Fudge Brownies Ingredients: • 3/4 cup unsalted butter • 8 oz semisweet or bittersweet chocolate, coarsely chopped • 1 cup sugar • 1 cup firmly packed light brown sugar • 4 large eggs, at room temperature • 2 tsp vanilla extract • 1 ½ cups flour • ½ tsp salt • 1 cup chopped walnuts or pecans Directions: 1. Cut butter into 1/2-inch pieces and place on top of a double boiler in which the water is barely simmering. 2. While butter melts, sprinkle chocolate evenly into it. Leave the mixture over heat for 5 minutes, and stir or whisk until smooth. Transfer the top of the double boiler to a cooling rack and let chocolate cool to room temperature. 3. Meanwhile, pre-heat oven to 350º. Lightly butter a 9-by9-inch square cake pan (do not use a smaller pan) and dust it with flour, knocking out the excess. 4. Combine sugars in a large mixing bowl, using your fingers to break up any lumps. Add the eggs and beat until well blended - about 30 second. On medium-high speed, blend in the vanilla extract. Add the cooled chocolate (which should still be liquid) and mix on medium speed just until evenly blended. 5. Sift the flour and salt into a medium bowl and stir into chocolate mixture, about half at a time, until
no streaks of flour remain. Stir in the nuts and scrape the batter into the prepared pan and smooth it with a spoon. 6. Bake the brownies on the center oven rack for 30 to 35 minutes. When done, the brownies will have risen slightly and the top will have a thin, brittle crust. Do not over-bake. For best results, use 3 toothpicks to test for doneness. Insert one into brownies about 1 inch from the side; it should come out clean. A second toothpick inserted 2 inches from the side should have a little batter stuck to it, and a third, inserted in the center, should be coated with a bit more batter than that. 7. Transfer the pan to a wire rack and cool the brownies thoroughly. To get the cleanest cuts, cover and refrigerate the brownies for several hours before slicing. 8. Serve slightly cool or at room temperature. Yields 12 to 16 brownies.

In contrast, smaller LDL particles are more likely to enter arterial walls and lead to plaque buildup. In addition, organic free range eggs are a good source of omega-3s, which are beneficial for your heart. Health Myth 2: Eating Fat Makes you Fat This concept gained popularity back in the ‘80s, and it’s done some serious damage since then. Eating fat-free is a recipe for disaster. Fat delays the digestive process helping you to feel full. It also suppresses your appetite. Taking the fat out of meals leaves your body wanting for something. When manufacturers make fatfree foods, they often make up for it with added sugar, which is anything but waist-friendly. High sugar diets are associated with weight gain and many other health problems. Health Myth 3: All Sun Exposure Leads to Skin Cancer This can be true in excess, but it all depends on how much sunlight you actually get. Excessive sun exposure, like the kind that leads to sunburns, is associated with skin cancer. In fact having 5 or more sunburns during your lifetime may double your risk for melanoma, the deadliest form of skin cancer. S u n b u r n s are particularly dangerous when they occur at a young age, but they increase the risk irrespective of the age, and even one blistering sunburn was reported to double the chances of developing melanoma later in life. Should you stay out of the sun indefinitely? No. A little bit of sunlight is actually good for
you. Research shows it boosts your production of endorphins and can even lower your blood pressure. Not to mention, one of the sun’s byproducts, vitamin D, protects against a variety of cancers. So what’s the solution? Animals can do extraordinary things. Some animals are known for tearing humans from limb to limb, others have been known to protect small children that fall into cages at zoos. However, in this 2005 news reported by NBC, a group of lions protected a 12 year old Ethiopian girl from her attackers, and stayed with her until she was rescued. The 12 year old girl was kidnapped a week prior to being rescued by lions, by a group of 7 men who were beating her senseless. A group of 3 lions saw the girl in trouble, and, stepped in, scaring away the attackers. The lions remained on guard duty until they saw a rescue team. At first, the rescue team didn’t know how to approach the situation, but reportedly, the lions slowly backed off as if leaving the girl as a ‘present’ for the rescue team!
