GREEK SALAD WITH LEMON VINAIGRETTE YIELD: Serves 6 INGREDIENTS: 1 head Romaine lettuce, chopped 4 plum tomatoes, cut into large chunks 1 large cucumber, peeled and cut into small chunks 1/2 red onion, sliced very thin 30 pitted olives, halved lengthwise 3/4 cups (6 oz.) crumbled feta cheese 1 handful fresh parsley, roughly chopped Lemon Vinaigrette (can be made 1 day ahead) 1/4 cup extra-virgin olive oil 2 Tablespoons red wine vinegar Juice of 1/2 a lemon 1 clove garlic, minced 1 teaspoon sugar
1/4 teaspoon salt 3-4 turns freshly ground black pepper
DIRECTIONS: Add all salad ingredients to a large bowl and toss gently to evenly distribute. Add all vinaigrette ingredients to a medium bowl. Whisk together until combined, or pulse a few times in a food processor until mixed well. Taste and adjust seasonings if desired. Pour dressing over salad ingredients. Toss with tongs, and serve. Enjoy!

Burned Biscuits When I was a young child, on odd occasions, Mama preferred to prepare breakfast food for dinner. I remember that night well. Mama had prepared Father’s dinner and placed a plate of scrambled eggs, bread and extremely burnt biscuits on Father’s place. I recall waiting to see if Father would notice. Yet, Father simply reached for the biscuit, ate it and continued his conversation with Mama. When I finished my dinner and left the table, I heard Mama apologize to Father for burning the biscuits. I will never forget what Father answered, “I love burnt biscuits!” Later that night, as I wished Father good night I asked him if he really liked his biscuits that way. Father looked at me and replied softly, “Mama worked hard today, she is really tired and besides, a burnt biscuits never hurt anyone!”

I learnt from this episode to accept everyone for who they are, faults notwithstanding and that this is the key to create healthy, growing and lasting relationships!

Life Skills: Visiting the doctor
An apple a day won’t keep the doctor away forever. Sooner or later, you’ll need to make an appointment. There are ways to make that visit flow smoothly.
“The pressure is greater to see more and more patients, and there are fewer personal physicians to go around,” says Griner, a resident of New Preston, Conn., and author of “The Power of Patient Stories: Learning Moments in Medicine”. A good doctor-patient relationship is essential to getting the best possible care, Griner believes. Here’s where to start:

Fact is, life is moving at a fast pace for everyone, including physicians. When Dr. Paul Griner started practicing in 1964, the average follow-up patient visit with a primary care physician was 30 minutes; a new patient visit would go an hour. That’s no longer the case.
_Plan for the visit. “Bring a list of things you want to talk about,” says Dr. Molly Cooke, a San Francisco-based internist and president of the American College of Physicians. _Be accurate and as specific as possible in describing symptoms. “It helps the physician narrow down what’s happening,” says Griner.

Sounds backwards, but it’s a smart tactic. If you don’t know, WD-40 is a Water-Displacing Spray. When Norm Lansen invented it in 1953, he was attempting to create a formula to prevent corrosion in nuclear missiles, by displacing the standing water that causes it. He had tried 39 other formulas for his compound, the 40th was the winner, and so, Water Displacement, 40th Formula became WD-40. It’s an insanely popular lubrication product, and has virtually no competitors. The reason for this is that it’s hard to replicate. Part of this difficulty lies in that WD-40 has not been patented. If they were to patent the formula, they would have to disclose the ingredients. By not doing it, they keep them as a trade secret and avoid having their competitors replicate it!
