THE MILLER HOME OF LYNCHBURG Their motto is ‘Changing Lives One Girl at a Time,’ which is something they have being doing since they were founded in 1875. The Miller Home of Lynchburg has helped to care for over 900 girls, and their mission is simple: to provide shelter, love and care to girls who are unable to stay in their own home. Program Director Ashlie Manual offers, “I started working here to help give kids second chances when they thought they had no chances left. What keeps me going is when kids thank me for believing in them when everyone else gave up.” With a long history of giving young girls a solid foundation in crucial years, The Miller Home of Lynchburg is making a big difference for girls in our community. After 10 years in human services, Alisha Meador is currently a stay–at–home mom. She enjoys her family, gardening and her new flock of chickens.

AN AUTUMN OF APPLES a season of harvest From BBQ and corn on the cob in summer to chili and cinnamon rolls in winter, food is one of the most defining staples of any season. Autumn is certainly a time filled with flavorful foods, spices, and unique family traditions that clearly mark many people’s favorite season. While many equate fall with pumpkins, I personally cannot get enough of local apples. Each year as the air cools and the leaves tinge red, I think back to childhood memories of picking apples as a family (and sneaking an apple or two right there in the orchard). Thankfully, living in Virginia has afforded me the chance to share some of those same memories with my own little ones. Whether you are looking for a place to pick your own apples, a good festival to attend, or wondering what to do with all those apples when you get them home, here is your guide to all things apples!

WHERE TO GET THEM: A trip to an apple orchard in this region is a must in the fall! Once the weather starts to cool, plan to enjoy picturesque views as you visit a local apple farm. Johnson’s Farm johnsonsorchards.com With over 150 varieties of apples, Johnson’s offers something for everyone including the Golden Nugget, which was developed on site. They sell a number of fresh apple products including cold pressed cider and apple butter. ACTIVITIES STRAIGHT FROM THE ORCHARD EASY CROCK POT APPLE SAUCE Supplies: 8-10 apples 1/2 c water 1 t ground cinnamon – optional Directions: Peel, slice and core apples. Place in crockpot and cover with water. Cook on low for 6-8 hours until apples have softened. Stir occasionally to break up the apples. DI–Why Not?

FAUX ACORNS FALL IS IN THE AIR, AND IT’S TIME TO DECORATE OUR HOMES FOR THE SEASON. It’s always nice to decorate with the real thing, but for the crafty types, it’s also fun to make a DIY version of an item found in nature. Acorns on the ground are a sure sign that fall is on the way. The real thing tends to fall apart easily, so why not create a faux version that can be enjoyed for years to come?

Such is the case with Deborah Fears Keeling, who owns Accents, a retail store in downtown Lynchburg. Tell me about your business! Accents offers an extensive selection of flags and a very unique shopping experience for all of your gift giving needs. We have decorating ideas to make your home and garden warm and inviting. We have become a destination store in downtown Lynchburg for those near and far for the last twenty-four years. My only employee is my daughter, Ashleigh. Keeping it a family business and working with my daughter is as good as it gets! We also have two store cocker spaniels that come to work every day. What made you want to open your own business? For my entire life, I have always been driven by my crafty and creative side. I loved making all sorts of different things, so I decided to try my hand at designing and sewing banners and flags. As years passed, I added several lines of gifts along with home and garden décor to complement my selection of flags. After two significant expansions, the gift industry was exploding, and the demand for making the flags got to be more than I could handle. I decided

Savory Autumn Lunch

Fall is a time where we crave certain flavors, right? I love it when the coffee shops offer pumpkin flavored drinks and the markets carry hearty squash. Here we have a simple, autumn meal. Whether you choose to invite the girls over for a bite to eat or savor these items outside by the fire with the family, we hope you enjoy the first tastes of the season! 17


VEGGIE, GORGONZOLA & CHORIZO STUFFED ACORN SQUASH INGREDIENTS

METHOD

2 acorn squash, halved

Drizzle the inner edges and inside of the halved squashes with EVOO.

1 yellow onion, diced 2 zucchini, chopped 2 bell peppers, chopped 1 T garlic, minced 3 oz gorgonzola, crumbled

Get dirty! (I just rub the olive oil in with my hands.) Place on a baking sheet in a preheated oven at 400° with the halved-side facing down. Roast for 45 minutes to 1 hour depending on the variety you are cooking, or until the squash is tender. Drizzle a bit of EVOO in a large saute pan over medium-low heat. Add the chorizo, turning often for about 10 minutes until chorizo is browned.

Add a generous amount of shaved pecorino to the top and serve immediately! **If you buy the chorizo in links from the Fresh Market, ask the butcher to take it out of the casing if you are not comfortable doing that on your own at home!


KALE CHIPS INGREDIENTS 1 head kale, washed and thoroughly dried 2 T olive oil sea salt, for sprinkling

METHOD Preheat the oven to 275 degrees F. Remove the ribs from the kale and tear into 1 1/2-inch pieces. Lay on a baking sheet and toss with olive oil and salt. Bake until crisp, turning the leaves halfway through, about 30 minutes. Every oven differs, so don’t worry if yours aren’t brown yet. Just keep an eye out and bake until they are crispy.

ROSEMARY SEA SALT SWEET POTATO AND BEET CHIPS INGREDIENTS 2 sweet potatoes 2 large bunches of beets (or 8-10 little beets) EVOO sea salt (TT - to taste) fresh rosemary (TT)

METHOD Preheat oven to 350° Slice vegetables thin with a mandoline slicer or a steady hand! (I couldn’t find my mandoline, so I used the slicer side of my cheese grater!) Keep these veggies separate until baked. Toss in olive oil, sea salt, and rosemary. Lay out flat on two different baking sheets and bake for about 30 minutes, or until crisp! Let cool completely before storing.

PUMPKIN SPICE MUFFINS WITH CREAM CHEESE FROSTING, TOPPED WITH CINNAMON SUGARED PECANS

Muffins ingredients 1 box of spice cake mix 1 15 oz. can of pumpkin

method It really is as easy as it looks! Mix the spice cake package with a can of pumpkin until combined. You might have to add a little bit of water to make the mixing easier on your part. It will be a thick mixture. Do not add the oil and eggs from box recipe. Grease muffin pans and fill just over halfway. Preheat according to the box (glass and dark metal pans bake at different heats), bake for 15-20 minutes, or until a toothpick comes out clean.

Icing ingredients 1 8 oz. package of cream cheese (softened) 1 stick of butter (softened) Confectioners sugar Vanilla Extract

WOLFBANE PRODUCTIONS Sometimes a theatre company is born out of years of dreaming, planning and collaboration. Other times, like in the case of Wolfbane Productions, its conception is a happy accident. The theatre company was created when Dustin Williams, a native of Appomattox and alumnus of Lynchburg College, found himself back in Lynchburg in 2008 between stints in Los Angeles and New York. Williams, a director and actor, decided to pitch an idea to do the musical Bat Boy to a few local theaters. When no one bit at the suggestion, he was offered space at Heritage High School’s auditorium but was told he needed to create a name to differentiate the production from the school. Assuming this was a one off occurrence Williams casually called the company “Wolfbane.” Bat Boy proved to be a huge success

CREATIVE COOKING My oldest child was born prematurely, weighing just 2 pounds 7 ounces. From the moment she was born, I was devoted to helping my baby get bigger, stronger, and healthier. I quickly realized that while much of what was happening was out of my control, one of biggest ways I could influence my child’s health was through nutrition. I was forced to educate myself and make some changes. It took almost a year until she caught up and actually made it onto the growth chart, and what a miracle it was to see so many prayers answered for my happy and finally “big” baby girl. It was a humbling experience, but it was also empowering because I was intentionally cooking and feeding her things that were helping her body and brain grow and thrive. Continuing the mission to help my family stay healthy is something I try to maintain in our everyday life, especially when it comes to our food. We’re told to think of food as fuel for our little ones’ growing bodies, so of course we try to cook healthy, balanced, and nutritious meals for them. This doesn’t always lend itself to our tight schedules or to the picky eaters who sometimes refuse to eat all their vegetables. As they get to the preschool age, they have pretty much decided many of the foods they choose to willingly or unwillingly eat. So Moms, it’s time to get creative!

YUMMIER YOGURT A Simple Step towards Healthy Eating Most store bought Greek yogurt is filled with fake fruit, loaded with sugar, and is way too expensive. So I was determined to make my own, which I've found to be super easy, healthy, and absolutely delish! WHAT YOU'LL NEED:

Organic Whole Milk (Gallon)

Food Thermometer

1 Individual Greek Yogurt at room temperature (whole milk, plain)

Large Pot

Fine Mesh Cheesecloth

WHAT YOU'LL DO: Heat up milk on low in a large pot and cover. Once it reaches 185-190°, shut flame off, keep lid on and the thermometer in until it slowly cools to 120°. Use a fork to remove the skim coating. Remove about 2 cups of milk, place in separate bowl, and mix with the individual Greek yogurt. Return the milk/yogurt mixture back into pot, mix together, cover again. Place a heating pad set on low on the pot's cover and wrap the pot with a large towel. Let it sit like this for 6-8 hours. Unplug heating pad and leave as is (don't touch it at all) for about 12 hours. Use a fine mesh cheesecloth (or look online for some other options) to strain yogurt over a large bowl and place in refrigerator overnight. Add your own fruit, granola, local honey, or agave to sweeten it up! Place in individual Tupperware to add to your child's lunch box or freeze in sandwich baggies for homemade Go-Gurts!

POOCH PILL POUCH When it comes to giving your finicky and suspicious pooch medication, here is a yummy recipe that makes it a bit easier to manage. What you'll need: In a small bowl mix: 1/2 t up to 1/2 T applesauce (depending on how moist you want the pouch) 1 T peanut butter 1 T flour What you'll do: Shape a small amount into a ball (slightly larger than the medication being given), and compress an opening with a straw. Place the medication in the hole and squish the mixture around so that no medication is showing. Offer another smaller piece right after offering the first with the medication in it. This will encourage faster chewing and swallowing. Refrigerate any leftover portion.

Women of a Certain Age dressing the new you “Women of a certain age” is an old English term that originally referred to unmarried women but has since come to refer to middle–aged women. This column will apply to women roughly 45–65. Although we’re not likely to live to 130, we still like to think we’re middle aged. Besides, 60 is the new 40, right? My interest in writing for women in my age group started when I recently went looking for new clothes to wear to my daughter’s college graduation. I was frustrated by the inability to find flattering clothes for this post–menopausal body. Without changing the way I eat or my activity level, I gained a lot of weight the last few years.
