BERRY TRIFLE CAKE

Enjoy a classic dessert in cake form with this berry trifle cake recipe. A simple berry sponge is topped with silky custard, jelly, almonds and extra berries to create a sweet treat for any occasion INGREDIENTS •1 1/2 cups self-raising flour, sifted • 3/4 cup caster suga • 3/4 cup cream, plus ½ cup extra, whipped • 2 eggs, lightly beaten • 1 tsp vanilla essence • 125g punnet blueberries • 125g punnet raspberries • 2 tbsp plain flour • 250g tub mascarpone • 120g pre-made jelly, chopped • 1/2 cup ready-made custard • fresh berries, toasted flaked almonds, icing sugar to serve

METHOD 1. Preheat oven to moderate, 180°C. Lightly grease and flour a 23cm springform pan. 2. In a bowl, combine flour and sugar. Lightly fold combined cream, eggs and vanilla into dry ingredients. 3.Toss berries in plain flour, shaking off excess. Fold into cake mixture. Pour into pan, smoothing the top. 4. Bake for 50-55 minutes until cooked when tested. Cool in pan for 5 minutes before transferring to a wire rack to cool completely. 5. Spread the top with mascarpone, then scatter with jelly, berries and almonds. Drizzle over custard and dust with icing sugar.

Warmer temperatures lead to oilier skin no matter what the skin type. Switching to a lighter mattifying product may just be your skin needs. • Hydrate, hydrate, hydrate - not only will your skin reap the benefits of a greater water intake, but your body will thank you for it.

Whipped Grapefruit Mint Sugar Scrub Ingredients ½ Cup Coconut Oil ½ Cup White Sugar Zest of 1 Grapefruit 1 Tbsp Grapefruit Juice 10 drops Peppermint Oil 25 drops Grapefruit Oil ¼ tsp Beet Juice Instructions 1. Place the firm coconut oil and white sugar in the bowl of a stand mixer fitted with a paddle attachment. 2. Mix together on low speed, until a thick paste is formed. Add the grapefruit zest, grapefruit juice, peppermint and grapefruit oil, and beet juice, if desired, to the mixture. 3. Mix on low until incorporated and then turn the speed up to medium for about 20 seconds, or until mixture is well blended and fluffy. Store in an air-tight glass jar in the refrigerator.

World Tourism Day, 27 September 2017 : Be a responsible traveller.

On World Tourism Day, Globetrotters are being challenged to be responsible, mindful travelers at a time when the news cycle seems be peppered with stories of tourists behaving badly.

Sustainable tourism is defined as tourism that takes full account of its current and future economic, social and environmental impacts, addressing the needs of visitors, the industry, the environment and host communities. It should thus make optimal use of environmental resources, respect host communities and ensure viable, long-term economic operations so that benefits are equitably distributed among all stakeholders.

According to the Federated Hospitality Association of South Africa (FEDHASA), its members are committed to practisingsustainable tourism and adhering to the United Nations' World Tourism Organisation's (UNWTO) mandate. This, as the country, celebrates World Tourism Day. The UNWTO seeks to promote responsible, sustainable and universally accessible tourism and to further position it as the driver of economic growth, inclusive development and environmental sustainability. The UNWTO declared 2017 as the Year of Sustainable Tourism FEDHASA CEO, Tshifhiwa Tshivhengwa says the association’s members have a duty to uphold sustainable tourism within their establishments and adds that measures have been put in place to ensure they stick to the UNWTO’s list of environmentally sustainable tourism guidelines “As the lobbying body for the hospitality industry in the country, we need to make a concerted effort to ensure that our members support sustainable and responsible tourism in practice,” Tshivhengwa says. He was speaking ahead of World Tourism Day on Wednesday, 27 September.

Operating sustainably

To operate sustainably, minimising waste, conserving water and reducing an establishment’s carbon footprint are three top priorities for SA member establishments. “We need to adapt to the world we live in, which is ever-changing, and its effects on the environment has been unkind. It’s our responsibility to make sure we enforce efforts that will both benefit the environment, our establishments, as well as our guests,” he says Since energy and water usage fit into the high consumption category for hotels, Tshivhengwa says in order for member establishments to comply with sustainable tourism guidelines, establishments are encouraged to make use of solar panel heating, as well as energy-saver bulbs to decrease the use of electricity. “These are merely two methods hoteliers use to cut down on electricity, which was implemented during the country’s power crisis, they are extremely effective and makes a big difference,” says Tshivhengwa. And to save water, Tshivhengwa adds that FEDHASA members should think creatively and out of the box to conserve and preserve the much-needed natural resource. “We need to put tangible measures in place and make sure we stick to them in order to save

water,” he says. He describes Cape Town’s water crisis as a “real disaster” and appealed to establishments in other provinces to continue to follow their water-saving initiatives. Installing water restrictions on shower heads, introducing a grey-water recycling system and even removing bath plugs from bathrooms to discourage guests from taking a bath are just a few initiatives hotels around the country have implemented to become water-smart. “Without water we cease to exist and while we know other provinces are not affected by this crisis, that doesn’t mean it’s not our problem. We need to think ahead and be proactive. It’s a combined effort and is everyone’s responsibility,” Tshivhengwa says. A rather apt metaphor with respect to the world of sport as the loveliest of seasons also brings with it the loveliest of sporting periods. Sure the sporting world never caught a cold during the wintery months but with South Africans taking the world by storm in tennis grand slams, intense FIFA World Cup qualifying fixtures, the best rugby competition in the world and the official start to the cricket season . . . I think it is safe to say that Spring has sprung and the sporting world itself is about to blossom.

TENNIS fans, particularly those across South Africa, would have done well to predict a US Open final between one of the greatest players of all time (Rafael Nadal) and one of Africa’s very own tennis sons, Kevin Anderson.

Instead, the team managed to lose both home and away matches as well as receiving the mind-numbing news that their only win thus far (against Senegal), will have to be replayed due to dodgy refereeing during that fixture. Does this spell the end of our Russia 2018 dreams? It does seem so but as the old saying goes, it isn’t over until that lovely fat old lady has sung. Other matches in the group have actually gone our way and three wins in our final three games (Burkina Faso and Senegal twice) and we could sneak in. Call me the eternal optimist but our country really needs to be represented at next year’s showpiece. I reckon we have had enough bad luck in football and the one nation that the soccer gods need to shine down upon is us. Good luck boys!

Coetzee stated after the game that he was “pleased with a couple of brilliant defensive efforts and a lot of positives that we can still take out of this game”. Are you kidding me sir? Our new sponsor should be Coke ‘ZERO’. The country needs to unite and demand that Coetzee either resign or be dismissed. Bok fans deserve way better. I hate to single out one person but 2016 was more than enough ammunition and this defeat was simply vindication. We have the players and the talent but they are simply not coached properly. Let’s hope that some sense does prevail or things are only going to stay the same or get decidedly worse.

PROTEAS fans can look forward to a new era under the stewardship of West Indian Ottis Gibson. It’s about time that we hired a foreign coach and I am expecting an exciting shake-up in the fortunes of the team. The Bangladesh series should serve as proper stepping-stone for the monster Indian and Australian tours on our shores. Nothing less than a full clean-sweep will do. Sadly though, it has been confirmed that the current team of assistants will stay as is. I was really hoping for a brand new set of batting, bowling and fielding coaches but this will at least be reviewed after the Bangladesh tour. Fans and fellow players would have been relieved to hear that AB de Villiers has pledged his future to the team in all formats. Faf du Plessis will also now steer the team in all three formats and here is hoping Dale Steyn returns. Wishing the men in green the very best for the tough summer ahead. OCTOBER will see the conclusion of the Rugby Championship, the Champions League and all football leagues around the globe in full swing; the Malaysian, Japanese, American and Mexican Grand Prix’ (phew!) and crucial FIFA World Cup qualifiers.
