Rosana Sargent first moved to the Coastal Bend in February of 2005 and got a brief taste of what would eventually become her permanent home. Growing up in Brazil, she developed a strong love for the outdoors, especially the beach. So when she visited Corpus Christi for the first time, it had a kindred feel to that of Rio. Determined to make the United States her home, she mastered the English language and learned the culture in just a few short years. Along the way, there were many challenges, but her tenacity and zeal for success helped her overcome them all. It was also her close relationship with her parents back in Brazil that helped her through many of the highs and lows. Despite the distance, her relationship with her parents is still as strong as ever. Between 2006 and 2011 she took opportunities to work all across the country, from up-state New York and New Jersey to Arizona, but it was the Coastal Bend that she was innately drawn to. In 2012, she made her move back to Corpus Christi. It was there that she became connected to her church, Corpus Christi Christian Fellowship, and her future husband. Rosana’s infectious, positive personality enables her to connect to anyone she meets. She has never met a stranger, and is considered a friend to all. Add to that her strong organizational skills and attention to detail, she is the perfect advertising coordinator. When she isn’t busy helping clients get their ads completed, she spends her spare time enjoying the beach, cooking her favorite Brazilian meals, connecting with her many friends, and spending time with her fiancé, Chris Knapick, counting down the days until their wedding.

We Love our Locals
S
ummer is my favorite time in the Coastal Bend because this place really comes alive with visitors pouring into Corpus Christi, Rockport, The Island and Port A. Sure, traffic increases and wait times are longer, but it’s great for the local economy. It makes me proud to know that people enjoy spending their precious time and money where we live year round. Whenever I visit a new place, I always look for a magazine or ask someone local for advice on what to do. Even when I walk into a new restaurant in town, I rarely look at the menu. Rather, I ask the server what they recommend or what the most popular menu items are. Locals really do know best! If you are new to the Coastal Bend or have ever wanted to know the local picks for sushi, seafood, or steak, we have the answer. Over the past few months, we asked the community to nominate and vote on 37 of their favorite places to dine, shop, play and rejuvenate in our inaugural “Local’s List” of what the locals love. I was blown away by the number of locals who nominated and voted on 37 of their favorite spots. We racked in about 16,000 votes from nearly 1,300 readers. It was exciting to see the response from the local community, but when we started contacting the winners, I realized that this list is more than a list of recommendations; it’s a list of locals who are stepping up and doing great things for the community. This issue highlights these winners, as they’re a huge part of what makes our Coastal Bend so outstanding. Some businesses have been a part of the community for over 50 years, others for only a few months. It’s my hope that a little friendly competition drives everyone to strive for excellence and bring new tastes and experiences to the Coastal Bend.
One of the things I love most about publishing a local magazine is getting to meet a diverse group of unique, talented, hard working people in our community each month. They all care deeply about making the Coastal Bend a better place to live and visit. It’s their stories that shape our future. I hope The Bend Magazine continues to be a place where stories are shared, listened to, learned from, and showcase the incredible people who call the Coastal Bend home.

Calling all fashionistas! The Design House Fashion Group is putting on a top-of-the-line Runway Fashion Show on August 13th at the Art Center of CC. Welcome a celebrity to our coast, Samantha Plasencia from the TV show Project Runway, who will be one of the designers introducing her collection. Also, Clarissa Serna from The Voice will be hosting this posh event. Culture Installation, the influence of creative movement, social change, and economic development is the overriding theme. This will be a night to remember! Maybe even pick up a few style tips.
Aquarium’s New Shipwreck Exhibit Another new and exciting exhibit at the Aquarium is taking shape. Construction crews have installed a fabricated shipwreck into the Caribbean Shark exhibit in the Aquarium’s 70,000-square foot, $55 million Caribbean Journey expansion that is scheduled to open in the spring of next year. Still yet to be installed is the 9,000-pound shipwreck that was flown via crane over the top of the four-story building and lowered into the exhibit. Also taking shape is a new acrylic viewing demi-tunnel for the 400,000-gallon H-E-B Caribbean Shark exhibit that was also flown into the exhibit via crane. Seventy-one feet in length, it is the longest uninterrupted aquarium demi-tunnel in North America.
Bloom CoffeeWorks Most of us don't think H-E-B could get any better, but it just did! The Portland location just introduced a specialty coffee shop. The owners are a brother, sister, and fiancé who get their fresh beans from Harbor City Roasters in Port Aransas, serving delicious coffee, cold brews, and even green and black teas! They're introducing their newest cold brew latte edition, the Simpleton! Intrigue yourself with their myriads of syrups to add that extra umph to your brew. Come try them all, or indulge in their classic favorite, the iced caramel macchiato. Latte art, special syrups and lots of caffeine passion. Don't forget to ask about their rewards program!

When did you realize there was a need and a niche for forecasting the winds? During my postdoc at the University of California
Berkeley, the most prestigious sailing event in the world, the America’s Cup, was taking place in San Francisco. The sailboats are incredibly high tech and can sail 50 mph in 18 mph of wind. I was researching harmful turbulence in wind farms at the time using weather models. I could see the America’s Cup boats sailing in the bay every day and wondered if I could use the same weather model to forecast the complex winds of the San Francisco Bay. So I spent an afternoon setting up the forecast and made some really crude wind maps of the race course. I was incredibly surprised to see how well my maps showed areas of high and low wind on the race course. I knew ahead of time, based on my wind maps, when the boats were going to slow down due to less wind. I started emailing my forecasts to the sailing community for free on Saturday mornings before big races. Eventually, I had 300 people on my email list demanding the forecasts almost every weekend. That’s when I decided to automate everything. Six months later, SailTactics.com was born, and I had my first paying subscriber.
Why is predicting the wind so difficult, and what’s the science behind it? Many people think that weather, and therefore wind, is random. It’s more appropriately defined as chaotic. There are some things you can’t predict, like the timing of wind gusts. But large scale drivers of the weather are predictable, especially on a shorter timeline. I’ve had to train my customers to use the latest forecast - the morning of their sailing race. Chaotic systems like the weather are much easier to predict on shorter timescales.
You are also a wind energy consultant. How is sailing related to wind energy in your mind? Quite simply, when you use a wind

Have you always had a passion for sailing? How did you get involved? I tried to build a sailboat out of 2x4s and a bedsheet at age
6, but the boat was unfortunately a sinker. I learned to sail small boats at Boy Scout camp in Minnesota and then spent endless summer days sailing around our cabin lake in my youth. I really got into bigger boat (i.e. keelboats) sailing during graduate school at Stanford University in Silicon Valley. I used my flexible schedule during my PhD research to take lots of sailing classes, join a sailing club to sail 3+ times per week, became a sailing instructor, and even bought a 33-foot sailboat to live in over a three year period. I was racing on random boats several times per week. I would often spend the weekends anchored out in exotic places near San Francisco proper and then find myself making the four hour sail back to Silicon Valley on Monday afternoon. You could say I was living a Jack London lifestyle of sorts. In 2012, I sailed from San Francisco to Hawaii in the Pacific Cup; an incredible 13-day journey with a little bit of drama in the middle.

turbine or a sailboat, your fuel is free. The wind is always blowing somewhere and sailors have studied and used global wind patterns to travel vast distances for over a thousand years. The U.S. is now the number one producer of wind energy in the world, at 5% of the U.S. electricity supply. We’re on track to achieve 20% of our electricity from wind by 2030. Although the winds can stop blowing at a single location, we know wind patterns well enough across the nation to achieve high reliability in our electricity supply using lots of wind power. Just as a sailor can set off on a long voyage across an ocean knowing the wind patterns shall deliver them in so many days, we know roughly how reliable a large, geographically disperse set of wind farms will be based on historical wind patterns and also state-of-the-art wind forecasting.
What does it mean to be a forecaster? Nowadays, it’s really a much different profession. Computers have become quick and accurate enough to do a better job than a human forecaster much of the time. The required skill now is being able to tune the weather model to perform the best under the most common weather conditions. In reality, a supercomputer starts running every morning and uploads a bunch of data to Amazon to create pretty maps… all automatically. But, there’s still a need for human analysis. Who uses this service and how do they benefit from it? Mostly
racing sailors utilize the service, at SailTactics.com. They can see in pretty high detail three days ahead of their race what the overall winds are going to be during their race. They can start to plan how long the race might take, how heavy of sails to bring, and if they need more crew if the winds will be heavy. Then on the morning of the event, they’re given super-detailed wind maps. The forecast isn’t always “spot on,” but when it is, it’s a huge advantage for the boat using it.
What brought your business to Corpus Christi? Honestly, a twist of fate. My partner Lindsey ended up, unexpectedly, getting her family medicine residency here. We got a phone call from Bay Area Medical Center asking if we wanted to move to Corpus Christi. We had only five minutes to decide. My first question was, “Where is Corpus Christi?” as I had never been to Texas at that point. I immediately hit Google Maps, found it near the Gulf of Mexico, and also found the city’s reputation for wind. As being near water was our number one priority, as Lindsey also loves to sail, it seemed like a great fit. So we said yes. I also got in touch was the Coastal Bend Business Innovation Center and was thrilled to find a business incubator/accelerator in the area, where my business now lives. We’re really happy here. I’ve fallen back in love with fishing and spend much of my spare time now kayak fishing. I’ve also started working on a fishing calendar application that tells you what days to fish called WeatherForFish.com.

How to roll your own: INGREDIENTS: Wasabi Soy sauce Sushi rice Rice vinegar Sugar Water Nori (seaweed) sheets Bamboo mat Desired sushi ingredients DIRECTIONS: Cook 3 cups of sushi rice. Heat 1/2 cup of rice vinegar, 2 tablespoons of sugar and 2 tablespoons of salt over medium heat. Add mixture to cooked rice and combine. Allow rice to cool. Using approximately one third of the rice, form a rice ball in the middle of the nori (seaweed) sheet. Spread the rice across the nori, all the way to the outer edges. Add desired ingredients across the rice, including a small line of wasabi. Roll tightly. After rolling, use a bamboo mat to shape and seal the bottom of the roll by squeezing the mat around the roll. Slice roll into equal parts. Serve with soy sauce and wasabi. Sushi roll hack: Cover the bamboo mat with plastic wrap to keep the rice from sticking to the mat.

Since 1989, the Pregnancy Center of the Coastal Bend (formerly Pregnancy Center of Corpus Christi) has offered a caring, warm, and professional environment for women seeking information and options. The dancing illumination from hundreds of candles lit the entire charity event. Each candle represented a baby that was born through the helping hands from The Pregnancy Center, a baby that was originally meant to be aborted. The calming warm lights were depictions of the flickering hope and beauty of life. Where can a woman go when she has serious questions about her pregnancy? Sometimes, the prospect of pregnancy can be overwhelming. It can unleash the deepest of worries and fears. No matter how safely birth control is practiced, these safeguards can often fail. College students are one example of the diverse types of clients seen at the Center. These students are generally diligently working toward earning a professional degree that will launch them into their future careers. But sometimes suddenly, they are faced with an unplanned pregnancy. Immediately, this news over28 The Bend
comes them with fear of losing all they have been working toward. With the daily demands of work and school, how can she possibly give birth and raise a child? Abortion may appear to be the only solution to their problem. But is it? Every crisis pregnancy looks different. Most of the women who come to the Pregnancy Center are young. But, still others face unplanned pregnancy later in life. No matter the situation, the anxiety and fear is the same. The Pregnancy Center is a safe, warm, welcoming environment for a woman to share her story. The Center provides a no-cost, lab-quality pregnancy test that will verify pregnancy. A completely confidential peer counselor will listen with an open and caring ear and discuss all of the woman’s options. An ultrasound will give a definitive look at what is going on inside of her and can confirm a viable pregnancy. When a woman sees a heartbeat inside her womb, oftentimes a crisis turns to hope.

Shiver me timbers, this ship looks like a 17th century pirate ship! All ages arrrrrr invited to join in the pirating adventures from sword fights, sea tales, cannon firings and treasure hunts. “Not all treasure is silver and gold,” saith one mythical pirate, might I add, “for time spent with family and loved ones is far beyond any treasure.” Anchored at the Deep Sea Fishing Marina in Port Aransas, docked directly behind Fins Grill and Icehouse, venture off to find the true treasure - fun times with friends and family. This is a family experience that all will be on board with. Owners Kyle and Beth Owens got this inspiration from a trip they took to South Padre Island. “My husband and I, the more we got into our business, we realized that an excursion boat was kind of missing something to give back to the families that come to fish and hang out on the beach. But after that, what’s there left to do? So we started researching and coincidentally, the gentleman who sold us Deep Sea Fishing Marina, had a Pirate ship in South Padre Island. During that trip, I saw the smiles on the kids’ faces, the parents full of joy, and families having a real blast. I said ‘We need this in Port Aransas,’” Beth recalls. The cruise begins offshore with a fun skit. “It ranges from sword swallowing, flame throwing, flame juggling, and all sorts of pirate tricks,” Beth explains. From the time the tour starts, it’s all action as the pirates perform their pre-show act for about 30 minutes. This is what gets the crowd en-

gaged before embarking. The canon goes off, music comes on, and it’s time to set sail! “One of the things I like to do is sit amongst the families, and I watch some of their facial expressions. I can see some of the kids who are not into it and just want to be left alone. They may think it’s silly. But once they come back from tour, their mood is different – they’re all smiles.” The cruise takes about 2 hours as it navigates through the Lydia Ann Canal. While aboard the Red Dragon, the show continues on. The pirates are never out of character, and they do their best so all aboard are involved. “We try to accommodate everyone,” Beth explains. That ranges from interactive games for the kids, and even a full bar for the adults! But don’t forget to take in your surroundings. As the show goes on, you may gaze out onto the breathtaking scenery. Catch a glimpse of the birds flying in formation, or watch while the dolphins leap for air and splash back down into familiar territory. Strap on your sea legs, and partake in this new wave of interactive entertainment. In true pirate style, hear the fables, walk the plank, and talk the talk on the Red Dragon Pirateship. This is a family experience all will be on board with. Ahoy, Matey!

ASHLEY WOODSON BAILEY IS A CORPUS CHRISTI NATIVE WHO WORKED AS A FLORAL DESIGNER FOR TWO DECADES. AFTER A LIFE-CHANGING ACCIDENT IN 2012, BAILEY DISCOVERED A NEW WAY OF CREATING FLORAL ARRANGEMENT THROUGH A CAMERA LENS.

On a sunlit summer day in June of 2012, Ashley Woodson Baily, husband Brad, and son Woodson, traveled from Wimberley to Austin for dinner. A mom, wife and accomplished florist, Bailey was living out her childhood dream of working with flowers. As they journeyed through the Texas Hill Country’s scenic back roads, surrounded by the radiant views and entrancing landscapes, a car quickly approached in the opposite direction. Unaware that the oncoming driver was not paying attention, he swerved into their lane and hit them straight on. Lying flat on her back in the middle of the street, Bailey’s world was suddenly turned upside down.
A Blooming Career Her love of flowers goes back to her days at Ray High School. She grew to love flowers and enjoyed working with them when she was a debutante in 1993 in Corpus Christi. She worked with the Blossom Shop, a wellknown florist in the city, to help create flower arrangements for her debutante party. It was then that she realized the possibility of pursuing floral design as a career. “I didn’t know you could make money and do something so enjoyable,” Bailey said of working with the flowers

for the party. She went on to earn a Bachelor of Fine Arts and Art History at the University of Texas at Austin, then left Corpus Christi to work as a florist in Dallas, Houston, Austin, New York City and Atlanta, where she and her family moved in June 2013.
Motionless to Motivated Lying there, motionless, in the middle of the street four years ago, Bailey’s world was stunned, interrupted. The devastating accident left Bailey with extensive and life-threatening injuries. She broke her back, her ribs, tore her aorta, and suffered injuries to her duodenum (the first part of the small intestine) and her spleen. Divinely, her son,Woodson, had no injuries. Brad had only bruised ribs. An ambulance came and took her to the hospital where eight doctors discussed her options. After a long emergency surgery, she had to wear a back brace for seven months and spent most of her time flat on her back in bed.

As a full-time florist, Bailey was now left physically unable to work the large-scale events she was known for. “I had to stop working as a florist, and I lost many of my clients,” Bailey said. This disguised blessing led Bailey to opportunities she never could have imagined.
Filters and Fauna During these seven months in recovery, she began to experiment with an Apple iPhone, taking photos of flower arrangements that friends brought to her in the hospital. During this time, she began to play with the different filters available through the app store to make the pictures appear dark, dramatic and antique-like. “When I first wanted to print the photos from the iPhone, I was concerned about how they would turn out. But they print beautifully. They have a moody feel to them, because I use different types of filters,” she said. Thanks to Instagram posts, these photos gained an incredibly quick following and were immediately popularized. Reactions were explosive, and before Bailey knew it, she had a new career selling prints and wallpaper with these flower images.

Much of her inspiration comes from fashion and art. Although her prints were an instant attraction, Bailey’s big break came shortly after the move to Atlanta. An Australian stylist, Megan Morton, saw the Instagram photos and flew Bailey to Australia to teach courses in florography (how to photograph flowers) at her design school called The School.
Perennials for Centennials Working with flowers has always been a way for Bailey to communicate. It’s especially true since the car accident, she said. “I can speak better through flowers at all stages, whether they are dead, alive, or blooming, than through words. It’s like therapy,” Bailey said. She has new appreciation for them since the accident. “It’s the idea of aging gracefully. I can relate them back to human life and its fragility,” Bailey said. Even celebrities have taken notice. Actress Jessica Alba recently purchased one of Bailey’s prints. Actress Poppy Montgomery has purchased her wallpaper. Sports Illustrated model, Brooklyn Decker, and Comedian, Erin Foster, have shown interest in her floral prints as well. Her prints are for sale through her website, and her wallpaper can be

purchased both on her website and at Supply, a design boutique in Austin, Studio Four New York City, and Bradley, which is a line of American-made furnishings, lighting, and accessories. She also features an occasional Pop-Up shop where she sells her prints, at By George, an Austin clothing and design store. And she is considering the possibility of adding a linen collection in the future. “I photograph the flowers for my wallpaper, and I have a designer in Tasmania who is a magician and makes them into prints,” Bailey said. She is not sure what the future holds for her, but she wouldn’t rule out a move back to Corpus Christi in a year or so with her husband and three children. “I would like to be closer to my family,” she said of her parents.

Affordable Housing in the Bend “Starter” Homes
A
ffordable housing means many things to many different people; however, all agree on one thing… Affordable housing is hard to find in The Bend.
Over the last few months I have written about the breadth of the Corpus Christi Bay Area’s affordable housing “crisis,” focusing on the homeless, as well as those in low, and very-low income housing. This month my focus is “Starter Homes,” or, homes for FirstTime Home Buyers. While there are great organizations working towards housing solutions for the homeless, and those in low income housing, such as The Salvation Army, The Corpus Christi Housing Authority and Habitat for Humanity, there are also several business and organizations in our community dedicated to building “Starter” Homes. This, however, is a big challenge. Over the last few years, the median home price in Corpus Christi has sky-rocketed from $139,000 to over $200,000, and this huge price increase, strained what was an already tight housing market. So, what are the causes of this big price increase? Chief among them is the incredible growth Corpus Christi has been blessed with; over the last few years, new families have been flocking to The Bend, and this increased demand for homes has caused prices to increase. But, there are other challenges face by “Starter” Home buyers, including increasing construction and land costs, higher personal debt loads, and new mandates and mortgage regulations from the federal government. The only solution to our Housing “Crisis” is to add more homes to our market; we can build our way out of this problem. And while
many consider $150,000 as the starting price for a First-Time Home Buyer, very few, if any, homes can be built profitably, in that price range, considering all the challenges, and present rules. So, what do we do? We change the rules… By writing new laws and ordinances, building new housing types, offering down payments assistance and building lower priced, subsidized lots, new “Starter Homes” can be built, profitability. Several years ago, with the creation of 13 city ordinances focused on bringing new housing types to Corpus Christi, the first “Affordable” homes in years were built, on the Southside. I was privileged to work with city staff on the writing these ordinances, and these laws led directly to the first Cottage Housing being approved for construction in Corpus Christi. And, Braselton Homes took the opportunity to build the first Cottage Homes in Corpus Christi, with prices that started from $119,900; the Cottages of Southlake was one of the best-selling neighborhoods we have ever built. With the experience gained from the Cottages, we are now building Southside homes, from the $150’s, in Parkview at the Preserve. Another great solution for first-time buyers is down payment assistance, or DPA. As one of the great challenges in buying a home is the cash required to pay the down payment and closing costs, a DPA program can “grant” such funds, to a qualified buyer, allowing them to close on their new home. I have been privileged to serve as a member of the Board of Directors of the Corpus Christi Jobs and Economic Development Board (Type A Board), which runs an affordable housing
program. With it hundreds of families in Corpus Christi have been able to buy a home. With recent changes to the program, we now grant $10,000 to qualified buyers, for homes below $162,000. This has been a great success, and has led to many new families buying homes that they may not have otherwise been able to afford. Bringing down the cost of the most expensive component of a new home, the land, is a great way to lower the overall price of a home, so it can become more affordable. A coalition of groups, including such organizations as the Community Development Corporation, the Type A Board, Del Mar College, Habitat for Humanity, the CC Housing Authority and the City of Corpus Christi, along with local homebuilders and a neighborhood developer, have been working on plans to subsidize lot costs. This coalition is working to provide In-Fill, as well as New Home sites, in the near future, for affordable starter homes.

Born and raised in Corpus Christi, Bart is the third generation of Braseltons building in the Bay Area. Returning to Corpus Christi after earning a BBA in Finance, as well as a second BBA in Real Estate, from the University of Texas, at Austin, Braselton began working in the family business as a construction superintendent. Since then, Braselton Homes has won numerous local,state, and national awards, including the Fasterst Growing Builders in the U.S., and has grown into one of the Nation’s Largest Homebuilders, earning consistent rankings in the annual lists compiled by both Professional Builder, and Builder Magazine.
While a complete solution to the affordable housing “crisis,” especially the one faced by First-Time Home Buyers, is not here, yet, the beginnings of the solution appear to be falling into place. Because of the efforts of a few focused people, the organization of many of The Bend’s public and private affordable housing groups into a single “coalition”, appears to have begun. This single event, a “coalition” working with the City of Corpus Christi, is the best chance we have to fully address our housing “crisis.”

Presently, he serves on the Board of the Community Development Corporation, as well as the Chamber of Commerce. Additionally, he serves as Chairman of the Coastal Bend GreenBuilt Council, and President of the Board of the Corpus Christi Business and Job Development Corporation.

Seeking, identifying and investigating fun events for kids, she has created a virtual yellow pages with all listings falling under ‘F’ for FUN!

hot July sun beats down on the patio tile, where tiny feet run back and forth near mom’s chair. Lauren, mother of four-year-old twins types quickly on her laptop: “Kids” “Fun” “Corpus Christi.” Up pops CCFunForKids, and with a swift click, she discovers a treasure trove of activities for preschoolers. The hunt is over. The page in front of her speaks her language, “What Do I Do with My Toddler or Preschooler?” Under the cute photo of two smiling toddlers, Lauren scans the smorgasbord of choices. They include library story time, church tumble time, inflatable playground, dance classes, arts and crafts, and even dining establishments where kids eat free.

CCFunForKids is the brainchild of Ruth Longoria, a lifelong Corpus Christi resident, wife, mother, research associate, university student, and selfless, tireless par layer of information to enhance enjoyment of life in the Coastal Bend. Her “Weekday Picks” may include Tuesday’s guided nature walk at Oso Bay Wetland Preserve, or Wednesday’s CC Art Center Family Art Time. Longoria’s blog offers families a variety of recreational and educational happenings in Corpus Christi and its surrounding areas. The content is always current and informative. Events posted include address, phone number, times, admission, ticket information, if reservations are required, what’s free, etc. Longoria goes the extra mile and will often add helpful tips that may include the need to bring a jacket or sweater for a cold venue, or whether cash and check are the only accepted forms of payment. Collecting, designing and publishing the abundant content on the blog is time consuming. This volunteer, community service she provides is her “passion project,” she says. A few other moms help her monitor the CCFunForKids sites, but Longoria is at the helm and at all workstations. Her laptop, phone, coffee shop, and her car are where she
will quickly jot down information from, say, a billboard she passes. Sifting through websites, publications, and calling organizations, Longoria is always on the lookout, uncovering noteworthy programs and events. “I have a very tight schedule,” she explains. And she’s not kidding! Longoria holds a full-time job with the University of Michigan, is enrolled in classes at the University of Incarnate Word, raises 2 daughters, ages 17 and eight, and spends time with her husband. “I know everything that is going on, but I never have time to do any of it,” she laughs. At age 23, she earned an Associate’s Degree in Journalism from Del Mar College and worked for a while at a local library at the reference/ information desk. She admits she has a knack for finding information and enjoys the search and discovery, along with her generous desire to help people. Her work with the CCFunForKids blog and Facebook page has connected all the pieces of her past education and employment, rekindled her passion for writing. It has also motivated her to return to school. She will receive her degree this fall in Business Administration and Social Marketing. The rewards are aplenty from the community feedback she has garnered from pursuers of the blog. “I have had a lot of people tell me, ‘I wouldn’t have known about this if it weren’t for your site.’ It’s a great feeling,” she explains. This possibility of “not knowing” was the impetus for the Facebook page and blog. Years back, while at home with her toddler, Longoria and another mom were frustrated about not knowing what to do with their preschoolers. She recalls hearing a local news report on the fun time people experienced at a local event. She would have loved to have gone to it but didn’t know about it ahead of time. “I was tired of hearing about things after they happen,” she says. Longoria ran across a Facebook page titled “40 Things to Do” and asked the author if there was a similar site for parents or kids. The reply: “No, why don’t you

make it?” So she did. Recalling her thoughts, she says, “I was always on Facebook anyway, I might as well start posting events and sharing that with other people. It really took off right away! I never intended for it to grow so big. It’s grown like crazy!” she says, evidenced by 18,000 followers. “I believe people had a hunger for it.” What started as a Facebook page turned into a blog, as Longoria felt the need to “keep track of things” and “have everything in one place.” “My site is specifically focused on parents, family events, and free things for kids. It struck a nerve with the community,” explaining the success of CCFunForKids, now in its fifth year. Community involvement came to Longoria as a result of her blog. Corpus Christi Chamber of Commerce asked her to work with them on their website What’s Up Corpus Christi. She provides information for the KIDS/FAMILY section listing monthly events. Perfectly matched, she promotes their website on CCFunForKids and WhatsUpCC.

org advertises her blog. Also, Longoria has appeared on the Domingo Live (KiiiTV.com South Texas) show twice, talking about her blog and informing the public about camps for kids. She has become the go-to person for kids’ programs. “In many cities, moms like myself make calendars and post things to do. It’s called a ‘hyperlocal community site’ Longoria explains. Five years ago, Longoria didn’t know about this or even how to start a blog. So she Googled it. First she needed a host, then she had to create a domain name that was catchy, easy to remember and communicated the content of her blog. She immediately thought of CCFunForKids, which says it all. Longoria was concerned about the professionalism of the site, which prompted her to purchase a template from Etsy to upgrade the look. She installed it on Blogger and customized it herself. “It’s been challenging. It’s been my own private education,” she says. She pays minimal expenses and makes minimal income. “I think one of the reasons I’ve had such a good following is I’m not trying to sell any-

thing or getting paid to promote anything. I’m just sharing information,” Longoria says, and all of this is done in her spare time. Longoria plans to keep CCFunForKids going as long as she can, for she knows it is meeting a community need. “I’ve met moms that tell me ‘I don’t know what I would have done without your site. I just moved here and didn’t know what to do or didn’t know anybody. I found your site and started going to the events,’” she says. Her sites have followers from as far as Alaska, Hawaii, and recently she had a question about how many people from the UK live in Corpus Christi. She posts readers’ questions, recommendations, answers, and new information. “When I discover something, I want to share it. I feel like I’m helping people.”

For patients and their families, access to services can be confusing and daunting. A patient may require multiple forms of therapy, and yet still have additional needs or worries affecting quality of life. As Joe explains, “A patient who is stressed over the light bill getting paid is not able to focus on healing, so we have incorporated social work services into our care offerings.” Stephanie shares.

tephanie, a Speech-Language Pathologist, met her husband Joe Arroyo, a Physical and Respiratory Therapist, on the job. “Watching Joe interact, educate, and help the elderly people we worked with was a huge sign of his character,” Stephanie reminisces. Their love and compassion for people in need united them, started their love story, and also initiated their rehab center. Within their independent careers, the Arroyo’s were driven to provide compassionate care but often frustrated by the gaps in the system. For Joe, the hospital system limited his time with patients whom he saw on a minimal outtake level. He and Stephanie knew that by building trust and relationships with patients in home, there was a more personally fulfilling opportunity to see each patient through completion of care. They saw gaps in the system on both sides, for the patients and especially their families. They also identified that too often therapists might be able to identify patient needs, but the complicated insurance system prevented them from connecting their patient to the right care. Their passion for a holistic

approach to therapy and desire to fill the gaps is what spurred Joe and Stephanie to create South Texas Home Rehabilitation in 2014. The road to recovery after stroke, traumatic injury, or other severe health crisis, can be arduous. It is well established that the best long-term healing starts after the patient is home. However, without the support of in-home therapy, that patient could end up right back in the hospital. This is where family owned South Texas Home – Rehabilitation & Contract Services, serve the Coastal Bend, as the family-based team that helps keep patients home to heal. “The possibility of starting out on our own was daunting” shares Stephanie. “We go to school for so long to earn our degrees to help people heal and recover, and yet in all of that education we don’t receive a drop of training in how to run a business.” Yet their passion for providing services and bridging the gap between federal resources and local home health services is what pushed them through the hard times early on.

They have grown from a handful of therapists to now over 70, all serving even the most rural of areas in the Coastal Bend, even branching out into several San Antonio counties. “There is such tremendous need, and the agencies that seek to partner with us are doing so because they trust that we will be the consistent advocate for their patients.” Joe still regularly sees patients in the field, even though the family-run business demands more administrative time. He even has clients that request him by name for their therapy, like Brenda Gallagher who says, "Joe is fantastic. I have been through 15 surgeries and multiple therapists since having my leg reconstructed in 2008. Some were terrible. Joe and the other therapists he sends to my home are just second to none in their methods and attentive, personal, one-on-one care.” Together Joe, Stephanie, and their intuitive and dedicated team of therapists are bringing a healing touch to the Coastal Bend, one patient and one home at a time.

Running has long been a favorite physical activity for many people, from all walks of life. It’s an activity that starts as easily as lacing up your sneakers and heading outside. It can be a solitary or group endeavor. If you are the type who enjoys company, motivation and fun, Corpus Christi Roadrunners (CCR) is an established club that welcomes all! The club was founded in 1974 by Clent Mericle, Wade Mericle, and John Butterfield. A small club in its beginnings, Butterfield would also become the founder of the well-known Beach to Bay Relay Marathon. The club started as a means to bring together those who shared an enjoyment of running, for both competitive and non-competitive alike. Over the next 40 years, the club grew into the diverse group they are today, hosting many races, training runs, functions, and holding a place in the Corpus Christi community.

Individuals can sign up for club membership online through the CCR website. With great directors guiding the club, membership has doubled in the last 2-3 years. They offer various training practices, many FUN RUNS throughout the year, and give back to the community through charity donations, scholarships, and hosting various fundraisers. Members also enjoy benefits such as discounts with local merchants, free gear, and social activities. Doug McBee has been involved with CCR since 1987 and has served as the club president for approximately 25 years. He started running for personal reasons and the low cost start-up, and upon completing his first 5K – he was hooked. Working his way through the ranks, he eventually became club president and the Beach to Bay Relay Marathon director (a position he currently holds). When he initially became race director, there were less than 500 teams involved. On average, the race now brings in over 2,300 teams per year. As the lifeblood of

I
n 2001, when Amy and Carlos Villarreal were looking for another home, location was a priority. Carlos wanted to come home for lunch from his downtown law office. When they stumbled upon the home on Louisiana, the location and bay views were enough to set their imaginations into overdrive, resulting in a renovation with multiple phases. Both Carlos and Amy directed the entire creative process and design. Blending a style from Carlos’ childhood in Monterey, Mexico, and Amy’s travels to France, they combined the best of both worlds. The first part of the renovation took 10 months and was done by contractor Peter Fernand and master carpenter Gilbert Morales. Gilbert is, indeed, responsible for all that beautiful cabinetry in the main rooms downstairs, the kitchen, the upstairs bedrooms, and for the two-story playhouse. But the second part of the renovation took place several years later and took almost another year. That portion included the half bath, master bath, renovations to the master bedroom, and the exterior staircase and tile. This second part of the construction was overseen by Mike Howry. It took a village, as many talented people have contributed to the house. Walking into the foyer, to your left is a formal living space with the fireplace as the focal point. The original ranch-style fireplace was redone with an ornate hand painted mantel. Morales crafted the bookshelves, molding, and accents throughout the home. The dining room walls are hand painted by artists Linda Baker and Rebecca Glaze to add an elegant detail. Most all of the light fixtures were replaced, and several windows were added to enhance the views. Like a time warp, one may feel as though they have gone back in time to a place where conversations, reading, and family gathering without big screen TVs were enjoyed. “We loved the combination of Spanish/French as it’s the same as in New Orleans. We figured that was particularly relevant, because we live on Louisiana Avenue,” said Amy. While most of the artwork is traditional, there are several large, colorful paintings by Linda Dumont from Austin. These paintings are of the Corpus Christi bay front, where one can sense the movement and energy just flowing from the canvas. The master suite is off the formal living room and has windows looking onto the bay. The TV is hidden in the built-in armoire. It seems quaint and simple until you open the doors to the bathroom. Inspired by his trip to Monticello, Carlos had a tub in the center of the octagonal room, and the entire room is wrapped in meticulously placed tiles from Valencia, Italy. One vanity is made from an antique wooden buffet and provides a sink that’s exactly the right height for Carlos. The marble shower has seven showerheads and was like the one they saw at the Hyatt Hill Country. But there’s more; glass doors lead onto a private fenced courtyard with a quiet water fountain. Carlos Villarreal passed away from cancer in August of 2015. A charitable trust was set up at one of his Alma Maters, The University of Texas Law School. The scholarship fund encourages those interested in law and diversity in our society and/or the limits on judicial lawmaking, two subjects near to his heart. This permanent endowment will ensure that Carlos’ academic work will continue into the future. The scholarship fund is not limited to race or gender, rather it is based on academic qualifications. Moving the other direction from the foyer to the dining room, the old world charm becomes evident. The exposed beams were painted white creating a welcoming space. Through the dining room is the butler’s pantry with a sink that’s immediately off of the kitchen. Blue and white tiles, also from Valencia, create a French country feel that is decorative and functional. The original kitchen was expanded, and a breakfast nook with a bar area and second dishwasher were added. The kitchen is open to the large but cozy second living space. The room is surrounded by floor to ceiling windows overlooking the backyard gardens. There is a second bedroom downstairs with a garden view and a private bath. Upstairs there are two bedrooms that were personalized for their children, Franklin and Alexandra (or Ally). Ally’s room has ballet bars and mirrors where she took and gave lessons until she went off to college at Columbia University. There she is majoring in journalism and writes for Huffington Post and The New York Times. Often she is asked to review dance performances in New York; a natural fit for her talents. The front bedroom overlooks the bay, and this was Franklin’s room since he was 8 years old. He was a fan of JR Tolkien’s Hobbit series, and they built him a closet that was a great hideaway. After school, Franklin moved to the west coast. Franklin is living in LA managing his own ESports team. Also, upstairs is a small room with built-in bunk
beds and shelves. The room was the fairy room based on a birthday party for Ally, and it’s always been a favorite spot for the kids and their friends when they were little. The home feels like it holds many magical memories nourished by Amy’s creativity. The backyard is a little Giverny with green latticework and gates. The gardens are separate from the large grass yard where the two-story playhouse is, and the private master bath courtyard. The original backyard had a few trees and was a blank slate. The transformation was effective, and you would not be surprised to look over and see an artist in a smock with a beret painting water and sky en plein air. Over the three-car garage are guest quarters with a bath, kitchen and fireplace. There is also a small apartment next to the garage. At one point, the property was used as a Bed & Breakfast, and you can understand why with the great location and expansion scenery. They held many family get togethers for the holidays and birthday parties. While outgoing in public, Carlos preferred private family gatherings and was most himself at home. One year they transformed their home into Hogwarts with a hat sorting ceremony, classrooms and a fortuneteller. But one of Amy’s favorite spots is the swing in the front yard. She has beautiful memories of her and Carlos looking at the water in the evening and talking about their day.

A Little History Mayor Roy Miller was the original owner of the home in 1936. He was known as the “boy mayor” of Corpus Christi. When Miller was home, he raised a flag to let people know he was in town. Originally built that year for the Mayor, it was a traditional two-story home of the time with hardwood floors, ceiling beams, and verandas. Mayor Miller lived there from 1936 to 1949. But John Tompkins who was known to be the father of South Padre lived there, followed by his son Frank and wife Perry from 1949 to 2001. Prior to the Villareal's, the understanding is that the two families who lived there were responsible first for the Port of Corpus Christi and second for the development of South Padre. Based on oral history, it makes this home tremendously important to Corpus Christi.

ris Havelka spends his days watching the grass grow, but it’s not as easy or boring as one might think. In 2006, Havelka recognized a huge void in the Coastal Bend’s landscape industry-there were no local turf grass farms to provide sod. For new construction projects and landscape jobs, sod is an essential component to the completion of their work. And with sod being a perishable commodity, freshly cut, locally grown grass is quite appealing. With a degree in Agronomy from Texas A&M University, Havelka, born and raised in South Texas, used his knowledge and research experience to determine the type of grass most conducive to the Coastal Bend’s unique environment and developed a business plan. Already a seasoned sorghum and cotton farmer in Nueces County, Havelka had the drive to diversify his farming interest. So Turfco Grass Farms was born. The company now grows mostly Floratam St. Augustine sod on acreage located just outside Corpus Christi. “I am basically growing and maintaining a giant lawn,” Havelka quipped, “but the logistics of scheduling orders, maintaining equipment, mowing,
fertilizing and watering can be tricky.” Turfco Grass Farms strives to produce quality sod, but the relationship between the customers is just as important. “We have a lot of repeat customers and referrals. And their confidence in us keeps me striving to provide the best. We love to hear stories about home owners claiming they have the best lawn on the block,” Havelka stated. The goal was to become a reliable producer of sod for the area and meet the needs of a growing Coastal Bend community. According to Havelka, it’s a challenging industry, because there are so many variables out of your control. Two years ago, South Texas experienced the worst drought in decades, which proved to be “the test” for the Floratam St. Augustine sod. It survived and thrived. Last year’s record rainfall, especially during the Spring months, hindered much of the season's sales. But Havelka said that no year (or day for that matter) is the same, and that is what keeps him intrigued with his profession. Floratam St. Augustine sod was the choice product because of its many benefits in warm marine climates such as in the Coastal Bend. It flourishes during hot summer months and goes dormant during mild and cool winters.

The grass is named Floratam due to its development in 1972 between researchers at the University of Florida and Texas A&M – a hybrid of the two university’s names. Floratam is an extremely hardy grass and is one of the most drought tolerant sod species developed to date. The benefits of grass are plentiful! The beauty of a well-maintained lawn brings an increase in market value to one’s property. Studies have shown a beautiful landscape works as a natural mood lifter and source of serenity. Sod is a natural provider for the ecosystem preventing runoff and erosion, trapping dust, and purifying water entering underground aquifers. The Lawn Institute, a research authority for turf professionals, amazingly found that 25 square feet of sod provides the oxygen requirements of one person in one day of their life. So breathe it in, folks! This farmer has the real green thumb.

Local artist is making waves by taking his exhibit to surging new heights. alent and inspiration cannot thrive in an enclosed space, and nobody knows that better than photographer/artist Jon Steele, whose enigmatic heart and nomadic soul has placed him in great company as one of the best surf photographers working today. Born in San Antonio, but raised in Corpus Christi, Steele has allowed life’s current to pull him all over the world. He has evolved from a surfer to an artist and photographer, and now, that current has led to the opening of an exhibit at the Art Center of Corpus Christi. It’s featuring his assorted works, which include photography, paintings, sculptures, and sometimes even combinations of them all. For Steele, that current began to tug when he was in Florida at the age of seven. “I was swept out into the Gulf in an undertow and almost drowned,” Steele said. “Instead of being scarred from the experience, I felt more awakened and intrigued by the ocean.” That experience, coupled with the discovery as a child of a photograph of The Banzai Pipeline - a surf reef break in Hawaii famed by the legions of surfers who try to conquer it each year - Steele has spent the following twenty years conquering the waves of the Texas coast. All in an effort to emulate that photograph that hung proudly on his bedroom wall. As far as when the camera came into the equation, Steele credits an old girlfriend from Laredo. 88 The Bend

“We traveled together into Mexico for months at a time, and I started borrowing her camera and taking a few shots here and there so I could later paint that scene,” Steele said. “It morphed into just photographing and then applying paint to my printed photos as years passed. Then I brought my art back around full circle, incorporating both paints and photographic imagery.” At first, Steele was hesitant to make photography and art his life’s work, but as he continued honing his craft, he realized he had to make a living and knew that he wanted to make that living doing something he loved. With the guidance of the late Ann Flowers, Art and Photography Professor at Del Mar College, he was able to overcome his fear of pursuing the career and lifestyle of an artist.

Now, he wants to share that wisdom with everybody. “I feel that every person needs to take a walkabout during their lives to really find who they are; soul search and find out what they truly are made of,” Steele said. “I want people to ask themselves what truly matters and really take in how magical and amazing this world really is.” His latest exhibit, “Strong Current,” which will be at the Art Center of Corpus Christi July 14 - Aug. 19, takes all of his worldly experience and the work he’s produced from it over the last twenty years, and showcases his ability to follow life’s current wherever it may lead. “I feel this showing is an incorporation of what I have learned, obtained, experienced - all molded to create art that I can share with the community I grew up with,” said Steele. “I hope to inspire others to chase their dreams, conquer their fears and do what others may tell them they ‘can’t’ do in lieu of failure. Failure is if one doesn’t listen to this ‘strong current’ that is in all of us.”.

A Fluff-Bottom First Birthday

ou only turn one once, and little Lucy had an extra special day! Lucy Cotten Pollard enjoyed her first birthday party held at Hester’s Lamar Park. Sugar and spice and everything nice is what Lucy's party was made of. Guests were invited by an adorable balloon printed with party details and an invite watercolored by hand that instructed guests to inflate the balloon from the box of confetti to receive party details. The colors, blush and peach, were chosen to set the mood of the party. The rustic yet industrial atmosphere of Hester's, with its vintage wooden accents and metal touches, set the scene for Lucy's party. Event designer, JoAnne Howell of Oh Goodie Designs, arranged a day full of charm. Lucy's party backdrop was made from torn vintage fabric strewn into garlands, and Lucy’s monogram was displayed prominently as the focus detail of the event.

A large wood farm table was used to display sweets from hand painted cookies with Lucy's monogram to balloon shaped cookies complete with ruffled ribbons. Lucy's smash cake was sweet as could be, topped with a fondant bow and ribbon. Lucy had sweet success and a smashing good time. Guests could share a "naked" cake with buttercream icing in between layers and topped with fresh flowers. Guests were welcomed with mimosas served from custom trays with Lucy's monogram and striped party straws. Extra large pink balloons filled the air to carry out the balloon theme and party atmosphere. The Oso Bay Wetlands Preserve is a treasure not only for our Terra Mar homeowners but for the City as a whole.
As Hogan Homes celebrates 50 years of building quality homes in the Coastal Bend, the homebuilder has focused much of its recent development efforts on communities that highlight the area’s natural features. For Terra Mar, Hogan Homes had the vision to find a way to protect and preserve the adjacent wetlands along Oso Bay, donating significant resources towards the land purchase of the park. Nancy Summers, CEO of Hogan Homes, acknowledges, “In 2008, Hogan Homes and its development partners contributed $155,000 towards the purchase of the 160 acres that is now the Oso Bay Wetlands Preserve & Learning Center.” Visitors are invited to embark on nature hikes, discover the diverse ecosystem through wildlife exhibits and speaker series, and children can enjoy activities and summer camps hosted at the preserve.
To commemorate the opening, Hogan Homes built a new shade structure overlooking an observation pond within a 5 minute walk from the learning center. Summers adds, “We are thrilled to announce the completion of the new shade structure that visitors can enjoy for years to come.” Fittingly, the shade structure was erected over the site of an old brick maker’s site, establishing an historic connection that has added to Hogan Homes’ enthusiasm for the project. Food is more than flavor. Food is culture, tradition, and memory. The taste of a dish can take you back to your childhood, or even to a distant land. Food is the flavor of home.
F
or South Africans living in The Bend, the gem squash is a taste of home. Gem squash are small and round with dark green skin and golden flesh. South Africans call them cannonball squash. We learned the deep connection South Africans feel for gem squash when a friend gave us a few seeds and asked us to grow this taste of his homeland. Without realizing it, we became one of the few farms in America to offer these wonderful squash. Gem squash are native to Mexico, but they traveled to South Africa on Spanish trading ships in the 1500s, where they became a staple crop. In South Africa, you grow up with gem squash—they are served at family meals, at celebrations, as snacks, and by street vendors who fry, bake, or stuff them. These little ‘gems’ are everywhere.
But, gem squash are nearly impossible to find in America. Our farm website has received thousands of hits by expatriate South Africans looking for seeds or for a shipment of carefully packaged cannonball squash. At long last, our friends at Baker Creek Seed Company have started carrying the seeds. Now, gem squash are available to everyone. To celebrate the coveted gem squash, we stuffed it with a zesty Moroccan filling. This hearty filling features grass-fed beef, cinnamon, dates, ginger, and red quinoa stuffed into the golden centers of the squash. These half squashes make a gorgeous main course presentation. For an alternate filling recipe that features ground pork, apples, sage, walnuts, and melted Gruyere, plus information about growing or finding the gem squash, visit
thebendmag.com. You don’t need a gem for this recipe, you can use your favorite winter squash butternut, acorn, or striped green cushaw, whatever takes you home. But for our friends from South Africa, there is no substitute. The gem squash takes them back to the traffic noises of Johannesburg through the open window; the throngs of children laughing and kicking a soccer ball in the dusty alley; the street parades with dancers in colorful costumes and singers rhythmically chanting; to the patchwork fields of crops at the edge of the city; and to the distant hills beyond, where lions crouch in the yellow grass. Gem squash awakens all of this. Food is culture. Food is memory. Wherever you are from, food is home.
South African Gem Squash Stuffed with Moroccan Beef Visit thebendmag.com for a filling recipe variation that features apple-infused sausage. This recipe lends itself to substitutions, so please feel free to play around with the variety of winter squash or ancient grain. Ground lamb would be a lovely stand-in for ground beef.
Serves 4 Prep time: 20 minutes Cooking time: 1 hour Ingredients: 1 winter squash, halved with seeds and pith removed 1 tbsp butter ½ cup red quinoa 1 cup chicken broth 1 cup walnuts, chopped 1 tbsp olive oil 1 pound ground beef ½ medium onion, chopped 3 cloves garlic, minced 3 dates, pitted and chopped 2 tsp cinnamon (or more to taste) ½ tsp cumin ½ tsp ground ginger (or 1 generous tsp grated, fresh ginger) Salt and red pepper to taste 1 large bunch fresh mint (spearmint recommended)
Directions: Preheat oven to 400°F. Place squash flesh side up on a baking dish, and sprinkle with desired amount of salt. Divide butter in half and place inside squash cavity. Add about 1” of water to the bottom of the baking dish. Bake for approximately 45 minutes to one hour, or until fork tender. About 20 minutes into roasting the squash, place chicken broth and quinoa into a small sauce pan over medium heat. Bring mixture to a boil, cover, and reduce heat to low. Cook for 10-15 minutes, stirring occasionally. Strain to remove any additional broth, as needed. In a large sauté pan, cook walnuts over medium heat. Stir walnuts frequently to prevent burning and cook for 3-5 minutes, until fragrant. Remove walnuts and set to the side. Add oil and onion to the pan, cooking two minutes until onions begin to turn translucent. Add remaining ingredients to the onion mixture and cook an additional 7-10 minutes until ground beef is cooked through. Add prepared quinoa and reserved walnuts. Fill squash cavity with quinoa-beef mixture and enjoy.

Local Tavern Brings Bourbon Street to Gollihar By: Robert Breedlove Photos: Rachel Durrent
The Black Monk Tavern offers a unique spin on seafood and cocktails. The Tavern carries on the bold spirit of its namesake, and its predecessor, the Black Diamond Oyster Bar. During the turn of the 13th century, a mercenary named Eustace Busket performed daring acts of piracy up and down the English channel, employing himself first to England and then switching sides to fight for the French. As his legend grew, he became known as “The Black Monk.” This was partly due to his brief turn in a Benedectine abbey, but also for his supposed studies in black magic as a young man. Eight hundred years later, the bold spirit of Eustace, the Black Monk, lives on in a local bar now entering year two of operation. The Black Monk Tavern sits on the original site of the Black Diamond Oyster Bar. Co-owner Zane Campbell worked as a general manager at the Black Diamond, and he has taken that and his more than 10 years experience in seafood into crafting new twists on traditional cocktails and bar fare. “We have the best seafood in town,” proudly proclaims Candace Huff, manager of the tavern. Although that claim may be challenged by at least a dozen other Corpus Christi seafood restaurants, Campbell backs it up with his own fusion of TexMex and Cajun-style Gulf Coast cuisine, such as his pecan crusted oysters and his Sailor Jerry’s jalapeño-stuffed shrimp wraps.
But for Huff, her personal favorite is the Ahi tuna wonton crisps, a complete reimagining of the traditional bar nachos. As the name suggests, the base is a seasoned fried wonton chip. On the top of that, Cajun slaw, layered with pickled red onions, cilantro, spicy aioli, red chile sauce, and garnished with limes and a jalapeño. The sour and tart flavors mix well with the spiciness of the aioli and the chile, which is not too overpowering. And the onions add a tinge of sweetness. The presentation itself resembles a sort of fleet of pirate ships loaded down with cargo. Though when ordering it, be sure to grab a few napkins. Huff pairs this with a Brazilian-style cocktail worthy of a worldly pirate. The Black Mass consists of Ypioca cachaca, lime juice, sugar, and Kracken rum. It strikes a good balance between the lime tang and the sweetness of the sugar, and goes down smoothly. In addition to the unique eats and drinks, the Black Monk also hosts music every Saturday. “We initially started out as sort of a blues bar,” Campbell said. “But now we have a little bit of everything: punk, metal, rock, and everything in between.” After establishing themselves in year one, the Black Monk Tavern hopes to further carry the spirit of both its namesake and the Black Diamond. trip to Price’s Chef at Six Points sends you on a nostalgic lunch date in the 1940s with your grandfather, donning a brimmed hat that he hangs on the wooden rack inside the door as he enters. A black and white checkered floor, inlaid with the café’s name, invites you to a classic booth along the outside windows, or to a swiveling bar stool anchored in front of the café’s kitchen. Both seating options sport red and blue cushion coverings, just begging for the next patron to scoot in and plop a newspaper down on the wood tabletops before ordering the daily special: meatloaf with your choice of two sides, a drink, and a piece of pie. Fast-forward seven decades: the aroma of home-cooked diner fare still chase after the friendly wait staff as they bustle from the kitchen with hot plates. Originally named The Chef, Dan Price

purchased the diner in 1940 and wanted to add a personal touch, renaming the diner Price’s Chef. Although the ownership of the diner has indeed changed hands a few times, the traditional café rightfully claims the title of Corpus Christi’s longest running restaurant under one name. But a name isn’t the only longstanding trait of the café; current owners Zora and Luis Guerrero, who purchased the establishment in 2007, have preserved the mid-century atmosphere that was popularized in the 40s and 50s during the glory days of neighborhood diners. In light of the recent surge of new local eateries around the Coastal Bend, customers can share a historic dining experience with past generations at Price’s Chef…and risk falling victim to an afternoon siesta if they order the special!
