PRES I DE N T ' S L E T T E R Welcome to the Winter edition of The Collection. It’s been quite a year, and it’s my sincere hope that you and your loved ones have been doing well during these unprecedented conditions. With the arrival of the vaccine, we are seeing a light at the end of the tunnel, but it’s important to remain vigilant in the months ahead. It’s amazing to think that eight months have passed since the NBA halted its season, marking the beginning of the Covid-era in North America. Around that time, I heard a saying that has stuck with me throughout. When discussing the challenges facing the community, one colleague said, “we’re all in the same boat,” to which another replied, “actually, we’re all in the same storm…but each of us is sitting in a much different boat.” I’ve thought about that a lot, and while the real estate industry continues to roll, I don’t lose sight of the fact that sectors like hospitality, entertainment, food and beverage haven’t been as fortunate. I hope that among the lessons learned from 2020, some are placed

on empathy and compassion for others in our community. Real estate may have been deemed ‘essential,’ but if these months have taught us anything, it’s how essential each of us is in creating a real community. I’d like to thank those that have gone over and above to help maintain our community: healthcare workers, teachers, transportation professionals, delivery professionals, bankers, grocers, first responders. I also want to thank those in the charitable sector. We recently had the privilege of helping the Growing Neighbourhoods Foundation, in conjunction with Building Roots, to distribute over 150 winterized sleeping bags and 100 thermal blankets to Toronto’s homeless population. It’s inspiring that there are so many people working to meet the needs of our city. We hope you enjoy the latest edition of The Collection, and that it gives you some joy and distraction in the coming months. More importantly, we wish you and your family a safe, happy and healthy holiday season.

HEALTH AND WELLNESS IN ARCHITECTURE BY DENISE SANTINI, RED STUDIO INC. ARCHITECTS Quite frequently, I am asked why we named our firm Red Studio. I cannot deny a passion for the colour red, but it also stands for our mission: Re-defining Environmental Design. We have always taken a unique approach to sustainability in architecture, centering around human health and wellness. Our work is embedded in the notion that we are all products of our environment. We believe that environmental preservation is paramount since there can be no human health without a healthy planet. Today, we share a home we designed named Equilibrium House to explore how sustainability, health and wellness was integrated into the design of a home for a young, active family. It is a home that reflects our holistic design philosophy. We paid careful attention to the indoor environment, while achieving a high degree of sustainability in the home's construction and operation. Energy

efficiency, on-site power generation, water conservation and reuse, use of low-toxicity materials, increased air filtration, daylighting and increased ventilation were incorporated into the design. Of course, just as in nature, these things do not stand in isolation; often, what is good for the planet is also good for our health. In architecture, it all begins with the site. This new home is located on a prominent corner lot in Toronto's west end. The site layout balances the client's desire for privacy, while incorporating daylight and views to the exterior. The design concept is comprised of two offset rectangles connected through a highly transparent "bar" that welcomes you into the home and bridges the indoor and outdoor. It allows light to flood into the house at a central point and connects the home's various courtyards – rear, lower, upper terrace and front entry. The home's configuration


embraces the private rear garden, making it an integral part of the living space with visibility from all levels. Nature contributes profoundly to a sense of wellbeing. When it is embedded, such as this, it becomes part of the place's spirit and provides a positive impact to the occupants every day. The design of a home follows no formula but it is always about finding an equilibrium. In this case, the priorities centered around biophilia, air quality, natural light, natural material selection, energy efficiency, building performance and comfort. Biophilia refers to our human desire to connect with nature, and contributes to overall health in a multitude of ways. In this home, there is an easy flow between indoor and outdoor spaces, both physically and in the use of natural materials (stone and wood) that seamlessly transition from exterior to interior. Views of nature and access to daylight are offered at every opportunity and deliver a sense of wellbeing. Access to the outdoors is provided on all levels, WINTER 2021 | 9

including the lower-level courtyard and a private, second-floor meditation terrace. Natural lighting and ventilation strategies provide a sensory-rich experience with tremendous positive impacts on human health, while also having the benefit of reducing energy usage. As an example, the design of the handrail and stair became an opportunity to direct natural light deep into the home and provide a pathway for natural ventilation. High-level operable windows in this area induce natural air movement through the home. The home was designed to achieve Net Zero Energy by incorporating a large solar photovoltaic (PV) array on the roof to offset the home's annual energy usage. Together with on-site energy generation, the home’s systems were designed to conserve as much energy as possible. The house is operated with a sophisticated smart-home automation system that controls lighting, HVAC systems, window shades, audio and even the operation of high-level windows. From architecture, interior design and landscape, this home profiles our philosophy of architecture and design. Our approach is based on a true equilibrium of planetary and human health, leaving the family a legacy that can proudly be handed down through the generations. Coming this winter to the Art Gallery of Ontario (AGO), Studio 54: Night Magic will transport visitors back to 1977 to explore the revolutionary creativity, expressive freedom and sexual liberation that transformed a New York City nightclub into a cultural phenomenon. Organized by the Brooklyn Museum, Studio 54: Night Magic explores a moment in time unlike any other. 14 | the COLLECTION


Featuring hundreds of objects including photographs, films, sketches and designer fashions, the exhibition traces the famed nightclub’s trailblazing aesthetics while situating it within the broader social and historical context of the period. Organized chronologically, visitors will be led through the exhibition to the sounds of disco music. Curated by Matthew Yokobosky, Senior Curator of Fashion and Material Culture at the Brooklyn Museum in New York, the installation at the AGO will be overseen by Julian Cox, Deputy Director and Chief Curator. “Born out of the social and economic tensions of New York City in the late 1970s, the club was a lightning rod for creativity,” says Cox. “On any given night, fashion designers would mix with politicians and visual artists, while celebrities performed and took to the dance floor with people from the suburbs. The impact of this creative explosion was undeniable and continues to define how we understand the visual culture of that period.”

When Studio 54 opened its doors on April 26, 1977, New York City was raw and on edge – the city was on the verge of bankruptcy, and ongoing protests for civil and LGBTQ rights revealed deep divisions and painful inequalities within the population. In part, this upheaval energized the city’s creative scene while cheap studio space and apartment rentals made the city an appealing location for so many artists, musicians and designers. Seeking to build a grand nightclub empire, New Yorkers Steve Rubell and Ian Schrager purchased an old theatre in grungy midtown Manhattan. They got to work immediately, transforming the space into what would become the hub of New York City nightlife. Their innovative redesign leveraged the creativity of the artistic community around them, converting the theatre stage into a dance floor, installing a state-of the art sound system and bolstering the existing stage lights to accommodate new heights of spectacle.

Blueprints, sketches and architectural models trace the hurried transformation of what was an abandoned CBS TV studio. Visitors will be introduced to the nightclub’s many in-house designers and artists including: Richard Bernstein, fashion designer and illustrator Antonio Lopez, setdesigner Richie Williamson, Tony Award-winning lighting designers Jules Fisher and Paul Marantz and Academy Award-winning set designer Tony Walton. Rubell and Schrager were determined that no two nights would ever be the same at Studio 54, and the set design, guests, music and themes changed daily. Fashion designers like Diane von Furstenberg,

Halston, Norma Kamali and Yves Saint Laurent strove to create custom creations as glamorous and unique as each night. Studio 54: Night Magic features many conceptual sketches and handcrafted garments to provide visitors with a glimpse into the glitz and glamour on display every night the club was open. On opening night, dancers from the Alvin Ailey American Dance Theatre took to the stage indoors, while crowds outside begged to be admitted. Inside, celebrities, fashion designers, artists, musicians, gay and straight New Yorkers, Blacks, Whites and Latinos, all rubbed shoulders. Andy Warhol, Bianca WINTER 2021 | 17

Jagger, Cher, Margaret Trudeau, Michael Jackson and Truman Capote were all regulars, and the media could not get enough. During this post-Watergate, pre-AIDS era, glamour danced to a disco beat, and for the 33 months it lasted, Studio 54 was the watchword for creative expression and no-holdsbarred excitement. Co-published by the Brooklyn Museum and Rizzoli Electa, the exhibition is accompanied by a 176 page hardcover catalogue. Details will continue to emerge. At the time of writing, the AGO had not released its post-lockdown protocols, but the exhibit is indeed coming this winter. So, if you’re ready to relive the golden age of disco and those hazy New York City nights, it’s time to dust off those platform shoes and squeeze into that jumpsuit. A Chunk of Silver and Some Mud

Former classmates Nicolas Soni and Gillian Maradyn-Jowsey use their immeasurable appetites for objects and food to cook up a dinner service to feast one’s eyes upon. This service will consist of cast and forged silverware made by Toronto-based sculptor Soni, and hand-built ceramic dishes made by Lunenburg-based ceramicist Maradyn-Jowsey.

Le Plus Habité

Le Plus Habité is a term coined by architect AugustinCharles d’Aviler in the 17th century to describe rooms that were meant to be the most inhabited, in contrast to display rooms. In this piece, the term gains a new meaning, as the viewers are pushed to question the purpose of the space and its livability.

Robust in form, yet soft in sensibility, these ceramics are made for everyday dining and special occasions, alike. The cutlery draws from Early-Modern English flatware and carpentry tools, emphasizing intuition and playfulness. These implements have been crafted with consideration to their material heritage, while reimagining the conventions around them.

The living room has traditionally been used as a display of status, a space to entertain, and at times, for the temporary keeping of the dead. Brandon Latcham and Shira Yavor aim to blur the lines between human and non-human environments. A stop-motion film, created in collaboration with Rashmi Baird, echoes this concept and acts as a dream seeking to bridge the gap between domestic and organic environments.

Filling a need to leave her home and to explore, artist Lisa Stuve started to document the typography of various older apartment buildings. “It became a treasure hunt of unique discoveries, some I happened upon, while others I tracked down online. The charm and character from decades past led me to daydream of what these apartments must look like inside, or how they appeared in their prime. These signs show a lost typographic art form, one I wish that new developments in the city would bring back.” — Lisa Stuve

Living Will

Living Will places the future death of loved ones at the forefront of our consciousness. It reminds us that despite death’s inevitability, we can make the time that remains meaningful and prepare for the grieving process. Over the past two years, the Dying series has attracted over 5,000 attendees, 26 speakers, and 29 exhibiting artists and designers. In its third year, Dying, will continue to offer a chance to creatively engage in conversation about fragility, death, dying, loss and grief, through the lens of art and design.

Volatile Ecologies: Architectural Apparatuses for Earthly Survival

10490 is a series of seats made as part of an investigation into how objects exist as intricate relations between material, marking, and meaning.

Volatile Ecologies is a design exhibition examining the environmental degradation in the industrial waterfront of Buffalo, New York, through the lens of scenario planning and prototype making. Since their original use in the 1910s, these sites have been contaminated for decades with oil spills, benzene run-offs, coal tars, ammonia liquors, wastewater, and toxic airborne emissions. Bringing together design, technology and material culture, the exhibition depicts an alternative future of the heavily polluted environment through design apparatuses and speculative drawings.

“The process began with harvesting wood from my family’s property in London, Ontario. For the past year, I have made a seat every two to four weeks. These were the ones that made it. The series of seats reflect a learning process, an embodied knowledge that develops when engaging with material. Each object speaks of the time and place in which it was made, and embodies the vitality of the trees that made them.” — Elizabeth Lenny

Millennials are Reshaping Luxury Real Estate By Luxury Portfolio International

Defined as the generation born between 1981–1996, it’s safe to say that Millennials are not kids any more. They have families, degrees, and high-paying jobs. They also make up the largest percentage of luxury real estate buyers — 37 percent, as of 2019. As Millennials become the new majority in real estate, they’re also exerting significant influence over amenities, design trends and the overall marketplace with interests ranging from smart technology to organic materials. With that in mind, the following are some noteworthy, millennial-driven trends shaping the industry. 28 | the COLLECTION


Urbanization (...or Back to the Suburbs?) The Millennial preference for location consisted of urban environments with all the amenities for a hassle-free lifestyle. A whopping 47 percent even pictured themselves not owning a car one day. As the events of COVID-19 unfolded, however, this completely altered the real estate landscape. Across North America, our member real estate companies have reported substantial sales surges in the suburbs. Beyond a departure from densely populated areas, suburbs and rural areas have offered additional advantages, namely house and lot size. Buyers are now looking for homes 20 to 30 percent larger in size —

a huge contrast to the home sizes they were seeking earlier in the year. Today’s luxury buyer wants enough room for private offices, pools, tennis courts, large backyards and other lifestyle amenities, many of which are now more difficult to access outside the home. It will be interesting to see how this trend shakes out long-term. Millennials are known for preferring walkable locations close to dining, shopping and other community offerings. Once businesses can safely reopen, we may see a resurgence in the demand for walkability and nearby services.

Minimalism Makes its Mark Driving forces behind Millennial home design preferences include a desire to simplify their busy lifestyles and to alleviate an almost overwhelming access to information. “Millennials always see what’s trending, even if they don’t want to, making it easier for them to keep up with home design trends,” says Traci Connell, the Principal Lead Designer of the award-winning Traci Connell Interiors. She describes this generation as being one that aspires to make their spaces “functional and aesthetically

pleasing,” preferring minimalist design styles since their busy lives demand efficiency, adding “clutter is against everything they stand for.” Minimalism will be doubly desirable in a post-COVID world as cleanliness continues to be prioritized. This design style ensures that “there is less to clean and less upkeep.” Another trend is the desire to reconnect to nature. Connell states, “Low-maintenance plants will continue to be all the rage during the next few years, and we will see new ways to incorporate organic materials into flooring, walls and other design features.”

Personal (Life)style Millennials are looking for a home that is as functional as it is aesthetically pleasing. To that end, they’re looking for amenities that fit their desired lifestyles including: cooking, entertaining, working from home, wellness and the ease of smart living. “Millennials enjoy experimenting with different techniques and cuisines, so we see the kitchen design being extremely important to the design of the home,” says Connell. “Many Millennials would say the kitchen is the most important room in the home. However, what this generation values the most is efficiency. Functional storage and energy-saving appliances are essential kitchen amenities for them.”

Working from home has also been a growing trend in recent years, though it has received no greater attention than now. Much of the interest in increased square footage has been the result of an increase in demand for home offices and wellness-oriented amenities — both of which were, up until now, enjoyed mostly outside of the home. In a recent study, pools, spas, gyms and dedicated fitness rooms were labeled as “essential” or “nice to have.” We’re seeing similar patterns today with an increase in searches for tennis courts, pools and other sports-related amenities across the Luxury Portfolio International network. Millennials are also opting for properties with whole-house control systems, which involve everything from HVAC and lighting to music and entertainment systems. They also utilize technology to ensure safety and security, with roughly half considering surveillance cameras, security systems and auto-control surveillance to be not only preferred, but essential. Similar to the way technology has streamlined the lives of Millennials, they are opting for the same simplified principles in their living spaces, incorporating minimalism into everything from design to smart home features. COVID-19 is reshaping Millennial preferences, requiring more amenities at home and possibly stalling the trend of urbanization. Time will tell how this demographic — and circumstances outside of their control — will change the industry.

Barbara Amiel's life has been a subject of endless fascination. As both an instinctive feminist and a foe of feminism's political correctness, her memoir covers a formidable array of experiences: political, sexual, marital and material. Rising from poverty to high levels of aristocracy, her life has an operatic quality with a wildly diverse cast that includes Elton John, Henry Kissinger and Princess Diana, and has been handled with a “fatal combination of naivete and self-absorption.� Her recently published memoir, Friends and Enemies, is shockingly honest, richly detailed and pulls few punches. We sat down with Ms. Amiel for a candid conversation about the book, the state of journalism, and her marriage to Conrad Black.

The Collection: Why did you decide to write this memoir? Barbara Amiel: I think it was sadomasochism. I’m a writer by profession…you use the material you have. I think I wrote it to understand essentially what had happened in my life. I’d read so many accounts of myself, people saying such horrid things, that I thought they couldn't have made them all up. I probably was horrid, and I better sort of straighten out in my own mind why. I didn’t even think about publishing it. The title, Friends & Enemies, does make it sound like a book of vengeance. I probably should have dropped that… it's just that it came into my mind when I started. I sorted things out, it was a little therapeutic, and it was an extraordinary exercise in writing. Essentially one's life, unless you are Einstein or Maria Callas, is boring. Everybody goes through difficult times. So, it became an exercise in just making the prose as good as I could. TC: In the book, you actually list your friends and enemies. Do you hold grudges? If someone is on the enemies list, is there a chance to move to the friends’ column?

GC: Rehabilitate yourself in my eyes? I don’t think anyone would give a damn that they were on my enemies list. And I don’t think anyone would want to rehabilitate themselves. They’re probably proud of being there. There’s one or two people that I regret putting on that list but the real enemies could never rehabilitate themselves, could never make peace with me because they destroyed my husband's life, and that means they destroyed my life, too. You can’t make up for time lost, particularly at our stage of life. TC: How would you describe the state of journalism in the year 2020? BA: It’s very difficult and I'm very glad that I'm not having to earn my living from it now. Print journalism is under-paid, newspapers are falling by the wayside. There’s interesting online stuff but there is so much stuff, that slotting out what’s good and bad is difficult. The best stuff is some of the magazines, which are going online, and they are refining their ability to go online and make it interesting for readers. TC: Has social media and blogging watered down the profession?

BA: Probably. How can you say anything in 140 words? I don’t think on social media you can examine real issues or controversial issues at all because you get cancelled out. There’s this censorship that’s moving in on journalists. You have to have the right views on things or you may lose your job. TC: Many journalists and media companies seem to have an agenda. Shouldn’t journalism be unbiased and less interested in the outcome? BA: Newspapers by and large have an affiliation with some line of thought. The Toronto Star, for example, has written into their rules of being that they are a paper of the Liberal Party of Canada. The National Post, while it didn't have rules like that, tended to be the opposition to the Liberal agenda. In England, where there are 12 dailies, you had a broad spectrum. You don’t really have any broad spectrum of thought in Canada, it’s pretty well ideologically all the same, except for occasional columnists in the National Post. But it’s changed since my husband founded it. TC: You write in your book that right leaning journalists have to work three times harder to get

exposure. I thought they had a clearer path since there were fewer people taking those views. BA: You’re wrong. That would be true in England. In England, being a conservative, right wing, or classical liberal, as I call myself, is nothing new. You can flourish there. The opposition will be tough, but you can flourish. In Canada, it’s a completely different matter. Notoriety is not a useful tool in writing. You want to be known for your writing, and your views hold you back. Look, the National Post has a couple, but there’s no one at the CBC, not one single person, except for the token appearances of [Rex Murphy]. And he has had his columns objected to on the newsroom floor. So, it’s never been easy in this country. People thought you were putting on a schtick to get employment. So, you just researched harder, worked harder, rewrote longer. TC: Do you feel that right leaning journalism has set the stage for productive debate or is it making politics more divisive? BA: If you asked me my views on a dozen issues, they would not be right wing. I’m anti-capital punishment, I’m pro-choice, I’m for prison reform. There are all sorts WINTER 2021 | 39


standard of living that had grave disadvantages. He thrust me into the spotlight in a way I didn’t want to be. I grew to like aspects of it because I’m a shallow person, basically. I grew to like being looked at when I went into a restaurant. I grew to like that I could get tickets anywhere, that I could get the best table anywhere. But the downside is people become, not envious, but they begin to resent. There’s just too much of you around, there’s too many pictures of you. You become too much. TC: How did your friends react to you and treat you during Conrad Black’s legal proceedings and eventual conviction?

of things that wouldn’t be considered right wing. And one changes one’s views as you go along. I’m pro-gay marriage, that was a view I came to. Your views evolve with life. In terms of right-wing journalism, in Canada there just isn’t any serious right wing journalism except for, as I said, some columnists at the National Post. Canada is a soft-left country, it’s a decent country… its journalists are by and large decent. But they’re not politically knowledgable or historically knowledgeable in the way that they are in the United Kingdom. TC: What did your marriage to Conrad Black do to your notoriety and career trajectory? GC: I went from being a prize-winning columnist in the UK, where I got a press award and a woman of distinction award, and I became seen as part of the enemy because I was on the other side of the desk. I was no longer in the newsroom, I was with the proprietors, and that was a handicap. Journalists were afraid to be with me because it would look like they were playing up to the proprietor’s wife. Obviously, Conrad brought many benefits, mainly he brought love into my life and it's lasted to this day. And he brought a whole new 40 | the COLLECTION

BA: My UK friends were by and large staunch. Canada was different in that I didn’t have many close friends. All the people I met through Conrad took their distance. And once Conrad was in prison, I took my distance. I didn’t want to inflict myself on people anymore. It was pretty tough on my friends, they kept getting called for anecdotes about me. So, I withdrew…and there’s the other side. People didn't want to know me anymore because we were toxic, we were a disadvantage. I can’t blame people. Their lives do not centre around my difficulties or Conrad’s. There were a lot of people that I named in Friends who I didn’t see but that I knew were there. The ones I didn’t like were the people who had known us, and instead of just using us as an occasional dinner table anecdote, we became a source of amusement, spite, and endless conversations which contained a fair amount of fiction. TC: Aside from your book tour, do you have other projects planned? BA: Well, in these wonderful Covid-times, one doesn't do a book tour, one sits in front of a Zoom machine. It’s infuriating because I’ve been isolated for the last 17 years with one thing or another, and I thought when I finished this bloody book, I’m going to have a fabulous time. I haven’t been to a restaurant in Toronto in years, and Covid came and everything shut down. I have the offer of a column, a weekly column, and I have to get my energy back to start that treadmill again. I want to do the next book and I have some ideas. But I can’t not work. What am I going to do, go to the manicurist and buy clothes? I work. That's life.

Pare down your clothes Go through your closets a month before moving and put all unwanted clothing in plastic bags. You can call Diabetes Canada and schedule a pickup. They will come right to your door, and your clothing will go to someone in need.

Give your furniture a second life If your furniture is in good condition, sell it on Kijiji and Facebook Marketplace. Make sure to include the brand, measurements, how old it is and where it was purchased. If your furniture is old but usable, call Furniture Bank. They book pickups several weeks in advance, so don’t wait for the last minute! You’ll get a tax receipt and your furniture will go to someone in need. If your furniture is in no shape to be donated (stained, ripped, broken), it’s time to junk it.

It’s the night before you move, the house is packed…don’t worry about finding a towel or change of clothes! Pack an overnight bag for each member of your household with toothbrush, clothes, phone charger, medication and anything else you’ll need. Even consider setting aside a clean set of bed linen so when you arrive at your new home, you can make your bed. Let’s be honest… moving is exhausting!

I never intended to own a butcher shop, nor did I imagine that becoming a vegetarian would launch my food career. But that’s exactly what happened. When I was 16, I listened to the music of The Smiths and thought meat was murder. I told my parents I was done consuming flesh. My mother acknowledged my right to choose, but wouldn’t make special meals for me. Instead, she gave me a copy of a cookbook and free reign to make my own dinner. I ate a lot of sauerkraut and cheddar sandwiches. After six months of iron deficiency and exhaustion, I succumbed to the pleasures of a Toronto hot dog. Now, as the owner of Sanagan’s Meat Locker, I am a supplier of exceptional meat and poultry from small family farms in Ontario. We strive to provide an attentive and customized service experience. Many of my customers ask, “How do I roast a chicken?” or “What do you do with an oxtail?” Others ask: “Is this meat organic?” I want people to feel comfortable choosing, buying, cooking, and eating meat, whether they’re preparing basic recipes or challenging ones.

One reason that people are reluctant to prepare meat is that it’s foreign to them. We have grown accustomed to buying processed cuts that require little thought. We choose meat that is already tender, already seasoned, and ready for the pan. Most shoppers want to know how to choose meat and then have their butchers do the dirty work. Of course, the reality is that you aren’t going to do a lot of butchering at home, and you should let the pros do much of the work. However, it’s good to know the basics so you can do simple tasks like breaking down chicken into different cuts or cleaning the silver skin from a beef tenderloin. Every time a butcher puts a knife to a piece of meat, you are going to pay for it. You pay for the butcher’s time, as well as for the “waste” they are removing. So, it might be a good time to step back, breathe deep, learn a new skill, and save a few bucks in the process. Don’t be discouraged if you “eff it up.” It happens. You have to get your hands familiar with the task, and that can take time. Luckily, when you’re at home, deboning four 54 | the COLLECTION

chicken legs for fried chicken, you have the luxury of time. When choosing what meat to cook, most start with one of two questions: “What type of meat or poultry do I want to cook?” or “What cooking method do I want to use?” The first is simpler, as many people will drift toward their preferences. Chicken is the most popular meat these days. It’s less expensive than beef and leaner than pork. The answer to the second is usually guided by the season. Summer brings requests for the grill. Winter brings recommendations for “a good slowcooked braise.” In either case, you need to know the fundamentals of meat theory and cooking methods. All four-legged mammals have the same muscle “map.” Every muscle on a pig can also be found on a steer. And a lamb. And a goat. So, once you have a grasp on where a muscle is located on a cow, you know where to find the same muscle on a lamb. This same applies to birds: chicken, duck, quail and pheasant all have the same cuts…legs,


BR A ISIN G 1. Season the meat with salt and pepper. In a large ovenproof pot, brown the meat in hot fat (eg. olive oil). When it’s brown all over, remove from the pot. 2. In the same pot, saute some aromatic vegetables (onion, garlic, carrot, celery, etc). Add liquid (wine, stock, water, beer, juice, etc.) and herbs to the vegetables. 3. Return the meat to the pot. Make sure it is at least three quarters covered with liquid. Put a lid on the pot and cook it in a 300° F oven until the meat is tender. Many braising recipes require herbs and spices to impart flavour to the dish, but rather than adding them individually, use one of these techniques: Herb Bundle: Wrap a piece of kitchen twine around a few different herbs. Knot it tightly to create a bundle that you can add to the cooking pot and fish out easily once the braise is done. My standard recipe is 6 sprigs thyme, 4 sprigs Italian parsley, 1 sprig rosemary, and 3 bay leaves. wings, breast, etc. Now that you understand that, you’ll realize that similar cooking methods apply to similar cuts. All muscles, can be categorized as “working” or “nonworking.” Any muscles that are constantly in use are usually categorized as working. This means hind legs that keep the animal moving. It means shoulders, necks, and front legs that support the body and head. Muscles that aren’t in constant use, like the back muscles and the flank, are “nonworking.” Working muscles tend to be darker and tougher than nonworking, but the trade-off is more flavour. Different methods of cooking should be applied to different muscles. Now that we are in the winter season, let’s talk braising and roasting. Braising means slow-roasting in an aromatic liquid. This commonly used on tougher, harder working cuts of meat to break down the muscle’s protein fibers and make them tender. If you’ve ever pot-roasted something, you know how to braise:

Herb Sachet: A step above an herb bundle, a sachet also includes a few whole spices. Simply place all the ingredients in the center of a 6-inch square of cheesecloth, roll up the cheesecloth, and tie tightly with kitchen twine. My go-to contains the herb bundle above plus 1 tsp whole black peppercorns and 1 whole clove. Spice Ball: When making dishes that require whole spices like allspice, coriander, and star anise, I like to use a large tea infuser. Place the spices in the infuser, seal it, and pop it into your braise.

ROA STIN G Roasting means cooking in a hot oven, without liquid, and is commonly used on tender, non-working cuts of meat that are either lean or fatty. Most roasting recipes use two different temperatures: lower for the actual cooking and higher to brown the outside of the roast. WINTER 2021 | 55


1. Note the weight of the roast. Bring the meat to room temperature. Season well with salt and pepper (or marinate overnight), then oil lightly. 2. Preheat the oven (350°F is the most common oven temperature for roasting). 3. Place the meat on an elevated rack in a roasting pan, allowing hot air to circulate around the meat and cook it more evenly. 4. Cook the roast for an average of 20 minutes per pound, but you can play with these times based on the roast, until the desired internal temperature is met at the thickest part of the meat. Allow to rest before carving. During the holiday season, our thoughts often turn to family…both our relatives and our work family. In the restaurant and butcher shop business, you spend a lot of time with others. If you’re lucky, you get to share a meal from time to time. To me, that’s the best time to spend with family. Sunday was sacred in my household growing up. It was the day we went to church and did our homework — it was also the day my mom would make something a little special for dinner. All afternoon the aroma would fill the house, and as the sun set, we would come to the table. Pot roast would be served with carrots cooked in the roasting juices, a chopped salad with various salad dressings, and of course, mashed potatoes. This was treasured time to talk through issues, to laugh at inappropriate jokes, to cry, to eat and drink, and to be happy. This is how I became who I am…a shared experience over pot roast. SO YOU WANT TO BE AN ICE SCULPTOR? By Mike Friskney

Ice sculptures are both beautiful and breathtaking. It’s hard not to marvel at the artistry and skill needed to create them, or be intrigued by what it must take to transform a 300-pound block of ice into a stunning, glistening masterpiece. Well, you are in luck…you’re about to find out.

First, a little background Credit for the first ice sculpture goes to the farmers and fishermen of Northern China back in the 16th century. They would freeze buckets of water, carve out the centre and then place a candle inside to make lanterns. These lanterns grew in popularity, and soon people were sculpting the exterior of their lanterns in order to decorate them. The prize for the first ornate ice sculpture goes to Russia. During the 18th century, Empress Anna Ivanovna commissioned a large palace made from ice. It included ice sculptures such as trees, animals and cannons. Fast forward to the 20th century, where chefs have created striking ice sculpture centrepieces for buffets, banquets, weddings and events.

How to become an ice sculptor Like other artistic endeavours, there is no one path to becoming an ice sculptor. While it’s true that many culinary schools offer courses in ice sculpting, a great deal of ice sculptors are self-taught. There are even several videos on YouTube that will walk you through the fundamentals. Other ice sculptors have learned the basics by taking a weekend workshop at an art school. Some have started off in a different discipline, such as wood carving, and developed skills that naturally translate to sculpting ice. But, if you’re really serious about becoming an ice sculptor, the best way to become a virtuoso of the trade is to apprentice with a master sculptor.

The ice sculpting process

How much ice-cold cash can you earn?

Like most pursuits, there’s a process to sculpting a piece of ice. The first step is determining a concept and a design. Once this stage is complete, the next step is to find a good block of ice.

Ice sculptors are commissioned to design pieces for happenings such as galas, events, parties, weddings, conventions, hotels, movies and winter festivals.

The common size for one of these blocks of ice is 40" tall x 20" wide x 10" deep. They weigh 300-lbs. and are produced by an ice-block-making machine called a Clinebell. Sculptors prefer ice made in these machines because the device’s filters push oxygen out of the water as it freezes. This prevents air bubbles from concentrating in the centre of the block and making the ice look cloudy. With no air bubbles trapped in the centre, the ice block will be crystal clear.

In addition to commercial revenue, many ice sculptors will enter competitions to pad their bank accounts. Unfortunately, considering their incredible artistic abilities, even the top ice sculptors don’t earn a big pay day from these competitions. For example, the top prize in Toronto’s Bloor Yorkville IceFest ice sculpture competition is only $1,000. Even at the World Ice Art Championships, held annually in Fairbanks, Alaska, the reward for being a top sculptor is only $2,000-$8,000, depending on which of the three categories you win.

Once you have selected your block of ice, the next step is to carve out the basic shape of your design using a handsaw or electric chainsaw. When the rough shape is completed, it’s time to the work on the dazzling details. This is done using tools such as a chisel, angle grinder, files, hammer and even a blow torch.

Considering how priceless ice sculptures are, it seems only fitting that the organizers of these competitions should start offering prize money that is equal to the looks of amazement these incredible works of art inspire.

Transforming a block of ice to a finished sculpture usually takes an experienced artisan roughly one or two hours; the more intricate the design, the longer the duration.
