Long days, warm weather, and kids (and teachers) are hopefully enjoying a well-earned break following a school year like no other. We hope you’re able to take full advantage of the season. This summer will undoubtedly feel a little more special than past years. None of us will forget last year’s closure of summer camps, public spaces, restaurants and more. Though we proceed with caution, it’s encouraging to see case counts falling across Ontario. The recordsetting vaccine event at ScotiaBank Centre was a heartening story and should make all Torontonians feel more hopeful. There is still a long road ahead — those under 12 are still not vaccine eligible — but we are optimistic for better days ahead as we begin the second half of 2021. Humminghill Farm is an 80-acre farm in West Bolton, Quebec. This property was developed into a resort area in the 1960’s by Margaret Benson, heiress to a famed Canadian tobacco company, but eventually sat derelict. We intuitively sensed a good deal on our hands. In 15 years of living together, Richard and I have acquired, rented, and sold 20 properties in Quebec, Ontario, and the US including: opulent homes, lakeside cottages, plots of land, and downtown condominiums. We have developed a passion for the art of ‘flipping,’ showcasing our know-how as architect, designer and general contractors, and perfecting our craft — that of Ensembliers. Since 2011, House & Home magazine has published several of these projects, and in 2019, they awarded us Designer of the Year. Purchasing Humminghill has been nothing less than a transformative experience. In this era of a global pandemic and (eventually) post-pandemic, this type of property offers enormous potential. We have all witnessed waterfront property prices soar over the past 12 months, and though still in its infancy, the popularity of farms is also on the rise. A recent edition of Architectural Digest featured a sustainable Los Angeles farmhouse owned by Ashton Kutcher and Mila Kunis. Like waterfront properties, farms offer the purchaser much more than a real estate investment…it’s an investment in life quality. Whether it’s privacy, tranquility, self-sufficiency, or access to raw natural resources, a farm has almost unlimited potential. Currently, we have eight farms on our drawing boards: seven in Quebec and one outside Toronto. We are seeing a shift in focus of some of our clients who are now looking for acres of land rather than linear feet of shoreline. With this rise in popularity, we are pleased to share our expertise and offer advice for the acquisition and redevelopment of a large land estate. SUMMER 2021 | 9


AC Q U I S I T I O N — Locat i on — It is advantageous to look for a historic area near a village and a lake. The development potential is better if the farm belongs to an existing social fabric equipped with certain infrastructures like markets, marinas, specialized shops, and ski resorts. Humminghill is in West Bolton, seven minutes from the village, and approximately one hour from Montreal. —Reg u lat i on s an d Zon i n g — Ideally the property in question should be protected by agricultural zoning. Although this zoning is excessively restrictive and you have to be well informed, it will protect your investment against the risk of a neighbour subdividing their property. 10 | the COLLECTION

—Ac reage— Just like boats, a plot of land is never big enough! Try to fight against your urban reflexes when searching. Our experience shows that 50 acres should be the minimum amount of land, although 100 acres is ideal. —The Neighbouring Farms— It is advisable to visit the neighbouring farms and inquire about their production. Depending on what their activities are, it can create significant disturbances such as unwanted odours, pollution by fertilizer, noise, risks of allergies, and more. —The Genius Loc i— Consider the prevailing character of a place. A  farm is not necessarily just a large cultivated plain; it may be a forest, a maple grove, or a vineyard. Humminghill consisted of 60 acres of forest, 15 acres of fields, and


a neglected two-acre English garden. The beauty and variety of our property’s mature trees give it a unique charm. We decided to grow a flower farm because it harmonized with the nature of the place. —Lake Acce ss— If you’ll need a lake, look for a lakeside club membership, rent a dock, or, like us, buy a small cottage and turn it into a boathouse. Ours is five minutes from the gate of the property, and we go there to admire the sunsets!

DE VE LO P M E N T —Get to Kn ow You r Locat i on — This is of utmost importance. A farm is a land of endless possibilities. We acquired ours in 2016 and camped on the land for a year before beginning our

project. Our initial vision changed several times as a result of our observations in the field. —A Team Above All— A farm is so much more than a beautiful house on a plot of land. The sooner you are surrounded by experts, the greater the chances of avoiding costly mistakes. For example, if your intent is to have a commercial operation, your accountants and lawyers should position you quickly to take advantage of any tax benefits. —Farm Operations— It is important to understand the operations of the farm before building a residence. The logistics of accesses, machinery, and sheds will influence the location and orientation of the new residence. Service buildings are equally as important as the residence for the success of the project. SUMMER 2021 | 11


— Pro d u ct i on Pl an n i n g — We have chosen to produce flavoured vinegars and honey. In doing so, we set up a commercial kitchen which also serves as a honey house and space for our employees. Our products are now available at 24 locations and on the web. We’ve sold our vinegar all the way to Vancouver – just imagine what kind of family project you can create! —Ob j ec t i ve of Li fe an d Le i su re — Perhaps you dream of a tennis court and a swimming pool or stable. Your family may be thinking vegetable gardens, soccer fields, and a private lake. And don’t forget English gardens, mountain bike trails, hunting camps, a vineyard, and that helipad…the options are limitless. They must be identified before starting the design of the house. —Th e Imp or tan ce of Ph ase s— A project of this magnitude has phases. Where you begin, depends on your strategy. If a place to live in is the main objective, begin with the residence. If you’re running a business, consider 12 | the COLLECTION

what will produce income. For us, we began farm operations before starting contruction of the main house. In the meantime, we built and furnished the coach house. It goes without saying that owning a farm is a life project. You can experience it at different intensities and develop it at your own pace. For Richard and me, this real estate transaction has changed our lives. We now keep an apartment in Montreal and a piedà-terre in Toronto, but it is in Humminghill that we found roots…a place with purpose!

O U T D O O R A RT INSTALLATIONS Summer’s here, and with COVID cases declining and some restrictions lifted, you may feel ready to rejoin the world. But, if you prefer baby steps — outdoor experiences only — it’s totally understandable. So, to help you reconnect with your city, and to rediscover Toronto’s vibrancy, here are six of our favourite outdoor art installations.

THE WATER GUARDIANS Canary District West Donlands

Designed by Daniel Borins and Jennifer Marmon, The Water Guardians integrates art, landscape and play in a concept that is both serious and whimsical. With graphic form and lively colour, the artwork’s aesthetic speaks readily to children in a playful way. The artwork also acts as a bridge between the nearby manmade water feature and the real Don River that flows beyond the end of Front Street; the absence of actual water hints at a natural resource that needs to be protected.

BANKSY Goose Island Brewhouse The Esplanade

Anonymous street artist, Banksy, has left his mark on downtown Toronto several times over the years. While most of his works have been painted over, this one survived. Located in a little alley on the west side of Church Street, just north of The Esplanade, an original Banksy was discovered, authenticated and protected under plexiglass. Surprisingly, despite its renowned pedigree, it may be the city’s most overlooked piece of art, as thousands of people walk past it daily without ever taking notice.

SYMBOLIC PEACE Distillery District Downtown

Symbolic Peace is a laser cut, cold rolled steel sculpture by Studio Rosenblatt that is located in a laneway in the Distillery History District. It is representative of individuals and communities living together, despite their superficial differences. In the wake of the horrific terrorist event in London, Ontario this spring, it serves as a poignant reminder of what makes Canada one of the best countries in the world.

STARGATE 150 & 155 Redpath Midtown

At the west and east sides of Redpath and Broadway, in Toronto’s Yonge-Eglinton neighbourhood, sits STARGATE, an alien-inspired installation by Toronto/ Krakow based artists, Blue Republic. Consisting of yellow and blue interstellar creatures, each weighing thousands of pounds, STARGATE draws its inspiration from Toronto’s diversity. It is one of the most distinct and boundary pushing installations you’ll find in the 416. SUMMER 2021 | 17

LIMELIGHT Lee-Lifeson Art Park Willowdale

Limelight is a glass mosaic sculpture by Paul Raff Studio based on the principle of the parabolic reflector. The complex, shell-like form captures the sound of the performers on stage, and projects it towards the audience. A mysterious presence in the park, Limelight invokes the communicative power of performance.

SCULPTURE GARDEN York Cemetery North York

Hidden at the far west end of York Cemetery, off Senlac Road, sits a stunning sculpture garden in a Chinese Buddhist style. Although its origins are unclear, the sculpture garden offers respite from the city, and a lovely and tranquil opportunity for quiet reflection.

BEYOND MONET World premiere comes to Toronto By Jordan Z. Adler

Claude Monet was an iconoclast. The French painter, known for his dazzling Impressionist works, once felt stymied by the standards of France’s art establishment. The Académie dictated that for one to work and live as an artist, the painter had to master a certain classical form. The subject had to be grand, like the myths of Greek and Roman culture. Monet did not want to imitate works he considered formulaic, but his art was uniformly rejected by the elites. Frustrated, Monet jumped off a bridge into the Seine – and, thankfully, survived the fall. The Impressionist paintings that soon arrived on the scene — from Monet, Paul Cézanne and PierreAuguste Renoir, among others — created a stir. “They really punched in the door,” says art historian Fanny Curtat, adding that French society wasn’t ready for these new perspectives. “You should see the caricatures of those days that were making fun of Impressionist paintings. Everybody was offended. They were thinking it was ugly, [the paint] was too thick, it was a flowery subject. It was nothing that was the grand idea of what painting was.” Even the genesis of the term “Impressionism” itself is tied to one of Monet’s paintings, “Impression, Sunrise,” unveiled in 1874 and set at the port of Le Havre. For Beyond Monet, a new exhibition having its world premiere in Toronto this summer, the creators are drawing upon their subject’s defiance. Set to open at the Metro Toronto Convention Centre, this “immersive experience” aims to expand the way one sees the most iconic works from the French Impressionist.

"It allows people to step into this world through a door that, maybe, they are more comfortable with than the museum door, which can be intimidating." Co-created by the multimedia artists at Montreal’s Normal Studio, the exhibition will enlarge and enhance Monet’s art through projections, while creating a “cinematic” experience through music and sound design that complement his work. “We want to steer away from the [mode of the] museum,” says Mathieu St-Arnaud, creative director of Normal Studio. “We’re using the [digital] tools that we have and the freedom to create these different physical spaces where you would have light, sound… music with a piece of art.” Visitors will have the ability to go “beyond the frame” and walk through the paintings. The point of these audiovisual expansions is to have guests experience 24 | the COLLECTION

these works in a refreshing way, enlivening works that are already bursting with vibrancy and colour. Adapting the original works may furrow the brows of art purists, but St-Arnaud and Curtat, working in collaboration, explain that these radical shifts evoke the defiant artist at its centre. “Everything that’s a little bit new to the scene always takes a little bit of getting used to,” Curtat says. “I don’t see these types of projects and experiences as something that’s in opposition to the museum. To me, it’s something that complements it. It allows people to step into this world through a door that, maybe, they are more comfortable with than the museum door, which can be intimidating.


It’s more about creating some sort of bridge between these worlds.” One of those proposed bridges is setting the beauty of Monet’s most iconic works to a contemporary soundtrack. It would be easy for St-Arnaud and his team at Normal to prepare a musical score specific to the late 19th and early 20th centuries, when Monet thrived. But that wouldn’t be daring enough, and could go against the spirit of, in St-Arnaud’s words, “exploding” the canon. The exhibit’s audio design is meant to amplify the viewer’s emotional response to Monet’s art. “There is a big difference between a good anachronism and a bad one,” Curtat says, “and

music…very easily creates this dialogue between us and, in this case, a past object. Music moves you without using words, just like painting should.” Born Oscar-Claude Monet, the French Impressionist is revered for his en plein air (outside) paintings. Many of his most notable achievements — featuring stacks of wheat and a pond of water lilies — were painted in and near Giverny, the village in northern France where Monet spent his last four decades. Those signature paintings of water lilies were also framed in a way that was meant to be immersive, Curtat says. Monet’s canvases were enormous: he even made his studio bigger to accommodate their size. “He intentionally made something so big, without any

sort of border,” Curtat says. “You’re literally drawn into this world.” Curtat and St-Arnaud have collaborated on a similar immersive, art-oriented event before. Their multimedia show on Vincent van Gogh is currently touring Miami, and will open in other U.S. cities this summer. St-Arnaud says he expects Beyond Monet will replicate a similar path soon after the Toronto premiere. Due to the realities of physical distancing, the Toronto exhibition will only admit a certain number of patrons per half-hour, although the 50,000 square-foot space will give guests room to spread out. Masks will also be required for the hour-long show. Meanwhile, one dollar from each ticket will go to the Black, Indigenous, and People of Colour (BIPOC) Fellowship. This initiative, launched in 2020, aims to help BIPOC workers in Canada’s gallery, library, arts, and museum (GLAM) sectors, as well as lead to mentorship opportunities. Monet’s affinity for nature and colour should fit the exhibition’s summer launch, while bringing splendour into the lives of those starting to wade back into the outside world after more than a year of isolation. “We need to find the awe of our surroundings, of day-to-day-life, leisurely things,” Curtat says about the appeal of Beyond Monet. “You have these big, open landscapes, [made] even bigger and in an immersive space. It’s the kind of stuff that we need right now.”

Still, buyers need to ask the right questions when purchasing a cottage to avoid unwelcome and costly surprises after closing. Here are five important lessons to remember: 1. Use a Local Home Inspector An experienced home inspector from the local community will be able to tell you about the condition of your cottage. They will also be able to recommend other inspectors to check any well and septic systems on the property, and they should also understand the rules about building any dock or boathouse. 2. Understand the Shore Road Allowance When buying a waterfront property, many desire the privacy of their waterfront. What they may not understand is that, in most cases, the Municipality owns the land directly in front of the lake. This is called the ‘Shore Road Allowance,’ and it permits members of the public to walk along the waterfront at any time. Fortunately, in most areas, you can purchase this land by approaching the Town and having them pass a by-law to sell it to you. Once you own it, you have your privacy assured. Make sure to ask about this when researching any waterfront property.

3. Know the Access Remember, not all cottages have municipal road access. Sometimes, you can only access a cottage through a right of way over another owner’s property. In this situation, you must find out if you have year-round access and who is going to be paying the costs to maintain this private road. You should have these facts before you commit to buying a cottage. 4. The Well & Septic System At the cottage, turning a tap for water or flushing a toilet is not the same as in the city. If the well dries up, it’s very expensive to drill a new one. If the septic system fails, it can be very expensive to build a new one, as environmental standards have become more costly to comply with. With that in mind, be sure to have both your well and septic system properly inspected before purchasing. 5. Docks & Boathouses Most believe that they can easily build a dock or boathouse on their waterfront. This is incorrect. Even if you own the land to the waterfront, you don’t own the land under the water. Often, this is owned by the Province, and you need to have the proper permits. Make sure your seller has obtained these permits, or research what it will take to obtain them if there is no dock or boathouse at the property. With proper preparation before buying a cottage, you will avoid unwelcome surprises after closing.

After a year of distancing and quarantining, we’ve all become better acquainted with our dwellings. In fact, identifying improvement opportunities has become a bit of a national pastime. And while each of our homes is different, the chances are that you’ve experienced the need for greater flexibility from your space to accommodate the changing demands that have been placed on your home.

Last summer, Resource Furniture asked 131 architects and interior designers to share their experiences about working through the pandemic. The responses revealed that most clients want flexible spaces that can be used for multiple purposes: an all-in-one home office/study/guest room, for example. The concept of the ‘room’ is changing, as an increasing number of people recognize that single-purpose space — think formal dining room — no longer makes sense. How might our bedrooms be put to better use during the 16 hours in the day that we’re not sleeping? Creating flex spaces and maximizing square footage is easier when furniture can do more than one thing. With companies adopting hybrid work arrangements, and schools offering remote instruction, the need for double-duty furniture is clear. Pieces like the LGM, a queen-size wall bed that revolves on a track to reveal a built-in bookshelf and folding desk, are in demand by those requiring a permanent work from home

solution. When the desk is in use, the bed stays hidden from view with no need to remove the bedding. At night, with the pull of a knob, the desk flips down, and the entire bookshelf pivots — books, décor, and all — revealing the bed. Interest in home gyms — or at least enough clear floor space to allow for a decent workout — has also been on the rise. Again, wall beds offer a practical solution. With the right design, carving out additional space for a fully equipped gym is possible, even in a small condo.

“Solve for function first,” said one designer. “Rooms are for living in, so design decisions need to be able to support our clients’ lifestyle and goals.” Requests for air filters, improved HVAC systems, and VOC-free furniture have also increased dramatically, as more consumers express concern about their indoor air quality. “Previously, only a smaller group was conscious about indoor air quality and the VOC emissions coming from home décor products. Now, due to COVID-19, it’s become a significant factor in people’s buying decisions,” says Christopher Sinclair, Manager of Resource Furniture Toronto. “Clients are thrilled to hear our collections are CARB2 and TSCA Title VI compliant for formaldehyde emissions, meaning none of our products release toxic VOCs or have that noxious new furniture smell.”

Those surveyed also cited comfort as a high priority among their clients. With so much time spent indoors, it makes sense that we want our environments to be as welcoming and cozy as possible. That craving for comfort factors into many of today’s professional design choices: soothing colour palettes, ambient lighting, soft lines, and inviting textures can all evoke feelings of warmth, cheer and supreme comfort. Many designers stressed that investing in smart storage solutions goes a long way to making a home more comfortable. As with many trends accelerated by the pandemic, requests for custom cabinetry and built-ins are on the rise, as homeowners look to reinvest in storage spaces. 32 | the COLLECTION

Linden MacIntyre: It's pretty chaotic right now, but the long-term peril of the present situation is the difficulty that smart, young people are having trouble getting a foothold in the business. We’re going through a period where the delivery systems are being completely overhauled and replaced. You still have this community that wants to do journalism, that wants to tell stories that are important to public life, and you still have the mass of people that need that. But in between, you have a kind of technological, systematic breakdown and rebirth, and in all this confusion, a whole lot of people are falling through the cracks. And that's bad, because in my experience there’s never been such a highly qualified, highly motivated, highly principled community of people who want to do that work, and who are prepared to sacrifice their personal lives for the sake of this mission. The fact that these people are having so much trouble finding a home

TC: Media companies seem to have an agenda. Shouldn't they be a little more unbiased?

The Collection: How would you describe the current state of journalism?

LM: Companies have an agenda of survival. They are prepared to do anything to survive and will play to the lowest common denominator. They will embrace the most marginal, inflammatory issues, and run with them to excite a readership or a viewership to survive financially. TC: Why do you think the public has such a difficult time distinguishing fact from fiction? LM: Because they have been brainwashed. A large part of the population has been brainwashed in order to control the way people react, the way people vote, the way people buy. And they've been brainwashed into thinking that there is no such a thing as objectivity. And that there is no such thing


as truth. Truth is whatever some interest group wants it to sound like or look like. So, people are confused by this. There's such a variety of sources… everybody who has a computer can have a blog, and everybody who has an axe to grind can build a platform. In the old days, you had your Liberal paper, your Tory paper, your socialist paper, and people would shop where they felt more intellectually and politically comfortable. Now, there’s a supermarket full of crazy fringe choices, and I think deep in the soul of everybody, there are crazy fringe thoughts. Most of us, early in life, recognized to keep them to ourselves. But now there's a place to go with it [and] there are 10,000 people lined up saying “I like your crazy, fringe thoughts,” and suddenly you don't feel crazy or fringe anymore. You're suddenly part of a movement, and suddenly a politician is saying we better take that movement seriously or we’re going to be out of a job, and suddenly you have a newspaper proprietor saying if we don't take that crowd seriously, we’re going to start losing money. That makes it very confusing for people. TC: You’ve been critical of the CBC. What's wrong with our public broadcaster? LM: The CBC has a great deal of difficulty finding the right people to run the place, and to exercise any kind of consistent judgment about what goes out. Once upon a time, the CBC was a cultural leader in this country. It isn't anymore. Once upon a time, it was brave enough to put stuff on television or the radio that pushed boundaries and attracted big new audiences. There is a reluctance to take those chances anymore. [Instead], there’s this thinking that the latest gimmick, the latest fad is going to grab an audience. Audiences, I think, want to be surprised. Audiences don't want to be condescended to. They want to be stimulated and to learn. TC: In your work on The Fifth Estate, you’ve said that it's possible to deliver “the murder of the week,” and at the same time leave people thinking about humanity. Is that also your objective when writing fiction? LM: Of course. The human experience is down and dirty most of the time, and that's where journalism

finds its relevance and its authenticity. One of my great frustrations with the media is its easy acceptance of the fact that people do bad things because they're bad; people do good things because they're great, they’re wonderful. No…the reasons why anybody does anything, whether it's good or bad, are so complicated and so deep. This is the kind of conversation that I'm interested in. TC: Your new book, The Winter Wives, is a bit of a study in human nature. What can readers expect? LM: It’s a story about a fellow who grows up with a physical disability, and as a consequence of the physical disability, his whole educational process and his socializations are altered. He's homeschooled mostly. He's in the hospital a lot. He doesn't really get to relate with many people outside his parents, he's got no siblings. And then at a certain point, he has to go to school. He's a teenager now, he's suddenly dropped into a social situation, and he's not ready for it. So, he evolves in this way…in good ways and in bad. TC: The protagonist, Byron, has a recollection of events that are always fuzzy where it relates to his mother or Peggy, but his moments with Allan are vivid and detailed. Why is he more present in his relationship with another man than with the women in his life? LM: I think in many cases, men have an easier time sustaining friendships with men. In this particular case, he was a bit confused because when he got dropped into a social situation, he started off with a very strong friendship with Peggy. Peggy happened to be the popular girl. She was the ‘it’ girl in high school, and Peggy was interested in him, and he was interested in her, but because of the way he grew up, he had no sense of how you move that relationship beyond the kind of infantile stage. Then, he becomes friends with Allan, who was in many ways the opposite of him. Allan is the campus football star, he’s huge. Byron is a little guy with a limp, and for some strange reason, Allan sees something that he likes in Byron. They form this friendship that survives long periods of time and great spaces of distance. TC: Age, regret, and the recognition of the passage of time are prominent themes in the book. It is said that people write what they know. Are these things that you find yourself concerned with? LM: I’ve always been concerned with them. I grew up a little bit like Byron did. Not because I’m physically handicapped, but I grew up in a little place where there were very few kids my age, hardly any. Later, when I was a teenager, I made a couple of great friends. I actually made a friend a lot like Allan…a big strapping athlete who went on to an interesting lifestyle. But aging is something that I think we all reflect on once we get past our twenties. It used to be a traumatic event to turn 30. Then at some point, 50 became the new 40, so it all changes, but the reflection on age and relationships never really moves much from the time you become conscious of these things as important. I

don't intend for the book to be a vehicle for reflection on growing old, or on being handicapped somehow, or facing the limits of your mortality, but these things come up automatically. If you're going to look at people’s lives and people’s relationships, you will eventually have to wade through all this stuff. So, these are things that I can't push off the table when I'm thinking about telling the story. You know, I've covered murderers, but when I was dealing with the murder or the murderer, I was never able to push aside the question of who is he? Where did he come from? If you have the privilege in our culture of being able to tell a story that's rooted in reality, I think you have an obligation to go deep into it and to find out the ‘why’ of things. Who is this person, really, that you're dealing with? And then take him apart as much as you can.

CRACKING THE CODE The Art of Cooking with Fire By Chef Michael Smith

IN THE GREAT OUTDOORS, we’re unrestrained by the limits of mortgages, insurance policies and fine print. We’re not reckless, but over the years, we’ve collected a vast collection of fire-driven ideas that we feature during oyster hour, as our guests wander our whimsical grounds. We can build a fire anywhere but prefer it up off the ground for ease and effect. Each fire has a specific purpose, and thus, defined characteristics. We grill, char, smoke, sear, roast, toast, steam and simmer daily. Just when you think you’ve seen it all, we even build a roaring campfire for toasting marshmallows. I’ve spent my life around fires and good food, so I’ve heard a few stories and learned a few lessons: the craft of the fire; the art of cooking; respect for safety as my constant companion; wood smoke is addictively delicious; people are drawn to fires; drying wood for years and tending a fire for many hours for mere moments of flavour seems perfectly natural. With these lessons, I’ve cracked the code of the crackling flame. There is only one way of the flame. Zen is within the art and craft of wood-fired cookery. Calm and quiet

is found in the flames, because to harness fire requires absolute focus. You have to be present — for safety, of course, but also for the active creation and control of heat. There are many constant variables so you must pay attention. It’s so seductive, addictive even. Hours flash by in seconds. It’s hard work, but it’s tremendously rewarding. And you smell really good! Combining Maritime tradition with a good fire, I’d like to share our recipe for ember-roasted oysters with Love Butter. The fine art of oyster shucking, slurping, chewing, and swallowing is an essential Maritime skill. Setting up and hosting an oyster bar is also an awesome party trick. It’s respectful of your guests or fellow partygoers. If you can’t play fiddle or piano or stay sober, shuck the oysters. Oysters travel extremely well, so be sure to get your hands on some fresh ones. Visit your trusted fishmonger or arrange to have them shipped directly to your home from a fisher. You’ll pay a premium, but you’ll get a premium product. And don’t forget…the briny liquid in the oyster is delicious. In the shucker’s code, it belongs to the guests, so the pros don’t spill a single drop!

EMBER-ROASTED OYSTERS with Love Butter Make the Love Butter ahead of time. Makes about 1 cup (250 mL) Enough for 4 dozen oysters Oysters are always the life of the party. To heat up for an extra-special occasion, we like to coax a hot fire into a warm bed of coals, ready for super-cool local oysters with red-hot Love Butter. Maybe that’s why oyster hour is our guests’ favourite time of day. Imagine a raging hardwood fire patiently subsiding into a thick bed of glowing coals. Nestled in the coals are freshly shucked oysters from the bay out front of the inn, their fresh juices gently simmering with a shockingly green, scandalously flavoured, yet appropriately named butter. A brief moment of intensely flavoured ecstasy. What could go wrong?

Lovage grows prolifically on our farm. Its intense celery-like flavour and persistent bright green colour make it one of our favourite herbs. Unsurprisingly, our love for lovage gave rise to Love Butter. But if you can’t find lovage, you can substitute green onions (dark green parts only), fresh tarragon, dill, or parsley.

• A large wood fire, its fuel and eventual fiery bed of coals • 2 or 3 shucking knives • 1 or 2 extra-long tongs • Heavy duty work glove for the hand that holds the tongs


INGREDIENTS METHOD

¼ cup (60 mL) fresh lovage leaves 2 tablespoons (30 mL) cold water 1 cup (250 mL) butter, at room temperature 4 dozen impeccably fresh oysters from a well-connected fishmonger

Making the Love Butter Bring a pot of lightly salted water to a roiling boil. Fill a large bowl with the coldest water your taps can muster. Remove the pot of boiling water from the heat. Working quickly and using a spoon or tongs, plunge the lovage leaves into the simmering water, swirl as they immediately brighten and wilt, just 10 seconds or so. Drain through a mesh strainer or colander without pressing. Quickly transfer the leaves to the cold water, swirling and cooling, 30 seconds more. Drain again without pressing. Transfer the wet leaves to a blender. Add 2 tablespoons (30 mL) cold water. Puree, scraping down the sides once or twice, until bright green and thoroughly smooth. Transfer to a small bowl and refrigerate, uncovered, until cool. Add the butter to the blender or a food processor. Puree the butter, scraping down the sides, until smooth. Add the chilled lovage puree and continue processing until smooth. Store in a resealable container in the fridge for up to one month.

Build a Fire, Shuck and Roast the Oysters

Build and tend a large fire until it subsides into a thick bed of glowing coals. Meanwhile, shuck the oysters, taking special care not to spill their brine. Steady with the accumulating top shells inverted onto a serving platter. Top each with a spoonful of love butter. Grasp the edge of a shell with the tip of your tongs and nestle it into the coals. Repeat until the first dozen oysters are cooking. Watch as the juices and melted butter mingle, the oysters just barely poaching, 1 to 2 minutes. As soon as the juices simmer gently at the edges of the oysters, they are done. Any longer and they will overcook, shrivel, toughen, and dry out. Carefully remove the oysters from the coals, and rest again on the top shells until cool enough to slurp. Enjoy the firm yet still tender texture of a just-poached oyster. Repeat with remaining oysters.

What could go wrong? Exploding shells! Forgotten in the fire by a distracted cook, a thicker oyster shell left for too long in a hot bed of coals will eventually dry out and may crack or explode. It’s not particularly dangerous, but it is sudden and surprising, and easily avoided by not overcooking the oysters.

TORONTO’S BEAUTY ISN’T JUST SKIN DEEP… When Isaiah Haber, a Toronto fashion photographer, heard about the countless Canadian frontline medical professionals dealing with overwhelming stress, he had an idea. He gathered a group of photographers and models, and asked Toronto’s top hotels to participate in a series of sumptuously art-directed fashion shoots simply titled, A Night Out. Though she loves her job, she hasn’t quite grown accustomed to the adulation. A few paces behind, follows her co-star. Unlike her, he doesn’t mind basking in the limelight. In fact, he’s grown to thrive in it.

We’re here for a night at the disco in the ’80s — that moment in history when clothes had bigger personalities than the people wearing them. I’ve made sure my outfit has enough sequins to shine just right when that disco ball hits.

For some of us, we have the privilege of being able to leave the city and enjoy the great outdoors, as we migrate to summer cottages. The inevitable early season chores will probably seem less arduous this year as we enjoy the tranquility of nature and a respite from all things pandemic. Whether you utilize your secondary residence year-round or are just opening your cottage for the first time, here are some tips to help address what needs to be done for a stress-free summer!

Make a list Create a checklist that includes a review of utilities, insurance policies, septic systems, and other items. On arrival, do a complete exterior inspection. Canada has all kinds of weather, and if there is damage, you’ll want to know right away. Be on the lookout for pests that may have attempted to infiltrate your property. Let the outside (air) in Open up all the windows. Letting fresh air in will not only make things smell better, but it will also help dry out anything that might have accumulated dampness. After you’ve aired out the cottage for several hours, if there is still a musty smell, it could indicate water damage.

and wiping down/disinfecting hard surfaces…an inexpensive steamer can be a great cleaning tool. If you find mice droppings in a cupboard, put all the dishes through a sanitizing dishwasher cycle. Check for moths! Moths have a tendency to close in on food sources. Most adult moths feed on nectar and sap, whereas their larvae are destructive feeders, feasting on stored foods and fabrics. Be sure to store pantry items in sealed containers and clean up spilled foods immediately. Steam cleaning and protecting furniture and carpets will help stop infestations. Use outdoor lighting only when necessary, as it attracts these pests at night.

Check and replace Test your smoke and carbon monoxide detectors, light switches, appliances, outlets, heaters, and faucets. Make sure your fire extinguisher is still good, and replace batteries when necessary. Replace the filters in your HVAC system.

Finally, if your seasonal residence has a ducted system, your air ducts will inevitably harbour a wide variety of toxins, as pests and insects find their way inside. Professional duct cleaning sanitizes the ducts and restores indoor air quality, so that you can be confident that your family is safely enjoying both the great outdoors and the great indoors!

These residences are often featured in major news outlets, positively influencing the property’s value and attracting a larger pool of buyers. In Southern California, celebrity home sales are somewhat routine for the brokerage Hilton & Hyland, which frequently lists the estates of A-list celebrities. “There’s definitely an increase in the value of [celebrity] homes, not only because of its intrinsic value, but you do get a much greater pool of buyers,” says Susan Smith, global real estate advisor at Hilton & Hyland, Beverly Hills. “Often, more buyers are interested in viewing that type of home,” she adds.

But a notable name alone will not sell the property; certain factors compound and strengthen the relationship. Properties owned by living celebrities, particularly if the person is the current owner, tend to be the most valuable – and not just for the novelty. Why? Because homes with current celebrity owners tend to be the trendiest and offer modern luxuries. “Celebrities tend to be attracted to special homes… those that are architectural, for instance,” Smith says. “They tend to attract other celebrities or people with money to buy them after they have lived in those homes.” Of late, headline-earning properties have included those owned by Ellen DeGeneres, Derek Jeter, Katy Perry, Sylvester Stallone, and even Elvis Presley. What has made these homes even more valuable are the homes’ design elements and solid ties to the celebrity homeowners.

Ellen DeGeneres is the prime example of a celebrity who has invested in beautifully designed properties, listing multiple homes during the last year alone. The designers who have worked on her homes have boosted their selling prices. “Ellen probably generates some of the best numbers,” Smith says. “One that just closed, sold for $49 million, a record for Beverly Hills. She also tends to be very on top of the latest in design – Tommy Clements of Clements Design did that home, and he is very hot right now.” Sylvester Stallone is also aiming for a big sale of his home, owned since 1998, with the property listed at $110 million. The fact that Stallone has long owned the property, which he recently remodeled, along with the history and Rocky memorabilia within it, are all boosting the overall value.

Meanwhile, the late Presley’s Palm Springs home sold for more than $2.5 million just a few months ago. Although Elvis spent very little time at the property, and was obviously not the current owner, it is the home where he honeymooned with Priscilla Presley in the 1960s, and the interior very much matches the era.

LOW DOWN Celebrities, however, are not always so lucky. Occasionally, they take a loss on their homes. As Smith describes it, this is because celebrities have the capital to buy homes that are drumming up interest, and by the time they sell it, that interest may have waned. “Justin Bieber had a home that sold for less than what he bought it for,” Smith recounted. “When he purchased it, the house had a lot of interest, so

he paid a premium. Celebrities can be compulsive when they buy homes – they’ll go for this crazy price because they see a lot of people want the home.” The other scenario where Smith has observed celebrity home values take a hit has been when a celebrity has passed away from sad or unfortunate circumstances. It’s somewhat macabre but the celebrity association brings with it curious buyers. There are various factors that come into play with how celebrity affects a home sale, but their ties to history, impeccable design and general affiliation are the most significant. Ultimately, purchasers are buying into the celebrity lifestyle. And the more current the celebrity ownership is, like Stallone’s house, the better the listing will shine. “It’s been recently remodeled by him, so you’ll live like he’s been living in that home,” says Smith.
