Alas, it is not he who writes this opening page – for you see it would appear that D’Arcy has found his Miss Bennet. It is I, his surrogate compiler/editor/writer/puppet, who writes to confirm that the old cad has wed and is currently enjoying the blissful surrounds of a far-flung country for his honeymoon. Aw. We should note that at this point, unlike Jane Austen’s classic, Mr D’Arcy’s first name is not Fitzwilliam, nor is his bride actually called Elizabeth Bennet. Your Community News PAINT FLEET PINK IN OCTOBER
Fleet goes pink next month (10th - 17th October) for a week of fun and fundraising in support of the Frimley Park Hospital Breast Care Appeal. Residents, businesses, clubs, societies, shops and schools are invited to put on their own fundraising events during the week, donating raffle prizes, services, attending one of the many events going on during the week or just donating to one of the collection boxes around the town. Events planned so far include a Pink Salsa night at El Castello restaurant, Bollywood Night at WE, a Fashion Show by Emma at Experience, a Trip Down Memory Lane talk and Ladies in Red singers, Afternoon Tea at the Four Seasons Hotel
including a talk by a fashion stylist and a shopping evening at Sugarplum boutique. And all this kicks off in the Hart Centre on Saturday 10th October at 10am. The Breast Care Appeal is for a dedicated Breast unit that will provide a more personal and dignified form of care for people at a very vulnerable time in their lives. A 3D mammography scanner which will enable the Breast team to diagnose Cancer earlier and with greater accuracy. The team see 6,000 people a year with the incidence of breast cancer in Hampshire, Surrey and Berkshire is higher than the national average. From 2009 to 2012 the number of Breast cancers diagnosed at Frimley increased by 25%.

EXHIBITION - THE WOMEN OF SURREY HEATH SATURDAY 5TH SEPTEMBER - SATURDAY 31ST OCTOBER | ENTRY: FREE This exhibition documents the extraordinary wealth of famous, talented and interesting females to have come out of Surrey Heath. Find out more about the female characters locally and their impact on society. One such lady was English composer and a prominent member of the women’s suffrage movement, Dame Ethel Mary Smyth, pictured right. Smyth was born in London but lived at Frimhurst, near Frimley Green for many years. From 1913 onwards, she began gradually to lose her hearing and managed to complete
only four more ma jor works before deafness brought her composing career to an end. However, her uncompromising and energetic spirit led her to become a driving force, alongside Emily Pankhurst, in the women’s movement and her battle song The March of the Women, was sung by suffragettes throughout London. Learn about more other fascinating lives at this unmissable exhibition this autumn.

COFFEE FOR A CAUSE: MACMILLAN COFFEE MORNING UK RETURNS OF 25TH SEPTEMBER
FARNBOROUGH VOLUNTEER RECEIVES THE RUSHMOOR COMMUNITY AWARD 2015
On Friday 25th September, people all over Surrey and the UK will be raising a mug in aid of Macmillan Cancer Care. The World’s Biggest Coffee Morning is Macmillan’s biggest fundraising event for people facing cancer. They ask people from all over the UK to host their own Coffee Mornings and donations on the day are made to Macmillan. Last year alone they raised £25 million and this year are aiming to raise even more. The first ever Coffee Morning happened back in 1990. The idea was simple: a few guests would gather over coffee and donate the cost of their cuppa to Macmillan in the process. It was so effective, the charity repeated it again the next year – only this time nationally. Since then, Coffee Morning has raised over £138 million for Macmillan. With thousands of coffee mornings taking place, you’re bound to find one near you.

£90M COUNTY PROJECT TO REVAMP NORTH HAMPSHIRE SCHOOLS Several schools across North Hampshire are seeing sweeping expansion projects in order to improve facilities and provide much needed extra spaces. Projects are currently taking place in Aldershot, Hook, Hartley Wintney and Cove, with others set to follow in Odiham and Yateley. £10m is already being spent on Greenfields Junior School in Hartley Wintney as part of an £18m investment to increase the number of school places available in northeast Hampshire. The local authority’s schools programme, totalling more than £90m in value, looks set to be completed over the next three years and provide nearly 5,000 places. Four new schools are included in the
programme, including the David Kirk Academy being built in Aldershot as part of the Wellesley development, a year-long project starting in late 2016. Other schemes include a £4.42m project to expand Buryfields Infant and Mayhill Junior School in Odiham to three-form entry, as well as adding primary places in Yateley and Frogmore. These investments are part of the county’s strategy to provide more than 11,000 new primary school places across the county by 2018. Cllr Peter Edgar, executive member for education, said the investment was “excellent news for the county’s children and for our economy”.
TROUBLED BLACKWATER PUB TO GET NEW LEASE OF LIFE AS A VETS The Canterbury’s pub could become a veterinary centre specialising in the treatment of small pets with complex medical problems, cancer and associated surgery. The former pub, which has been empty since 2008, is the subject of a bid being considered by Hart District Council which could see the site turned into a centre that would include three consulting rooms, specialist recovery, sleeping, operating and administration rooms, and welfare areas for staff and petowners. There will also be parking
for about 17 cars. A former ‘problem’ pub, the Canterbury’s was closed in 2008 following a public order incident involving two men who allegedly attacked another person in the pub with a baseball bat and a firearm. Another incident at the pub involving a firearm had occurred only a year before. If approved by the council, the building would likely be demolished and the new centre built to replace it.
Farnborough’s most dedicated volunteer, joy Cross, has been recognised with the Rushmoor Community Award for 2015, in recognition of her years of service to the community. The Rushmoor Community Award is an annual award, organised by Rushmoor Borough Council, to recognise local people who have made a significant contribution to the community. Joy has been volunteering for many years as a supporter of the Community Matters Partnership Project and is an active member of the Cove Brook Greenway group. She is also well-known for her fundraising activities for charity. These activities include organising many events, raising thousands of pounds for local charities, including the Gaming Zone, Frimley Park Hospital’s Breast Care Appeal and for Parity for Disability. One of the many successful events was a ‘Ground Force’ style event to transform a garden at Wavell School in Farnborough. Joy has also collected more than 2,000 bras to raise funds for the Hampshire and Isle of Wight Air Ambulance charity since 2011. Joy was nominated for the award by Christine Eustace, Director of Community Engagement at The Sixth Form College, Farnborough, who said: “Joy will always go out of her way to support a cause that touches her. This might be the plight of a young person who needs to get back on the road to success, or the state of the Cove Brook which, when cleared, is a wonderful resource for all to use. Joy is a prime example of a person who never sits back and waits for somebody else to pick up the gauntlet - she truly cares and considers the community she lives and works in.” On presenting Joy with the award the Mayor of Farnborough, Cllr Martin Tenant, said: “These awards give us the opportunity to acknowledge the efforts of people like Joy. We are delighted to be able to give her this award and to officially thank her for her commitment to helping others and for her dedicated voluntary service and fundraising efforts.”

HOW YOU CAN HELP
As you may well be aware, we at The Guide 2 have been covering Surrey Search and Rescue as our designated Charity for 2015. We’ve looked at what they do, who they help and just how important they are. But the one thing we haven’t yet told you, reader, is how you can help. So here’s a little guide giving you, the good people of Surrey and the surrounding areas, a chance to be a part of the good work they do… Surrey Search and Rescue is entirely staffed by volunteers and relies completely on donations in order to procure equipment and run.

If you are a local business owner, you will know the important part you play in the local economy, as well as how important it is for your business to give back to the community. You can help by opting to have a team sponsored activity (Bob from accounts could jump out of a plane for charity), or your staff could contact Surrey Search and Rescue and volunteer their time to hide for Search Dog training. It could even be as simple as having a collection tin on your counter. It all adds up…
Helping kids understand the dangers of water and remote areas gives them the tools to use those areas safely. The team is always happy to talk to future generations of Search Technicians about the exciting and rewarding work they do.
Event Managers: It is important to remember that Surrey Search and Rescue are professionals and their array of expertise is for hire. If you’re looking for First Aid cover at an event or looking for Marshals then SurSAR can help out. Their water team regular provides safety cover for water events, so be sure to contact them and see how they can help. Speaking of the water team, if you have an office by a large body of water, you can get the team to come in and provide training with rescue equipment such as throw lines. This provides great piece of mind, with staff spending lunch breaks by the rivers and lakes that are by work places around the county.

And Finally Dog Owners: The time it takes to train a search dog is not as long as you think; but we all know that a dog’s working life is sadly not as long as ours. The team’s dogs are some of the best dogs in the country but to the dog, it’s all a game; all for a ball…

Care in the Community With winter fast approaching, a familiar topic returns to the spotlight – just how well do we treat the elderly in our community?
I
t’s now well known that, in the UK as a whole, the collective population is aging. Over the period from 1985 to 2010 the number of people aged 65 and over in the UK increased by 20% to 10.3 million. Surrey reflects this trend, with 18.05% of the county’s population aged 65 and over in 2013, in comparison to England estimates of 17.43%. The politics of how we are equipped to deal with a steadily aging populous has been well-discussed; but what about how to take care of our elderly nearest and dearest? The fact is that the Surrey population aged 70 and over is set to explode in the coming years, with the subsequent health-related issues likely to put a massive strain on resources. We in Surrey are fortunate in that, as an affluent county, there are numerous care homes in which to help out. But we can do more to help the aging population of Surrey and
beyond in other ways too. In recent months we at TGHQ have been emphasising the importance of volunteering – so why not do so at a care home? Many of the care homes in the area would appreciate people offering some of their free time to aid them. Young people can do so for work experience or Duke of Edinburgh Awards schemes too. The work of Age UK Surrey could not happen without the group of dedicated volunteers of all ages. These people are involved in every aspect of their work in providing care and opportunities for older people to make their lives better and easier. THOMAS HOWARD Last month we learnt all about the Warennes, which got me wondering about other blue-blood types our county has. Then I found out that The Earl of Surrey is in Norfolk. Heraldry makes about as much sense as a lion getting more press than a despotic dictator in the same country. But I digress…
Back in the day, the Earl of Surrey was a good and loyal man. In 1485 Henry Tudor decided he fancied a bit of kingly action and took hold of these fair isles by way of Wales. At this time the Earl of Surrey was Thomas. Tommy, being a team player got his crew together and headed out to join up with King Richard III (body in Car Park geezer) for a good old fashioned ruck. Tom took up position on the right flank and got stuck in. However, the battle was not too old when Tom was wounded and CASEVAC’d back to the historical equivalent of a field hospital; think more leeches and moss than Ceelox and Israeli Bandages. Having seen this movie, we know that Richard ended up brown bread, so Tom stuck to the usual response of the time; he did legs. Even without the help of the world’s biggest network of CCTV, he was caught fairly quickly. Meanwhile, the new King Henry was busy telling parliament that he wanted the date of the start of his reign to be the day before the battle. This way, everyone who backed NCP spokesperson Ricardo would be guilty of treason, so he could hack all their heads off and start afresh with a new (and now slightly intimidated) bunch of Lords and Earls. Parliament, being
that wonderful and bureaucratic animal that it still is, told him to do one and made the official start date the day after the battle. Still, everyone had to go to the new Headmaster’s office and explain themselves and when it was old Tommy’s turn he pointed out that he was loyal to the King, whoever that was. We salute the rank, not the man as it were. Luckily for Tom, he was a popular chap and that coupled with the fact that he clearly wasn’t a complete twit meant that Henners decided to send him up North to police the Scottish border and keep the White Walkers out. Basically, stay the **** out of the way. A few (cold) years later Tom was still there doing a pretty good job at the tender age of 70, fuelled by loyalty and Chips & Gravy. By then the old Sperminator himself, Henry VIII, was on the throne and decided to have a crack at France. King James IV of Scotland thought this was a good opportunity to have a go at invading England, so it was left up to Tom and his missmatched band of Night’s Watch types to defend the land. Which they did good-style in September of that year at a place called at Flodden Field. When I say he beat the Scots, I mean he opened up
a whole truck-load of Whoopass. Post-match scores for Scotland were not good: King James dead, 7 big league clan chiefs dead, 33 pretty big time Lords dead, loads of knights dead. Oh and add to that about 10,000 soldiers too. Proper decisive result. Understandably, Henry was deeply impressed and made Tom the Duke of Norfolk which was a good promotion. And from that day to this, the title of Earl of Surrey is given to eldest son of the Duke of Norfolk. The things you learn…

The thread festival (lower case letters deliberate) returns for its third year at Farnham Maltings showcasing the many and varied ways of interpreting and working with textiles. Having begun in 2013, ‘thread…a festival of textiles’ is now one of the Maltings’ biggest craft events. This year’s programme includes specialist workshops and talks from textile designers from across the world as well as an impressive variety of stallholders from all around the country. Ahead of his October visit to Woking as part of the Thirty Years Tour, we conversed about why he started detailing his life, why journals are important and his three decades of published diaries – the Life of Michael, if you will…

You’re coming to Woking as part of your national tour celebrating thirty years of your diaries – but have you always kept a diary? Did you keep a journal as a child or is it something you developed as an adult? Like a lot of people I half-heartedly started to keep a diary at school for a while. My parents always gave me a schoolboy diary which had lots of interesting facts about cricket and bridge building and things like that. It had a little section for each day that I would laboriously fill in for the first couple of months – one I kept right up until May, which was quite a feat – but in the end life would always become too interesting to keep a diary, so it fell by the wayside. I think I always just enjoyed recording things; whenever I travelled I took little notebooks. But it truly began in 1969 when our first son was born. When he was a small lad, about six months old, I was still a heavy smoker. I realised that smoking and little kids weren’t compatible so I virtually quit cold turkey – I got such a surge of willpower that I thought ‘what else can I do?’; so I decided to keep a diary. That was in April 1969, and funnily enough it was a bit of a limbo in my career. I’d been working very hard in comedy shows from ‘65 to ’68, but nothing was really happening at that point: but then Cleese rung up and talked about a new comedy show. So coincidentally writing a diary came about with the start of Monty Python, and I’ve been keeping a diary right up until today…
What kind of diary writer are you? Are you a bullet pointer or do you write a kind of mini-story? It’s a bit of a narrative of the day, so I like to feel it’s telling a kind of story. One thing leads to the other, as though it’s been preordained; of course it’s not like that at all, it’s a series of disconnected events. But I like to describe the main things that I did the day before and it is like telling a bit of a story - and you feel like you have a bit more of a purpose if you’ve written it down! The diary mainly records where I’ve been and I try and keep a balance between family and work; sometimes external things come into play, though far less than one might imagine. Food and drink – there’s always rather too much of. I’ve published diaries before and people say ‘all you do is drink and eat!’ but I’ve been lucky. A lot of our work from Python onwards was done over a glass of wine or beer and a meal – that’s part of it!
Naturally, diaries hold intimate insights into the author’s character to those reading it, but they also offer the author themselves an opportunity to reflect. Has there even been a moment that you’ve read back and had it really flood back as if it was happening again – joy, regret or sadness? A lot of interesting entries were around moments where I lost people I was very fond of, like my mum or [fellow Monty Python member] Graham Chapman or my sister. I kept these in my diary because I felt that it was really important to try and mark those moments by recording my own feelings. It’s most interesting how grief hits you, and very often it isn’t straight away; initially you can be very practical. But suddenly there may be a moment that you will find something that reminds you, in a very poignant way, that the person you’re fond of is no longer there. It was times like that that I thought that my recollections would have been rather fuzzy without the diary. But it’s work you’ve done too. When you’re filming shows such as GBH - which was a very long series I did for channel 4 in 1991 – it was a good piece of work and I was very proud of it. But I look back and I think of all the obstacles I was putting in my way – ‘can I do this, am I doing this right?’ – and it was interesting to see that one didn’t just waltz into it and it wasn’t just another job. Each one required some soul-searching before you got it right. That’s in pretty much everything I do. I think one thinks that you get used to it, but you don’t really – it’s the same process each time you take on anything.
In tandem with the release of your book on tour, on your website themichaelpalin.com you’ve launched ‘Diary Corner’ offering advice and tips for fellow journal writers – is this an agony uncle type role you’re embarking on?! *Laughs* Well it’s trying to publicise the joys of keeping a diary really! Well, not just the joys; when I began, I just remember that it was difficult and I kept thinking ‘Am I really going to write this down?!’ But after a couple of years or so it becomes a habit and now it’s something that I can’t begin my day without – recording the day before.
So finally, in your own words – why keep a diary? I’ve just found it so useful to have that material there. I think for future historians, looking back on our time to get people’s everyday story through their diaries would be an incredibly important resource.
But also, it’s pleasant to do – I value my time more, because I consider what I’ve done with it and days don’t go back into a complete fog. You can actually say ‘on this day I did that’ and it reminds you in an honest way about what really happened. You tend to look back at events happening in a smooth curve, but it’s actually lots of ups and downs and blips on the grass. It’s done a lot for me; I feel the balance of my life has been much improved by keeping a diary. So I’m just trying to tell others that I think that a diary – and I don’t mean a blog, I mean your own personal thoughts that you write by hand – you’re not necessarily going to show it to anybody, which is important. Nowadays we feel that we must lay out everything straight away; with a diary you can do that and look back over the years. And then you can say ‘God yes, I got that wrong, I got this wrong, I’m glad I never told anybody about that!’ *Laughs*

WHERE TO EAT: WHEELER’S “If you’re after modern British cooking with just enough retro spin, you can find it in happy abundance at Wheeler’s”
By Rich Lee A Marco Pierre White restaurant in leafy Yateley, but does Wheeler’s of St James’s offer a taste of the great chef ’s genius? There was only one way to find out…
W
ith a name loaded with as much gastronomic currency as Marco Pierre White’s etched figuratively above the door, a restaurant like Wheeler’s of St James’s carries a lot of weight, if not expectation. That said, these days the legendary chef and restauranteur seems to lurch between ubiquitous media saturation and where’d-he-go inconspicuousness like he’s been at the cooking wine too often. In between, he (or his people) continues to push his brand down any avenue it can find traction: MPW oyster bars, bars & grills and New York Italians among them. Still, while others in his family of Wheeler’s Inns haven’t fared quite so well, his restaurant adjoined to the Casa Hotel in Yateley is still going after four years. Whether that’s down to the steely guidance of Marco himself is doubtful, but if a menu has even a whiff of the great man’s fading genius then it’s a menu I’m only too eager to experience.
The dining room at Wheeler’s is, well, let’s say relaxed and pleasant in a kind of fusty gentlemen’s club sense. There is character to be found here certainly, beneath the dark timber beams, panelled walls and low ceilings that hark back to the building’s days as a 17th century hunting lodge. There’s charm too, if you look for it, in the diverting cartoons framed and hung all around the restaurant, there to gently rib the patron chef and, bizarrely, politicians that haven’t known a lick of relevance since Spitting Image was doing the rounds. Sadly, it’s clear that Wheeler’s could use some relevance itself, a little TLC to entice it out of the eighties and into the 10’s. It’s a sentiment certainly shared by Wheeler’s friendly new manager Rick, who assures us a refurb is on its way very soon alongside some other much needed contemporary touches he’s eager to implement. At table level at least none of that really
matters, as everything else is crisp and clean and ready to fete visitors like us with a meal fit - presumably- for Marco himself. The easy manner of Wheeler’s staff help to breathe a little welcome life into the restaurant, as do, it should be said, some excellent house cocktails. Starters then, and a dish of ham hock terrine, dressed daintily with micro herbs, dabs of carrot and apple puree, slivers of radish and two orbs of goldencrumbed sweet black pudding, could not disguise the brute pleasure of the coarse, salty brick of pressed meat beneath - a rudely gratifying rustic starter given just the right amount of flair. Pan-kissed leaves of tender monkfish tail (fish being synonymous with the Wheeler’s brand dating back to 1856), sat over wilted spinach and shitake mushrooms, came topped in a vanilla foam that gently fused the flavours of ocean and earth together into something

S OF ST JAMES’S, YATELEY subtle and a little bit wonderful. The sautéed king prawns, good as they were, enjoyed the company of a little crispy squid and the sharp, fruity pop from sweetened blueberries, all atop a silky sweetcorn puree that was possibly, for those brief few minutes, my new favourite sauce, coming across like a sweet vegetable custard (though way better than that sounds.) With the end of summer almost near, and thoughts of autumn indulgence making themselves keenly felt, I chose to get the jump on the season with a choice of mains that promised an early, earthy hit. And so it was, with a juicy lamb rump cooked to a pretty blush over creamed savoy spinach, braised baby shallots and a rich, glossy jus. But surprises came with a generous smear of fragrant, creamy white truffle and aubergine puree and a happy, flavoursome little pastry stuffed with wild mushroom and kidney. Across from this was a dish of chicken ballotine, rolled around spinach and wrapped in Parma ham, accompanied by glistening piles of sautéed veg and a streak of garden fresh pea puree. If you were looking for modern British cooking with just enough retro spin, you’ll find it in happy abundance at Wheeler’s. To prove the point: a little patisserie by way of a classic raspberry mille-feuille, all lusciously smooth orange mascarpone cream sandwiched between delicate, biscuity pastry festooned with plump fruit. An intriguing sounding ‘Diplomat Cake’, a from-back-home speciality of Romanian chef Marius, turned out delightful; a triangle of thick set custard suspending berries, sponge and all coated in meringue, like an English trifle that had grown up and got itself kids and a mortgage. All of which is to say that the kind of cooking happening at Wheeler’s of St James’s is really, you know, rather good; an enticing blend of the familiar and the unusual, rolled together to make a meal you’ll be thinking

about for some days afterwards. If the promised refurbishment actually transpires then the food at Wheeler’s could soon have the setting it truly deserves. Until then, should Marco Pierre White himself actually happen to read this, then rest assured Chef, your restaurant at Yateley is in good hands. Now get back in the kitchen.

He was the ‘punk rock baker’ tipped for success on television phenomenon the Great British Bake Off, but Stu Henshall’s elaborate efforts in the first heat met with an early, bitter defeat. Not to be held back, the Guildford-based musician and married father of two extols his passion and formidable talent for food on his fantastic blog, the Alternative Kitchen. We spoke to Stu about his Bake Off experience and his unique approach to cooking…
Punk Rock to cookery - which came first? I have always been a big fan of filling my face with goodies, and leftovers from my mum’s restaurant as a kid, but the music bug took hold at ten and became the obsession for the next twenty years. The food bug followed in my twenties when I moved away from homecooked meals and the need to feed myself became a necessity. I then realised how much I loved the preparation almost as much as consuming the results. Over the next ten years my love of baking and cooking acted as relief after hours in the studio. How did you get chosen for the Great British Bake Off? I had a gap in my touring schedule when the deadline was coming up so I thought I’d take a punt and apply. My sisters, various friends, and colleagues had been pestering me to do it, so I thought it would get them off my back. And then I got the call for a phone interview. After that there were many stages of auditions. I understand that thousands applied so I am made up I made it into the tent. Having met the judges Paul Hollywood and Mary Berry, and hosts Mel & Sue, how have they surprised you in real life? Amazing meeting those guys. I was actually
terrified of Mary Berry. I wanted her to be pleasantly surprised by my bakes. Nervewracking. Sue and Mel are unbelievably genuine and twice as awesome as they come across. Had a few good chats with Sue about tats and Mel was great at putting you at ease. Paul’s like a good cookie. Hard on the outside but soft on the inside. He’s a pretty cool guy really. Were you at all prepared to leave the show so early? I went into the competition to try and shake things up by putting an ‘alternative’ twist on the classics. I didn’t think my appearance would be limited to the one weekend at all but the judgement didn’t go my way and I’ve got to respect their decision. Where did your gateaux go wrong for you on the show? They really didn’t dig my addition of beetroot but I didn’t want to soak the sponges in kirsch. I think it works really well and no odder than carrot in a cake but they weren’t keen. What creations did you have planned for further along in the series? I had an arsenal of oddities that I was looking forward to showing them like Chorizo, Orange, and Black Olive Biscotti but

What have you taken from your experience on the Great British Bake Off? So much but mainly that I know I deserved to be there and that I may have a little proving to do. Watch this space!
As a Guildfordian, what are your impressions of the food scene around here and where do you like to eat out? You know what, more and more food festivals are springing up and I love the farmers market in Guildford for all the little independent bakers and grocers. It is tough for the independents to get a look in on the high street due to high rates and chain completion, but there are a couple that are great like Al Vicolo (Swan Lane).
What’s the idea behind your blog The Alternative Kitchen? Making up recipes is much like writing a song. There are similar components to both but what makes them original is pulling your inspirations and applying them. The Alternative Kitchen is a place I can put my recipes up for people to try

STU HENSHALL’S PEANUT BUTTER AND HONEY CINNAMON ROLLS RECIPE Buttery Danish Pastry filled with crunchy peanut butter and orange blossom honey with a sharp lemon icing Prep time: 12 hrs | Cooking time: 20 mins

500g Strong white bread flour 10g Sea salt 80g Caster sugar 10g Fast action yeast 2 count Medium eggs beaten 125 ml water 250g Cold unsalted butter

250 g Crunchy peanut butter 250 g Honey (I used orange blossom honey) 2 tbsp Ground Cinnamon 1 count Medium egg beaten 1 count Lemon juiced 1 cup Icing sugar
Method: The Pastry
The Filling

Add flour to a large bowl, place salt and sugar on one side and yeast on the other
•
Roll the pastry out to 80cm long, this time with the long side facing you, and 25cm wide
•
In a jug add milk and water, zap in a microwave until lukewarm, and add beaten eggs
•
•
With a hand mixer slowly add wet ingredients to dry. Once combined increase speed and mix for 5 minutes
Dust the cinnamon over the pastry, mix the honey and peanut butter, and spread over pastry leaving a cm closest to you
•
Turn out onto a lightly floured surface and roll into an oblong ball, place in a plastic bag and put in the fridge for one hour
•
Roll the pastry away from you into a large roll
•
•
Between two 80cm long pieces of grease proof paper bash your butter into a rectangle of 20cm by 40cm
Slowly cut the roll into 5cm segments and place on two large baking trays leaving space to grow
•
Remove your dough from the fridge and roll out to a 22cm by 60cm rectangle with the short side facing you
•
Leave to prove for half an hour, brush with egg wash, and bake at 170°C for 20 minutes
•
Place the butter on the two thirds closest to you and fold the uncovered third at the top towards you and then fold the edge closest to you over the top. Pinch the sides together and return to the bag and then the fridge for an hour. This is a single book turn don’t you know!

Remove the dough from fridge and with the short edge facing you roll the dough to the same 20cm by 60cm rectangle as before. Complete another single turn and repeat this step twice more
Once cooled add enough icing sugar to the juice of one lemon to thick pouring consistency and ice the rolls. If you can wait for icing set then you are a better person than me

After the final turn return to the fridge overnight or for at least 8 hours
The pastry recipe makes 1kg of pastry. You can always come up with your own filling and/or shape the pastry into any other shape. More ideas to follow.

NEHE MILNER-SKUDDER (New Zealand) Played a big part in the Hurricanes making the Super 15 final and with Israel Dagg having struggled for fitness and form this year, the uncapped 24-year-old could be a bolter for the 15 spot. Test Dummy: Bikram Yoga

“Tayler will do it” followed by a chorus of laughter is the one thing that makes my heart sink onto my intestines when I’m at work. It usually means someone’s found a weird, humiliating activity for tubby little me to try so they can then laugh at the photos afterwards. I know their game. I don’t mind being the idiot of the office, the dancing monkey, the sport moron. Heck, I don’t mind making an idiot of myself; as long as the office morale is high, then we’re all winners in my eyes. As luck had it, I was right. “Tayler will do it” was in fact followed by “Tayler, you’re doing Bikram Yoga”. That was then followed by a swift Google by yours truly followed by my head in my hands and a quick cry. Before I started working here, my knowledge of Fleet was just the service station on the M3 with a nifty footbridge that takes you from McDonalds to KFC. It turns out, though, there’s far more - a real place, with real houses and real people. And a yoga centre.
For those not familiar with Bikram Yoga, it is a type of hatha yoga characterized by a set series of postures and breathing exercises (usually twenty-six in the series), performed in a room heated to a very high temperature (40 degrees plus). After a short train journey, I arrived in Fleet. I made my way to yoga, via Starbucks and, as is normal practice, signed some forms confirming I was totally “fit and healthy” and if anything happened to me during the class – fainting, vomiting, crying etc. - it would be on my back. I slipped into the shortest pair of shorts I could find, flung on a grey t-shirt (that I later regretted for reasons I’ll later explain) and strolled on into a packed, sweaty class. Three key things to have with you are: A bottle of water, a towel and, ideally, a fan, although the latter isn’t specified on their website. Nonetheless, we began by stretching and easing our bodies into the hour-and-a-half of bending and twisting we had to follow. Our breathing was dictated by our instructor, who counted us in and out. To say it was soothing is an understatement – my eyes just rolled at the thought of it.

As we began tackling the twenty-six postures, the heat began to take its toll and by the sixth, I’d already lost a stone. Sweat was pouring from my nose like a salty sweat dispenser and my legs were reminiscent of a new born deer’s. Half-hour in and I took my first break. Being a footballer, my hamstrings are delicate and when stretched to new, unmet positions, a ping and snap was millimetres away. After a brief breather and a close-encounter with sleep, I continued to plug away at some truly unimaginable positions. Elegant, angelic and god-like are just three adjectives on-lookers would’ve probably described me as. The elegance soon turned to struggle as the class drew to a close, with my breathers becoming longer and evermore frequent. The earlier-mentioned grey t-shirt I decided to wear
did nothing to help my physical state also, with large patches of sweat becoming glaringly obvious all over my torso. After clock-watching for the final ten minutes, we began our warm-down – my favourite part of the session. As I laid on my mat I felt in ecstasy, it was as if I was laying on top of a cloud – a cloud covered in sweat and searing heat. But I had enjoyed it. Post-shower I felt refreshed and I felt cleansed. Yes, I get sent to strange and wonderful activities all over our county, but I can say with my sweaty hand on my heart, Bikram Yoga is the most satisfying Test Dummy yet.

SURREY SPORTS PARK: Surrey Scorchers open their campaign against Bristol Flyers on September 19th Surrey Scorchers are the brand new basketball team, owned and managed by Surrey Sports Park. Their previous incarnation as Surrey United had a disappointing 2014/15 season, finishing bottom of the British Basketball League (BBL). ormer Surrey/Guildford Heat Coach Creon Raftopoulos will lead the new Surrey Sports Park franchise in its maiden season. The Zimbabwean led Guildford Heat to three consecutive play-off runs and, in his final season, secured the club’s best ever BBL finish of fourth, took Heat to the play-off semi-final and the Trophy quarter-finals. Creon returns after a two season hiatus, in which time he turned his attentions to community development including a role in the successful Walking Basketball project around the country.
“I’ve bought in players that fit my style and ethic. I need players to know that as well as giving me and the team 100%, they need to be dedicated to the community work that comes with it too. “Yes it’s about getting results and doing the best we can in the BBL, but it’s also about getting the community involved, getting them interested in Basketball again. We need to think about the future and hopefully seeing Surrey Scorchers do well will get more people involved and create a long-term plan for the franchise. “But yeah, I’m happy with the squad I’m building and everyone that comes in ticks all the boxes”.

His role will be different to the one he played last season, but it’ll help him and it’ll improve him as a player, I’m sure”.

A big part of playing for us is also doing community work. “Going to schools, doing coaching classes, speaking to the media. It’s about getting the word out there that Surrey Scorchers are here to stay, they’re here for the long-term. “So if someone isn’t dedicated to that and can’t see my vision, it wouldn’t work”.
