airtrade Fortnight returns at the end of February for a celebration of all that is fair in global trade. Whether it’s bananas, chocolate, gold or platinum; everybody deserves fair working and pay conditions - it’s about recognising the work and energy that goes into producing products many of us take for granted. And Following several years of campaigning, the end of 2015 brought with it the recognition that Surrey has long sought after – the award of a Faitrade County status.

Speaking for Surrey Fairtrade, Becca Rowland, said that campaigners are delighted to have reached this milestone. “Many people have worked hard to make this happen. There is growing evidence that sales of Fairtrade products make a positive impact for farmers and workers in poorer countries. Just as farmers here need to be treated fairly, so do the farmers who produce much of our food overseas and one day, I hope, Fairtrade will be the norm, not the exception”. Faith Axten, who is involved Fairtrade Surrey and the coordinator of the Addlestone Fairtrade Town group, is encouraging as many people to get involved with Fairtrade Fortnight in 2016 as possible. “We’ll be having a celebration event for achieving Fairtrade County status next Fairtrade Fortnight. We’ll also be encouraging everyone to sit down for breakfast and stand up for farmers! Fairtrade Fortnight (29 February – 13 March 2016) will be all about breakfasts. Before
you’ve finished eating breakfast in the morning you’ve depended on more than half the world if you’re drinking coffee form Kenya, bananas from Colombia, cocoa from the Ivory Coast, tea from India, sugar from Malawi and juice from Brazilian oranges. We’d love as many people as possible across Surrey to organise breakfast with their friends, their school, their community group or their work colleagues and try and make it a Fairtrade breakfast”. stablished by Camberley woman Carole Ann Cole, the cafe aims to offer support, supplies and a safe haven for homeless people in and around the town centre.
Based just off the A30 at 4th Camberley Scout Hall, 270 London Road, the cafe is open from 10pm 7am. After facing the prospect of having to close, Carole and her local volunteers rallied the community and have secured their location over the winter. Run purely from generous donations from the public, the Cafe provides not only a free hot meal and warm shelter but clean clothes, sleeping bags and bedding for their visitors. Currently the cafe is at capacity for
volunteers but is always in need of essentials such as milk, sugar, tea towels, tupperware tubs (all sizes), large cooking trays (i.e for lasagne, cottage pies etc.), electric convection heaters (for the scout hut), mop and buckets, plastic storage boxes (ideally large ones) and hand towels. The All Night Cafe Team are also looking for businesses to help sponsor their project. Whether it would be a large or small business they would like you to be part of it. THE BIODIVERSITY PLAN

ushmoor Borough Council are preparing a new biodiversity action plan for Rushmoor for 2016-2021. The aim is to provide the framework for initiatives to protect and enhance biodiversity across Aldershot and Farnborough. It will also provide the basis working with the community and the voluntary groups, who will be key partners and to be a clear sign of Rushmoor Borough Councils commitment on biodiversity issues.
The draft biodiversity action plan, produced following a key stakeholder meeting on earlier in 2015, identifies: •
Key habitats in Rushmoor

Priority species associated with different habitats
•
Main threats to local biodiversity
•
Key actions needed to protect and enhance biodiversity
The updated action plan will build upon the work already carried out for the previous plan, which set out strategic local actions, and will provide a more detailed overview of the local environment and the local threats to priority habitats and species. SPONGE INVENTED TO SAVE OUR OCEANS
R
esearchers from Surrey and the Universidade Federal de Pelotas (UFPel) in Brazil have invented a magnetic carbon-based sponge that could revolutionise the way oil spills are recovered. The research, published recently in ‘Nanoscale’, points to a simple, low-cost remedy for dealing with environmental spillages – such as the catastrophic Deepwater Horizon oil spill of 2010 – which devastate the environment and have a huge impact on public health and the local economy. Environmental oil spills are currently dealt with by physically skimming the pollutant off the surface of the water, and then dispersing the remnant with dispersants, which are often toxic. The new magnetic graphene sponge, which was developed in Surrey’s ATI (Advanced Technology Institute), tackles
the problem in a different way. The sponge has tiny iron nanoparticles (minute particles) anchored inside, and uses a mechanism similar to a carbon water filter to absorb the pollutants while allowing water to pass through unhindered. Pellet-sized, the sponge’s structure means that it can contain a large volume of pollutant materials relative to its weight. These pollutants are synthesised using graphene oxide; a cheap and easy way to produce material with exceptional properties. The presence of magnetic nanoparticles in the sponge framework allows the pollutant-laden sponge to simply be picked up using an everyday magnet, after which it can be reused. Professor Ravi Silva, Director of the ATI and co-author of the research paper, said, “The potential applications of our magnetic graphene sponges are significant. They range from important environmental remediation strategies
to fine chemicals and pharmaceuticals. I am happy to see this work, developed through the close ties between our respective research groups, come out of the EPSRC (Engineering and Physical Sciences Research Council) funded Surrey Graphene Centre, where interactions of a collaborative and industrial nature are key to our success.” Dr Neftali Carreño, primary researcher from UFPel commented, “It can be envisioned that three dimensional nanocarbon materials produced using similar fabrication methods can be incorporated with other suitable particles or active molecules for a variety of applications. These could include integrated biological or chemical sensors, as a matrix host for drug delivery systems, as catalyst supports, or even as a component in solar cells.” For more information visit surrey.ac.uk

The Lisa May Foundation was established by John May, past Mayor of Surrey Heath, in memory of his cherished daughter Lisa May who sadly lost her life in Thailand in the Boxing Day Tsunami of 2004.

Initially the charity raised over £80,000 to send direct aid to help redevelop the affected areas of Thailand. Subsequently essential items were and continue to be sent to other areas affected by natural disasters such as Brazil, Haiti, Philippines and most recently of course Nepal. In 2011, after his mayoral year was over, John May wanted to continue his efforts to support some of the small local charities he had met during his year as Mayor of Surrey Heath. So the charity expanded its remit to share funds with some very deserving local causes principally in Surrey, Hampshire and Berkshire. The local charities LMF supports are currently: Parity for Disability, which provides a sought after day services for adults with a range of disabilities; The Prostate Project, a volunteer run charity funding vital research into early diagnosis and treatment of Prostate Cancer. They work closely with Frimley Park Hospital, The Royal Surrey and The University of Surrey where the research lab is based; and Surrey Young Carers, a vital support network for young people aged 18 and
under who care for an adult or sibling with a long-term illness or disability. LMF also share their resources with others too. Looking at just one example, in 2015 the Lisa May Foundation used one of their volunteer’s skills as a budding film presenter,Nick Ransom to offer to make a short video on the work of each of their chosen charities. LMF took Nick to meet all three charities and then together they planned short visits and interviews with each charity and put together a miniseries called “Our Local Heroes”. Each video showcases what each charity does and how the money you donate is put to good use. It allows you a sneak preview into how small charities exist. They captured not just the people who work for the charities but also talked to and brought out the glowing personalities of the people who are under the care of the charities. You can see the videos on the Lisa May Foundation’s YouTube channel.
Despite the relatively small size of the Foundation, it continues to stay true to its roots in disaster relief and will raise awareness and funds for disaster relief globally as and when a direct need for aid arises. On April 25th 2015, when news of the Nepal Earthquake struck, LMF offered their expertise in disaster relief to loyal supporter Dr Kapil Rijal, a local Nepalese dentist with practices in Farnborough and Bracknell. Very quickly a dedicated Nepal Fundraising Appeal was put into place, which allowed Dr Rijal to put together a team of 17 doctors, one nurse and three relief workers who flew out to Nepal to deliver immediate medical and food aid. Once again a series of appeal videos was put together to spread the word; local MPs, schools, and businesses all rallied their resources and came to the aid of LMF and Team 21. To date over £108,000 has been raised to help Nepal. You can still donate at lismayfoundation.org.

EASY CRÊPE RECIPE
Classic crêpes that can be adapted for both sweet and savoury toppings.
Makes 8
• 100g plain flour
• 80g butter
• 2 large eggs
• Lemon wedges, to serve (optional)
• 300ml milk • Pinch of salt
• Granulated sugar, to serve (optional)
1. Pour the flour, eggs, milk and a pinch of salt into a bowl and whisk to a smooth batter. Set aside for 30 mins to rest. 2. Set a medium frying pan or crêpe pan over a medium heat and throw in a knob of butter. When hot, pour a ladleful of batter into the pan and tilt the pan to cover the surface. Cook for 1 min on each side until golden. If you’re feeling brave, toss them in the pan or use a fish slice to turn them. 3. Set aside on a warm plate or in a low oven as you go. Wipe the pan with kitchen paper in between pancakes. 4. Serve with lemon wedges and sugar or your favourite filling. We recommend sliced bananas and whipped cream or chocolate spread and chopped hazelnuts.

• 1 teaspoon of caster sugar
• 1 free-range egg
• 40g butter
• 240g of self-raising flour • Plain yoghurt • Maple syrup • 240ml of milk • ½ teaspoon of salt 1. Put the egg, self-raising flour, milk, salt and sugar into a large bowl and whisk until you get a smooth batter. Gently crush half of the blueberries so that they release a little juice and some of their colour and gently stir them into the batter. Rest for 30 minutes. 2. Put a large frying pan on a medium heat and add half the butter. When the pan is hot and the butter has melted, ladle a portion of the batter into the pan. One ladle will make one portion so cook several at a time if you can. 3. Cook for 1 to 2 minutes turning them over when they start to brown on the bottom. When cooked on both sides, transfer them to a plate, wipe the pan clean with kitchen paper, add the rest of the butter and start again. Repeat until all the batter is used up. 4. To serve, drizzle the pancakes with yoghurt and maple syrup and scatter over the rest of the blueberries.

T
he sumptuous rock ‘n’ soul singer of the sixties hit ‘Shout’, a lady of legendary status who requires little, if any introduction. She has experienced near to her whole lifetime in the music industry and is still serenading audiences the world over with her latest album ‘Making Life Rhyme’. This is Lulu.
You’ve recently released your latest album, you’re about to embark on a nationwide tour, have been in the industry for over 50 years and you still look amazing - how do you do it – what’s the secret? I think a lot of it has to do with how I look after myself. I’ve been around and worked with the best people, the best stylists, the best hairdressers, the best makeup artists - I want to sing till the day I drop and whether you want to or not you have to be interested in taking care of how you look because it’s all part and parcel of it, especially as you get to be as ancient as me. I did the album last year which was the first self-penned album, albeit I didn’t do verse, me, myself and I - it was myself, my brother and then we called in a few really talented people to write on a couple of things with them. My band wanted me to do a blues album and I was like, ‘oh there’s many better blues singers than me’ but they talked me into starting it. I started it because a couple of songs that me and my brother had written. The record company Decca said we like the new stuff better and then I got the best reviews of my whole life – so tell me what that’s all about? It’s great thing right now to have been around as long as I have and to still have a career. I can still do what I love to do and what I really believe I was born to do. And then to have the best reviews and then to do the tour last year… you know it went so well that the promoters said we should do another one this year. It’s starting earlier and is longer than was originally planned because of the demand. It’s great, it’s all good.
The album has had great reviews and you just said that this was the first album that you have penned yourself, do you wish that you had started earlier? Of course, of course. I don’t waste time wishing I should have done this or that. If anybody said to me is there anything you would change in your life
then I think that’s the one thing, I would have started writing earlier. But you never know I may have been absolutely hopeless. But I’m sure if you start young you could only get better. And also if you’re really successful like I have been, I would have then worked with really great people. But there’s no point in moaning about what you didn’t do, just be happy about what you did do. That’s really how I’m living my life right now. I’ve been up, I’ve been down, I’ve been from side to side, post to post and I’m still here. I think I’ve changed without losing myself, it’s almost like finding myself in a weird way. Because I was so young, 15 is very young to be successful – I look at Justin Bieber and all things people say about him, like he’s a bad boy etc. and I look at Britney Spears and how very hard it is to be successful. I know it and I know how lonely it is. I had a really turbulent, violent childhood and I would never talk about it because I was ashamed of it and I thought I was going to be judged as not been good enough. What that led me to do was to be the caretaker of the family, the people pleaser and thinking ‘I’ve got to get things right, if I’m not perfect everything is going to fall apart’, so I became successful at 15, the bread winner at 15, putting people on the payroll and then I’m overly responsible for EVERYBODY and it’s tremendous pressure. I’ve done lots of work to try understand why I am. I think that childhood gave me a lot of drive but now I can talk about things that I was told were secret, that you shouldn’t wash your dirty linen in public, which I still believe because it’s so heavily engrained, but writing now, I’m much more open.
You’ve said that this album sums up what you see as your place in the world – and lyrically it feels like a particularly honest album – to summarise in your own words – how do you see yourself and your position in the industry? Well I think I’m one of the survivors, I don’t know. I’ll never be old, it’s just not
in my internal makeup. They do say that if it’s a person a success at a very young age they stay that age, emotionally I think. It led me to do and deal with things in my life that were immature. I had two marriages; you can’t say it was anyone persons fault, I would say I’m a good picker, they were good guys but we were all immature. But that’s what happens when you come into this industry at a young age -- you think you’re invincible and that the world’s at your feet and that you know it all an yet you’re still frightened and still childish but you’re trying to pretend that you’ve got it all sorted. It’s fascinating journey. I’ve been there, done it, got the t-shirt and I’m still here to tell the story. Even the fact that David (Bowie) died. I think, many years ago if he had died, and I know when john Lennon died it really upset me but I don’t think I allowed myself to feel how I really feel about it, knowing him, knowing his wife and then knowing his son, but when Bowie died I was completely gutted at the end of the day and every night my dreams have not been smooth and I believe that it has an effect on you. All the things that have happened to me on my path when I was young I would stuff them down and say ‘I’m fine, I’m fine’ when you’re not really fine because everything impacts you so it’s great to be aware of those feelings at this point.
You come to Guildford in March – what can the crowd expect? The most important thing when I go to a concert and what I want to hear myself say at the end is, ‘oh that was a great night’. It’s not about going out and signing all the songs from the latest album. I want them all, the old and the new and at the end I want everyone dancing, everyone on their feet.

Something new and rather special is coming to The Lightbox gallery and museum in Woking that will appeal to Surrey foodies far and wide looking for a true dining experience that will last long after 2016 is over. Celebrated chef Aneke Spacie has worked in some of the world’s best Michelin-starred restaurants including Rainer Becker at Zuma, Mark Hix, Alan Bird at the Ivy and Alain Ducasse in New York. Ingredients

11. Pass through a sieve and leave to cool then fill pastry case
10. Add sugar and figs to a heavy based saucepan and bring to a boil and then reduce for 10 minutes until a syrup has formed
Then…
9. Remove beads and bake for another 5 to 10 minutes until golden brown and leave to cool
8. Add baking beads if you have them or rice works just as well and bake for 20 minutes
7. Take some scrunched up grease-proof paper and line filled tart tin. It wants to come up past the pastry
6. After it has cooled, roll pastry out to roughly half a cm, cut out, and line grease a deep tart tin.
5. Preheat your oven at 180/170 fan assisted and crack on with the curd
4. Wrap in cling film and leave in the fridge for half an hour
3. Add a dash of milk if not coming together until you have a ball of dough

If you were in a pinch you could seriously reduce the prep time by picking up some ready rolled sweet shortcrust pastry or, for you purists, you can find my sweet crust recipe below. You could also buy the jam but it’s too easy not to give it go. (I had 300g of figs left over so I flambéed them in honey bourbon and then macerated in an equal weight of sugar for 10 minutes.
A perfect combination of middle eastern sweet flavours in a smooth almond frangipane. Underpinned by sweet fig jam on a buttery base.

hile there are undoubtedly an array of bread makers in Surrey, there are few that are quite as dedicated to their craft as Chalk Hills Bakery.
Nestled in the beautiful Surrey Hills, Chalk Hills bake authentic artisan bread every day in the old Tractor Shed at Priory Farm, South Nutfield and then sell the loaves to local restaurants and to customers from their shop on Bell Street in Reigate. Together with their bakers, Chris and Rosie have been serving amazing breads and pastries since 2010. What they produce: Surrey’s only cheeses – and ruddy good ones too…

ou might not think of the serenity of the Surrey Hills would be the place to create that most moreish of eatables – cheese. However, you’d be very wrong indeed reader, for in these acres of lush greenness lies the brilliant Norbury Blue.
As Surrey’s only cheesemaker, this Dorking-based fromage-former deserves an awful lot of kudos. Located at the foot of Box Hill near Dorking, Neil and Michaela Allam started Norbury Blue in 2001 and have grown in popularity every year since. Their eponymous cheese has gained a huge reputation amongst dairy-lovers; a blue veined cheese with an intense flavour that proves Britain is not confined to the standard (albeit delicious) West Country Cheddar, Red Leicester and Wensleydale.

This flavour is derived from Norbury Blue’s herd of Friesian cows, whom have a rich and diverse diet, and the fact that all the flavours are not cooked out with the commonly used pasteurisation process. The milk is moved from the parlour to the cheese making dairy, a mere thirty meters up the farm yard, where it is then pumped into a 900 litre vat and heated. The moulds are then loaded by hand, salted-washed and transferred into the maturing room where they stay for around four weeks. Et voila – delicious Surrey cheese. As well as the Norbury Blue, there is also Dirty Vicar, a Caerphilly-like cheese with a soft, creamy rind, though in the future you can expect one or two new additions to the fold. In the meantime though, be sure to check out where you can sample Surrey’s only cheese, and follow it up with a knowing nod…

Our Sports Writer Tayler Willson spoke to Harlequins Wing Marland Yarde on Caribbean beaches, the disappointment of missing out on the World Cup squad and finally, again, swapping Surrey Sports Park for Bagshot’s Pennyhill Park ahead of this year’s Six Nations– “The way the country idolised Jonny Wilkinson for that kick in 2003, that’s what sport’s about,” Marland Yarde tells me when I ask him what first drew him into the world of Rugby. “That’s how it all began for me, not specifically the game of rugby itself, but the way a sport can unite a nation, the way it can change an entire nation’s attitude towards something.” Growing up in St Lucia, Yarde had no intention of becoming a professional sportsman. He simply enjoyed playing football on the Caribbean beaches with his friends. At the age of nine he and his parents moved to England where he became heavily involved at sports at school. This is where it began. “A few years after I had moved to England I was offered a place at Queens Park Rangers
Football Club, from there I had my heart set on being a footballer. On the side I’d been playing rugby too and I kind of developed a love for that. I was confused to be honest as it turned out I was pretty good at that too.” “There came a time, though, when I had to choose whether it was going to be rugby or football. I ended up being offered a scholarship and played for England under-16s in rugby – that made my mind up for me, really.” Having worked his way through the England set-up, Stuart Lancaster handed Yarde his first full England cap against Argentina in the summer of 2013 where he was named in the starting XV, scoring two tries in a 51-26 victory. The following summer – after an impressive
domestic campaign for London Irish – he was selected for England’s tour of New Zealand, starting all three tests and scoring two tries. Following a move to Harlequins at the end of the 2013-14 season, Yarde experienced a self-confessed “frustrating year” where a string of injuries saw him miss a large part of the domestic season, thus surrendering his place in the national set-up. Despite making Lancaster’s initial World Cup long list at the end of last year, he eventually missed the final cut. “There’s a part of me that will always be disappointed when I’m not playing for England, and not making the World Cup squad was hard,” he admits upon reflection. “Playing for England is always my main goal, it’s one of the reasons I

You want to play at the highest possible level.” The ultimately disappointing World Cup campaign saw Lancaster step down as head coach in November, before being replaced by Eddie Jones. Despite his omission, Yarde holds no grudges and praised the former coach’s influence on the English game: “I wouldn’t say I’m happy he’s [Stuart Lancaster’s] gone, I think it’d be wrong to undermine what he did for English rugby. He reinstalled that culture and what it meant to play for England. For large parts he had us playing the best rugby an England side had played since 2003. He gave us moments that are going to live long in the fans’ memories.” Yarde blamed a lack of confidence for England’s early World Cup exit and thinks the team peaked too early under Lancaster: “We didn’t go for it [the World Cup] enough. I think maybe the pressure of being the host nation affected us, and the weight of the fan’s expectations too. “We looked a little reserved and we

probably didn’t take enough chances. If you look, the 12 months previous to that we beat Wales and Australia and we really went out and played our game, that was our best rugby and maybe it came too early. But that’s the way Stuart (Lancaster) taught us to play: with no fear – we expressed ourselves. At the World Cup it looked as if we were scared to do that.” As a reward for his impressive performances for Harlequins this season, the 23-year-old was called-up to Eddie Jones’ Six Nations squad. “It’s massive for me to be called up,” he tells me, “after not making the World Cup It gave me motivation and made me work that bit harder in pre-season with Quins. I was excited to get back and get stuck into games. I wanted to prove to whoever the new manager was going to be that I was good enough and for now it’s paid off.” Before a small injury saw him side-lined for three weeks, Yarde had been playing some of the best rugby of his career. He accepts, though, that after a run of games, the break did give him time to regain fitness and he feels fitter than ever going into February’s tournament: “I was
really happy with how the first part of the season went, then I picked up and injury and was out for a few weeks, but over the last few weeks I’ve been finding my feet again and finding that momentum I had at the start of the season. “It [the injury] was probably a blessing in disguise, I was feeling pretty fatigued to be honest with you. I still think there’s more I can prove and there’s more I have to give, I’ve never felt better in myself. I’m excited about the challenge the Six Nations brings. “We’re a tri-nation, we’ve brilliant players and we’re always going to be there or there abouts,” he continued, “It’s about, now, building through and learning fast. Until we meet up for the first time as a squad, spend some time with each other, learn how he (Eddie Jones) wants to play and how he wants us to approach games, we’ll see from there. But he’s an experienced coach, a coach many are familiar with and he has a proven track record. Everything’s now in place for us to really push on now and become the best team we can be.”

TAKING THE TIME TO TALK
Valentine’s Day fast approaches this February and whilst love and sweet talk may be on the lips of many, times can also be tough for quarrelling couples who may have quite feasibly grown apart from each other. Time can heal and it’s good to talk but what if that time has been spent and there are no more words of appeasement to mutter to one another? If you find yourselves thinking that enough might just be enough then read on and let Bates give you the answers to the questions you dare to ask. I am with Catherine Day, a family lawyer from Bates Solicitors, who I am talking to about divorce and the tricky problem of sorting out the finances. I have posed a few of those questions that you often want to know but didn’t dare ask!
Can a spouses’ behaviour be used to improve a financial claim? Generally not - adultery or behaving badly very rarely has any impact on the financial settlement.
Are assets always split 50:50? Not necessarily - but a 50: 50 division of the assets is the starting point. Whether you are able to secure more than 50% will depend on a number of factors including your needs, length of marriage, income and the overall resources in the marriage.
Are business assets included in a financial settlement? Yes - the value of a business is likely to fall into the matrimonial pot to be taken into account in the financial settlement.
Can I keep my pension? Not necessarily- broadly speaking, you are each entitled to half of the total value of the pensions that accrued during the marriage. However, with specialist advice, you can negotiate to keep more of your pension if you offset its value against another asset such as the former matrimonial home.
How is child maintenance calculated? As a guide, non-resident parents on a gross income of £200 to £800 per week will pay the basic rates of 12%, 16% or 19% of their gross income for 1, 2 or 3 + children respectively. For gross incomes above £800 per week, the basic rates are 9%, 12% and 15%.
What power does the court have in deciding the split of finances? The court will deal with all the family assets such as income, capital, property and pensions. It can make interim or longer-term orders for maintenance, over any time period. It may order payment of a lump sum, transfer property between the parties (including land or shares in a company), vary trust arrangements or make a pension sharing order.
Do couples have to go to court? No – You can agree a financial settlement between parties with the help of a divorce solicitor without
having to attend court. The court will however be involved in making an order confirming the terms of the settlement. You may also consider Family Mediation, which is less expensive and stressful than going to court.
Once you are divorced, can one partner claim against the other? Yes - Most people are unaware that divorce and finances are two separate issues and that divorce does not necessarily prevent parties from claiming against each other’s finances in the future. Generally, it is advisable to deal with finances, including property and pensions, before decree absolute is granted.
What would you advise couples that have decided to divorce? I would tell them to seek legal advice. I see many people who have been told by their ex spouse that they are not entitled to make a claim on the house/ business/pension for one reason or another but in the first instance all assets, whether held in sole or joint names, go into the matrimonial pot and then you look to see if there are any reasons as to why they should not be included as part of the financial settlement.
