the specialty. “Study hard and always remember that the amount you are learning will directly correlate to the quality of care that you provide,” Dr. Baker advised. This workout will take you all of 10-30 minutes to complete.
When most people talk about “cardio,” images of walking slowly on a boring treadmill or painful jogging around the track come to mind. Walking and jogging slightly elevate your heart and only really work the lower half of your body. I have created simple bodyweight interval training program that can be done anywhere any time by most everyone. This workout will take you all of 10-30 minutes to complete. Be sure to include a total-body 5-minute warm up to raise your core body temperature and reduce the risk of injury. Use a stop watch or interval timer app on your smart phone build your intervals for the workout. For a lower intensity workout, create a workout where you work for 10 seconds and rest for 20 seconds for each exercise. For a medium intensity workout work for 15 seconds and rest for 15 seconds for each exercise and for a HIGH intensity workout work for 20 seconds and rest for 10 seconds. You will go from one exercise to the next using the work to rest intervals listed above. After finishing one round of all the exercises do one more round of each exercise to complete one cycle before taking a 60 second rest. During the rest time get a sip of water and let your heart rate drop by breathing and resting. After the 60 second rest is completed begin another cycle. MOUNTAIN CLIMBERS Starting from a push up position, get as rigid as you can throughout your entire body. Without moving your hips or rounding your back, drive your knee towards your chest. Drive the same leg back and switch legs. To increase intensity add full pushups, to reduce intensity hold the push up position.
SPEED SKATE JUMPS While balancing on one foot, hop to the other foot landing softly and quietly while swinging the leg you just jumped off behind you and swinging your arms across and in front of your body. This can done as slow or as fast as you want depending on the intensity of the exercise.

LYING W’S Lying face down on the ground, pull your arms in towards your sides to make your upper body look like a W. Now drive your elbows down towards your waist while lifting your chest off the ground. If this bothers your lower back don’t lift your chest off the ground.
SPRINTER LUNGES Starting in a split stance position with your left leg in front and right leg in back and your arms in the opposite position of your legs, drive your right elbow back and step forward with your right leg, as quickly as can step back with your right leg and repeat that same movement for time. On your next round start with your right leg in front.

ometimes you need an effortless barbeque recipe with little or no trouble. Cooking barbeque indoors can work, but only if the results are spectacular, and this pulled pork recipe delivers every time. For moist and tender pulled pork, you must cook the roast slowly over low heat. We utilize the crock pot for maximum control of temperature and ease of cooking. You can drop this roast in the crock pot in the morning and have supper nearly ready when you get the family home from a busy day at work and school. The flavor of the pork is in the fat, and locally-raised pastured pork is rich in heart-healthy fats. Unlike grocery store pork, the fat from pastured pork is free of hormones, steroids, or other chemicals. Moreover, pastured pork, which is raised in the fields of South Texas, is higher in omega-3 fatty acids and contains less saturated fat than coconut oil. The rub takes only minutes to make, and massaging it into the roast infuses the pork with robust flavor. Brining the roast creates tender and flavorful pork. Brining achieves this tenderness by unwinding the protein strands and trapping moisture in the meat. In our farm kitchen, we brine all of our roasts and chops before cooking. The combination of flavors in the homemade barbeque sauce--the sweetness, tanginess, and spiciness--is the secret to this pulled pork-alicious sandwich. Kayla adapted this recipe from her grandmother’s sauce who learned it from her grandmother, Nan. This sauce is an authentic taste of the 1800s when the barbeque classics were still being invented. You can have this sauce on the table within ten minutes of starting. And best of all, you can dial in the flavor to suit your taste. If you like your sauce spicier, add more red pepper flakes; if you like it sweeter, add more brown sugar. Sample the sauce as you go to get it just the way you like it. In the best Southern tradition, these chips are made with sweet potatoes, which ripen in the black soil of the Deep South. You can give your sweet potato chips a ‘BBQ chip’ flavor with paprika, or a sweeter flavor with cinnamon. Barbeque is serious business in The Bend, and with this pulled pork recipe, the best barbeque in South Texas will be served up right at your table.

PULLED PORK This pulled pork recipe requires very little hands-on attention. We let the brining process and slow cooker do the work for us. Inactive Prep time: 8 hours Prep time: 7 minutes Cook time: 6-8 hours
Ingredients: 3 to 5 lb fresh ham roast, uncured
NAN’S BARBECUE SAUCE This barbecue sauce recipe was adapted from my grandmother’s recipe, which she learned from her grandmother. Prep time: 5 minutes Cook time: 5 minutes
Ingredients: 2 tbsp olive oil
½ cup salt 1 tbsp paprika 1 tsp garlic powder 1 tsp brown sugar
2 cloves garlic, minced ½ medium sweet onion, finely diced
¼ tsp cumin
pinch of salt (to sweat the aromatics)
1/8 tsp cayenne
1 cup ketchup
1 cup chicken broth
1 tbsp light brown sugar
Directions: Dissolve salt in 4 cups water in a large pot. Submerge roast in salt water, cover, and refrigerate overnight. The following day, rinse the roast with cool running water, and blot dry with paper towels. Combine remaining dry ingredients in a small bowl. Coat entire roast with rub and massage with your fingers. Place prepared roast into slow cooker with chicken broth. Cook on low for 6-8 hours. Shred roast with fingers or fork. Serve on a Hawaiian sweet roll with thinly sliced Texas 1015 onion, bread and butter pickles, and Nan’s barbecue sauce..

Directions: Heat olive oil in a sauté pan over medium heat. Add onions and a pinch of salt and sauté until translucent and they begin to caramelize. Stir in garlic and cook about 30 seconds, until the garlic becomes fragrant. Reduce heat to low and stir in all the remaining ingredients. Simmer on low heat and continue to stir and let mixture bubble until it thickens to desired consistency. If a thinner sauce is preferred, add water until desired consistency is reached.

SWEET POTATO CHIPS For a savory twist, reminiscent of barbecue chips, add paprika to this guilt-free snack. Alternately, cinnamon helps to bring out the natural sweetness of the sweet potato while providing an anti-inflammatory antioxidant boost. Use a mandolin for uniformly thin slices of sweet potato. Prep time: 5 minutes Cook time: 20 minutes
Ingredients: 2 sweet potatoes, peeled, and cut into 1/8” slices 3 tbsp olive oil Coarse sea salt, to taste Optional: ¼ tsp smoked paprika or ¼ tsp cinnamon
Directions: Preheat oven to 400°F.
Lay sweet potato slices on a baking sheet and drizzle with olive. Sprinkle with sea salt and optional spices, as desired. Bake chips for 20 minutes, turning them after 10 minutes in the oven.
