SHACKED UP FOR THE WINTER

NOTE

It’s finally cooling off! Each year we breath a sign of relief as Hurricane Season comes to an end. It's been another crazy year we’ve had here in the good ole’ sunshine state. Definitely no shortage of action with the extremely active hurricane season. Is it just me, or does it seem like this is kind of getting out of control? Those poor people in the Panhandle. It's been a complete disaster area since Micheal left it's mark on Panama City and the surrounding areas. I think people are finally realizing it's not in your best interest to ride out these storms. Packing up all of your possessions and leaving everything behind is a horrible feeling, but it proves to be the smart decision with these mega storms. Now that winter is among us, and it is getting dark so damn early, we have to find a way to stay motivated. I am still trying to figure that out, but I am pretty confident that it will require getting up very, very early! Not sure that I am ready to wake up at the crack of dawn everyday to compensate for it getting dark the moment we all leave work. I think the only option is to find a few trips to look forward to in the next few months to come. Our next rendezvous is the beautiful island of Puerto Rico. A short plane ride, with no customs thankfully, and we'll be sipping on some coldies and praying for surf. I tend to preach this all the time in this magazine, but get out there and travel, and make sure you never stop! Wether it's a weekend trip camping with friends or a few months excursion, it will be something you won't regret. From a young age my parents took my brother and I everywhere around the globe, and as an adult I try to keep the constant journey going. It always gives me something to look forward to, and when I arrive home, I always realize how good we have it. Also, make sure that you take the time to enjoy everything we have on offer in Central Florida, but also don’t forget that a trip away will clear your mind and assist in starting 2019 off right. Somewhere with a beach a boat and a cocktail, I’m thinking Bocas Del Toro! Tell us something about you that might surprise us? I went to school at International Maritime Academy of South Florida to work on super yachts and boats. How many times a day do you use social media? (tell us the truth) A better question would be “ Kay, when are you not on your phone?” If you were a skittle, what color would you be and why? Red, because they are by far the best ones. When you listen to music do you pay attention to lyrics or the melodies and beats? Depends on the music. Pop culture music I’m only listening to the lyrics because, in my personal opinion, that’s the only talent behind it. Now take me back to some Van Halen, Aerosmith, ZZ Top, and I’ll lose myself in a good guitar solo. What do you enjoy the most about modeling? Being able to get all dolled up and dapper because on a normal day basis I’m rolling out of bed and you’re lucky I made an appearance, haha. Real House Wife's or Sunday Night Football? Sunday Night Football by far! Keep the drama away. Got a boyfriend? A what? Worst Pickup Line? “Do you have a bandaid, because I scraped my knee falling for you.” Most important thing on a first date? The overall date itself, honestly. I love being outdoors and actually doing things. If you ask me out for a drink or a movie it’s just putting a different vibe out there for what you’re expecting. Let’s go on an adventure! If you had to live in another state besides Florida, which state would you choose and why? I wouldn’t pick a state, I’d pick a totally different country. But if I had to choose, I'd say Hawaii. Best Beach in Florida? A little secret beach of mine kind of down by Spanish House. Who’s the hottest- Surfers, Skaters, Wakeboarder, Musicians or Artist? The boysss Max Van Helvoort, Gunner Daft, and Massi Piffa. I love Fluid magazine because? Working for Billabong/ Quiet Flight for 2 1/2 years, you can’t do that without loving your local surf mags. What does the future hold for the lovely Kalyn? Well I currently take care of my brother and grandfather. In two years my brother will graduate high school and I plan on putting all my certs into use along with my bartending skills to do charters and get paid to travel.

There is a new addition to the downtown New Smyrna Beach restaurant scene, Ricky's Canteen/ Poke Bar & Street Food. However, the owners are both familiar and local favorites in New Smyrna Beach. Fans of Spanish River Grill and Txokos Basque Kitchen will be pleased to find Chef Henry Salgado, a two time James Beard Semi-finalist, in the kitchen at Ricky’s Canteen. Salgado’s newest fast casual concept, Ricky’s Canteen, features fresh poke bowls and street food inspired by street vendors around the world. Located on Magnolia Street, just off of Canal Street in a trendy and laid back atmosphere, Ricky’s has an impressive list of locally brewed craft beers, wine, cold sake on tap and their famous house made sangrias. Poke bowls, a traditional Hawaiian dish made of chopped, marinated raw fish with rice and fresh vegetables, is tossed in a selection of house made sauces and packed with umami flavor. The fresh poke bowls are the focus of the concept but the unique street food at Ricky’s Canteen includes items such as Sesame Roasted Brussel Sprouts with honey and spicy peanuts, Pressed Cuban Bahn Mi Sandwich with pork belly, ham and pate and house made pickles, and Grilled Pulpo, their charred octopus on a stick, Ricky’s BBQ and garlic aioli. Guests can enjoy both very healthy options as well as creative hot dogs, tacos and warm bowls such as the Rooster, with grilled Andouille sausage, rice, roasted corn, scallions, egg and miso remoulaude. Although the poke craze is fairly new, many chefs,

including Chef Henry, believe it’s here to stay. Plans to bottle their poke sauce are in the works but guests can still purchase a pint in house. With their love of @prima.nsb locally brewed craft beer, stay tuned for their launch of MOJO Monkey Brewing Co. in the near future. But in the meantime, be sure to check them out for their micro brews on tap. Chef Henry and his wife Michele Salgado truly are a class act. So many of us were in love with their previous concept Spanish River, and couldn't be happier when they decided to open up Ricky's Canteen. We sat down with Henry and Michele Salgado to here more about our favorite new hot spot. How's the response been so far from the community? Initially we were concerned that fans of Spanish River wouldn’t understand the laid back, fast casual concept of Ricky’s. But the community at large, especially our downtown neighbors, have been very supportive and welcoming which is great! The food is absolutely amazing! What's your secret? The secret is in our combination of flavors. We make all of our sauces, including our poke sauce. We did a lot of research and tasted a lot of pre-made sauces and we knew we could do better. The poke bowls are fresh, simple and healthy, and with the street food the sky’s the limit. So the “real” secret is that we are having fun! The scene on Canal St has really grown in the past year or so. Ricky's Canteen is a great addition and has a fun vibe. How did the vision turn into a reality? After selling both Txokos Basque Kitchen and

Spanish River Grill, we were researching possible franchise concepts, and we knew poke was very popular in other parts of the country but still fairly new for our area. After we did our due diligence we decided to create our own poke concept and added the street food to appeal to a greater demographic. What are the most popular items on the menu? Our number one seller is the 40 Miles Out Poke Bowl with ahi tuna, cucumber, carrot, edamame and avocado. The Warm Bowls are popular too, as are all of our Snacks. For Saturday Brunch the Guv’na with grilled shrimp, octopus, scrambled egg, cheese sauce, Ricky’s BBQ, crispy shallots in a warm tortilla is very popular. They all sound delicious. Any last words for our readers? Thank you. We’re just having fun with the Canteen and hope our guests enjoy the relaxed setting as much as we do. If you see us around town in our “Yoshi-Bus” give us a wave! And don’t be surprised if you see more Ricky’s Canteens popping up in the future. Creating a profession that you love and are passionate about is something we all strive for. It's all about finding the right opportunity and diving in head first. Our good friend, Lexi Ciara, decided it was time for her to chase her dreams and open Canvas Hair Design Studio. Located on the corner of Flagler Ave and Pine St on beachside in NSB, Ciara chose a prime time spot and the response from the patrons has been overwhelming. Ciara specializes in lived-in/ balayage hair, which definitely fits into New Smyrna's surfer vibe. Opening this salon she wanted it to feel like a home for locals. It was a void that was definitely missing from our artistic surf town. She cites that one of here favorite things about New Smyrna is its ability to support their own with endless support from clients and other local business owners. As we sat down with Lexi, it became clear that she truly cares about ever person that walks into her salon. One thing she mentioned that really stuck with us was is when she talked to us about the results of working directly with her clients. Ciara stated - "I am obsessed with making people feel confident because it was something I always struggled with as a kid. I love being able to boost clients confidence and let them leave feeling their most beautiful."

What do you look forward to the most about growing your business? I am most excited about building my dream team and creating a brand here in New Smyrna. What are some upcoming trends? For fall, warm and plum hues are trending. We live in Florida, though, so let’s be honest, blonde & “bronde” are always in! I know that a good relationship with your style is key. What are some tips for the customer to effectively communicate what they want? I tell all of my new clients a photo is worth a thousand words. Giving your stylist a visual of what you want and the tones you like sets you both on the same page for your session. Any last words? Being featured in Fluid Magazine is definitely reinforcing that if you do what you love, people take notice! In this industry, the moment you stop learning, you are already behind. So I am excited to see where this new venture of artist and now owner takes me!

NOV/DEC FISHING OUTLOOK

FISHING REPORT OFFSHORE For all the offshore anglers, the biggest concern are all the elements that are virtually out of our hands. The windy days tend to make everything challenging. Sailfish will still be in the normal areas from 180’- 350’ of water until a few more cold fronts push the bait pods further south. Near shore wrecks from 60’-90’ feet of water will hold a large variety of fish. Kingfish are still plentiful for trolling. Bottom fishing should be very good and a variety of great tasting fish can be caught. We wish red snapper season was longer, there are still plenty of them out there. Triggerfish, lane and mangrove snapper, black sea bass, and large flounder are all possible on these near shore wrecks. Keep a large jig or live bait pitch rod ready for cobia as they are still out there and have been known to follow fish up from the bottom or just come up to the boat to investigate. They fight hard and taste great! Best of luck fellow anglers, get out there and enjoy any time you get off this holiday season.

INSHORE Cooler temperatures should push fish further back into creeks and backwater areas. Fishing will still be productive in the mornings but redfish and trout should also feed into the afternoon as the sun warms the water up throughout the day. Freelined mullet will produce the best hits in the back creeks, but fish can also be taken on live shrimp, Gulp baits, DOA’s, and the occasional top water strike. In the backwater, alternative equipment such as paddleboards and kayaks will keep you secluded from the harsh wind that comes as winter approaches. The amount of snook being caught the past few weeks has been pretty outstanding to say the least. We will never have the amount of snook that counties to the south of us have, but we will take whatever we can get. Pitching live and cut bait under docks in the Intracoastal can produce keeper mangrove snapper, trout, reds, and the occasional small grouper. Bigger flounder and sheepshead should also start making there way back into the river. Dock lights will still have some trout on them but the cooler it gets the thicker the bluefish become. Put the time in, the reward will be well worth it!

She then spent the next 4 years completing her doctorate at Nova Southeastern University College of Dental Medicine. Her last 2 years of clinical experience have afforded her with the opportunities of working in community based undeserved clinics, infectious disease clinics, hospital based as well as foster home centered pediatric clinics, and special needs clinics where she treated both the developmentally and physically delayed. We recently sat down with Dr. Adams and Dr. Kassy to hear more about them and their team. Q&A

When it comes to finding the right Dentist, it's all about someone you feel comfortable around and that you can trust. With that being said, we have the perfect candidate who happens to be a very close friend of ours and someone we've known the for over 30 years! Dr. Ben Adams and his team have gain the entire community's support by offering superior services in a clean and friendly environment. Dr. Adams is a native of New Smyrna Beach and feels privileged to have the opportunity to serve the community where he was raised. After receiving his Bachelor of Science degree in Molecular and Microbiology from the University of Central Florida, he attended the prestigious University of Michigan School of Dentistry, where he graduated in the top third of his class. Dr. Kassy Ingram is the newest member of the Ben Adams DDS team. With the continuous growth of his practice, Dr. Adams found the perfect addition for his practice when teaming up with Dr. Ingram. She was born in Puerto Rico and raised in Central Florida. Dr. Ingram's bilingual upbringing has granted her the capacity of broadening her patient care to both

What are some of the keys to overall success for your office? We take pride in having a positive environment for our patients. Visiting the dentist can be anxiety provoking for many people. Some patients are dealing with the stress of unknown oral health, fear of cost and sometimes just general dislike of dental work/visits. If we are able to make an experience at the dentist more enjoyable, I feel that we have succeeded. What makes your practice different from other in the area? We have a good group of dentists in the area and I am proud to be a part of it. At our office we take a patient first approach. Certainly all areas of oral disease will be evaluated and as much information about an individual's oral health will be discussed in detail. But the patient will make the final decisions like, how long appointments will be and which area of treatment to begin with. We make our patients as informed about what is happening as possible. We are also fortunate to have two dentists with similar philosophies on caring for patients. It allows our patients to

have trusted care in a familiar office even if their primary dentist is not available. Having two dentists allows for our practice to benefit from the experience and advancements of both dentists. How many times a year do you recommend visits to the dentist and how can a patient prepare for the visits? This has to be decided for each individual but it is most common to visit the office twice a year for cleanings. If further treatment is required there will need to be additional visits, but the goal will be to only need hygiene/cleaning appointments. Some patients will build up calculus(tarter) more quickly, some have a history of periodontal disease and some have crowded and difficult teeth to clean, all of which may require more frequent cleanings, while others will not even require cleanings 2 times a year. The best way to prepare for a dental visit is to brush and floss your teeth. Routine dental cleanings are a great adjunct but good daily hygiene (brushing twice and flossing once) is the absolute best thing you can do for your oral health. What advice would you give to someone opening up a practice? Listen and learn. Learn from the people who have done this for years. Learn from your trusted colleagues and research about innovation available to improve your practice. Learn from the people you care for. Your patients are your practice and they will give you your best feedback. Any last words? Come and see us. We will do our best to make it a good experience.

What are three items you never leave the dock without? I never leave the dock without my tackle bag, drinking water, and sunglasses. I reckon it’s important to stay hydrated while on the water and, of course, my tackle bag has my leader, pliers, and hooks. As you all know, I fish in Mosquito Lagoon specializing in sight casting redfish, therefor I never leave without my Native Eyewear. What is your favorite species to target? My favorite species to target is Snook. My favorite time to fish for snook is at night under bridges and docks with artificial. This makes it more challenging and fun to catch while watching and feeling them smash a top water. I also love sight casting for Redfish in the grassy flats of Mosquito Lagoon. Preferred Rig? Easy Peasy. Leader to Braid using an F-G Knot depending on my target of species and location. I use a circle hook for live bait but prefer artificial. Why types of fishing charters do you offer? I offer Inshore, Offshore and Nearshore through Back to Blue Outdoors with Captain Shane Ryan. Who is your favorite person to fish with and why? I enjoy fishing by myself but my favorite person to fish with would be my daughter, Star Harlow. There are no words to explain the feeling when watching her eyes light up as she hooks up to a Redfish. She is my mini and has the same passion and love for the water, which makes my heart happy. What attributes separate an OK fishing guide compared to what you would consider a great guide? A great fishing guide is someone who has

experience, passion, and knowledge. Any guide can have the best and most expensive boats, gear, and technology and not be able to give you the best fishing experience. Personality plays just as large of a part as the experience and knowledge of the guide. What do you feel is the biggest challenge with being a guide in our area? I think every area inherently has their challenges, although with the time I have put in these waters you don’t notice them as much. Everyday has different challenges but that’s fishing. Do you have a rival when it comes to fishing competitively? I do not fish competitively, but I also do have complete confidence in my skill. What’s your most embarrassing fishing story/ memory? I guess I would say my most embarrassing fishing experience would be when I was fishing in a boat that wasn’t rigged for fishing. I was setting up a second rod and, as you all know, fish typically hit when you’re not paying attention. The next thing you know the rod was flying out of the boat and I dropped the rig I was working on and leaped in fully clothed after it. I managed to get the rod, but the fish got away. Needless to say we were all laughing for the rest of the day. Where else, besides Florida, have you had the opportunity to fish? Who were the top guys at the inlet back in those days? “Work at play, play at work” would summarize a lot for me, but my favorite bumper sticker comes to mind: “It’s not them!” How long have you been surfing for? After moving from DB Shores I started in 1963 in South Ormond Beach, surfing with the Holby brothers, Mimi and Bruce Munro and bunch of characters, when half the beachfront property south of Granada was still sand dunes. What was it like in the 70's and 80's being a surfer in our area? The 60’s were the most awesome for the freedom and the newness of the whole thing. You knew everyone in the area that surfed. The 70’s was more tribal with people breaking off into their own little clans more. Experimentation was more rampant in board design, substance use, travel and hair length. Everything was still new but it seems like innovations were happening every day. In the early eighties, after twin fins took over, things became more mainstream and commercial.

Who were the top guys at the inlet back in those days? John and Bernie Crouch come to mind first of course, but when I started going more regularly in the 70’s I remember Daytona guys like Bob and Ron Condon, Steve Baker, Chuck Love, Pat Altez. Ronnie Rannie and Rick Tresher were ripping. My good friend, Mike Kitaif, was one the best in the world on a fish. In the 80’s one of the best goofies was Tom Barrett, and 80’s and 90’s, of course, Scottie Brill. If you can go back 40 years what advice would you give yourself? Well, I was kinda shy and I had to move to Orlando to go to high school. After moving back, it didn’t help being the new guy, in a way, again. I tell myself stop worrying trying to be cool, get to know people and travel and to cherish surfing for the awesome gift that it is. What is the biggest difference now and when you were growing up in the Daytona Beach area? So many people now! When I started surfing there were only 2 public high schools and Father Lopez Catholic school. You kinda knew everybody in town or knew someone that knew someone. At 12 I was one of the youngest surfers in town. Parents were almost never at the beach, supporting, coaching their kids. Surfers were a small tribe. Development was less and sand dunes were everywhere, and you could walk on them! Imagine that! Favorite surf break on the East Coast and why? We don’t realize how lucky we are to live near

Ponce De Leon Inlet! NSB is probably the most consistent wave ever, but Ponce is the most special to me not only because of wave quality, but also the whole natural environment. Tell us about your passion for art? I’ve always had a talent and love for art and being able to do a lot of different types of art has allowed me a pretty free lifestyle and keeps work interesting. What is our youth lacking? Now I know what “youth is wasted on the young” means. Some are living it to the fullest, but generally, many are spending way too much time worrying about what others think and not getting out there and looking for new positive experiences. You have to have a strong foundation and belief in God. What is the best traveling experience in your life? It’s a toss-up: moving to Oahu in the late 70’s for almost 3 years and working and surfing alongside some legendary guys, both on the North Shore and in Town. Discovering a few new waves in the Caribbean in 1981 was super fun, and my first trip to Costa Rica for a month in 1973, when very few people had even heard of it. Our rent for one month was 60 bucks US, split 3 ways, and the locals we made friends with told us we got ripped off! Thanks for your time. Any last shout outs or thank yous?
